I love this time of year, Autumn is beautiful and there is no better place to witness the change in season than Dulwich Park. Despite all the flood work that is ongoing, it is still a beautiful place to go for a walk or have an early morning jog. This month we celebrate Bonfire Night and we have two very local ones to choose from. If you prefer to go out on the Saturday, then you will find the local display takes place on Saturday 1st November, further details on page 8. The well-loved Brockwell Park display takes place on the 5th November, full details on page 10. It’s not often that a real superstar graces the area, so we are delighted to bring details of Tim Henman’s recent visit to Dulwich Lawn Tennis Club, find out more on page 40. As usual there are so many events going on in Dulwich and the surrounding areas, we have trouble fitting them all in. So make sure you read all the events pages and the calendar, so you can plan your November. Cheers

A Proper Grilling

ireworks night is upon us and whilst most of us will sensibly visit organised firework displays, it is a great opportunity for friends to get together for some outside foodie fun, I am thinking bangers rather than bangs. So do not pack away the barbecue just yet, you can still use it over the winter months and in fact it makes more sense to grill outdoors even during the dark days. Grilled fish is delicious but an olfactory challenge if you are having guests over, especially when it is too cold to open the windows so outside grilling is the answer. I am so taken with my gorgeous red charcoal burner stove by Prakti UK from Rye Books on Upland Road that I cannot wait to show it off. Practical, simple to use and although it fits easily in a kitchen cupboard it is too stylish to be stowed away. Whilst my addiction to my Prakti might entertain my guests, who laugh as I pop on my puffa - Scott of the Antarctic style - and grab a tray from the fridge, they are quickly won over by the delicious and speedy results. As the basis for a casual week-night meal with friends I have discovered the joys and ease of grilled potato. Take large potatoes and cut into slices just over a centimetre thick. Par boil you potatoes first for three minutes, you can do this the night before, any small off-cuts set aside for stock as you only need the large flat pieces. Coat thinly with olive oil and grill on your preheated charcoal burner until golden brown on each side. Now, this is where the fun starts. The toppings you can apply are limited only by your imagination. You could simply sprinkle with sea salt and rosemary, or lemon juice and thyme, dunk into delicious homemade ketchup or you could make a proper meal of it. Herring is one of those fish that is best grilled outside. For a cool Scandinavian vibe grill the herring fillets in their skin, once cooked the skin should peel away and then you can put one of your friends to use removing any obvious bones. Flake the fish with a some raw onion and place on top of your grilled potato slices with a little

crĂ¨me fraiche sprinkled with fresh dill. Serve with vodka from the freezer. Grilled fennel works wonderfully well with salmon, smoked or otherwise. Add finely chopped grilled fennel to your potato slices with slithers of smoked salmon. Or mix the fennel, with some torn orange pieces and flaked grilled salmon and pour over with a little melted butter. You can make a deliciously smoky ratatouille style topping using vegetables from the fridge; aubergine, pepper, courgette, onion combined with grilled tomato. The tomato will cook quicker than the other vegetables, use tomatoes which are not too ripe. Pour off any excess water from your mixture and top with a little crumbled feta or goatâ&#x20AC;&#x2122;s cheese. Get your coats on and get cooking!

Oysters Thermidor

English Truffles are in season from now until February, or even March with a bit of luck. By weight, truffles are one of the most expensive foods in the world, but not without good reason. Truffles will infuse their odor and flavor to everything around them so it is really important to match them with the right ingredients. Be careful never to bury the flavor of the truffle with strong flavours or overwhelming aromas. Always try to use fresh truffles as soon as you can, and certainly within 3 days of purchase, and if your recipe calls for a peeled truffle make sure you save the peel to use in another recipe! Now the seas are cold scallops, muscles and oysters are going to be at their very best. Native oysters will have been left on the sea beds to procreate over the summer, but from September they are ready to harvest and they will be around now until the end of Mach. There are oyster fisheries all around Britain – particularly well-known beds lie off Essex, Kent, Dorset, Devon, Cornwall, the west of Scotland and Ireland. Each region's produce differs in flavor so if you get the opportunity do try different ones to see which you prefer!

Ingredients

• 24 native oysters in their shells • 55g (2oz) Butter • 1 shallot, finely chopped • 1 tbsp vermouth • 140ml (4 ∞ fl oz) chicken stock • 140ml (4 ∞ fl oz) fish stock • 140ml (4 ∞ fl oz) double cream • 1 tbsp Dijon mustard to taste • 2 egg yolks • 1 tbsp chopped fresh parsley • 55g (2oz) parmesan, finely grated • To serve 200g (7oz) samphire

Method

Pre-heat the oven to 200oc, 400of, gas mark 6. Open the oysters carefully, retaining the juice. Cover them with a clean cloth but do not refrigerate. Melt the butter in a pan and add the shallot. Cook gently without colouring. Add the vermouth, oyster juice and stocks. Cook until the volume of liquid has reduced by two thirds. Add the cream and cook until the volume has reduced by half. Shuck the oysters, pry them from the shells and set aside. Clean the deeper shells and lay them on a tray. Put a little of the sauce in the base of each shell. Lay an oyster in each shell and transfer to the oven for two minutes. Preheat the grill to hot. Stir the mustard into the remaining sauce. Remove the sauce from the heat and stir in the egg yolks, followed by the parsley and half of the parmesan. Take the oysters out of the oven and pour a little sauce over each one. Sprinkle the remaining parmesan over the top. Cook the samphire in a pan of boiling salted water for 1-2 minutes, or until tender. Drain well. Meanwhile grill the oysters to glaze them. Serve with the samphire.

How to make a bulb lasagne and protect it from greedy squirrels Layering bulbs - A Step by Step Guide To get dense and flowery spring pot displays, you have to try layering bulbs in what the Dutch call a bulb lasagne, layering them up one on top of another. The largest and latest flowering bulbs go in deepest, moving to the smallest and earliest in the top layer. Done like this, you need to plant the bulbs slightly further apart than you would in a pot with a single layer so 1 to 11/2 inches apart is the right sort of spacing. The first layer can go as deep as 11-12 inches deep. Then cover them over with a couple of inches of potting compost, before you place the next layer of bulbs. You can push have up to three or four layers, and branch out from just tulips to crocus, narcissus or hyacinths. Here are some stunning, tried and tested combinations, some of them synchronized, some of them of successive flowering times: • Tulips ‘Apple Dawn’ underplanted with Scilla, White Jonquil Narcissus and Narcissus Thalia. • Tulip ‘Prinses Irene’ mixed up with another couple of early tulips: Tulip ‘Havran’ and ‘Couleur Cardinal’. The colours of the three works wonderfully together black, deep red and burnt orange, all at their best at the same time. • Tulips underplanted with forget me not. The tulips will push their way through the Myosotis carpet. • Tulip ‘Shirley’ and T. “Queen of Night” • Tulip ‘Mount Tacoma’ and ‘Angelique’ • Tulip ‘Belle Epoque’ mixed with T.‘Bruine Wimpel’, T.‘Cairo and T. ‘Ronaldo’

Squirrel proofing your bulbs How disheartening when you’ve gone through all this trouble of planting bulbs, to see your hopes destroyed by some greedy squirrels? Here are 4 really good tips that should do the trick:

Use Mesh.

Wide wire mesh, such as chicken wire, is an effective deterrent. Lay it directly on top of the bed, extending the surface about 3 feet from the plantings, then stake it down.

Plant Deeply

Plant tulip bulbs deep, at least three times the height of the bulb, so the books say. I actually plant my bulbs 16 | SE21 - November 2014

20 cms down if I can. Planting a bit deeper enhances hardiness and makes it harder for digging pests to find the bulbs.

Clean up

Always remove all evidence of bulb planting, including any dried bulb casings, from the area so the scent doesn't attract predators.

Spice up

Sprinkle chilli flakes or powder over the pot …Ha ha ha! (evil laugh), no mercy for the squirrels! How amusing to watch them!

General Bulb Planting Tips • Drainage is key with bulbs, so all pots and containers need one of more holes in the bottom. These holes then need to be covered with crocks – pottery shards or pebbles – to keep the holes from being clogged with earth. Raise containers off the ground on pot feet or bricks to aid drainage. • In pots, you can plant your bulbs closer than you do in the garden. Even so, they shouldn’t touch each other or the sides of the pot. • You can plant tulips until mid December, as long as it’s in frost free conditions and wear gloves as the bulbs might have been chemically treated. Fitness Tips

Exercise & Aging “I can’t do that at my age”; “I’ve never been very sporty”; “I worry about my hurting myself”; I’m afraid to try exercise at my age”. Do these thoughts sound familiar? Maybe you can empathise with those words, or know someone that would. An increasing number of people coming to me are over-50, and I’ve noticed more people of 50 plus using the outdoor gyms and running in the parks. I find this heartening as well as inspiring. The beauty of exercise is that it can be taken up at any time in life, providing it is done at the appropriate intensity, and is the right type and duration. Exercise, or specifically resistance-based exercise, is crucial for people in what I call the third trimester of life (50-60 upwards). As we age, our bones become more fragile, as do the tendons and ligaments that connect them and our muscles. Our muscles also reduce markedly as we get older, especially if underused. For post-menopausal women, the sudden decline in oestrogen that comes with the menopause means our bones can suffer more than that of men, who also have oestrogen in small amounts throughout their lives, but this doesn’t decline with age. Resistance-based exercise might include weight lifting (it doesn’t have to be heavy weights), jogging, bodyweight exercises like squats and lunges, resistance bands and even climbing stairs, gardening, dog walking and dancing will do the job if done frequently enough! Exercise strengthens the muscles, tendons and ligaments, and helps with the formation of new bone; our bones are made up of collagen, minerals and living bone cells, and they are very much alive, constantly reforming. Brittle bones, (or osteoporosis) is by no means a natural part of aging, and if you eat well, and exercise regularly, you can ensure that you maintain optimum strength and fitness in your bones and muscles for as long as possible. 26 | SE21 - November 2014

Vitamin D is also crucial, as is calcium, and a quick search on Google will bring up lots of suggestions for recipes rich in both. Vitamin D is best sourced directly from the sun, and typically you only need 20 minutes of midday sunlight between March and October to get what you need. In winter months the sunlight isn’t strong enough, but you can source Vitamin D instead from foods, and supplements if necessary. Exercising outside in the summer months means you cover both bases, and in the winter months what better than a brisk autumnal walk in the local park, kicking up the leaves and admiring the wonderful shades of reds, browns and fading greens. I urge you to consider how much exercise you’re doing, and see where you can do more, especially if you are 50 onwards and even more so if you’re female. Start slowly and build up, and as ever, make sure you ensure you know what you’re doing, and seek the help of an exercise professional if unsure.

Pensioners to feel the pinch It was not so long ago that we respected seniors and they had a degree of sanctity in our society. However, this seems virtually lost in all aspects of life in the UK despite the fact that we all march onto senior citizen status one day. In a recent report by the King's Fund - the independent charity working to improve health and health care in England - the over 65's were identified as the latest “cash cow” target for policymakers. Over one million 65s should get ready for a leap in their tax bills, and the withdrawal of some alleged perks such as free TV licences.

The report called for free care initially for those with serious needs, paid for by ending free prescriptions; a new 6% NI levy on older workers; a further 1% NI surcharge for the over-40s and a one percentage point rise to 13% for NI on earnings above £42,000.

The report recommended that the exemption that allows those who continue to work beyond their state retirement age avoid 12% national insurance (NI), this should come to an end. It also called for means testing of winter fuel allowances and free television licences. Tax experts warn the report has shone a spotlight on the two-tier system of NI, paving the way for it to be abolished.

Andrew Hubbard, a tax partner at Baker Tilly, said: “It is inevitable that at some point this issue of NI exemption for anyone who has reached state pension age will have to be tackled. We have employment taxes that have to be paid if you are working. Why should you be allowed to avoid them because you have celebrated a certain birthday?” Chas Roy-Chowdhury, head of taxation at the Association of Chartered Certified Accountants, agreed, saying: “I think it highly likely that something will change. The NI exemption for those over 65 is a soft target. All parties will be cautious about upsetting the grey vote, but when you get reports recommending those past retirement age pay NI when in work, it becomes easier to make the move.” The King’s Fund commissioned a report into how England should end the inequalities in the care 34 | SE21 - November 2014

Despite the attractiveness of the report for the quality of its analysis, it did attract some backlash. Simon Bottery from the charity Independent Age said: “We think it is a wonderful report, detailing the problems facing the nation. But putting up taxes is not the answer.”

The King’s Fund report estimated the 6% levy on over-65s in work would raise £475m, while the extra one percentage point NI charge on over-40s would boost the Treasury purse by £2bn. The increase from higher earners would raise £800m. Hubbard doubted a reduced NI rate would last. He said: “There is certainly a growing feeling that the generations retiring today have never had it so good, and it is time they paid their way.” Although the government expressed agreement with some of the principles of the King’s Fund report, there were no plans to change NI or other entitlements for pensioners. However, watch this space as we move towards and beyond May 2015. The challenge that we face as an ageing economy is the escalating cost of care with the current £6bn annual care budget expected to rise to £9bn by 2025. There is no ready made solution, but is penalising seniority the remedy?

From farting and fish-fingers, to croquet playing and cake baking. Six members of the East Dulwich Women’s Institute appeared on the Sky 1 show, Ashley Banjo’s Secret Street Crew last month. If you were anywhere near The Actress at 6pm on October 5th, you will have heard the whole pub erupting into applause for the EDWI members turned Street Dancers as they made their television debut. Although the show was a little clichéd in places, everyone was genuinely rooting for the ladies, and all their hard work truly paid off in a fantastic final performance. The morning after the big WI reveal, the Around Dulwich team met for their weekly editorial meeting at ToastED. This is where we discuss news items, features and upcoming events for the site. We meet here for the great coffee, superb service, and free wifi. Davis Cup Fever with Tim Henman at The North Dulwich Lawn Tennis Club

orth Dulwich Lawn Tennis club hosted Danny Sapsford and Andrew Richardson from the Bright Ideas for Tennis organisation back in June 2014 for a fundraising day. Danny Sapsford founded the organisation, which operates by visiting tennis clubs across the UK aiming to increase membership numbers, raise levels of participation and improve tennis clubs' facilities by providing coaching from Davis Cup players, followed by those players then playing a Doubles exhibition match at the end of the day North Dulwich Lawn Tennis Club's (NDLTC) aim for its fundraising day was to help with the cost of funding the resurfacing of the club's two shale courts to make them all-weather with flood lights. NDLTC raised more funds than any of the other clubs that had hosted Bright Ideas for Tennis over the Summer, and for that achievement we won the further opportunity for fundraising by hosting Tim Henman, Danny Sapsford, Luke Milligan and Jamie Baker on Saturday, October 11th. It was a roaring success with 250 people in attendance, and a memorable experience for all who came for coaching or to watch the doubles exhibition match and enjoy the fantastic BBQ. This time we did not have the glorious sunshine that we had in June, but we were very fortunate as rain only disrupted 15 minutes of the day. Nobody needed to travel to the All England Club at Wimbledon, as North Dulwich was playing host!!

Besides Bright Ideas donating a signed Tim Henman racquet, NDLTC was extremely lucky to have had several sponsors for the day: KFH estate agents donating an iPad mini for the raffle, as well as Haart and Daisylets, P M Bennison Heating Engineers, William Rose Butchers, The Old Nuns Head, Costco and ESPH. Many other local businesses very generously gave donations of raffle prizes (full details of all sponsors and donations are on the NDLTC website). Very many thanks to all helped on the day, and for everyone who attended who made the day so memorable and successful. Finally, very many thanks to Bright Ideas For Tennis and to Danny Sapsford.

All four guest players were absolutely charming, friendly and spoke very highly of the day and the club, describing the club "as having a friendly, community feel ... it is a real tennis club." The doubles exhibition match that the four Davis Cup players played for us was amazing. Tim was also challenged to do Keepy-Uppy with a tennis ball, and scored a grand total of 74 as we all watched in awe. 40 | SE21 - November 2014
