Hectic Host

Now Here’s the Thing: Slow Coffee

I

t is a source of somewhat amusement to see Slow Coffee being introduced as a new trend, there is nothing new about steeping coffee slowly through paper filters. Although the apparatus was hard to come by, back in the day there really was no other way to make coffee. Those who wanted to avoid instant coffee would come back from day trips to France stoked up on filter papers and plastic cones. Gravitational feed was the only way every household or establishment could serve fresh coffee for years until the introduction of more immediate methods such as the cafetiere or French press in the late 1980s. Even the first domestic coffee making machines relied on this principle, filter coffee making machines, that facilitated hot water slowly dribbled through a paper cone of ground roasted beans collecting in a jug below. Pressurised coffee making machines, forcing hot water rapidly through ground coffee, were the preserve of coffee shops and cafés. Even traditional stove top percolators were seldom used in the Britain, where they were viewed largely with suspicion and again were a piece of kit one tended to bring back from holiday and never use. Gravitational methods fell out of favour when the American style hotplate was introduced, keeping coffee hot in this way kills the flavour and creates a bitter unpalatable taste. Whilst cafetieres are a very successful way of brewing coffee, the brew it creates is not without its problems. The grounds remain in the steeped liquid and more oils than are necessary can escape, again resulting in a bitter brew. The best option to create coffee in this manner is a Soft Brewing, where the ground coffee is placed in a vertical, cylindrical mesh filter within the pot which can removed one the desired brewing time has been reached thereby halting the process. Look for a Sowden coffee pot or similar. Back to Slow Coffee, the Chemex Coffee Maker, was first introduced in the 1940s – so it is far from new – and was the coffee making method

12 | SE23 - December 2016

Ian Fleming allocated to James Bond when he was establishing his fictional character, a man renowned for this fine taste, in Casino Royale. But how does Slow Coffee fit into the life of a busy Hectic Host. To my mind I would rather slowly feed hot water into the cone of my Chemex at the end of a meal that frantically fret with a complicated piece of machinery, but each to their own and at the end of the day it all a matter of taste. Whether a new thing or not Slow Coffee gets my vote. Lawrence Roullier White www.roullierwhite.com

Forest Hill Society news Lewisham Council is conducting a review of the Forest Hill Conservation Area. The Council has been reviewing two conservation areas each year. This year it’s our turn and, as Liz Hannaford of the Forest Hill Society writes, the conservation area may be extended Forest Hill has a large conservation area covering the centre of Forest Hill and it includes both residential and commercial areas. The boundary runs along Wood Vale, the triangle park and Horniman Gardens; then to the north: Westwood Park, Manor Mount and part of Devonshire Road; and to the south: London Road, part of Taymount Rise and part of Dartmouth Road up to the Bird in Hand pub; then along the railway line to join up to Devonshire Road. The review will include a boundary review, proposals for buildings to be “locally listed”, management proposals to preserve and enhance

the area, and a character appraisal document. This document will summarise the area’s history and describe the characteristics that make the area special. It will also contain examples of things that detract from the area’s character and which could be improved.

The Council will use the document when assessing development proposals in the conservation area, to ensure that new developments are suitable.

We understand that the consultant will recommend extending the conservation area up Dartmouth Road to the Library on one side and to the end of the shopping parade on the other side. He will also recommend that the boundary be extended onto Perry Vale to encompass the small parade of shops. A report will be issued in September and public consultation will be organised for the autumn.St The Mayor of Lewisham then Barnabas Parish will Hall, consider the proposals by March 2009.

Food & Drink with Suzanne James

Pistachio Crusted Rack of Lamb with Pancetta Ingredients (Serves 4) • 11/3 cup unsalted pistachios • 1 tablespoon chopped thyme • 1∞ teaspoons chopped rosemary • 1/3 cup Filippo Berio Extra Virgin Olive Oil • Pinch salt • Pinch freshly ground black pepper • 1∞ lb rack of lamb, frenched (8 chops) • 6 ounces thinly sliced pancetta or bacon • 6 scallions, white and tender (green part only) • 1/3 cup unsalted pistachios shelled • 1 tablespoon chopped thyme • 1∞ teaspoons chopped rosemary

Method 1) Preheat the oven to 400°F (200°C) 2) In the bowl of a mini processor, finely chop the pistachios with the thyme and rosemary. Add half of the olive oil and process to a paste; season with salt and pepper. Scrape half of the pistachio paste into a small bowl and stir in the remaining olive oil. 3) Coat the lamb with half of the remaining pistachio paste. 4) Wrap the pancetta slices around the lamb, between the bones, leaving the bones exposed. Spread the remaining pistachio paste over the pancetta and set the rack in a small roasting pan. 5) Roast the rack for about 30-40 minutes, or until an instant-read thermometer inserted in the centre of the meat registers 145° for medium to well done. 6) Ensure top is crusted 7) Transfer the lamb to a cutting board and let rest for 5 minutes. Reserve the pan drippings. 8) Meanwhile, spoon 1 teaspoon of the rendered pancetta fat from the roasting pan into a medium skillet and heat until shimmering. 9) Add the scallions and cook over a high heat until softened and browned in spots, about 4 minutes. 10) Carve the lamb rack into four 2 chop servings and transfer them to plates along with the scallions. 11) Drizzle the pistachio pesto all around and serve right away. 14 | SE23 - December 2016

Perry Vale Assembly funded projects for 2016/17

O

n Wednesday 19th October 2016, Perry Vale assembly members met at Brent Knoll School to cast their votes to fund this year’s ward projects. The venue was chosen to showcase one of Lewisham’s newest rebuilt schools. Originally based in Mayow Road, the school has relocated to Perry Rise where the Co-operative Trust School is a small gender mixed Foundation Special School for 143 children aged between 4 and 16. The children are already involved in our assembly, having held a craft stall at our June Lark in the Park event where they raised over £150. Our assembly met as a marketplace where 95 residents joined local groups to hear ideas for improving Perry Vale and to cast their project votes. Although more project bids were received than our £12.5K assembly fund could meet, the following 7 were successful; Perrymount Primary School was awarded £2,467 for new playground equipment and seating. The Young Lewisham Project was awarded £2,300 for Flooring the Floor. Seniors was awarded £2,130 for their Memory Café for people with early onset dementia. Platform One was awarded £2,000 for their Intergenerational Music Project which will see the young people working closely with Seniors. Rockbourne Youth Club was awarded £1,899 for their Life Skills/Healthy Eating programme of workshops. Grow Mayow was awarded £1,485 for Bee Our Guest to expand their bee education project. However, the assembly was unable to completely fund the Forest Hill Traders bid and contributed the remaining £219 of funds towards it. Other assembly agenda items included Perry Vale’s SNT, with campaign posters covering Halloween and Fireworks Night; Bromley and Lewisham Healthwatch gave an update on their services and priorities reminding residents about the Independent Health Complaints Advocacy Services and how to get involved with

22 | SE23 - December 2016

Healthwatch; a presentation from Sam BentleyToon of the London Wildlife Trust described the Great North Wood project which has recently received funding from the Heritage Lottery to address the threat to the remaining ancient wood via enlisting local people in its conservation and management. Following this, as Chair of the Friends of Mayow Park, Alona Sheridan provided feedback on its recent consultation.

Financial Matters

Managing Your Money Over The Silly Season

O

ne of the most common questions we get asked as Independent Financial Advisers is “How do I make the most of my money?” This question is of particular significance given the fast approaching festive season. We see financial management as a journey at Sterling & Law which begins when you finish your education and start working. Early priorities will range from paying your rent, putting food on the table and building capital for a deposit on a property. Around the age of 30 at the latest, you should have started putting money into a pension for your retirement. Later, your considerations may include moving home, education for your children or contributing towards a wedding when your children get older. There will be holidays to consider, Christmas spending and, if you’re a normal person, random and unexpected expenses along the way. All this requires planning. However, before planning on any journey, it is crucial to know your starting position and your starting position is your budget; i.e. your understanding of your income vs expenditure. This is the most basic and important tool for effectively managing your money. It can be done on a scrap of paper and involves no fancy software. However, budgeting, although easy is quite unpopular. This is because it shows you in hard black and white exactly where you stand from a financial standpoint. And sometimes, hard facts can be uncomfortable.

The benefits of budgeting

3) Awareness: Being aware of what is coming in, what’s going out and where it’s going will save you from wondering where on earth your money went at the end of the month. Your budget will tell you what you can afford, what you can save and where you need to make reductions in expenditure. You might even decide after budgeting that you need a pay rise or a different job. 4) Confidence: Being organised and knowing where you stand financially gives you confidence. If in debt, you can make the adjustments you need to ensure that you get out and stay out of the red. Once out of the red, you can then decide exactly how much you can save towards your financial goals. 5) Clarity: Budgeting will provide you with an early warning system for potential problems and help you make adjustments before the problem actually manifests itself. For example, a sudden expense such as a gearbox failure may throw you off course. But by having a budget, you’ll know exactly how far off course you are and what might take for you to recover. You’re also more likely to have savings available to be able to deal with the problem as a budgeter. So, how do you make the most of your money? Start with a budget. List all your monthly outgoings and measure them against your expenditure. This will tell you where you stand and knowing exactly where you stand could help prevent you from falling.

1) Control: Would you rather control your money or be controlled by your money? Budgeting can save you the grief of overspending and give you a vice like grip of your finances; which is a good thing. 2) Focus: If you have financial goals, having a strict budget could help you achieve them faster, especially if you’re working with limited resources. You can prioritise your expenditure to ensure that you do not spend unnecessarily on anything that does not contribute to your financial goals. 26 | SE23 - December 2016

Festive Pets

Keep Your Pets Safe This Season

W

ith the festive season just around the corner we are all busy planning how we are going to celebrate, have fun and spoil our loved ones – including our pets. It is a time of year when our home is bursting with family and friends, fancy decorations and treats, which can be overwhelming for our pets. Try to keep your pets’ eating and exercise habits as close to normal during the festivities as you can, and follow these few steps to ensure they are kept safe:

1) The Christmas tree The best place to put a Christmas tree is in a corner, tied with fishing wire to secure it, preventing it being knocked over by your dog or pulled down by your cat.

2) Electrical safety To prevent any accidental electrocutions, exposed indoor or outdoor wires should be taped to the wall or the sides of the house.

3) Poisonous foods and plants Holly, mistletoe, poinsettia plants, grapes, raisins, sweets, liquorice, chocolate… Keep them well out of the way of your pets’ reach. Don’t be tempted to share chocolate with your dog, it contains Theobromine, a chemical very toxic to pets. Cats are even more sensitive to Theobromine poisoning than dogs!

4) Fire safety Burning candles should be placed on high shelves or mantels, out of your pets’ way - there's no telling where a wagging tail may end up. Homes with fireplaces should use screens to avoid accidental burns.

7) Outside the home When walking your dog in freezing weather, be mindful of his paws. Frosty grass and salt grit can cause contact dermatitis. Wash your dog’s feet after a walk, to keep them clean and healthy. But remember, most of these dangers are easily avoidable. Christmas is a time for fun and enjoyment, and apart from a well-deserved and needed grooming session, a new cosy bed, a jumper, toy or warm blanket the best present you can give them is your time, attention and love. Happy Holidays everyone! Sylvie Marks Waggy Wagon, mobile dog grooming salon

6) Gift wrapping Be sure to keep your pet away. Wrapping paper, string, plastic, or cloth when swallowed can cause intestinal blockages. Scissors are another hazard, and they should be kept off floors or low tables.

Garden Talk

Winter’s Star Performers Whether it’s attractive bark, shiny berries or a splash of colour, there are lots of plants to add winter interest to your garden….

Beautiful Bark Betula utilis var. jacquemontii ‘Grayswood Ghost’ has brilliant white bark, which glows out in soft wintery light. It’s lovely as a multi-stem and fab underplanted with evergreen ferns, snowdrops and crocuses. Prunus serrula is another winter showstopper with shiny mahogany bark striped with lenticels. Parrotia persica is actually a shrub but can be grown as a wonderfully sculptural multi-stemmed tree. On mature trees, the steely grey bark flakes off in patches giving interest and texture in winter. Acer griseum (Paperbark Maple) is a small tree with chestnut bark that peels of to reveal cinnamon coloured wood beneath. Or for a brighter, redder bark, try Acer palmatum ‘Sango-kaku.’

Fabulous Flowers Heleborus niger is a pretty white hellebore that flowers from December to March. A must for winter gardens , there are many varieties of hellebores in pretty colours from pale pink to reddy purple such as ‘Helleborus x hybridus Havington red. Buy them in bloom to make sure you’ve picked a flower you love. Clematis cirrhosa ‘Jingle Bells’ has creamy bell-like flowers and evergreen foliage from December. Or for a splash of pinky brown look out for Clematis cirrhosa var. purpurascens ‘Freckles’. Both ideally need a sheltered south-facing wall. Cyclamen coum are delicate hardy cyclamen with tiny pink flowers and silvery leaves (December to March) that make a gorgeous carpet under deciduous shrubs and trees with ferns and snowdrops. Narcissus ‘Rijnveld’s Early Sensation’ flowers as early as December – perfect for those too impatient to wait until spring for their daffs. Hamamelis x intermedia ‘Jelena’ is a shrub that makes a winter focal point with its delicate golden orange beautifully scented thread-like petals on bare stems from Dec and March. Great for bringing into the house for a scented flower display.

Stunning Stems If you have a large garden, Cornus alba ‘Sibirica’ (Dogwood), with its brilliant coral stems in winter makes a wonderful display planted in a group. I also like Cornus alba ‘Elegantissima’ which has pretty variegated leaves in summer. Intersperse with gleaming olive stemmed Cornus sericea ‘Flaviramea’ for more impact or underplant with crocus or bright evergreen grasses such as Carex ‘Evergold’. Prune at least some of the stems hard back each year as young stems produce the colour. Corylus avellana ‘Contorta’ (contorted hazel) has curling stems and catkins that make a lovely focal point in a winter garden.

Beguiling Berries Callicarpa bodinieri var. giraldii ‘Profusion’ has clusters of amazing purple/pink berries, which cling to bare branches - bringing a serious wow factor to the garden in winter. Nandina domestica is a pretty upright airy shrub with spectacular clusters of bright red berries in the winter against purplish leaves. Skimmia japonica ‘Nymans’ is a striking shrub with larger red berries - as long as a male variety is planted close by. Ilex aquifolium ‘J.C.van Tol’ is an almost spineless self-fertile holly so has guaranteed bright red berries on dark into winter - or until the birds get at them! Rosa rugosa roses such as Roseraie de l’Hay are tough useful roses with big red hips into winter. Alternatively R. moyesiii has long orange hips and Rosa glauca is striking with purple grey foliage and red hips – all bringing jolly cheer in the gloomy winter months.
