ildflower meadows may be decreasing in the countryside, but they’re on the rise in urban gardens, giving a fashionably relaxed, naturalistic feel. They also attract a host of wildlife and increase biodiversity. If you’d like one, now is a good time to start the process. The great thing is you don’t need a huge garden to enjoy the pleasure of a mini meadow – just a strip across your lawn with an inviting path meandering through it, or an area of any shape, oval, triangular, will create an attractive contrast to a neat lawn. A friend of mine has given over the end of her lawn to meadow with wildflowers such as ox-eye daisies, white and red campion, field scabious, yarrow and meadow buttercups popping up amongst swaying grasses. She loves the birds, butterflies and bees it attracts and the fact that, as opposed to traditional borders, it’s an everchanging tapestry of colour from spring to autumn. It even changes from year to year so you never quite know what to expect. For annual meadows, which have to be sown once a year, sow a wildflower mix of colourful seeds such as poppies, cornflowers and nigella, on prepared ground in autumn or spring. These are of course beautiful and wonderful for wildlife, but less sustainable than perennial meadows as they have to be ripped out every year and started afresh. For an instant perennial wildflower meadow, laying turf is the quickest option. This contains attractive grasses as well as wildflowers, mostly perennials as well as some annuals. An important ingredient of most meadows is the annual yellow rattle, which feeds off and kills tough grasses leaving gaps for wildflowers to seed. Wildflower Turf (wildflowerturf.co.uk) has some lovely meadow turfs including one designed for shady areas. Autumn or spring is a good time for laying turf by removing existing lawn, digging over the soil, and remembering to water as it gets established. Meadows do better in poor soils where weeds can’t take over, so ground that hasn’t been fertilised is best.

Another option is to let the grass grow and mow around the shape you want to define and organise it. Wildflowers such as vetch or knapweed often self-seed, but you can introduce drifts of other meadow flowers as plug plants. The all-important yellow rattle needs to be seeded, by creating bare patches in the grass and sowing into them (it should be sown in autumn because it needs winter chilling for germination). Maintenance is relatively easy – certainly in comparison to a lawn. It involves cutting it right down to the ground after your flowers have set seed in September with a strimmer and then a mow over one to two inches from the ground. Then collect up all your hay to avoid adding nitrogen that will feed the coarse grasses - and never fertilise. In the early years, it’s worth giving it another cut in June, eight to ten inches off the ground to give other species space to come through, it will then have a second flush. Your meadow will look dormant over the winter and come back, full of delightful surprises, in spring.

Apple & Quince Tart With a hazelnut crumble topping

f you have a tree bearing the old-fashioned quinces, don't let them go to waste — it is a wonderful fruit that is ideal for poaching, stewing, or baking as a dessert as well as being ideal for use in jams, jellies and preserves because of its high pectin content. I love to combine them with Apples and this is one of my favourite recipes – the perfumed quince puree and hazelnut crumble really make this apple tart special.

Ingredients Serves 4 Allow approximately 1.5 hours FOR THE TART • 30g unsalted butter • 2 Quince, peeled, cored and chopped • 3-4 tbsp caster sugar • 230g pre-rolled puff pastry • 1 egg yolk • 2 apples, cored and thinly sliced (Cox’s or Braeburns work well) • Honey to drizzle • 30g unsalted butter, melted FOR THE HAZELNUT CRUMBLE • 100g Self Raising flour • 50g butter • 50g sugar • 50g chopped hazelnuts

Method 1) Preheat the oven to 200C/gas 6. 2) Melt the butter in a pan, add the chopped quinces and cook over a gentle heat for 8-10 minutes. Stir in half the sugar and a splash of water and cook for a further 4-5 minutes, until softened. 3) Remove from the heat and puree using a hand blender until smooth. 4) Grease a baking tray and trim the puff pastry to fit onto the tray. Using a pastry brush, brush over the egg yolk and prick all over with a knife. 5) Spread the quince puree over the pastry and arrange the apple in vertical lines on top. Drizzle with honey and sprinkle the remaining 1-2 tablespoons of caster sugar over the top. 6) Make the crumble by rubbing the butter and flour together until the mixture resembles 14 | SE23 - September 2019

fine breadcrumbs. Stir in the sugar and nuts and sprinkle mixture over the tart. 7) Bake in the oven for 15-20 minutes or until golden and cooked through. 8) Remove the tart from the oven, cut into 4 servings and drizzle with a little melted butter. 9) Serve with Crème Fraîche, cream or custard according to preference!

etting to grips with the way dogs learn can be a source of immense frustration for many new dog owners. We humans have a great tendency to anthropomorphise and expect dogs to learn and memorise in a similar way to ourselves. Many owners do not understand how a dog can appear to understand a training cue in one session but seem to have entirely forgotten it by the next. It is thought that dogs learn primarily by association and have an association memory of around 2 seconds. Quite simply, any given stimulus is either rewarding, punishing (a perceived danger or threat) or neutral. Dogs will seek to repeat experiences that are rewarding and avoid those which are punishing. Clearly these values are subjective. Most dogs find rolling in fox poo intensely rewarding, whereas most humans would find it punishing. Given the choice, I suspect most dogs will forgo the average dog treat if the option to roll in fox poo is available to them. The key to great training is to build a strong, rewarding association in the dog’s brain between a cued action and reward. So, if the act of the dog lying down is followed within two seconds by verbal praise and a treat the dog will begin to make a connection between the act and the reward. If the reward (praise and treat) is later than two seconds that vital association is not made- so in any training timing is crucial. For an enduring association to be made the pairing of action and reward has to be made on multiple occasions and in different contexts. Owners must learn to be patient and consistent. Dogs are unique in their ability to respond to owner body language and mood. Lack of consistency, owner impatience or frustration, are major blocks to effective canine schooling. Another way to think about associative learning is how we respond to a familiar mobile phone ring tone. Phone calls are inherently rewarding to most humans. Most of us make a strong association between the selected ring tone we use on our own phone and the ‘arrival’ of phone calls for us (the reward). If someone else has the same ring tone on their phone, for

instance on the bus, we will orientate to the sound, even though it is not our phone. This is an example of associative memory- we are not consciously thinking about our reaction it is almost automatic and in the moment. Another important aspect of effective dog training is the process of ‘proofing’ each training cue. Puppy owners tend to go to one or two courses of puppy classes and the pup learns basic cues and may even graduate top of the class. However, once the pup is outside the class context and especially when adolescence hits, basic cues start to fail. This is because the cue has not be taught in these new contexts with the same precision and consistency. All training cues have to be systematically developed using a system known as the three ‘D’s. Each cue should be proofed against Distance, Distraction and Duration. Asking a dog to ‘sit’ in a quiet room, right beside you, for only 3 seconds is a completely different proposition to asking a dog to ‘sit’ at a 100 yards away, surrounded by other dogs, for 5 minutes. In terms of associative memory these might as well be totally different cues- the dog cannot make the lateral cognitive leap that the second is an elaboration of the first. Owners often fail to understand this. The bad news is that effective training takes time, effort and many stages, much more than most owners would like. The good news is that just a handful of basic cues, properly proofed and with a release word, are really all you need- that is ‘sit’, ‘down’, ‘come’, ‘leave’ and the release ‘ok’.

St Dunstan’s College hosts evening with special guests

t Dunstan’s College was delighted to host ‘An Evening on Diversity and Leadership’ on Tuesday 25 June, as part of this year’s St Dunstan’s Festival. The evening included special guests Baroness Doreen Lawrence, Ellah Allfrey OBE, LGBT+ author Shaun Dellenty, Cllr Brenda Dacres and the Royal London’s Glenn Hammet, who all formed the event’s panel. During the evening, the guests spoke about their own experiences, including the challenges they have all faced, and where they think work is still needed to be done to ensure there is diversity in leadership positions and across society. The event, which was held at the Jubilee Grounds, was student-led and was organised by the College’s Equalities Society, who had requested an event to discuss diversity at this year’s festival. Sixth Former, Beth, who is part of the society said: ‘I really wanted to have an event at this year’s festival which celebrated the diversity of our College, whilst raising awareness of the importance of diversity within leadership roles. ‘The diverse and impressive panel discussed the importance of diversity within leadership roles,

each representing their sector of work. The event was a big success with the audience getting very involved in the Q&A with the panel and discussing important issues.’ St Dunstan’s Headmaster, Nicholas Hewlett, who introduced the special guests, added: ‘We were honoured to host an evening with a focus on diversity and leadership where we were joined by special guests including Baroness Doreen Lawrence and Shaun Dellenty. ‘The evening was led by a group of students from St Dunstan’s Sixth Form and the questions put to the panel focused on real issues such as minority representation in parliament, racism in the police force and LGBT+ awareness within schools. The panel agreed that progress has been made in many areas, but that there is still much work to do especially given today’s climate.’ The evening was attended by more than 100 guests including students, parents, former students and members of the local community. The event was just one of the events hosted by St Dunstan’s College as part of this year’s two-week St Dunstan’s Festival.

Car Free Day is Coming! Environment Matters with Sylvie Waudby What would London be like without any cars on the streets? On Sunday 22nd September, the capital will experience its biggest Car Free Day. Billed as “Reimagine” by Sadiq Khan, the Mayor of London is inviting Londoners to reimagine our city without cars. There will be 20 km of closed roads around Tower Bridge, London Bridge and the City of London, with free events such as e-bike rides, popup playgrounds, and guided walks.

Why have a Car Free Day? This is a great opportunity to reclaim the capital’s streets, moving them away from vehicle domination, giving children the chance to play safely in the roads, to hold a street party, explore London by foot, public transport or bicycle. More importantly, it’s a spotlight on London’s air pollution. Nitrogen dioxide levels in London are regularly exceeded and every school in London experiences levels of PM2.5 (tiny particles that can penetrate deep into the lungs) above limits set by the WHO. Vehicles contribute to over half of air pollution.

What is Lewisham doing on this day? Lewisham has taken the Car Free Day Play Street Pledge! A Play Street closes off a road for a few hours, allowing kids to play in the street and neighbours to socialise in a car-free environment. Lewisham has welcomed applications for local play streets. Unfortunately, the deadline to apply was 1st September for Car Free Day, but Lewisham also allows regular Play Streets, for example on a monthly basis. In Forest Hill, one of the regular Play Streets is Derby Hill Crescent. Resident Katie Knowles says it started with an annual street party and then became a regular monthly event. A majority of the street residents had to sign up and were happy to do so as many had families with young children, or remembered playing in the streets as a child. “The benefits are unquestionably a growing sense of community and it’s great in our busy lives to have this one Sunday a month where we all down tools 24 | SE23 - September 2019

Discipline Equals Freedom One of the great things about our modern age is the huge library of information available to us at our fingertips. You may, if you’re like me, simply be unable to imagine how we got anything done before the internet. How did we buy birthday presents for kids? How did we look for new places to go on holiday? Yes, it’s a modern problem, but stepping back makes me realise how amazing it is from not that long ago. The other positive (and sometimes negative) aspect of the modern age is not just the spread of information, but the spread of ideas. You can be introduced to all sorts of people, who have all sorts of ideas which you can engage with, research further, question as well as the more passive follow, like and share. And this is how I came across one of my modern-day heroes – Jocko Willink. Jocko has been described as “one of the scariest men alive” by Tim Ferris. Jocko is a former US Navy Seal commander who had 20 years in the service, include time in places like Ramadi in Iraq in 2006 which sounds as close to Hell as anyone could possibly imagine. Since his military retirement, Jocko now runs a business consulting firm specialising in leadership and getting high performance teams to work together. Jocko’s ideas are simple, sometimes brutal and very effective; however I’m not going to cover them all, just the main one in the title of this piece - Discipline equals Freedom. It’s not overly difficult to see how discipline benefits your finances. To help, my view of financial discipline is: 1) Simply having a plan in place – that’s a big first step that you would be amazed how many people never get to. 2) Move at least 10% of your income on payday to a limited access savings account - this really works wonders and is your emergency money (or investing money). 3) Move 10% of your income to a splurge account – this is your fun money – you’ve worked hard for it, now go spend it on fun things. But remember, when its gone, it’s gone. 4) Maximise your pension contributions whilst you’re working – tax relief is not going up and may come down sooner than we think. Use as much as possible whilst you still can. 26 | SE23 - September 2019

5) Take the long view – don’t be swung by uncertainty in markets and politics. With a long enough time horizon EVERY equity market goes up. But, remember there will be bumps. 6) Write a will and get lasting powers of attorney with your spouse. Trust me, if the worst ever happens this will save you and your loved ones a HUGE amount of pain and grief. 7) Make sure you have the right protection for death and illness. Sometimes your employer may provide this, other times they won’t. Ask yourself “What would happen to my family financially if I was unable to work?” Let’s call these the Magic 7. No, they’re not meant to be easy. Yes, you will have to make sacrifices sometimes. Yes, I understand this is beginning to sound like a lecture, but what I’m trying to give you here is…. Freedom. • Freedom to retire and live how you want. • Freedom to ignore all the doomsayers telling you every day how the market is going to crash. • Freedom to spend time with loved ones on holidays or doing fun things because you’re finances allow it. • Freedom to have the reassurance that if something catastrophic happens, you and your loved ones are protected. Discipline equals freedom. But freedom doesn’t just happen. It needs to be planned, discussed, tested, refined, adjusted and discussed again to form an amended plan. And again, and again. Every year. But is it worth it? I’ll let you decide.

his month I want to talk to you about simplicity. I think one way that we can get more time, more freedom, more headspace, therefore more simplicity in our lives, is to have a bit of discipline around mobile phones. I’ve recently read a great book called ‘How to Break Up With Your Phone’ by Catherine Price, a journalist based out in the States who I interviewed for my podcast series several months ago – it’s a brilliant book which I’d recommend. It is literally dog-eared from the notes I’ve taken from it for my interview, but also our rescue dog Kami got her teeth into it – so we’ve both read it, both enjoyed it, and both got through it. I was talking recently to a client of mine who said that he lost his phone last week and therefore wasn’t going to have a mobile phone for at least another week. He was describing the extra freedom he felt he had – after a bit of anxiety, a separation anxiety from the phone but more freedom, more headspace. If we feel anxious when we’re separated from our phones, that’s because we’ve been conditioned to release adrenaline and cortisol when we can’t check them. My client’s concentration was better, sleep was improved because he wasn’t looking at a device and getting subjected to all that blue light at night, and generally feeling a little bit more relaxed, a little bit less stressed, particularly at the end of the day, which of course is when we want to be getting ready to be sleeping to go to bed. What kind of relationship do you have with your mobile phone? Is it healthy? How is it affecting you and your relationships with the people who are important to you?

My challenge to you is this, can you do one of two things? FIRST OPTION: Do a complete 24-hour digital detox. Could you go without your phone for a 24-hour period? SECOND OPTION (the lighter option): Turn off all the notifications on your phone so you don’t get any dinging, whirring (nothing except perhaps 28 | SE23 - September 2019

text messages and phone calls) and have a curfew. Literally put your phone to bed at 7:00pm or 9:00pm so that you can start withdrawing from that blue light and winding down mentally, getting yourself ready for sleep. If you want some other ideas on this, then I’d recommend Catherine’s book - a lot of ideas, and some really eye-opening discussions around Facebook and Instagram and the other social media sites whose sole job it is to get you in the app and also keep you on the app looking at different things, posting, messaging, liking, sharing. They are making these things addictive, and that’s the point. Simplicity for me is going to be back to the mobile phone. Saturday 28 September: Stride London’s Spectacular Skyline by Twilight

A unique, skyline-spectacular sponsored walk through Greenwich and Blackheath to support South East London`s two hospices promises a night to remember on Saturday 28 September 2019. With selfie-spot views over the capital worthy of any Instagram feed, the Twilight Walk hopes to raise thousands of pounds for good neighbours St Christopher’s Hospice and Greenwich and Bexley Community Hospice. New for this year, 2019’s route has been adapted to include even more iconic London vistas, including Royal Greenwich Park, the Old Royal Naval College and the Cutty Sark, just as the sun sets over the city. Starting on the northside of Blackheath Common, the walk finishes on the south-side of the common, just minutes from Blackheath`s bars and restaurants where fundraisers can choose to spend the rest of their Saturday night, celebrating their achievements!
