Every kid dreams of being something outstanding when they grow up. Some might dream of being a doctor, teacher, entrepreneur, or a fire fighter. These are the basic answers you might get from any child when prompted about what they want to be when they grow up. Then you have the kids like myself, that wants to be something outrageous like an astronaut, rock star, or for me a RACECAR DRIVER! Some of these careers or hobbies can be very hard to obtain in life. For me the Sports Car Club of America (SCCA) made my dreams a reality. I grew up in a family that was very mechanically inclined, so fast cars, races tracks, and anything with speed came natural. About 6 years ago I was introduced to a program that the SCCA offers called Autocross. This is an amazing stepping stone for anyone who dreams of being a race car driver. Autocross is a timed precision driving based race. Any type of car can compete at a reasonable price given it can pass a safety inspection. At the beginning of each event your car is inspected for all safety requirements. You are then allowed to walk the race course in order to learn where you must position your car on the track. After everyone has walked the course the racing starts. Each driver and their competition are allotted the same amount of attempts to achieve the fastest lap possible. At the end of the day each class is given awards and you can compete for regional championships throughout the racing season. This sport has a very strong competitive nature with some amazing people to support its competition. Although the competition is fierce, the sportsmanship of these events prevails over all competition. Competitors are seen assisting others, working together to find the best results, and novices find new friends and hobbies. To anyone who has ever considered racing cars I highly encourage you to join this sport. New or novice drivers are always welcome, we have novice instruction and assistance if needed. The Good Cup By Albert Beck Owner of Boardwalk Coffee House at Barefoot Landing Did you even wonder what all the fuss is about nowadays over a good cup of coffee? There are so many types of beans and flavors to choose from, one could easily be chased away by all the intimidating names and fancy preparations that are standard fare at coffee shops today. I am old enough to remember when a bottomless cup of java was only 45 cents. Yes, it was awful tasting and sometimes had been sitting on a warmer for hours. Nowadays, coffee houses pride themselves on choosing, preparing and serving the best and freshest brews to their customers. The prices seem steep compared to the old diner costs, but so much more care is taken to provide a better coffee experience that it is well worth the extra cost. The quality of a good cup of coffee has a few important factors to consider: 1. When the beans are ground 2.Time since roasting 3.Cleanliness and maintenance of equipment used 4, Water Quality 5. Bean quality 6. Roasting profile The best coffee houses grind the beans (even espresso) just seconds before brewing. If you witness your favorite spot using pre-ground bean, RUN AWAY! A good coffee house should only buy and stock what is needed for a week’s worth of business. Coffee beans need to be stored in airtight containers, away from heat until just before grinding. As with all equipment, maintenance is the key to good performance. Coffee brewers and espresso machines are no different. A regiment of cleaning and calibration must be adhered to in order to produce a consistently high quality cup. An often overlooked component in making the perfect cup of Joe is water quality. Good coffee shops will have a triple filter to sure nothing gets in the way of the flavors of the beans, roast and freshness are so carefully planned for. Bad water can ruin any cup of coffee. As for the bean and roasting profile, the coffee house must be aware of where the beans are from and what roasting methods work for the chosen bean. African beans work well with a darker (longer) roast and Central American beans tend to make a better cup if they are lightly roasted. There is no shortage of bean/roast combinations, so shop around and try a bunch of different coffees
