Dubai Sports World Where: Dubai World Trade Centre

The critically acclaimed musical Spamalot will be at Dubai Opera from 2-5 May. Based on the film Monty Python and the Holy Grail, by the British comedy group Monty Python it tells the story of King Arthur and his knights, with original songs written by Eric Idle. This production of Spamalot will be brought to Dubai by Selladoor Productions, which has also worked on musicals including Little Shop of Horrors, Footloose, and Jersey Boys.

Organised by Dubai World Trade Centre in association with Dubai Sports Council, Dubai Sports World is the place to be for the UAE’s sports fans during the long summer months. The sports and activities you can take part in include football, ping pong, badminton, and trampoline jumping – and there’s also a ninja warrior course. You can join a sports academy for some lessons, or simply rent a court or a pitch with a group of friends. Dubai Sports World returns in Ramadan, on 17 May – mark it in your calendars.

Stereophonics will make the long awaited return to Dubai this year, just before Ramadan on Friday, 11th of May. Known as one of Britain’s best live bands, Stereophonics have embarked on a major world tour this year following the release their new album ‘Scream Above the Sounds’. They will be performing their hits and their legendary live show in Dubai Media City Amphitheatre with a line up of other guests.

The 23rd edition of Beautyworld Middle East is set to take place from 7th to 9th May, attracting thousands of exhibitors and visitors. Ramadan is a celebration of faith, and in practicing it involves fasting throughout the whole month. As hard as people already think of sticking to their usual diets, Ramadan in itself puts faith forward rather than our own self-indulgence or care. Here are some tips to help you throughout the holy month.

Water, water, water It is common knowledge that to drink enough water in a day is key to health, more so during the Ramadan. Water would be your closest ally this month, not only to restore the fluids lost because of the heat, but also to fill the stomach and avoid the gnawing of hunger. Drinking sweet drinks would help in the needed energy and additional calories if fatigued within the day. Always avoid drinking caffeine and alcohol, both of which causes urination which leads to the need of more water intake and is acidic especially to an empty stomach.

Manage the stress Ramadan is a time to discipline our minds and bodies. A time of portions and

restraint. A time for improved devotion, worship, and spiritual reflection. As a working individual, one of the most common problems we have is the constant myriad sources of stress. The key however is to keep in mind that a task can always be finished, and if usually faced, the mindset that you overcame it before assures you that the second time around is a possibility. Always keep in mind what the cause is of your stress, if you are aware where it stems and what you can do about it, it will less likely be a cause of panic when you come around to facing it. Take one task at a time and do not dwell on those you cannot answer to immediately.

Health & Wellness Touch the pavement Well, not literally, but walking rather than taking a car to places nearby are more than enough for a time crunched exercise. Taking your feet for a stroll to a nearby store or just around the building block can be very beneficial to stretching muscles and improving blood flow throughout the body. Even for short strolls, walking under the sun can supply us with much needed vitamin D.

Smarten your Suhoor The first meal of the day during Ramadan is important. It is the only meal that will supply yourself with nutrients within the working day. Suhoor should be a complete meal that would provide until Iftar. Proteins are one of the most effective ways to gain and maintain nutrients. Keep in mind to avoid sweets and refined foods, usually cereal, or waffles and pastries are common breakfast meals. However, these meals are only good for energy that does not last long. Food like these usually contain a lot of sugar and just enough fibre to give the morning jolt we need until we eat again at noon. These usually give us the feeling of fullness even eating less and also digests fast, not enough to last us throughout the day.

Health & Wellness Fast or Feast? Iftar, or the breaking of the fast, is spent among friends, family, and colleagues. Compared to Suhoor, Iftar offers fewer restrictions and more on indulging after a long day of fasting. Unfortunately, this does not mean that we do not keep in mind what we eat, contrary to a Suhoor meal, an Iftar meal is more on pacing and portion of the food we plan to eat. Eating a small portion of sweet fruits or pastries are good for we have low blood sugar levels at the end of the fast, clearing away any feeling of dizziness or headaches. Next is a cup of water that will lessen the acidity of our stomach. This would be followed by soups for they are easily consumed and is similar to the viscosity of liquids, softly transitioning our stomach’s from liquids to the solid meals we are now ready to take. As much as we may want to eat as much and as fast to catch up with our hunger, remember to slowly eat the food we take and be careful on the portions we take during the breaking of the fast. Overeating and overindulging will give rise to gastric problems, giving our stomach a hard time not only to catch up from the fast of the day but also to digest the food we have taken through the night.

Split the clock like a pie Some of you might already be doing this, keeping time portioned and planned throughout the day gives you ample preparation and a routine to follow. When laid down, some of you might even be surprised on how many minutes or hours in between tasks you can still use for taking care of one’s self. It all boils down to the multiple minutes between tasks in an unplanned day that we spend idling or in social media, can be carefully collected to hours spent productively.

Sleep is NOT for the weak Sleep is crucial in maintaining our body and mind’s health. Always allot ample time to rest everyday. Sleep deprivation can affect mood, appetite, and mind-body coordination, all of which are essential in how we can face the day. Scientific studies suggest 7-9 hours as the best amount of time to sleep during each day.

Ask HV Holistic Health… I will be observing Ramadan and I want to know if I should keep exercising? I usually gain a bit of weight during the month, which I would like to prevent if possible. How do you suggest I eat and train?

Charlie Answers: Ramadan is right around the corner, and if you’re fasting, your eating habits will be completely turned upside down. For some, fasting can help them lose weight, for others, the late night consumption of dates, rice and oils actually leads to weight gain over Ramadan. Here’s how best to navigate the month, so that you’re in the best possible physical and psychological shape at the end.

Hydration It can be really hard to hit your recommended water intake during the month. Lots of my clients don’t want to drink too much because they worry about waking to use the bathroom but, rehydrating after sunset is key to preventing you from overeating. Break your fast with a glass of water before you eat anything, and make a conscious effort to be taking small amounts of water on board every hour that you’re awake before sunrise. If you experience dehydration headaches, avoid taking painkillers if possible. Opt instead for coconut water or add a tiny pinch of salt to 2 litres of water.

Nutrition Modern nutritional information suggests that dates, or sugary carbohydrate based snacks, are not the best way to break your fast. They rapidly raise your blood sugar level, causing an insulin spike and prompt fat storage. Chicken soup and salad is a great combination, because it includes protein, and the large volume for relatively few calories will reduce hunger without sitting heavily in your stomach. If you must have dates, combine them with nuts, and limit your portion. Grains will make you feel sluggish as your body struggles to digest them, so I advise that you avoid the rice altogether. If this is too difficult, limit the amount and try to eat it earlier on in the evening.

Exercise Maintaining an exercise program will not only help you keep off any unwanted kilos but carried out correctly, it will also increase your energy levels, too. Workouts need to be tailored, and in general, the intensity should be reduced. Most of our clients chose to exercise an hour or so before or after Fatoor. That way, they are able to hydrate and feed their muscles not

long after their session, or they can eat, train and then return home to eat some more! Watch out for feelings of lightheadedness or confusion, because this can lead to injuries.

Sleep Making sure you’re getting the right amount of sleep is just as important as eating right and exercising. If you’re planning to socialise late into the evening, try and rest before. A passion for people and place

Dr. Lana Peters

L

ana Peters is the well-known face of Bahrain’s first Osteopathy Centre, with a fiery commitment to her clinic, ‘Back on the Move’, and to the advancement of integrated healthcare and complementary therapies in Bahrain. Lana grew up in Bahrain and, from an early age, developed a love for this country. “I spent the most impressionable years of my life here, which is why I feel so connected to this land and its people’’ she says. Lana gained her Osteopathic qualification (DO,ND) at the British College of Osteopathic Medicine, in 1984 and gained a BSc(hons.) in Osteopathic Medicine at the University of Westminster in 1997 in Australia. In addition, she holds a Graduate Diploma in Animal Chiropractic. She has been self-employed as an osteopath, practicing in the United Kingdom, Australia and now in the Kingdom of Bahrain. In 2013, she founded Back on the Move with a mandate to improve the lives of Bahraini citizens and expatriates from all walks of life and was committed to bring awareness and a holistic view towards health and wellbeing. She is passionate about integrating her form of therapy with others such as physiotherapy, massage, acupuncture and more. Lana explains. “I see a future where mainstream medicine embraces every recognised form of complementary therapy, bringing collaboration and integration that alters a better health model for Bahrain”. Lana has particular expertise in sports

healthcare and has been involved with the treatment of national and state level athletes for over a decade. Her former experience in Bahrain included practice at the American Mission Hospital and the National Sports Institute as an Osteopath back in the 1980’s. The higher we climb the more breathtaking the view, I’m amazed at how green it is and beautiful the trees are. I’m also amazed I’m not freaking-out as the roads are organized chaos; like a choreographed driving dance that’s at once utter madness, yet polite and calm. Not

one for liking heights, or manic motoring, nevertheless I find myself smiling along with everyone else, completely mesmerised by this wondrous place. Climbing around 4500 feet, we arrive at Ananda nestled in the foothills of the Himalayas. A majestic Maharaja’s Palace resplendent before me, I can hardly contain my excitement at the overwhelming beauty surrounding me.

Located on a 100 acre former Maharaja’s Palace Estate, Ananda is encased by graceful Sal forests and overlooks the spiritual town of Rishikesh home to International Yoga Festivals, famous Ashrams and the Ganges river valley. Welcomed by a spiritual cleansing ritual from the warm and friendly staff, a sense of serenity pervades me and I know this will be a transformative experience. Designed in the colonial hill architectural style, Ananda’s 78 rooms, suites and villas blend seamlessly into the lush landscape. Before being taken to my deluxe Garden View room, I’m warned to lock my balcony door as the intelligent monkey population is waiting to steal apples. My room is stunning. Serene, luxurious with a gorgeous view overlooking Rishikesh and the river Ganges. My perfectly appointed bathtub means I can take a sumptuous soak whilst taking in the picturesque panorama.

Ayurvedic Diagnosis First up, an appointment with one of Ananda’s doctors who checks my blood pressure before I eagerly fill out a questionnaire to see which dosha I am—Pitta, Vata or Kapha. Ayurveda states the body is made from fire, water, earth and space; understanding this helps with balance. I’m Kapha and my spa treatments and diet is tailored accordingly. My goal is to detox body, mind and reconnect to myself. My bespoke plan includes two detox spa treatments a day, yoga classes and the state of the art gym, outdoor temperaturecontrolled swimming pool and luxurious hydrotherapy facilities are at my disposal. Forgoing yoga and gym for meditation, breathing, chakra cleansing, cranial sacral therapy and reiki it’s time for my meal plan.

“Ananda isn’t leaving me as I take its spirit with me, carried in my heart.” Detox Delights As Kapha, I need to incorporate warm foods, eat three meals a day, no snacks. I’ve chosen to become teetotal, so a new eating plan will compliment. I meet Ananda’s executive chef who promises a mix of Kapha elements, detox and weight-loss plates, big on flavour, low on calories. Spoilt with Michelin-starred feasts, I hope he delivers. He does. Amuse bouche, for every meal, is watermelon juice and detox tea. Baked asparagus wrapped in filo pastry with almond, apricot and rosemary relish (23 calories) bursts with flavour; followed by hearty and rich, steel cut oat and vegetable soup (70 calories). Main course is whole wheat spaghetti, soy bolognaise, tomato essence and grilled aubergine tasting of Italian summers (223 calories). The food is sensational. Perhaps chef is a wizard with a brigade of magicians as pudding is pannacotta, defying its 90 calories. Detoxing never tasted so good!

Women in Coffee New Nespresso study establishes a tool for measuring and analysing the gender gap

A

dvancing gender equality is a key driver for coffee sustainability and can have a significant impact on coffee quality and productivity. Strengthening the role of women farmers would increase economic growth, improve social well-being, ensure sustainable development and reduce poverty among millions of people.

This new research by Nespresso examines the barriers to strengthening the role of women in coffee farming and identifies opportunities to increase the involvement of women – representing huge potential benefits for communities across coffeegrowing regions. Empowering women to play a more direct role in the management of smallholder farms could have a significant impact on the economic and social development of millions of people. Research by the UN shows that when women work economies grow faster and communities directly benefit as women tend to invest more of their earned income into their family’s health, nutrition and education.

However, in many countries women are lacking equal access to training and support, lessening their potential to play a significant role in coffee production. This is often due to men often owning most of the land and often have additional responsibilities such as child care and domestic duties. One of the objectives of the AAA Program - which encourages farmers to learn sustainable quality practices - is to ensure women farmers have access to this critical knowledge and training that can trigger a mindset shift and behavior change that can positively impact the sustainability of coffee sourcing. Research showed that many farmers prefer being trained by women agronomists, so Nespresso has started tailoring recruitment processes to ensure we attract more women to those positions. Already, women represent 31% of the 441 agronomists working with coffee farmers worldwide through the Nespresso Sustainable Quality TM Program (compared to 15% global average, according to World Bank estimates).

New gender equality analysis tool in the field Through a new study that aimed to measure the gender gap in coffee farming, Nespresso has developed a field-tested gender analysis tool that supplier field teams can use to get a deeper understanding of the gaps and opportunities to strengthen the impact on women coffee farmers’ participation,

learning and economic empowerment. The tool collects a wide set of data on farmers including; education and literacy levels, access to transport, views on female trainers as well as comparing how husbands and wives view their roles in coffee farming. Based on the findings from the analysis, Nespresso is implementing new initiatives including gender sensitisation training and new recruitment processes for agronomists across different local communities.

AAA program training commitments for 2018 All members of the AAA program, including more than 400 agronomists as well as farmers and community and cooperative leaders will receive new gender sensitisation training incorporated to learn about the benefits of increased gender equity and the methods of achieving it. This training will be part of onboarding processes and followed up with regular refreshers. Additionally, the analysis found many women stated a preference for female trainers. The AAA program will work closely with local communities to tailor recruit initiatives for female agronomists and the roll out of a revised sexual harassment policy will ensure a safe work environment for women. Nespresso is investing more than 220 000CHF to deliver a number of these on the field programs during this year.

Daniel Weston, Nespresso Head of Sustainability said; ‘‘Gender equality is a critical part of coffee sustainability and something that is an integral part of our AAA program. We know there is not a ‘one size fits all’ approach for the 70,000 coffee farmers of the AAA program, so we have been working with our partners to find the most appropriate ways to increase the number of female farmers within our program. For example, to address female farmers not feeling qualified to apply for an agronomist role we have advertised a several-day training course instead of a job offer and found more females were inclined to participate. We are proud to be leading the way in creating initiatives that encourage more women to participate in coffee farming.’’

She said; ‘‘We work closely with Nespresso to deliver tailored sustainable solutions for coffee farmers. Our field agronomists working in the AAA program work and live in the field, and are able to identify gender sensitive approaches that work for individual communities. For example, we have seen the presence of female agronomists in certain areas has boosted the participation of female farmers in training programs.’ n

What’s really special for me was the interior of the hotel; it’s something that you really have to visit even if you’re not going to stay. The hotel boasts 298 guestrooms, including 65 sprawling suites, all thoughtfully-designed to tell a story.

The hotel ran out of rooms so they’ve upgraded my accommodation into a suite. Again, what made this room stunning was the interior… it was just incredible! Whereas most hotels tend to be quite similar, the Renaissance Downtown Hotel, Dubai definitely stands out!

Led by the renowned interior firm WA International, the hotel’s design sets the stage to inspire a sense of spontaneous discovery at every turn: from the dynamic art installation of Dubai’s cityscape that takes center-stage upon arrival, to the cheeky photography in each guestroom, complemented by a Pablo Picasso’s famed camel sketch reimagined into a 3D iron rod sculpture – both playful jests to reframe your stay.

The Food They say that the way to a man’s heart is through his stomach and the outlets at Renaissance Downtown Hotel Dubai definitely got through mine. The hotel’s culinary outlets are set to become highlights of the city’s prominent and bustling food scene. It features a relaxing terrace offering an amazing view of the Canal – a perfect place to unwind in the city and enjoy a drink or two. According to Bleu Blanc, the focal point of the restaurant and its menu is the woodfired grill, representing the fire that often is reminiscent of the heart of a French farmhouse – a source of warmth that brings loved ones together. Moving onto the star of the night, the scrumptious offerings. The course started with the perfectly charred octopus. They had a selection of the steaks which was the Black Angus Butcher’s Cut and I had the rib eye as the main. I also had mac and cheese with black truffles as a side dish. That was a lot of food however, the Chef insisted that I do not leave the restaurant without trying the King Crab leg and it was really incredible! The service they offered was impeccable. I had somebody called Lauren who was serving me; she made the night a great journey and I was very well lookedafter throughout the dining experience. Furthermore, the General Manager Juan was very attentive and made sure that I had a spectacular time. He took real pride in the quality of his restaurant. n

What have been some of the major highlights with Wyndham? If we look at the EMEA region, the group has never witnessed the type of growth we experienced in 2017. hat are you looking for in your summer holiday this year? Sunshine and seas, or maybe mountain ranges and milder climates. If you’re anything like we were last year, seeking the sun was the last thing on our minds. We wanted fresh air, good food and I was after enjoying my favourite hobby horse riding. Where better to go than the beautiful British Isles? Our first stop was London. It's busy and bustling, and yet still boasts an abundance

of deliciously green spaces that include heavenly Hyde Park, with 350 acres of gently undulating paddocks, mature trees, wildflowers, lakes, and most importantly, a horse-riding path. I was able to trot my way along the path aboard Puzzel, the sweetest Irish Cob from Hyde Park Stables. Food was also a focal point of our London stay. We dined at the divine 2 Michelin star gastropub Hand and Flowers in Marlow, as well as the Savoy Grill, run by Gordon Ramsay and full to bursting with old-world class. Georgina Jennsen

After 6 nights in London we were ready for a change of scenery, so happily boarded the train bound for Edinburgh. And if you're planning on visiting this gorgeously gothic city, August is definitely the month to go. This is the time that more than 3,000 comics, actors and dancers converge on Edinburgh for the month-long festival, and offer quite literally, things to see and do 24 hours a day. And apart from enjoying the live entertainment, Edinburgh offered us the chance to dine on that oh-so Scottish dish, haggis, before walking most of it off by climbing the extinct volcanic rock known as Arthur's Seat. From here, the highest point in Edinburgh, you can take in breathtaking 360 degree views of the city and far beyond.

On our final day in Galway, Lady Luck smiled down upon us, giving us a day of glorious Irish sunshine. Just perfect for my third and final horse ride of the holiday, which saw me aboard another Irish Cob, 'All That Jazz'. Jazz carried me into the Atlantic Ocean for a quick dip, before powering up into the rocky Burren Mountains and along the ancient pathway. This was without doubt, the best way to enjoy the sweeping vistas of the Emerald Isle.

Edinburgh was followed by Inverness, which is an easy 4 hour journey away by train. With its multitude of lochs and hills, Inverness and the outlying areas are perfect for people who like a little fishing and hiking with their holiday. Inverness also proved to be the perfect place for the second horse ride of my holiday, around and down to the shores of Loch Ness, no less.

This equestrian extravaganza has been running since 1864, and has become one of Ireland's largest events. It is also a true celebration of Ireland's affinity with the horse. We were able to enjoy everything from the elegant ladies sidesaddle class, to the nail-biting excitement of the Longines Grand Prix featuring some of the best show jumpers in the world. Jet Lag British Airways’ Commercial Manager Shares His Tops Tips to Avoid the Dreaded Jet Lag

F

or travellers crossing time zones, jet lag is an undeniable drag. But while most flyers are aware of the effects of jet lag, few of us take steps to limit its effect. Having flown to 75 countries across five continents, I have developed my own tricks through ‘trial and error’ which I’ve found reduce the effects of jet lag and keep me feeling fresh throughout my business travel schedule. • Eat Wisely: Carbs help me sleep quicker, whereas meat or eggs tend to keep me awake. Having observed this, I tend to choose my meal based on the duration of my flight and if I intend to sleep or not. Choosing healthy inflight meals such as fruits and salads also keep you hydrated. • Combatting lower humidity: It is important to drink water at frequent intervals to stay hydrated when you fly. Lower humidity levels at 35,000ft in the air cause thirstiness, so reduce your consumption of fizzy drinks or alcoholic beverages and opt for water – you’ll find yourself better hydrated and rested. • Caffeine strategy: Be smart about when you drink coffee or tea (and how much) as caffeine disrupts sleep always avoid caffeine in the two-tothree hours prior to bed time. If you want to stay awake, get the most from tea or coffee by working out when

you’ll be at your most sleepy and top up on caffeine then, rather than drinking it throughout the day. • Comfort and naps: Wear comfortable clothes when you fly – it is much easier to sleep or rest well when you’re wearing a comfortable outfit. On night flights, I change into pyjamas after take-off – they allow me to stretch out on the fully flat beds in Club World and sleep. Additionally, the new sleep proposition we’ve introduced from The White Company, which includes a super-soft woven blanket, luxury duvet and padded mattress, adds extra comfort and offers an even better night’s sleep in the sky!

During your flight, relax your muscles before sleep by doing gentle stretches and walking up and down the aisles. Undoubtedly, travelling in the mid-air luxury of British Airways’ Club World cabin helps beat jet lag and hit the

ground running when you land. When I arrive at London Heathrow I head to our Terminal 5 Arrivals Lounge to freshen up with a shower and refreshments before continuing with my day. • Once I arrive at my destination, I eat and sleep as per the time shown on my watch and not as per what my body asks for. For me, this is the key to success. If you give in and try to fully recuperate the lack of sleep from a flight, it often turns out to be a disaster. n

hat sparked your interest in fashion?

I’ve been interested in fashion design since I was a young child, but decided to pursue it fully after graduating as an environmental engineer and working in the “corporate world” for a few years. I went back to school, fashion school this time at LCF, to get a formal fashion design education. I think if we make the question what “sparks” your interest in fashion, I would say: science, nature, architecture, good music, humanity, those geometry compass sets – a variety of things really.

How has your cultural root influenced your collections and designs? My cultural roots are derived from a culture of justice and remembering. I think my approach to the environment and to fashion encapsulates both.

Tell us more about the FW17/18 collection, where did you draw the inspiration for this? The FW17/18 collection, "The Waves of the Future" is inspired by the interaction of humans with the environment in Bahrain. I am a fashion designer, but I am also an environmental engineer by background. This influences how I have designed my garments a lot – both in the way they look and the way they are made.

I also like Saar, which I think always has an interesting mix of new and old, local and foreign (in the modern sense), and always feels like a calm getaway from the city center.

For example, Look 02 in the FW17/18 collection has a pleated and projected collar with a staggered neckline – this neckline is inspired by the man-made changes to the coastline we’ve seen in Bahrain in the last decades.

What do you think makes Rawan Maki a distinctive successful brand in today’s overly crowded fashion world? I think that fashion is important, it informs (and is informed by!) everything we do. I think Rawan Maki is distinctive because it is futuristic, and the future is now and it is beautiful. Specifically, I think that the Rawan Maki wearer is elegant, and she is conscious! She is bold, and understands the world is made of finite resources, and she’s ready to make a statement with her fashion choices.

I also think the amount of scrutiny and detail that goes into each Rawan Maki piece is very different from what we see on the high street today.

The collection looks incredible! Do you have a favourite piece? It’s hard to choose. If I had to, I would say the Dredger (Look 9), because I’ve seen it styled so many distinctive ways on different people, and it always looks like a flawless statement. It’s also perfectly thick for what I call “Bahrain winters”. Also, the top in the collection (Look 4A). It just rises up the neck and curves so unexpectedly but meticulously. I like surprises like that, ones that can only be seen once you wear the garment.

Which part of Bahrain is your favourite and why? My grandmothers’ houses. Both of them. One lives in Isa Town and the other one in “Old Manama”. They have rejuvenating homes. I also like Saar, which I think always has an interesting mix of new and old, local and foreign (in the modern sense), and always feels like a calm getaway from the city center.

He has worked for luxury hotels all over the world and began his culinary experience at the Kingdom in 1983. During our visit, Chef Samara prepared a marvelous Lamb Ouzi, a Ramadan favourite with roast lamb marinated with spices served on a bed of Oriental rice. It was love at first bite – the meat was succulently soft and beautifully seasoned. According to Chef Samara, the lamb was cooked to perfection between two to three hours to ensure that the meat is tender. On top of the melt-in-the-mouth goodness, the blend of spices gave us a unique gastronomic adventure. The sides weren’t less remarkable – a spread of the Mediterranean specials like tabouleh, fatoush, baba ganoush, hummus, moutabel, potato salad, labneh and more

were available. The Iftar menu is filled with genuine and culinary selections prepared to satisfy each and everyone’s tastes. When asked about how he handles the competition between the hotels during the special month of Ramadan, Chef Samara emphasized the importance of loyalty and trust – of going above and beyond the hospitality most hotels provide. He added that it is vital to maintain quality while connecting with the guests and clients. True enough, Chef Samara’s energy seemed to lift the people’s spirits up during our visit.

“Everything I do is from my heart”, Chef Samara commented on his cooking process. Whether he’s cooking for a luxurious catering or for his family, Chef Samara extends the same passion and love for what he does through his dishes. He appears extremely fervent and very knowledgeable about his craft as well. The location of the Iftar will be moved to the Al Rifaa Ballroom, which can accommodate more than 250 guests. The new setting reflects the charming Oriental interior of the Middle East further complemented by classy modern finishes.

Apart from the beautiful setup, live cooking stations and a very clever lineup of authentic Ramadan dishes, the service provided by the InterContinental Regency is absolutely immaculate. This makes the entire sharing feeling of Ramadan and eating together all the more enchanting. The Iftar will be served after sunset for BD15++ while the Ghabga will be available upon request for groups. Rose Biscuit Butter Flour Sugar Egg yolks Rose water

- 100gms - 200gms - 80gms - 60gms - 20 gms

Cheesecake Philadelphia cheese Salt Vanilla Corn flour Sugar Whole eggs Saffron cream Egg yolks

Rose Biscuit Coarsely crumb the rose biscuit and add in the 75gms of meted butter (butter temp 24°C). Mix all ingredients together to form a soft dough. Bake at 165°C for 12-14 mins and leave to cool.

For the cheesecake Mix the Philadelphia cheese, salt, corn starch and sugar using pedal attachment. Once the sugar is melted, add the eggs and yolks gradually. Next, fold in the 50 grams of saffron cream slowly. Pour over the rose biscuit base and bake at 320°F for 35 mins.

Dishes Zodiac Multi-Cuisine Restaurant at Al Manzil Hotel Bahrain delights their guests with these flavourful dishes. Devilled Potatoes Preparation: Cook potatoes in a pan of boiling water for 10 mins until almost cooked. Drain and set aside. Heat oil in a large, heavybased pan over high heat. Add onion, chilli, curry leaves and mustard seeds, and stir for 2 minutes or until onion starts to soften slightly. Reduce heat to medium, then add garlic, Maldive fish, chilli flakes and turmeric, stirring to combine. Add tomato, season generously with salt, then cook for 2 minutes or until tomato begins to break down. Increase heat to high, add potatoes and cook, stirring, for 10 minutes or until potatoes are cooked and coated in spices; add a little water if the mixture becomes too dry. Serve.

Fish Ambul Thiyal (Sri Lankan Sour Fish Curry) Preparation: Wash and dry the fish of your choice (preferably tuna) on paper towels. Soak

Reduce heat and simmer uncovered until the fish is cooked and the gravy is thick but do not stir. Shake the pan and turn fish pieces carefully once or twice during cooking. Serve with white rice.

Beetroot Salad Preparation: Combine the boiled beetroots, grated beets, pickled cucumbers, finely chopped garlic cloves together. Stir in the mayonnaise and serve. n
