Finding new homes for our furry friends... The DogFather Rescue Centre is a sanctuary for animals of all shapes and sizes. Just as Lady Liberty stands tall brandishing a giant Mr. Whippy, welcoming the tired and poor huddled masses, we too proudly serve as a beacon offering a safe haven to the abandoned, the unwanted and the unloved. Unfortunately one does not find solace without first enduring hardship and too often our animals suffer greatly before they find shelter within our walls. Take a walk through our grounds and you will encounter dogs and cats sadly missing a limb, in some cases two. Similarly others have lost a tail, an ear, even both eyes. Thankfully our furry friends (especially dogs) are far more resilient than the average Joe. We humans primarily depend on our sight to perceive the world around us, whereas our canine chums employ their vastly more powerful senses of smell and hearing to decode reality. When your pooch sniffs a counterparts\'92 posterior, he\'92s basically reading a Facebook page! That being said,The DogFather team are committed to animal rehabilitation as well as rescue so when one of our dogs was suddenly stricken blind we did all we could to help him. Fortuitously we managed to arrange a visit by a specialist who happened to be in the region. Dr. Rui Oliveira from Portugal is a leading veterinary ophthalmologist with offices in London and Singapore who travels the globe extensively consulting in his field. He made time for us, travelling to Bahrain where he examined all 3 blind dogs in our charge with a view to hopefully improving their overall quality of life. Regrettably, Dr. Rui with his vast knowledge and experience was unable to deliver the miraculous. Bruised but not beaten we regrouped. Going forward, our sole aim would be to find them all a loving home. Word travelled and only days later we found just such a home in the Commonwealth of Kentucky, USA. Our Daredevil dawgs along with three disabled friends are heading home, soon their snouts will be hoovering up information from the Bluegrass and listening to the Ohio River running nearby. We wish them well on their journey West! Tune in next month for some monkey business! n

Always have your passport, work ID, government IDs, and credit or debit cards ready for you to freely get into airports, transportation hubs, and your accommodation. Having a valid ID and a credit or debit card guarantees transport to and from your destination and in finding accommodation.

Plan Your day (or days)

Whether it be for work or for leisure, a good start to have a firm grasp on how your travels would go, is building an itinerary. Underestimating your free time and the choices to be made when stepping foot in your destination is disastrous. Typically, you would have too many options and too little time to decide what the best option would be, leading to either missing out on what you were better off enjoying or overspending to accommodate all your wants. Making an itinerary beforehand that involves carefully chosen tasks for the day assures you spend your time in the the most efficient and enjoyable way.

Your budget

Know beforehand how much you’re willing to spend and have a good amount as back-up. Depending on your destination, the cost of food, transportation, and accommodation would always vary from what you are expecting. It is best to have a little lee-way on computing your expected costs. Also keep in mind whether you are planning to buy items from your destination or not, and adjust accordingly to your projected budget.

Your clothes

Although having a good number of jeans, shorts, underwear, shirts, or any other article of clothing is fine, rummaging through your bag and trying to pair them up and decide what to wear will leave you frustrated most of the time. Plan an outfit for the day and pack it as such, this way you’ll have full attires, that fit the destination, on your luggage rather than a collection of clothes you realize you don’t end up using by the end of the trip.

Deciding on a reasonably sized luggage or backpack is a good start in packing light, this puts a limit to what you will bring rather than picking clothes and finding a backpack to fit it into. Having luggage that you can freely carry reduces the stress of finding space for it, checking inventory, and having to carry it along your journey.

Wake up to alarms

Missing flights, accommodation check-ins, and tour meet-ups are the worst things that could happen when travelling. It brings up problems not only for you but also for the parties involved, wasting both time and resources. Putting an alarm and waking up early for your schedule is critical in achieving your desired itinerary and having a trouble-free trip.

Prepare for emergencies

Be it allergy medications, a small firstaid kid, extra cash in-hand, prescription scripts or any similar circumstances, have it ready and easy to grab or find. Having an allergy attack or getting hurt is much more common when you’re at a new place trying out new things, enjoy your trip but be prepared for unexpected slips.

Forget business

Not everything! But it’s good to keep in mind what your reason is for travelling. If it’s for work, forget the leisure until the tasks are done, and if it’s for leisure forget the work you left behind. Immersing one’s self in the place he/she visits makes travelling unforgettable. Taking pictures and souvenirs can be memorable but looking back and remembering locals you’ve met or how much at awe you were at the places you visited would be much more endearing to hold.

Living in Bahrain: A blurb on the real world Living here for the past few years I have met a lot of characters and always seem to stumble across this same hot topic. It’s always ignited through a need for someone to bond insistently through their belief that Bahrain is not a real life. I’m definitely not the right person to say this too because I’m living a real life here with ups and downs but the difference is, I’m grateful for what I experience and the country I live in. As people beat their own drum on this topic, I simply listen at first and then I ask them if they really hear what they are saying? It’s usually followed by an escalation of weak point proving attempts such as my favorite when they puff up and almost unappreciatively make the statement “I haven’t done my own laundry in years since living here”. As if to mean doing your own laundry and cleaning your own home is enough to make it a real world. I loved what my New Yorker friend Sarah stated when I asked her opinion on this as she commented: “Would life in Bahrain be considered real if we walked to a well for water?” Many equate what is considered the real world with levels of suffering, inconvenience or lack of privileges, or anything opposite to what their paradigm about real life is. Pain is relative. The reality is the fact some people who move to Bahrain can actually live a more privileged lifestyle here makes it unreal to them and they have to complain about it. When I share my point of view people it comes with this advice “why not look at life in Bahrain from an upstream point of view? Focus on the appreciation for some of the privileges which would be less likely in your home country which gives you more time with your loved ones”. A tropical beach is no less real than a dark street corner and Bahrain life is just one of the many versions of real life on planet earth, even if some people don’t do their own laundry. n

I

t’s funny how I always end up in Palawan. No matter how much I try to cross this island off my checklist, my hands always seem to automatically book flight tickets whenever they get the chance. This time, I travelled the northern end of Palawan’s main island, El Nido. I don’t think I can possibly convey how beautiful this place is but I will try… Getting to El Nido is no easy task. They say that you have to experience ‘the bad’ in order for you to appreciate ‘the good’ – well, whoever said that quote definitely knows what he’s talking about! Located at Southwest of Borneo, Palawan is accessible by either boat or airplane and is about an hour and a half away from the country’s capital, Manila by air. From Palawan’s capital (Puerto Princesa), travelers have to endure a grueling six-hour van ride to El Nido. The van ride on the way to El Nido was the most intense ride I’ve ever been in. Our driver who looked like he was trying to break a record, was swerving left and right without slowing down for bumps! With my insides feeling like they were about to come out, I

Travel wasn’t able to take photos of the stunning scenery outside. After five arduous hours, we finally arrived at our destination. The divine tours of El Nido are one of the most sought-after tours in the Philippines. Travelers can select from an eclectic option, each boasting with its own highlight. I booked the most popular Tour, Tour A; the destinations include the Small Lagoon, Big Lagoon, Secret Lagoon, Shimizu Island and Seven Commandos Beach. We had our tour in reverse order with Seven Commandos Beach being the first destination. The island has a long white sandy beach lined with palms trees. Seven Commandos is believed to be named after the seven remaining Japanese commandos who lived in the island as stragglers after World War II. Next stop: the lagoons! With its tranquil turquoisegreen waters the Big and Small Lagoon, showcase a kaleidoscope of marine life. Scientists believe that these lagoons were actually caves which abound in these islands. The roofs of these caves must have collapsed millions of years ago, and these lagoons have emerged in their stead. I’ve never seen sea water as pristine as this one! We spent the afternoon kayaking across the lagoons.

Surrounded by limestone karst cliffs, the Secret Lagoon is located in a small island reminscent of the movie ‘The Beach’. As we entered into a small hole, a massive caldera surrounded by karst cliffs with a lagoon in the middle welcomed us. A week is not enough to get a decent grasp of the island lifestyle. With the towering stilts as my backyard and the sound of crashing waves my alarm, I can’t help but think how good life is. At that moment, I truly felt relaxed and free from all worries. Majestic sunsets and boat trips to hidden lagoons and secret beaches? I mean, for crying out loud, I couldn’t conjure up a more idyllic scene if I tried. n

What is Beauty - Part 1 How do you define beauty? Is it the latest make-up trend, or picture perfect face and body dimensions? Is it youth? Is it the latest collection straight from the Parisian catwalk by Dior? Perhaps you feel beauty is an aura or a feeling, or maybe even what mass media shouts it is? Could beauty be defined as an act or way one conducts themselves in life? Beauty is multi dimensional and can be attributed to art, a state of mind, ways of living and being, as well as how one looks, and all are perceived or even distorted within the eye of the beholder. Beauty is such a difficult topic to define as it’s perceptual and subjective. It’s also forever changing over time and across cultures. Defining beauty can be a two edged sword: by celebrating society’s collective perception of beauty as a status symbol we can breed conformity and hinder more people than it helps. It does this by creating misguided judgments for those that sit outside of what we are being told, denotes beauty. Just because someone tells you someone or something is beautiful, does not necessary make it so to the individual. From an aesthetics point of view, cross-cultural surveys on beauty found that all groups had the same perception of facial beauty, referring to the mathematical Golden Ratio (Phi) equation. This ratio created by Greek sculptor and mathematician, Phidias (490–430 BC) appears in beautiful things in nature and is used in art and architecture to produce pleasing outcomes. According to this theory, beautiful faces must conform to this perfect proportion and is what plastic surgeons refer to when performing cosmetic improvements. Interestingly when we smile, our faces will display even more of the Phi elements. Variations of skin colour and tone, structure and all the emotions our faces display make us unique, surely our worth can’t be reduced to a simple ratio. When we delve a little bit deeper than skin however, we can experience beauty in many other ways, which I’ll share more in next month’s article. n

couple of weeks prior to this event, I got a call from the PR agency for BMW Middle East asking if I’m able to attend a regional BMW event, supported by EuroMotors, being held at the Bahrain International Circuit. It was to experience and test drive the all-new M2 Competition and M5 Competition. On a race track. How could I possibly say no to this? It was a two day event to experience what the most powerful letter has to offer, which started with an evening event

followed by a thrilling track day testing the capability of the M2 Competition on the circuit and the M5 Competition on a drift track. An opportunity like this rarely comes up where you can really discover all the exciting facets of the BMW M. Everything was well organized, and it didn’t take long after arriving at the track until I was behind the wheel of an M2 Competition – they must of predicted our excitement and ensured we had as much time in the cars as possible. We were split into groups and my groups’ experience started with the M2

It was a little scary at first, but you soon get comfortable and realize the capability of this car and most importantly, you are driving this car in the very conditions it has been designed and engineered for. It was an adrenaline junkies dream. I could best describe this car as a rocket on asphalt.

Competition on the race track. I picked the black one – in my opinion it is by far the best colour for this car. Climbed in the car, seat adjusted, mirrors adjusted, seatbelt on, foot on the break and pushed the start button. The engine roared… the BMW M2 Competition is out to break records. The inline six cylinder engine with M TwinPower Turbo Technology produces 410 horsepower and accelerates from 0 to 100 km/h in 4.4 seconds. I have to say, I was amazed by how well it stuck to the track. I really pushed the car to high speeds and threw it around the track and the tough corners and it gripped like nothing I’ve

Next up was the drift track with the M5 Competition… this took a lot more skill as opposed to blasting around a track. And it took more skill than I first thought. A certified instructor took our group in one of the cars and performed a perfect circular drift around the track to show us how it’s done. It’s hard to explain in writing but essentially, you keep it in second gear and put your foot down on the gas, as the revs build you steer in the opposite direction. The hardest part is holding the drift for the full circle. After some attempts I finally got the hang of it. There are few places in Bahrain where you can test a BMW M to its full capacity – okay, I wasn’t testing it to its full capacity – far from it, rather I was testing myself! This day proved to me how record breaking these new cars are and the brilliance in engineering from BMW. n

o true is the saying that you can not be a prophet in your own village. And indeed, upon receiving an invitation to a private viewing of Bahraini artist's Sheik Rashid bin Khalifa Al Khalifa (or simply Mr. Rashid Khalifa as he chooses to be known in the art world) exhibition Penumbra: Textured Shadow, Coloured Light at the Saatchi Gallery in London, I wondered why I have never seen his work exhibited in Bahrain before? London Saatchi Gallery is a world renowned Mecca of contemporary art and it is a privilege for any artist to be invited to exhibit there. As if it was not a task challenging enough, the artist decided to step out of his comfort zone, his habitual artistic sphere, and create something entirely new. Looks like the gamble played off and the end result was truly breath-taking!

London Saatchi Gallery is a world renowned Mecca of contemporary art and it is a privilege for any artist to be invited to exhibit there. The display of aluminium mesh wall works, steel grid mobiles and a colossal, walk-through maze, with an aid of a very intricate lighting casting mysterious shadows, transformed a white gallery space into a hypnotic, almost spiritual experience. The viewer was lured into allegorical narrow alleyways, traditional in Middle Eastern architecture. And indeed, according to the artist, the mashrabiya (an element of oriental architecture) was one of the the main inspirations behind the show. The movement and viewer’s perspective, the contrasting pattern of light and shadow completed this unique concept. The effect was powerful enough to make one feel transported into a different sphere, be it a memory, an illusion or a daydream.

Yet, behind any art and beauty seemingly so effortless and pleasing to the public, lies an enormous effort uniting an original talent, flawless execution and good curatorship. In this case, the outcome could not have been better and exceeded everyone’s expectations. Praise and positive reviews flooded after the star-studded opening night, quite a lot of artworks have been reserved by collectors and modern art-museums, Christie’s (a world famous auction house) invited their clients to a private viewing and so popular was a public demand, that the gallery extended exhibition for entire month. To mark this unprecedented success, Bahrain’s ambassador to the UK H. E. Fawaz bin Mohammed Al Khalifa held a private reception, which was attended by the Minister of Industry, Commerce and Tourism H.E. Al Zayani, diplomats, dignitaries and Bahraini students. Scrolling through my own pictures of an opening night and piles of favourable post-show publicity material, I could not help but wonder, does one really need to leave one’s village in order to achieve recognition and success. Or could we still hope for an equally impressive and magnificent show held by Mr. Khalifa here in our tiny Bahrain? One can always hope, at least I will...n

Redefines Liability and Mobility

here’s not one solution for everywhere, but we believe that everywhere has a solution – we just need to match them up and get people moving.

According to the UN, 55 per cent of the world’s population lives in urban areas, a proportion that is expected to increase to 68 per cent by 2050 - and commuting to and from those urban areas, there will be an incredible demand for various modes of transport. One of the reasons cities are becoming more congested is because increasingly people are having to move there to work. A daily commute into a city might mean having to buy a car, but a car is still a luxury for the broad part of the population in many countries where we operate, so if Careem can provide an alternative transport then we can move people in, around and out of a city for less. Shared mobility could lead to an 80 per cent reduction in the number of vehicles by 2050. In turn this reduces pollution and

BSB Students Excel in IB and 'A' Level Exams

T

he British School of Bahrain is proud to congratulate our students on their excellent examination results achieved for 2018 in IB and 'A' Level exams. The GCE Advanced level (A-Level) cohort sat 133 examinations and achieved an overall pass rate of 98%. We are delighted to report that 40% of all A-level grades were at grades A*/A; this gives BSB a 3-Year rolling average for A*/A grades of 43%. Meanwhile, our IB students achieved an incredible 100% pass rate. An impressive 96% of the Year 13 group secured places in the

top universities around the world, including Cambridge, Imperial College London, London School of Economics and Durham in the UK, also Toronto in Canada and Groningen in Holland. The large majority (75%) of these students secured their first choice universities with all others securing their second choice places. The remaining 4% of students have taken gap years or started vocational courses and training. Feature London. Nikola Gonkov scored 4 A grades at A-Level and is now studying Business Management at Newcastle in the UK. A small cohort of 12 Year 13 students completed the demanding International Baccalaureate Diploma Programme and achieved grades ranging from the highest grade 7 (A-Level A* equivalent) to grade 3. 100 % of all IB grades were grade 3 and above. The IB group achieved a 100% pass rate compared to a world average of 79%, with an average point score of 33 points, compared to a world average of 29.7 points. Marya Abdulkarim achieved 40 points (equivalent to A*A*A at A-Level) and secured her place at King’s College, London to study Law . Daniya Ahmed also achieved 40 points and is now studying History at the University of Cambridge, in the UK. Twelve BSB students took BTEC or BTEC/A Level combinations, where the results were also outstanding. From 23 entries, 13 scored distinctions*, 8 scored distinctions and 2 scored merits, therefore 92% at distinction level and above. A special mention must go to Reem Akbari, who achieved two double distinction* grades, equivalent to 4 A* A-level grades. Reem secured a place at Kent University in the UK to study Marketing. Our Year 11 group consisted of 106 students who sat 968 General Certificate of Secondary Education (GCSE) examinations. They are graded A* - G, where A* represents an outstanding level of attainment. Grades C and above are widely considered to be a pass. Some examination boards use the new GCSE numerical grading system instead of letter grades. The numerical system has a scale of 9 to 1, where 9 is considered to be above an A* grade. The GCSE results at BSB were particularly impressive, especially

at the higher grades, with 29% of all grades at the A* or 9-8 level, compared to the UK average of 10.8%. Our 3-Year rolling average for A* and 8-9 grades is now 22%. The percentage of A*/A grades and 9-7 was 51% compared to the UK average of 21.4%. Overall, 87% of all grades were at Grade C or level 4 and above (UK 69.2%). GCSE Headline students include Jia Yi Ee, who achieved 8 A* grades as well as a grade 8 and a 9, Bayan Al Saie, 7 A*s and two 9s. Atta Yousafi achieved 8 A* grades, an A grade, a grade 9 and a grade 7, Alexandra Roberts achieved 7A*, 1 A and a grade 9 and 8. Kamal Haddad attained 7 A* and 3 A grades. Vian Rifat attained 7 A*s, a B and an 8. Syed Azhan Gilani scored 7 A*s and a B. Neha Govind achieved 7 A*s, an A, a B and a 5. Smayan Sharma achieved 5 A*s, 1 A, 1 grade 9, 1 grade 8 and 1 grade 7. Tryphena Evborokhai achieved 5 A* grades, 2 A grades and 2 grade 8s. Aryaman Arora achieved 6 A* grades, 1 A, 1 B, 1 grade 9 and a grade 5. Zain Al Muqbal achieved 5 A*s, 3 A grades and a grade 8. It is always difficult when a school starts to list headline students when in fact so many students worked so hard and achieved above expectations. I want to lose weight with exercise but, my chiropractor says I have kyphosis. How will this affect my progress, and is it still safe for me to workout? Charlie Answers: Kyphosis is an increased curve to the upper back, which can be caused by sitting at a desk, looking down at mobile phones, and other modern, lifestyle issues. Kyphosis is the result of the muscles in the chest and front of the neck becoming tight, and the muscles in the mid section of the back becoming long and weak. Exercising will actually help correct these issues, so you can lose weight, and work on reducing your kyphosis at the same time. Excellent news if, like most of us, you’re tight on time. It’s important to find a trainer that fully understands the limitations of having kyphosis, and there are many that don’t so chose wisely! Time should be spent stretching and mobilising, in every exercise session because these mobilisations will allow the body structure to gradually change and develop.

Top Tips • It’s better to do 10 minutes of stretching everyday, than an hour once a week. • Limit your overhead lifting until your posture has improved. • Combine exercise with continued chiropractic or osteopathic treatment. • Be aware of your posture during your daily activity, such as when you look at your phone. • Set up your desk ergonomically. Your trainer can help you with this.

Posture Perfect Have your posture measured so that the extent of the kyphosis, and the improvements you make, can be tracked. Make sure that the exercise program you’ve been given is specifically tailored to you. Your trainer will need to know any pre-existing medical conditions, injuries and what you want to achieve in order to plan bespoke sessions for you.

Break the Mould It’s important that you understand that you have to put in the work to correct your posture while you’re not being watched by your trainer! Bad habits can be hard to break but, giving yourself constant reminders can be really useful. n

Are you Eating Enough Vegetables? Whatever diet you are on there's no doubt that increasing your vegetable intake is something that will benefit you. The benefits for our cardiovascular system, immune system, gut, hormones, brain health and weight are huge and we should be aiming to get at least ten portions of different vegetables a day. Ten! I hear you say, that’s impossible! But actually it’s much easier than you think and eating a rainbow of different vegetables really will leave you feeling so much better.

Why 10 Portions? Vegetables really do have the power to prevent and treat many diseases. Vegetables provide the broadest range of nutrients and phytochemicals, especially fibre and carotenes, of any food group. They are rich sources of vitamins, minerals, carbohydrates, protein and essential fatty acids. One of the largest studies to date, carried out at Harvard University, found that people who consume 8 or more servings of vegetables a day were 30% less likely to suffer a heart attack or stroke! If that’s not a good enough reason, I don’t know what is!

What’s the Best Way to Consume Vegetables? In their raw form vegetables contain many important phytochemicals and so it’s important to eat some of your vegetables raw each day. However, some of the most beneficial carotenes such as lycopene (tomatoes) and lutein (leafy greens) are better absorbed from cooked foods. Overcooking vegetables results in a loss of nutrients and so light steaming, baking or quick stir-frying are the best ways to eat your vegetables. Try not to boil vegetables unless using them in soups or stews or you’ll lose many of the nutrients into the water. Try and include vegetables with your breakfast. Try having eggs with a few portions of dark leafy greens like sautéed spinach. Lunch could be a large salad with five or six portions of different vegetables. Having then already consumed around seven or eight portions, it is not difficult to add another couple with dinner. n

The garden comes off as an intimate cozy area while sleek modern tables and woody undertones dominate the restaurant’s inside. Bahrain Confidential got to visit and enjoy the chill and electric vibe of the place, along with a full crowd of tapas, wine, cocktails and Spanish music enthusiasts. The place is constantly serenaded by live band performances, or by the indubitably brilliant resident Spanish guitarist, Oscar. Going Out We tried the exceptional rib eye steak which can only be described as heavenly with its savoury juiciness further enhanced by an incredible peppercorn sauce. The restaurant manager, Marina, insisted and introduced us to a new sauce: Chimichurri - it was absolutely incredible. This sauce originates from Argentina but is also adopted by the Spanish to complement a perfectly grilled meat. The Chimichurri sauce beats peppercorn or Béarnaise, which people usually have. It’s a MASSIVE recommendation from us! You also can never go wrong with Calamari, theirs was served with black lemon mayonnaise. The Chistorra, delicious Spanish chorizo braised in white wine and garlic, is not to be missed. South-American grilled dishes like the Spatchcock Chicken and the Lobster and Gambas is also available. Exceptionally hungry? Or up to sharing with friends? LVB offers a whooping 1kg T-bone steak served sauce and your choice of side. We’d love to hear from people who finished it alone! All in all, the place was a serenade of music, beautiful ambience, and a tableful of mind-blowing dishes. Be it an intimate date or the whole gang around the table, LVB has a spot you can fully enjoy your meal. n

uigi Ferraro was born in Calabria, Italy, but considers himself a “citizen of the world”. Having acquired remarkable skills and international accolades from his international experience, he now aims to share his culinary masterpieces at the InterContinental Regency Bahrain. Chef Ferraro has received numerous awards at an international level including the nomination for “Ambassador in the world of good Calabria at the table”, the award “Italian Professionality in the World” received at Montecarlo, the award “Calabresi del Mondo” received at Campidoglio, Rome and others. He is currently the Executive Sous Chef of the Intercontinental Regency Bahrain. With his brigade de cuisine and his experience around the world, he offers fabulous international, European, and, Italian cuisines. His philosophy of modern, authentic, and delicate cuisines focused on the simplicity of ingredients and its enhancement is bound to revamp the Intercontinental Regency Bahrain’s offerings. “I have been in Bahrain for a short time but I like its modernity. A Successful Journey Bahrain Confidential shares a conversation with The K Hotel Bahrain’s Executive Chef Nitai Chand, who was recently awarded by the World Master Chef Association.

H

ow does it feel being officially titled as the Master Chef of such a big group?

I am a master chef now and I feel very honored and lucky to receive this award.

What are the requirements for this award? My senior most chef briefed me about the requirements needed. Culinary competitions were also considered. I was a gold medalist for the world culinary championship in Maldives and I was also awarded for several competitions. Moreover, my experience being an executive chef for some properties was also an add-on to this.

Is there any specific dish that stays as your highlight? I started my career with Chinese cuisine. In 22 years, I have worked with various chefs and tried a lot of cuisines but my specialization is on international cuisines. I have won a gold medal for mix seafood dish; it was grill-custard fish with sea grass, garlic rice, tomatoes and a fusion of European and Thai mixed sauce.

Who is your inspiration in this professional career? For my career, it was definitely my mom. For the title which I hold today, my senior chef and now a fellow Master Chef Sylvester Rozario has been a huge influence.

What are some of the challenges you faced? Satisfying the customers is the biggest challenge we face. We can’t please all the customers completely; people have different choices. We have to look through the culture, avoid all the complaints, see the availability and also note down the guest requirements. Luckily, we have a very good supportive team here so it’s manageable.

What’s your message to the other chefs? When we wear a chef coat, our dedication should be evident in the way we cook food. However hard you work inside the kitchen, it wouldn’t matter till your dish comes out good. This is my main motto and this is what I would like to tell the others too.

What’s next on your radar? I would love to merge with some of the chef societies and be a part of the NGOs. I am also looking forward to the opportunity of writing a cook book for the K Hotel – something I’ve always longed for. This is a great opportunity for me as it is the first cook book that will be launched by The K Hotel. n

Zodiac Multi-Cuisine Restaurant at Al Manzil Hotel Bahrain delights everyone with this roast chicken recipe.

Chicken Marsala Chicken marsala is an Italian-American dish made from chicken cutlets, mushrooms, and Marsala wine. A delicious, but surprisingly easy recipe that results in a restaurant quality dish.

Ingredients: All-purpose flour

¼ cup

Salt

-

½ tsp

Ground black pepper

-

¼ tsp

Dried oregano

-

¼ tsp

Butter & olive oil

-

4 tbsp

Sliced mushroom

-

1 cup

Marsala wine

-

½ cup

Cooking sherry

-

¼ cup

Boneless chicken breast

Chicken Marsala

Preparation: 1. In a shallow dish or bowl, mix together the salt, pepper and oregano. Coat the chicken pieces in the flour mixture. 2. In a large skillet, melt butter in olive oil over medium heat. Place the chicken in the pan and lightly brown. 3. Turn over the chicken pieces and add the mushrooms. 4. Pour in the Marsala wine and sherry. Cover the skillet and simmer the chicken for 10 minutes, turning once until no longer pink and the juices run clear.

ine dining connoisseurs are in for a delightful culinary treat this November, with the launch of a pop-up version of celebrity Chef Wolfgang Puck’s legendary Spago restaurant at Four Seasons Hotel Bahrain Bay. The one-off event will bring a true taste of Beverly Hills to Manama, and offers guests a unique opportunity to sample specially crafted tasting menus from the kitchen of one of the world’s most glamorous restaurants. Spago is renowned as one of Los Angeles’ hippest places to see and be seen, with celebrity guests flocking to enjoy its inventive, market-driven menus, buzzing atmosphere and exceptional service. The two-day pop-up event at Four Seasons Hotel Bahrain Bay will transform the Hotel’s CUT by Wolfgang Puck steakhouse into a faithful representation of this iconic eatery from Thursday 8th to Friday 9th of November. Each and every detail of the Spago experience will be authentically recreated, from the cocktail list,

A Summer Soirée Le Meridien Hotels & Resorts Launched Au Soleil in Bahrain

ttended by over 100 guests, the event featured Petit Plates menu offering light and local fare alongside rosé spritzers and aperitifs, part of the brand's signature Sparkling programme. The brand also showcased a modern twist to the iconic backgammon game showcasing it on the lobby area during the event. Inspired by the iconic beach club culture of the 1960s, a hat workshop was organized during the event with Bahrain based Fashion stylist Ashwathy Shyamkumar. Locally weaved hats made of palm tree fronds was showcased during the event where guests were given a chance to design their own hats. Inspired by the brand's French heritage and the allure of the Côte d'Azur, the global series of events invites guests to sip, sway and savour the journey of travel through all senses.

After the launch, a Summer Soirée by Le Méridien will feature Petit Plates, rosé spritzers at Baharat Restaurant located at Le Meridien City Centre Bahrain. A modern twist to the iconic backgammon game with be introduced to Le Meridien City Centre Bahrain guests with “Rosé and backgammon hour” at the Club Lounge located at the 11th floor– inviting guests to lounge a little longer, with some exclusive Rosé beverages. n
