GREAT DARKE COUNTY FAIR MEMORIES This picture of Katie Grieshop was taken back in August of 2001 at the Great Darke County Fair. She loved being at the Fair with the hogs (as evidenced by the grin on her face) and wearing her favorite white cowboy boots. Of course, the hogs have now gone to “hog heaven” and those cool boots are long gone. Katie, now 27, likes to reflect on good times she experienced at the Fair. She says, though, she wishes she had held onto those boots for the great memories they would bring. This cute photo was submitted by her parents, Mike and Nancy Grieshop of Versailles.

CHRISTMAS DINNER RIBBON SALAD LAYER 1: Prepare 1 small package red Jello. Pour into cake pan. LAYER 2: 1 small can crushed pineapple 2/3 cup milk 16 marshmallows 8 oz. pkg. cream cheese

1 box lemon Jello 1 cup whipped cream 2/3 cup nuts

Heat milk, marshmallows, and cheese in double boiler until melted. Add lemon Jello. Let cool and add pineapple, nuts, and whipped cream. Pour over layer of red Jello after it has set. Chill LAYER 3: Prepare blue raspberry Jello per package directions and pour on top. Let set until firm. ENJOY!

CARROT CAKE OATMEAL COOKIES 1 cup flour

1/2 cup packed brown sugar

1/2 tsp. baking soda

1/4 cup granulated sugar

1/4 tsp. salt

1 large egg

1 tsp. ginger

1 tsp. vanilla

1 tsp. cinnamon

3/4 cup grated carrots

1 tsp. nutmeg

1/3 cup raisins

1-1/2 cups old fashioned rolled oats

1/3 cup chopped walnuts

1/2 cup (1 stick) butter, softened Pre-heat oven to 350 degrees. Line two large baking sheets with parchment paper and set aside. In large mixing bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and nutmeg until well combined. Stir in the old fashioned rolled oats and set aside. In a bowl, beat together the butter, brown sugar, and granulated sugar using a hand-held mixer, beating 1-2 minutes or until well combined. Mix in the egg and vanilla until fully combined, making sure to scrape down the sides of the bowl as needed. Mix in dry ingredients until just combined, then fold in grated carrots, raisins, and chopped walnuts until fully incorporated. Using a 1-1/2 Tbsp. cookie scoop, scoop dough onto the prepared baking sheets, making sure to leave a little room between each one. Gently press down each ball of cookie dough to slightly flatten. Bake 12-15 minutes or until tops of the cookies are set and edges are lightly browned. Removed from oven and allow the cookies to cool on the baking sheets for 5-10 minutes, then carefully transfer them to a wire rack to cool completely.
