Kyle Lucas Admitted To Schubert Honors Program At Ohio Wesleyan University Kyle Lucas of New Bremen is among more than 130 first- and second-year students invited to join Ohio Wesleyan University’s selective Leland F. and Helen Schubert Honors Program this fall. To be invited to join the selective program, incoming students are required to have a minimum 3.6 high school GPA when admitted to the university. Second-year students must have achieved at least a 3.5 GPA while at Ohio Wesleyan. The Honors Program provides students with a mentored pathway through their studies to help them develop skills in creative inquiry, pursue advanced topics within and across academic disciplines, and master complex analytical and research skills. Ohio Wesleyan’s four-year Honors Program culminates in an honors independent research or creative project under the mentorship of a faculty member in each student’s area of academic interest. The project includes a written report, creative work, or written reflection. An Examining Committee evaluates the work and gives students an oral examination of the project to determine if their work merits the diploma designation of “Graduation with Honors.” Ohio Wesleyan University is located in Delaware, Ohio.

Oktoberfest is a popular celebration of German culture. While beer might garner the bulk of the attention during Oktoberfest, German cuisine is well worth a try!

1. Spätzle: This dish is a combination of eggs, flour and salt and is often served as a side dish. Spätzle is similar to pasta and typically accompanies meat dishes. Spätzle is popular outside of Germany as well, and some people may refer to it as a noodle while others call it a dumpling. Either way, it’s delicious. 2. Maultaschen: This dish traces its origins to Swabia, a one-time duchy of medieval Germany located in the southwest region of the country. Maultaschen is reminiscent of ravioli because it consists of an outer layer of dough that may be filled with various foods, including minced meat, sauerkraut or spinach. Herbs and spices, including pepper and nutmeg, add to the flavor. 3. Fischbrötchen: Seafood might not be the first thing people expect to see on the menus at their favorite German restaurants, but this popular northern German dish popular is very flavorful. Essentially a fish sandwich, fischbrötchen is often served with Bismarck herring or soused herring, but is sometimes served with other fish, including salmon. Onions, pickles, remoulade, and/or horseradish sauce are often added, making this a great selection for those planning to hoist a stein or two this Oktoberfest. 4. Schweinsbraten: Munich is located in the federal state of Bavaria, and this is a traditional Bavarian dish of roasted pork. In the days before refrigeration, Bavarians heavily salted or picked this dish to preserve it, and it is still served this way. Another hearty selection, schweinsbraten is a good choice for those who plan to indulge in their favorite German beers this Oktoberfest.

A Tasty Dish Idea For Oktoberfest Similar to St. Patrick’s Day and Cinco de Mayo, Oktoberfest is a celebration rooted in a particular country but celebrated across the globe. Tracing its origins to Germany, Oktoberfest has become the world’s largest fair, with more than 6 million people from around the globe annually trekking to Munich, Bavaria, Germany for 16-day festival. But even those who can’t make it to Germany can still celebrate Oktoberfest. Though beer will always remain the focal point of Oktoberfest, food plays a significant role as well. Brooklyn-based restauranteurs Frank Castronovo and Frank Falcinelli recognize the role of food at Oktoberfest celebrations, offering their own modern twist on German cuisine at Prime Meats in Brooklyn, NY. Oktoberfest fans who want to host their own celebrations this year can cook up the following recipe for “Beef Sauerbraten With Red Cabbage and Pretzel Dumplings” courtesy of Castronovo and Falcinelli.
Beef Sauerbraten With Red Cabbage and Pretzel Dumplings Makes 6 servings For the beef sauerbraten: 2 pounds beef brisket 2 cups dry red wine 1 cup red wine vinegar 4 juniper berries 2 teaspoons white peppercorns 1 celery stalk, cut into large dice 2 carrots, cut into large dice 1 leek, sliced 2 garlic cloves, peeled and cut in half 4 yellow onions, 3 cut into 1⁄4-inch slices, and 1 diced 1⁄4 cup canola oil Coarse salt and freshly ground black pepper 2 Granny Smith apples, peeled and cut into 1⁄2-inch dice 1 cup golden raisins 1 bay leaf 1 teaspoon fresh or dried thyme 3⁄4 cup beef or chicken stock or prepared low-sodium beef or chicken stock For the pretzel dumplings: 1 cup whole milk 6 day-old soft pretzels, about 2 ounces each,slice 1⁄8-inch thick Coarse salt and freshly ground black pepper 3 to 4 tablespoons unsalted butter, divided 1 medium Spanish onion, finely diced 1⁄4 cup chopped fresh flat-leaf parsley 1 large egg, lightly beaten For the sweet-and-sour cabbage: 5 tablespoons unsalted butter 1⁄2 cup diced red onion 1 medium white onion, diced 2 Granny Smith apples, peeled and cut into small dice 1 large red cabbage, about 3 pounds, cored and sliced thin 2⁄3 cup dried cherries 11⁄2 cups dry red wine 2 whole cloves 1⁄3 cup brown sugar 1 bay leaf 1⁄8 cup apple cider vinegar Freshly squeezed juice of 1⁄2 lemon
1. To make the sauerbraten, place the brisket in a deep pan or Dutch oven. Add the wine, vinegar, juniper berries, peppercorns, celery, carrots, leek, garlic and 1 of the sliced onions. The brisket should be completely submerged. Cover and refrigerate for 4 days. Turn the meat once each day. After 4 days, remove the meat from the marinade and pat it dry. Strain and reserve the marinade. 2. Preheat the oven to 275º F. Heat the oil in a large Dutch oven over high heat until hot but not smoking. Add the brisket and brown it on all sides, about 10 minutes. Remove the meat, leaving the fat in the pan, and season with salt and pepper. Add the 2 remaining sliced onions. Reduce the heat to medium and cook, stirring occasionally, until the onions are tender and caramelized, about 15 minutes. 3. Deglaze the pan by adding the reserved marinade and scraping the bottom of the pan to release any browned bits. Add the apples, raisins, bay leaf, and thyme and stir to combine. Return the meat to the pan with any accumulated juices and bring to a simmer over medium heat. Cover the pot and transfer to the oven. Braise for 2 1/2 hours, or until the meat is very tender, turning the meat halfway through. 4. Prepare the pretzel dumplings while the meat is braising. Warm the milk in a small saucepan over low heat. Place the pretzels in a large bowl and pour the warm milk over the top. Season lightly with salt and pepper. Cover the bowl with plastic wrap and let the pretzels soak for 30 minutes. 5. In a sauté pan, melt 1 tablespoon of the butterover medium heat. Add the onion and sauté until translucent. Season with salt and remove the heat. Stir in the parsley, then add the seasoned onion tothe dumpling mixture and, using your hands, mixto combine. 6. Bring a large pot of lightly salted water to a boil. 7. Add the egg to the dumpling mixture and incorporate well. Using your hands, squeeze the mixture through your fingers to break it up. With slightly wet hands, form 3 smooth logs that are 2 inches across. Wrap each log in plastic wrap and twist the ends to secure them. Then wrap them in aluminum foil and secure the ends. Drop the logs into the boiling water. Return to a boil, then reduce heat and simmer, partially covered, for 30 minutes. Remove from the water, open the foil and plastic wrap to allow the logs to cool. 8. Meanwhile, prepare the cabbage. In a Dutch oven or large skillet fitted with a lid, melt the butter over medium heat. Add the onions and apples and sauté until the onions are translucent, about 5 minutes. Add the cabbage, cherries, red wine, cloves, brown sugar, and bay leaf, stirring to combine. Increase the heat to medium high and bring to a boil. 9. Cover the pain, reduce the heat, and simmer, stirring occasionally, for 1 hour. Remove the bay leaf and stir in the cider vinegar and lemon juice. Cook for 1 minute. 10. When the brisket is tender, transfer it to a cutting board. Add the stock to the Dutch oven and reduce over medium heat, until the sauce is reduced by half, about 20 minutes. Season with salt and pepper to taste. 11. Slice the brisket against the grain and return to the pot with the sauce. Keep warm. 12. To finish the pretzel dumplings, discard the foil and plastic wrap and cut the longs into1/2-inch thick slices. Melt 1 tablespoon of the butter in a large sauté pan over medium-high heat. Working in batches and using more butter as needed, add the sliced dumplings to the pan and sauté until golden, 1 or 2 minutes. Turn and cook for 1 minute more. 13. To serve, place a cup of braised red cabbage on each of 6 plates and top with 3 slices of brisket. Spoon the sauce over the meat and serve with 3 pretzel dumplings on the side.

The Origins of Oktoberfest The origins of Oktoberfest can be traced to a wedding that took place in Munich, Germany on October 12, 1810. To celebrate the marriage of Bavarian Crown Prince Ludwig to Princess Therese of Saxe-Hildburghausen, the citizens of Munich were invited to the festivities, which were held on the fields in front of the city gates. The public fields were renamed “Theresienwiese” in honor of the new bride, and that name has withstood the test of time, even though locals now refer to the fields as “Wies’n.” In honor of the Prince and his newly minted Princess, horse races were held on October 17, and historians are still uncertain as to who initially proposed the idea to include horse races in the festivities. One of the people suspected of proposing the races, Franz Baumgartner, eventually saw his horse end up in the winner’s circle, where the steed was cheered by the roughly 40,000 spectators on hand to witness the events. The festivities, including the horse race, were repeated a year later, giving birth to the annual tradition of Oktoberfest. While 40,000 spectators might have seemed like a lot of people in 1810, attendance at modern-day Oktoberfest festivities dwarfs that number, as Oktoberfestbeerfestivals.com notes that more than six million people attended the festivities in 2013. In 2015, festival workers served 7.3 million liters of beer.
