Orange-ginger BaBy Back riBs ingredients: 5 pounds baby back ribs sauce: 1 cup ketchup 1/2 cup hoisin sauce 4 tablespoons soy sauce 2 tablespoons grainy mustard 3 tablespoons honey 2 tablespoons orange juice 2 tablespoons Asian chili sauce 1 tablespoon Worcestershire sauce 4 cloves garlic, minced 1 tablespoon ginger Grated zest of an orange Salt and pepper Directions: Preheat the grill to medium and turn down to low. Prepare ribs for grilling by removing the membrane from the underside of the ribs. Prepare several foil envelopes and place 2 strips of ribs into each envelope, with 1/4 cup of water and seal tightly. Cook for 2 to 21/2 hours on low (300*F) with the lid closed. Check the thermometer on the front of the grill lid frequently and adjust the cooking temperature accordingly. This may require turning one or two burners off and cooking indirectly.

To prepare the sauce: Combine all ingredients in a saucepan and set aside until the ribs are ready to remove from the foil. Gently heat the sauce on the side burner for 10 to 15 minutes before using. Carefully remove the ribs from the foil and place on grids. Baste generously with sauce, and grill for 10 minutes per side, leaving the lid open, turning several times, and basting with sauce after each turn.

Covington Community VBS Announced

The Covington Community Vacation Bible School will take place June 18-22, 9 a.m. ‘til noon. This summer kids’ event, called “Shipwrecked – Rescued by Jesus,” will be held at Covington Church of the Brethren, 101 N. Wall St. Kids will participate in Bible learning activities, sing catchy songs, play teamwork-building games, and devour yummy treats, as well as other exciting activities. The kids will join a mission effort to fund the Covington Outreach Association. “Shipwrecked” is geared for kids four years of age thru the 5th grade. On Friday evening, June 22, family members and friends are invited to return at 5:30 for a picnic-style meal. Then, at 6:30, the kids will present a fantastic program of songs and music. Early registration starts at 8:30 a.m. June 18. Forms are available at all local churches. For more information, call 937-473-2415.

Nominations Sought for 2018 Gathering Grand Marshal The Fort Rowdy Gathering is seeking nominations for Grand Marshal for the 26th Gathering, to be held Labor Day Weekend. Nominees should be Covington area residents who have shown continuing support of our community, either in public activities or quietly in the background. Nominees may be private citizens, business leaders, individuals, couples, or groups. All submissions should include the nominee’s name and phone number, why you are nominating them (things they have done or accomplished for the community), and your name and phone number in case we need more information about the nominee. Butterfly Walk Slated June 18 at Area Reserve The Miami County Park District will hold a Butterfly Walk on Monday, June 18, 2 to 4 p.m., at Stillwater Prairie Reserve, 9750 St. Rt. 185, Covington. Participants will join a park district naturalist out on the trail to learn about butterfly species and the different types of flowering plants. They will also help collect data for the Ohio Lepidoptera’s Butterfly Monitoring Program. Neil & Shirley Clark Celebrating 60th Anniversary Neil and Shirley (Via) Clark will celebrate their 60th Wedding Anniversary June 14. They exchanged vows at the Covington Presbyterian Church in 1958, with the Rev. Clair Beatty officiating. Neil and Shirley farmed and raised their family in rural Covington. They are the parents of four sons – Robert (Vanessa), Covington; Russell (Kathy), Covington; Dennis (Cheryl), Troy; and Scott (Shannon), Covington. They have been blessed with nine grandchildren and 12 great-grandchildren. On Sunday, June 17, their children will host an Open House from 3:30-6;30 p.m. Friends and family are invited to the farm located on Farrington Rd. They ask that gifts be omitted. Please bring your fondest memories of this couple to share at the celebration as their cherished gift.

Mackenzie Weldy Participates in UF's Design Exhibition Mackenzie Weldy of Bradford recently participated in the 2018 Juried Student Art and Design Exhibition at the University of Findlay. Weldy showcased her creativity in design. Any UF student was eligible to enter artwork for consideration. Categories included painting, drawing and mixed media, printmaking, ceramics, sculpture, design, digital photography, film photography and visual communication.

Covington Elementary School Announces Summer Office Hours
Story Hour is Always a Hit At Milton-Union Public Library! Cute Stella Knostman is pictured with Children's Librarian Wendy Heisey during Story Hour on May 9. Stella is sharing her “Show & Tell” item with the group, and Mrs. Heisey is helping her explain what she brought. Children had a terrific time with sidewalk chalk, a craft, stories and music. Story Hour is offered Wednesdays at 11:30 a.m. and 1:30 p.m. No registration is necessary. The library is located at 560 S. Main St., West Milton.
Brukner Nature Center’s Young Birders’ Club to Meet June 16 The Young Birders’ Club will meet Saturday, June 16, 9-11 a.m., as we shift our focus from observing birds that are migrating through to increasing our understanding of what and how Ohio’s nesting birds are doing in our area. This month we will visit Brukner’s River’s Edge Property and check bluebird boxes for nesting activity. We hope to find not just eastern bluebirds, but also tree swallows and purple martins. With our remaining time we will travel the Cascades Loop trail in search of nests hidden within the branches of the trees. This program is geared for students in Grades 6-12. Summer office hours for Covington Elementary School are 8 a.m. - 3 p.m. The office will be open thru June 29 and then closed for the summer. The office is tentatively scheduled to reopen Monday, August 6. Class lists will be posted Thursday, Aug. 16, in the front entrance of the K-8 building. School fees may be sent in with the students the first week of school or paid during Open House. Students new to the Covington school district need to call the elementary office at 473-2252 prior to June 4 or after August 6 to schedule an appointment to register. Documentation needed to register new students includes certified birth certificate, proof of residency, current immunization records, legal custodial records (if applicable), most recent report cards, IEP’s (if applicable), and photo ID of parent/guardian registering student(s). All documents must be provided at the time of registration. Open House will be Monday, Aug. 20, from 4:30-6:30 p.m. School begins Tuesday, Aug. 21, for grades Kindergarten thru 6.
