Don’t you love a fresh start? Opening a brand-new journal and putting your pen to that first fresh page, snipping the tags from an outfit, and wearing it for the first time, or just waking up to a new day in the Lord. One of my favorite Bible promises is 2 Corinthians 5:17 which tells us, “If anyone is in Christ, he is a new creation; old things have passed away; behold, all things have become new.” Who doesn’t love a do-over like that? As believers we can wake up with a clean slate each and every day. Will we mess up, from time to time? Absolutely. But 1 John 1:9 promises, “If we confess our sins, He is faithful and righteous to forgive us [our] sins, and cleanse us from all unrighteousness.” That is our liberty and our inheritance, as we begin 2022. New year. New day. New adventures in our walk with the Lord. May our God put a new song in your mouth (Psalm 40:3), be a light unto your path (Psalm 119:105), give you renewed strength (Isaiah 40:31), and peace that passes understanding (Philippians 4:6-7). We are striving to make 2022 an even better year for residents as we promote our vision statement: “A vibrant city for people and businesses that value world-class experiences, culture, quality, and second-to-none level of community service in a hometown environment.” Visitors to our city will discover the rich traditions and quality of life that make Mansfield a special place to live, work, and play. Our City Council and our residents are intent on guaranteeing a quality experience for people of all walks of life. Expect to see improvements and upgrades throughout our iconic parks and linear trail systems. We are focusing on enhancing our cultural and visual arts landscapes.

Our Historic Downtown Mansfield will continue to be transformed into a weekend destination as more music festivals and family-friendly festivities are added to the entertainment queue. Our mission in the new year is to focus on facilitating the delivery of exceptional service to the community and implementing the strategic priorities of our City Council, which has been mandated by the voters to lead the city toward what we call our True NORTH. NORTH is an acronym that highlights our key values: “N” is for noteworthy essentials; “O” is for organizational excellence; “R” is for remarkable experiences; “T” stands for the phrase “together as one”; and finally, the “H” stands for healthy economy. Our city leadership believes that if we remain focused on these key components, our new year will be the best year ever.

EpicCentral welcomes its first restaurant with Chicken N Pickle now open. Six other restaurants are under construction and expected to open later this year. Chicken N Pickle is the wildly popular, indoor/outdoor entertainment complex centered around pickleball, offering a variety of games, a casual, chef-driven restaurant and sports bar. The 77,000-square-foot venue features a dining room, six indoor pickleball courts, five outdoor pickleball courts (two covered), and 7,500 square feet of outdoor yard games. A large rooftop bar, stages for live performances and the signature lawn games for which Chicken N Pickle is known round out the property. The six other restaurant spaces are expected

The city has negotiated terms with Milkshake Concepts to bring Vidorra Cocina de Mexico; an American modern artisanal concept tentatively called The Finch; Serious Pizza, Sliders and Shakes; and a new breakfast/brunch concept called Poach’d. Larry Lavine, the founder of Chili’s, will open Loop 9 BBQ in a fifth space. The city is entertaining options for the sixth restaurant space. Let’s have a great 2022!

Happy 2022, everyone! We’re certainly starting the new year with a bang in the American Dream City. So much to celebrate. So much to be thankful for. Where to begin? The University of Texas at Arlington was recently awarded a $200,000 grant from the U.S. Small Business Administration to support veteran and military spouse businesses with entrepreneurship education, small business technical assistance, loan preparation, access to capital/capital readiness, corporate and federal contracting, and networking. UTAComNav will be working with the Institute for Veterans and Military Families (IVMF) to support local our veteran families through the Veterans Business Outreach Center (VBOC). It’s the least we can do for those who’ve given so much to us.

A RLINGTON A big shout out to Tarrant County College which was named one of “America’s Top Online Colleges” by Newsweek and Statista, one of three Texas community colleges recognized on the national list. The city’s scenic Lake House event center at Richard Simpson Park was dedicated in honor of long-time resident, volunteer, and former City Councilwoman Kathryn Wilemon who served as the representative for District 4, from 2003 to 2019. And last but certainly not least, The Department of Defense (DOD) recently awarded a $1.5 million grant to a research team in UTA’s Aerodynamics Research Center to examine how lasers could be utilized to destroy hypersonic threats to the United States. GOD EQUIPS

the called “ H E R E A M I , L O R D. S E N D M E .” - I S A I A H 6 : 8 BY M IM I G R E E N W O O D K N I GHT

t’s a phrase I dread hearing in any volunteer situation. “We were just talking about you.” Those words are usually followed by, “Here’s a ‘volunteer opportunity’ for you.” Or “Would you pray about…” This particular morning, I’d bebopped into the church office minding my own business when the pastor and a couple of other church members seemed far too eager to see me and uttered those infamous words, “We were just talking about you!” The volunteer opportunity this time was the director of our vacation Bible study. If you knew me, you’d know how funny that is — a leader I am not. I’m organizationally challenged.

Moses succinctly explained to God why he was not the right man for the job. Nobody would believe God sent him. Also, he was a stutterer, not a spokesperson. In verse 13, he cut to the chase. “But Moses said, ‘O Lord, please send someone else to do it.’” (Sound familiar?) It was the next line that knocked me upside my head. “Then the Lord’s anger burned against Moses.” I ask you. Was it a coincidence my New Testament study abruptly diverted to this Old Testament story? More importantly, did I want the Lord’s anger to burn against me? I was waiting in the parking lot a couple of hours later when Brother Chris pulled into church to find me screaming, “It’s me! It’s me! I’m supposed to direct VBS this year!” And direct I did — for the next two years. Did I suddenly become organized? Not at all. But I learned volumes about trusting God to equip me for the work He’s already ordained me to do. Verses like Philippians 2:13 became my lifeline, “For God is working in you, giving you the desire and the power to do what pleases Him.” I started my days with Ephesians 2:10, “For we are God’s masterpiece. He has created us anew in Christ Jesus, so we can do the good things He planned for us long ago.” I’d heard the adage, “God doesn’t call the equipped. He equips the called.” Then, I lived it. I also thought about Jesus’ disciples. Not the most highly educated, charismatic, or influential people. They were ordinary men with little to recommend them. Yet Jesus called them. They responded, did the work He asked them to do, and the world has never been the same. One Sunday, about a month before VBS week, I was still short of volunteers, and my weekly pleas to the congregation seemed to be falling on deaf ears. During my quiet time, feeling frustrated and defeated, I asked God whether maybe I hadn’t heard His calling to do this at all. As I prayed, I suddenly saw a small boy come forward during vacation Bible school and give his life to the Lord. Then, I saw him grown up with children and employees and friends he was leading to the Lord. I can’t tell you how I “saw” it except to say that I did.

I can barely organize my weekly grocery shopping trip, much less 700 adults and kids in our over-the-top VBS. I thanked Brother Chris and assured him, while I was definitely not the one to direct VBS, I’d pray for God to send “the right person.” Fast forward to the next morning. I was halfway through one of those Bible studies that’s so exciting you can’t wait to go to bed at night, so you can get up and delve back in the following day. Although it was a New Testament study, as I sat there with my cup of coffee and the sky still dark outside, the study took an unexpected detour into Exodus 4, when God asked Moses to go talk to Pharoah on His behalf.

That little boy was my motivation from then on. God equipped. God sent the volunteers. God sent the teachers. God sent the children and their families to VBS. Some joined our church, and many committed their lives to the Lord. In 1 Corinthians 1:26-29, Paul wrote, “Brothers, think of what you were when you were called. Not many of you were wise by human standards; not many were influential; not many were of noble birth. But God chose the foolish things of the world to shame the wise; God chose the weak things of the world to shame the strong. He chose the lowly things of this world and the despised things — and the things that are not— to nullify the things that are, so that no one may boast before Him.” I thank Him for choosing and equipping one organizationally challenged mom, teaching me to say with Isaiah, “Here am I, Lord. Send me.”

s he looks forward to 2022, Matthew McCabe can’t help but feel humbled at the abundance of blessings in his life. Happily married with four beautiful children, he’s living the dream with a thriving podiatry practice in a beautiful, peaceful community and planning his fi rst medical mission trip to Mexico. “My family is the most important thing to me, without them, specifically my wife, Brooke, I wouldn’t be the person I am today,” he said. “I’m also blessed to have found a profession that allows me to meet and connect with patients of all ages and really make an impact on their quality of life. Not many men can say their life is exactly the way he wants it to be, but I can.”

“The great thing about podiatry is it encompasses a wide variety of pathology,” Dr. McCabe said. “Although I’m focused on the foot and ankle, I’ll see diabetic patients, patients with deformities, patients with arthritis or fractures, athletes and weekend warriors—and everything in between—so it never ceasing to be challenging and enriching for me. I’m in the clinic four days a week and in surgery one. On a surgery day, I might perform a bunion procedure, fix an ankle fracture, do a complex muscle, or skin flap, an ankle scope, and a hammer toe—all in one day. That's how variable my surgery day and clinic can be. And at the end of the day, I know I’ve been able to help them all.” Dr. McCabe said not everyone understands everything a podiatrist does. “Even other doctors don't realize podiatrists perform surgery that encompasses not only the foot but the ankle as well,” he said. “I’m fellowship trained in limb salvage, reconstruction, and orthoplastics.” Orthoplastics is relatively a new field that combines plastics techniques and orthopedic techniques with the goal of salvaging a person’s limb after trauma or chronic wounds and infection.” Whether your complaint is heel pain, foot and ankle pain, arthritis, foot fractures, ankle fractures, bunion deformities, Achilles tendon issues, or something else, Dr. McCabe and his team offer patients options tailored to their individual needs. “One of the best things I can do for any patient is just to slow down and really listen to them,” Dr. McCabe said. “Then, I want to take the time to explain to them, in words they understand, all of their treatment options— conservative and surgical—how each treatment works, and the pros and cons of each approach. The more the patient understands about their condition and all the treatment options available to them, the better decision they can make about their care. It’s my job—and my blessing—to empower patients in their medical decision-making process.” Although he is a fellowship-trained surgeon, Dr. McCabe always exhausted all viable conservative treatment options before considering surgery. “We can handle cases as complicated as total ankle replacement and as a toenail fungus,” he said. “But we always want to begin conservatively and progress, if we need to.” I would say the feedback I get most is that I take the time to really listen to them. The art of medicine is balancing what the patient wants with what the patient needs. If you listen, they will always tell you what they want. Cowboy, firefighter, police officer, archeologist, pilot, mountain man- like Jeremiah Johnson.. Really just depended on the day but I think I was pretty consistent with the cowboy thing, even though I grew up in the city- I’ve always loved being outdoors though. I started to garner an interest in medicine when I was in high school, I was an athlete and of course suffered injuries. I was curious about how the injury occurred and how it was fixed. When not on the job, Dr. McCabe enjoys reading, (No audio or digital books for him. He prefers the real thing.) hunting, fishing, and being outdoors. “Our whole family is this way,” he said. “We spend a lot of time outdoors, even in the summer, I’m a terrible golfer but still enjoy going. Overall, I’m a pretty simple guy.” To his patients, he’s that

kind, gentle voice of reason who always takes the time to listen and to educate them about their treatment options. “Years ago, physicians were big parts of the community, and they were people the community could lean on and look up to as a leader,” Dr. McCabe said.” I think medicine, particularly specialists, have become less focused on the community and I’d really like to restore the physicians place in the community. My family and I look forward to a long career here in Mansfield. We feel incredibly blessed to be here and have felt welcomed since the first day we opened the practice.”

IF YOU MISSED THE RECENT PERFORMANCE OF THE ROLLETTES, YOU MISSED A REAL TRIUMPH — for the dynamic LA-based dance team and for one local woman. Like many of her dance team members, Missie Mikulec grew up obsessed with cheer and dancing. It was a big part of her childhood and teen years. She even started aerial silk classes in her 20s. When a mishap, during surgery left her with a spinal cord injury in 2019 and she found herself bound to a wheelchair, Missie thought her dancing days were behind her. Then, she heard about the Rollettes Wheelchair Dance Team and their mission: Women Empowering Women with Disabilities to Live Boundlessly and Shift Perspectives Through Dance. Now celebrating ten years, the Rollettes are a team of wheelchair dancers who travel the world to perform, educate, and inspire. These gals don’t let a wheelchair stop them from dancing — or much else. Dancer Chelsie Hill founded the group after her own lifelong love of dance was challenged when she was paralyzed in a car accident. Chelsie looked for and found other vibrant women like herself and formed the wheelchair dance team who together redefine what it means to be strong, female, and resilient. Missie joined the team as a “little sis” and began flying to California for practices and to perform with the team. “Turns out it wasn’t cheering that was my life, it was being part of a team,” she said.

IF YOU’RE IN THE MARKET FOR A GENERAL SURGEON, YOU’VE PROBABLY EXHAUSTED ALL YOUR NON-SURGICAL TREATMENT OPTIONS. None of us

wants to have surgery. But sometimes it’s your best and most viable choice. General surgeons are educated and trained in the diagnosis and preoperative, operative, and post-operative management of patient care. Some surgeons put in the extra time required to offer state-of-the-art robotic surgery for greater precision and more favorable outcomes. Some conditions that may have you shopping for a surgeon are hernia, appendicitis, hemorrhoids, thyroid or parathyroid disease, breast cancer, gallbladder, Crohn’s disease, or complications from a previous surgery.

If your primary care provider is the one recommending a surgeon, they’re a good place to st ar t. A sk for surgeons they recommend. But be sure to inquire, “Why are you recommending this surgeon?” If the answer is, “They accept your insurance,” that’s not a great recommendation. If the answer is “They are the surgeon we chose for my wife’s (mother’s, daughter’s, my) surgery,” now we’ve got a robust referral. Take your doctor’s recommendations and kick them around with family members, friends, or other medical specialists to see what they have to say. Once you have a few candidates, research their credentials and experience on sites such as Healthgrades.com or DocInfo. org. If the surgeon is board certified, you know they’ve completed at least five years of residency training following medical school, met all American Board of Surgery

Reading what other people are saying online about a doctor can provide some insight. Are patients generally happy with the care they received? Do they report positive outcomes? Online patient satisfaction surveys also typically ask about appointment scheduling, wait times, office environment, and office staff friendliness. As you narrow your list, call each surgeon’s office to schedule a consultation and meet the doctor. Once there, inquire specifically about their experience with your condition and the procedure you require. W hat complic at ion m ig ht you ex per ience? What are your risk factors? Inquire which hospital or out-patient center they use and do a little homework on them, too. Patients at top-rated facilities can have fewer complications and better success rates. How does each surgeon communicate? A re you comfor t able t a lk ing to them about personal topics? Do they show an interest in getting to know you? Do they welcome your questions and answer them thoroughly? Are they receptive to your treatment preferences? Do they include your input in decisions related to your care? Do you feel rushed? Of course, you’ll want to find out what your insurance covers. A general surgeon who participates in your plan will mean less out-of-pocket. But if you fi nd the perfect surgeon for you and they’re not on your insurance, fi nd out what it will cost to use an out-of-plan provider and weigh your options. If it’s not too different, it may be worth some extra expense to know you’re working with the best.

But a board-certified dermatologist has completed an additional three years of dedicated skin-disease training in an accredited dermatology residency for a total of eight or more years of medical training. Your journey begins with finding the right cosmetic surgeon, an experienced practitioner with lots of successful surgeries under their belt. Your doctor should be board-certified and have received specialized training in pain management. Check if the clinic’s doctors are membxers of organizations such as the Texas Pain Society or the American Academy of Pain Medicine.

If a clinic runs a pain support group, that is a good sign. These groups can be helpful for referrals, and emotional support since that part of pain is so significant. Pain exper ts believe so strongly about the emotional aspect that the International Association for the Study of Pain defines pain as “an unpleasant sensory and emotional experience.” Find out about the therapies of fered through the clinic, which may be diverse, given that today’s standard approach to pain management is multidisciplinary — combining various medical, conventional, a nd a lt er n at i ve s p e c i a lt ie s i nt o t he approach. Clinics that are primarily focused on narcotic pain relief should receive extra attention since these medications have many side effects and can lead to addiction. Pharmaceutical drugs can also have negative interactions with other medicines you may already be taking. If your doctor does prescribe medication, it should be in combination with physical therapy, rehabilitation, massage therapy, chiropractic, mental healthcare, and other modalities.

Another straightforward way to find a highquality clinic is by getting a referral from your general physician or specialist. You may also be able to get a strong recommendation from a hospital or general health clinic in your area. A pain support group could provide a referral as well, as could friends or family.

The selection of a chronic pain clinic continues through the initial appointment. You should feel comfortable with the doctor. They should not be focused on the pain but on you. Understand the treatment plan. The doctors should be able to customize a plan that is directed toward meeting your objectives. They should communicate with you throughout the process and track your recovery closely.

Check online reviews. Ask the clinic if you can speak with current or past patients about the care they received at the clinic. Some clinics are niche focused on specific types of pain. Be sure your doctor has expertise with your specific condition.

If you’re hiring a lawyer to handle routine legal work (like completing a house sale or putting an estate through pro-bate), expect to pay hourly. You should also expect to pay hourly for a criminal defense lawyer. If you’re suing someone, you can often arrange contingency legal fees, which means your lawyer will take some percentage of any settlement you receive. If you’re paying hourly, expect to pay some portion of your expected fee upfront as a retainer. Ask for an itemized statement detailing what you can expect a lawyer to do and negotiate an appropriate retainer accordingly. W hile you’re at the office, ask to meet any paralegals, legal assistants, or other non-lawyers who’ll be working on your case. These fi ne folks handle much of the grunt work and legwork involved in any case — and using them can save you money. When you’re setting up your schedule with a potential lawyer, ask what work the firm’s paralegals and legal assistants will be completing and how these savings will be passed along to you in your bill. Lastly, before hiring any lawyer, contact the lawyer disciplinary agency in your state to confirm that the lawyer is in good standing as a member of the bar. If there is disciplinary action being taken against them, offer them a chance to explain. Take your time to select a lawyer with the experience, legal skills, and personal qualities that will best serve your needs, now and in the future.

Check with your insurance to determine if the referred doctors will be accepted by your plan. Only choose board-certified oncologists. Also, find out how many years of experience the specialist has in cancer care and select the most qualified one. The oncologist you choose will depend on what type of cancer you’re suffering from, so pay close attention to the oncologist’s specialty and only choose one that has a good track record. Beyond insurance, another vital consideration is the type of surgery that the surgeon performs. Two of the more common types are sleeve gastrectomy and gastric bypass surgery. The challenge is in choosing the right one. A facility’s proximity is key when you or a loved one is suffering from, say, an unusually high fever or a kitchen knife accident, but there is more to consider than drive time. It’s a good idea to put a moment’s thought into where you might turn for help in the event of a non-life-threatening emergency. Waiting to choose the right facility until you’re in need of immediate attention could turn the decision into a frantic Google Maps drill with uncertain results. So how do we choose dur ing nor ma l moments of peace and quiet what we won’t want to take precious time to research when our health and safety may be at risk? Accreditations are a good place to start. According to the Urgent Care Association of America (UCAOA), there are two criteria by which urgent care facilities are recognized. T he first is the USAOA Accredit ation

Program. The other certification program recognized by the UCAOA is the Certified Urgent Care (CUC) program. The CUC is used to recognize urgent care facilities that meet all the criteria that are standard in the United States for demonstrating an urgent care facility’s accessibility to all patients, the capability of the staff to treat a wide range of injuries and illnesses, and the clinic’s capacity to respond to an outbreak of disease in the local community. These facilities operate with a sense of, yes, urgency. It’s for this reason that it might take a few tries to pin a person down on the phone long enough to get the details. With a little patience and an extra portion of polite-ness, you can find someone with a few free minutes to provide you with the answers you’re looking for. To start with, ask about the certifications mentioned in this article. You might also inquire about services a clinic provides above and beyond primary care, such as occupational, physical, or weight-loss therapy. Ask about standard rates, supported insurance programs, average wait times, and if they have any limitations on care that’s provided. If you get a moment, check them out in person and get a feel for what the process looks like. ou may be tempted to think that a basic pair of sneakers or running shoes will suffice for your type and level of exercise, whatever that might be. Actually, that assumption is wrong. To understand this situation, think of your body as an elongated chain. The links are all connected, from your toes to your head, and a problem at one end can easily lead to pain and problems throughout the chain. Your feet, of course, form the foundation of your bodily chain, and the chances are good that if you have foundation issues, the problem will gradually rise through the chain, creating pain and muscle imbalances in other areas of your body. And once the pain sets in, it’s easy to become discouraged and let your good exercise intentions fall by the wayside.

Whatever your choice, it’s a good idea to replace your shoes after 300 to 500 miles of running. If you’re not tracking mileage, get a new pair every year.

WALKING AND HIKING Choosing the proper walking/hiking footwear largely depends on the terrain you’ll be covering. Low-cut walking/ hiking shoes are fine for trails without streams and obstacles. However, they don’t provide much protection or ankle support, and boots are a better option if you’re going to be off the beaten path.

RUNNING

Running shoes are not good for indoor workouts like aerobics because they’re designed for forward movement. Indoor exercise activities often involve sideways movements, and you should look for shoes that give lateral support, along with flexibility and shock absorbency.

Cushioning is a crucial factor in choosing running shoes, and while you might think the more, the better, that’s not necessarily true. There are five levels of cushioning for running shoes, from the first level providing minimal cushioning to level five, suitable for long-distance running.

Microneedling, a newer procedure than microdermabrasion, involves very fine needles that penetrate the skin. Microneedling can be performed on the face, neck, scalp, and body to improve scars, stretch marks, pore size, and uneven skin texture. Most med spas use an electric pen-like device that can be adjusted for depth and speed. A topical anesthetic numbs the area, helping prevent any discomfort. Some people liken the sensation to getting a mild-feeling tattoo, while others say it feels like light sandpaper on the skin, especially on the forehead. If fuller brows are what you’re after, microblading can give you a look you desire. This process involves a microblade tool with tiny needles that apply color pigments. Results can last anywhere from 12 to 18 months, depending on your skin type. (People who tend to have more oily skin may see their results fade sooner.) If you’re looking for longer-lasting results, try microshading, which leaves small, pinpoint dots of pigment instead of tiny hair strokes. These dots help shade in sparse areas and create a soft, shadowy effect. Like haircuts and manicures, you’ll get the best results from microblading by choosing an experienced professional.

WHAT’S THE DOWNTIME? Thanks to their non or minimally invasive nature, microdermabrasion, microneedling, and microblading allow you to get back to work and your daily life with little or no downtime. Closely follow the after-care instructions given to you by your provider. You may experience skin irritation or redness after microdermabrasion, but a little camouflaging foundation can conceal it. Healing from microneedling typically takes about 24 hours, depending on the extent of your treatment. Remember to apply sunscreen when you go out, as you will be more prone to sunburn than usual. The treatment area may peel or flake three to five days after microneedling as skin cells turn over. If you notice this, use a gentle moisturizer. The healing process for microblading can take four to six weeks, but you can return to your normal activities after a session. Your brows will be their final shape and color after about 30 days.

PARENTAL INVOLVEMENT MAKING A DIFFERENCE IN YOUR CHILD’S SCHOOL BY MIMI GREENWOOD KNIGHT

W

hen I was growing up, my mom was a familiar sight at my elementary and high school. Of course, since there were 12 of us Greenwood kids, she had children in several grades at any given time. Mama served as room mother and PTA president and won Mother of the Year more times than I can remember. Her investment of time in our schools sent a message to us that our education was important. Well, that and the fact that she and Daddy were coughing up tuition for a dozen kids at a parochial school. When my own four kids started school, I loved being on their campus. It gave me a chance to meet their friends and get to know their teachers. I could stay abreast of what they were learning, understand their daily activities, and by organizing fundraisers and recruiting volunteers, expand their schools’ offerings. By doing my part in making their school better, I hoped to teach my kids to give of themselves to make their community better. And by being involved I was privy to school trends and fads — good or bad — and could address them with my kids when necessary.

Getting Started Sadly, many schools today must raise their own funds for activities and supplies. They do this with the help of parent volunteers. It ’s never too late to start being involved in your child’s school. In most volunteer situations, 80% of the work is carried out by 20% of the people. And, believe me, that burnt-out 20% will welcome your help with open arms. Joining your school’s PTO and attending the meetings is a great way to hear about volunteer opportunities as they come up. If it ’s early in the school year, inquire about what opportunities are available at Meet the Teacher night or open house. Or call the school, ask for the name and contact information of the PTO president and/or volunteer coordinator, and give them a ring. During my half-dozen years as a school volunteer coordinator, those were my favorite calls to receive.

Giving of Yourself Don’t worry if you work during school hours. There are always after-hours events or work you can complete at home on your own time. Feel free to suggest volunteer work if you have an idea or area of expertise. As a freelance writer, I’ve offered to speak to creative writing classes. I’ve been blessed beyond belief to read to classes from preschool through junior high. (Older kids love having a chapter book read aloud to them.) And as a beekeeper, I’ve loved introducing kids to the wonders of honeybees.

Make a Difference Volunteering is a great way to make friends with other parents. Even if your older child protests, deep down, they ’re probably thrilled to have you there investing in and enhancing their educational experience. Remember, volunteering not only benefits your child. It helps the teacher, class, school, and community at large.

TO BOIL OR NOT TO BOIL Not all tea should be steeped in boiling water. Green tea, in fact, will scorch in boiling water because the leaves aren’t oxidized like black tea leaves are. Instead, you should steep green tea in water that’s 185°F for Chinese green tea and 158°F for Japanese green tea. (Water boils at 212°F.) If you don’t have a temperature-variable kettle, try boiling your water, then allowing it to cool with the kettle’s spout open, for about three minutes, before steeping for an additional three minutes. When prepared in this way, green tea should be smooth and refreshing, never bitter.

very morning I have the same cup of coffee (black with a half-teaspoon of honey). But an hour later, I’m ready for a cup of tea that’s different every day. I live in the country, and often I gather my tea ingredients on my morning walk. Loblolly pine needles (crazy healthy), medicinal mushrooms, goldenrod, or the last of this year’s French mulberries. Once home, I might add clover or yarrow I dried last spring and always some honey from our hives. Or I could visit my herb boxes and snip some lemongrass, basil, rosemary (a little goes a long way), fennel, or mint and grind in a little ginger. I realize this is a bit too pioneer woman for most, and a true tea connoisseur would argue what I’m drinking isn’t tea at all since it didn’t come from the Camellia sinensis or “tea plant.” The Camellia sinensis is the origin of most of what’s considered tea in this country — and around the world. Whether you’re enjoying green, black, white, or oolong tea, it all comes from the Camellia sinensis plant. The difference is in the way it’s processed and the way it affects the drinker. Here’s a quick rundown.

In fact, in London at that time, there was one coffee house for every hundred and fifty Londoners. But because England itself didn’t have a good climate for growing coffee beans and they had colonies in India and China where tea plants flourished, Brits soon all but abandoned coffee and became the tea culture we know and love today.

Black tea is the most heavily oxidized and therefore contains the most caffeine. For black tea, leaves are fully withered, rolled, and crushed (by hand or machine). As it’s allowed to oxidize, the leaves turn black before being fired in ovens to halt the oxidation process. Green tea leaves are harvested in the morning and can be brewed that night. They’re immediately heated to stop oxidation before it begins. So, leaves retain their green color. Hence, the name “green tea.” Because they receive minor oxidation, they have a low caffeine count. One of the most versatile teas with almost as much caffeine as black tea, oolong leaves are withered and rolled while only semi-oxidized, then fired sometimes with charcoal, for a bit more flavor. Like wine, oolong can be full or light-bodied, depending on the tea master’s preference. White tea is harvested early in the growth cycle when the buds are still covered by thin white hairs making for a more delicate flavor profile. It’s also never rolled or crushed. Although it’s technically a type of green tea, it’s estimated to contain 15% less caffeine than traditional green tea and far less than black or oolong. Of course, now you have to decide on loose tea or tea bags, tap or filtered water, preheated teapot or not, sugar, lemon, or milk, and resolve who’ll “be a mother.” And you won’t mind if I toss some pine needles, berries, and mushrooms in mine, will you?

INGREDIENTS: 1 pizza crust, either a prebaked pizza crust, a piece of baked naan, or a circle of pita bread | ½ cup marinara sauce | 2 cups mozzarella, shredded | ¼ cup parmesan cheese, shredded | 2 Tbsp. fresh basil, chopped | ½ cup cherry tomatoes, chopped DIRECTIONS: PREHE AT oven to 350°. PL ACE marinara on the crust, using the back of a spoon to spread from edge to edge. SPRINKLE mozzarella and parmesan onto the sauce. TOP with tomatoes and basil. BAKE for 10 minutes or until cheese is melted and turning golden.

30 MINUTE SQUASH SOUP SERVINGS: 4 | PREP TIME: 10 MIN. | COOK TIME: 20 MIN. INGREDIENTS: 1 ½ Tbsp. olive oil | 1 cup onion, chopped | 3 tsp. garlic, minced | 2 lbs. butternut squash, seeds removed, peeled, and cubed | 1 tsp. salt | ¼ tsp. ground black pepper | ¼ tsp. turmeric | ½ tsp. paprika | 1 Tbsp. onion powder | 1 Tbsp. garlic powder | 1 ½ cups vegetable broth | 1 ½ cups almond milk | pumpkin seeds for garnish DIRECTIONS: HEAT oil over medium high heat in a large stockpot.

ADD onion to pot, stir and cook for 2 to 4 minutes. ADD garlic and cook for 2 minutes or until fragrant. PLACE butternut squash, salt, pepper, turmeric, paprika, onion powder, and garlic powder in a pot and stir to combine. COOK 5 to 7 minutes, stirring occasionally. POUR vegetable broth and almond milk into a pot, stir to combine. BRING to a boil, turn down to low, and simmer for 10 minutes. REMOVE from heat and puree soup with either a blender, immersion blender or food processor until combined and smooth. TASTE and add salt and pepper as needed. SERVE warm with pumpkin seeds sprinkled on top.
