As a member based organisation, Angus Australia is continually looking at opportunities to add value to the businesses of its members, and to enhance and promote the value of Angus genetics within the Australian beef industry. Consistent with this approach, Angus Australia has greatly increased its involvement in recent years in research and development (R&D) initiatives. The increased involvement in R&D represents a large transition from traditional breed society activities, and is consistent with Angus Australia’s vision of being a member-based, not-for-profit, innovation focused company servicing seedstock and commercial producers of Angus and Angus-influenced cattle. Angus Australia’s Strategic Projects Manager, Mr Christian Duff, said "Angus Australia is now extremely pro-active in seeking R&D opportunities that will be to the benefit of members and the beef supply chain utilising Angus cattle and Angus beef products". "With the end of the Beef Cooperative Research Centre (Beef CRC) in 2012, there have been some significant changes to R&D investment in beef technologies".
"Angus Australia has identified a need for increased R&D investment to ensure members remain at the forefront of the latest genetic and breeding technologies". Angus Australia’s most significant investment in R&D is the Angus Sire Benchmarking Program (ASBP). Now planning for its eighth cohort, the ASBP is a young sire program that involves joining approximately 40 sires a year to 2000 Angus females to produce 25 progeny per sire using fixed time artificial insemination. The ASBP aims to a) generate progeny test data on modern Angus bulls, particularly for hard to measure traits such as feed efficiency, abattoir carcase measurements, meat quality attributes and female reproduction; b) generate data for the validation and refinement of Angus BREEDPLAN; and c) build a comprehensive phenotype and genotype database on Australian Angus animals for genomic technology validation, research and development. ANGUS AUSTRALIA Set To Launch New Software Tools Angus Australia has recently launched a range of new internet based tools for Angus beef producers in Australia. The range of software tools, to be released under the banner of angus.tech, are part of a major software development initiative designed to develop tools that are specifically tailored to meet the needs of producers who are using Angus genetics within their beef enterprise. Angus Australia’s Breed Development & Extension Manager, Mr Andrew Byrne explained the new tools aim to improve the profitability of Angus genetics within the beef supply chain by enabling Angus breeders to more easily identify the most appropriate genetics for their enterprise. The tools set for release over coming months will focus on enabling Angus breeders to seamlessly search Angus Australia’s comprehensive animal and member database. "The new facility is similar to the Animal Enquiry facility that has been available on the Angus Australia website for some time, but has been re-developed to be a more modern and intuitive facility with a range of valuable new features". Of particular note is the availability of a new suite of selection tools, known as AngusSELECT, that assist both seedstock and commercial producers with the identification of Angus genetics that are most aligned with their breeding goals and objectives. CLUNIE RANGE ANGUS SALE Clunie Range Angus will offer 140 bulls “Made of Tough Stuff on Friday 4th August 2017. This will be the largest offering to date and is the result of a significant planned expansion program over the past 5 years. The purchase of a number of individual donor cows from genuine dispersal sales, as well as the purchase of the highly regarded Cudgell Creek herd in southern NSW has given Clunie Range a number of new female family lines. An expansion of both AI programs and Embryo programs have allowed for a significant increase in numbers of the cow herd. Co-principal Brett Guest says that the extra numbers has allowed even greater selection pressure, and is confident that this year’s sale offering is of the best quality so far. Like all studs last year’s sale average was high, but the most pleasing thing to Clunie Range was the positive commentary on the consistency and quality of the bulls offered. This year, while
they have taken a step up in quality, a conscious effort has been made to increase numbers, allowing more buyers to operate with confidence. The Guest family are fourth generation Angus breeders that were breeding commercial Angus cattle long before commencing the stud. Multiple generations of pregnancy testing, semen testing, semen morphology testing and continuous pressure on the cow herd to perform under the pressure of high stocking rates, have contributed to developing a strong reputation of being “Made of tough Stuff”. The Clunie Range bulls have been performing exceptionally well locally around Goondiwindi, Moree and Tablelands areas, but also have many years of performance runs on the board in areas such as Cloncurry, Richmond, Bedourie, Blackall, Jericho, Longreach, Alpha and basically all over Qld and NSW, and have been sold to every state. The key ingredient to the success of Clunie Range, is the quality of the cow herd that
have the runs on the board where performance under pressure is concerned. Females are selected for phenotype as well as performance, with multiple generations of performance data on both stud and commercial cattle. Retained ownership on steers and heifers, along with modern technology, play a huge roll in information gathering. As well as having a cow herd that is tough, Clunie Range maintain high performance on grass and in feedlots. Recent highlights include multiple heifers upon ultrasound scanning over 8% for IMF, with the bull Clunie Range Legend L348 scanning 8.2% in April 2017. Clunie Range cattle weigh like lead because of the depth of body and thickness and this always results in high dressing percentages and yields. High marbling is also a well known Clunie Range trait, with females recently marbling as high as score 7. Brett believes the demand for Clunie Range Bulls comes in a large way from the “word of mouth effect”.

THE Belgian Blue cattle breed is currently one of the most important beef breeds in the world today. Its popularity and acceptance is based initially on the production of an exceptionally lean, high bone out, high yielding carcase. Further acceptance of the Belgian Blue is for its outstanding results in cross breeding, culminating in high efficiency, excellent performance, superb carcass quality, enormous carcass yield and most importantly exceptionable temperament. These positives have resulted in tens of thousands of Belgian Blue cross calves being born in Australia each year with producers extremely satisfied. No other breed has the degree of muscling or extreme high carcase yield that the Belgian Blue has been selected for. Belgian Blues originated in the Ardenne Hills region of Belgium at the end of the nineteenth century when native dairy cattle were crossed with introduced Shorthorn beef cattle. The distinctive blue roan colouring – hence the name – is present in varying degrees in Belgian Blue cattle and is attributed to their Shorthorn ancestry. Initially bred as a dual-purpose breed, by the 1950’s a more heavily muscled animal was being selected for, resulting in today’s solid, beef breed. The Belgian Blue breed was introduced into Australia in 1988 and the Australian Belgian Blue Cattle Society Inc. was formed in the same year. Colours can be blue roan, blue roan and white, black and white, or just white. In other words, colours range from pure white through to black, with any degree of blue roan in between. Average weight for mature bulls range from 1 000 to 1 200 kilograms, and for cows 650 – 900 kilograms. Average birth weights for calves are 40-55 kilograms (pure-bred) and 30-45 kilograms (cross-bred). The Belgian Blue is a naturally horned, large animal with a well rounded outline and a quite distinctive, heavily muscled frame. The shoulder, back, loin and rump are all prominently muscled. The head is light and the back is straight. The hips are hidden under a sloping rump, the tail set is prominent and the skin is fine. With strong yet light bones, Belgian Blues move freely. They usually exhibit early maturation. The breed is known for its very docile temperament in both pure-bred and cross-bred animals.

THE BELMONT RED OBJECTIVE
At its inception the objective for the Belmont Red breed was to blend an average of the genes from the Africander and from the British. Adaptive traits such as easy calving, parasite resistance, disease resistance, heat tolerance and hardiness, as well as meat quality traits and fertility were inherited from the Africander. Productive traits, such as fertility and growth, as well as carcase and meat quality were also inherited from the British. Genetically the Africander component distinguishes the Belmont from other Composite breeds based on the Brahman such as Santa Gertrudis, Droughtmaster, Brangus, Charbray and Braford. The range and combinations of established breeds included in the Belmont Red provided it with all the desirable traits of the British, European and other Tropical breeds. The herd book remains open and grading up to pure Belmont can simply be accomplished in three back crosses. The Belmont can therefore be established by simply grading up from any base cow herd through three generations of mating to registered Belmont bulls, the fourth crop being registerable as pure Belmonts. This allows the Belmont Breeders to tap into a broad genetic pool and retain desirable gene combinations from the parent breeds. With the correct selection programs, the productive desirable gene combinations can be accumulated and fixed. In Australia the Belmont Red is the only Composite breed that has been developed from crossing the Africander breed with British breeds. The Africander genetic component makes the Belmont uniquely different from the Brahman composites. Belmonts are a
Belmont Red cow and calf. tropically adapted Bos Taurus. The Belmont Breed Society has based its standards on productive and adaptive traits that can be objectively measured and are known to be heritable. Selection is therefore based on accurate measurements of traits that are heritable and economically important in terms of beef production. Any Belmont animal must therefore be reared in a herd which has adopted a system of performance recording that has been approved by Council, such as Breedplan. Although the colour is predominantly red, selection for this, or other aesthetic traits are generally not considered important. The Belmont is about a philosophy of breeding highly productive, easy care cattle, that are adapted to their environment. In this respect the Belmont differs significantly from ALL other breeds. The Belmont Breed Society regulations specify the following breed (genetic) content: ■ African Sanga breeds (Africander or similar) – max.1/2, min 1/4. ■ Temperate breeds (British or European) – max. 1/2, min. 1/2. ■ Indicus breeds (Brahman or similar) – max 1/4.

HOW IT ALL BEGAN The breed started and was developed in the austere hill country in the Galloway area of south-west Scotland and is believed to have originated more than 300 years ago the result of crossing the Galloway with the Dutch Lakenvelder.

The "Beltie" is naturally polled and has striking colourings of black, red or dun, with a white belt. For sheer eye appeal, no breed is more distinctive in the paddock and the term "beautiful Belties" is often used. They have a "double coat " of hair, consisting of a long, shaggy overcoat and a soft, thick undercoat, providing excellent insulation in cold, bleak weather and reducing the amount of feed intake required to maintain body weight. Belted Galloways have several traits which will fit in with just about any crossbreeding program and the targeting of all domestic and export markets. Belted Galloway are known for a number of their rare and quality traits. Some of these traits are listed below:
LONGEVITY
Belted Galloways have a reputation for longevity – many are reputed to live until 17 to 20 years of age.

HARDINESS
The Belted Galloway’s heavy, double hair coat means that heat loss is reduced, winter feed costs are significantly less and rain hardly penetrates in cold, wet weather. The Belted Galloway cow has about 4000 hairs to the square inch making the coat resistant to severe cold. "Belties" have, in fact, been used on stations with an annual rainfall as low as 150 mm and with their superior foraging ability, have thrived in these harsh, pastoral areas.
ADAPTABILITY
"Belties" are able to adapt to a variety of climatic conditions. They have good foraging abilities, ensuring that they thrive where other breeds fail. The coat is shed in hot weather, thus making the "Beltie" a highly adaptable and versatile breed for a variety of climatic conditions.

The Belted Galloway originated in South-West Scotland and adapts readily to the diverse Australian conditions. With colourings of black, dun and red, the distinctive white belt is a prominent feature of the Belted Galloway breed. The adaptability and fertility, coupled with a long life span makes the Belted Galloway an excellent choice for your farming operation. The Belted Galloway AGM will be held the last weekend in July in Melbourne. There will be the Annual General Meeting, a members forum as well as a farm tour. In 2018 Australia will be hosting the World Galloway Conference in Adelaide. Delegates from all over the world shall be in attendance and it will be run during Adelaide Show time.

The very first introduction to Bonsmara cattle in South Africa came in 1984 when I travelled as tour leader with a group of Belmont Red breeders and other invited cattlemen to see the breed which had been developed similarly; although previously, to our CSIRO developed Belmont Red and also inspect the comparisons with the Belmont Red/Bonsmara cattle bred with BR semen provided by co-operators in Australia (Belmont Research Station, Tremere and Mt Eugene) for use in the project. Other cattle breeds of interest to all our group were also included in the tour. The hospitality and camaraderie of the R.S.A cattlemen made the trip a huge success, and impressed upon us the necessity to import some of the livestock to Australia in spite of the ban on imports due to the threat of Foot and Mouth disease which was endemic in R.S.A.
This reality had to be accepted and the path for importations would prove to be long, slow and expensive. Firstly the protocol had to be established to allow importation from a Foot and Mouth disease endemic country. The opportunity to get started came in 1992, when CSIRO called for co-operators to financially assist the importation of Boran and Tuli embryos from South Africa which culminated in Boran and Tuli weaners being discharged from a Russian Antinov aircraft, out of Cocos Island, into Melbourne and Rockhampton. As one of the participants tritely described the following months and years of embryo selection, implant, success and failure, "I wouldn’t have missed it CONTINUED ON PAGE 27

for quids, and there were plenty of them! There were enough successes to establish the Boran and Tuli breeds and even more importantly, for us, this event opened the door for the first importation of Bonsmaras in a joint venture organised by Swin Hudson, between Tremere Pastoral and Arthur de Villiers and Son, one of the leading Bonsmara breeders in
South Africa. The ambition has been completed. The surrogate dams commenced calving – Then another disaster! Pestivirus. A disease, which has not been a major problem in calving cattle in Central Qld previously, spread through many herds and many breeds. Calves premature through to full term twins were still born. It was totally unexpected and prompted
the development of a vaccine which we have today; but it reduced our numbers dramatically. The survivors were gratefully received and so the Bonsmara breed had arrived from Africa. More embryos entered from the USA, and the gene pool expanded. It was a final success which none of us would have missed for quids.

ABOUT BONSMARA CATTLE The Bonsmara Cattle Breed evolved in the 1930's from extensive comparison projects at Mara Research Station in South Africa.

Bonsmara becoming the most popular beef cattle breed in South Africa today.
An initiative of the Department of Agriculture, the aim was to develop a stabilised breed that could adapt and produce efficiantly in the hot savannah areas of South Africa. Under the direction of Professor Jan Bonsma breeds trialed in the projects included: Africander, Hereford, Shorthorn, Sussex, Angus and Red Poll. These research projects commenced in 1937, resulting in findings that the optimal combination for efficiency and production was 5/8 Africander, 3/8 Exotic. With the outcome being an animal that was 5/8 Africander, 3/16 Hereford and 3/16 Shorthorn. Wanting to assess the breeds performance under broader commercial conditions the Department of Agriculture set up a bull loan scheme in 1951, which allowed greater access to the breed for South African cattleman. Resulting in the Bonsmara becoming the most popular beef cattle breed in South Africa today.
DID YOU KNOW... ■ Bonsmara are a tropically adapted Bos taurus breed. Performance recording is the cornerstone of their development. ■ They are the dominant breed in South Africa, where some 60,000 registered females are currently being performance recorded with the commercial and seedstock herds, adding to around 4 million head. ■ Some 400 Bonsmara embryos were first imported into Australia in 1998 from the Republic of South Africa, followed by semen from the USA. ■ The Bonsmara Cattle Breeders Society of Australia (BCBS of A) was formed in 2000, and there are now over 3000 Bonsmara infused cattle in the country.
Bonsmara are medium framed, smooth coated cattle. Coat colour can range from deep red to light brown. Like the Belmont the Bonsmara Bulls exhibit a small hump forward of the shoulder with a neat underline. Bonsmara embryos were imported into Australia in the 1980's and the breed continues to develop under Australian conditions

Brafords are a real Australian success story First developed in 1946 when Brahman genetics were introduced into a Hereford herd in Central Queensland to combat the staggering losses caused by cattle tick and eye cancer. In 1962 a group of visionary cattlemen met in Rockhampton with the intention of forming an organisation to represent Braford cattle breeders. Do Braford Bulls make good terminal sires for crossbreeding programs? Yes and we encourage these programs. Are Braford cattle suited to all Australian climates and conditions? We have members in all States of Australia and hoping to have some new members from New Zealand. Braford cattle have proved over the years they are adaptable to all climates from the heat in the Western Queensland and Central Northern Territory to the cold in southern New South Wales and Victoria. AUSTRALIAN Brangus have the flexibility to be used as a maternal base, a terminal sire line or as a pure self-replacing herd. However you choose to incorporate Brangus genetics into your program, the attributes of the breed will ensure your are taking a step in the right direction. IN addition to being excellent cross-breeders, the unique abilities of Brangus cattle allow them to handle a vast range of environments and perform successfully as a purebred herd. A self-replacing Brangus herd gives producers an economic edge, with replacement heifer calves as valuable as their steer mates. The advantages of a self-replacing herd with no need for “heifer” bulls or purchasing replacement heifers should not be understated. John Graham, of Withersfield Pastoral Company in Emerald, said his purebred Brangus cows were hardy animals. “We’ve been running purebred Brangus cows on Withersfield since 1973,” Mr Graham said. “It’s pretty rough country, but with Brangus, no problems. “They’re hardy animals, good calvers, great mothers and produce a top line of store steers,” he said. Breeding up to Brangus BRANGUS cattle can only be bred from the Angus and Brahman breeds of cattle. The association allows the level of Bos Indicus blood in Brangus to vary to suit breeders’ different environmental requirements. Brahman blood percentage is required to be within

AS a breed society we could suggest Charbray cattle entered the world as the answer to every cattleman’s prayer, but as every cattleman knows, no breed originated flawlessly. It has taken hard work, determination and above all, a clear vision, for Charbrays to reach their current position as leaders in consistency as well as performance. Dedicated Charbray seedstock producers and their commercial breeding counterparts have witnessed the breed go from strength to strength in the last decade and agree a complimentary breeding plan was the key turning point. Since its official launch at Beef Week 2009, the breeding plan has offered a direction for Charbray breeders to improve the quality and consistency of their product. Inconsistencies stemming from reliance on rotational terminal sire breeding using both parent breeds was recognised and denounced. A dedicated team worked to create a pathway forward for the breed, and the rest you could say, is history. Charbrays have undeniably been leading the field in the selling and show rings with buyers and judges alike recognising the breed’s new found market suitability. Bull buyers will happily tell you a walk down a saleyard lane now leaves them scratching their heads at which Charbray stood out as the best. The same goes for competition judges who often can be quoted describing the closeness between Charbray entries. With quality and consistency now front and centre, the possibilities for success with Charbrays are limitless and the timing couldn’t be more perfect. The Charbray National Sale is celebrating its 40th
year in 2017 and is sure to offer recognised Charbray pedigrees that have emerged to drive the breed forward. In such a milestone year, Charbray breeders will come together to look back on 40 years of development and share in the pride that comes from meeting expectation and delivering on promises. Those promises based on measurable results are the backbone to the highly sought after progeny making their way into producers’ paddocks today. Demand for outstanding Charbray pedigrees is expected to surge again at this year’s national sale with international enquiries already cropping up throughout the seedstock selling group. Commercial and stud Charbray operators alike will attest to putting solid runs on the board in recent years with confidence building for a knock-out 2017 selling season. Bulls at the 2016 Charbray National Sale averaged $6597/head with top sires now consistently commanding a healthy price tag- a huge achievement for the breed. High prices are undoubtedly linked to high quality and the Charbray breed’s comprehensive successes can only flow back to producers in their efforts to deliver a superior product. It is fair to say Charbrays are receiving a premium across all markets, be it within the saleyards, direct feedlot trades or in the stud sector. Those that have stuck with the breed are now reveling in the success they saw from afar while those who didn’t find favourable results early on are beginning to return to Charbrays with a new sense of purpose. A CUT ABOVE THE REST Well set and well sprung, Charbrays set the standard for excellence COLOUR: Solid colour, white to red and shades in between. The Council of the Society strongly recommends that dark coloured cattle are objectionable and members should be discouraged from showing these cattle or offering them for sale at Society Sponsored Sales. Skin must be pigmented. HEAD: Polled or de-horned, broad with well-shielded eyes, full open muzzle with strong under-jaw. Ears medium to large, either straight or drooped. BODY: Well-sprung body cage, full behind the shoulders with strong backline leading to slightly rounded rump, broad at pins with tail well set in. Well grown for age and with good weight gain ability. BONE: Medium to large, sound and free of defects. FLESHING: Thick and evenly distributed. COAT AND HIDE: Short, sleek coat; loose and pliable hide. LEGS: Moderate length, firm even hocks, short pasterns, active walk. UNDERLINE: Clean and neat with some looseness. SCROTUM: Containing two testicles which are well developed. UDDER: Well developed with teats of moderate size, evenly placed. FOREQUARTERS: Shoulders smooth and well set in to the body. HINDQUARTERS: Round and full with hips well set in to the body. TEMPERAMENT: Docile but alert.

The Charbray breeding plan is flexible and modern. Charbray cattle consist of animals bred approximately between the limits of three-quarter (75%) Brahman (bos indicus) and one-quarter (25%) Charolais on the one hand, and three-quarter (75%) Charolais and one- quarter (25%) Brahman (bos indicus) on the other hand, and any combination in between.

The biggest asset Devon cattle have to offer is fertility and we regularly have calving percentages between 96% and 98%.
DEVON cattle are the breed of choice for organic and grassfed beef producers in North America. The breed is experiencing a strong resurgence in popularity in several countries where consumers are paying premiums for the healthier eating benefits of grass fed meat. Calving Ease Devons have small vigorous calves which are usually born unassisted. Milking Ability Devon cows are renowned for high milk production resulting in heavy calves at weaning. Mothering Ability The Devon cow has excellent mothering ability which means calves have one of the highest survival rates to weaning.
Weight Gain, Maturity and Carcase Devons combine rapid weight gain as well as adequate muscle and carcase characteristics, with the ability to fatten at an early age. WHAT MAKES GELBVIEH UNIQUE
Uncovering the versatility of this popular and unique breed of beef
Some Gelbvieh cows grazing. GELBVIEH are a unique breed in the beef industry as they combine strong maternal traits with outstanding growth rates and excellent muscle development. Because of their quiet temperament and early maturing they are able to begin laying down fat at an early age. The result is an animal that reaches market weight younger, with optimum finish and tender, tasty meat. Gelbvieh cattle range in colour from a golden honey shade through to deep rich red and also black, which makes them ideal for crossing over most breeds to produce an even, solid colour which gives a uniform appearance in the paddock and the saleyards. Gelbvieh cattle are used in many crossbreeding programs around the world as they are a complementary cross over both British and Tropical breeds. They are the most used breed in the USA for composite breeding. Gelbvieh Traits Growth: Gelbvieh cows have a lower mature weight and are therefore more efficient than most other European breed females. They produce a lower birthweight calf which is born easily and Page 54
almost immediately starts to exhibit a tremendous growth pattern. When Gelbvieh bulls are used over British Breed females the resultant progeny can be expected to be at least 10% heavier at weaning age than straight bred calves out of the same females. Similar results could be expected when crossing with Bos Indicus females. The result is more money in the producers pocket for very little extra cost. Maternal: Most European breeds are used as terminal sires which results in all their progeny being sold for slaughter. Gelbvieh are strong in both growth and maternal traits so therefore they can be used as terminal sires or their heifer progeny can be retained as replacement females. Their puberty, fertility and milk production is also superior over other European cross females. This has been confirmed at extensive cross breeding trials such as Clay Centre, Nebraska, USA. Puberty: Gelbvieh have the earliest puberty of any beef breed, so under normal conditions Gelbvieh can be joined as early as 13 months to calve at 22 months - instead of at 24-30 months like most of the other larger breeds. This gives the first calf Gelbvieh heifer 15 months before she has to calve again as a 3 year old.
GELBVIEH The Gelbvieh is a proven award winner. Quiet Temperament: Gelbvieh have a quiet and inquisitive nature and display a docile temperament. Gelbvieh pass this quality on to their offspring. A quiet nature is being demanded by producers and processors and is required in workplace safety, bruising and the meat quality areas. Gelbvieh's excellent temperament makes them ideal for farmers who run a small number of cattle or in the small farm situation. Large herds are no different when it comes to temperament requirements, making Gelbvieh a preferred choice especially in crossbreeding programs. Carcase Quality: Studies carried out at the Clay Centre, Nebraska USA, confirmed that Gelbvieh had the largest ribeye muscle area per 100kg of all breeds, hence they have high cutout yields. Gelbvieh are a lean breed with a fast growth rate with the ability to fatten at a younger age. Given their marketability as yearlings, they are a source of high cutout yields. Both purebred and crossbred Gelbvieh cattle have demonstrated their excellent market suitability by winning beef carcase championship all around the country. This was confirmed at Beef 2009 in Rockhampton with a seven month old steer of Michele & Barry Fleming from Serpentine WA, which took out the National Beef Competition Champion Carcase Award. Fertility: Gelbvieh had the largest testicles of all breeds in the Clay Centre research and testicular size is related to the fertility of their daughters. Taking into account the breeds early puberty this could explain why the females are most fertile and even precocious. Milking Ability: Originally Gelbvieh were bred for milk production as well as beef, they have sound, compact udders with smallish well placed teats. The exceptional milking ability of the Gelbvieh

compliments the growth trait of the breed and results in a young sappy calf that reaches weaning age at a suitable marketing weight. When used in a crossbreeding program the addition of the influence of hybrid vigour adds further to the profitability. Weaning Weight: Gelbvieh produced the highest weaning weight per cow exposed to breeding at Clay Centre, which reflects their good performance in fertility, milk and growth. Weaning weights of the progeny can regularly be around 60% of the cows body weight. Yearling weights are more than adequate for joining replacement heifers to calve as two-year-olds and the early puberty and high fertility of the breed results in high conception rates. Heat Tolerance and Tick Resistance: The South African Gelbvieh Association has reported a distinct tolerance to both heat and ticks and there have been confirmatory reports from Queensland. Gelbvieh bulls stand in the sun quite contentedly while British and most other European breeds seek the shade. Gelbvieh have a short coat and smooth skin which aids in heat tolerance and tick control. These very important features of Gelbvieh will be further researched in Queensland. The Balancer Breed: Gelbvieh cattle crossed with Angus (red & black) produce a 'balancer'. Balancers utilise the advantages of hybrid vigour and increased production to produce high growth and well muscled progeny with added fat cover and easy calving traits. Balancers can be either red or black and are equally suited to grass finishing or sought after by feedlot operators where they can be short fed for local trade or grown out to heavier weights.

Jamaican-Jerk Hereford Beef Scotch Fillet with Cornbread and Roasted Capsicum Salad INGREDIENTS
2 tsp ground all spice 2 tsp chilli flakes 1½ tsp dried thyme 1 tsp ground ginger 1 tsp grated ginger 1 tsp ground pepper ½ tsp ground nutmeg 2kg Hereford scotch fillet 2 red, green and yellow capsicums cooking oil spray 150g white maize meal* 2 tsp baking powder 1 tsp fine salt 300ml buttermilk 75g feta, crumbled salt flakes and freshly-milled black pepper 1 baby fennel, finely shaved ½ red onion, finely shaved 1 bunch parsley leaves ½ cup extra virgin olive oil 1 Tbsp red wine vinegar lime wedges, to serve

FANTASTIC MEAL IDEAS METHOD
1. Preheat oven to 220°C. Combine the spices in a small bowl and rub onto the beef. Cover with cling film and refrigerate for 2 hours to marinate. Sprinkle the capsicums with cooking oil spray and arrange on an oven tray, then bake for 20 minutes, until blackened. Place in a bowl, cover with cling film, then set aside to cool completely. Once cool, peel and de-seed, then cut into strips and place on kitchen paper to dry. 2. Sift the maize meal, baking powder and fine salt into a bowl, then add the buttermilk and two-thirds of the olive oil. Mix well, add the feta, then press into a lined 20cm cake tin.Reduce the oven to 180°C and bake for 30 minutes, until deep-golden. Cool on a wire rack. 3. Season the beef with salt, sprinkle with cooking oil, then cook on a hot barbecue grill for 15 minutes, turning often, until medium. Set aside to rest for 10 minutes. Combine the capsicums, fennel, onion and parsley in a bowl, season lightly with salt and pepper, then drizzle with vinegar and the remaining oil. 4. Carve the beef, cut the cornbread into wedges, and serve with lime wedges.

THERE is a lot of misunderstanding being perpetrated regarding the classification of Miniature Herefords, making them out to be a separate breed, which they are not. It is also causing unnecessary confusion among new owners and potential breeders. Quite simply the animal is a Hereford first by breed and a miniature second by size. A look at some of the terminology which has been used incorrectly will show this. Firstly, there is no such thing as a "purebred" Miniature Hereford. The description should be "full blood Hereford" without any reference to the miniature size.
A full blood animal is one which has no other breed in its background going back many generations. In the case of Herefords this goes back several hundred years. A Hereford bred to another Hereford, regardless of size is still a full blood Hereford. The only differentiations which can be made with Herefords are whether they are horned or polled or of different sizes e.g. standard, classic or miniature but those are just varieties of the same breed. "Purebred" is the result of successive back breeding from original crossbreeding or interbreeding and this applies to using two or more entirely separate breeds.

ORIGINS OF THE BREED Miniature Herefords owe their heritage to the dedicated Largent family

Beginning with five cows and one bull, the Largents began a major breeding experiment.
MINIATURE Herefords first arrived in Australia in 1997. There was one live shipment and quite a few other breeders imported semen and embryos. Miniature Herefords today owe their existence to one stubborn family, the Largents. Beginning with five cows and one bull, the Largents began a major breeding experiment. Of difficulties and discouragement, there were plenty. But in 1981 the first true Miniature Hereford bull was born. His name was LS REAL MT 3 (Herd ID# 0015) and he is present in the genealogy of almost every Miniature Hereford alive today.
The national herd has been slowly building ever since. Some Australian breeders have been using Australian genetics mixed with the Largent heritage to introduce Australian. Miniature Herefords and also poll Miniature Herefords. The Largents have also continued to diversify their genetics and have also introduced poll Miniature Herefords. The Largent family owns a significant Miniature Hereford herd in the United States and are generally considered the founders of the breed. The Largent heritage still continues in Australia.

MUSCLE UP WITH LIMOUSIN CATTLE Bred for their high quality cuts of meet, the breed make for a superior herd LIMOUSIN cattle are a high muscled breed and are a source of superior quality meat. There a number of reasons why Limousin are a quality and efficient breed to run. For one, they produce high value cuts of meat. A Limousin cross calf is expected to have about 9.5% more silverside, 9.5% more eye muscle area an4% more retail beef yield, with a 3% increase in tenderness of the loin muscle and 5.5% more tender silverside. They can yield high quantities at one time. Crossbreeding with Limousin provides increased weight gain, improved feed efficiency and large increases in retail beef yield and tenderness without the need for Hormone Growth Promotants. They also require no extra feed so are cost effective to run. Crossbreeding provides gains of 4 to 6% in weight through hybrid vigour and within breed selection can achieve ongoing increases in weight gain. Increasing the rate of weight gain increases feed efficiency. The Limousin breed originated in a region of central GREAT COAT: Limousin cattle come in a variety of colours. France – rugged, granite country – where the summers are hot and winters are severe. The documented history of Limousin goes back more than 15,000 years to to an area surrounding the French city of Limoges where rough cave paintings showing the characteristics of the breed have been discovered and carbon dated. The Limousin herd book was established in 1886. Today the Limousin breed can be found in seventy countries from the northern-most herds of Finland and the Commonwealth of Soviet States to countries such as Cuba, South Africa and China. The Limousin breed is: ■ the largest breed in the UK ■ the third largest breed in the USA ■ the fifth largest breed in Canada ■ the seventh largest breed in Australia

THE Limousin is a rich gold colour, with lighter circles around the eye and the muzzle, and shading to a lighter colour on the legs. Limousins can also be black as a result of grading up from black cattle in Australia. The head is small and short with a broad forehead, and the neck is short. Limousin can be horned or polled. Most horned Limousins are dehorned at a young age. The Limousin is intermediate in size and maturity between British and most other European breeds. Limousin cattle adapt to diverse climates and the widest range of management systems, from the top end of the Northern Territory to the highlands of Central
Tasmania. Limousin calves have low birth weights, which lead to minimum calving problems when Limousin bulls are used over cows of other breeds. Limousin crossbred steers and heifers have high dressing percentages of 58 – 63 percent compared to an average of 53 – 58 percent. High meat to bone ratios and low fat leads to outstanding yields of saleable meat from Limousin cross carcases. Yields of up to 80% of saleable meat are not uncommon. Limousin meat is finely textured, tender and low in saturated fats and cholesterol. It is genetically trimmed.

Structurally good bulls will have a long life and the Lowline bulls are proving their longevity.
COONONG Station, a large NSW Riverina sheep and beef farming operation of 27,000 hectares between Urana and Jerilderie, purchased their first Lowline bulls in 2007. They had calving troubles with their Hereford heifers and had tried using bulls from other breeds over the years but were still pulling calves or losing heifers calving. It was suggested by another beef producer that they try using Lowline bulls so they purchased three two-year-old bulls from Elandra Park and Wanamara studs. Coonong Station is vast so the bulls work in large paddocks and sometimes harsh conditions. It goes to show that structurally good bulls will have a long
working life and the Lowline bulls are proving their longevity. Sophie Holt, Coonong Station, maintains the use of Lowline bulls for a heifer’s first calf is a sensible option. By getting 100 per cent of live calves and having 100 per cent to wean is the best outcome for any producer. Sophie said she likes that all the calves are consistent of type no matter what bulls are used. They are quick growing, black baldy calves that are weaned at six months old, around 200kg, and sold as grass-finished yearlings , preferably over the hooks, fetching good prices. Origin – Fast Facts • The Murray Grey breed was developed in the upper Murray River region of Australia in the early part of this century. • The first grey cattle resulted from the mating of an Angus bull and a roan Shorthorn cow. It was found that two or three crosses of the greys produced a very high percentage of grey cattle, combining features of the Beef Shorthorn and Angus breeds. • Commercial cattlemen became interested in the breed’s rapid growth and high carcase yield, and several developed grey herds.

Developed in Queensland in the 1970s, specifically to suit the Queensland environment, the Greyman breed was the result of combining the outstanding genetic characteristics of both the Murray Grey and Brahman breeds. This allows breeders the option of being able to tailor-make genetic blends, selected for optimal performance specific to the region and environmental conditions. TRIAL work at the Beef Quality Cooperative Research Centre in southern NSW has shown that a wide range of genotypes will produce carcasses of acceptable eating quality for the domestic market. The steers evaluated were the progeny of Hereford cows mated to a range of European, British and Wagyu sires. For this market, where age is a primary consideration, growth rate and carcass yield will be the most important traits that determine profitability for the producer. This was borne out in the C.R.C trials, where, with saleable beef valued at $10 per kg, the steers by European sires produced carcasses valued up to $140 above the other breed types. The trials are valuable because with new technologies for beef production continually being developed, it is sometimes difficult for cattlemen to keep everything in perspective and to get our priorities right. We need to be able to identify and focus on those factors that have
a real impact on the efficiency of our production system. The selection of bulls for their propensity to marble and the development of DNA tests for the presence of genes that contribute to tenderness, are both means by which the eating quality of beef may be improved. However before we adopt new technologies such as these, we must consider two things: Firstly the critical level of expression for each characteristic. That is, the level beyond which there is no financial reward for further improvement. Secondly, the negative correlation that can exist between traits, such as between some adaptive and production traits or between growth rate and marbling. The Romagnola breed holds a unique position in the industry in relation to both of these considerations: It inherits the adaptive traits and strong constitution of its Bos Indicus ancestors and, at the same time, is unsurpassed for growth rate and muscularity by any other European breed.

SANTA GERTRUDIS Santa Gertrudis can be seen flourishing in all states of Australia from the harsh cold climates of Victoria and Tasmania, to the sun-baked plains of the Northern Territory and tropical Queensland.
THE SANTA GERTRUDIS BULL Necessity brought about the creation and development of this breed of beef cattle THE Santa Gertrudis bull is renowned as one of the industry’s most efficient beef producers. You will notice immediate improvements with the first calf crop. The calves will have no trouble at birth with smaller birth weights than most of the recently imported breeds and yet they are renowned for their rapid growth. The use of a Santa Gertrudis bull will introduce heat tolerance, tick resistance and most importantly, when crossed with British breeds, an immediate drop in the number of losses due to eye cancer and pink eye. In recent years breeders of Santa cattle in Australia’s more temperate climates have consistently recorded significant reduction in losses caused by bloat. Santa cattle have the ability to thrive on lush pasture without
suffering from bloat - a problem which causes untold losses every year in some of Australia’s southern states. Mature Santa Gertrudis bulls weigh in excess of 900 kg, with 1000 kg or more not uncommon. The average scrotal circumference is frequently in excess of 40cm. Weight gain is one of the most highly heritable performance traits in beef cattle - daily weight gains of Santa Gertrudis bulls is regularly monitored at more than 1.5kg per day. Santa bulls have outstanding foraging ability which means they can thrive even under the harshest conditions and they are noted as very active and athletic sires. An inherent trait of Bos Indicus is their unlaboured gait which enables them to easily cope with long distances to food or water, unlike some European and British breeds.

THE SANTA GERTRUDIS COW Renowned for their natural nursing ability and excellent maternal instinct THE Santa Gertrudis female has become a highly sought after commodity in the Australian beef industry with regular sales of females from central and northern Queensland to cattlemen in southern regions of New South Wales and Victoria. Few beef cattle breeds can boast regular sales of females into these areas and the reasons are clear. The Santa Gertrudis cow is one of the most efficient producers in the industry. The mature Santa cow can weigh up to 750kg, she has excellent milking ability with high butterfat content, few calving problems and in competitive tests has produced consistently larger calf crops than other breeds. One of the major attractions of Santa Gertrudis female is their longevity. Producers regularly record details of 14-15 year-old cows still producing a calf each year without fail. South Devons are a British breed renowned for their quiet temperament; ability to adapt to a wide range of climatic conditions; high fertility and longevity of breeding life (they can calve at two years old and have been recorded as continuing to calve every year till the age of 20). Their maternal ability (both in quantity of milk and quality of maternal care); feed efficiency (feed trials have proved their superiority in feed conversion); excellent weight gain (South Devon steers regularly win the Lardner Park grass fed trials in Gippsland) and quality of meat (2016 Brisbane Ekka – South Devon steers from Bolinda stud won the Highest Individual Carcase Index Score). At Farmfest 2017 in Toowoomba, the South Devon heifer Kildare Sassy 25 won the coveted Cattleman’s Cup from all comers. This competition involves weighing and scanning the animals with the resulting data used to work out the Carcase Merit Index. Not only did Kildare Sassy win, but two other South Devons were in the finals and all South Devons scanned in the
high Super Elite range. Recent breeding trends in Australia have modified the size a little, to better suit Australian conditions. Also, the majority of South Devons in Australia would now be polled, and Australian polled genetics have been exported (including to South Africa to introduce polling to their herds). An Australian polled South Devon bull has recently been sold to a Red Wagyu breeding operation to introduce polled genetics there. As with other breeds, there are black South Devons available. In April 2017, 44 South Devon breeders from the UK, New Zealand, and Australia travelled to South Africa for the World Conference and stud tour. We visited several South African South Devon stud and commercial herds in a wide range of climatic conditions; from the high veld with snow in winter, to plains similar to Western Queensland but with a temperature variation from -18 in winter to 45 degrees in summer.

winter to +45 in summer and a 12" rainfall. In Port Elizabeth, the touring party were joined by the South African breeders and the World Conference was held, with three South African experts as the keynote speakers. South Devon breeders in South Africa are small in number but big on ideas, and having celebrated 100 years of South Devon breeding there, I can confidently predict that the breed will be going strong for its 200th Anniversary. The cattle were very well suited to the conditions they had to live in, and the breed characteristics (temperament, adaptability, fertility, feed efficiency, weight gain etc.) were well displayed. We also visited the 140000 head Karan feedlot, a state of the art family owned business and a major local employer. As in Australia, South Devon genetics are used in South African commercial operations to add the traits of temperament, fertility, feed efficiency/weight gain and meat quality. They are an excellent cross with Tropical and European cattle as well as with other British breeds, and thrive in a wide range of climatic conditions. One stud we visited has a temperature range from -18 in

SPECKLE PARK HIGHLY REGARDED The cattle are renowned for being a tough breed and are bred in countries all around the world. SPECKLE Parks, the beef cattle breed created in Canada, are now an internationally sought after breed. They are a carcass orientated yet maternal pure bred (not a composite), breed of beef cattle. They are Polled and British Bred originating from Canada. Speckle Parks are moderate sized. Mature cows range in weight from 600kgs to 850kgs and mature bulls can get up to 1000kgs plus. Calves average 30 to 40kgs at birth and wean off at about 230kgs to 370kgs plus. Speckle Park cattle come in a variety of colour patterns. They are predominantly black with white top line and underline, with speckled hips and sometimes shoulders and with a black or black roan face. The second colour pattern is the leopard pattern. I A great all round breed, fit for any climate. t is similar to the speckled pattern but there are definite black spots on the animal instead of just speckles. The white animals with some black hair on the body are considered ‘leopards’. The third colour pattern is the ‘white’ pattern. The white animals have white hair on the body and face but have black points. i.e. eyes, ears, nose, and hooves. The fourth is solid black. There is a percentage of blacks. The solid black heifers are registrable and can be used in the purebred

With their fine skin and hair in summer and a quick to ‘slick off’ hair coat, Speckle Parks adapt well to the Canadian summers as well as being able to ‘coat up’ when needed for their notoriously cold winters. They are tough, real tough, you can throw any harsh climatic situation at them and they survive, get back in calf, rear a good one, yet are so easy to feed and come back in condition quickly after hard times. Traits that will stand them in good stead in Australian’s harsh environment.

IN Canada, and now increasingly in Australia and New Zealand, butchers and meat graders are very impressed with the consistently high quality of the Speckle Park carcass. It isn't uncommon to get an exceptionally good carcass from any breed, but what is impressive is when the carcass from a particular breed is consistently good. That is the case with the Speckle Park breed. Another impressive fact about the Speckle Park breed is their unique ability of being able to achieve a AAA carcass without excess outer fat cover. Most breeds are able to achieve AAA carcass but often at the expense of excess outer fat. Speckle Park can achieve a AAA carcass with minimal fat cover, thus grading YG1-AAA. Their docile nature is the the key to more weight gain and less stress on both man and beast. Speckle Parks are docile animals and their gentle disposition makes them a pleasure to work with. They are however tribal and prefer to be in the company of other cattle. The breed comes in three colours and in black. Black animals must have the word [black] after its name. All black animals must have DNA verification before they can be registered. Rarely, there are some animals born with red markings. These cannot be registered. Animals with horns also cannot be registered.

TEXAS LONGHORN FROM THE SHORES OF SPAIN: The Mexico - Texas area became the blending pot for the evolution of this historic breed of cattle.
TEXAS LONGHORN Steeped in history, the breed is a part of the Australian cattle story

They bred profusely during the American civil war-days and became the financial salvation of the south west.
THE ancestors of today’s Texas Longhorns came from the shores of Spain with Columbus in 1493 to the Americas. In 1521 cattle were introduced into Mexico. Explorers and settlers then brought cattle into Texas where these cattle intermingled with cattle from eastern settlers left on their own without the benefit of man. These animals survived through the years developing the traits to survive. Traits were genetically fixed to result in survival of this breed. They bred profusely during the American civil war-days and became the financial salvation of the south west. Men returning from the war found them as their only source of income, as the thousands of Texas Longhorns, wandering free in the south worth nothing, but were hungered for by people in the north. An estimated 10 million Texas Cattle were trailed to the northern markets between 1866 and 1895. However, in the late 1800’s the open ranges were fenced and other breeds of cattle from England were introduced that were beefier and fatter for marketing hides and tallow.
Numbers dwindled and the true Texas Longhorn was near extinction. As concern grew the US government acquired a small herd of 23 head in 1927. These old-time cattle were the foundation of the Wichita Mountains Nation Wildlife Refuge in Cache, Oklahoma. There were also six other breeders with small mobs of these old-time Texas Longhorn. This group developed a registry of bloodlines and through the year’s interest increased in 1964 the Texas Longhorn Breeder’s Association was formed and later the International Texas Longhorn Association was also formed. Through the efforts of those Breeders more than 250,000 head of Texas Longhorn cattle have been registered in the last couple of decades. The quality of Texas Longhorn cattle has noticeably increased. Texas Longhorns were introduced to Australian in 1980. Today we are importing the best semen straws and embryos available from selected parts of the US and Canada. Page 97

WAGYU is a Japanese beef cattle breed derived from native Asian cattle. The name ‘Wagyu’ refers to all Japanese beef cattle, where ‘Wa’ means Japanese and ‘gyu’ means cow. Wagyu were originally draft animals used in Japanese agriculture, and were selected for their physical endurance. This selection favoured animals with more intra-muscular fat cells, or ‘marbling’, which provided a readily available source of energy. Wagyu is a naturally horned breed and the cattle are either black or red in colour. Wagyu is a unique breed that has amongst its key
attributes, other than the exquisite marbled beef quality, a high calving ease, excellent temperament, resilient in the feedlot and a high carcass yield. Most important is the economic value derived from each animal, which is currently 100 per cent more than pastoral cattle, sold at either the farm gate or as a long fed carcass. The Wagyu breed is gaining strength and popularity as it becomes more apparent to Australian beef producers that there is a real need and demand for high quality carcasses that derive from the marbling prominent in the Japanese genetics.
