MUSIC:
MEDICINE:
Mathew Joseph is a fingerstyle guitarist with a growing presence on many digital music platforms. His music has been streamed close to one and a half million times on Spotify. Toowoomba music lovers first heard him at an open-mic night at Bon Amici Cafe in Margaret Street in 2016. In 2004, Mathew recorded his first album Firefly in New York and Texas, a reflection of his early life and travels in the Himalayas. The track ‘Kaliyug’ received international acclaim and was described by one critic as “a fantastic amalgam of jazz, blues and traditional Indian rhythms – absolutely some of the fiercest, finest playing I have heard anywhere.” In 2006 Mathew Joseph and Friends headlined the Bermuda Classic Guitar festival and received fantastic reviews. A second album released later that year, titled Eclectia, featured his most popular solo track ‘Tribute to Andrew York’, dedicated to his friend and mentor, the Grammy winning composer/guitarist Andrew York. It was featured in the prestigious Fingerstyle Guitar Journal’s workshop section with tablature transcribed by Andrew York himself. Mathew describes his current style of guitar driven world music as “a blend of grooves and rhythms from many different cultures highlighting humanity’s oneness in its diversity, spreading the message of world peace and harmony.” He has produced and released more than 80 original tracks and covers from his home studio and collaborates with several international artists. Cast your mind to the most exquisite, lush tropical paradise: that’s where Mathew grew up. His home state of Kerala on India’s Malabar Coast is literally one of the world’s “ten paradises” chosen by National Geographic Traveller. Famous for its palm-lined beaches, backwaters and eco-tourism initiatives, it also offers a unique blend of cultures. In the 1980s young Mathew qualified as a doctor and then as a specialist in General Medicine. The busy Indian hospital system took over his life and there was no room for music. Then, in 1987, he was offered the opportunity to run a community medicine project among the indigenous people (the Palliyars) in the forests of the Palni Hills in Tamil Nadu. “The idea was to bring western medicine to the tribal villages. “But I quickly realised they had their own understanding of healing and so I took a back seat and started learning from them.” “They taught me ethnobotany – traditional knowledge of plants in the local area and their use in healing. I also observed and studied how they used their hands to heal. “From then on I maintained an interest in different types of healing and started to explore Ayurvedic and Tibetan medicine even while working as a medical doctor over the next 20 years. From 2011 to 2013 I trained formally in therapeutic Thai bodywork in Chiang Mai and studied several hybrid forms such as Thai-Shiatsu, OsteoThai and more. I also studied with the blind teacher Ajarn Sinchai Sukparset, a truly great master. I found that I could blend these systems into my Integrative practice in India.” Prior to moving to Australia in 2015, Mathew decided to switch over to an exclusively naturopathic practice and so completed an Australian certificate in naturopathy. He now operates HIMAL clinic, a small private naturopathic clinic with flexible hours. “I am not practising as a medical doctor. My clinic is about teaching self-help: helping people find ways of healing that suit their personality.” Mathew offers bodywork massage – both eastern and western – incorporating the abdominal massage form known as Chi Nei Tsang. “I try to facilitate lifestyle change and wellness through a unique approach to nutrition based on Ayurveda and naturopathy, self-help pressure points and exercises, posture and alignment correction, yoga and meditation.” www.himalclinic.com

MUFFIN COMPARES Tim Charles is head chef at St Vincent’s Private Hospital, but he doesn’t stop cooking when his shifts finish. Outside work hours, Tim and his wife run Tasty Treats by Tim, decorating extravagant cakes and baking sweet treats. How did Tasty Treats by Tim come about? I’m a qualified chef by trade and always enjoying making sweets and desserts. A lady I worked with asked if I could make her wedding cake and she absolutely loved it. So, my wife suggested why not have ago at making cakes as a side gig. We went about obtaining the correct licenses and business name then we started a Facebook page and away we went. What keeps you in your side hustle? All the exciting and different sorts of cakes that my customers request there’s always something different and new to try. Do you prefer your side hustle or your main job? Both of my jobs are rewarding in their own way. Cake making allows my creativity to shine whereas being head chef in a fast-paced kitchen is about leading my team each day.
PODCAST KICKING BUTT Tyla Yong and her hubby Ben have many talents and are a powerful team in their social media marketing business, Social Palms. So, when they started a motivational podcast called ‘Kick Up the Butt’ we knew it was going to be good. What is your podcast about? It’s about encouraging and motivating people to live a better life. My husband and I constantly talk about things that inspire us. We find some things so interesting that they ‘kick me up the butt,’ and we thought that would be good on a T-shirt; then we thought it would be a really good podcast. What does it cost to have a podcast? We bought the cheapest mics and we just use our media room, so in that sense it’s really cheap. We use a platform called Buzzsprout, and it costs a few dollars a month, so we pay for that and it puts the episode onto Apple Podcast, Spotify and Google Play; it does reach and insight too.
How do you fit baking into your everyday life? Let’s just say my wife and I are very busy most days, we spend upwards of thirty hours a week on the tasty treats. What are you most proud of since starting your side business? The feedback I get from customers, sending me photos of their celebration and allowing me to contribute that little something to their celebration is very satisfying. Who benefits the most from what you do? There are benefits to both customers and me. My customers keep my little business going, and I provide them with lots of delicious tasty treats, it’s a win-win situation. What does it cost to run your side hustle? The initial purchase of all the equipment was quite a lot. Now, it’s just the cost of all the ingredients. Any tips for others thinking of starting their own side gig? Work hard at what you do, listen to customer feedback, and always keep improving.
What do you earn from your side hustle? At the moment we aren’t monetized. It’s more about unpacking things or moments which kicked me up the butt. There have been times I’ve reflected on an episode and it has helped me. When we hear people say “That changed the way I view my marriage,” and “That changed the way I see going to the gym,” I find that epic, it’s life-changing. What’s something you discovered since starting your podcast? I’ve learned a lot about our personalities. I am more nervous and get butterflies whereas Ben’s more a “just send it, come on, let’s go,” kind of person. Any tips for others thinking of kicking off their own side hustle? If you want to start a side hustle, make sure it aligns with your passions. If you try something for money or for status, it won’t sustain you when those bumps in the road come along - because they will come! Your passion and values will get you through. 10

hat exactly is a “side hustle”? It’s an additional moneyearner beside your day job. More commonly side hustles are freelance work people do because they enjoy it. That’s the key; you have to be passionate about your side hustle so that it doesn’t feel like work. Think of it as a baby step in entrepreneurial waters that could be a gateway to bigger and better things. We’ve put together a list of possibilities to get you “hustling”:
• Ride sharing and delivery driving • This is one of the easiest side gigs. You choose your hours and this is proven work. Whether you work with Uber, DiDi, Ola, Shebah, Menulog, or Deliveroo, you’re in control of who you pick up and where you deliver from the comfort of your own car.
A RUSTIC PASSION Warwick mother of two, Robyn Look recently started her own side hustle in furniture upcycling when she discovered she was more creative than she first thought. Now Walter and Tulip Vintage gives dated and dull furniture a new lease on life. What do you like about your side hustle? I love being creative and designing my own pieces. I find it relaxing, even the dirty work of stripping back the furniture and sanding it. I enjoy the whole process from start to finish and find it personally rewarding. Do you prefer your side hustle or your main job? Both. Obviously, my children are number one but upcycling furniture is something I get to do for myself.
• Get creative • The recent boom on platforms like Fiverr, Etsy and Facebook Marketplace means making money as an artist is now easier than ever. With Fiverr you can be assigned jobs for money but if you prefer to do your own thing, you can sell your masterpieces in your own shop or on a platform.
• Tutoring and babysitting • This is a traditional side hustle for young and old. Use your academic, sporting or musical talents to coach students on a weekday afternoon or via a computer catch-up. And if teaching doesn’t sound enticing, looking after little ones while their parents have a night off is also a money spinner.
Where do you get your inspiration? I mainly try to see what I can create next. I’m always trying different techniques and learning as I go. How often do you spend time on your side hustle? It varies, sometimes it might be five hours a week, sometimes only half an hour. As my children are still very young I work around them and my everyday routine. Who benefits the most from what you’re doing? I think it benefits me more than anyone, simply because I enjoy it so much. I’m also happy when my pieces find a new home and the new owner loves it as much as I do. It’s something they could never find in a store. What expenses does it take in your side hustle? It’s only as expensive as you make it. I’m always on the lookout for cheap but quality pieces of furniture; then I decide what and how much time and money to put into it. Any tips for others entering these entrepreneurial waters? Find something you’re passionate about and go from there. If it’s something you love, it’s not a job at all. V1 - TCHE01Z01ST
• Rent a room out • This might appear to be an easy earner but it depends on the company. Renting out a spare bedroom or granny flat takes a bit to set up with leases, insurance and so on. However, you can also opt for short term letting with AirBnB or Stayz especially while you are away on holidays.
• Flip things • Houses, cars, furniture, household goods – they can all be bought, renovated and flipped. You’ll soon develop skill and speed with your flips and figure out what makes the most money. It’s in the detail Moving half-way across the world and becoming a full-time artist are tough decisions. But with a “super power” for detail, Lindsey Jane has flourished from both. BY KATHERINE SAMPSON
A
ccording to Lindsey’s mother she has drawn since she could grip a pencil at two. In school Lindsey says she was always the good girl but recalls drawing caricatures including those of her teachers. “They fell into the hands of my naughty older brother, who of course had them taken from him in class. “I got called into the Deputy Principal’s office wondering what I could possibly have done wrong. “He calmly said to me, ‘Now then lass, I’ve seen these pictures of our teachers you’ve been drawing; they’re excellent and I’d like you to draw the Principal for me!’ I could have crawled under a table, but I stepped up to the challenge and I’m still here to tell the story.” Originally from Lancashire in England, Lindsey now calls Toowoomba home and says the move inspired her to draw even more. “When I moved to Australia, I began to draw more often to combat feelings of homesickness and loneliness,” Lindsey says. She says she can draw just about anywhere, anytime including on flights between Wellcamp and Melbourne where her partner of three years lives. “At times it’s been my lifeline. The beauty I find in making art has given me purpose and it’s something that will always be with me wherever I am in the world,” she says. Lindsey enjoys a variety of artistic mediums and says she can turn her hand to any challenge from watercolour to acrylic resin and of

course pencil drawing. From 9-5 she doesn’t stray too far either and can be found at her computer screen producing graphic design artworks for online, print and advertising. “More recently I have been drawing realistic portraiture with coloured pencils for the beauty industry and clients who are seek originality and flair,” Lindsey says emphasising that her superpower lies within the detail. Mostly self-taught, Lindsey paints and draws intuitively but she also gained experience studying fine art and graphic design at college and a Bachelor of Art with Honours at Manchester Metropolitan University. “At uni we were encouraged to design on paper, not on screen, which means you learn to become more disciplined in your practice,” she says. “In college, I experimented with a range of practices including printmaking, life drawing, batik, sculpture and fine detailed art.” Lindsey says that art runs in her family and is in her genes. Her aunt is well-known South Australian artist Sylvia Preston and her daughter Zoe is following in her mother’s footsteps. “I’ve been lucky to have made a career from doing what I love, and it’s seen me through the toughest times of my life,” she says. “Art has always been a constant for me and I’ll be practising for all of my days – the best is yet to come.”

Steamy romance and pretty parties From her home in Highfields, JA Low works full-time as an internationally renowned writer of steamy contemporary romance books. But she also has a side-hustle: an online shop called Brown Sugar Party Boutique.

y heroines are modern women who are sexually confident and highly motivated who live busy lives,” she said. “They have great friends, all equally ambitious women, who lift each other up. My heroes are modern men who are not intimidated by strong women. “My stories remind us that love comes in many forms but always with a ‘happily ever after’ because that is what readers want in a romance book.” Jess Low’s first series of books was published in 2016 – eight years after writing her first draft. These days the busy mum writes during school hours. “It’s not just writing a book – that is the easy part! I have to do all my own admin, social media, marketing, advertising, promotion, graphic design and so on,” she
said. So how did the side-hustle come about? “I love parties, always have,” she said. “Parties and books are what fulfil me outside of my family and friends. “But being a writer is a lonely business like being in quarantine all day long 365 days a year. So, having a side hustle is great as it allows me to get out and refresh my creative juices. “We had moved from Sydney to Toowoomba and I couldn’t find anywhere that stocked beautiful party products. I thought it was something Toowoomba would love too. “Brown Sugar Party Boutique used to have a gorgeous bricks and mortar store but unfortunately COVID-19 happened and it shut me down so now I am 100% online.”

When the dress code says ...
CASUAL IN WINTER When invitations, events or venues have ‘dress codes’, there’s a reason and we need to be courteous and follow the rules. Stylist Amanda Herron shows us how.
S
o you’re invited to an event with dress code “casual”. That usually means “anything goes” or “comfortable” so you’ll most likely grab your favourite wardrobe staple … your jeans. Right? Well let’s step outside the denim comfort zone and try something different. Guys: menswear has more variation in fabrics and colours than you probably think. This means all you have to do is choose a different style pant. If you love your dark denim jeans, opt for dark brown or steel grey chinos, cords, cargoes or even linen pants from any of your favourite stores. If you’re a light wash kind of guy, opt for lighter coloured pants in stone, greys and browns. If you like attention, go for super bright colours. Pair back with your usual T-shirt, or long sleeve button up. To add flare, add a cool belt and change your shoes up too – nothing screams fashion disaster louder than dirty old joggers! Grab

a set of clean sneakers or boots that suit your style. Don’t forget a jacket – not a hoodie – and if it has a hood, don’t put it on your head. An actual jacket made of suede, cotton, wool or leather will keep warm especially on breezy days. Ladies: I’ll bet you have a wardrobe full of clothes and nothing to wear. Sound familiar? You want to grab your favourite jeans and top for this event don’t you even if it means neglecting the rest of your wardrobe. Not so fast, let’s jump-start your casual wardrobe with one simple stylish tip; layering! It really is as simple as it sounds. Choose a dress from your wardrobe (or top and skirt combo) that you love but don’t get to wear enough. Hold it up and place some opaque stockings with the hemline (so you can visualise what it’s going to look like). Now place some flat boots or ankle boots on the floor below, then step back and see if you have your proportions and colouring right. You might need to swap around a bit at this stage. Next find a cardi or light jacket you can place underneath a heavier jacket or coat. Voila! A stylish casual outfit you can feel confident in while you share the love in your wardrobe. Style tip: ensure your coat hemline is the same length or longer than your dress hemline.

The bitter pill for sugar cravings Toowoomba herbalist Mathew Joseph (see page 8) explains why the humble Dandelion can be a good addition to the western diet.

aste is important in eastern medicine,” Mathew says. “We have four basic taste senses which are thought to balance each other: sweet and bitter, salt and sour. Savouriness is the fifth taste. “Consider the first pair.: sweet and bitter balance each other.,” he says. “Medicine is often bitter and as the old song goes – a spoonful of sugar makes the medicine go down.” “Western diets are often excessive in sugar and carbohydrates,” Mathew explains. “Craving for sweets and sugar is a common problem – however, many people are reluctant to reduce their intake of such foods.
“I therefore often suggest that they start to introduce some bitter greens into their diet instead, such as dandelion or rocket, gradually increasing their intake. “Often they report after a few weeks that their sugar cravings have decreased.” Bitter greens include rocket, kale, endive and dandelion leaves (yes, you can pick them from your garden as long as they have not been sprayed with weedkiller or otherwise contaminated). Some people are allergic to dandelion pollen. You can incorporate bitter greens in salads and pestos. Dandelion tea made from the dried root has a coffee-like taste and is sometimes used as a substitute.

highly trained staff are ready to serve.” Ms McKeefry reassured patients and their families that St Vincent’s has comprehensive processes in place to offer a safe healthcare environment. “Changes at St Vincent’s Hospital have included installing thermographic cameras at the two entrances to the hospital we have kept open, increasing personal protective equipment stocks, upskilling staff in priority areas and preparing our hospital, emergency department, and ICU to respond to both private and public patients as directed,” she said. Ms McKeefry said all emergency and elective surgeries could be accessed via the hospital’s 24/7 emergency centre or GP referral. “Our on-site pathology, X-ray and allied health services are operating as usual,” she said. “Having retained all of our staff we are ready to resume our usual high-capacity, quality elective services when directed and we look forward to being able to help.”

Morning walks Explore the mysterious jungles of Kearneys Spring
I
f you’re looking for a morning walk with something different, like a tropical jungle oasis, head to Kearneys Spring. The West Creek parks network has a bit of everything at the moment; autumn colours, open space, lily ponds and this extraordinary and unexpected lush jungle. Huge palms have created a thick canopy to shade advanced cycads and other gems along the winding path by the lily ponds. Honestly, you could take a selfie here and tell your friends you’re lost in Far North Queensland … they’d almost believe you (you’d have to take off your jumper and beanie for the photo). According to Toowoomba Regional Council, the grove of palms in Kearneys Spring was planted in 1995 as part of a ‘Palms of the Nile’ garden, which was part of a larger ‘Wetlands of the World’ comparative garden works. The garden works were an initial component of the 1990 International Gardens Strategy which was subsequently discontinued by Council following a community forum. Kudos to the gardeners from the past who had the foresight and skill to create this little gem in the heart of Toowoomba suburbia.

Emerge and a side of social good
On any given night in Toowoomba more than 140 people are homeless or at a high risk of homelessness. Emerge is one of the city’s biggest saviours in combating this issue.

F
ounder of Emerge, Jen Shaw is a social entrepreneur and role model for the community, developing other young role models for our youth to look up to. Jen says she grew up homeless and on the wrong side of the tracks. “Over time, different mentors, different out of the box programs around employment, helped me get my life on track,” she says. Always inspired and driven to do something for the youth of Toowoomba, Jen says Emerge has been around for more than twenty years, but it wasn’t until she started to read about social enterprising that the business-side of Emerge came to the surface. Originally a hospitality business, Emerge has evolved to meet the needs of the kids in Toowoomba with boxing fitness programs and also helping kids find accommodation. On a normal week Emerge sees up to 50 kids in different capacities. “We see kids who are homeless or at high risk of homelessness and also kids who just are living in home environments that they shouldn’t be in,” Jen says. The help that Jen has been able to provide since starting Emerge comes in more ways than one: employment, outreach, court support and so much more. One of their ventures is ‘Box Off the Streets’, a program designed to improve the mental and physical health of young people doing it tough. The program is led by personal trainer, youth worker and life coach Toby O’Regan and run by volunteers from the health and fitness profession, pro-fighters and former participants wanting to help the next generation. “It’s not about throwing the kids in and they get a job and their life goes back on track,” she says. “Fundamentally it’s about boxing and fitness skills.”

There is a misconception to both the community and kids in tough circumstance about what Box Off The Street is designed for she said. “The cohort of kids that are heavily engaged in violent activities and crime, off the bat, say ‘yeah that’s cool, this is going to make me tougher and stronger.’ “We’ve never had a young person who’s been in our program, doing boxing, who has these skills for evil. “Anyone found fighting out in the community is suspended and potentially terminated from the program,” she says. “They gain so much from becoming a team; they find routine, how to set goals and learn about the fight of life instead. “At the end of the program Emerge hosts a charity ‘Fight Night’, for the kids it’s all about finishing something, showing up and building self-confidence with the program.” Jen estimates that 80 per cent of the youth employed at Emerge Cafe are involved with Box Off the Streets. “They’re learning skills about showing up on time, doing things a bit braver and we can see that potential growth,” she says. “Even being able to offer them a job at Emerge cafe; the more ways that they’re linked in with us, the better their success.” The improvement in those taking part in the program speaks for itself. Jen told Toowoomba Style that although they start off with boxing twice a week, suddenly they’re working in the cafe or helping with their accommodation in the Youth Hub. “We see them repairing the relationship at home so they can return or have a better time at home with their family, wherever they’re staying,” she says. There have been so many success stories, but one that came to Jen’s mind was Tia, now 19-years-old with strong leadership qualities and a great outlook on life. Tia joined Box Off the Streets program two years ago, not wanting to go and was referred by another organisation. “She was living in foster care and over time, she developed really good relationships with the mentors. “She started with a pilot program in a nursing home that we ran before the cafe and she quickly took the lead. “We realised pretty fast that she was a natural born leader,” Jen says. At the time Tia was suffering from mental health issues, selfharm and suicide ideation, now she is a role model in her own right. “She’s completed a boxing program she never really wanted to get into, she had mentors she could relate to but it was in employment that she thrived,” Jen says. “Now she’s able to run our cafe, and she does quite regularly any day of the week. “She can do front of house and back of house and now she’s doing deliveries and just got her first car,” she says. Tia has become an adopted big sister of sorts to the young people using Emerge to grow. With such great outcomes, Jen Shaw, Emerge and all its programs are the side of social good Toowoomba needs. Finding his sanctuary in music
T
he 20-year-old singer and songwriter recently signed with City Pop Records, a label which is part of Chugg Music. “Mason is the kind of artist who is tailor-made for the new borderless, global music business we are in today,” said Chugg Music founder Michael Chugg. “Uniquely talented, and with a work ethic that will carry him around the world, we are so excited to have signed him to our new venture, City Pop Records.” Late last year Mason released his debut single Recovery, which already has over 350,000 plays on Spotify. His latest release Sanctuary came out just last week and is expected to be just as popular. The song is deeply personal to the musical artist, who says he hopes people can connect with the song in the same way he does. “There are so many things that I wish I could have said to people in my life who needed support and writing Sanctuary gave me a chance to say them,” Mason says. Born, bred and living in Toowoomba, Mason travelled far to make his first single Recovery happen, and co-wrote with the multiPlatinum producer Edd Halloway; who had worked alongside Alisters like Lewis Capaldi and Dean Lewis. “I’m a huge fan of Edd’s work and he was always a dream collaboration of mine. “I reached out to him via email and attached some home demos I was messing around with at the time,” Mason says. Thankfully, Halloway replied quickly and the producer was excited to write something with Mason. “There was some rawness in his performance that I loved,” Halloway says. “I was excited for us to write something that would really show off his tone.” Mason booked in some sessions with the producer and found himself on a plane to the UK within a few months. “Recovery was written and recorded very quickly and that was down to Masons writing ability and musicianship,” Halloway said hoping to work alongside Mason again. Mason had the opportunity to work with Halloway once more with Sanctuary where he returned to the UK and recorded the track in a small town, just north of London.

If you haven’t heard of Mason Watts yet, you soon will. The Toowoomba artist has released two singles in the past year and has big plans for more in future. BY KATHERINE SAMPSON
The songs Mason writes are written from personal experiences the artist says. “I don’t like going into too much detail publicly about that sort of thing,” Mason admitted. “Besides it’s fun to keep people guessing who the songs are about.” Seen mostly with his guitar, Mason says on the occasion you might even catch him making some form of racket on the keys. He initially toyed with music on SingStar on the family PlayStation at 7-years-old. “I remember I couldn’t even read the lyrics properly but I still somehow managed to beat my older sisters by just singing along with the melodies,” Mason recalls. It didn’t take long before Mason’s parents noticed and got him involved in school ensembles. By twelve, Mason really began harnessing his natural ability and started private guitar and vocal lessons. Soon enough Mason found himself busking on the streets of Toowoomba and Brisbane and by fourteen he was gigging in local pubs and bars. “I took on all the work I could manage so I could get my name out

there. “My early days were mainly cover gigs, but that never stopped me from sneaking in a few of my own original tunes,” Mason admits. It wasn’t until Mason was playing at a festival in Brisbane late last year when he met the infamous Andrew Stone, co-founder of Chugg Music. “I played him a few recordings I was working on at the time and we’ve basically been working together ever since,” he says. The self-confessed introvert seems anything but, and loves jumping in front of big crowds from time to time but keeping the shows as intimate as possible, regardless of crowd size. Head of Chugg Music Andrew Stone, also from Toowoomba, has high hopes for the newly signed Mason. “We were instantly hooked hearing the songs he had been working on in his bedroom and the local scene in Queensland and feel it’s just a matter of time before Mason is a household name,” Stone says. s the ancient proverb states “when the winds of change blow, some people build walls and others build windmills.” Earlier this year, in what is believed to be a first for Australia, we introduced the country’s first drive-through legal service. Since the COVID-19 crisis hit in March, we have been offering our clients a genuine drive-through legal experience. So how does it work?
While many of our clients prefer a faceto-face meeting in the office with appropriate social distancing, some of our clients have really warmed to FaceTime or Zoom meetings which are then followed up with a drive-through meeting for original documents that need to be signed and witnessed by a solicitor or JP. The service has been particularly beneficial for clients who need to have wills and enduring powers of attorney executed. We are very fortunate in that we have a driveway that runs down the side of our building and genuine two-street access. This enables our clients to remain in their car while one of our solicitors attends to them in the driveway for signing and witnessing of critical documents. This unique service is also available for our family, insurance and criminal law clients. As time has passed, we have noticed our clients generally fall into one of two categories. The first category of client is very concerned about COVID-19 and wishes to utilise technology such as FaceTime or Zoom with a drive-through meeting for signing of critical documents. The second category includes those people who would prefer the traditional face-to-face meeting provided some sensible social distancing measures, along with appropriate use of hand gel, are utilised. On a personal note, I am really feeling for those people out there who have had their worlds turned upside down by COVID-19. When times are tough in my own life, I am comforted by the age old truism ‘this too shall pass’. I wish all of our readers a swift (and safe) transition back to normality.

Our business is called The Chilli Patch and we attend the Toowoomba Farmers Market every Saturday. Do you have bugs and creatures attacking your plants? There are ways to stop them naturally and one of those is to grow herbs throughout your garden.
Make sure that you rotate crops and don’t plant the same thing in year after year.
HOW TO TRICK CABBAGE MOTHS The cabbage moth destroys kale, but as we don’t use chemicals on our herbs we came up with something completely different – using old two-litre plastic milk bottles. We cut out butterfly shapes from the side of the bottle, made a slot in the middle and pushed it over a bamboo stake where our kale was growing. Our pretend butterflies kept away the cabbage moth and we got to eat kale for the first time in ages. Also, we got to recycle old milk bottles. There are lots more ways to stop bugs eating your plants, so if you have any questions feel free to come and chat at the Toowoomba Farmers Market.
COMPANION PLANTS: Basil is a great companion plant with tomatoes, and will deter flies and mosquitoes. Tansy is one of those herbs with a strong smell which can deter bugs from attacking them and plants around them. Coriander planted with spinach and dill will deter spider mites and aphids. Sage planted with rosemary will repel flies. Dill planted with onion, corn, lettuce, fennel and lavender will deter spider mites and aphids. Garlic planted with most plants will repel aphids. Marigolds are used to deter beetles and help prevent and kill nematodes. Nematodes are sap-sucking bugs that attach to the roots of plants – namely potatoes, roses, carrots, tomatoes, cucumber, lettuces and zucchini. Calendula is also helpful in bringing beneficial bugs, and attracting bees which are so important in pollinating our plants.

urtains are so much more than just gathered material; they provide privacy by filtering and blocking light and play a strong part in the aesthetics of a room. HAPPILY RETHINKING THE HOME OFFICE...

ur regular readers will appreciate we’ve been talking about the long-term cost and environment benefits of building sustainable and adaptable homes for a long time, but now comes the extra twist, brought on by you-knowwhat. With so many people now working from home, it has made them so much more aware of just how comfortable — or not — their home actually is, especially during the day. No doubt it’s been a surprise, one way or the other, for most. Working from home has changed so much about how we go about daily life. Everyone is using more power for starters, not to mention who is where in the house, at any one time. Read that as who is ‘underfoot’. The happy news is that many people have proven that working from home has many workflow efficiency advantages to both the business and the staff, (saving fuel plus wear and tear on their car etc) but the unhappy news is that, if your home is not energy efficient, it’s going to show up in the mail shortly. Ouch! If, like many, you want to continue taking advantage of the benefits of working from home, planning a truly dedicated home office within a sustainable and adjustable home is the best (and only viable) long-term solution.
We already know that solar works best if you are using its power as it is produced (unless you have a dedicated storage system), and currently we are personally experimenting with both micro inverter and string inverter systems, to see which is the most efficient over time. We’ll let you know, so keep following this page. The micro inverter system, while generally about 30% dearer to buy, offers the advantage that each solar panel contributes its power individually, potentially making them much more efficient than the more common string inverters, which only produce electricity at the rate of the least functioning panel, plus they have the added advantage of a greater level of electrical safety. had a customer come to see me at our office last week … it was a welcome interruption to see a new face (given we’ve all been barricaded away due to the pandemic). We got talking about the impact of the virus and what it takes to be a leader under the most difficult of circumstances. Our discussion kept coming back to what a difference experience makes … in every facet of our lives … and it gave me a chance to talk-up my work colleagues a bit.
We laugh that we’ve all seen a good many summers and have probably missed our chance to put a calendar out. But those years have also allowed us to get the runs on the board in the real estate game. It’s that industry experience that our landlords and tenants appreciate (but expect at the same time) and rightly so. Do you want the mechanic with 30 years’ experience working on your car or the apprentice on his first day? Do you want the battlefield surgeon with a scalpel in hand or the student straight out of med school? Do you want Johnathan Thurston getting the ball with a minute to go or do you want the rookie making his debut? I’ll take the champion every time. The young ones will have their chance to shine, it will definitely come … but only if they have that experience around them. To

Good leaders lead, but great leaders share their craft; and that collective knowledge base makes everyone a better employee because, together, you have every workplace scenario covered. Our office has been truly blessed in that respect. My girls have ‘been in their share of rodeos’ and they’ve seen it all. We could write a book … not that we will. Mosaic tiles – look amazing but be prepared to pay hundreds of dollars per metre. So consider small spaces only rather than entire walls. Osso buco with gremolata
O
sso Buco is a classic winter warmer from Northern Italy. It is always served with gremolata and traditionally with risotto alla milanese – plain risotto with chicken broth, saffron and grated parmesan cheese. Although, we tend to do things differently here in Australia and a lot of people like to serve their Osso Buco with smashed or mashed potato. We’ll leave it up to you!
INGREDIENTS 2 tablespoons plain flour 8 (about 1.5kg) osso buco from Gray’s Modern Meats. Note this cut of meat is the shins; traditional Ossi Buchi Milanese is made from veal, but you can substitute beef. 1 tablespoon olive oil 2 brown onions, finely chopped 1 carrot, peeled, finely chopped 1 celery stick, finely chopped
2 garlic cloves, crushed 1 cup (250ml) dry red wine 2 cups (500ml) tomato sugo (tomato sauce) 1 cup (250ml) Massel beef stock 2 sprigs thyme
GREMOLATA 1/4 cup chopped flat-leaf parsley 2 teaspoons finely shredded lemon rind 1 garlic clove, finely chopped
METHOD Step 1 Preheat oven to 150°C. Place flour on a plate. Dip each piece of meat into the flour and turn to coat. Shake off any excess. Step 2 Heat oil in a flameproof casserole pan over medium-high heat. Add veal and cook for two minutes each side or until golden brown. Transfer to a plate. Add onions, carrot, celery and garlic to the pan and cook, stirring, for five minutes or until onion softens. Return veal to the pan with wine; bring to the boil. Reduce heat to low. Add sugo, beef stock and thyme. Remove from heat. Step 3 Cook in preheated oven, covered, turning occasionally, for two hours or until meat is falling off the bone. Step 4 To make gremolata, combine parsley, lemon rind, and garlic in a small bowl. Step 5 Serve with a sprinkle of gremolata. www.taste.com

Who knows when we’ll be able to travel to exotic locations again? Just as well we can get a spicy culture fix in downtown Toowoomba at the authentic El Attar Middle Eastern Grill.

wners Ramadan and Linda El Attar have created an Aladdin-style escape in Neil Street complete with carpets, fragrant hookahs and traditional music. Ramadan is from Egypt but trained as a chef in London, where he met Linda who is from Chinchilla. The El Attars opened their first restaurant here in 2012 and since then have built a loyal following of hungry patrons. “I trained under a Lebanese and a Syrian chef so I learned to make a variety of traditional recipes,” Ramadan said. “Here we serve mostly Egyptian style food like grilled meats, moussaka, hommus and falafel and some dishes with a more Lebanese or Syrian style”. Linda has learned to bake traditional sweets including the El Attar family recipe for baklava, Turkish delight and semolina cake basboussa. Traditional Middle Eastern food is spicy but not necessarily hot
spicy and El Attar is famous for its succulent, marinated, grilled meats. But let’s not forget the side dishes: the salads and sauces that compliment these superb grills.
RAMADAN’S FATTOUSH SALAD: Tomato, cucumber and capsicum cut into chunks Sliced radish Purple salad onion (or spring onion) Shredded lettuce and a little shredded cabbage Salad dressing: olive oil, lemon juice, crushed garlic, cumin, salt and pomegranate juice or fresh pomegranate pieces. Top with crispy fried Egyptian flat bread.
ZA’ATAR This is a delicious herb spice blend served with flat bread or used as a marinade for grilled meats. Equal quantities of dried crushed thyme, cumin, coriander, toasted sesame seeds, sumac with a pinch of salt and chilli to taste. Add olive oil to make desired consistency. Note: Ramadan and Linda El Attar will gradually reopen the restaurant to full capacity according to government regulations.

What’s in season in June I
n Australia we can buy most fruit and vegetable varieties all year round. But if you’re a purest and chasing locally grown seasonal produce only, then the Toowoomba Farmers Market is the place to shop. Lockyer Valley Farmer, David Else, says winter is the time for leafy greens and brassicas. “We have good crops of chards, silver beets and Bok Choi as well as kale, broccoli, cabbage and cauliflower. We are still picking asparagus every few days and also peas – the kind that you have to shell yourself. “Root vegetables are also plentiful with both purple and orange beetroot – orange beetroot has the same flavour but doesn’t stain your hands – carrots and turnips ready
to eat now.” David has a good supply of Cape gooseberries too and they taste great raw in salads or cooked up in tarts, pies and preserves. “If you don’t have quite enough berries for a pie, add some apples and pears – they go well together,” he said. Note: The Cape Gooseberry is not a true gooseberry. It is related to the tomato/ eggplant family so it looks and tastes like a sweet orange cherry tomato. Delicious!

Temple House was a prestigious Catholic girls’ boarding school 25 years ago, where 16-year-old Louisa struggled to fit in as a scholarship student among the elite and wealthy girls. Then she meets Victoria, a fellow student wanting to break out of the suffocating environment, and both become infatuated with their young art teacher. But then, he and Louisa vanish without a trace. In the present time, a journalist is investigating the still unsolved disappearance and secrets of the school, and the novel is divided between her point-of-view and Louisa’s. Due to the elaborate descriptions and meandering pace, this story isn’t so much suspenseful as it is a discussion of relationships and desire – with incredible results. However, readers will still enjoy the unforeseen twist toward the conclusion.
missing boy, a small town, and secretive pasts make this thriller a fantastic weekend read. Almost three months ago, Henry went missing during a night of a fierce storm – so bad that the town is still trying to fix the damage done. The only clue left behind is Henry’s muddy bike at the train station, but his friend Chloe is determined to find out where he is or what happened to him. Meanwhile, Henry’s brother Mason has enough troubles of his own without knowing who he is or what he’s capable of, and he wants to leave this suffocating town behind. But as Chloe starts poking around for answers and Mason’s past begins to surface, both must face the question: how far would you go to keep a secret? Deep Water is a cleverly woven tale with so many twists and turns that even the most seasoned mystery reader won’t always see the answers coming. What really sets this book apart, however, is the accurate portrayal of the effect family abuse has on kids and teens. While originally written for a young adult audience, this novel is worth the read no matter the age.
