enise O’Connor knows a thing or two about dream homes. MD of Optimise Design, an architecture and interior design company she runs on Merrion Square with fellowarchitect Catherine Crowe, the pair are perhaps best-known as RTE’s Design Doctors. Denise was recently chosen to develop a paint collection for Dulux called ‘Signature Collection’ and also writes on architecture and interiors for The Irish Times. I stayed in a hotel a couple of years ago and slept so well that I went on the hunt for the exact same mattress. There are slightly different mattresses sold to the trade because of fire regulations but this Posture Rest by King Koil is the closest equivalent and a wonderful mattress – I can’t recommend it highly enough, €1,099 ( 5ft mattress).

The Tea Cloth
31 Chapel Lane
Simple and sophisticated is the basic premise of textile business 31 Chapel Lane whose linen range is now stocked as far as NYC, Japan and Paris. The brainchild of architect Damien Hannigan and partner Joy Fu, their Irish linen business was inspired by a love for clean, unadorned homeware that would last forever. Beyond doilies and table runners, their aim is to celebrate the seed of heritage in a non-traditional manner. “We wanted to capture the essence of the pure quality of Irish fabrics and keep it simple,” explains Joy. “Our approach to home interiors is one of simplicity or just enough. Taking tea cloths as an example, they are a must in every household and should be practical as well as complement rather than outdo other products. We endeavour to bring the splendour of Irish craft into everyday living; we want to see the Sunday linen from the side dresser on the midweek table.” Chapel Lane tea cloth, €16.95.
The Cup
Dunbeacon Pottery “Does it work? That's the first question I ask myself before I begin creating,” says potter Helen Ennis. The functionality of a piece of pottery is the most seminal part, then comes aesthetics. Her best-selling item is a simple coffee cup that she began making fifteen years ago when she moved to West Cork and is still a steady seller today. “Lots of people have a ‘favourite’ cup they like to drink out of so it's quite an intimate object to make.” On arriving in West Cork in 2000, her design aesthetic was more architectural. ”I brought the city with me,” she laughs. Over time her work has become softer and in a strange way, more contemporary. “I make simple things that any environment can hold. The coffee cup is an example of that, it's a happy little object.” Dunbeacon mug, €15.

From beautifying the humble tea cloth to creating the perfect coffee cup, Orla Neligan meets six creative forces showcasing at Irish Design Shop at Arnotts, all of whom share a love of simple, sophisticated and contemporary design The Picture Frame Rocker Lane Workshop
Turning dirt into decoration is all in a day’s work for architect Sean Fogarty and business partner and carpenter Michael Heffernan, whose canny use of reclaimed maple flooring has resulted in a modern sustainable collection that includes furniture and their best-selling picture frame. Salvaged from old dance halls, schools and gyms, it is the ‘worn’ look of the old fused with the ‘new’ sanded versions that has created their signature style. “We use the inherent properties of the old boards contrasted with the new finish to create the authentic look,” explains Sean. They’ve had so many requests for their frames, they now make up half of their income. So what’s the appeal? “Every floor is different so every frame is different. You have the character of the aged wood and the clean contemporary lines.” Rocker Lane A4 frame, €35. 024

The Salt & Pepper Mills Matt Jones, Woodturner
“I’m interested in the vernacular,” says woodturner Matt Jones who, after years playing in bands and touring the world, has set up home and studio with his wife and four children in Riverstown, Co. Sligo. “I like to make objects that are both simple and functional.” His salt and pepper mills are an example of this philosophy – clean, uncluttered and functional. It is the distinct lack of ornamentation and detail that makes them contemporary. Plus the fact that, according to Matt, you don’t need to embellish what nature has already given you. “Unlike clay, which is dead and flat, wood is alive, constantly changing which makes it so interesting to work with.” His mills are made from native Irish wood: sycamore, beech, oak and ash and can be custom made in varying sizes. “What you see is what you get with wood. And, if you follow the principles of what makes a great object instead of what looks great, you’re likely to create something beautiful that will last.” Matt Jones salt and pepper mills, €120.

Living on the edge of Killarney National Park provides plenty of inspiration for ceramicist Mary Neeson, whose latest design, a colourful porcelain bird feeder, is not only a departure from her usual work but introduces function to her range. “There is something hugely therapeutic in watching little birds feeding from something I’ve made. The houses seem to appeal to young and old: kids love the bright colours and everyone loves seeing the different birds arriving.” The houses are made on the potter’s wheel, then hand painted and glazed, they are light but sturdy, even surviving the storms earlier this year. Their appeal has meant they aren’t just confined to the garden with customers using them as decorative pieces in bathrooms, nurseries and in windows. “The natural world offers me endless design possibilities in form, colour, texture and balance,” says Mary who describes her style as simple, clean and modern. “Less is definitely more.” Mary Neeson bird houses, €42 each.
Dublin has always been seductive for artists providing iconic details to mull and muse over. For Anita Elliot and Martin Gleeson of Clover Rua, it was returning to the capital after several years in Australia that spurred inspiration for their textile company, and their award-winning design ‘The Bridges over the River Liffey’. “Ireland has such a rich heritage, we look to the unsung heroes, from strong guilds of craftsmen and engineers who have left indelible marks on our architecture.” The Bridges success is down to its purity of line, explains Anita. “We love how it screen prints onto linen and seeing our tote bags out and about is such a thrill.” The process starts with a hand drawn picture so each product has a personality that works with the contemporary home. “We work with clean lines and like to keep our designs simple and uncluttered. Iconic details such as Georgian doors, lampposts, windows, shop fronts and bridges are all celebrated in our work.” Clover Rua cushion, €65.

Non-stick anodised aluminium Aluminium is an excellent conductor of heat, allowing you to maximise heat control and easily switch between boiling and simmering, for example. Anodised aluminium has been hardened for extra durability and to make it less reactive to acidic foods. It is typically lined with a non-stick surface to minimise the need for oils or fats in cooking and for easy cleaning. Domini Kemp’s Braised Beef with Red Wine and Penne This recipe requires a 24-hour head start, but the result is a rich, unctuous dish that you will marvel at. It can be used as a special Sunday evening dinner, and then you can flesh out the cooled leftovers with some frozen peas and freeze it so you have a tasty dish ready to go. Adapted from the brilliant River Café Cook Book.
Marinate the beef in the red wine overnight. Then drain the meat and keep the wine. Pat the meat dry and then heat up the olive oil in a heavy-based saucepan. When it’s good and hot, add the beef and sear it all over, keeping the heat up high and seasoning the meat very well. If you find the meat is stewing rather than colouring, remove it with a slotted spoon, let any liquid evaporate, add some more olive oil and get it to the point of smoking. You really need to get some colour going. While this is happening, roughly chop the celery, onion and garlic and chuck into the saucepan and mix well. Add the herbs and spices. Then add in the mushrooms – which you can drain and roughly chop – and add in 3/4 of the reserved wine that you marinated the beef in and most of the mushroom soaking water. (It’s probably good to strain this water

a bit as it can sometimes be a bit gritty.) Bring the meat up to a simmer, add the bay leaves, cover and gently simmer for at least 3–4 hours over a very low heat. Top up with any remaining water or wine to keep the sauce ‘wet’. It’s best to let the meat cool down, settle and then ‘mash’ with a fork. Then add enough olive oil to give it a saucy unctuousness and reheat gently. Boil up the pasta, drain and toss with the beef sauce and pine nuts (which you can lightly toast in a dry pan) add in some lemon zest and adjust the seasoning. Top with Parmesan and serve.

Cast iron Our granny’s grannies cooked on cast iron frying pans, and this steady conductor of heat was perfect for retaining the precious heat of an open fire or range, being slow to cool once heated. The downside of cast iron was that it reacted badly to acidic foods and sauces, a problem solved by Le Creuset by adding a chip-resistant enamel coating. Their classic cocotte (French Oven) casserole pot is the ideal ‘oven-to-tableware’ for everything from stews to one-pot roasting and even bread and cake baking. This tart will stay tasty even after a day or two in the fridge. It shouldn’t go soggy, though it won’t be quite as crisp and delicious as if consumed on the day it’s made!
Preheat the oven to 200°C. Heat up the olive oil in a decent-sized frying pan and slice the courgettes thinly. Sweat them in the oil on a medium to low heat and season well. When they are soft, set aside to cool. Mix the ricotta, eggs, basil, nutmeg and 50 g Parmesan, along with the garlic. You can do this with a whisk, spoon or electric beater. Season this mixture also. On a lightly floured surface, roll out the puff pastry so that it is slightly larger than a standard baking tray. Then fold over the edges to form a little rim and slightly crimp the pastry. Slide the baking tray (the kind with no edges) under the pastry and put back in the fridge. When the courgettes have cooled down, spread the ricotta mixture on top of the pastry and smooth with a spatula. Layer the courgettes on top and then sprinkle the pine nuts and remaining 100 g grated Parmesan on top of that.

Bake for about 35–40 minutes until slightly puffed up and a lovely golden brown. Allow it to cool down, slice and serve. Otherwise, cool down fully, refrigerate and serve cold the next day. It’s also fine to reheat at about 180°C for 15 minutes or so.

Whether you’re a sweet-toothed novice, a cupcake obsessive determined to wow or a keen baker, having the right equipment is the first essential step towards the sweet smell of success, writes Aoife Carrigy

The bakeware
While you may well fall in love with certain baking tins and become convinced your life needs them, a few basic bakeware items will get you started. Invest in a couple of versatile, hard-wearing baking tins with detachable sides and bases, such as the Circulon Round Springform cake tin (06, €20.95) which is a good standard size. You may want to add a Swiss Roll tin and muffin tin. Always choose non-stick coating (for less added fat for greasing surfaces), heavyduty steel (for uniform heat distribution) and rolled pan edges (for extra strength and long-lasting warp resistance.) Catherine Fulvio’s Plum and Almond Cake with a Cinnamon Topping There is always big excitement here at Ballyknocken when the plums are ready to pick. They conveniently come at a time when there is a lull in fruit production – the gooseberries and raspberries are finished and the apples and pears aren’t ripe yet, so the plums are always very welcome. This cake is the equivalent of a tray bake, so it’s easy to make, serve and eat! For the cake: 180g butter, softened 160g caster sugar 3 eggs 200g plain flour, sifted 100g ground almonds 2 tsp baking powder zest and juice of 1 orange 100ml milk 3 plums, pitted and chopped
For the topping: 2 tbsp golden caster sugar 1 tsp ground cinnamon 1 plum, sliced, to decorate 4 tbsp flaked almonds, to decorate SERVES 8

Baking has never looked so easy.
1 Preheat the oven to 160°C/fan 140°C/gas 3. Line the base and sides of a 20cm square tin. 2 Cream the butter and sugar until pale and fluffy. Add the eggs one at a time. Fold in the flour, ground almonds and baking powder. Stir in the orange zest and juice and the milk to form a soft consistency. Carefully fold in the plums. 3 Pour the batter into the tin. Combine the golden caster sugar and the cinnamon in a small bowl and then sprinkle it over the top. 4 Bake for 25 minutes, until a skewer inserted into the centre of the cake comes out clean. Allow to cool slightly in the tin before placing on a cooling rack. Once the cake is completely cooled, decorate it with the plum slices and the flaked almonds. Mike Ross
Born in Cork Mike started playing rugby at the age of 11 for his local club Fermoy. Afterwards he played for UCC and Cork Con before making his professional debut for Harlequins in 2006. Mike moved to Leinster in 2009, also making his Ireland debut that year, and has since played over 100 times for the province along with winning 41 Irish caps. Mike has loved all things tech since getting a Commodore 64 one childhood Christmas, and continues to indulge that enthusiasm wherever possible!

Panasonic AX802 4K TV This is Panasonic's flagship TV, and its second generation 4K set. 4K, for those who don't know, offers twice the resolution of the more widespread full HD. Seen up close, the AX802 is a bit of a jawdropper, you can see tiny flecks of grit as a sculptor works, or individual pores on a close up of a person's face. The TV excels at motion too, with hardly any blur to be seen as the ball gets kicked around during a football match. There's not a lot of 4K content out there at the moment, but more is coming onstream all the time, and the AX802 will support Netflix's 4K offering when it comes online, €2,199.
Sonos Playbar The Sonos Playbar offers a great way to give your TV set a serious sonic upgrade. It connects to your TV via an optical cable (check your TV first, as not all TVs have an optical out) and then its six mid-range drivers and three tweeters go to work. When you're not watching TV you can of course listen to music directly from your phone or via a host of streaming services including Spotify and Google Play Music, €699.99.
Sonos Play 1 The Sonos Play 1 is the smallest speaker in Sonos’ range, but it still packs a hefty punch. Moisture resistant, they're ideal for use in a kitchen or bathroom, and can also be twinned with another Play 1 to deliver full stereo separation. Panasonic SC All3 Up until now, Sonos has pretty much had the wireless speaker market to itself. This is Panasonic's attempt to change all that. Unlike Sonos, the SC All3 doesn't require a separate network bridge, and will hook into your home wireless system with ease. Once there, you can stream media directly from your smartphone or tablet, and it will link up with other Panasonic speakers on the same network. The All3 is the baby of the range, but will fill a medium size room with crisp and clear sound. Spotify is currently supported, and Panasonic promise further features with future updates, €249. Samsung HU8500 UHD Curved TV Samsung have pushed the envelope pretty far here, in their first curved TV. Switched off, it's quite the fashion statement, all glossy chrome and glass with very thin bezels. Turn it on, and it doesn't disappoint, with deep black levels and incredible detail. The curved screen is a bit of a novelty at first, but you soon cease to notice it as you watch. The HU8500 has taken the innovative step of housing the TV's processors and inputs in an external box, which cuts down on the thickness of the TV and allows you to upgrade it in the future, €2,899.

Samsung Gear Fit There's been a rash of wearables on the market recently, and Samsung's Gear Fit is aimed squarely at the health conscious. It has a beautiful curved 1.85" Super AMOLED screen sitting on an IP67 water resistant body. This means that it's quite suitable to wear in the shower or when working up a sweat! It packs some useful functions like a pedometer, heart rate monitor and very handily, a phone finding app, €199.99.
Samsung Galaxy S Tab The Galaxy S Tab is the latest and greatest of Samsung's tablets. Looks-wise, it bears a strong resemblance to Samsung's flagship phone, the S5. It's extremely thin, coming in at an iPad Air-beating 6.6mm thick. Despite this, the battery life is excellent, delivering around 12 hours of video playback. There's plenty of grunt under the hood too, an 8 core Exynos processor powering a top of the range 2560x1600 Super AMOLED screen, ensuring that games and full HD video run smooth as silk, €399.99.
