This past month, the community’s response to the disaster in the Philippines has been tremendously uplifting. Moved by the scale of the devastation, just about everyone I meet is raising, donating or delivering the funds and supplies needed to help rebuild lives. It seems certain that this outpouring of love will continue through December; people of all races and religions are coming together to aid the Filipino people at what is traditionally a time of giving. And so to the December festivities! To help you get merrily caught up in the spirit of the season, we’ve listed all the big community events, and here’s my top tip! Both Discovery Bay Recreation Club and Discovery Bay Golf Club will deliver piping-hot turkey (and all the trimmings) right to your door! Of course, there’s more to this issue than festive fun! Prepare to be inspired by the chef-owner of ChÔm ChÔm restaurant, charmed

by the Discovery Bay Yacht Club commodore, and entertained by the ‘bad boys’ of the Big Sai Wan! We also hope to interest you in adopting a pet, and reinventing the way you entertain at home. This issue, you’ll notice too that we’ve had a revamp, shaking things up a bit in preparation for the New Year. Best ever…

PICNIC IN THE PARK! Picnic in the Park, Hong Kong’s largest live music and dance festival lived up to its name on November 2. The community came out in force to enjoy 10 hours of live performances from over 60 top-notch acts. And this year was a record breaker in terms of attendance and funds raised. Over 11,000 people made a day of it, and the organisers expect to donate over HK$250,000 to the event’s designated charities, the Hong Kong Student Aid Society and Hong Chi Children’s Home.

DB 10km Run for Charity 460 athletes shine! On November 9, the Discovery Bay 10km Run for Charity raised HK$140,604 for Benji’s Centre, a Hong Kong charity which helps children from low-income families. Discovery Bay Anglican Church On October 26, Discovery Bay Anglican Church celebrated its 30th anniversary with a fun day for kids in Siena Park. Afterwards, there was a 1980s-themed gala party at the Siena Club. Around 100 guests attended.

FOR DB KIDS! Treasure hunting on The Bounty, game playing in both plazas, and trick or treating in seemingly every village! DB families had loads of spooky Halloween fun on October 31.

CURVES’ GIRLS do it for charity

Boobs, Bubbles and Bites, the annual girls’ night in hosted by Curves, DB’s all-female fitness studio, was a real blast on October 24. Local ladies shopped, had their hair done, ate Thai food, and drank pink bubbly – all in aid of the Hong Kong Breast Cancer Foundation. Over HK$15,000 was raised!

DMK CHARITY WALK FOR

Operation Santa Claus November 16 saw 280 families, dressed in red, walk the 4 kilometres from Discovery Mind Kindergarten (DMK) in Coastline to Siena Park. Once the funds raised this year are added in, DMK hopes to have raised over HK1 million over the eight years it has been walking for Operation Santa Claus!

The Wellcome Junior Challenge (run by Team FEAR) on November 24, saw kids, age eight to 18, test their stamina and sportsmanship by trail running, mountain biking and swimming around DB. Funds raised on the day go to Youth Outreach, a Hong Kong charity supporting underprivileged local youth. This year some 700 kids took the Team FEAR challenge. Lantau Boat Club CELEBRATING 30 YEARS A good time was had by all, at the Lantau Boat Club 30th Anniversary Grand Extravaganza, at the Headland Hotel, Cathay Pacific City on November 16. Over 120 people attended, and over HK$26,000 was raised to provide aid in the aftermath of Typhoon Haiyan.

Elizabeth Kerr gets inspired by DB resident Peter Cuong-Franklin, who has given up the world of banking in order to put food on our plates

I

t’s the middle of a warm Thursday afternoon when Chõm Chõm executive chef and partner Peter Cuong-Franklin strolls into his four-month-old SoHo eatery. Peter looks relaxed for a guy who commutes from Discovery Bay so that he can work in an industry not exactly known for standard working hours. But he wouldn’t have it any other way, and judging by the healthy clang and clatter coming from Chõm Chõm’s open kitchen as the staff prepare for dinner, life is good. It was after several years working in finance – in the States, Hong Kong and Vietnam – that Peter decided to switch careers. “I’ve always been interested in food,” he says. “My mom still has a small noodle restaurant in Vietnam.” He tries to get back every few months to visit and find inspiration, but not to cook for her. “When I go there my job is to eat,” he explains. The universality of motherhood in action.

From Vietnam refugee to Yalie Born in a small village outside of Da Lat in Central Vietnam, Peter was already deeply involved in the restaurant business as a young boy, helping his mother run a noodle stall from the living room of their home. His father was a park ranger from a nearby city, who met his mother by chance when he came to her little

Peter worked in restaurants to pay his tuition fees, and became one of the first Vietnameseborn students to graduate from Yale University. Not bad for a refugee kid who did not know a word of English when he left Vietnam eatery for a bowl of mi quang, turmeric noodle pork soup. While growing up, Peter’s family was so poor that getting enough to eat was a daily challenge. “I remember we used to scavenge in the nearby forest for wild fruit and berries,” he says. “An occasional treat was a simple piece of baguette with some sugar or condensed milk on top.” It was only much later that food became meaningful as a source of enjoyment and pleasure. Peter was relocated to the United States during the Vietnam War in 1975, age 12. “It was a chaotic time,” he says, “many families were separated,

many suffered terrible ordeals. I was one of the ‘lucky’ ones. Transported out by helicopter and multiple ships, I ended up in a refugee camp in Guam, where I stayed for a couple of months before a Lutheran church organisation arranged for my adoption by an American family based in Chicago.” Asked about the influence the war in Vietnam and his US adoption had on him, Peter answers with a succinct, “Everything… all your experiences make you who you are. Things happen. You learn to adapt.” And it’s clear that Peter adapted well – and quickly! He worked in restaurants to pay his tuition fees, and became one of the first Vietnameseborn students to graduate from Yale University. Not bad for a refugee kid who did not know a word of English when he left Vietnam.

From financier to chef Graduation from Yale and work in the finance industries eventually brought Peter to Hong Kong and then in 2008, the decision to take a year off and enrol in Le Cordon Bleu in Bangkok. He then earned his culinary chops at Caprice in Hong Kong, Alinea and Next in Chicago, Nahm in Bangkok, and La Verticale and Madame Hien in Hanoi. Before opening Chõm Chõm on Peel Street this year, Peter hosted  December 2013

a hugely popular private kitchen on Wellington Street, also in SoHo, from late 2011 to early 2013. Located in what could be called SoHo’s dead zone between the escalator and Sheung Wan, Chõm Chõm is truly Peter’s baby. “I named the restaurant after the Vietnamese word for rambutan because I wanted to tell people that this wasn’t your typical Vietnamese restaurant,” he explains. “Most other places are pho something [after the Vietnamese noodle soup], or a city name. I want this place to be different – in its identity, the food, the space – but true to its roots. We do very small Vietnamese-style tapas inspired by street food, which have a lot of flavour. “I try to make food that tastes good and has a strong identity,” Peter continues. “The issue I have with a lot of places now is you go in and you don’t know what the food is.” Identity obviously stems from the man behind the apron, so would he call himself a French chef, based on that Cordon Bleu education? Vietnamese, based

on heritage? American for the years he spent growing up?

here appreciate what we’re trying to do.”

“You can put any label on something but I’m not sure how useful it is,” Peter muses. “I am Vietnamese, I was educated in America but I’ve lived all over the world. Most people these days are very global in nature. We may use a French technique, we may use salmon or tuna (unavailable in Vietnam), but the way we make it, it tastes like a Vietnamese dish. That’s the key for me.”

Though the nightly commute from Discovery Bay may not be ideal for some, Peter’s not bothered. As a 10-year resident, he appreciates the long-term nature of DB, its cleaner environment, the fact that he knows his neighbours and his teenage kids can walk to school. “I believe it’s good for the family to be stable and happy,” he says. “The kids love it in DB and I don’t think it would be good to move them for my convenience. And after a long day of work and stress, it’s nice to get on the boat and completely change the environment, to have down time. It has its pluses.”

At home in a global city Peter has tapped into a communal, unfussy eating trend that’s fairly new, so after time in Paris and with ties in Chicago, why did he choose to open his first restaurant in Hong Kong? “Both my kids were born here, and my wife teaches at The University of Hong Kong,” he begins. “The beauty of Hong Kong is that you can do things like this. People are willing to try new and different things. There’s talent here in terms of other creative people. There are only a few places in the world that are global cities. People

Peter is a firm believer in sampling multiple careers, and in his gently maverick way he brushes off the idea that a switch from banking to cooking was odd. “I had done what I wanted to do in banking,” he finishes matter of factly. “And I wanted to do something different that I felt passionate about and that I thought I could make a contribution to.”

DB shoppers have a year-round advantage when it comes to buying, selling and even gifting second-hand goods. Marie Teather explores the thriving micro economy right here on our doorstep

e’ll meet outside Uncle Russ at 11am. I’ll be dressed in black,” texts my supplier. “Excellent,” I text back, “I’ll be wearing aviators. I may or may not be pushing a yellow Bugaboo.” By 11.30am, my mission is accomplished. I am the proud owner of a lightly used air purifier, bought at a third of the retail price. Two days later I’m back at Uncle Russ to meet a lady selling the amber

teething beads I want for my son. Three days after that I’m walking around Siena One looking for the apartment of the lady with the ‘good as new’ highchair. Transactions in DB nearly always follow this same merry dance. We meet and exchange pleasantries

either in one of the plazas or at the entrance to someone’s apartment, we ask and answer questions about the item being sold, payment is made and we go on our way. The

GIVING whole thing takes no more than four minutes from start to finish. Prior to that we will have connected online, checked out the photos the seller has posted, and exchanged phone numbers. This is the great DB micro economy at work, and it’s booming.

Perfect climate Whether or not you are ready to give lightly used items as gifts this Xmas, second-hand goods swapping is nothing new. From car boot/ garage sales to eBay and handwritten notices pinned to boards in supermarkets, we are no strangers to getting a little cash for the goods we don’t want or no longer need. Yet here in Discovery Bay we’re part of a maelstrom of factors that makes goods swapping a breeze. Note that after The Peak and Southside, Discovery Bay is Hong Kong’s most affluent residential area. On a consumer level this tends to mean we buy mid- to high-end products. Not always of course, and economists have written lengthy reports on how savvy shoppers justify what they pay for luxury items by also buying budget goods. But it’s fair to say that we DBers dress, eat and shop well. If you’re still in doubt, take a look at the percentage of top-of-the-range Bugaboo and Maclaren strollers on DB compared to elsewhere in the world. Yes mums, it may be a surprise but there are other brands out there. Sadly however, storing our quality purchases in our homes is a challenge. If you keep buying new stuff, you have to get rid of the things you’re not using, simply to make room. Added to this

there are the pre-migration purges that many DBers inevitably go through before moving on to new shores. Second-hand shops in Hong Kong are few and far between. Much better you sell to your neighbours, who coming from the same economic background, tend to be living very much as you do: buying the same brands, enjoying an outdoor-oriented lifestyle, eating well, and also looking to avoid any unnecessary shopping trips to Central.

Market shopping Buying and selling individual items is just one approach. Every three months the DB Flea Market in DB Plaza is stocked by households who want to lighten their load. “All DB residents can join the flea market at a cost of HK$150 per stall, and we do not charge charity booths,” says organiser Emily Luen of Discovery Bay Commercial Services. “It’s been held for over seven years, to provide a weekend activity for residents and promote green living.” The next flea market is on December 1 in DB Plaza and you can expect some 127 stalls.

Donating goods to charity Many local charities take highquality goods which Lantau residents no longer want and redistributes them to people in need. Bargain lovers also watch out for the regular flea markets put on by DB’s 14 Village Owners’ Committees (VOC). For instance, Midvale VOC organises a frequent second-hand goods sale, as does Siena Two B (residents are given a blanket area on a Saturday afternoon on which to sell household items). The Siena Two B VOC also organises a twice-yearly furniture exchange: people who have items of unwanted furniture can leave them at designated locations in the village and exchange them for items they do want. “Being a

highly transient society, there is a high throw-out rate here, so these events are always very successful,” explains Siena Two B VOC representative and DB Green founder Kate Wade. “If there is ever anything left over, then members of the Salvation Army come to collect it. It’s great to see things used again rather than thrown away.”

Online connections Certainly we’re all becoming more willing to reuse and recycle, but it’s thanks to the internet that DB’s micro economy really took off. Ironically the very technology that technophobes feared would stop neighbours from talking to each other has brought us closer together. Sites like www.discoverybayforum. com remain popular but people now prefer to link up, less anonymously, on Facebook. The classifieds section on the Around DB Facebook page is constantly buzzing with new entries, links to photos, and private messages being sent to confirm prices, colours, materials and dimensions. With Facebook of course, you have the added safety precaution of being able to see who you are buying from and who their friends are. DB Mums now has close to 700 members and has new items for sale going up daily. Hardly Worn It!, founded by 14-year DB resident Anna Lovell Knight, has almost 3,000 members and receives up to 50 requests to join a day. “I think the fact that people meet up in person is helping with its success. Unlike eBay it’s rarely done through the post. People like to see where they are getting their goods from,” Anna says. “I’ve also heard that a lot of members have made friends after selling to each other.” DB resident Lilli Fouks has used local forums to buy furniture and baby stuff.

s Benjamin Franklin wrote to his friend, the French scientist Jean-Baptiste Leroy in 1789, “In this world, nothing can be said to be certain except death and taxes”. Most of us wryly agree with this, at least from time to time! But it’s not the inevitability of death (and high taxation) that really counts; more important is how well we deal with these certainties. I always take a holistic view of my clients’ finances, so here I want to focus on effective estate planning, and how it will not only ease the financial burden for your loved ones in the event of your death, but also make the life you are leading right now easier… and more moneyed. I’ll do this by providing you with some positive examples, and talking a little about wills and trusts.

Naming your beneficiaries It’s clear that making a will is your first step in viable estate planning; think of it as an umbrella ready to protect your family on that inevitable rainy day. A December 2013

properly executed will can ensure that your assets are distributed as you have requested. It will in fact take care of everything you own – from the buttons on your shirt to that sexy little villa you have tucked away somewhere in the Caribbean. But don’t think estate planning ends there, it doesn’t. You need to think about any insurance related policies in your possession, such as life insurance or savings plans. These should have a nominated beneficiary. This allows the provider to pay direct to your beneficiaries in the event of your death, very often without the need for probate. You can request this from your financial advisor or insurer. Similarly, you can talk to your Human Resources department to have beneficiaries added to your company scheme. Taking care of the above really makes sense, not least because it will slash the time it takes for bequeaths to reach your family. But again there’s more to consider. Let’s now look into the benefits of trusts. Simply put, a trust is an arrangement whereby a

person (a trustee) holds property as its nominal owner for the good of one or more beneficiaries. Trusts are written instruments that can benefit you and your dependents on various levels. Let’s examine a few.

Succession planning Succession planning is important whatever age you are and regardless of your family circumstances. For example, you may be very young when you pass away, leaving young children behind. Have you considered how your estate is going to support your children financially? Or, you may have married twice and have two families to provide for. How is your estate going to be distributed? Consider this scenario. When my friend’s husband passed away prematurely, he left behind two children from a previous marriage (living overseas), as well as his new wife and child in Discovery Bay. Fortunately, my friend’s husband, let’s call him Jack, had left written instructions as to how his wealth

As the New Year approaches, it’s time to get your house in order and maximise your estate planning. DB resident, financial advisor Annette M. Houlihan sheds a little light on preparing for a rainy day should be divided up. While my friend got the majority of his estate including the family home in DB, his older children continued to receive their monthly maintenance. Moreover, all Jack’s children are set to inherit once they come of age. Jack had arranged all this through a trust some time ago. As a result, there was no squabbling on his death. Both families benefited from his foresight.

Asset protection Another good thing about trusts is that they remove legal ownership of property. Trusts are instruments that you put your assets into, but the legal owner of the trust is a trustee – not you anymore. (You can still use the assets if you name yourself as beneficiary.) If your work makes you susceptible to a lawsuit, for instance you are a pilot or a lawyer, or you have a business that doesn't have limited liability, you can set up a trust to protect your personal assets against future creditors or third parties, such as a spouse or business partner.

Effective estate planning will not only ease the financial burden for your loved ones in the event of your death, but also make the life you are leading right now easier… and more moneyed I’ll give you an example. Let’s say you run a seafood restaurant in Pui O, and one night after eating your lobster, 15 customers come down with food poisoning. They decide to take you to court to get compensation. You have some liability insurance but, because you are a sole proprietor, your personal estate is at risk from the various law suits. What do you do? Well it’s not so much about doing, as

it is about relying on what you have already done. Best-case scenario, you have an existing trust in place to protect your personal assets. Your former customers (the plaintiffs) cannot lay claim to this part of your estate, as on paper you no longer own it. What a fortunate bit of forward planning! Note though that standard fraud rules still apply – December 2013

MONEY MATTERS you cannot hide money from current creditors or potential plaintiffs.

Tax mitigation It’s important to recognise that trusts can also help you with tax mitigation. Of course, there are various incomedependent statutory taxes you’ll pay all your life – to the government of the country you reside in and, for many expats, to the government in your home country too. As your capital grows, you are required to pay capital gains or wealth taxes. Some countries then charge you again, when you invest capital, through investment tax and further income tax. After you die, you can also be ‘charged’ death duties through estate or inheritance taxes. Fortunately though, depending on your nationality, residence, domicile

or citizenship (and asset-holding jurisdictions), you can set up trusts to mitigate some or all of these excess taxes. Consider what you want a trust for, and seek professional advice. The important thing to remember is not so much Franklin’s thoughts on death and taxes. But rather, that you don't have to be wealthy to set up or benefit from a trust.

DON’T SHOP, ADOPT! If you’re planning to extend your family by introducing a pet, adoption is your best way forward. Hannah Ball finds out why from three Lantau based animal welfare groups

D

B: Dogs and Babies. We know the acronym well. Attracted by the community vibe (islanders talk to their neighbours), the easy access to parks and nature trails, and the lack of traffic, many of us choose to live in DB once we are ready to breed. And to pile on another truism, every family needs a pet. We are told that pet ownership helps children learn to take responsibility, empathise and that it even makes them physically healthier (less allergy prone). So, if the time has come for you to choose a pet, the obvious thing is to head to a local pet shop, and pick out a totally cute puppy or kitten. But rather than going the cookie-cutter route, it seems to me that the right thing to do is home an abandoned animal. To find out about this, I set up a meeting with representatives from three Lantau based animal welfare charities: Hong Kong PAWS Foundation (HK PAWS), Protection of Animals Lantau South (PALS), and Lifelong Animal Protection Charity (LAP). It was easy to spot them in DB North Plaza, as they each came with a plus one – their own adopted dog.

About the charities It’s Kat Cheung’s first day off in three years. She set up HK PAWS in 2005. The charity, which takes in around 250 dogs and cats a year, has a cat shelter in Tin Hau, and is currently looking for new premises for its DB dog shelter. “My desire to help animals in Hong Kong began after visiting a stray dog shelter in the New Territories,” she

Many families who foster eventually end up adopting because they simply fall in love with the animal in their care says. “It felt just like a jail to me. There were over 140 dogs in there with nowhere to go. Despite being given the bare essentials, they needed a home.” PALS founder, DB resident Jacqui Green has also made it her mission to help rescue injured or abandoned animals, give them the medical attention they need, and most importantly, find them a loving home.

“I set up PALS in 1998 under the original name of South Lantau Animal Protection (SLAP),” she says. “I found myself constantly finding kittens in bins around Lantau and simply knew something had to be done. People forget that animals are sentient creatures; they feel pain, they bleed, they need love and attention just like children do.” With a shelter in Mui Wo, PALS takes in over 200 abandoned animals every year from across Lantau. Set up in 1998, LAP goes about rescuing animals slightly differently, as its DB based representative Nadine Sharp explains. “At LAP we have no premises. Instead, our method is to find appropriate foster homes for animals. This means that those who may not be in Hong Kong long enough to adopt can still play a lifesaving role in providing for these animals. So far,  December 2013

over 60 dogs have gone to loving foster homes.” Turning to me, she says with a smile. “Many families who foster eventually end up adopting because they simply fall in love with the animal in their care. We call them ‘foster failures’ – that’s what all of us are!”

Figures from Society for the Prevention of Cruelty to Animals (SPCA) back this up. Last year, the SPCA found homes for 2,464 animals, of which 1,091 were surrendered by owners.

A pet is for life

So, let’s suppose that for some time now, you’ve been considering adopting a pet. What do the ladies advise? “Many of the animals given to us may have matted fur and may not be the perfect [specimen] you had intended to buy,” says Kate. “Go for character and not appearance. Remember that some dogs require a lot of walking – if

So exactly why should we consider fostering or adopting rather than buying a pet? “When someone chooses to help, they not only provide for that animal, they make way for us to care for other animals,” explains Jacqui. “There simply aren’t the funds and resources to accommodate so many animals without a home, especially when owners choose to let their animals constantly breed!” “‘Adopt an animal, save a life’ – that’s our motto,” says HK PAWS volunteer, DB resident Kate Halstead. “Puppies should remain with their mothers until they are at least eight weeks old, but many shops in Hong Kong will display underage dogs for the cuteness factor. Once they reach a certain age, they are no longer likely to sell. At least a quarter of these dogs are sent to government kennels, where they have just four days to find homes before they are put down. There simply isn’t space for them.”

Not just for Christmas

you hate hiking, no matter how pretty the dog is, it’s not for you!” “Do it for the animal,” says Nadine. “It shouldn’t be about the size or shape of the dog or even the size of your flat, but about how much you can give back and how much love, care and attention you can give it.” Each of the charities require prospective owners to fill out a questionnaire to help them choose the right animal, and at HK PAWS, you can foster a dog for a fortnight before committing to adopt. “It is a big decision to take the life of an animal 

“The amazing thing is that over 40% of animals given to us are from those leaving, who don’t want to take their animals with them,” adds Jacqui. “So many people think it is okay to own an animal just for the short time they are in Hong Kong, and then leave it behind when they move on. Imagine if you did that to your children!” “Many people treat dogs like handbags; if they’re not the right shape or breed, they don’t want them, and when they get too old, they are happy to leave them behind,” Nadine adds.

into your hands – we want people to be absolutely sure about what they’re doing so they can give the animal the care it deserves,” says Kate. “Don’t worry though, we send out regular reminders listing everything you need to know to care for your pet. And all our dogs are vaccinated and de-sexed.” If you and your family have properly thought through the implications of becoming a pet owner and the responsibility involved in caring for that animal then there is no reason why you shouldn't help an animal this Christmas. But if you’re not quite ready, remember that you can still choose to sponsor a dog financially. “It is important to note that our charities are run by volunteers,” Kate notes, “and that we rely entirely on the community’s donations.”

In the aftermath of Typhoon Haiyan, the outpouring of love and support from our community to the people of the Philippines has been truly inspiring. Around DB talks to just a few of those who are donating and delivering desperately needed funds and supplies

I

t’s been three weeks since Typhoon Haiyan hit the Philippines, leaving more than 4,000 people dead and large parts of the country devastated. Moved by the scale of the disaster, people from across the globe have been quick to donate funds and supplies. Right here in Lantau, the community response has been massive, with seemingly everyone determined to provide aid, and provide it quickly. In reporting on this, it’s impossible to mention everyone who is devoting their time, money and energy to helping the Filipino people – the few we can mention must represent the many. First, let’s see how the kids of Lantau have responded.

Answering the call

Within two weeks of the disaster, students and friends of Discovery Bay International School (DBIS) had raised HK$67,856.50 for the Philippine Red Cross; they continue to collect much-needed food, and medical and household supplies to send to the Philippines. Discovery Mind Primary School (DMPS) has December 2013

collected canned foods, sanitary items, dried foods, blankets, clothing and bedding. Island School students held a collection day on November 15, and have donated all proceeds from their music concert on November 20. It’s clear that local students have been determined to take immediate action to support the Filipino people. DC principal Mark Beach explains that, “dozens of students, parents and staff have been asking how best they can help. As such, our approach has been driven by the students themselves.” One such DC initiative saw six students, Caitlin Morris, Matthew Macpherson, Patricia Raimann, Toby Mathers, Josh Jones and Katrina Mathers, lead a collection drive and initiate a dress casual day (on November 22), where students and staff were asked to dress in the colours of the Philippine flag and make a small cash donation. All the kids behind this idea, except Josh, are half-Filipino. “I chose to get involved with this because it is most definitely the right thing to do,” explains 12-year-old Caitlin. Cash donations totalled HK$75,500,

and the HK$60,000 collected on November 22 has already been taken to the hard-hit coastal city of Bacolod by a group of 12 DC secondary school students, age 14 to 16, who left for a sixday No Boundaries Philippines field trip on November 24. Their itinerary includes preparing relief packs to help those affected by the typhoon.

Delivering hope Sharing the student’s zeal to provide hands-on help, a medical team of Hong Kong pastors and church members has been in the Philippines since November 19. “We have used the money donated to buy needed items in the Philippines, avoiding cargo expenses and also helping the local economy,” says mission leader, DC parent and pastor of Calvary Church Discovery Bay, Robert Escueta. The aim is to provide medical consultation with free medicine, offer emotional care and distribute relief aid. Another hands-on initiative getting supplies where they need to be, saw

are for a good cause, so this is another avenue local businesses, clubs and individuals have been exploring in their bid to raise funds. On November 15, the British Studio of Art held two pizza nights, with funds raised going to the Philippine Red Cross; on November 16, the 120 or so guests attending the Lantau Boat Club 30th anniversary party raised over HK$26,000 to provide aid on Malapascua Island; and on November 18, Zumba Fitness donated the proceeds from a Zumba night to Wimler Foundation Hong Kong. “Small things that people do to help can easily multiply, so we are doing the best we can to help in our own small way,” says Zumba Fitness founder Arlyn Fermin.

We have a volunteer crew willing to give their time for free. The fuel and use of the boat has been donated, so everything (and every penny) donated will go directly to helping those in need.” In a whirlwind collection drive prior to their trip, Mark and crew collected essentials that will be of immediate use upon arrival, including water, canned foods and tents.

Rebuilding lives For DB-based charity Remar Association Hong Kong, the priority has been to collect items needed to refurnish homes and schools –

using its 5.5-tonne truck, which usually transports unwanted pieces of furniture to those in need around Hong Kong. “Hopefully the generosity from residents in Discovery Bay can help relieve the current devastation in the Philippines in some small way,” says Remar founder Nikki Boot. Working alongside community group DB Mothers and Friends, Remar collected HK$4,860 in just two hours in DB Plaza on November 16. Monetary donations are transferred to Remar Association, the Philippines. Enrich, the Hong Kong charity supporting ethnic minority women and migrant workers (particularly domestic workers) is raising funds for reconstruction grants. At the Bahce event, Maryjane told us, “When Typhoon Haiyan struck on November 8, and I first saw the extent of damage and loss in my home country, my heart sank. I couldn’t stand doing nothing of immediate help for those affected. My first thought was simply to do what I am good at – performing music.” Maryjane’s got it right, along with so many other people in the Lantau community. Mark December 10 on your golfing calendars! That’s the day of the Big Sai Wan Masters, the major event of the year for the Big Sai Wan Golf Society and many of Lantau’s ‘best duffers’. Karmel Schreyer reports

he Big Sai Wan Masters golf tournament is being held this month at our own bucolic – and convenient – Discovery Bay Golf Club (DBGC). And it’s a really big deal for the Lantau golfing community, a bigger deal even than the Hong Kong Open, December 5 to 8 at the Hong Kong Golf Club, Fanling. Why? Well, you could say it’s a pilot thing. The Big Sai Wan Golf Society (BSW) was founded in the late eighties by four Cathay pilots (Roy Mann, Neil Hassle, Ken Sherwood and Dave Sanders), and the membership list still bulges with pilots, many of whom live in DB. First, here’s a bit of history. Back in the eighties, golf was a very expensive and difficult sport to pursue in Hong Kong. According to the BSW founders, the few clubs available (one of which was the Little Sai Wan Golf Society (LSWGS) in Fanling) were very selective, giving priority to senior players, and the Discovery Bay Golf Club (DBGC) hadn’t yet opened. Roy, Neil, Ken and Dave, calling themselves The Big Sai Wan, played most of their golf outside of Hong Kong. Hoping to make the sport readily available for all in the then territory, they organised a one-off competition open to Cathay December 2013

Pacific golfers of any handicap to gage the response. The tournament was such a success, the fab four decided to set up a golfing society. The name Big Sai Wan Golf Society (BSW) was voted in by a 100% margin, and officially registered with the Hong Kong Golfing Association in 1990. (The four founders were then offered membership at the LSWGS but respectfully declined.)

Playing for applause and cause Discovery Bay resident Rick Smits is the current BSW Masters tournament champion. He has been a member of the BSW for 13 years, which includes a stint in the role of self-described “president, organiser and general dog’s body”. (Fellow pilot Mike Stott does that now.) If you are wondering whether Rick is defending his title on December 10, the answer depends on one thing – his Cathay work roster! When asked who he feels may be his biggest competition, should he get to play, Rick answers in a way suggesting that had he been afraid of flying, he would have made it big in the diplomatic service. “Anyone could win on the day, so there are no particular favourites and it is unlikely I would defend it successfully. The BSW Masters is a handicapped event which means golfers of all abilities have a chance. I am only an average golfer. There are some very good golfers in the society who play off very low handicaps. I am not one of them!” As well as local play, the BSW organises golf junkets to Macau, Thailand and Vietnam. The ‘Asian Ryder Cup’ is played against the LSWGS in November in Thailand, the Fleet Cup is played at the DBGC in May, and the Founders Cup at Kau Sai Chau Public Golf Course, Sai Kung, in October.

EXTREME FUN! Exploring southern Vietnam this winter, Mary Singer discovers world-class beaches, flying demi-gods and dragons by the million

W

e arrived in southern Vietnam’s Binh Thuan province after dark, by road from the capital Ho Chi Minh City. As we approached the coast we began to see row upon row of bright lights dotting the hillsides, illuminating what appeared to be tentacle-like vegetation. The net effect of this, perhaps amplified by the fact that we were driving into the unknown in the black of night, was to give my family and I the heebie-jeebies. I assumed the lights were some sort of pest control; happily I would find out the next morning at breakfast that I was mistaken. I had to ask. And the answer was dragon fruit – dragon-fruit plantations, and lots of them. The night lights make

the stumpy-looking vines bear fruit about twice as often as would naturally occur – up to six times a year. And the fragrant and ornate flowers only bloom at night, too. Though it is native to Central and South America, the plant is now firmly planted in the economy of Southeast Asia, and Binh Thuan is Vietnam’s top producer.

Getting airborne Rather like the dragon fruit, kitesurfing, a relatively nascent extreme sport, has found a permanent home in Binh Thuan. We stayed at Mui Ne, a smallish resort and fishing town about a four-hour drive northeast from Ho Chi Minh City. Here, the wide ribbons of white-sand beach give Bali a run for its money, and the east-facing aspect assures kite-surfing enthusiasts that the regular thermal

wind will help keep them airborne for much of their stay. A kite-surfer, also known as a kiteboarder, requires the skills of a wakeboarder, gymnast, surfer, windsurfer and para-glider in order to do this sport well and, perhaps more importantly, to look good doing it. Judging by the look of the majority of kite-surfers we saw during our pre-Christmas stint in Vietnam, kite-surfing is done best by athletes. It’s more demi-god than dude, more Red Bull than Mary Jane. Maybe this has to do with the wind. When a big gust whips across, these guys go careening into the air like some invisible Colossus has just grabbed them and thrown them skyward in a giant, watery game of jacks. Then, of course, they must make a decent landing and keep on 

going, often with amazing – or should I say – alarming speed. When the surf gets crowded with these thrill-seekers, confidence and control is required so as to avoid collision. It is not a sport for the fainthearted. But any old beachgoer can, at least, give it a try, and Mui Ne is certainly geared-up for it. There are plenty of kite-boarding schools in the area, both licensed and unlicensed, so be sure to check that the school you go to is certified, and employs only qualified instructors.

There are plenty of other things to do and see in the vicinity. The white sand dunes north of Mui Ne are a lot of fun to slide down on plastic sheets! Getting around There are plenty of other things to do and see in the vicinity. Before Mui Ne became a resort town for a primarily Russian contingent ensconced in the offshore oil industry, it was a vibrant fishing hub of long standing. The

harbour is large and picturesque, housing modern fleets and ageing wooden vessels.

The most popular tourist destination, after the beach, of course, is the white sand dunes north of Mui Ne. The dunes are Saharan in size, and range in colour from red to gold to snow white. They are a lot of fun to slide down on plastic sheets. Three large lakes alongside make it a fascinating ecosystem, and a nice place to swim if you tire of salt water.

hen it comes to choosing a new recreational activity there’s a good chance yachting is not something you’ve considered. With a new catamaran or monohull typically costing anything from HK$3 million to HK$8 million (catamarans are the Ferraris and Lamborghinis of the boating world, as I have come to discover), your Siena Club membership suddenly seems to have a whole lot more value.

But let’s say you do want to hit the open waters without re-mortgaging your home, how to get out there? Happily, here on Discovery Bay we can boast an incredibly approachable, friendly and accessible yachting community that may make your fanciful dreams of racing around Hong Kong’s islands possible: the Discovery Bay Yacht Club (DBYC).

Plain sailing Catching up with the DBYC commodore, St John Cameron, it’s easy to get a sense of the club’s inclusionary approach to recreational sailing, and December 2013

how a novice such as myself, with little more experience on the water beyond catching the ferry, may fit into a yacht club. “We’re a social club – if you are a sociable person, you get on with people and you’re interested in sailing, you’ll fit in,” St John explains. “Our aims are twofold: to draw local sailors together in friendly and social sailing events, and to introduce beginners to the fun of yacht racing.” What about my obvious lack of boat ownership? “If someone has a boat they’ll often be looking for a crew [typically from two to 11 sailors]. Then you are likely to be invited to crew during races, or you can take a sail training course,” St John explains. Hosted and sponsored by the Discovery Bay Marina Club (DBMC), and run by a dedicated team of volunteers, the DBYC has around 60 family members and a fleet of about 30 boats ranging from 25 to 50 feet. Almost all the boats are cruising monohulls used for racing, but there is a growing fleet of multihulls. Berthing per month for recreational yachts varies from

Regattas and race days So what is it about Lantau that makes it such a favourable place to get into yacht racing? “It’s pretty safe here with nice inshore waters and sheltering islands,” says St John. “You don’t need to worry about the tides like you would in Europe. There are hundreds of islands and bays around Hong Kong

The crew is on the lookout for traffic and rival boats, and there’s mainsail and foresail trimming, navigating and helming to be taken care of. The DBYC uses the Hong Kong Performance Number (HKPN) handicapping system overseen by the Hong Kong Sailing Federation, which keeps all of Hong

Kong’s yacht clubs on an even keel. Most of the DBYC races are familyorientated, which means dogs and kids are welcome. They’ll often race to one of Hong Kong’s islands, have a beach party and barbeque, stay overnight and then race back the next day. Typical destinations include Tai O, Aberdeen, Middle Island, Cheung Chau and Sai Kung. The Christmas Lighted Boat Parade is a real highpoint on December 14. The DBYC invites ‘yawties’ to put some lights on their boats, call some

friends to join them, and be part of the biggest party in Discovery Bay! While racing season is now officially over until March, there’s still plenty of opportunity for people to get out on the water, and now is a great time to take a sailing course so you can crew in 2014. “In early March we run a series of drag races between Peng Chau and Hei Ling Chau. This is aimed at blowing away the cobwebs and training/ reminding skippers and crew about start-line  procedures,” St John explains. December 2013

MULL WINE Peel large sections of peel from 2 clementines, 1 lemon and 1 lime. Combine with 200g sugar and the clementine juice in a large saucepan over a medium heat. Add 6 cloves, 1 cinnamon stick, 3 bay leaves and 12 gratings of nutmeg. Throw in a halved vanilla pod and stir in just enough red wine to cover. Simmer until the sugar is dissolved, and boil for 5 minutes, or until you've got a beautiful thick syrup. Turn the heat down and add 2 star anise and 2 bottles of red wine. Gently heat the wine and ladle into glasses when it’s warm and delicious.

Friendly Bicycle Shop opened in Mui Wo almost 15 years ago in January 1999. What inspired you to start up the business? Seeing a gap in the market (there were no other professional bike shops in the area), combined with a personal love for cucling, we wanted to provide a professional mountain-bike repair service for residents in Discovery Bay and Mui Wo.

How has the business expanded? To start with, we had just three wholesalers supporting us and very few customers. As time went by, we tried our best to provide top-quality service to customers and the word has gradually spread, bringing us more and more customers from different areas. We believe that giving the best service is the most effective way to promote our shop, since satisfied customers then spread the word. Now we have wholesalers who actually seek us out and we are able to sell a large range of bikes and accessories such as Giant, Trek, Specialized, Commencal, Pivot, Intense, Merida and Shimano.

MAXIMISING XMAS ‘Tis the season to be jolly: Peter Sherwood looks for some icing on the festive fruitcake

here are two types of Christmas. There’s real Christmas which focuses on thanks-giving, hugs all round and not slaughtering each other too much. And there is Environmentally Catastrophic Christmas, a cash-fuelled bonanza that supports about half the GDP of the western world. In A Christmas Carol, Charles Dickens wrote: “I am sure I have always thought of Christmas time, when it has come round…as a good time; a kind, forgiving, charitable, pleasant time… when men and women seem by one consent to open their shut-up hearts freely.” I’m with Dickens. Christians make the celebration endure, but to get blissfully, drunkenly caught up in the intoxicating spirit of giving, good cheer and roasted chestnuts we need only to be human. Real Christmas begins a few weeks before December 25. Mountains of Plastic Garbage and Beer Cans Christmas is tastefully launched around November 1, with shopping malls playing frozen reindeer songs and syrupy carols about little lambs.

goes for eight days and gluttony is not a punishable offence. Christmas has got other festivals whacked, and religion is no prerequisite. You can gorge yourself day and night, there’s no prohibition on alcohol (indeed, taking on board enough booze to anaesthetise a saltwater crocodile is mandatory), and it lasts longer than all other religious excitement combined (except for Ramadan, which must be excruciating if you live in Lapland in the summer when there is no sunset). Important proviso: on average 30% of all gifts given at Christmas are returned to the store. Half of all presents are saved by recipients who smile awkwardly and give them away next year – to people who will find as useless as they did all those Albanian goats’ wool sweaters, coffee table books on creating a bamboo garden in a 280-square-foot flat, and The Complete History of the Belgian Public Transport System. The Chinese have got it right – give cash, the gift that keeps on giving.
