Make your move ON improved fitness!

Varied classes

n Discovery Bay, fitness is all around us. But good health is not just about working out, it’s about who you work out with, and where. Movement Improvement Fitness Centre (MI), DB’s longest running independent fitness studio, is a first port of call for many. And moving into 2015, it’s looking bigger and better than ever.

Specialist instructors MI owner, 17-year DB resident Claire Dickson’s philosophy is simple. “Exercise should be fun.” And to ensure clients get exactly what they need, she now employs 19 specialist instructors, who have nearly 200 years of experience between them.

“I only want the best for my clients and I feel it is of the utmost importance to stay current with the latest research and advances in the health-andfitness industry,” Claire says. “This way, instructors bring first-hand knowledge straight to our clients, so everyone benefits.” MI now offers DB’s broadest range of classes, at truly competitive prices. “Our online payment and booking system allows clients the flexibility to do the classes they want, exactly when they want them,” Claire adds.

Satisfied customers MI regular, Sally Broadbent says, “I’ve been a member of MI since 2008. There is a great variety of classes, so I have been able to find a suitable class

Kettle Bell: These handled cannonballs are the best loaded training tool around. MI’s specialist trainer is a qualified medical doctor and osteopath, ensuring training is risk free and results driven. as my training needs have changed. All the instructors are helpful and knowledgeable, and they always offer advice when it’s needed.” Denise Boonstra, another MI fan, says, “I've been going to MI for a year now and I find that they manage to cater to everyone’s needs.” “The studio is bright, clean and well maintained, with the bonus of beautiful views while you work out,” Sally adds. Over the years, Elina Makilammi has tried out every class MI has to offer. Pregnant at the moment, she is concentrating on her yoga and says, “MI has the most relaxing feelgood yoga classes! They make my day. I have an incredible feeling for the whole day after class. MI makes magic happen.” It’s worth noting that MI offers specialist pre- and post-natal classes and personal training. Claire’s aim is to ensure that soon-to-be mums enjoy a healthy pregnancy and easy recovery.

Personal Training: You’ll get what you want, and need from MI’s specialised, one-on-one training. Pilates: Mat and reformer classes are taught in a way Joseph Pilates himself would admire. The focus is on strengthening, lengthening and balancing the body, with core conditioning and posture realignment. Spinning: MI is a fully licensed spinning® facility. The instructors are there to help you reach new fitness heights and goals. TRX: Intense and innovative suspension training provides a superb cardio-and-strength workout. Yoga: Claire says, “MI’s yoga instructors literally enlighten the load!” Classes are the perfect way for you to balance mind and body. Zumba: Combining Latin and International music with an effective workout system, these classes put the emphasis on having fun!

Call MI on 2987 5852, or visit www.movementimprovement.com.hk, or the Movement Improvement Facebook page. Unit 10, 1/F, Office Block 2, 96 Siena Avenue, DB North Plaza.

BUSINESS OF THE MONTH

za-based grooming Co-owners of MOW, the DB North Pla residents David and and skincare centre, eight-year DB Kit Sheehan talk shop

List your Lantau business for free @ www.arounddb.com

Tell us something about your business

When we opened MOW (Men Or Women) in March last year, we wanted to make it more than just a spa. It’s a relaxing environment, where we can target specific interventions for body, skin and grooming concerns. Each client has a service specially tailored for him or her; and since October, we’ve branched out with hair styling by Robert Taylor. Partnered with Child & Family Development Practice, we also offer physiotherapy and rehabilitation services.

What is the biggest challenge you have faced in business?

The biggest challenge is overcoming the fear of actually setting out on your own. After that, finding a network of people to rely on for contacts, knowledge and emotional support, is essential.

Which well-known businessperson inspires you?

Richard Branson. He overcame dyslexia, worked hard and became successful, without losing his joie de vivre. Not only has he developed internationally renowned businesses, he also has wonderful relationships with his staff. It’s always been important to us that our employees are happy and feel valued in their work.

Do you enjoy being self-employed?

There are huge benefits, from being able to control your own life and make decisions for yourself, to being able to reap the rewards of your own ideas and labour. However, it can be a huge burden to be solely responsible for your own (and your employees’) livelihood.

How do you keep your customers interested? Photos courte

sy of MOW

The quality of our service and products is key, and we go to great lengths to cultivate the personal touch. We want clients to view us as friends and stop for a chat after their treatments. We have gotten to know some of the really interesting people that make up the DB community.

Kay Sugisaki founded Imagine Peace in 2012; the most recent event drew more than 400 people

January 2015

PROFILE

IMAGINE PEACE

To kick off the New Year on a powerfully positive note, Elizabeth Kerr talks to Pui O resident Kay Sugisaki, who is working with the Lantau community to make the world a better place

W

hen you place a phone call to Imagine Peace founder Kay Sugisaki and she’s not available, you don’t get the standard, “This is Kay…” or the mechanical, “The number 9, 3…” You get a little sass from her six-year-old daughter, Maya, telling you, “Mom’s not here. Call back later!” She does suggest having a nice day though.

and approachable, and refreshingly genuine in her beliefs.

“Oh, maybe I should change that,” says Kay with a chuckle, after I mention the memorable message. She shouldn’t though, not if it’s her mission to bring a little happiness, charm, love, humour – peace – to people’s lives.

The preternaturally youthful Kay, who claims she’s in her early 40s, has heard all the jokes about hippies, peaceniks and patchouli oil. And it doesn’t bother her. “At our events, we do have crystal healings and ‘Ommm’ chanting and all that!” she declares with another laugh.

Hippies, peaceniks and patchouli oil The Tokyo native and Japan Airlines reject has been Cathay Pacific flight crew for the past 21 years. “I like to have the wind at my back, and I always wanted to see what’s out there,” she says. A travel addict, San Francisco’s general way of thinking and its vibrant culture are, not surprisingly, a favourite. It’s easy to see why Kay works on the frontlines of an airline, even as it’s hard to picture her in a uniform of any sort. She’s an oddball by Hong Kong standards, but in the best way. Though she claims communications are not her strongest suit, she’s quick to laugh

“It’s easy to be kind,” she begins by way of explaining what she’d like to achieve through Imagine Peace. “Each of us can do a little bit of good. I don’t have a big agenda. I don’t meditate; I’m not a yoga teacher. I’m not even a vegetarian,” she comments with a laugh. “But in some way I manage to be ‘good’.”

Imagine Peace was inspired by Japan’s 3/11 earthquake and the impact it had on Kay’s home country and beyond. “I chose the name Imagine Peace because what we imagine (and envision clearly) we make real,” she says. Kay rejects the notion that people are fundamentally inclined to inaction but says she was blown away by the response to the first, casual event in 2012. Its current iteration, a Pui O music-and-art festival with an educational slant, is scheduled around International Day of Peace, a UN observation on September 21.

The two-day 2014 Imagine Peace event was the biggest yet, with some 400 people enjoying the music, dance, discussion, workshops, meditation and yoga on Pui O Beach. And in the true spirit of peace and love, hundreds of candles were lit and all the performers got up on stage for free. “Peaceful and loving energy filled the festival site,” says Kay. “And it lasted until the end.” Kay is quick to point out that the Imagine Peace team hosts informal gatherings year round. “There’s a very active, alternative scene in Lantau these days,” she says. “We share our skills and our beliefs – everything from eco-art with Liina Klauss, to fire dancing with Imagine Peace coorganiser, Michael Hazen.”

What peace is and what it means Having survived four years of the rat race in Central, Kay moved to Pui O eight years ago. A single mum, she’s cut her working hours to roughly 14 days per month in order to be around more for her daughter. “I’m so glad I was given this child,” Kay says. “She’s a better person than me.” Parenthood doesn’t mean Kay ignores the world around her. Environmental concerns are high on her agenda, January 2015

Global peace advocates Seeds of Peace and the Lantau ecological and sustainability education charity, EcoAdventure Foundation, were the beneficiaries of last year’s event. In reality, the most unconventional thing about Kay is her personal definition of peace that transcends a lack of armed conflict. “I want to give kids like my daughter a chance to think about what peace is and what it means – and feel the love of the community so they’ll be more responsible. To relationships, to art, to the environment,” she says. “It’s in all of us.”

GLOW ON New Year, New You, right? 2015 is the year you’re finally going to get serious about your health and, as Beverly Au discovers, a guided detox programme is a good place to start January 2015

IN FOCUS

M

Will I lose weight?

ore people sign up for a detox in January than at any other time of the year, says Graeme Bradshaw, founding director and naturopath, of Integrated Medicine Institute (IMI), aka DB’s detox central. “You’re winding down from a week (or more) of celebrations and parties,” he explains. “You’re feeling overloaded by too much alcohol and rich food, and too many late nights – and you decide it’s time to make some resolutions about your health and wellbeing.” Of course, purification rituals – fasting, meditation, and the like – date back to time immemorial. The idea that we’re somehow poisoning ourselves and we need to atone for our sins seems to come naturally to us, which may explain why it’s still integral to most of the world’s religions. Today’s version of autointoxication argues that a combination of food additives, pesticide residues on food, smog, excess meat, prescription drugs, nicotine and last night’s bottle of wine cause a build-up of toxins in the body. Alternative medicine practitioners and naturopaths, from Phuket to Sri Lanka, Denpasar to DB, tell us we’ll benefit from flushing them out – regularly.

What will I gain? From the onset, it’s important to recognise that improved health isn’t found in a box of herbal supplements, a bottle of homeopathy, or a colonic irrigation. The lifestyle implications of a poor diet, lack of exercise, smoking, lack of sleep, and alcohol or drug use cannot simply be flushed or purged away. But a detox can help cleanse your body, and allow you to jump-start a healthier lifestyle. Advocates for detox typically describe the liver and kidney as acting like filters, where toxins are physically captured and retained. “These organs need to be cleaned out periodically, like you’d rinse out a sponge, or change the air filter in your car,” explains

Weight loss is of course, for many of us, a positive by-product of a successful detox. But it is a by-product of a cleanse not the main aim, and the body will move back to its pre-detox weight over time, if diet and activity levels remain the same.

A good detox centres on wellness not weight loss

Graeme, a DB resident of four years. “Not all detox programmes are created equal,” he continues. “The key to an effective detox is to up-regulate the liver function and this takes specific amino acids that help bind and release pollutants and other toxins.” Conveniently, there is no shortage of detox solutions to absolve you of your sins in 2015. In fact, DBers need look no further than the Healthy DB Pop Up Event at Movement Improvement in DB North Plaza on January 24. Detox-friendly products on offer include supplements, superfoods and vegetarian dishes. It’s essential, however, to opt for a guided programme, whether you are planning to detox at home, or book into a spa resort for a full-on, cleansing ‘mini-break’. Some of these focus on flushing out the bowel. Additionally, a detox, by its very nature, involves you radically altering your diet, and typical side effects include insomnia, fatigue, nausea, headaches, weakness and low blood sugar levels. “The side effects of detox are easily managed when the appropriate mealreplacement drinks are used, as these nutrients regulate blood sugars and dispose of the toxins efficiently,” says Graeme.

What’s key, is that you can learn a lot about improving your diet long term. Most detoxes involve you fasting and taking meal replacements at least for a day or two, and excluding some of the foods you are used to, like red meat, dairy and refined carbohydrates. Learning how to make delicious, protein-rich, sugar-free ‘green drinks and soups’ can only be a positive; eating more quinoa and kale, and less processed foods is sound dietary advice for everyone. “Many participants find that their taste changes for the good and their old cravings disappear after a detox,” says Graeme. “Going forward, they may find that they do not need to eat as much, and feel more satisfied with healthy choices.” Though not strictly a detox programme, since the primary aim is to lose weight, the Cambridge Weight Plan removes all the usual suspects from your diet and encourages you to ‘eat clean’. The ‘plan’ is based around meal replacements combined with protein/ green veggie meals. The formula of the meal replacements provides enough protein to protect lean tissue, the right level of carbohydrate to promote a mild ketosis and eliminate a sense of hunger, and the right levels of vitamins, minerals, trace elements and essential fatty acids to maintain good health. “Weight loss is most successful when you receive support,” says Cambridge Weight Plan’s DB-based Carla Keating. “Whether you need advice along the way to your goal weight, motivation to stay active, or information on nutrition, we’ve got you covered.”  January 2015

Do I need to take supplements? It’s clear that a beneficial detox helps you reassess your diet, and become better informed about healthful eating. As Southside-based Monica Wong of the international wellness product provider Forever Living, says, “Good health starts with good nutrition. “With today’s farming methods depleting the natural mineral content of our lands, we can no longer rely on our foods to completely provide us with the essential vitamins and minerals that our bodies need,” Monica adds. “More people are turning to nutritional supplements as a means of getting sufficient quantities of those vital nutrients that can make a difference to their quality of health.” Many of Forever Living’s supplements feature Aloe Vera. “It’s often referred to as nature’s best gift due to the health benefits derived from the sap,” explains Monica. “Packed full of vitamins and minerals, it is a natural way to ensure health from the inside out. Drinking aloe gel can greatly improve digestive issues and help to improve your body's overall defence system.” Supplements are integral to the detox programmes offered at Centralbased Body Awakening, co-owned by Mui Wo residents Jessica and Zachary Williams. Jessica, who has a Masters Degree in Holistic Nutrition, has guided hundreds of participants through a detox, and she draws on this experience while designing and modifying Body Awakening’s cleansing programme and supplement range. “We believe in the body’s innate ability to heal itself, when given the right tools, and the mind’s natural desire to be happy, healthy and full of energy,” Jessica says. “We go to great lengths to ensure that our products are of unmatched quality and are absorbed into the body efficiently and effectively. We recognise that

Detox as yo

The reality is you’re probably not going to totally change your ‘work hard, play hard’ lifestyle in 2015. So take a look at IMI’s ‘party survival kit’, which helps your body eliminate toxins as you party on!

1 Make wise alcohol choices: When we drink alcohol, our blood sugar levels soar then sink. This can lead to inflammation, causing hangovers. Stick to low-sugar spirits, such as tequila or vodka, with a non-sugary mixer and lemon or lime. Dark liquors, like whiskey or bourbon, are more difficult for the body to digest and more likely to cause a hangover. With wine, red is your best choice because it’s lower in sugar than white or sparkling. Nominate a couple of Alcohol Free Days each week, and stick to three or less drinks at any one time.

2 Take nutrients: Ola Loa is not only an easy-to-take vitamin C

drink, but also a stronger detox version than the popular Berocca or Emergen-C. It provides active vitamin B, magnesium and zinc, along with vitamin C. Your liver needs all these nutrients to detoxify alcohol, reduce stress and boost your immune system.

3 Support your liver: Liver Support – a potent, clinical-grade formula – contains milk thistle and other effective herbs, to help your liver process alcohol. Take two or three capsules before you go out, or at bedtime, and say goodbye to hangovers.

4 Stay calm and vital: Serenity Response is the best-selling herbal

supplement at IMI. Combining Ashwagandha extract and Siberian Ginseng, it promotes vitality during the day and supports normal sleep at night. It enhances the body’s long-term response to prolonged stress, making you feel calmer but more energised. 

there is no ‘ideal health protocol’ for every person, just as there is no ‘ideal diet’ for each and every one of us. For this reason, our diet, cleansing and detox programmes are available to clients only after a full nutritional consultation.” The IMI dispensary, in Central and DB, reputedly offers Hong Kong’s most extensive range of natural and health products – over 900 items, mostly clinical-grade supplements. “In most cases, we will prescribe natural health supplements, herbal tinctures, or homeopathic medicine, although we will recommend conventional medication and testing if necessary,” explains Graeme. “The aim of a good detox is to activate the natural healing powers of the body.”

HOW THE WORLD

WORKS

Can your kids name the birds and cloud formations they spot as they walk home from school, and are basic DIY skills in their orbit? Nurturing children’s practical understanding of the world around them has never been more essential, writes Kate Whitehead

asy access to the natural environment is one of the big attractions of Discovery Bay and local schools make the most of that resource, integrating it wherever possible into the curriculum and the school day – the skills learned and health benefits are a good antidote to the increasing pull of technology.

principal of primary at Discovery College (DC), says that throughout the primary section, the natural environment is woven into the fabric of learning. The curriculum is designed around big ideas, such as ‘Sharing the Planet’ and ‘Who are we?’, and learning is structured through the lens of these big ideas.

As a child, Matt Corbett, deputy principal of secondary at Discovery Bay International School (DBIS), used to head down to the river after school and play with friends until it was dark. He says Discovery Bay is a safe environment and advises parents to encourage children to get outside and explore, perhaps taking a shortcut over the hill to school, or letting them loose on the trails in their free time.

Year One students are taken out to Grandpa’s Garden, a field on the far side of Nim Shue Wan, where they can get their hands dirty and pull vegetables. Year Two students look at the sources of water – and with the river, pond and sea on their doorstep, practical learning is made easy. And Year Three students learn to appreciate nature through the eyes of artists, honing their observation skills and ability to make connections.

“All the evidence suggests that a lack of nature is causing a rise in depression, obesity and attention deficit disorders – being outside will reduce this and make kids happier, more co-operative and help develop self-discipline,” says Matt.

Teaching life skills The natural environment has a lot to teach children, too. Lyn Coote, viceJanuary 2015

“They learn to appreciate the fact that the sky looks different each day. By the end of primary school they have engaged with nature,” says Lyn. Both DC and DBIS get involved with local green-group initiatives, and provide allotments for pupils to cultivate. In a world where many children reportedly don’t know where their food comes from, believing

it originates at the supermarket, DB-educated kids are clearly at an advantage.

All-round technical ability “I’d suggest that parents have a ‘green hour’ each day, family time with all the siblings, it could be going for a walk or playing touch rugby. If people are lucky enough to have a backyard, then make a sandbox and bring home pieces from the outside world,” says Matt. He says it’s important to get children interested in how things work inside and outside. And this includes practical DIY skills, such as changing a light bulb. “Most families here are in a position where they have domestic help and a lot of the students get things done for them. It’s great if they can learn practical skills, like how to change a car tyre,” Matt adds. “The inactivity levels in young people are huge – partly it’s parents’ concerns for children’s safety.” Matt doesn’t see technology as bad, but cautions on using it wisely. Take social networking that has come in for some bad press in relation to teenage bullying and depression. Matt says

that there are positive benefits, such as the opportunity for introverted students to socialise from behind the security of a screen. And computeruse represents enormous educational opportunities in the classroom.

App-enabled not app-dependent Professor Howard Gardner, Hobbs Professor of Cognition and Education at Harvard University, has the same message. He sees technology as having much to offer, but warns that young people need to learn how to become “app-enabled” rather than “app-dependent”. In Hong Kong recently, to talk about his new book The App Generation, he explained that his research shows that young people are more risk-averse than they were 20 years ago. “Kids used to make up plays that weren’t very good but they made them up. Now they just reproduce them from a smart device because it’s easier to do and slicker, but they aren’t using their imagination – that’s what we’re talking about with risk aversion,” says Professor Gardner. By studying drawing and writing created by children 20 years ago and comparing them with recent works by children, he found that while young people’s graphic productions were more imaginative, their literary invention was less creative.

Valuable skills (young) pe

Ken Eckert, an English professor, living in South Korea blogged in October 2014: “I have a doctorate and am lucky enough to be very well educated. Then when I go home, I feel foolish when I go for a walk with my father. He knows what kind of bird that is; what it eats; how it will sound. He knows those trees, how they grow, what kind of fruit or leaves they will make. He knows what will grow in that soil. He knows those clouds and what weather they will bring. He knows if you tap a wall with a hammer the pitch will be lower when you hit a 2x4 support. I just don’t have that level of ‘natural intelligence’ about my surroundings. These are skills requiring you to spend time outdoors with real birds and not angry ones on a tiny screen.”

ow

More stuff kids don’t kn

Surprising too was the finding that very few young people now ever get lost because there’s always a device or an app on hand to guide them.

Your children might love their na-nas, but do they actually know where bananas come from? A May 2014 study of over 1,600 Aussie kids aged between six and 17 years revealed that a staggering 92% didn’t know bananas grew on plants.

Professor Gardner says technology has much to offer us, but we must be the ones in control of it and not let it dictate how we spend our time. This holds true for adults as well as children and he urges parents to set a good example.

Research also found that six in 10 children were unaware that herbs such as mint grew in the ground, and 70% didn’t know where sugar came from. More than 50% didn’t know that beetroots were grown in the ground, 75% couldn’t identify a leek or radish, and 58% struggled to name a nectarine.

FAMILY MATTERS “It is one of the things where young and older people can complement each other. Young people are often much more adroit with technology but they might not have a good model of how to use things, and when they might be useful, and when not,” he says. “Wisdom often involves putting something away and not taking it too seriously.” At DC, Lyn says that technology – iPads and laptops – is available for students to use for the purpose of enhancing learning, and that children are taught how to use it wisely. “We don’t want to present technology as having all the answers. We tell them, ‘So, you have these questions you want to answer, what would be the best way to find the answer? Talking to someone, going to the library or going online?’” says Lyn.

DC students learn how to use technology wisely

She says technology has helped her eight-year-old son find out more about his great passion – the natural environment. “He’s such a naturalist,” she says.

SOFT CORAL Easy to identify due to its bright colour, Soft Coral is also known as Coloured Cauliflower Coral. I found many glorious specimens like this on a shallow dive along the Chi Ma Wan Peninsula.

SEA CUCUMBER AND SHRIMP Little is known of the western waters of Hong Kong, mostly due to the bad visibility caused by the Pearl River Delta. But on a clear day, snorkelling in the next bay along from Cheung Sha Lan, I came across this cute couple. Sea Cucumbers have three rows of tube feet which they use to cling to rocks on the seabed. The shrimp is likely cleaning the Sea Cucumber, feeding off the built-up algae. ď‚„ January 2015

CUP CORAL There are 84 species of coral in Hong Kong waters – more than in the Philippines! You won’t find complete structures, like coral reefs, but rather clusters of coral grouped together, referred to as coral communities. I spotted this Cup Coral on another snorkelling trip, in a bay near the Trappist Dairy.

BRISTLE WORM The Bristle Worm’s body is made of 37 visible segments, covered laterally with calcareous spines (or bristles), which are sharp and venomous. Snorkelling off Nim Shue Wan, I steered well clear of this little critter! Scavengers of meaty foods, like clams or fish, Bristle Worms range in size from under an inch to over 2-foot long.

FIDDLER CRAB I came across several of these semiterrestrial marine crabs at low tide in an inter-tidal mangrove near Tung Chung. The males’ major claw is much larger than the minor claw, while the females’ claws are the same size. When feeding, Fiddler Crabs look as if they are playing a violin with their claws; they communicate through a sequence of waves and gestures, and so they are also known as Calling Crabs.

BUBBLE-TIP ANEMONE I photographed this Bubbletip Anemone, while snorkelling just off Headland in Discovery Bay. Young specimens, like this, are often located in groups or colonies near the surface, as they get most of their energy from solar radiation.

YELLOWTAIL CLOWNFISH Yellowtail Clownfish, also known as Clark’s Anemonefish, are hermaphrodites. They are born male, and when the time comes for mating, the most dominant in the school becomes a female. When she dies, the next most dominant male changes its sex. I found this clownfish while snorkelling just off Headland in Discovery Bay. Aggressive and territorial, they are dependent on sea anemones for their habitat and nesting sites.

TALKING POINTS

T

hree-year Tung Chung resident Satya Gurnani was cruising at an altitude of 35,000 feet over the Atlantic Ocean when he had an epiphany. “I was flying from Jamaica to London in 2001, the moon was full, and it was the perfect time to problem solve and think creatively – that was the moment I conceptualised the idea,” says the 44-year-old captain for a Hong Kong-based airline. Almost 14 years on, that idea was launched on October 1 as iwant.com – an online platform that allows people to post… what they want. The field is wide open – it could be anything from a boat to a book, iPhones to insurance. Even a job. In fact, the only no-go areas are sex, drugs, guns and medicine.

Ask and you shall receive What makes iwant.com different from all the other sites out there is that it puts the buyer in control. This isn’t about sellers pushing their products – it’s about people saying what they want and the sellers coming to them with offers. It’s a radical new way of approaching retail, one that Satya believes could shake up the world. “If we all used it, then it could have a meaningful impact in terms

of stabilising prices, and creating new jobs and opportunities for entrepreneurs. iwant even promotes recycling by giving you a database of ready buyers for your used goods,” says Satya, who grew up between Jamaica and the US. His wife Noy is already an iwant user and a key member of his team. Born in Laos and raised in America, Noy loves to shop. “She’ll shop until she drops,” Satya says. “She’s also been using iwant to get a massage and get her nails done. She’s found people through the site, who will come to our house and do these services.” Noy is critical to the business, not only offering support but also a sounding board, particularly when it comes to hiring new staff. “I believe women have a sixth sense about these things,” Satya explains. And his children – aged nine and 11 – love the new site, too. Users must be over 18, so they’ve been pestering Dad to put in requests on their behalf.

Everything iwant Preference has been key. It took Satya seven years to persuade a woman in London to sell him the domain name – iwant.com. She eventually relented in 2007 and he says he regularly gets offers to buy the domain site, the highest so far is US$1 million (HK$7.7 million) in cash. Although Satya is based in Tung Chung, the rest of his team of 10 are scattered around the world, with a project manager in the US (San Francisco) and an assistant project manager in Manchester, England. It truly is a global site, with current requests being posted from all over the world, but there are a couple of

Find more topical local topics

areas that Satya is focusing on for the local market. “One of my goals is for people in Discovery Bay to get involved in real-estate rental. If we can get 100, 200, 300 people listing – for example, saying they are looking for a 700-square-foot flat on DB and then sellers coming back to them and offering prices – we will begin to see a more fair rental market,” Satya says. And as an aviation industry insider, he is well aware that there is a niche in the market for a platform where pilots can post their CVs – anonymously – and look for jobs. “Employers all over the world will be able to contact them with offers,” Satya explains. “I know of a new airline in Hong Kong that has taken on 20 corporate jets. Using iwant.com, the word is spreading in the pilot community that there are job vacancies and pilots are posting their resumes.” This is early days and it will take time for the site’s momentum to spread, but progress is good and Satya is not afraid to dream big. “I intend this to be bigger than Facebook and Google combined,” he says. At the forefront of this new trend in online retail, there are other big players snapping at his heels. “eBay is following. Alibaba is talking about it. And Amazon is experimenting with an iwant sticker,” says Satya. “But I’m ready for it, every great business has competition.”

reat quality of food, service and entertainment, topped with a terrific atmosphere and comfortable bar... absolute wine and dine experience... every dish has its unique bite!” These are just some of the reviews that helped earn Solera Spanish Restaurant and Bar top honours in the Around DB Resident’s Choice Awards 2014. In the online vote on the Around DB Facebook page, from December 1 to 7, Solera beat runners-up, The Venue and Brasserie 22˚ North to first place. Manager Danny Dodd, a true Scottish charmer, who has been in the restaurant business for 10 years, is fun and entertaining – and he says that winning the Around DB award is the “perfect culmination of a fortuitous yet fantastic year for Solera”.

Setting up Solera back in October 2012, Danny teamed up with long-time pal, Greg Walker, a DBer of nine years, and a true Hispanophile, who opened Ricos Spanish Restaurant & Bar in SoHo back in 1993, and Estudio Iberico in Pacific Place in 2010.

Interestingly, Danny says it took Solera about a year to really get into gear. “The turning point came on New Year’s Eve in 2013,” he explains. “Our customers were enjoying the night so much, they started calling their friends, and asking them to come along. Greg and I were DJing and everyone was having the best time ever. When this place is full, it’s absolutely amazing!” Named after a Spanish method of producing wine, and boasting DB’s

largest bar, the 120-seater, DB Plaza restaurant is known as a place to party. There’s a spacious outside terrace, with stunning views over the bay, and live music every Friday and Saturday night. “We stock over 200 bottles behind the bar and over 40 different types of wine,” says Danny, “and we go through 20 to 30 jugs of Sangria in just one evening at the weekend.” Clearly the food at Solera is the main draw, and rightly so. “Everything on our menu is made from scratch and we use whatever will give the very best taste. For example, we import our tomatoes from Australia and our olives from Spain,” Danny explains. “If you compromise, even on the small things, you can ruin a dish completely.” Danny says the greatest challenge has been matching up to DBers’ (high) expectations. “With just over 1,000 Spanish people living in Hong Kong, we needed to make sure we appealed to other nationalities, especially Hong Kongers, who make up the majority of Seru Rabeni set to beef up DB Pirates’ play our local community,” he adds.

Solera’s four chefs are all Hong Kongborn, with a clear understanding of what the locals like. They also trained for a year under visiting chefs, brought in from Spain, when the restaurant first opened. Asked to pinpoint the secret of Solera’s success, Danny says, “Above all, we value our customers and we listen to what they want. If a customer comes in more than three times, they’ll expect to be noticed. We have returning customers who will say, “Give me the wine you gave me last time,” or “Order for us, please”. “My golden rule for business is always to put myself in the customer’s shoes,” he concludes. “I ask myself, is this request reasonable and if it is then how can I make it happen. With so many in today’s society saying ‘cannot’, we say ‘can do!’”

ingapore may have lagged behind Hong Kong in the competition for Asia’s coolest city for many years, but recently it has turned into something of an overachiever.

52

Lonely Planet just awarded it the number one spot in its Top 10 countries to visit in 2015, and this year is also the 50th anniversary of its independence, so you can be sure there will be a multitude of events going on. The Lion City is bursting at the seams with impressive things to see and do. January 2015

There’s the iconic Merlion to visit, and Marina Bay Sands SkyPark and Universal Studios, not to mention the botanic gardens, the night safari and the bird park. But let’s assume that living so close, you’ve already explored the main attractions. What you’ll want to do this year in Singapore is eat, drink and spa! Always renowned for its multi-ethnic cuisines, new restaurants and bars keep popping up, the coffee culture is out of control and to help with the digestive and caffeine overload, there are increasing numbers of luxury spas

in which to slim down and de-stress.

Little India Singapore has become a hair-raisingly expensive city, so cheap eats are in high demand, and the best place to find them is Little India. Trawl the chaotic streets absorbing the atmosphere, but head to less touristy Jalan Besar for no-frills Indian eateries. Whether you choose your samosa, curry, rice and sides from a waiting array of trays or order a masala dosa freshly made in front of you, you’re paying around HK$20 for a delicious and authentic lunch.

Just try taking a bad photo in the Himalayas!

Singapore’s spectacular and ever-evolving skyline

On Race Course Road, the famous Jaggi’s Northern Indian Cuisine is one of the city’s favourites. Queue up and order canteen-style, then carry your tray of mouth-watering kebabs, butter chicken and veggie dishes back to a table. Samy’s Curry, situated in a grand old-colonial building on Dempsey Road, is another must visit; famous for its chicken masala and fish-head curry, you eat off a banana leaf.

Hawker-tastic You’ll find a handpicked combination of Singapore specialities like char kway

teow, roti, seafood and more, at Chomp Chomp Food Centre in Serangoon Garden, renowned for its stingray, and at Gluttons Bay beside Esplanade. Both are more expensive than some hawker centres, but locals still go as food quality rates high. Just reopened is the 120-year-old historic monument that is Lau Pa Sat in Raffles Quay. Following a HK$23.6 million renovation, new stalls include Your Little Brown Bag for sandwiches to go, fiery Sichuan flavours at Xiao Man Niu Mala Xiang Guo, and Mamacitas’ Costa Rican fare.

And head out towards the airport to East Coast Lagoon Food Village for seafood, especially the spicy stingray and chilli crab.

Caffeine fixes Gone is the more laid-back pace of life, as everyone hurtles through their days high on caffeine. And for coffee shops and brunch hangouts, everyone is flocking to the residential neighbourhood turned hip destination that is Tiong Bahru. While you can experience the old-style, Chinese wet market at one end of the district, and   January 2015

eat there too, for a more salubrious experience take a stroll to find brunch with a difference at Flock Café. Its Cheeky Eggs (pork cheek eggs benedict) and bacon banana French toast are real finds. Clarke Quay’s Ronin is the place locals rush to for super rich coffee, and the Brioche French Toast with pear, bacon and hazelnut butter. On Upper Thomson Road, One Man Coffee helps you cool down with iced Matcha (green tea) lattes, or fuel up with toad in the hole. Its fluffy Brioche French Toast with compote, walnuts and fresh cream is a totally decadent treat. Chye Seng Huat Hardware near Lavender is a hardware shop transformed into a cool interior, with a circular bar/ barista area, and great coffee, pastries and brunch items. My Awesome Café on Telok Ayer has an industrial interior, tasty food from breakfast to evening, and Awesome Time (aka happy hour).

Drink easy, speak easy Speaking of which, Singapore’s speakeasies are doing good business. Behind the wooden door at 28 Hong Kong Street, sexy ingredients create rocket-fuel cocktails, like the Whore’s Bath of honey vodka, Umeshu and Hawaiian salt-pickled vodka. For the Horse’s Mouth on Orchard Road, you walk through Uma Uma Ramen

WHERE

THE WILD TRAILS ARE

How well do you really know Lantau? Check out these hardcore, lesser-known hikes, presented by Nic Tinworth

ith the temperatures finally dropping and our ‘winter’ monsoon taking its yearly hold, there’s no better time to get out and explore the plethora of amazing trails that Lantau has to offer. If you’re ready for something more than the usual Tiger’s Head, and Sunset and Lantau peak jaunts, read on to discover some top routes suggested by three, super-fit Lantau residents. Be warned: these trails are further off the beaten track, significantly more wild, and ultimately more testing than the better-known routes. As the saying goes, life begins at the end of your comfort zone.

Disneyland Ridge Suggested by DB resident Kurt Lynn 17 kilometres | 3-4 hours | Medium difficulty Start: DB Finish: Sunny Bay (one way), DB (return) January 2015

This is a fun ridge run or hike, and especially pleasant on clear days when you are afforded unobstructed views of the South China Sea and over to Hong Kong and Kowloon islands. The trail is in excellent condition over winter when they clear the firebreak, but can be a little overgrown in places during the summer. Beginning with a jaunt up Tiger’s Head (either via the main route from the DB Lookout, or from the trail behind the Greens’ playground), take a left turn at the summit down the trail towards Neo Horizon until you’re above the tunnel. This section has steep climbs and descents, a good mix of mainly dirt with a few rocky step sections, and great views towards both the airport and over DB towards Hong Kong Island. From above the tunnel, continue following the ridge-line up to the weather/ radar station and then all the way to the triangulation station (trig) overlooking Hong Kong Disneyland. The trail follows the firebreak, so you’re always running close to small trees and bushes. It’s quite steep in

Disneyland Ridge trail

sections but the climbs are not overly long. The best part is that the trail is all dirt, with enough rocks and tree roots to make it interesting – no concrete or steps to be seen! From the Disneyland trig, you drop down, about 120 metres, to another trig overlooking Sunny Bay. This is the only overgrown section – about five minutes of bush-bashing down to the Sunny Bay-Disneyland road. From the road, you can find your way to Sunny Bay MTR, or turn around and head back to DB. The full run or hike is about 17 kilometres with just over 1,400 metres of climbing, but since it’s an out and back, you can turn around at any time. There’s nowhere to get water along the trail, so carry what you need.

ACTION

The wilds of West Lantau Suggested by Mui Wo resident Hamish Low 12 kilometres | 3-4 hours | Medium to hard difficulty Start: Ngong Ping Finish: Tai O This beautiful route over the west of the island takes you along sections 5 and 6 of the Lantau Trail, finishing in Tai O. Very clearly marked, it has terrific (and hard!) climbs over three main peaks, and some of the best untouched trail around. If you need to stock up on food and drink then get a bus from Mui Wo to Ngong Ping, hit up the 7-Eleven, and then walk down the trailhead. This is a good half-day hike, and not too strenuous. Start at the highest point of Keung Shan Road, where the road to Ngong Ping leaves the road to Tai O and the Lantau Trail crosses. Enter the roadside picnic area and join the Lantau Trail path signed to Kwun Yam Shan. Kwun Yam Shan and Keung Shan are respectable summits, requiring some effort, but the climbs take no more than 10 minutes each. They are joined by a ridge you follow offering views north over Keung Shan Valley with its many monasteries, and south over the South China Sea. Keung Shan leads you to the 490-metre summit of Ling Wui Shan, the highest of the nearby peaks. The downhill journey from Ling Wui Shan is challenging, with steep descents and stairs, but the views are unsurpassed and the trail soft under foot. You feel, and indeed are, far from civilisation. Some 100 metres after Distance Post L047, you come across a colourful flying-dragon sculpture overlooking the Man Cheung Po Plain – a popular background for photos.

Views from 490-metre Ling Wui Shan

Flying-dragon sculpture Man Cheung Po

Section 6 begins soon after and you can relax for a bit. Previously open and exposed trail makes way for cool and covered forest canopies, and there are several streams and rock pools to dip into. From here, it’s downhill all the way to Tai O, and you pass a wonderful, old, abandoned house that is well worth stopping to explore. Crossing the top of a shallow highland valley before rounding the edge of Nga Ying Shan, there are views as far as Macau and Zhuhai on a clear day.

West Lantau trail

Here, the terrain seems more Scottish than South China. Just before the path drops steeply to the coast, you find a picnic area overlooking Tai O. It’s quite steep down through trees to the coastal path, so don’t rush. Once on the coastal path, turn right towards Tai O, where a 2-kilometre concrete path gets you to Nam Chung Tsuen. For Tai O, follow the seawall path where you can closely observe the mangroves and all the birds, fiddler crabs and mudskippers that thrive there.  January 2015

West Dog Teeth Ridge Suggested by Pui O resident Retha Stroebel 5 kilometres | 1-2.5 hours | Hard difficulty Start: Lantau Peak/ Shek Pik Reservoir Finish: Shek Pik Reservoir/ Lantau Peak The Dogs’ Teeth Range (Kau Nga Ling) comprises three routes in the form of West, Middle and East. Its name is literally translated as ‘hill of dogs’ teeth’ due to the thin and rugged mountain ridge that you traverse. This is one of the more arduous and technical trails on the island, and not for the faint of heart. Starting at Shek Pik Reservoir, you climb Lantau Peak before descending to Ngong Ping on the one side, or Pak Kung Au on the other. Alternatively, you can start on Lantau Peak and descend all the way to Shek Pik Reservoir. This latter option, the Middle Ridge, is definitely the most fun, and the less severe of the three, although its undulating climbs and drops to Shek Pik Reservoir include several incredibly steep sections. In one or two areas, you are almost rock climbing! The trail starts as you descend from Lantau Peak towards Ngong Ping, along Section 3 of the Lantau Trail. About 5 kilometres after the summit, you come to some stairs and a signpost marked for Ngong Ping. Don’t take this right turn down the stairs, instead continue forward past a metal sign, saying ‘Dangerous Path’. The trail forks right and left soon after this – stay left and follow the trail down a steep and exposed rock face to the first narrow ridge. At the top of this ridge, the trail splits again. Continuing on leads you to West Dog Teeth Ridge, so take the

steep left turn that leads almost immediately to the first ‘rock climb’ of the route. Nothing too technical or steep but it does require handwork and some upper body strength.

steep descents and a couple of small climbs through the shiggy get you to a trig point that eventually leads to Shek Pik Country Trail and Shek Pik Reservoir.

At the next trail fork, stick to the right, where more harrowing and

B resident Cynthia LieBreit of Bricks & Mortar Design picked up this 900-square-foot flat in Midvale Village about a year ago, intending to convert it into a onebedroom rental (and a home-awayfrom-home for family and friends). Once in possession, however, she decided to split the space into two flats, with the front section serving as the rental apartment, and the back providing some much-needed storage space, primarily for her husband’s 10,000-strong vinyl collection. “My husband’s big hobby takes up way too much space,” she quips. “And, anyway, I decided 900 square foot was too big for the kind of one-bed studio I had in mind.”

Photos courtesy of Bricks & Mortar Design

And so began a top-to-toe renovation, which took Bricks & Mortar just two months to complete. The ‘front’ flat was gutted, with almost all the interior walls knocked out, the bathroom relocated, and a new, open-plan layout put in place. Explaining that at just 450 square foot, the apartment is one of the tiniest she’s worked on, Cynthia admits she found structuring the space a challenge. “Having opened up the layout, I realised I didn’t want to stick the bed in the corner of the living area, so I created a raised, 120-square-foot bedroom in the middle of the flat, with a glass wall around it,” she says. Since the bedroom walls are transparent, there’s still a sense of free-flowing, open-plan living but at the same time the bedroom is enclosed and separate, and it’s become the focal point of the apartment.

As good as it gets In designing the flat for short-term guests, it becomes clear that Cynthia has focused on factors many of us would like to implement in our own homes. Firstly, the bedroom, a room so often overlooked by interior designers,

1

TRICKS

OF THE TRADE

You can learn a lot from viewing a designer’s own (DB) flat, especially one that’s been put together on a budget to house family and friends. Jane Clyde reports is central to the scheme. Secondly, materials used throughout are durable and low maintenance. Thirdly, the majority of the furnishings have been picked up for a song – in Ikea. Cynthia’s chic, minimal decor shows just what you can achieve on a tight budget. Attention to detail is also all-important – from the stainless-steel trim on the wooden cabinetry to the choice of fuss-free, wooden blinds instead of

curtains. “I could have gone with white roller blinds,’ Cynthia says, “but with these wooden ones, it’s easier to adjust the lighting. They don’t block the natural light.” All in all, Cynthia’s apartment is a great model for DB living, and certainly as a short stay, it’s been doing very well indeed. Since she started renting the flat out in August, it’s been empty for just five days.  January 2015

Get the look! 1 Make the bedroom a focal point, like in a hotel. In a small

space, a glass-framed bedroom will look aesthetically better, and more vibrant than a tiny, boxed-in bedroom. What’s more, with the room raised 80 centimetres, the space underneath can be used as storage – on the kitchen side, for appliances; on the bathroom side, for cleaning items and extra towels; and by the corridor for luggage and shoes.

2 Limit the combination of materials and colours. Cynthia has created a sense of continuity by basing the design around white, brown and grey for whitewashed, wood and polished concrete walls and floors. “Sticking to three basic colours stretches out the space, as the different areas flow together seamlessly,” she says. “What’s more, the sense of uniformity makes for a calm, contemporary and clean look.”

3 Conform to a minimal aesthetic. Rather than clutter a small

space with unnecessary furnishings and decorative items, stick to the bare essentials. Well-chosen pieces, like a swish L-shaped sofa, can make a strong designer statement without too much accompaniment. Too personal a look won’t work in a rental apartment, and it can also prove overpowering in a family home.

4 Don’t go overboard with your budget. Most of the decorative

items, including the lights, hanging baskets, clocks and kitchen cabinets, are from Ikea, proving that you don’t have to break the bank to create an aesthetically pleasing home. Cynthia has also prioritised durability and practicality with the furnishings chosen; even the plants (also from Ikea) are totally low maintenance, being plastic.

5 Use open storage to make the most of your possessions.

Rather than tucking away items in daily use (in the bathroom, kitchen and study nook), put them on display, thereby making them a feature. “This way beautiful towels and kitchen accessories become part of the decor,” Cynthia says. “They are also easily accessible, and in this case easy for guests to find.”

6 Create a warm and inviting kitchen. Cynthia sees the

kitchen, no matter how small, as the heart of the home. Bulky appliances, including an American-size fridge, have been inbuilt and concealed, freeing up space for breakfast-bar seating and attractive wall fixtures. “The look I like is contemporary and minimal without being sterile,” she explains. “The tiles in the kitchen and bathroom are white but they add interest as they are uneven and have a handmade look. Grey grouting creates a little contrast, and it’s also really practical as you don’t see the black, mould spots!”

FINANCIAL PLANNING ASK THE EXPERT HELLO RESIDENTS OF DB, LANTAU AND THE REST OF HONG KONG! It’s time to consult THE EXPERT about your financial planning!

Who am I? KayeKaye Khemlani (PIBA No. 0032-009006), a native English-speaking insurance advisor, with a strong presence in Discovery Bay and Hong Kong.

My thoughts I understand we all go through different stages of life and so do our insurance needs. But the mandatory insurances required by the Hong Kong Government (including domestichelper insurance and automobile coverage), are always worth due diligence. Your home is your castle, so why not protect it from the elements, drunk guests, clumsy kids and thieves? A home package can do all that and more! Whether you rent or own your home, it’s better to be safe than sorry! Homeowners insurance is a security blanket. It is designed to protect you in the event of a catastrophe. Therefore, when you are choosing a policy, don’t always look to save money – the best deal may cost you more in the long run. But be sure to shop around. When you receive your annual renewal statement, check to see if you can snag a better deal elsewhere. Consider whether you have too much coverage. It’s common for policies to contain inflation-protection provisions that automatically increase your coverage amount. You may want to adjust your coverage amount to a more realistic figure.

My offer: I can do a comparison shop for you free of charge, to ensure that you have made the right choice, and check that you have the right product at the right price.

WHAT’S NOT SAID

SPEAKS LOUDEST

L

To kick off 2015, our resident satirist Peter Sherwood takes a serious look at communication

ate last year an image with the front page headline in the South China Morning Post (SCMP): ‘Students, Officials Still Far Apart’. The picture showed students and government in talks at a massive, rectangular, wooden conference table with a space the width of a squash court separating them. An accidental pun, or was a sub-editor having an ironical giggle? But first this:

In London, back in the 1970s, I worked for a small Public Relations (PR) firm owned by James Bond’s Sean Connery. Three of us handled his charity and business interests, while spending afternoons at the pub pretending to beat the shrubbery for new clients. We had one problem; a hulking, and belligerent Mr Connery who, at every interview and press conference, found creative ways to blow his Scottish top and offend everyone including us, which many reckoned impossible.

Then I came upon a company called TITS. Seriously. Television Interview Training Service taught people how to show up cool and knowledgeably on TV and in press interviews. Just the ticket for our Sean. But there wasn’t enough courage between the three of us and a dozen war heroes to

approach the movie legend to suggest he needed help. It took weeks to find the daring to confront the often stormy Edinburgh native.

The space between the lines Almost everyone who is likely to be regularly interviewed receives media training from a PR firm and knows how to play the interviewer’s game. English comedian turned activist, Russell Brand has this down pat. Incidentally, this is why so many interviews (not Brand’s) are bland. Interviewees are well coached and rehearsed with role play. They know to look authoritative and calm, evade tough questions, change the subject, return relentlessly to their key message and if necessary waste valuable time, while appearing in command. There’s nothing like knowing what you’re talking about when trying to convince a superstar that his reputation with the press is terrible, but miraculously we managed it. After completing the course ourselves, we facilitated the jittery media training with the unpredictable big man. That was the beginning of a career

in the grimy world of PR, where I learned a lot about communication, although not nearly as much as when I dived into some industrial-strength seminars on awareness. At the latter, I gained insights into the power of what is left unspoken, the space between the lines, the energy in a room, and all that is dismissed in physicality, body language and the like. What is not said often speaks loudest. But back to that picture in the SCMP. Either government employs some super smart PR people, whose remit was to consciously, physically, psychologically and politically create a yawning chasm between the two sides, or the scene was created accidentally. The ridiculous gap at a heavy, sharpcornered, rectangular table, and the austere room, with a microphone for everyone, was not designed as an inviting environment. Given government’s initial blunders with peaceful protesters via the riot squad, pepper spray and tear gas, and the dragging off of a protesting social worker to a dark corner by half a dozen police for a severe beating, while defenceless, the talks should have been a warm and welcoming affair. These committed kids are, after all, our future.
