ANGELS SUCCESS Congratulations to DB fitness trainer Claire Mas and the seven local participants who sweated it out for eight weeks to raise money during the Angels for Orphans 2016 Fitness Challenge. The event raised money for Bali Kids, and its initiative to spread the word about the dangers of smoking. The DB group contributed to a total of roughly HK$250,000 raised across Hong Kong.

DB initiative The Crayon Society, run by members of the Latin Dragons dragon boating team, collects and recycles old crayons, and sells them back to the community to raise funds for The Duchess of Kent Hospital at Sandy Bay and the Society for the Relief of Disabled Children. Since May, they have made over 1,000 crayons in their own ovens, raising upwards of HK$20,000. DB schools have been backing the initiative and, over the summer, DB collection points for used crayons include Bookazine and Dymocks. addie Bowden, 11, and Tiffany Amber Tomlinson, 6, are taking their love of being on stage to the next level this month, by spending eight days in Manhattan learning about show business, with the bonus of content producers like Disney, Virgin and Nickelodeon looking on. The DB girls, both of whom attend Discovery College (DC), have had the good fortune to be selected as two of just 25 kids from Hong Kong – two of 2,000 globally – to attend the International Modeling & Talent Association (IMTA) convention in New York this month. As a onestop clearinghouse of sorts for talent agents, casting directors and other industry professionals looking for fresh blood, the IMTA event provides budding entertainers coaching, a taste of competition and invaluable lessons from star-making industry pros. “These are the same people who ‘discovered’ Ashton Kutcher, Jessica Biel and Katie Holmes, so sort of a big deal, I suppose,” says Maddie’s mother, DC teacher Tanya Surawski. Hobbit Elijah Wood, nerd icon Amy Acker, Breaking Bad’s Aaron Paul, Garrett Hedlund (Pan) and Desperate Housewife and producer Eva Longoria are also among the IMTA alumni. As it turns out, Tiffany has already been scouted by New York agency Talent Inc. “One of the talent scout judges who discovered the tot is a director on a Disney Junior movie and several Nickelodeon shows. He calls Tiffany the mini Jessica Alba,” says her mother Cherry Tomlinson. Like Tanya, Cherry is treating the IMTA event with caution. “For sure, we are hoping that Tiffany gets discovered, though we will not be pushing this career onto her,” she says.

Home-grown talent “I’m not sure where it came from actually,” Maddie begins of her interest in showbiz. “I’ve been dancing since I was two or three, and I started singing

last year at school.” Drama came from school too. “I did the school play and that made me like acting more.” “Maddie has had no outside school singing or drama lessons at all, so her skills are a credit to her drama teacher, Mr Donnoli, and her primary music teacher Mr Burrows at DC,” says Tanya. “Maddie’s always been interested in performing, in storytelling,” continues Tanya. “When she was a year or two old she’d run in, in a princess dress like Snow White, and she’d throw herself on the floor like she did in the forest and sweep the dress around, imitating the movie.” Likewise, the Tomlinsons knew from the get-go that Tiffany might be destined for a career in the entertainment business. “Tiffany showed a huge interest in dancing, singing and acting from when she was about two, and she’s always been a bit of a poser,” says Cherry. Notably both DB kids have honed their growing skill sets at Island Dance, Tiffany since she was 18 months and Maddie since she was five. “Miss Nimi’s class is so great,” says Tiffany. “We have lots of fun, and she encourages us to learn new dance steps. She is the best dance teacher because she always smiles.” While Maddie is equally enthusiastic about class with Nimisha Kashyap, she shows her maturity by giving a shout out to her former Island Dance mentors Rohita Menon and Sorrell Thomas. Coach Charles Chan of Sportsmanship International gets a nod from both girls, and Tiffany also boosts her gymnastics at iGym with Kim Doherty. In her free time, Tiffany also takes class with Mariles de Guzman of Embody’s Zumba Kids and drama workshops with Faust International at Discovery Bay International School.

is only at the idea stage. Ask her if she’s hoping for a gig with the big boys like Disney and the career path of Miley Cyrus or Justin Timberlake and she waffles a bit, considering. Point out that a job opportunity would likely take her away from DB, and she casually states, “I could say no.” Maybe she’ll be Hong Kong’s Beyoncé? She’s not sure – yet. “Maybe I’d like to act for television. When I was a bit younger I used to watch comedy shows that a lot of famous actors were on,” she remarks. Who those are never do get identified, though Sia’s histrionic 2014 single Chandelier inspired some mad mimicking around the house. Post-secondary schools offering scholarships also make appearances at the IMTA, which could be a welcome opportunity. Maddie is keeping an open mind. Little Tiffany, meanwhile, definitely has her sights on stardom. “I want to be a big star like Jessie J, Katy Perry and Meghan Trainor,” she says. “Because I can be on television, and people and my friends will see me perform.” As seasoned performers, the time is right for the girls to get a taste of what the industry is really like. For acting, singing and dancing they share a passion but on modelling they differ. Tiffany, a former ‘Huggies Baby’ is a fan, with an extensive portfolio. Maddie is less enthusiastic. The fancy clothes and the make-up don’t appeal to Maddie in the least, and she’s tolerating the modelling element of the IMTA event because she has to. “I don’t model,” she says with a small scoff. “I don’t like the whole idea of it.” Pointing out that turning pro down the road means hours in the make-up chair as part and parcel of the job gets an emphatic: “But that’s a different type

of make-up. The only reason I’m wearing a skirt right now is that I’m out of school pants.” Cue tweener eye roll. Busy preparing to take part in 12 competitions (acting, singing and dancing) during the week spanning July 21 and 28, Maddie and Tiffany’s current schedule could safely be

described as packed. But life isn’t all rehearsals all the time. Tiffany enjoys swimming (with Harry Wright) and her art classes at Treasure House. Maddie spends her free time upsidedown doing “cartwheels, backward walk-overs and aerials,” while angling for a trip to the Maldives. Those are some superstar tastes right there.

Plastic pollution is a constant on beaches worldwide

The amount of plastics manufactured in the first 10 years of this century approached the total produced in the entire last century. The level of non-biodegradable waste has reached a crisis point and Asia is a major culprit. Peter Sherwood reports July 2016 www.arounddb.com

orldwide most plastics (including water bottles, bags and packaging) end up in landfills, incinerated, or in the ocean – they are not recycled. This means we have a serious problem on our hands, impacting the Earth’s ability to support life. Plastic bags are a major culprit. They photo-degrade, meaning they break down into smaller and smaller toxic pieces over centuries, contaminating soil and waterways. According to a 2008 report in the Wall Street Journal, the US alone goes through 100 billion plastic shopping bags annually. Only 1 to 3% of plastic bags are recycled worldwide.

The Asia factor According to Stemming the Tide, a 2015 study by the Ocean Conservancy, there are 5.25 trillion pieces of plastic trash in the world’s oceans. Each year, 8 million tons are added to the count. That’s equivalent to one municipal garbage truck pulling up to the beach and dumping its contents – every minute. The alarming new research suggests that in 10 years there could be 1 ton of plastics in our oceans for every 3 tons of fish. Stemming the Tide reveals that a whopping 60% of the plastic waste found in our oceans comes from just five countries: China, Indonesia, the Philippines, Thailand and Vietnam. While there is plastic pollution throughout the world’s oceans, concentrations of micro-plastics are highest in the five major oceanic garbage dumps. The North Pacific Ocean Gyre, an area the size of Texas that stretches from Tokyo to the US, is thick with plastic rubbish. Annual plastics consumption in Asia is set to increase by 80% to an astonishing 200 million tons by 2025. Despite the upcoming expansion of two Hong Kong landfills, we will run out of landfill space by the late 2020s.

Our city is a small, compact area in which large-scale recycling could be a role model for the world. Instead the government is about to build a 3,000-ton-a-day waste incinerator just off Lantau, a stone’s throw from some of our best beaches, a designated marine reserve and precious country park. Research by local action groups says the Integrated Waste Management Facilities off Shek Kwu Chau will use polluting technology, produce toxic ash, disrupt the marine habitat and destroy the environment.

Frightening plastics facts From computers and cell phones to bicycle helmets and hospital IV bags, plastic has helped society in countless ways. But for the sake of our health and that of the environment, we can no longer afford to treat it as a daily essential. In 2009 more than 60 scientists contributed to a shocking report, Plastics, the environment and human health, published in a themed issue of Philosophical Transactions of The Royal Society B, a scientific journal. The report reveals that we are exposed to toxic chemicals from plastic multiple times per day through dust, air, water, food and consumer products – and that plastic is harmful to human health. Chemicals absorbed include bisphenol A (BPA), found in polycarbonate bottles and the linings of food and beverage cans. According to the report, high exposure to BPA increases our risk of heart disease and diabetes, and potentially damages the developing brain and reproductive system. Meanwhile, the plastics industry maintains that its products are safe. Plastic waste, which can survive for thousands of years in water, is (literally) endangering the world’s wildlife, too. More than 180 species have been documented to ingest plastic debris. If the plastic wraps around their necks or intestines, animals, birds and fish suffer an agonising and

lingering death. If not, the chemicals concentrated in the plastic kill them anyway. If a poisoned creature is eaten by another, toxic chemicals are transferred to the food chain. Approximately 1 billion seabirds and mammals die each year after ingesting plastic. According to DB resident Gary Stokes, director for South East Asia at Sea Shepherd Global, plastic pollution is one of the reasons that Hong Kong’s Chinese White Dolphins are an endangered species. “Pollution, coastal development, overfishing and increased boat traffic off the coast of Lantau threatens to wipe out the species entirely, or at best drive them away. Sightings have diminished rapidly in recent years, from an estimated 160 in the early 2000s to just 60 today.” Plastic pollution on Hong Kong’s beaches is a constant but the issue was brought home to all of us in July 2012, when a ship lost six containers in Hong Kong waters, each one loaded with 1,000 25-kilogramme bags of preproduction plastic pellets. These tiny plastic beads or nurdles (along with full and empty bags) immediately started showing up en masse on the southern coast, mainly along the beaches from Lamma to the eastern side of Lantau and the islands in between. “The morning after the storm, Sam Pak Wan at DB North Plaza was covered with nurdles – it looked as if it was blanketed in snow – and there were knee-deep piles some 0.5 metres deep,” recalls Tracey Read, a DB resident and founder of Hong Kong eco-charity Plastic Free Seas.

Reduce, re-use, recycle At supermarket checkouts the world over, plastic bags are thrown at customers too lazy or ill-informed to bring their own re-useable bags. In Hong Kong, even fruit and vegetables are plastic-wrapped, making the 50cent charge for a bag at the checkout a cynical joke. We’re sleepwalking through this urgent issue. 

Express concern about people’s inability to move away from plastic, and the stock response is a need for education. My own indignant riposte reflects the endearing American maxim: ‘You can’t fix stupid’. Many societies boast close to 100% literacy and through the internet we have access to more information on the environment than the visible universe has bright lights. More education? How about a thump around the ears with a blunt instrument.

Meanwhile, smart as we are, we cannot come up with a harmless and viable replacement for plastic. Is this inability to do anything constructive due to short-sighted thinking, pigheaded denial or something deeper and dystopian? Consider this 2013 Huffington Post report: “It takes three times the volume of water to manufacture one bottle of water than it does to fill it, and because of the chemical production of plastics that water is mostly unusable. In the US alone, we use 17 million barrels of oil each year just to produce all of those water bottles. To put it in perspective, that’s enough oil to keep a million cars fuelled for a whole year. The Earth Policy Institute factors the energy used to pump, process, transport and refrigerate our bottled water as over 50 million barrels of oil every year. That’s an insane amount of resources for something that is completely unneeded.” This is the Information Age, light years away from a Golden Age of Wisdom, but we must address sustainability, making plastics more easily recyclable and increasing recycling availability. We need to regard plastics as raw materials rather than waste. Increasing the availability of biodegradable plastic, which can be made from (renewable) plants, such as corn and soy, is another option.

Is it worth recycling plastic in DB? Fortunately, yes. Plastic disposed in separation bins (found all over DB) is taken to the rubbish sorting station across from the Mui Wo/ Peng Chau Ferry Pier. Before being exported, the plastic is either cleaned and shredded, or sorted and baled. The lower quality plastics are not in demand, however, so reducing the amount you use, especially singleuse plastic such as water bottles, bags and take-away coffee cups, is the best solution. health issue. THE TAKE OFF

Taking students to a specialist summer camp in Montreal, Canada is just one of the ways iGym founder Kim Doherty is upping the gymnastics bar in DB. Carlos Magno reports

A

t the end of the month, 11 teen gymnasts from iGym Gymnastics are headed to Montreal, Canada for the annual GymRep summer camp. A unique outdoor training site, led by top coaches from Canada, the US, New Zealand and France, GymRep specialises in acrobatic gymnastics and its 11,000-square foot gymnasium contains the largest collection of gym equipment ever gathered under one roof.

Introducing DB students to GymRep is something of a natural progression for iGym founder Kim Doherty, herself a former South African national gymnast (1989 to 1991) and 1990 World Games competitor. Over the past two years, Kim has made it her mission to grow the sport locally and bring her students’ skill sets up to an international standard. From an initial group of only 27 in 2014, iGym is now a near 300-strong family ranging from toddlers to teens. While Kim holds a Level 1 Federation of International Gymnastics (FIG) coaching certificate, she employs an international coaching troupe of former county, regional and national squad gymnasts to help up the bar for DB gymnasts. And all the high-calibre coaching, out of Discovery Bay International School (DBIS) Sports Hall, is paying off. In May, nearly 200 iGym gymnasts competed in their second interclub competition, supported by the Hong Kong Gymnastics Association. “All the gymnasts performed amazingly well,” says

Kim. “The level was incredibly high this year. I think everyone had a great time with lots of smiles all round.”

Teachers of tomorrow “We try to instil a passion for the sport and encourage teaching in a way that brings out students’ best,” Kim adds. “It’s important that the classes are a lot of fun. We want kids to love gymnastics.” This ethos is being born out in the weekly iGym summer camps running through July 14 at DBIS. Designed for kids aged three to 15, from beginner

standard to advanced, the courses combine gymnastics with dance, team-building activities and even arts and crafts. All this goes hand in hand with Kim’s desire to train up not just prize-winning gymnasts but future teachers. As part of its vocational training programme, iGym offers students an opportunity to work out their Hong Kong Award for Young People (HKAYP), with 10 hours of community service devoted to teaching children. “This generation will be the teachers of tomorrow – you have to instil passion and love into the sport, otherwise there won’t be any teachers,” Kim says. “They don’t have to be elite gymnasts to be teachers. They just have to love the sport. The passion, you can’t learn as an adult. You have to learn it now.” It’s likely that a number of iGym students will follow in Kim’s footsteps, just as she has followed in those of her mother, who was also a South African national gymnast (1960 to 1964). “I’ve done gymnastics my entire life,” Kim says. “My mother ran a gymnastics school and I grew up in the gym. When I opened my very first gymnastics school (a tumbling school in South Africa) I was 22. I just love the sport.”

Some days as a working mum, you just want to put an ‘out of order’ sticker on your head and go back to bed. But then sanity returns because you have priorities and commitments. Trisha Hughes reports

orking mothers know that no day is ever the same. Forrest Gump was right when he said, “Life is like a box of chocolates, you never know what you’re gonna get.” Either you have nothing scheduled at all, or you have everything happening all at once. Balancing a busy work life and the challenges of a family schedule is never easy. In fact, it can be a nightmarish circus at times, as you juggle priorities and needs. There always seems to be something to do and never enough time to do it in.

It’s been quite a while since I was in this situation but the memory is still vivid in my mind. What I remember more than anything is the uncertainty. Am I doing the right thing? Is my family happy? Am I really managing? What I know now, in retrospect, is that these guilty emotions are just part of the whole trip and the worst thing you can do is compare yourself to other mothers, working or not.

talk to other working mums and learn from their experiences. This can also, of course, help with getting that allimportant job in the first place. As two-year Cheung Sha resident and mother of one, Marie Swarbreck says: “Becoming a mum changed my priorities and career path; I started looking for a flexible job, which I couldn’t find. After speaking to many mums around Hong Kong, I quickly realised that I wasn’t the only one in this situation.” Faced with this dilemma, Marie set up FLEXImums

Nobody juggles as many responsibilities as a mum does; we are the queens of timemanagement,” says Marie. “Lots of SMEs and large corporations realise this and are looking to get mums back on board. “One thing I have found is that a mum is only successful at her job when she really enjoys what she does,” Marie adds. “Going back to work is never easy and it takes time to adjust but in the end it gives you a feeling of fulfilment and accomplishment.” Sometimes being a working mum is frustrating and challenging. Other times, all you need is a kiss and a hug to know that you’ve absolutely made the right choice. You’re teaching a hard life lesson to your children – that you don’t get anything without working for it. Everything has to be earned by work and persistence, and through that hard work come the rewards. But along with that glow of satisfaction, comes weariness. There’s always weariness.

What most women forget is that they need to think of themselves every now and then. A car can only run on fumes for so long. It needs to be refilled or it stops running altogether. You as a mother can’t continue to be everything to everyone because eventually you will break down too. Take time for yourself, to rejuvenate, to make sure you are not lost, like that one sock in every single wash, while you try to hold everything together. Trust me, almost everything will work again if you unplug it for a few minutes… including you.

Finding the balance As often as not, helpers are the circuit breakers that can make life so much easier in a world that sometimes feels like it is spinning out of control. They release you from some of the burdensome tasks and leave you with the part that your kids will look back on in the future, knowing that everything you did for them was fuelled by love. Mother of two, Jennifer Atepolikhine grew up in Hong Kong and has been a DB resident on and off for 20 years. “Having a loving and trusted helper at home has made all the difference, it would be impossible to work full time

and raise young children without one,” she says. “I’ve been able to travel on business trips and spend long days in the office confident the children will be well taken care of.” Jenn has been a working mum since her first child was born in 2004, and her current job, promoting E racing, is turning out to be the best fit yet. “I get a lot out of my job as it’s social and it stimulates me intellectually,” she says. “Working with race teams and the race organisers is incredibly challenging and interesting. The guilt of not spending enough time with your children never leaves you though, as well as the feeling that you’re not spending enough time on work. Finding the balance between the two is the hardest part.”

Having it all Speaking of balancing acts, mother of one Jessie Yue Wright, a four-year DB resident, is currently managing a home, while preparing to take a Master’s degree in psychology at the University of Hong Kong. She also runs a homegrown business, Woodable, with neighbour Kristy Yeung. The friends work with artists across Hong Kong to create bespoke furniture, decorative pieces and pottery. 

Expanding is always on my mind but until I find more help, I also need to balance my time being a mum and student,” Jessie says. “Many times, when I think of stepping forward in my career, guilt slinks in. Am I doing enough for my daughter? Am I too greedy and selfish if I want to build something for myself and a happy family at the same time? Am I a bad mother? Do I measure up to other parents? These are the frequent guests that visit my mind, especially when I put my need and desire first.” Whether you are pursuing a career out of financial necessity or personal choice, being a working mother can be all about guilt. When your child acts out or doesn’t cooperate, or if he cries when you call him from your office, it’s

very easy to think that you are doing something wrong. Happily though, this tends to get easier as children get that little bit older. “I find now that my daughter actually looks up to me. I share my dreams with her and she is proud of me,” Jessie says. “A little tip: don’t hide your guilt and need. It might sound clichéd but a problem shared is a problem solved. It’s nice to want things for yourself. Once in a while put yourself first. Go ahead and take the first bite. It will only make things yummier. Be busy and share your passion. You will raise

motivated minds just like your own.” So for all you working mums out there, remember the Doe Zantamata maxim: ‘Some days are better. Some days are worse. Look for the blessing instead of the curse. Be positive, stay strong, and get enough rest. You can’t do it all, but you can do your best.’ Be proud of yourselves. You do everything you can because you want your children to know that those dreams you dared to dream are not just ‘somewhere over the rainbow’. They are real and they do come true.

Homeopathy is a complementary medical system that was developed in Germany more than 200 years ago. Mina Weight picks out some essential, all-natural remedies for your next family vacation

W

ith the holidays approaching, you are likely looking forward to a stressrelieving, sickness-free summer break. But how well does your family travel? As you get busy planning your flights, accommodation and activities, you’ll

also need to consider which medicines to pack in your first-aid kit. I have been practising homeopathy since the mid ‘90s and whether I travel alone or with my husband and children, I always find room in my suitcase for the homeopathic

remedies we most frequently use. Natural and free of side effects, homeopathic remedies can quickly ease mild discomforts, such as jet lag or sunburn, and they don’t conflict with conventional treatments for more serious ailments, such as sunstroke. These easy-to-take


TALKING POINTS remedies are inexpensive and small enough to carry anywhere. Suitable and safe-to-use for the whole family, homeopathic remedies are usually chosen based on the person’s constitution and how the symptoms were experienced. The basic premise is that ‘like cures like’ – a substance that causes the symptoms of a disease in healthy people can cure similar symptoms in sick people. Homeopathy can be used to address numerous minor ailments from motion sickness, jet lag, vomiting and diarrhoea, to sunburn, cuts, insect bites and sprains. It is also effective in treating chronic physical and emotional problems, including psoriasis, eczema, migraines, backache and asthma. In serious cases, immediate medical attention is recommended, of course, but homeopathic remedies can still be used to speed up healing time. For convenience, homeopathic travel kits are available at most natural health retailers, including the Integrated Medicine Institute in DB. Two useful remedies that I never travel without are Nux vomica for constipation and Arsenicum album for food poisoning.

Nux vomica Travelling abroad, many of us suffer from constipation. Out of your normal routine, getting used to different time zones and not eating your usual diet can contribute to the problem. Resorting to laxatives is common but ill-advised, as the body can become dependent and either take a while to return to normal or, worse, find it cannot function independently. Before resorting to any kind of medication, however, the best approach is to increase the amount of fibre in your diet by eating more wholegrains and fresh fruit and vegetables. Drinking more water, exercising and even certain yoga postures can also help get your bowels moving. If these

common sense approaches don’t help and constipation persists, homeopathy can come to the rescue. Nux vomica, created from the seeds of the strychnos nux vomica tree, is a commonly used homeopathic remedy for constipation, indigestion and bloating. It is also a great detoxifier, and can help alleviate hangovers and irritability. My neighbour’s two-year-old son was brought to me when he went through a frustrating and uncomfortable period of constipation. He would go for days between bowel movements, and gradually became more and more distressed and irritable. A couple of doses of Nux vomica given over a few weeks had the desired effect, returning his bowel movements to normal regularity. Now his mother always knows what to give him if the problem returns.

Imodium is a commonly used, over-the-counter medicine for mild food poisoning, however, it may not be suitable for children unless prescribed by a doctor. Possible side effects include tiredness, bloating, nausea and constipation. As a childfriendly homeopathic alternative, I recommend Arsenicum album, a solution prepared by diluting aqueous arsenic trioxide until there is little or no arsenic remaining in the solution. This can alleviate symptoms quickly and effectively.

A few months ago, I treated my helper’s friend with Arsenicum album. She had collapsed in the bathroom and was vomiting violently and also had diarrhoea. After a dose of Arsenicum album, she was able to lie down and rest between trips to the bathroom. A short while later, I administered a second dose after which she fell asleep and slept for four hours. When she awoke, although weak, she felt much better.

No matter how thrilling or exotic the destination, some travellers find themselves spending more time in the bathroom than out in the sun. A mild case of food poisoning usually lasts 24 hours. In serious cases, such as salmonella poisoning or rotavirus, the symptoms may be more severe and last longer.

When getting over food poisoning or any minor health issue, be sure to rehydrate by drinking lots of fluids and eating plain, simple foods. This is particularly important if you are vacationing in a hot country, so be sure to pack some rehydration salts along with your essential homeopathic travel kit.

SALAD DAYS Fresh and healthy fruit salads, combined with leafy greens, are simply super for summer, and look every bit as good as they taste. Jane Drew provides some essential recipes

S

uper for summer, salad is an incredibly versatile dish, involving much more than crisp lettuce and sliced tomato. A great way to use up leftovers, you can toss almost anything into a salad, in much the same way as you would a sandwich, and with far more delicious and nutritious results. Mix chicken, hard-boiled egg, bacon and avocado with green leaves and you have the basis of a classic Cobb salad. The basic ingredients for Salade niçoise – tins of tuna, anchovy and olives – are likely right there at the back of your kitchen cupboard. As inventive as we are with our salads, combining fresh leaves with fruit is still something of a rarity for home cooks. So take a look at these four classic recipes for some inspiration. Derived from Spain, England, Thailand and Mexico, they work equally well as a side dish or main course and are deliciously easy to make.

4. Pare the skin and pith from the lime, then chop the flesh into small pieces and put in the bowl, followed by the coriander leaves.

Method 1. Put the prawns in a large bowl and combine with the watercress, sugar snaps and arugula. 2. Trim the spring onions, halve them lengthways, then slice them on the diagonal into small pieces and add them to the bowl.

To make the dressing, whisk together 3tbsps Thai fish sauce; juice of 1 lime; 1tbsp caster sugar; 1 medium red chilli, chopped; 1 thumbnailsized piece ginger, chopped; 1 large clove garlic, chopped; and 3tbsps groundnut oil. 6. Spinach and strawberry salad This classic English recipe serves four. A delicious vegetarian option, you can also beef it up with the addition of pre-cooked langoustines, prawns or chicken. Remember pepper brings out the flavour of strawberries, in much the same way as salt does wonders for pineapple and watermelon.

Prawn and mango salad This recipe serves four and immediately brings a touch of Spain to your table. The slightly sour arugula contrasts well with the sweet mango and prawn but you can use any leafy green. Just be sure to get the balance right – don’t overdo the serving of fruit.

Spicy papaya salad This tasty Thai recipe serves two and is best combined with sticky rice and larb, a spicy minced meat salad with raw vegetables. If you can’t find green papaya, substitute with turnip, courgette or cucumber.

Ingredients • 2tbsp peanuts, crushed and toasted • ½ piece palm sugar

Quick guacamole This takes five minutes to make and works well as a starter for four people (with nachos or crudités) or as a rich salad dressing. Cut and halve 4 avocados, remove the pits, and scoop the flesh into a large bowl. Immediately add 3tbsps lemon juice; 1 small red onion, chopped fine; and 1 large garlic clove, minced. Season to taste and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add 1 medium tomato, seeded and diced small. Mix well and season to taste – add a splash of hot pepper sauce for authentic Mexican guacamole with a kick.

• 1-2tbsp green beans, roughly chopped • Juice of ½ lime • 1½tbsp fish sauce

Method 1. Roughly crush a small handful of unsalted peanuts with a mortar and pestle. Toast in a dry pan over a medium heat for 5 minutes, until golden brown. Set aside to cool. 2. Melt the palm sugar in a small pan at low or medium heat, adding a splash of water, to form a thick syrup. 3. Peel the papaya, shred it into thin strips and soak in cold water. 4. Gently bash the chillies and peeled garlic with a mortar and pestle. Add the shrimp and continue bashing. Add 1tbsp peanuts and mix well – you need to see bits and pieces not a purée. 5. Add the shredded papaya and continue bashing gently, so the mixture soaks up the flavours. 6. Add the liquid palm sugar, tomatoes, beans, lime juice and fish sauce. Continue to lightly bash, and mix well. 7. Sprinkle with the remaining peanuts to serve.

TIME OUT IN CAMBODIA

With five days ‘templing’ by bus and bicycle, and two days partying at the hotel pool, a week in Siem Reap is a lot of fun, says Jason Pagliari

iem Reap in Central Cambodia, the doorstep to the iconic ruins of Angkor, might seem a bit of an unknown and too remote for a short break, suitable only for an Indiana Jones-type archaeological expedition. In fact, this top holiday destination is now only a two-hour, 10-minute direct flight away with our own, low-cost carrier HK Express. This makes the town perfect either for a long weekend with a day or two of ‘templing’, or as a longer stay base from which to explore the country. Angkor’s ancient temple complex, the seat of the Khmer Empire from the 9th to the 15th centuries, is of course the highlight of a Siem Reap visit, but with

plenty of good hotels for all budgets, a relaxed atmosphere and friendly locals, not to mention a buzzing restaurant, bar and live-music scene, you can’t really go wrong. The food is top-notch – both the local Khmer fare (think Thai meets Chinese) at the numerous roadside cafés and the fine dining options downtown in trendy Pub Street and Night Market Street. Most transactions are made in US dollars, with the local riel only used as small change, and the good news is that just about everything in Cambodia is cheap. A taxi anywhere in the town costs you just US$1 (HK$7.8). What’s more, local internet connectivity is pretty amazing, with free wi-fi on tap almost everywhere and cheap 4G

Getting your bearings Siem Reap means literally Thailand Defeated, a reference to a thwarted invasion of Cambodia by the Thais, thought to have been in the 14th century. The town was just a village until the early 19th century when the rediscovery and renovations of the Angkor temples by French archaeologists expanded it into a service hub and an exotic travel destination for the well-to-do. Slowly Siem Reap has evolved into a lively and relaxed tourist mecca, still relatively unspoilt and without the excesses of neighbouring Thailand.

Five kilometres from the town – where you’ll find old-colonial, Chinese-style low-rises dotted along Siem Reap River – is mighty Angkor, one of the most important archaeological sites in South-East Asia. Stretching over some 400 square-kilometres, including forested area, there are upwards of 16 Buddhist and Hindu temples, with plenty more accessible by car or bike. Key sights include the famous temple of Angkor Wat and, at Angkor Thom, Bayon temple with its numerous face towers and elaborate bas-reliefs.

To begin your Angkor explorations, don’t think twice about taking a fullday shuttle-bus tour of the major sites. This allows you to cover a lot of ground in one day (accompanied by a

At the four main gates, you are confronted by two 23-metre towers from which enormous stone heads, with four faces pointing in each direction, stare out at you. water-buffalo inhabited moat. It can get a bit overgrown in places, so you need a semi-decent mountain bike for this one. Explored by few tourists, it’s a real gem. It takes about half an hour to cycle from downtown Siem Reap to the first spectacle, the majestic Angkor Wat. You then continue onwards to the South Gate of the 10th century, walled and moated city of Angkor Thom just 2 kilometres north. Follow the dirt track past Bayon temple, the Baphuon pyramid and the smaller, off-the-grid temples to the northeast. Then, bike it through the Terrace of the Leper King, the Terrace of the Elephants and out the East Gate towards Ta Prohm (now known as Tomb Raider Temple), with its giant trees growing on top of

the ancient walls and sublime sense of mystery. You’ll want to do this trip more than once, taking different routes to cover Preah Khan to the north and the temples of the East Baray. Sunset at Phnom Bakheng temple, on the only hilltop for miles around, is something to experience on the way back into town.

Venturing further afield In the event of ‘temple fatigue’, there are plenty of other activities in and around Siem Reap to keep you occupied. Consider zip lining, horse riding, quad biking or testing your skill on the world-class golf course. Make a point of visiting the floating

villages of Kompong Phluk and Chong Kneas, which are a little like inland Tai Os. Further afield, the leafy, riverside town of Battambang, three hours’ drive to the west, is worth heading to for a few days for its colonial-era charm, and the unspoilt beaches of Sihanoukville province in the southwest are just an hour’s flight away on Cambodia Bayon Airlines. It’s the ancient history and diversity of experience on offer that makes Siem Reap, and Cambodia as a whole, suitable for all – backpackers, families and partygoers, as well as history buffs. hen you think Discovery Bay, it’s not often, if ever, you think water sports, with other parts of Lantau more renowned for their beaches. But there is more happening here than you think, with sailing, paddling and rowing all common and more and more kiteboarders seen in the bay. The reality is, though, if you’re looking for a day at the beach with a kayak, stand-up paddle board (SUP) or surfboard, you will be well served to

look to the likes of Pui O or Cheung Sha beaches.

Kiteboarding explosion While sailing, rowing and paddling have all long been popular in DB, kiteboarding is just taking off. The sport is continually growing in Hong Kong and the waters of Discovery Bay are proving to be the perfect playground for expert-level kiteboarders. “Because there is open space and less people do kiteboarding in the

area, it is ideal,” Keith Tang from the Kiteboarding Association of Hong Kong (KAHK) says. “Also there is deep water, you won’t have any problems with rocks.” Beginners, though, should beware of the DB waters – and winds. “You need east directional winds and the wind speeds must be high, around 13 knots constantly, and static, not dropping out,” Keith says. “If the wind changes a little bit to the south, the mountain will block the wind. If the winds suddenly drop a bit, you need to swim back to

the beach. I highly recommend against it for beginners.” It is for these reasons only experts grace the waters of DB and there is the notion that they would like it to stay that way, keen as they are to keep their space just for themselves. That’s not to say there’s not plenty of fun to be had for beginners and intermediates on Lantau, with KAHK offering all sorts of options out of its two main bases, Shui Hau Wan and Pui O. There is quite a bit

of gear involved and costs can add up, so Keith offers hire on everything required for those looking to try their hand before committing. Pui O Beach and Shui Hau Wan are both perfect places to learn, with KAHK even providing a jet ski to ensure beginners can access the right areas to get just the winds they need. Shui Hau Wan in particular is a learner’s paradise, while the choppier waters off Pui O offer a little more action for those starting to find their feet.

“There are not many people using the beaches for swimming and there is no ferry,” Keith says. “And the water is not deep so people can always stand.” To add to the momentum the sport is gaining, it has recently been added to the 2018 Youth Olympic Games, with an eye to it becoming an Olympic sport at Tokyo in 2020. After almost making the cut for the Rio de Janiero Olympics this year, it is clear the only way is up for this exhilarating pursuit. 

Lantau delivers Some of Hong Kong’s best beaches are on Lantau and in summer a mixture of locals, expats and tourists alike converge on Pui O and Cheung Sha beaches. There is nothing like a day at the beach during the warmer months and there’s plenty to do besides wallow in the shallows. SUP has been one activity to increase in popularity on Lantau over the past couple of summers and the traditional kayaking is still a hit. One of the reasons SUP has garnered such a following on Lantau is its simplicity and convenience, requiring only a long board and a paddle. As far as relaxing water sports go, it is at the top of the list and people are finding more and more uses for their board. “We get people coming out here and doing yoga on the stand-ups and all sorts of stuff,” Treasure Island programme leader Nick Tilley says. Treasure Island at Pui O offers SUP, kayaking and more, including a host of surf and adventure camps that give kids a great grounding around water. The surf camps are for kids aged from five to 12, while the adventure camps are designed for children aged eight to 13. “On the day, they do a mixture of all sorts of water skills and I guess the big thing is water confidence and creating new friendships,” Treasure Island programme manager Grant Whitehead says. “The adventure camp programme is designed around giving the kids a whole lot of outdoor pursuits.” Wind surfing is also a popular Lantau pastime and was the forté of Cheung Sha Beach-based company Palm Beach, which is currently closed as it searches for a new site from which to run its operations. Another provider is Long Coast Seasports, located at Lower Cheung Sha Beach, which

According to the Hong Kong Government rating system, which rates water quality of beaches as good, fair, poor or very poor, all of Lantau’s beaches are either good or fair, putting them on par or ahead of others in Hong Kong. 1997 AND ALL THAT Demanding some changes on Hong Kong Special Administrative Region Establishment Day, Peter Sherwood suggests we start with a pink bauhinia

uly 1 is the anniversary of the handover of Hong Kong to China in 1997. There was another historical British occasion (and an unsurpassed disaster) on the same day a century ago – the massive 1916 British offensive against German forces near the River Somme in Picardy, northern France. Some 20,000 British soldiers were killed and 40,000 wounded; the single heaviest day of casualties in British military history.

Instead of a yawning world being presented with fireworks, yet again, I’ve been pushing for something more original to make international headlines on our special day. For instance, we could give the millions that go up in sparkling pollution to Hong Kong’s poorest. In this filthy rich city of every known excess, an estimated 1.2 million people live in dire poverty. From 15-square-foot enclosures known as coffin homes to cage homes, which resemble livestock

coops, our low-income housing leaves a lot to be desired. Helping people out of destitution might not pack a pyrotechnic punch – no matter how stale and shabby – but at least we’d feel better about ourselves.

Pomp and circumstance While penury is an accepted human madness, can we (please) dispense with all the contrived, faux nationalistic pomp and circumstance that seeks to stimulate a patriotic frenzy? The Brits do that stuff really well – we’re just playing at it. And no one, who is not paid to be, is impressed. Note to the government PR unit: Stop it. You’re trying too hard, and apart from a day off work and explosions filling the damp atmosphere, your offering is pretty tiresome. And change the name. Hong Kong Special Administrative Region Establishment Day does not exactly

I hear that this year’s pageantry will include a riveting flag-raising ceremony guaranteed to get the masses fighting for a vantage point, while the ‘sketching and painting activities’ will garner feverish media excitement. Visitors are invited to ‘partake in the festivities’ (provided they don’t suffer from a cardiac condition that could be exacerbated by nationalistic hysteria). I’ll be taking it easy – in a bar somewhere.

And the flag – get rid of it, it’s beyond dull, as is the statue in Wanchai’s Golden Bauhinia Square. The real Bauhinia is a lovely, local orchid. It’s time to give our emblem some natural colour, or would a pink bauhinia look too feminine and upset the anti-gay movement across the border?
