ISLAND DANCE END-OF-YEAR SHOW

Island Dance held its biggest annual event, the three-day end-of-year show, over the weekend of June 22 at the Y-Theatre, Chai Wan. At Dolphin Quest on September 8, Lantau Boat Club Paddle Section brings together Hong Kongâ&#x20AC;&#x2122;s seven paddling clubs to make the 72-kilometre round trip of Lantau in six-person outrigger canoes. Members of the DBIS Harry Wright swim squad took part in the 42 Mantas Invitational Meet at the Hong Kong Sport Institute on June 16 and 17. With successes in both the league and the HKFC Citi Soccer Sevens, Discovery Bay Football Club (DBFC) is riding high. Legal League team manager Gary Rollinson tells us more about the club

BFC is one of the longest-running sports clubs in DB. When did things kick off? It all began in 1991, when DB resident Andy Brooks started organising friendly 11-a-side games under the banner of Discovery Bay. This continued from 1995 under the watch of fellow DBer Mike Collier until Robin Armstrong, also a DB resident, took charge in 2007. Robin then started to organise regular midweek evening and weekend 7-a-side games and tournaments in DB.

How has the club evolved over the years? In 2008, Robin formed a 7-a-side veterans touring team to play in the 2009 Manila International Soccer Sevens. The team was called Discovery Bay Rowdies, and they went on to win the tournament. This success led to an invitation from Hong Kong Football Club to participate in the prestigious Hong Kong tournament, and that was when the DBFC name was used for the first time.

Since then, the club has expanded to comprise over 80 members across three teams – the Legal League team (age 16+), who play in the First Division, the Veterans (age 35+), who play in the Legends League, and the Seniors (age 45+), who focus on social games. The team comprises talented players from across DB and Hong Kong. How has the network grown? DB residents are the backbone of our club, with local people from all walks of life acting as managers and/ or players. However, with the club’s growth came the need for a larger pool of players, so the network has now stretched to other parts of Hong Kong. This is important due to the transient nature of expat life. You’ve enjoyed a number of fantastic successes recently. How has that boosted the club? The 2017/ 18 season saw the Legal League team fall just short of retaining the League and Cup

Comprising a mix of regular DBFC players and experienced ex-professional players, the team, managed by DBer Tim Bredbury, put in an incredible performance, winning convincingly without conceding a single goal. The long goodbye Lantau legend Jacqui Green is going home to the UK, and leaving a gaping hole in animal rescue when she does. Elizabeth Kerr reports

acqui Green barely had the patience to hide what she was really thinking when it was in her and animal rescue organisation Protection of Animals Lantau South’s (PALS) best interest. Now, as Jacqui prepares to return to her native UK for good, she has none. “Nothing is private in social media,” she mentions of a ‘private’ message a niece posted on Facebook a few weeks back. “If I can see this stuff, so anyone can. I’ve got Facebook because of PALS, but… there’s a big message that says contact me on WhatsApp. Not a week goes by I don’t get a message about how someone sent me a Facebook message. What part of ‘don’t message me here’ do people not understand?” Jacqui gives her tousled silver head a shake and rolls her eyes. She sounds like a crank – the neighbourhood curmudgeon. It would be easy to make jokes about her standing at her front door with a rifle shouting at the kids to get off her lawn, but that would be a disservice to the nearly 40-year Hong Kong resident who landed here on an adventure in 1979 and went on to set the standard for animal rescue on Lantau. Closing the book It’s a dull, rainy morning when Jacqui sits down at a corner table in a DB eatery and orders a pot of tea, which she promptly loads up with brown sugar. She’s getting ready for a short, penultimate jaunt

back to the UK to check on the state of her house renovations.

more than just picking up strays and spaying them.

“Yes, I am leaving for good,” she declares with a combination of wistfulness and relief. “I’ve seen the writing on the wall as far as Lantau is concerned. There’s a big difference in the Hong Kong civil service and in civil servants – the lack of initiative is distressing, the contracting out. We can’t even get rubbish picked up. It’s a small thing. But when you add all those small things up, it feels like one step forward two steps back.”

“To run PALS, you’d have to live in South Lantau, and ideally you don’t work. It’s very hands on – trapping and fostering and so on. I’m finding the physical side of it very hard now, and I can’t do it the way I could years ago. I’ve got 11 animals at my place, which is too many,” she laments. It may be a fulfilling job, but it’s not without its downside.

“It’s too stressful, too time consuming, too physically taxing. There’s a lot of politicking that goes on, and it’s true: You can’t please all the people all the time,” she comments, referring to her support of less popular, media-unfriendly animal welfare positions, like euthanasia. “People don’t understand about homing. Unless you want overcrowding and animals suffering, euthanasia is an alternative. It’s quite contentious. “Everyone is making a fuss about my leaving but no one seems to be stepping into the void,” she adds. Animal activism

What Jacqui sees as massive changes for the worse in the SAR have finally taken their toll, and she’s throwing in the towel. With it, unfortunately, goes PALS. The driving force behind PALS for the last 20 years, Jacqui isn’t passing on the mantle – there’s no one to pass it to. Essentially a onewoman show now, PALS is much

PALS was a crucial service 20 years ago when there were no other organisations on Lantau to pick up the abandoned and abused animal slack from the SPCA, but there are more groups chipping in now, notably Hong Kong PAWS Foundation (PAWS). 

So, what kicked off Jacqui’s activism in the first place? “The animal rescue thing raised its head when I started living in Lantau full time some 20 years ago,” she says. “I’d see kittens in rubbish bins and puppies in paddy fields or cardboard boxes. Founding PALS wasn’t intentional; it just started in a very small way and escalated.” Aside from rescue and re-homing, Jacqui’s mission has been to put an end to the way unneutered, mistreated guard dogs are abandoned and left to proliferate at construction sites – like Disneyland and Ngong Ping. And there’s no doubt she’s made a legislative difference. PALS’ 2016 LegCo petition for more strident puppy and kitten mill laws (tougher regulations for breeders) was passed last March and came into effect last June. “So, the animal trading farm rules have been tightened up with regard to breeders,” she points out. It only applies to dogs currently, but it’s a start. Of course, without a wholesale shake-up of how people view pets, the law’s efficacy will be limited. Jacqui bristles at the very thought of animal returns: “PALS has quite a detailed questionnaire that tries

to prevent such an event but we are constantly being asked to ‘re-house’ pets that have come from other sources. The reasons are endless and not a single one surprises me anymore. I’m not the most tactful and I have gotten abuse [for calling out slack pet owners].” Jacqui also laments that so many of the people looking to home animals now want pedigrees. “It’s like we’re going backwards,” she says. “There are so many local dogs that need homes and they’re not getting them. And you can’t keep rescuing if they’re not going out.” A new chapter Lantau will miss Jacqui, there’ll be no more PALS Homing Days in DB Plaza, but she’s at peace with packing it all in. “I don’t think this is an old person’s place,” she reasons. Coming up on her 67th birthday, Jacqui’s earned the right to kick back. Ask if she’s going to restart her animal-rescue activities back in England and the question elicits a quick, “No.” Fight her on that by suggesting she’ll be bored and the response is a confident, “I’ve never been bored in my life.”

She’s going back to an old house currently under renovation, which means ongoing projects. The house comes with a big garden that Jacqui fully intends to play around in. “There’s plenty to do,” she scoffs. As Jacqui gathers herself to make a dash to the bus in the rain, she reflects on a lifetime in Hong Kong, and how she’s now more familiar with Asia than with Europe. She’s aware time moves in one direction, and though she’s quick with her clear-eyed criticism, Hong Kong has been home long enough to earn a bit of philosophising. “I wanted to finish [with PALS] two or three years ago, so I could have a bit of time to myself in Hong Kong. I wanted to revisit so many places in Asia – even though there are very few places I haven’t seen, and I know they’re totally different now,” she admits. In typical, unpretentious Jacqui fashion, she reaches into a plastic pharmacy bag instead of a wallet as she offers to pay the bill. It’s unclear if she’s talking about heading home to feed the animals she’s still fostering or the UK when she makes her last comment. “It’s time.”

avigating Hong Kong's healthcare system can be a headache and exhausting. The private sector offers numerous options and luxurious perks but comes at a very high price. The public sector, subsidised by the government, provides healthcare to Hongkongers (including Temporary Hong Kong Residents) at a very low cost. However, the public sector faces a number of growing problems, including overcrowding, long waiting lists and excessive bureaucracy.

With this in mind should we all be looking into private health insurance? And if the answer is yes, can we afford it? What will it cost you? As of 2017, Hong Kong again ranked as the second most costly country in the world for private medical insurance, after the US. Surprised? Well not really. As Harry Amende of ALC Health (Hong Kong) explains, “Hong Kong is an expensive place, costs can be expensive, so medical

insurance pricing has to take this into consideration.” In addition, the standard of healthcare in Hong Kong is very high, especially at the private facilities. “Higher medical costs come with higher insurance premiums,” notes Jonathan Quach of Bupa Global. Due to the large expatriate community, who prefer private care due to the personalised service and shorter wait times, the medical care cost per individual has risen, thereby increasing insurance premiums,” adds Daren Bayley-Hay, who at Baymac, specialises in providing customised insurance coverage to people in the aviation industry. Asked how much we are likely to pay for good coverage, Daniel Edmonds of Clements Worldwide says: “Each policy is based upon

the unique requirements of the individual or family, however comprehensive plans can be purchased for as little as US$160/ month for individuals and US$400/ month for families. Group plans are often discounted.” “When it comes to cost, the key is flexibility and value,” Harry adds. “Valuable inpatient coverage with a high deductible can result in very affordable cover. A family of four could expect to pay between US$10,000 and US$15,000/ year for mid- to high-end cover. The cost is largely driven by a person’s age, the benefits chosen and the area of coverage.” Jonathan suggests that anyone looking to invest in a scheme focuses on packaged plans that include inpatient/ outpatient services and preventative benefits. “You should also check out the annual policy limits,” he says. “Consider too, geographic coverage (worldwide, including or excluding the US), coverage for other family members (does the package include maternity?),

SAVERS and whether you’d be covered for pre-existing, mental, hereditary, congenital and chronic conditions.” Why an international medical plan? For people who travel a lot and, of course, expats, all four experts recommend International Private Medical Insurance (IPMI), which provides comprehensive healthcare cover at home and away. IPMI covers a multitude of areas from medical emergency cover, to doctors’ visits, maternity care and the treatment of ongoing or chronic conditions. It can also cover non-medical costs such as transportation (to receive treatment) or repatriation. “If you are venturing abroad you can get the care familiar to you in a language you understand,” Jonathan says. “IPMI also offers many benefits in addition to hospital treatment. Services including dental, optical, physiotherapy and chiroprachty can be covered, which allows you to be proactive in managing smaller health issues before they become bigger problems.” Harry adds, “Your health is your most important asset and should anything catastrophic happen in terms of illness, accident or disease – the right health insurance plan can make a world of difference when it comes to treatment and recovery. And, of course, it gives you peace of mind.” Daren raises a critical potential issue for those without IPMI.

“Healthcare costs are one of the key contributors to financial ruin. People often spend their entire savings, and sell assets if necessary, to cover costs of medical expenses for their loved ones where there is insufficient healthcare cover when needed.” The DB demographic IPMI would certainly seem the way forward for many DBers of my acquaintance. “Pilots and people who travel all over the world need a truly international plan and therefore should look into a portable healthcare plan,” says Daren. “You may also want the option to choose the best possible care globally, which you may be unable to obtain on some local plans. Additionally, you may have family and/ or children overseas who will require the benefits afforded by an international medical plan. “Medical emergencies do not discriminate against age. Families must be prepared for multiple cover requirements, from child immunisation costs through to aged care,” Daren adds. “You can cover your whole family with an international medical plan, and children under the age of 10 are generally free.” Stressing the importance of getting insurance when you are young and healthy, Jonathan says, “It is impossible to predict when you will need care, and staying prepared is the best step you can take for yourself and your family. There are also a range of wellness

benefits and preventive treatments included in global health plans for those getting cover at a younger age. “Some plans allow children to be born into policy, which means they are covered right from birth,” Jonathan adds. “You will have the assurance that should your kids have any emergency medical conditions or develop any health issues later in life, they will always have the protection they need.” Speaking of which, what are the ins and outs of maternity cover? “In the private sector, a standard delivery without complications costs in the region of HK$70,000, rising to over HK$150,000 for an emergency C section,” Harry says. “The best policies can cover the cost of complications during pregnancy even if you choose not to cover routine maternity costs, or if you join the plan in the early stages of pregnancy.” The fine print Generally speaking, insurance plans can be tailored to fit specific needs but it’s important to consider the fine print and how the exclusions work. “Typical exclusions that sometimes people are not familiar with are coverage for accidents or illness as a result of self-inflicted injury, alcohol or substance abuse,” Harry explains. Limits can also vary across insurers, plans and coverage options. 

By reading the fine print can we avoid this eventuality?

“Premiums increase with age as it’s a cost reflection of the chance that you’ll have more health problems,” Jonathan says. “Look out for products with level premium after 60 and automatic renewal, or for plans that allow for relatively small increases with increase in age.”

Harry agrees saying, “Some insurance providers only offer treatment in Hong Kong or have very low limits for various conditions. A second health insurance could be used as a back-up for serious injury or illness where an existing plan could fall short.”

Daren elaborates, “Some group plans do offer continued cover after age 70 with small increases in individual premium based on the overall group premiums, and with no additional medical tests or medical underwriting required. Others will require annual medical checks and may increase the individual premium or exclude certain conditions based on test results.”

It’s also important to note that in the majority of cases corporate insurance is yours only for as long as you are employed by the company. “This may leave you with the need to seek individual

insurance at an older age or in a time of need, by which time premiums may be higher or there may be exclusions for pre-existing sickness,” Jonathan says. “You can consider choosing a higher deductible or co-insurance when taking out a second insurance to reduce your premiums.” Last but not least, what’s the reality for people in high-risk jobs, for instance pilots – do they pay more for their coverage? “Careers can influence premiums simply due to the fact that everything we do on a daily basis affects our health in one way or another,” says Daniel. “However, in the case of pilots, even though their career is considered higher risk, they are required to have regular medical tests, which means they are a better risk from a medical insurance perspective.” My advice? Get yourself some medical insurance – don’t be a flight risk.

This month, many DBers are leaving babyhood behind and heading to kindergarten. To find out what they can expect, Suveera Sharma zooms in on three local schools

f there is one thing that is most frequently repeated by parents of small children, it is ‘they grow up too fast.’ In a blink of an eye, they grow from endearing babies to delightful toddlers, and before we know it, it’s time for them to go to ‘big school’ or kindergarten. Educators tell us that the Early Years are the most critical in terms of a child’s brain development and

learning, which makes choosing a kindergarten a huge and often stressful challenge for parents. Fortunately, Discovery Bay boasts a wide range of kindergartens, with diverse curriculums and approaches. Let’s take a look at just three of the options: Discovery Mind Kindergarten (DMK) by DB Marina, Discovery Montessori School (DMS) in DB North Plaza

A global perspective A priority for parents globally, and perhaps particularly in a multicultural enclave like DB, is that their kids receive an internationally grounded education. We seek to inspire and empower students to succeed in fulfilling their individual potential as global citizens in a rapidly changing world.” Michele Fernandes, head of school at DMK, is of a similar mind, saying, “Our vision at DMK is very simple – to inspire every child to discover the world with a global mind.” And again, at DMS, principal Gloria Law explains, “Our mission is to create and sustain a multicultural Montessori education experience. One that embraces diversity and allows each child to reach full potential by becoming an independent and self-motivated global citizen.” Parental involvement While there’s no doubt that parents want their children to develop independence at kindergarten, this doesn’t mean they want to take a backseat. Most want to be directly involved in their children’s education, and in the school community. Again, enabling this seems to be a priority at DBIS, DMK and DMS. “We pride ourselves on being a community school with strong links with the family. Parent involvement is encouraged and much appreciated,” DBIS reception year group leader Katie McGarey says. Says Michele, “DMK involves parents at every step of the way in their child’s educational journey and has a weekly newsletter, drop-in sessions and monthly parent workshops.” Over

At Discovery Mind Kindergarten

What most parents are looking for from a kindergarten is a unique learning experience for their child with just the right mix of play and work. For this reason, when choosing a school, it’s important to consider the learning style and curriculum, plus the extracurricular activities on offer. “At DBIS, we follow the Early Years Foundation Stage curriculum, along with a very outdoors Scandinavian approach,” Eleanor explains. “Our teaching methods incorporate Beach Schools’ and Forest Schools’ learning techniques, where we take learning outdoors into nature. The students are exposed to dynamic and engaging experiences both inside and outside the classrooms.” At DBIS, extracurricular activities include music and dance, Zumba and creative arts. Child-initiated opportunities are balanced with adult-led activities. Equally at DMK, where international stream students follow an adapted version of the Early Years Foundation Stage curriculum, the aim is to strike a balance between academics and play. “In our studies, we focus on language and communication, and maths and phonics amongst other things,” says Michele. “On the other hand, the children can also enjoy an indoor play area in their free break time.

“There are various extracurricular activities on offer at DMK like cooking, science, technology, engineering, music and dance. In addition, regular field trips are organised to enhance the children’s learning,” adds Michele. DMS, meanwhile, follows the Montessori philosophy, which is based on self-directed activity, hands-on learning and collaborative play. The idea is that children ‘learn by doing,’ work is more sensorial, and there is no homework. Gloria explains, “Music and dance is incorporated within the learning in the classroom. There are many extracurricular activities. We have yoga, physical education, arts and crafts to name a few. The children also get regular breaks and playtime in both our indoor and outdoor play areas.” Introducing Mandarin It is believed that children who are introduced to multiple languages at a young age have a much easier time processing and remembering the information they receive, and early exposure to language learning is something many parents prioritise. Not surprisingly, Mandarin is a core subject at these three DB kindergartens. As part of the DBIS curriculum 

FAMILY MATTERS and play-based learning, children learn Mandarin twice weekly, in addition to communication and language, literacy and maths. Specialist teachers are provided in Mandarin, physical education, music and information communication technology. DMK offers two streams of study – bilingual and international. In the bilingual stream, students get increased exposure to Mandarin. Equal weight is given to both English and Mandarin, with a Mandarin-speaking teacher in the class at all times. Students in the international stream have twiceweekly Mandarin lessons. DMS offers a strong bilingual learning environment, where the children are constantly exposed to both Mandarin and English as a medium of communication. In every class there’s both an Englishspeaking Montessori teacher and a Mandarin teacher. The question of tech When choosing a kindergarten, something many parents struggle with is whether technology is important in Early Years education. Should children be exposed to it, and if so how much? From DBIS, the message comes back loud and clear – technology is used to assist with learning. “We use innovative pedagogy and technology to enrich our learning,” says Laura Clarke, acting year group leader. “Educational apps and green screens are used to make learning fun. Each child gets a lesson a week with a specialist information and communication technology teacher.” And at DMK? “We try and provide the best of facilities with smart boards in classes and laptops for the older children,” says Michele. DMS,

vehemently low-tech. School supervisor Dr Christie Leung says, “Technology is so attractive to children, it totally consumes them. Children with too much exposure to technology at a young age have less concentration spans and are used to overstimulation. We only introduce screens gradually after the age of five – we rely on sensory work to develop the brain.” Ultimately, which type of school fits the bill for your child and what choice you make will depend on your family

Tell us about the swimming lessons at the DBIS pool. We’ve been teaching children from across Lantau at the DBIS pool for a year now. It’s a great location, because DBIS forms a big part of the community. It’s an outdoor pool, which the kids love, and it’s heated, so we can run lessons all year round. What classes does Harry Wright run at the DBIS pool? We teach a wide variety of ages and cater for all ability levels, from beginners all the way up to competitive squad swimming. We also offer a Swim for Fitness training group on Mondays and Fridays for teens swimmers who don’t want to take

part in competitions, but want to stay fit. Lessons take place after school hours, and there are classes throughout the week. How long have you been teaching swimming with Harry Wright? I’ve been coaching and teaching swimming with Harry Wright for nine years now. I’m originally from Cape Town in South Africa. I started swimming at a young age and competed throughout school. I also got involved in surf lifesaving and took part in many interprovincial and national competitions. I started swim coaching in 2004, and over the years I’ve coached many great swimmers, a number of whom have gone on to achieve national qualifying times and receive college scholarships. How does the Harry Wright method differ from schools you have taught at before? The Harry Wright coaching philosophy is to offer swimmers of all levels a structured swim programme that ensures progression. We focus on the fundamentals of each stroke and work on technique in order to provide a pathway that helps swimmers excel. We also try to make the lessons fun and engaging for the kids. As well as the traditional laps, at the end of each session we have a period of play time, with games such as diving for toys. The children really

love this part. They think they are just playing games, but in fact they are still learning valuable skills. What’s the most rewarding part of teaching children to swim? Personally, I love seeing swimmers I have taught improve and progress through the year. It’s wonderful to watch them show perseverance and determination to achieve their goals and master new skills. Apart from learning swimming skills, what other benefits do children gain from swimming lessons? Swimming lessons are great for building children’s confidence. They’re an opportunity to make new friends and learn how to interact with teachers and peers. Competitive swimmers also learn life lessons such as discipline, hard work, dedication and ownership. As a coach, that’s something really great to see.

BEAT THE HEAT Maintaining your form while keeping your cool can seem impossible in a hot and humid Hong Kong. Kate Farr gets the lowdown from three experts on what you can do to stay healthy in the heat

t’s been a long, hot summer, with temperatures reaching a sweltering 36ºC in June, and the heat shows no real signs of letting up. Weather extremities are always difficult to deal with, and humidity combined with heat is the last thing most of us like to see on any forecast. One solution is to leave Hong Kong over the summer (as many a DB family does) but now, with the new school year starting mid-month, just about everyone’s back… and back fighting the heat. So, what’s the best way forward? A few simple life hacks can help you cope – and keep you fit and active too.

Another simple swap? “A squeezed lemon in water with some mint is also ideal. The lemon delivers vitamin C and keeps us nourished, while the mint is cooling and leaves us replenished for longer.”

Dr Shveta also advises caution when it comes to tempting summer barbecues. “Avoid or cut down on meat such as beef and lamb, as they heat the body.” Instead, she recommends filling your plate with healthier sides. “Eat more water-based leafy vegetables such as lettuce, and more fruit and vegetables in general during the hot summer months.” And for those who crave a sweet treat? “Watermelon is ideal in the summer heat, either

Of course, even with the most careful preparation, it’s easy to feel overheated – particularly after a workout or a day at the beach. When a cool shower just isn’t cutting it, Dr Shveta suggests looking to your store cupboard for some fail-safe remedies that are safe, effective and good enough to eat.

Sweat smart And what of exercising outdoors, is it something we should avoid in hot weather? Co-founder of

the weekly DB running club The Discovery Run, and owner of personal training and fitness business d.BeFit, Katia Kucher knows all too well that training in the heat can often feel like a major challenge. “Heat is a runner’s enemy. No matter how much we hydrate, our body is affected by the constant hot weather; our performance decreases and our stamina levels go down,” she says. However, Katia explains that there are also surprising benefits to lacing up those trainers – even when it’s 30ºC outside. “Training in the heat properly can have extraordinary effects. Heat training can increase the rate of perspiration, increase a runner’s blood plasma volume (which leads to better cardiovascular fitness), reduce overall core temperature,

reduce blood lactate and even increase skeletal muscle force.” While she believes that athletes can benefit from hot-weather training, Katia stresses that workouts must be carefully planned. “When training in hot weather – and especially high humidity – our body quickly gets depleted of basic minerals and electrolytes like sodium, potassium, magnesium and calcium.” She recommends including electrolytes in drinking water and drinking a minimum of 200 to 350 millilitres of liquid every 10 to 20 minutes. She also recommends caution with sunscreen, explaining, “Some creams clog pores, preventing the skin’s natural ability to sweat and cool, so it’s also important to test the type of sunscreen you use.” Katia’s thoughts are echoed by her fellow The Discovery Run cofounder, and owner of Beyond the Line endurance coaching and consulting, Olivier Baillet. “The people I coach are very performance-oriented and driven, but in the heat, they all slow down,” he says. “Recovery takes longer as the body has to work more to adapt to the hot conditions. “Something important to remember is that in Hong Kong, what makes exercise so hard in summer is not really the temperature, but the humidity,” Olivier adds. “Running in 30ºC and 80% humidity in Hong Kong would smash most of us, while running in 30ºC in Australia, Europe or America, where humidity levels are lower, is much more bearable.”

Hot-weather workouts Olivier recommends approaching hot-weather workouts with pragmatism. “Running at the hottest time of the day is, in general, counterproductive – the stress on the body created by that kind of effort is too high. Training in the morning or evening in Hong Kong is hard enough!” Olivier also highlights the importance of preparation to get the most out of your workout. “If you run, make sure you leave water at some places. Wear light clothes but remember that naked skin may not be the best option; some garments do keep you cooler than bare skin and protect you from the sun. Wear a hat and sunglasses. And be prepared to cut the workout short if you start to feel dizzy or if discomfort becomes too hard to cope with.”

Olivier says, “During the summer months, I often train indoors. I run at the gym, bike at home on the turbo trainer, and avoid the outdoor pools altogether.” So, with just a little careful planning, there’s no reason to let your fitness slide as you wait for temperatures to drop.

Both Katia and Olivier recommend the use of ice to maintain a comfortable temperature during workouts. Katia explains, “An easy way is to use a buff, fill it with ice and put it around the neck. The blood circulating through that artery is eventually transported to the heart and the entire body. Another area with a major artery near the skin’s surface is the wrist, so wearing a cooling wristband around the wrist will have a similar effect.” Olivier adds, “In races, if ice is available, I make sure I keep it in my cap, in my hands and over my kidneys. But these tricks are only when I want to be able to push

sland Dance is one of Hong Kong’s best-known dance schools, established in 1993. I took over in 2008 and run it with my daughter Nimisha and five fabulous teachers and office staff. We provide dance education to children from age 18 months to 18 years at 16 venues across the SAR. We offer RAD and ISTD exam sessions, as well as performance opportunities at community events and our annual end-of-year show. My business is a success because we don’t just sell dance, we sell confidence! The Island Dance motto is Turning Passion into Performance. We currently inspire over 800 dancers in Hong Kong, teaching disco-freestyle, jazz, hip-hop, ballet, tap and Bollywood. To succeed in business, you need to be detail oriented, and organised in time and money management. You need to be a good listener and problem solver and, of course, you have to love and believe in what you do. My advice for someone looking to start up a business is be passionate about the product you are offering and surround yourself with positive people. My greatest achievements are my three very confident daughters, Island Dance and being able to speak Cantonese fluently. My plan for the future is to continue to do what I’m doing for as long as there are children out there wanting to dance, and teachers and choreographers willing to work hard and share their knowledge and passion with them unconditionally. When hiring staff, I always ask if they love children, can handle crowds and live in small spaces… because I normally hire from overseas. Hong Kong is that kind of place, you either love it or you hate it! The entrepreneur I most admire is Oprah. She grew up with all the odds against her and she overcame her challenges to achieve so much. Most importantly, she continues to pay it forward. I aim to follow her lead. My favourite social media platform is Facebook. The last person I texted was my sister in Australia. My personal motto is Life’s too short – stay happy, healthy and positive!

In this kid-sized indoor city, children, aged four to 17, can try their hands at different jobs – they get to be everything from a spaceman to a builder for the day. There are 80 or so role-play activities, and all the right locations in which to play, from a full-sized fuselage of a Boeing 737, to a replica bank and mini hospital.

Take a break from the heat (and the booze) with a long, cool glass of something fruity

Homemade Lemonade Makes 3 pints • 6 large lemons • 5 oz granulated sugar

First, scrub the lemons in warm water. Pare the coloured outer zest from three of them, using a potato peeler or zester. Remove any white pith from the strips of zest to prevent the lemonade from tasting bitter. Put the zest in a large bowl and add the squeezed juice of all the lemons (don’t strain the juice at this stage). Add the sugar and pour in 2½ pints of boiling water. Stir well, cover and leave overnight in the fridge. Next day, stir again and add a little more sugar to taste. Strain through a fairly coarse sieve so that some of the lemon remains. Chill thoroughly before serving on ice, either straight or diluted with soda water. Add lemon slices and mint sprigs to taste.

Pineapple Cooler Serves 6

• 1 ripe medium pineapple, rind only • 2 oz caster sugar • 1 apple, sliced

Cut the stalky top and base off the pineapple and discard. Stand the pineapple upright on its base and cut away the skin in long strips working your way all round the fruit. Reserve the fruit itself for a dessert. Chop the skin into small pieces about 1-inch square. Pile them all into a bowl, and then pour in 1½ pints of cold water. Cover the bowl with a cloth and leave at room temperature for 3 to 4 days or until the mixture is bubbly and fermented. Strain it into a jug, add sugar to taste and serve with thinly sliced apple. 

Serves 6 to 8

• 6 English Breakfast tea bags • 2 tbsp caster sugar • 6 sprigs fresh mint • 10 fl oz freshly squeezed orange juice, chilled • ½ lime, juice only • 1 peach, sliced

Make up some very strong tea in a large teapot, using the tea bags and 2 pints of boiling water. Add the sugar and sprigs of mint to the teapot. Allow the tea to infuse for 15 to 20 minutes, then remove the tea bags and set aside. When the tea is cold, remove the mint from the teapot. Put lots of ice into a glass jug and pour in the cold tea, followed by the orange and lime juices. Finally, add the peach slices, stir thoroughly and serve with more ice.

y first article for this column three years ago was about toilets at the Central ferry pier. At the risk of being sentimentally obsessive, and to coin a lavatorial phrase, here I go again. I spend a lot of time in La Belle France and love it, but the place is lost in translation when it comes to public facilities. Bound tightly by tradition, mixed in with a peculiar brand of pedantry and the avant-garde, it is impossible to comprehend how the land of Didier Deschamps, the Eiffel Tower and the éclair could get it so wrong. How could it all become so senseless in the country of Baudelaire, Brie and Bardot? What is it about the inventors of lingerie, the lightning labour strike and 35-hour week that could create such catastrophes de toilettes publiques? Faire ses besoins is a nightmare. This from a people who gifted to the English language ‘arrogance’ and ‘adultery,’ the nation of Napoleon and awful Neufchatel cheese. Surely the home of Zola, Zinedine Zidane and Sarkozy’s cute wife can do better. No loot, no loo

France may be a byword for sophistication and romance – it has to take responsibility for all that annoying accordion music – but facilities for a basic human necessity are an afterthought, like buying a car with a steering wheel as an optional extra. It’s as if les Français say, ‘We are too elegant even to think of such appalling foreign bodily functions,

Or it could mean a trip to a restaurant where a Gestapo of waiters makes sure you order an overpriced café allongé. I usually request a ‘café Angelina Jolie’ before even thinking about

approaching their highly prized porcelain. It seems to work. It was worse once at a train station on the Swiss border where some publicly licenced extortionist demanded two Euros. Not likely. I hopped on a waiting train where it’s free, only for the thing to partir très vite, landing me at a village station 50-kilometres away. But when you’re hiking, what does it matter? The tried-and-tested approach to being lost in the mountains works every time – if you don’t know where you are, change where you want to be. I had to get the hell out of Switzerland and back to France before I was more broke than the Ten Commandments. If I ever quit walking and take a car, it will be towing a portaloo.
