hen a Canadian tells you they don’t know how to ski the reaction is usually surprise. Ditto for Australians and swimming. Yet many of our indispensable domestic helpers from the island(s) nation of the Philippines can’t swim. Splash set out to correct that with its massively popular free lessons, teaching 400 domestic workers a valuable and fun life skill since 2014. Discovery Bay resident Olivier Baillet is looking to share years of swimming and endurance coaching experience with Splash and bring t h e o rg a n i s a t i o n ’s s e r v i c e s to DB, hopefully starting in spring 2017. “I’m not looking to be thanked or rewarded, but I know it will have an impact,” he says of Splash. “What I love is that when they go home, they can swim and enjoy what we all do when we go to the Philippines. Also it empowers women at 35, 40 or 50 to learn a new skill they never thought they would. It builds confidence. And there’s a social element. Everyone gets together, learns something and there’s a party on exam day.” Above and beyond
The couple settled in DB on returning from Singapore in 2013, when Anne – a one-time gymnast, judge, coach, triathlete, trail runner and Iron Man competitor – accepted a new position in financial services. Olivier was able to take

I also work with corporates doing motivational talks and team building events – all related to sports.” A natural coach Beyond the Line had its genesis as much in Olivier’s banking career as his love of sport. “I discovered that in all my positions while I was in banking, I was also coaching newcomers, beginners. Whatever the job was I was always doing this. I feel very comfortable sharing,” he theorises.

A refugee from the banking industry, Olivier’s road to Hong Kong started in a small town 20 kilometres from Paris, winding through New York and Argentina before arriving in the SAR (for the first time) in 2008. Now 45, Olivier looks more like a retired rock star than risk manager – all wired grace and casually restrained energy. He has been swimming since he was seven (his first taste came during a family vacation on the French Riviera) and running seriously since 25, though his earliest forays were in the forests behind his home (now called trail running). Given that outdoorsy background,
Olivier and his wife, Anne, never considered a Hong Kong home other than DB. “We’re not city people. Having that village atmosphere is right for us,” he says. “Sometimes we want to be somewhere else, but not often. It’s a good trade off.”
I like being in a place where everybody thinks the next day is going to be better advantage of the change to launch Beyond the Line Coaching. The decision came down to having a good network of contacts to draw from – and a regular income. “I came back with a different mindset. I had quit the banking world and I wanted to set up my own sports coaching business,” Olivier recalls, admitting his wife’s job gave him the security they needed for sevenyear-old Alexandre and nine-yearold daughter Belem.
“At the time, I thought ‘If I don’t do it now, I never will. We have a stable income; I can take a risk,’” Olivier adds. “In 2014, I started Beyond the Line mainly
In addition, while working in New York and training for a triathlon nearly 16 years ago, Olivier took what he calls the ‘Latin approach’ to training – “muddling through alone” – but wound up answering questions about how he got into shape so fast, time management and so on. Recognising a potential service, he tucked the idea away for future reference and was able to nurture it in Hong Kong, where serious trainees are willing to pay for professional help. The omnipresence of digital communications and remote working helped. “What I provide is a very specific training plan that is absolutely tailor-made for [the client’s] life,” Olivier explains. “I provide the local knowledge – where to train, which community to join – and the model I’ve designed makes me use my brain every day. I answer questions on nutrition, recovery, bikes, shoes, everything, and I’m happy to share my knowledge.” Olivier’s client base is what he calls people like him: professionals with more drive than time. “My strength is that I was exactly like them,” he says. “I know what they mean when they say they have a business trip

PROFILE and will be in a hotel day and night. I relate to that.” Making a splash Ultimately it is Olivier’s genuine joy at being in the water that underpins Beyond the Line and will rub off on learners at Splash. “Everything that has to do with swimming gets me excited. I’m not the best swimmer in Hong Kong, by far,” he says with a self-deprecating guffaw. “But whenever I hear about a crazy challenge I’m in. I want to be part of it.” Indeed, that’s what led to his first taste of philanthropy: an 80-kilometre swim around Lantau in 2014 for Plastic Free Seas with DB resident Bruce Pye (coincidentally one of Olivier’s first clients). It was there he discovered the satisfaction of doing what he liked and doing
something good for others. He met long-distance swimmer and Splash founder Simon Holliday when the latter did a Macau swim, which added fuel to the charitable fire. “He was really cool, and I liked him right away. As soon as I heard he was doing these free classes for helpers I went to him and told him I’d be very, very happy to help. I volunteered to be the Splash man in DB,” Olivier notes, stressing that Simon and others at Splash deserve far more credit for its success then he does. While there’s a strong contingent of DBers already providing (free) swim
coaching at Splash, Olivier hopes to recruit and train more in the coming months. He’s also hoping to expand Beyond the Line’s scope to, perhaps, include open-water swimming courses and more group work, particularly in DB. And even with Hong Kong’s less appealing traits (poor air, mysteriously sourced food) Olivier’s not giving it up just yet. “I could not do what I’m doing if I were living in Paris, in a country where people look backward and think the past was better,” he finishes. “I like being in a place where everybody thinks the next day is going to be better.”

When it comes to equities, it isn’t about timing the market but rather time in the market. John Parsons of Parsons White Wealth Management advises that doing nothing is often best

et’s be realistic: managing finances isn’t something that most people enjoy doing. It can be confusing, it can be disappointing, and it can be a lot of work. More often than not, we’d prefer to sit back and ignore it. The good news is sometimes just doing nothing will work in your favour. It’s not often the case but in terms of your finances, once you’ve invested wisely
with a trusted adviser, doing nothing is the best course of action. Looking back on 2016, we can now recognise what a challenging 12 months it was for investors. There were all-time highs in market indices in the US and UK, but there were also bouts of volatility and quick, steep declines. Markets recovered from fears over commodity prices and

Chinese growth at the start of the year, but were then buffeted by the Brexit vote in June and Trump’s election in November. Yet markets bounced back once again. This bouncing back, this ebb and flow, truly is the nature of equity investing. But it is understandable that investors, the clients whose money it is that’s ebbing and flowing,

might be concerned about such shortterm fluctuations. But what’s also true is that the sharpest falls and largest gains are often concentrated into short periods of time. Investors who try to time the market to avoid the falls, or who lose faith and sell out at the bottom, are highly likely to miss the gains. The benefits of investing wisely and then doing nothing are illustrated in the chart (top). It is a sobering reminder of the potential costs of trying to time the market. Even missing a small number of days in the market can have a devastating effect on an investor’s total returns. The waiting game So, the moral of this tale? Once your money is invested by a trusted adviser, simply sit back and do nothing. Ideally, you should do nothing for a minimum of five years. If you can hold on and do nothing for 10, that’s even better. Oftentimes, people don’t realise how much they need to save or for how long, and it’s for this reason that many people can face financial challenges in later life – unless they adjust to the new reality of a world of low interest rates.
A timeframe of five to 10 years really is the minimum for equity investing, on the basis that it allows investments to ride out the ups and downs of a normal market cycle. This is backed up by separate analysis by Ritholtz Wealth Management of the S&P 500 Index over nearly 90 years. Ritholtz’s March 2015 report shows the benchmark US index recording positive returns across 88% of all five-year periods. That figure rises to 94% for 10-year periods, while there has yet to be a negative return over a 20-year timeframe. Managing expectations Despite this, a Schroders study of 20,000 investors (Schroders Global Investor Study 2016) reveals that only 33% of UK investors hold their investments for more than five years. Clearly, the long-term message is going unheeded by many investors. The Schroders survey finds that private investors are often impatient when it comes to investing their money, with shorter time horizons and more immediate goals trumping the potential for long-term gains. On average, investors expect to hold their investments for a little over three years, which the study observes may be “fine for cash and
certain types of bonds” but that it “will often prove too short a time period to counteract the volatility associated with equities”. Schroders Global Investor Study 2016 highlights varying degrees of understanding about the different elements involved in building a pot of money to generate an income. While it shows that people have realistic expectations of how long they will live in retirement, it also reveals that some greatly overestimate the returns that might reasonably be generated in the current climate. The Schroders study shows that, on average, UK investors expect to generate an income of 7.5% a year – double the FTSE All-Share Index’s current 3.75% yield. Globally, people expect their investments to return 9.1% annually, which is far higher than the MSCI World Index yield of less than 3%. According to the study, millennials have even more unrealistic expectations, with a minimum desired level of income of 10.2% per year, compared to 8.4% for investors aged 36 and over. This worrying misapprehension about realistic returns is likely to

IN FOCUS have a profound effect on long-term savings behaviour, according to the Schroders report. Compounding at an annual rate of 9.1% over 20 years, savings of HK$20,000 per month would build a sum of HK$13,528,600. At a more realistic 4%, however, the total only comes to HK$7,335,400. A new reality Looking back at historic interest rates and market returns provides a stark reminder of how times have changed, and how disconnected some investors
are from the new reality. For instance, according to a Bank of England report in October 2016, UK interest rates hit double digits some 30 years ago, and stayed there or thereabouts until late 1991, with a peak of 14.8% in 1989. In contrast, interest rates are now expected to stay close to zero in the UK, Eurozone, US and Japan for some years. Indeed, markets are currently assuming that UK interest rates will not rise until 2020. Against that backdrop, it seems that many investors’ expectations belong to a bygone era.
With interest rates around the globe stuck below 1%, achieving an annual return of 8% or 9% is a near impossibility without taking on significant levels of risk, according to Schroders Global Investor Study 2016. So, what does this mean for you and your financial plans for 2017 and beyond? It all comes down to finding the right adviser, someone who’s the right fit for you and whose advice you trust, then sitting back and being patient. It’s a long game but all good things come to those who wait.

DB mums take health and fitness in their stride
E
xercise is that one singular word that fills me with a kind of dread. It means potentially putting on Lycra and exposing my body to the world, which is something I have no wish to do, especially so soon after my Christmas binge. But if you look around DB Plaza, the fit women of DB have no qualms about doing exactly that. I watch them in a kind of awe as they get off the buses, water bottles in one hand and phones in the other with not the least bit of trepidation. As they walk confidently through the plaza on their way to the gym, their other half is strapping on his helmet and heading off to the bike trails. As I watch, I often wonder what it is that makes the gym (or yoga studio) so enticing to these fit and fabulous DBers. Is it the thought of a quarter-pounder combo without the consequences at the end of the session that makes it so appealing? Or is it the alluring promise of those endorphins ready to rage mysteriously through their bodies at the end of a punishing one-hour workout? Celebrity diets and the gym I was raised in a country where women are obsessed with their bodies. Australia is one of those countries where nearly everyone knows how to swim and they spend every available weekend soaking up the sun on a beach in their skimpy bikinis. And of course, women watch other women and they make judgments, and for a while people’s opinions were a vital part of my life. But oh boy, was I wrong. I’ve come to realise that generally speaking, people’s thoughts don’t matter after all. It’s freed me up for a ‘who cares!’ adventurous approach to life. Inspired as I am by the DB ladies around me, for whom fitness and well-being seem to go hand in hand, you will know by now that I am no exercise bunny. And although we are roughly the same age, I am

certainly no Madonna. She’s been working out for 40 years, she’s been married twice, and has four children and a gruelling career. Goodness, the woman should be exhausted! She should be lying on the couch at night watching movies and eating ice cream with her fingers. Instead, she’s off to the gym and out there night after night, tour after tour, singing and dancing with the unbridled enthusiasm of an 18-yearold schoolgirl. I can only admire her stamina and energy. By contrast, I picture myself slumped over a treadmill, sweaty and dispirited after only a few minutes in the gym. A fretful voice in my head whispers: ‘There has to be some other way!’ So if I was deleting exercise from my 2017 agenda what I needed was a diet. The thought made me stop and open up my new caloriecounting phone App and ask it how many calories there are in one glass of red wine. I knew I’d get a quick and simple answer like I did with the boiled egg question. The App then asked me was it red wine or red wine jus? Regular? Cooking? Sparkling? Or just red wine? After a lengthy think I pressed regular. It then asked Sip? Large glass? Extra large glass? Or Other? Playing it safe, I opted for other. By then, I thought I’d just tweet Madonna because she would
certainly know what course of action to take when it came to calorie counting and exercise. Or even Joanna Lumley, actress, champagne swiller, owner of the world’s most seductive voice and newcomer to the world of diet crazy celebrities. And then, even while my fingers hovered over the keyboard to access my Twitter page, I stopped to think… do we place too much emphasis on the current celebrity preoccupation with telling us what to eat? The thought made me pause and wonder if we put too much faith in celebrity diets and, by extension, in the all-pervasive ‘name and shame’ culture popularised by shows like The Biggest Loser. I’m no doctor or psychologist but finger-wagging rarely works. Everything in moderation Are these messages perhaps the wrong ones for our children? When 12-year-old kids are undergoing gastric banding surgery, as revealed in the UK last month, and their obesity rate is still climbing, surely we should be thinking whether these anorexic looking people are the ones who should be influencing us. Our obesity crisis will not be solved by a clutch of privileged people who eat small amounts of food and crave nothing, because for most of us food is perennially fascinating, not least delicious.

If in doubt, you only have to watch a Jamie Oliver show to know that extensive dieting is bad for you, not to mention the long-term damage it does to your skin. It’s nutrition that is the solution to the problem. But with so many people offering different ideas on nutrition, who is right and who is wrong? There’s no doubt about it, diets are confusing. We have low-fat, low-carb, lowcalorie, detox, low-glycemic and high-glycemic. Some people insist on the low-calorie option, while others insist that eating less more often will build up metabolism and is the way to go. Again, the way DB mums take all this in their stride simply takes my breath away. These women, many of whom are half my age, seem to instinctively know what to feed their kids and how to inspire them into an active lifestyle. Those magic words ‘everything in moderation’ are clearly a touchstone too. It warms my heart to see the same kids I see snacking on pre-cut crudities in the plaza, being treated to a Happy Meal at MacDonalds every once in a while. So here is what I’ve figured out. Life can be tragically short and yet, it’s in our hands to fill it with heaps of happiness. I know that to be miserable about self-image is easy and that self-absorption is an utter waste of time. I’ve learnt that no matter how rich or poor you are, how many shoes you have (that number is called ‘never enough’), and how much exercise you do in the messy business of life, the greatest possessions and achievements a

person can ever have, are friends and family – people who love us just as we are, with or without the donut at the top of our jeans. With all this in mind, I am lacing my feet into trainers ready to hike over to the Trappist Monastery with some gorgeous DB mums of my acquaintance. Should I collapse
in a bush, I know they will be kind enough to haul me out and revive me. Low-cal red is fine.

WHAT IS EFFECTIVE ESTATE PLANNING? The answer to this question is to speed up the overall distribution of your estate; and to mitigate unwarranted taxes whilst providing the right people with the right money at the right time!
How does one do this? Writing your Will - This will allow everyone you leave behind to understand what happens to everything you own. If you die with a Will in Hong Kong, the Grant of Probate (a legal document releasing your assets) can take months. Without one, it can take years! Setting up a Family Trust — Your Will instructs who gets what BUT it does not speed up time nor does it distinguish how assets are to be given. Trusts can more specific to certain property (assets you own.) Trusts can be used for Tax Mitigation, Asset Protection and/or Succession Planning and is not just suitable for the rich and wealthy. Nominate Beneficiaries — if you have any life insurance plans, savings plans linked to life insurance or are member of a company pension or death in service benefit then you can have beneficiaries nominated to speed the process of distribution. When your death certificate is received, your Executor or loved ones can submit this to claim the proceeds. Very often, this method of nomination does not require probate (therefore your beneficiaries receive funds within weeks rather than months or years.) Write assets down — People die without letting other people know what they own! This can leave millions in the various financial institutions such as the bank, insurance company, stock broker etc. If no one claims the money, the institution keeps it after a certain period, depending upon the jurisdiction. You should also let people know that you have a valid Will and where it is kept, or no one would know to look for it. Advanced robotics, autonomous transport, artificial intelligence and biotechnology are increasingly likely to be the norm. With this increase of new products, technologies and ways of working,

Traditional ‘hard’ skills, like writing, mathematics and science, continue to have a place in the worlds of academia and of work, but employers are also on the lookout for people with so-called ‘soft’ skills. Soft skills include the ability to adapt to changing circumstances and the willingness to learn through experience, and are applicable across multiple disciplines and careers. Sought-after employment skills The top five employment skills identified by The World Economic Forum as being most in demand by 2020 are complex problem solving, critical thinking, creativity, people management and coordinating with others. The top three skills are considered absolutely essential for all teenagers to cultivate. Companies use data to help predict future trends and make informed decisions in all areas of production, automation and finance. The use of personal data worldwide is nearly doubling annually. Facebook now uploads 350 million photos daily. The UK’s Gig economy has exploded. Uber alone now has 40,000 UK workers. Some industries will grow, other jobs will disappear and some that aren’t yet invented will be near

commonplace in a decade. Many firms now place higher value on complex decision-making skills. Developing critical thinking and creative-thought tools to make choices means teens will be able to solve difficult problems. Some schools are developing these skills, but with the dizzying speed of technological change, there is a need
for more active parental support at home. Mobile, internet and cloud technology occupy large segments of our everyday lives. Most teens are technologically savvy, but they must learn to hone their own creative imaginations and critical thinking skills. Their world’s pace of change is fast and it won’t wait for them.
3 ESSENTIAL SOFT SKILLS 1. To improve problem solving abilities, encourage children to generate ideas for various events: a holiday, shopping for new trainers, a revision schedule or applying to university. Draw up a table displaying the information gained, costs and benefits to help with decision making. Then map out a plan with a time scale. 2. To improve critical thinking skills, ask children to define the way they see things. Help them internalise cognitive standards such as clarity, precision, relevance, depth, breadth and logic. Focus their thinking and conversation each week on a specific area, ie clarity one week, followed next by precision. Relate conversations to world news, global issues and homework. 3. To improve creativity, encourage new ideas, and brainstorm all ideas. Don’t limit a child’s potential. Discuss holiday destinations, birthday events, and outdoor, weekend and community activities. here’s nothing (aside from coffee) that makes the world go round quite as much as love, and February 14 is all about celebrating those warm and fuzzy feelings with the people who touch your heart the very most. And while your pre-kids Valentine’s Day routine may have included candlelit dinners, chilled champers and lavish lingerie, it’s still possible to embrace that loving feeling with small people in tow.

DIY love letters It first became customary for lovers to exchange handwritten notes back in the 18th century, when Valentine’s cards would be cut into heart-, dove- and cherub-shaped outlines and finished with lace. These days, February 14 sees us showering our loved ones with cards, gifts and even jewellery, and with the rise of the internet, showing our affection has never been easier, with e-cards an increasingly popular way of marking the day. TOP TIP Encourage children to hand-decorate a card for the person that they love and admire the most – be this a family member,
teacher or friend. Add to the fun by encouraging them to send their message anonymously, leaving the recipient to guess who their secret admirer might be. A fun twist for little ones is to sign their name in invisible ink, (make this at home by blending water with lemon juice), then offering a few cryptic clues as to their true identity. The grand reveal can be achieved by simply holding the paper up to the light. Say it with flowers For many an old romantic, Valentine’s Day is synonymous with red roses. What you may not know is that your bouquet may hold hidden significance – 50 red roses are said

to symbolise eternal love, 12 are for gratitude, while two bound together represent an engagement. Always count your stems carefully! But it’s not all about the rose, which – especially at this time of year – can be over-priced and hard to find. Meanwhile, here in Hong Kong, our beloved bamboo not only makes for sturdy scaffolding, but also represents resilience and grace, making it a thoughtful component of any Valentine’s Day bouquet. TOP TIP Get kids into some floral fun by making colourful paper bouquets. Cut individual petals, and then use a paper punch to create small holes in the bottom of each one, before threading through a lollipop ‘stem’ to fasten your flower together. Wrap in brown paper for an authentic florist’s feel then let them distribute a little floral sweetness to friends. Alternatively, take a trip to Prince Edward then wander Flower Market Road, allowing the kids to customise their very own bunch of blooms.

What’s in a name? The origin of Valentine’s Day is something of a mystery, as there are actually not one, but three Saint Valentines to be found in the record books, with little known of their lives. The Valentine’s Day that we now celebrate was most likely created in the 14th century by the English poet and author, Geoffrey Chaucer. He wrote of the engagement of King Richard II to Anne of Bohemia: "For this was on St Valentine's Day, when every bird cometh there to choose his mate." It was believed during this period that birds would pair for life each year in mid-February, leading to the association with romantic love and partnership that endures to this day.

PACIFIC PARADISE A cinematographer’s dream, not to mention a bucket-list destination for everyone from surfers to volcanologists, Hawaii will have you at aloha. Cecilia Yee reports North Shore, Oahu

our guidebook will tell you that Hawaii has been a US state since 1959, and that it is the northernmost island group in Polynesia. A volcanic archipelago in the central Pacific Ocean, it comprises hundreds of islands spread over 2,400 kilometres. But

all that is just words – you really have to see Hawaii to believe it. Fortunately, Hawaii’s dramatic scenery has provided the backdrop for countless Hollywood movies, so even armchair travellers can get a good look at the so-called Paradise of the Pacific. While its

plunging cliffs, fearsome volcanoes and lush rainforests steal the show in blockbusters like Indiana Jones (1981) and Jurassic Park (1993), its palm-fringed beaches and lavish resorts have set the stage for countless romantic comedies, notably Forgetting Sarah Marshall (2008). The cult thriller Point

Hana Highway, Maui
Haleakala National Park with its rolling green valleys is a highpoint of any trip to Maui, best accessed via the dramatically scenic Hana Highway. On the winding road to Hana, you’ll navigate hairpin turns and narrow bridges and soak up jaw-dropping views. Covering a vast 135 square kilometres, the park is home to the island’s highest peak, dormant Haleakala volcano, as well as the freshwater pools and waterfalls of Oheo Gulch.
Oahu, known locally as the Gathering Place, is where most visitors get their first taste of Hawaii. While its high-rise resort hotspots don’t provide anything like a desert island experience, they can claim to supply the ultimate in RnR. With every amenity available on tap, you’re free to enjoy the best beach holiday ever, with a large helping of Hawaiian hospitality thrown in. Waikiki main beach, which is credited with some of the world’s best sunsets, is a first port of call. Here you can take your first surf lesson, relax on the sands and then party with the locals after dark.

Venture a little further afield and the beaches of Oahu’s North Shore quickly reveal why Hawaii is a celebrated surfer’s paradise. Stretching over 11 kilometres, the North Shore attracts the best surfers in the world in the winter months but in the summer, the massive waves become much more hospitable, making it the perfect spot for beginners to get into the sport. The surfer resorts of Waimea Bay, Ehukai Beach Park and Sunset Beach have a more laidback, bohemian feel than nearby Waikiki. TOP TIP For a stunning panoramic view of Oahu, head up 232-metre Diamond Head. There are crater
Less commercial than Oahu, Maui, with its plunging cliffs, lush rainforests and pristine beaches, delivers everything you’ve come to Hawaii to see. It is encircled by 48 kilometres of glorious beach, notably crescent-shaped Kapalua, which is sheltered from strong currents by gigantic lava-rock promontories.
At over 1,980 metres, Haleakala dominates the island, and its protected nature trails are well worth exploring. While there’s no better place to experience Hawaii’s diverse flora and fauna, adrenalin junkies can opt to make the descent by mountain bike on a dedicated 32-kilometre trail. TOP TIP Maui’s beaches are a great place to spot the 12,000 humpback whales that swim from Alaska to Hawaii from December through May.

– green at Papakolea and black in Punaluu. Hapuna Beach Park and Kahaluu Beach Park in the west are popular snorkelling sites, and a great place to swim with dolphins and manta rays. Hawaii Volcanoes National Park is home to two active volcanoes, Kilauea and Mauna Loa, with Kilauea being the most active in the archipelago. Head here to witness molten lava flows, heated steam vents and huge summit caldera. The Big Island also homes the
tallest mountain in Hawaii – Mauna Kea. When measured from its oceanic base, Mauna Kea reaches over 10,000 metres, which makes it even taller than Mount Everest. At the summit, you’ll find the world’s largest observatory for optical, infrared and sub-millimetre astronomy. Take the opportunity to stargaze and be awed by the
limitless sky above. TOP TIP The Big Island plays host to the annual Ironman World Championships each October. If you’re lucky enough to be in Kona during race week, be sure to watch the athletes competing in the fun ‘underpants’ run in the lead up to the main event.

TREATS THAT CAN’T BE TRUMPED This traditional all-American supper menu is guaranteed to hit the spot and put a smile on everyone’s face
Clam chowder Serves 6
• 1.35 kg baby clams in their shells • 175 g streaky bacon, chopped • 1 medium onion, chopped • 3 sticks celery, chopped • 2 tsp thyme, chopped • 1 tbsp dill, chopped • 25 g plain flour • 570 ml fish stock • 150 ml dry white wine • 3 bay leaves • 700 g potatoes, cooked, peeled and sliced • 275 ml double cream

• 2 tbsp parsley, chopped Wash the clams in cold water to remove any grit. Cook over a high heat in a large covered saucepan until clams are just open, shaking the pan frequently. Remove all but 18 clams from their shells. Reserve the pan juices. Fry the bacon, onion, celery, thyme and dill. Cover and cook gently for eight minutes. Stir in the flour and cook gently for five minutes. Put the clam juices, fish stock, white wine and bay leaves in a separate pan. Bring to the boil and simmer for five minutes. Stir in the broth. Cover and simmer for 10 minutes, stirring frequently. Add the potatoes, mashing one quarter against the side of the pan. Add the clams and reheat. Stir in the cream and garnish with the 18 reserved clams and parsley. www.arounddb.com February 2017

Key lime pie Serves 8
• 10 digestive biscuits, crushed • 6 tbsp unsalted butter, melted • 5 tbsp raw honey • ¼ tsp sea salt • 425 g condensed milk • 4 large egg yolks • 118 ml fresh lime juice • 1 tsp lime zest, grated • 473 ml double cream
Preheat the oven to 180°C. In a bowl, combine the biscuits and butter, two tablespoons of honey and salt. Grease a nine-inch pie dish with additional butter. Pour the crumb mixture into the pie plate and evenly press to form a crust on the bottom and the sides. Bake for 15 minutes. Remove and allow to cool. Combine the condensed milk, egg yolks, lime juice and zest. Pour into the prepared pie crust then bake for 15 minutes, or until set. Allow to cool then refrigerate for at least four hours. When ready to serve, beat the cream and remaining honey together to form stiff peaks. Spread on top of the pie and garnish with additional lime zest.

As Valentine’s Day approaches, Peter Sherwood reflects on romantic love and the marriage game

rite about love and marriage, she said, being unaware that me writing about blessed nuptials would be like Willie Nelson singing Cantonese opera. She clearly saw the prospect of some dark comedy... but why me?

Until recently, the only wedding I ever attended was decades ago in Sydney, and it wasn’t my own. Still I came away traumatised, in a state of considerable psychological distress that still sees me misspelling the word – appropriately, enough – as ‘mirage’.

A month or so ago, I attended my second wedding – the welding together of two Discovery Bay friends, Marc and Rosie. Making their vows, they made it clear that the single life is no substitute for matrimony. But then bachelordom doesn’t have to mean existence in a smelly monastery cell.
Given what professionals have told me about mood changes, I am persuaded that romantic love is really an ancient physiological drive to reproduce the species. This utilitarian move by Mother Nature removes all romance from the romantic, leaving the horror of waking up one morning with a detested spouse, gargantuan school bills, extortionate legal fees and half a house. (When M. Nature has done the job she loses any interest in the on-going state of your relationship.) Sexless in the city Apart from finality, something pseudo-scientific bothers me about a wedding’s aftermath. I refer to surveys on wedlock and sex. Beginning with the famous ground(and relationship-) breaking Kinsey Reports on sexual behaviour (1948 and 1953), every study on the subject is riddled with distortion. Everyone lies about how much sex they have. Everyone. And as we
all know, polls are based on the opinions of people in a shopping mall who are not savvy enough to avoid someone coming at them with a clipboard. An infinite subject is couples complaining they don’t feel like having sex anymore. So the agony people direct them caringly to marriage guidance and hormone treatment, or a visit to a retail outlet for new-and-improved lingerie and a range of devices to titillate. I don’t get it. What’s the problem? For years I read self-help books and even wrote a couple. Then I didn’t feel like it, so I stopped. Same with tennis after 40 years. Why should this be so difficult? I’m often told that DB is a hotbed of everything salacious and forbidden, with countless broken alliances and busted heads. But if young married women are throwing themselves at us single blokes, I can only whine that too few are flinging their nubile bodies in my direction.
