DB TENNIS BONANZA The DB Recreation Centre junior tennis tournament on May 13 saw a host of young DBers take to the court in singles and doubles, with Bruno and Carl Loeffler two of the stars of the show winning multiple awards on the day. On May 6, the DB qualifiers for the Necker Cup were held, a tournament organised by Richard Branson in which the winners in each country are flown to Branson’s private island to play in an exclusive pro-am.

Earlier this year, 82-year-old Nicole Sicard was selected as one of 10 global semi-finalists, and one of three Hong Kong finalists, for Rotary’s The One international humanitarian award. The Around DB and Life on Lantau Young Writer’s Competition 2017 challenged students to write from the point of view of a famous historical figure. Sam Agars meets the finalists

he Around DB and Life on Lantau Young Writer’s Competition (YWC) continues to surprise each year, with local students producing articulate and considered pieces in a bid to have their work published. This year’s theme – writing from the point of view of a famous historical figure – required in-depth research and a thoughtful approach, something that

was delivered in spades by the young writers, submitting entries from seven schools. It was then up to the judges Peter Sherwood, Sharon Lesley Le Roux and Trisha Hughes, all regular Around DB contributors, to select and mentor three finalists and shape their work. Peter chose 14-year-old Sienna Bertamini from Discovery Bay International School (DBIS),

Sharon selected Janice Ho, 13 and also from DBIS, and Trisha picked 13-year-old Kayla Lee from YMCA of Hong Kong Christian College. The judges also chose three runnersup – Micah Zirkelbach, Seo Jin Park and Maika Ono, all DB residents. In the subsequent online vote, conducted on the Around DB and Life on Lantau Facebook pages, Kayla was crowned the winner of the Bookazinesponsored competition with 284 votes, while Janice placed second with 116 votes and Sienna third, with 76 votes.

“I really loved working with Trisha, she taught me how to delve more into the complexity of Josef Mengele,” Kayla says. “I am working on two books at the moment and I have a character who is based on Josef Mengele, my villain, and I thought it would be a good creative exercise for me to get to know my villain for my book.”

Kayla: Josef Mengele It was on noticing that people often write about good people that Kayla chose Josef Mengele, the SS physician, infamous for his inhumane medical experimentation on concentration camp prisoners at Auschwitz during the Second World War. Kayla, who lives in Tung Chung, has Josef grappling with what is right and wrong as he struggles with the lack of recognition for his monstrous deeds. Kayla says she wanted to write from Josef’s point of view because “people tend to see others in only black and white. I decided to write about Josef Mengele so that I could detail the depths of the human personality.” Writing has long been a hobby of Kayla’s and something that helps her step back from the pressures of everyday life, and she says she entered the competition for fun and to challenge herself. “I thought it would be a really good opportunity for me to improve my skills,” she says. “I love the fact that I can create new worlds out of mid air and new characters, and I can escape when I’m having real-life problems.” Through her work with Trisha, Kayla was able to add depth to her writing, something she hopes will

I decided to write about Josef Mengele so that I could detail the depths of the human personality

“For a 13-year-old I could see a lot of emotion in there,” says Trisha, the author of best-selling memoir Daughters of Nazareth and the justpublished historical novel, Vikings to Virgin: The Hazards of being King. “If she can produce this now at 13, then she has got the world at her feet.” It only took minor tweaks to enhance Kayla’s story. “Her story was good, but I knew it could be better,” Trisha says. “I knew she had it in her because she had already brought out a lot of the arrogance and the disdain of what Mengele was like.”

Janice: Anne Frank The holocaust theme continues in Janice’s work, with the DB resident choosing Anne Frank, one of the most well-known victims of Hitler’s Nazi Germany. Janice chose Anne for two reasons – her interest in the holocaust and because she was learning about her in drama class. “The hiding part of her life really stood out to me and that is what she is well known for,” Janice says. “I don’t usually write diary entries so it was different and I really enjoyed writing it.” Janice feels she is a better writer after working with her mentor, Sharon, calling the experience amazing. “She taught me how to drag someone into the story and how to make the reader read in Anne Frank’s voice,” Janice says. Like Kayla, Janice finds the writing process therapeutic. “It’s probably my only way to escape from reality, and writing down my emotions really does help me calm down and release all of my stress,” she says. Sharon, who runs creative writing workshops for kids through The Story Studio, was impressed by Janice’s original work and says that only minimal changes were needed. “Her piece was really insightful, it obviously touched her, the Anne Frank story, as she really got in character,” she says. “She was really good at showing what was happening in the house and the tensions; she was really good at showing, not telling. “We made a little tweak about the pork that was being eaten at the end,” Sharon adds. “Obviously because of their religion they had never eaten it. It kind of made me as the reader ask, did they eat it or not? I advised Sienna to follow things through to their natural conclusion because the reader will want to know.” 

Sienna: Harriet Tubman Sienna chose to write from the perspective of Harriet Tubman, a humanitarian famous for her work freeing slaves during the American Civil War. The young DB resident explores Harriet’s thoughts during one of her missions to release slaves, having chosen her as a follow-up to a Year 7 project. “In Year 7, I did a similar topic on her because we had to choose someone that we thought was a hero,” Sienna says. “I chose Harriet Tubman and I did a lot of research into her.” It’s clear that Sienna gained a lot from working with her mentor Peter, the author of 15 books and a former South China Morning Post columnist. “What I took out of it the most was that to really connect with the reader, you have to understand who you are writing about,” Sienna says. “I had to really research into what Harriet Tubman did and try to connect with how she felt, therefore the reader could feel that same way. Peter really showed me how to do that and gave me some really great tips.” Peter chose Sienna’s piece not because he initially thought it was the best, but because he felt it showed great promise. “Sienna showed she could feel what her subject was experiencing,” he

says. “She was able to colour her story with the atmosphere of the situation. She is naturally curious and I thought she had the potential to improve her story further.” For Sienna, the process has only been a positive one: “The main benefit for me was that overall my

writing has improved, especially when I’m writing in historical context. I just find it relaxing, putting words down on paper. Usually everything is muddled together in my mind, but by putting it down on paper, it’s a place for other people to see it. I really like what writing can do.”

PF, UVA, UVB, waterand sweat-resistant – the labelling used on storebought sunblock leaves a lot to be desired. The marketing terms are at best vague (ultra-sport!), at worst misleading (total block!). It’s no wonder then that so many of us diligently apply a ‘high protection’ sunscreen only to find ourselves burnt to a cinder within an hour or so. What we wanted was a golden, sunkissed tan; one that hides a multitude of flaws, and makes us look slimmer and healthier... and what we got was lobster.

sunscreen. Historically, it was thought that the UVB rays that caused sunburn were damaging, while the UVA rays that caused tanning were relatively harmless. In recent years, however, research has shown that the effects of UVB and UVA overlap. “Under 2011 FDA regulations, all sunscreens must be broad spectrum; in other words, they protect against UVA and UVB,” Dr Yau Wing Him of Quality Healthcare Medical Centre (DB) explains. “To be classified as broad spectrum, the sunprotection factor (SPF) must be at least 15 (the maximum is SPF50+). To qualify as water resistant, a sunscreen must demonstrate that it retains its SPF value after a person has been immersed in water for 40 or 80 minutes.” An SPF15 product is said to screen about 94% of UVB rays, an SPF30 97%. But you’ll still burn if you don’t apply enough, often enough. Remember you are not using sunscreen in the way that it’s measured in the lab – use a SPF30 too sparingly and its effectiveness is reduced to one third.

Dr Yau suggests you follow the modified teaspoon rule – one teaspoon of sunscreen for face/ head/ neck; two teaspoons for front and back torso; one teaspoon for each arm; two teaspoons to each leg – 15 to 30 minutes before exposure. And that you reapply it every two to three hours. If you sweat a lot or swim a lot, reapply a water-resistant sunscreen after 40 minutes. If it is used properly, sunscreen use has been shown to reduce the risk of skin cancer but Dr Yau also recommends we implement common sense strategies. “Other than using broad-spectrum sunscreens, wear

protective clothing – long sleeve shirts and pants, and broad brimmed hats. Wear sunglasses (children’s eyes are particularly vulnerable) and bear in mind many types of glass do not filter UVA. Stay in the shade at midday. “Oral retinoids and dietary soy isoflavones may help to prevent skin cancer,” Dr Yau adds. “Nicotinamide, polyphenols (found in green tea), and fern-leaf extract have been shown to reduce the effects of UV radiation.” Risk factors The bottom line is that there is no such thing as a healthy ‘natural’ tan. “It is important to dispel the notion that having a tan is protective,” says Dr Yau. “Tanning of the skin is a result of UV-ray damage to the DNA of your skin cells, and skin damage is cumulative.” The rate of skin cancer (both melanoma and non-melanoma) is on the rise. The term non-melanoma skin cancer includes two major types – basal cell carcinoma (BCC) and squamous cell carcinoma (SCC). “Risk factors for skin cancer are UV-radiation exposure (sunlight and artificial tanning), sunburn, having pale skin and ageing,” says Dr Yau. “Men are twice as likely to develop skin cancer as women. Tobacco smoking has also been linked to SCC. With malignant melanoma (MM), you also need to consider your family history and whether the number of moles you have on your skin is increasing. “Public education is essential,” Dr Yau adds. “For instance, childhood sun exposure is strongly associated with skin cancer. For babies of six months and younger, it is best to avoid sun and sunscreen. Their skin is thinner with lower melanin protection, so UV radiation penetrates deeper.” 

Detecting skin cancer BCC accounts for 75-80% of nonmelanoma skin cancers. It usually manifests as slow-growing, pearly nodules on the face of an elderly person. These rarely spread elsewhere but they erode into the surrounding tissue and bone. Accounting for about 20% of nonmelanoma skin cancers, SCC tends to be more aggressive than BCC. It invades tissues beneath the skin and may spread to lymph nodes and distant parts of the body. These cancers (ulcerated or crusted lesions) typically develop on sun-exposed parts of the body, such as the face, ears, neck, lips and back of hands but they can also develop within scars. Dr Yau stresses that we should also be mindful of actinic keratoses (AK) – a precursor to SCC – that manifests as small, scaly red patches or yellowwhite scaly crusts on sun-exposed skin. “In some countries, over half the population over 40 has one or more,” he says. “These growths usually start to appear in middle-age but are now being seen in people in their 20s.”

MM is the most dangerous form of skin cancer. “The five-year survival rate is improving (now upwards of 80%) but since a cure for this form of cancer is still being sought, we need to concentrate on prevention and early detection,” says Dr Yau. “Watch for the development of a new pigmented or unusual looking growth on your skin, or changes to the shape or colour of existing moles. “As with SCC and BCC, MM usually develops as a lump on normal skin but 30-50% of growths develop in a pre-existing mole,” Dr Yau adds. “So a mole which is changing could indicate a melanoma. Look for ABCDE changes in a mole: Asymmetry/ Border irregularity; Colour irregularity; Diameter over 6 millimetres; Evolving over time. Changes in size, shape and colour are more significant signs than itching, pain, or bleeding in any mole.”

People with fair complexions (especially those whose skin burns easily and never tans), anyone living under high sun exposure, outdoor workers and those with a family history are most at risk. Dr Yau recommends six- to 12-monthly skin examinations by a dermatologist. Seeing all this in black and white will be an unwelcome eye-opener for diehard DB sun-worshippers. But maybe it really is time to forgo the shore and start faking it. While tanning beds are not the way forward, as they are known to emit both UVA and UVB radiation, you can get a great fake tan in tablet form or in a bottle. Apply it yourself or visit a tanning booth and have a beautician spray it on you. Thus prepped, if you must head to the beach, slap on the SPF30+ and seek shade.

With all the different summer activities on offer across DB and Lantau, how do you decide which will benefit your child the most? Samantha Wong reports

f your kids are anything like mine they are starting to get beyond excited about the upcoming school holidays. We’ll be heading overseas for a stretch to see family and they say they are quite happy to do absolutely nothing for the rest of the break. But I’m not buying it. We tried that last year and hanging around at home and in the plaza simply didn’t do it for them – or their devoted and longsuffering Auntie. So this year, I’ve decided, we are going to enrol in some summer camps.

enough – making sure they are going to have lots of fun should be a first priority. And that at least should be easy enough to achieve. No matter which type of camp I choose, the kids will be given the opportunity to be busy and social, which is something they both secretly enjoy.

say that summer camp is going to be a fun experience for the kids but this gets me no closer to deciding on a specific course for them. Looked at one way the decision is simple. I’ll sign them up for an activity they already enjoy and give them the chance to focus on it, and get seriously good at it. True to gender stereotyping, my son is into martial arts and my daughter lives to dance, so that immediately narrows the field. Game over, you might say, job done. But having thought about this a lot, I’m tempted to go the other way... sign the kids up for a course in something new and unexpected, something that will expand their horizons.

Turn the page for an introduction to 18 top DB and Lantau summer camps so maybe a few sessions on the playing field will put a stop to that. To keep things interesting (at least from my perspective), I’m also considering enrolling the kids in a classroom-based camp. I’ve read about the ‘summer slide’, where grade points are lost because of lack of tuition over the holidays, and I want to avoid it. There’ll be no ‘snoozing and losing’ at our house! Hopefully, an educational camp won’t be too dull for the kids. I’m told that these specialised, teacher-led summer courses make learning and problem-solving fun and interactive.

As my son could also do with some extra tuition in Maths, this will kill two birds with one stone. So there’s my answer. We’ll plump for not one but six summer camps – the kids will each get to explore their favourite hobbies, try something new and keep up with their studies. It’s starting to look like a busy, productive and most importantly fun summer!

Neither of my kids are what you would call outdoorsy; they’re homebodies. When they’re not deep in their books, my daughter is hardwired to the computer and my son is glued to the TV. Any camp I choose will encourage them to unplug and get social, but I’m thinking one that’s based outdoors could be the way to go. So perhaps I’ll sign them up for a sports course. It would be good to see them being physically active but more than that, I’d like to see them simply spending time outdoors, connecting with nature in some way. They are always saying they aren’t interested in being outdoors, that they lack access and are uncomfortable,

They develop decision-making skills to get themselves through challenging situations, and they grow in confidence and flexibility. 5 How to be resilient. By tackling an activity that pushes them outside their comfort zone, children come away with a stronger sense of personal pride and self-reliance. As they progress through a course, their confidence builds and they accomplish tasks that at first seemed impossible. All this builds strength of character, courage and determination.

n ev e r i m a g i n e d I w o u l d find solace in my solitude on the shores of Argentina. The warm feeling of golden sand fades as I step into the midmost mulch, and I search for my homeland over the horizon, millions of miles away. The waves beckon to me, seemingly willing to wash away any traces of socalled sin. The bitter tang of salt on the wind and the ominous calls of seabirds worsen the explosions in my head, elevating them from mere fireworks to nuclear demons at full velocity.

Nobody here knows me. There are no admirers here to sing my praises. It irritates me to think that there are people in the world who go to sleep at night without worries, people who have never known the great deeds I’ve done for them. The first day at Auschwitz My head is pounding, so unlike my heart. It does no good to follow the heart. I am a sadist, and rightfully so. Kindness would have gotten me nowhere in these times. I was respected – feared, even, by the strongest of my subordinates. I had the power of life and death in my hands, the power to either condemn prisoners to a painful end or reach out to them as a saviour. I was Julius Caesar and they were the slaves. I remember the first day at Auschwitz, the hordes of bewildered, trembling creatures herded like cattle. Mothers clutched their children and husbands as if their lives depended on it. Not that it mattered – most of them would have been dead within the year, if not for my intervention. They stank like the dead, and looked halfway there. Those foolish soldiers were too idiotic to realise the potential that the prisoners had as my lab rats. All they cared about was their bloody glory. They never realised the full extent I would go to in order to help them, and all of my fellow Nazis. This was my gateway to greatness, and my chance to raise myself above the pawns. And with the earnings that have been hard won by myself, I’ve managed to give my family a good life and future. Rolf, my dear son, will never have to struggle for food nor money. There is a beast in every one of us I am strangely calm as the tainted water envelopes me, seeping through my nostrils and into my lungs. I get up with an aching body and iron will, and tread deeper. And speaking of Rolf, was he the same as all the gypsy twins who called me Uncle Josef? Could they have been just as human and innocent as he was in infantile form, just as susceptible to pain? Did Irene shudder at the thought of my work when Rolf asked what his father did to ensure the both of them were safe and well? Did she think of me as a monster not unlike the ones from my own son’s childhood tales? Or was I a hero to her just as much as I was to Rolf, another man fighting to win the war?

No. They were vermin, rightfully exterminated. They would have poisoned the pure bloodlines, and manipulated the innocent Aryans into thinking that they deserved the right of German citizens. Liquid has replaced the air. I breathe involuntarily. The migraines have finally left me, long enough for me to have my final thoughts. I hope it ends quickly for me. Will the world know all there is about me? No, I think, as I sink to the bottom, lungs screaming for air as the merciless waves batter me

bruised. There is one more thing they don’t know. I am no monster. It was my duty to contribute to science in the grand scheme of the world. But there is a beast in each and every one of us, and it is futile to struggle to cage it. The bubbles stream from my mouth as I smile for the last time. There is no light at the end of the tunnel. Our lives are increasingly and inextricably governed by technology. What effect does this increased reliance on screens have on our children? Kate Farr reports

ccording to a 2015 paper published by Hong Kong’s Centre for Health Protection, the median age in Hong Kong for regular exposure to screens is just eight months old, with an average of 44 minutes of television watched each day. The study also reveals that 23% of primary-aged children spend up to three hours per day in front of a screen, with this figure increasing to 40% by the time they reach secondary school.

limited, learning resource. “I think it does benefit children to experience using different kinds of technology,” Jane says. “Being able to navigate around an iPad, knowing how to research and independently use apps that enable them to be creative, for example producing stories and graphics… these are all important skills. Many apps support children's understanding of coding at various different levels, and it is understood that this will be a big part of our children’s future.”

So are these figures evidence that we’re raising a generation of screen junkies? Not necessarily so, says Discovery Bay resident Jane Faragó, a primary class teacher at Beacon Hill School, who uses tablets in the classroom as a specific, though

Danny Harrington, director of educational service provider, ITS Education, agrees. “One of the things that technology is doing is changing the parameters of how we do things… education is no different,” he says. “The iPad was never specifically

designed as a piece of educational technology, but it was designed as a mass communication device, and so for educators to incorporate tablets into their classrooms is probably more natural than people may feel.” Danny believes there can be numerous, and often unexpected benefits to utilising screens in education, including engaging children who may in the past have struggled with traditional learning environments. “Screens are interesting,” he says, “the colour, sound and movement offer a stimulating environment. They are also a key delivery method for leisure, so there is an opportunity with reluctant learners to draw them into educational experiences.”

Are tablets a valid learning resource?

Addiction to social media But as with all things, moderation is key, and this is often where problems can occur as children struggle to manage their own exposure. Clinical psychologist Dr Quratulain Zaidi of MindnLife in Central frequently works with young people who are addicted to screens, and, while she broadly supports the use of technology in education, she is increasingly concerned about the quantity and type of information that teens, in particular, are exposed to. “We know that information overload increases anxiety, and that being at the receiving end of constant information isn’t helpful,” Dr Zaidi says. “In a recent talk to a group of teens, I posed the question: Over the course of one hour, how much time do you spend working on your device, and what do you do for the rest of that time? On average, they spent just 10 to 15 minutes per hour working, with the rest spent on chatting, gaming or social media.”

Studies show that nearly half of all internet users under 35 regret posting personal information about themselves.” Providing alternatives Dr Zaidi says that the very best thing parents can do to support their teens is to keep an open line of communication: “Teach your children effective communication by engaging in conversation with them. Support them and talk to them, so they can learn the art of conversation; once learnt, this skill is invaluable.” Jane agrees that both communication and the development of social skills are key. “It is important to have a balance,” she says. “We always advocate the importance of developing children's social skills to parents. This can only develop

when they meet, play and converse with others, preferably of their own age. Children need time to explore outside in the real world, such as at the beach or in country parks, and time to create things with their hands, such as artwork, junk modelling and building with blocks or Lego.” And these words from Danny are a sobering home truth for many of us. “Parents should look to themselves,” he says. “Children copy their parents more than anyone. If you look up from your own screen to shout at them for too much screen time and then go back to your own screen, you are setting yourself up for conflict.” With that in mind, perhaps we can all benefit from powering down once in a while.

The iron-coated red sand is set against a deep blue sky that seems to roll on forever. Hidden in the Spinifex grasses and Mulga trees, you’ll spot goannas, snakes, eagles, kites, budgies and, of course, kangaroos. On the amazing drive through Arrernte country, you catch sight

Arrernte Aboriginal people have lived in the outback for over 20.000 years

of flat-topped, sandstone-capped Mount Conner, known locally as Fool-uru since tourists often mistake it for mighty Uluru (Ayers Rock). Mount Conner sits on private land, so if you want to do more than admire it from a distance you need to book a tour through Curtin Springs Station. You can also view Lake Swanson, one of seven salt lakes on the property. This arid salt mass stretches to the horizon – it’s not the place for a swim. Travelling on, you get your first glimpse of Uluru from almost 100 kilometres away. At that moment, as you stand in awe before the world’s largest monolith, you’ll understand why I recommend you journey into the Red Centre from Alice.

Uluru-Kata Tjuta National Park On arrival at Yulara, a little village about 18 kilometres from Uluru, you’ll find multiple accommodation options, varying from camping grounds to the luxury Longitude 131 resort. Be sure to book well in advance as Yulara is not the sort of place where you can just rock up and hope for the best. Before you head into the park, make the time to gen up on general safety information. Likely you’ll be vacationing in the Australian winter (from April to September) thus avoiding the 40°C summer temperatures, regardless, you should always carry a hat, sunscreen and plenty of water. And if you’re

planning on going walkabout, be sure to wear closed-toe shoes. Stop by the Cultural Centre to pick up your visitor’s guide, get a feel for how the park is managed and learn about its iconic rock. Standing at 348 metres high, 3.6 kilometres long and 1.9 kilometres wide, Uluru is considered one of the great wonders of the world. You’ve travelled a long way to explore it. But if you can bear the suspense, I’d advise you to head out to Kata Tjuta (The Olgars) first of all. Kata Tjuta is an Aboriginal word meaning ‘many heads’, and this incredible rock formation comprises 36 sandstone domes spread over an area of more than 20 kilometres.

ESCAPES

To fully appreciate the magnificence of Kata Tjuta, there is a beautiful two-and-a-half-hour hike through the Valley of the Winds to Karingana Lookout. The breath-taking views afforded by this trek are without doubt my highlight of the park. Come dusk and again at dawn, you’ll want to head to the viewing area to watch the sun go down over Uluru. As the rock changes colour, mirroring the sky around it, you’ll appreciate why Uluru is a sacred part of Aboriginal creation mythology, or dreamtime – reality being a dream.

Kings Creek Canyon

While climbing Uluru is not prohibited, traditional law urges you not to do so. The Arrernte fear for climbers’ safety even if weather conditions are fine, so the best way to explore it is by walking its perimeter. Every morning park rangers guide a flat 10-kilometre teaching walk along the base. Watarrka National Park From Yulara, it’s just a threehour drive to Kings Canyon and another impressive national park – Watarrka, home to the Luritja Aboriginal people for more than 20,000 years. You can learn about their role in shaping the area and about the more than 600 species of native plants and animals that live there, on one of many guided tours. There are plenty of trails to explore but if you are up to it, Kings Canyon Rim Walk at first light is a must. It’s a 6-kilometre round trip, with the first part of the hike – up ‘heart attack hill’ – being the hardest. After taking in the sublime views, a series of wooden steps lead you to the shady, verdant glades of the Garden of Eden, a hidden oasis at the bottom of the canyon.

If time permits, stay a few nights at Kings Creek Station, some 30 kilometres from the park. There’s some fixed accommodation and plenty of space to camp, and you can explore the surrounding sand

dunes by quad bike or camel. To end your trip on a high note, take a helicopter tour of the canyon, taking in Carmichael Crag, the Garden of Eden and Kathleen Springs.

Tuna Tartare Serves 4

450 g sashimi-grade tuna, cubed 2 green jalapeños, minced, seeds reserved 2 red jalapeños, minced, seeds reserved ¾ cup sesame oil ¼ tbsp garlic, minced 2 pears, peeled and diced 6 tbsp pine nuts, toasted 2 egg yolks 2 tbsp chilli powder 2 radishes, diced

Mix together the tuna, infused sesame oil, minced jalapeños, garlic, pears, pine nuts and egg yolks. Season well. Pack into four individual ring molds. Sprinkle with chilli powder, radish strips and mint. Serve with gently fried eggs and hot toast.

Snapper Ceviche Serves 4

300 g snapper fillets, skin removed ½ cup lime juice ½ cup lemon juice 3 tbsp coconut cream ½ red onion, finely diced 1 red chilli 2 tbsp coriander 1 cup cucumber, diced 1 cup mango, diced

Slice the fish into 1 cm strips and place in a bowl. Sprinkle with salt, pour over the lime and lemon juice and gently mix together. Let it sit covered in the refrigerator for an hour, then stir gently making sure all of the fish is exposed to the citrus juices. Leave the mixture to sit for one more hour. Strain off the excess juice then add in the remaining ingredients, stirring gently. Serve with  crunchy bread.

Gravlax Serves 10

200 g raw beets 100 g rock salt 50 g brown sugar 3Â˝ tbsp vodka 60 g fresh dill 1 lemon, grated 50 g horseradish 1 x 700 g side of salmon, skin on, pin-boned

Peel and trim the beets and blitz in a food processor with the salt, sugar, vodka, dill, lemon zest and horseradish. Rub a little mixture on to the salmon skin, then place the salmon on a large tray, skin side down, and cover with the remaining mixture. Wrap the tray in cling film, place a weight on top and refrigerate for at least 36 hours. Once cured, unwrap the fish, pour away the juices and rub off the salty topping. Pat the fillet dry with kitchen paper, rewrap in cling film, and refrigerate until needed, up to two weeks. Remove the skin to serve sliced thin with warm crusty bread.

But it’s the ‘nice’ part that makes me want to pound the loudspeakers with a dozen rounds from a large artillery piece. Nice is a word that should go the way of Kenny G records. It’s what Billy Connolly calls ‘beige’ – people and things and experiences that are colour-free and tedious. Nice is like pleasant, it says nothing and is not worth the comment. So don’t use it. It’s unpleasant.

Gratuitous advice This brings me to gratuitous advice, asinine announcements and silly signs. Well, not really. But I can’t find a device to leap this literary ravine. A recording by a local girl on the DB Ferry, in better English than mine, instructs me to ‘have a nice journey’. What if I’d rather work furiously for 25 minutes or enjoy complete silence, free from boring announcements? And journey? Are you serious? This is not a trans-Pacific yacht race.

rocking vessel without a modicum of caution? The announcement is as superfluous as ‘thank you for taking our ferry’. Hey lady, this is the only ferry. I would not have bothered had I not needed it. Capiche? Save the thank you for when you’re adding up the day’s takings. Speaking of which, the gym at my swanky club has 20 rules instructing members on how to behave, all sadly necessary based on the ‘not my problem’ philosophy. Another sign: ‘HK$76,000 worth of towels are lost every year’, as if the joint is raided in the early hours by desperate bathroom accessory addicts. No mention of theft, maybe the towels evaporated. I wish the voice on the ferry would do likewise.
