Slapping the bass Through Bopfest 2017, DB rockabilly musician Chris Parker aims to put a bit of swing into all our steps. Elizabeth Kerr reports
“L
aptop, tattoo, got to be a writer,” says Chris Parker amiably after marching up to where I’m putting down my gear at a coffee shop table, (by way of explaining how he guessed this, I was likely the person he was there to meet). The same could be said of Chris himself. The (mostly) Bristol native and rockabilly musician looks every bit the part: slouched Levis, black brogues polished, but not quite to a patent leather shine, graphic rock band t-shirt. The only thing he’s missing is the expertly coiffed pompadour: Chris is bald. In this day and age of EDM, jazz rap and Viking metal among hundreds of other music genres, rockabilly remains a bit of an outlier – something Chris is set on correcting as slap bass player for The Triplejacks, what he calls 21st century rockabilly. That might seem like a tall order in Hong Kong, but if there’s one thing that can be said for the SAR it’s that anything goes.

“There is a certain amount of rockabilly here in Hong Kong, a little tiny bit. Occasionally. There is an underground music scene here, and anyone into slightly alternative stuff will love rockabilly,” says Chris, pondering the fate of his upcoming Bopfest 2017: Hong Kong Rockabilly Boogie Night. In the works for November, Chris’ plan is to make Bopfest
an annual shindig, something a little different where adventurous music lovers can enjoy an alternative night out. Organiser of the inaugural event and set to perform on stage with The Triplejacks, Chris will also be behind the decks as CJ the DJ, one of two DJs on the night. “As with all things creative, it’s about getting people to try it for the first time. The thing about rockabilly is that there is something for everybody. There’s big band, there’s blues, bop, garage style. So when you finally get along to a ’do, you might realise ‘that’s too country for me, but I like this’. To me, that’s really cool. People are also attracted to things that look cool, but there’s not much I can do with that with this hair,” he says with a smirk. Chris’ love of rockabilly started 40 years ago in the UK when the new-school revival swept across Europe. Initially listening to his mum’s old 78s – Tommy Steele and Cliff Richard – he was resistant to the glam rock and punk of the era. Then all of a sudden, as if by magic, Stray Cats appeared. “Mind well and truly blown,” he recalls with a laugh. “I remember sitting there watching them on Noel Edmonds’ Swap Shop on the BBC. Never heard of them and I thought, ‘That’s what I like!’ That’s kind of how it started.” The passion for retro-swagger followed Chris to Hong Kong when he relocated permanently in 2007. When he landed, he was

working in training and executive education, and had to find a new career after the 2008 financial crisis. Currently the Asia-Pacific chief for limousine services provider Carey International, he travels across the region, from India all the way to New Zealand, for work, something he’s been doing since the late-’90s. That’s how he discovered Hong Kong felt like home. “I’ve been coming here since 1999, when I was travelling. I loved it at that point. I had a friend in Shanghai who I came out to see regularly and I always stopped here to get a visa. Eventually I preferred to just stay in Hong Kong,” he says. “Every time I came back it was like coming home. So when I got a job here I was over the moon.” Now a permanent resident, Chris and wife Arlyn have settled into life in Discovery Bay, even though they don’t have kids or a dog. “That does present a challenge in DB but that’s neither here nor there,” he says with a grin. “There’s no two ways about it: It’s a great place to live. It’s like living in a tropical paradise resort.” And for the record: No. Arlyn isn’t really into rockabilly. “It’s not quite her cup of tea.”
Rock this town And therein lies the rub. When most of us think ‘rockabilly’, if we think of it at all, images of greasers and Studebakers come to mind; it’s a form that harkens the past. But rockabilly

is also about impeccably styled hair, hip suspenders, stylish tapered jeans and the spirit of individuality. For lack of a better word, rockabillies are the original hipsters. Ironically, it’s also about community. “Back in the 1970s and ’80s we had sub-cultures, which no one really gets anymore. You were a rockabilly, or you were a Teddy Boy, or you were a skinhead, or a greaser, or a New Romantic, or a Mod, or any of these sub-subgenres,” argues Chris. “And you could define yourself a little bit by it. And you had a group of friends and a social life based around it. It was new, it was fresh and it was exciting. And it’s stayed with me.”
The first step is Bopfest. The Triplejacks – Chris and two Australian mates, the former guitarist for Fireballs and drummer for The Living End – will have their official debut at the event, and expect to follow that with a tour around Asia in the autumn. If you catch The Triplejacks, don’t expect to be regaled with chestnuts like Whole Lotta Shakin’ Goin’ On. Chris leans decidedly high octane and off-the-beatentrack: Tenpole Tudor’s Swords Of
A Thousand Men and glamrocker Alvin Stardust’s Coo Ca Choo are favourite covers right now. If Bopfest turns out as enthusiastic and welcoming as Chris himself is, the event should be with us for a long time to come; it might be time to invest in a pair of saddle shoes. “Absolutely, there will be dancing,” states Chris. “Bop, jive, stroll, pogo. We don’t care what you do as long as you don’t bother anybody else and you enjoy yourself.” It doesn’t get more rockabilly than that.

n an age where just about everything – including money – is easily accessible online, most people are extra cautious about how they handle their finances. But it’s amazing how many of us don’t really understand exactly what risks we are facing in a world where the internet holds so much of our most important information. Identity theft is a growing problem across the globe, with the ease of online access seeing it transcend borders. While there are measures one can take to recover lost funds in a case of identity theft, there are also a number of things worth doing
to ensure you minimise the risk of finding yourself a victim in the first place.
Know your enemy According to Hong Kong law firm Tanner De Witt, your online identity includes your social profile, credit card information and overall digital footprint. The many ways these can be exploited include mobilephone hacking, email hacking and romance scams, where people lure singles to compromised websites. Typical cybercrimes also take place following disasters or political upheaval, with cybercriminals posing as

charities to extract money and credit-card details. It is also possible for people to have their identity stolen simply by hackers scanning their credit-card details or banking passwords. In Asia, work-from-home scams are the most common form of identity theft. Oftentimes, these involve criminals convincing victims to invest money into a fake business, using the attraction of working from home as their hook. Jeff Lane, a partner in fraud and asset tracing at Tanner De Witt, says that identity theft in Hong Kong has reached significant levels.
offences “In 2016 we were instructed in more than 60 new cases of fraud, of which around two-thirds concerned CEO fraud [where hackers imitate executives in order to have ‘employees’ perform certain tasks] or identity-theft fraud,” Jeff says. “If our own figures as a medium-size independent law firm are extrapolated across all firms in Hong Kong, it is clear that identity-theft fraud in Hong Kong is being operated on a very significant scale.” The growth of identity theft is linked directly to the increased capabilities of the internet and, in turn, the population’s increased reliance on it. “The use of the internet as a means of conducting trade has exploded in the last decade,” Jeff says. “In the same period the numbers and capabilities of hackers have grown at a similar pace. The increased
volume of internet trade means that there are more users online and, with increased numbers of hackers, it is almost inevitable that there has been a corresponding increase in internet/ identity-theft fraud.”
Use protection

While it is possible to go about your business on the internet without a care in the world, in the perceived knowledge the services you are using have the necessary protection, it is important to have protection of your own.
Retaliate swiftly
According to Jeff, a few simple steps will leave you far better off, without too much effort. “Install the best firewalls and anti-cyber theft software that you can afford,” he says. “Protect your computers with individual rather than shared passwords, and ensure that all sensitive information relating to your business [accounts,

According to Jeff, the best thing you can do if you think you are a victim is act immediately. “The victim should first alert the police and their bank to try to stop or recall the payments,” he says. “Keep full records of all correspondence and payments made. If the payment cannot be recalled, seek immediate legal advice as several remedies are available for the victim [both civil and criminal], but they must be undertaken quickly.” If notified quickly, the police can trace your funds to the bank account they have been transferred to and temporarily freeze them. While this is happening, an application is made to the court to permanently freeze the funds.
9 ways to protect yourself from identity theft 1. Don’t respond to unsolicited requests for personal information (your name, birthdate, ID number, or bank account number) by phone, mail or online. 2. W atch out for ‘shoulder surfers’. Shield the keypad when typing your passwords on computers and at ATMs.
There are a number of court orders in existence designed to help the victim and, while legal proceedings can be drawn out and recovering lost funds is not a quick process, Jeff says there is often a good chance of success for those who have acted swiftly. By moving quickly, you increase the chance of freezing the account your funds have been transferred to before they are transferred again, in turn greatly increasing your chance of success.
3. Collect mail promptly. Ask the post office to put your mail on hold when you are away from home for several days.
“Recovery of funds can take several months but is often successful if actioned promptly,” Jeff says.
8. I nstall the best available firewalls and virus-detection software on your home computer.
So while avoiding identity theft is obviously the top priority, not all is lost if you do realise you have been compromised, as long as you are ready to act the minute you discover something isn’t right.
4. P ay attention to your billing cycles. If bills or financial statements are late, contact the sender. 5. Review your receipts. Promptly compare receipts with account statements. Watch for unauthorised transactions. 6. Shred receipts, credit offers, account statements and expired cards to prevent ‘dumpster divers’ from getting your personal information. 7. S tore personal information in a safe place at home and at work.
9. Create complex passwords that identity thieves cannot guess easily. Change your passwords if a company that you do business with has a breach of its databases.

There’s so much more to parenting than feeding, clothing and schooling kids. But are we teaching them the behaviours and thought processes necessary to flourish in our community and beyond? Trisha Hughes reports
N
ot so long ago, I was standing on a crowded bus on my way home from Sunny Bay. No one was in any mood to pass the time of day except for one little boy who seemed captivated by me. I put his age at about five and, as I stared blankly out of the window, I heard this little voice pipe, “How old are you?” I heard a few titters from my fellow passengers, so I played along and
smiled benevolently at him. “Polite young men don’t ask women how old they are,” I answered sagely with a smile. You’d think my witty reply would have ended the conversation, right? But no. He came back with, “My guess is you’re about 300.” My eyes popped opened in shock and the snickers

behind me grew embarrassingly louder. “Dinosaurs are 300,” I quipped. “I’m not a dinosaur.” With so many passengers apparently hanging on every word, I was determined not to continue with the entertainment, so I concentrated on the view outside as the bus moved annoyingly slowly towards my stop. In my peripheral vision, however, I could see the

Beyond right and wrong As a parent, saying your role is one of life’s most important events is doing it a grave injustice. We are literally bringing another living, breathing human being into the world and subsequently doing our very best to help him navigate the society he finds himself in. Creating the next generation of decision makers, world leaders and, hopefully, world changers is a monumental task, and most of us have no idea how hard it is going to be. ‘Important’ doesn’t even begin to cover it.

On the one hand, we all want our children to have minds of their own and work things out for themselves, rather than turn them into clones of ourselves. But on the other hand, shouldn’t we remember that when they fly the nest, the rest of the world has to live with them? In our attempts to encourage our children to develop their own characters and minds, while trying not to stifle them, are we overlooking our responsibility to also teach them basic principles, like being respectful and polite? How about honest, responsible and giving your best effort in school? Is that too old-fashioned and, dare I say it, conservative? Honesty is accepting and promoting the truth even when we don’t like what that truth is. Responsibility is acknowledging how our actions affect others as well as ourselves. Best effort includes our role in the community. In other words, aren’t we, as parents, duty bound to teach our children that some behaviour is not acceptable?
Life values kids need to learn I also believe listening is one of the most important life skills you can teach a child. It will impact on every relationship he has. And what about it’s okay to be wrong? Grades are important but isn’t it more important to be a good person? Apologise when you’ve made a mistake? Give and accept nothing less than respect? If there is basic human respect, so many other good character traits follow suit. Respect for authority also shows obedience. Respect for others covers kindness. Things like teasing and bullying happen in the absence of respect, and failure to learn responsibility at an early age is the catalyst to poor, sometimes tragic results, whether it is addiction, inability to hold a job, racism or criminal conduct. Raising kids in such a materialistic world is not always easy, especially when they are constantly bombarded with cool new stuff to covet, and encouraged to see shopping as a recreational pastime. Sure, we want our kids to have the best things in life, but we also need to teach them that even though they may not always have the latest and greatest toys and gadgets, they do have plenty to be grateful for. Plant the seeds of gratitude when they are young, so they can learn to appreciate the many gifts they have. It’s not what we do for our children that is more important but what we teach them to do for themselves. Their minds are endless sponges and it is our responsibility to splash the right information at them, and mould them into responsible and admirable members of our society. And as we know, children learn from example so when they see their parents being rude, it sends

Teaching kids to be kind It’s never too late to teach a child how to become a good person, but it won’t happen on its own. Children need to practise caring for others and expressing gratitude for those who care for them and they need to contribute to other people’s lives. Make sure your children are friendly and grateful with all the people they encounter and that they are, first and foremost, kind. Even as my own children were turning and waving happily to me on their first day at school, I spent the day crying because they were on their long march towards becoming adults. They would learn that we all have to pay our dues, we all have to work, and we all have to face failure and rejection before we can achieve success. Our challenge is help our children learn to care for and respect people outside of their small circle of friends and families, such as the new kid in class, someone who doesn’t speak their language, the helper, a shopkeeper, or simply just some poor woman standing on a bus at the end of a long day.

1. The Caring Game. This game teaches empathy – once children know what it feels like to have their feelings hurt, they learn to treat others with respect and kindness. How to play: Draw a series of faces with different ‘unhappy’ expressions – sad, angry, scared, sick – on pieces of card (at least one for every child in the game). Lay the cards out, face-side down. Ask each child to choose a card, and act out the feeling shown. For example, the child who draws the card with the scared face, might pretend to shake or hide under his chair. Explain to the other players that they can make their friend feel better by asking him questions. “Why are you scared?”, “What can I do?” After he gives an explanation – “I saw a ghost in my bedroom last night” – the other kids provide solutions. They might give him a hug, suggest he leaves his nightlight on, or tell him gently that ghosts are only make believe.
2. Mother, May I? This game teaches kids to be courteous, which means they are well on their way to learning about respect.
How to play: Nominate one child as Mother. The other players line up facing her, about 10 feet away. Mother tells one player at a time to hop one step forward. If a player responds, “Mother, may I?”, Mother says, “Yes, you may,” or “No, you may not”. If Mother’s reply is yes, the player must say thank you before he moves. If any player forgets his manners or hops forward without permission, Mother sends him back to the starting line. Play the game until one player reaches Mother.
3. Honest to Goodness. This game teaches kids that it’s okay to be honest about their feelings, whether positive or negative. How to play: Settle the players comfortably and let them know they will each be asked to finish the sentence: “I was surprised when…” To get the game in motion, start by telling your own story: “I was surprised when Sarah’s Daddy suggested that we move to Discovery Bay.” After everyone has had a turn at being ‘surprised’, continue the game substituting other emotions like ‘happy’ or ‘scared’.
4. The Balloon Game. This game teaches kids about teamwork and the value of working together towards a common goal.
How to play: Each player gets two balloons and a partner to play with. Each team of two has to keep their four balloons in the air for a set time (start with 30 seconds). To make the game more challenging, you can rule that the children can only touch the balloons with one part of their body, such as their forehead or the palm of their hand.

iscovery Bay has long been known as a runner’s paradise but even some of the best trails and tracks Hong Kong has to offer are sometimes not enough to get us off the couch. That’s where the newly formed Discovery Run comes in, a community initiative soft-launched in June this year by well-known local athletes Olivier Baillet, Katia Kucher and Thomas Kiprotich.

Every Monday at 7.45pm, the trio welcomes all DBers to meet at the playground at Tai Pak Wan for a 5-kilometre group run, a concept that has been well received thus far.

The Discovery Run is many things – a way for Olivier, Katia and Thomas to give back, a way to promote healthy living, a way to contribute to a close-knit community and, most of all, a reason for DB residents to stay active. Giving back Olivier, a long-time athlete who runs executive endurance coaching business Beyond the Line, came up with the idea for the Discovery Run as a way to share his considerable expertise. “As full-time coaches, we need to make a living but I feel that it is part of my duty, my role, to help people for free too; to share the enthusiasm and the lifestyle that provides so much good to me, my family, my clients and my training partners,” he says. “Being very much involved with Splash in DB [the free swimming-for-helpers

programme], I realised I had the means to provide a lot.” The Discovery Run is built on the Parkrun concept, a hugely successful organisation that started in England and now organises thousands of runs across the world. “I contacted Parkrun to see if we could work with them but they were too busy developing elsewhere. Hong Kong was not their priority,” Olivier says. “I decided to do it without them but as I have limited time and already have a lot of projects on my plate, I shared my plan with Katia and Thomas, who were instantly sold to the idea.” Getting active It’s clear that having three top DB running coaches – the triathlon coach (Olivier), the road running coach (Thomas) and the trail running coach (Katia) – offering their patronage for free is a very cool concept.

While Olivier brings his years of in-depth fitness knowledge to the group, Katia, according to Olivier, “is fantastic at motivating people with her energy, drive and charisma”. Katia feels Thomas – who runs DB outdoor fitness training company Kipmovin and is one of Hong Kong’s top runners – is a real draw card for the club. Forty DBers attended the first Discovery Run and Katia, who runs DB personal training company d.BeFit, is confident interest will continue to build now that the club is back on track after the summer break. “Having a set schedule, easy access to a running course and being part of a running group is a lot more enjoyable than running alone,” she says. “Physically and mentally it makes it a lot more fun. Everyone can join, if you’re a new runner, you can run/ walk, if you’re a fast runner you can push yourself to run a fast 5 kilometres.” Pointing out that most people who do not run consistently have tried but don’t stick to it, Olivier says:

“With us, they have a framework, a time, a rendezvous and they will need an excuse not to come. The fact that we are here every week, with a course well defined in advance and different pacers [usually three] helps a lot. We hope to create an event that is here to stay and that residents look forward to.”
the process, stay active and fit, Katia says: “Running regularly has several health benefits. It helps prevent heart disease, high blood pressure, stroke, type 2 diabetes and weight gain. It also improves the quality of our emotional and mental life. For many people, running is a great therapy. With today’s more sedentary lifestyles,
to keep moving and stay active is very important, that’s why running is so beneficial.” And for those still not convinced: “It’s all positive,” Olivier says. “At worst, if you don’t like it, you’ve tried. But I am sure you will like it. We understand that running can be intimidating but with us, it’s not.”
Living well The benefits of exercise as part of a healthy and balanced lifestyle are well documented but not always put into practice. Hoping that the Discovery Run will inspire people to run and, in

Twinning is winning
What is life like for those parents who welcome not one, but two bundles of joy – at the same time? Kate Farr learns more about the life-changing magic of multiples
S
arah Ward, mum to twoand-a-half-year-old Alice and Ben, first discovered that the family would be welcoming twins at just seven weeks pregnant. “To see those two little hearts beating for the first time was indescribable,” she says. “I burst into tears!”
A two-for-one special When it came to preparing for their new arrivals, both Sarah and Amanda chose to be pragmatic about their nesting, with neither mum opting to buy two of everything. “I did buy some gender-specific clothes, but otherwise the twins shared bottles, blankets and so on,” says Sarah.
“Two cribs and a double stroller are essential purchases,” says Amanda. “But my best buy was a book – Healthy Sleep Habits, Happy Twins by Dr Mark Weissbluth.” The women’s experiences varied greatly when it came to ensuring that they had sufficient support. While Amanda’s recently retired dad was able to move in for a couple of months to help out, Sarah, whose family lives in the UK, relied solely on her husband and helper.

For Amanda Cheung, mum of six-month-old sons Mason and Grayson, the journey to becoming a mother of two was quite a rollercoaster ride. After experiencing some bleeding at nine weeks pregnant, she was rushed to the emergency room. Six hours later, after numerous tests and a 40-minute ultrasound, her husband was brought in. “The sonographer proceeded to show us
heartbeats on both the left and right sides,” Amanda says. “We’d gone from thinking we had one baby, to potentially none, and finally to two!”

“I’ve met a few other mums of twins, which helps a lot when you need a sympathetic ear or some advice,” Sarah says. “I’d definitely recommend joining a few of the mumorientated DB Facebook pages, as well as the Hong Kong Mothers of Multiples Facebook page.” Both Sarah and Amanda admit that it can be challenging for busy twin parents to stay mindful of their relationship with each other. Aude Mahoudeau-Campoyer, practitioner of psychotherapy, sophrologist and hypnotherapist at DB-based Brief Therapy HK, backs this up, saying: “A couple go from being two individuals taking care of each other to the same individuals taking care of two young babies. They have no time for each other, never mind time for themselves.” Aude encourages twin parents to accept that they can’t be fully present for each other, knowing that this is only a phase. “It is important, however, to find some time to share your feelings, fears and concerns,” she says. “This is one of the most exciting adventures of your life, so team up and accept the challenge.” Aude offers sophrology sessions to help new mums find their balance after delivery. “It is a time for women to reconnect with their bodies, sensations and feelings, and to reconstruct their selfimage,” she says. Double the happiness When it comes to the challenges that twins can bring, both mums agree that the logistics of two can sometimes be hard to figure out. Amanda explains: “With twins, everything is double. Double the happiness but also double the trouble and the mess! Even packing

It takes us double the time to get ready and out the door.” For Sarah, getting around with twins is the biggest challenge, especially relying on public transport. “Negotiating taxis and busy roads with two toddlers can be tough but it’s doable,” she says. Sarah and Amanda agree that finding time to bond one-onone with each child is another

challenge – something that Aude considers essential. “This is a natural development process, as it helps children separate and individuate,” Aude explains. “As a parent, spending time alone with one child allows us to know their personalities and therefore take care of their needs in a better way. We all need to be understood for who we are and we all want to be discovered. Feeling unique is crucial to becoming a healthy and balanced adult. “The process can take longer for twins as they need to learn to separate and individuate not only from their mothers but also from each other,” Aude adds. “This process is ongoing and fluid throughout their lives.” At the end of the day, both mums agree that twin parenthood is worth all the challenges. Sarah enjoys watching her twins’ special bond develop: “They’ll be fighting over a toy one minute and smothering each other with kisses the next! They are also quite protective of each other – my daughter is usually the one to stand up for her brother in any playground quarrel.” What Amanda finds most rewarding is that her boys have someone to share everything with: “It’s like having a best friend for life,” she says. “Even now at just six months old, watching them interact with each other really puts a smile on my face. They babble to each other all day and hold hands while sitting next to each other.” It seems that twins really are twice as nice.

Through hearty and well-loved family recipes, Kay Thwe I Oo introduces the delights of Burmese cuisine
Weq Tha
(Pork with tumeric) Serves 4 • 2-inch stick fresh ginger • 500 g pork fillet or belly pork • 1½ tbsp turmeric • I bulb garlic, diced fine • 1 medium onion, diced fine • 2 tbsp soy-bean oil • 4 eggs Pound the ginger to a paste. Cut the pork into bite-size chunks and mix in the ginger, 1 tbsp turmeric and plenty of salt. Leave to marinate for 30 minutes. Heat oil in a wok and add ½ tbsp turmeric. Fry the pork on a medium heat until brown. Add 300 ml water, cover and simmer for 20 minutes. Stir in the garlic, onion and soy-bean oil. Continue to cook on a medium heat until the excess liquid evaporates. Serve with a fried egg.

(Chicken and vegetable noodles) Serves 4 • 400 g chicken, cut fine • 1 tbsp turmeric • 1 vegetable stock cube • 1 onion, roughly chopped • 1 carrot, diced fine • 3½ tbsp soy-bean oil • ½ cauliflower, bite-size pieces • 8 long green beans, diced • 1 small cabbage, shredded • 400 g egg noodles
Fry the chicken with the turmeric in plenty of oil. Add 275 ml water and half a crumbed vegetable stock cube. Stir in the onion and carrot on a medium heat, adding 2 tbsp soy-bean oil. Add the cauliflower and green beans, and cook until the liquid evaporates. Add oil, half a crumbed stock cube, and 1 tbsp soy-bean oil. Add the cabbage. Meanwhile, boil the noodles until soft, then drain and coat with soybean oil. Combine the chicken mix and the noodles, and garnish with celery leaves. Serve with chicken stock/ consommé and a chilli water salad. To make the salad combine equal quantities of shredded cabbage, cucumber and onion, first soaking the onion in cold water until soft. Add chopped green chillies to taste. Mix in the juice of 2 limes and plenty of salt.

Mohinga
(Rice noodle and fish soup) Serves 2 • 1 onion, finely diced • 1 tsp ginger, crushed • 1 tsp turmeric • 2 tbsp shrimp paste • 2 red chillies, chopped • 60 g water chestnuts, sliced thinly • 2 stalks of lemongrass, sliced thinly • 675 ml fish stock • 100 g rice, toasted and ground • 500 g dried thin rice noodles • 200 g firm white fish, bite-size pieces
Heat oil in a saucepan and fry the onion, ginger, turmeric, shrimp paste, chillies, water chestnuts and lemongrass until the onion has softened. Add the stock and whisk in the toasted rice. (To prepare the rice, toss in a heated pan until the grains are browned, and crush using a mortar and pestle.) Simmer for around 15 minutes until the soup has thickened. Add the rice noodles and continue simmering until just cooked. Add the fish, such as haddock, pollack or sea bass, and cook for a further five minutes. Serve with a soft-boiled egg, and garnish with chopped spring onions, chopped chillies and beansprouts. Find more classic recipes @ www.arounddb.com

Why do the rich wear rags? Dedicated follower of fashion Peter Sherwood gets into a spot of bother finding out
I
'm not known to grumble endlessly, preferring to vent any accumulated exasperation and residual irritation by kicking the dog. But let me tell you, I’ve been hoodwinked, fooled, deluded, hornswoggled and generally taken for a ride. There I was in the swish Mandarin Oriental exchanging pleasantries with concierge Giovanni, an Italian of my acquaintance almost from the time when he stood, bemused, on a vacant waterfront site while they constructed the hotel around him. We go back a bit. In the lobby were a bevy of female tourists, mostly 30-somethings, and a few of a riper vintage trying earnestly to blend in. What confused me in this luxurious venue was their abject poverty. What were they doing here? Were they upscale beggars? How did they gain entry to a sophisticated hostelry that prides itself on an unspoken dress code of smart casual and high fashion?

Most of these ladies wore what were clearly jeans bought at Oxfam, many of them ripped to shreds, great gaping holes in the knees and one with a slice ripped out of the rear showing a piece of miniscule underwear,
clearly designed to reduce the cost of the fabric. I could tell they were struggling financially by the cheap-looking oversize bags they carried; inferior versions of Gucci and Prada made in a China factory that likely churns out real ones too – if indeed there are real ones. It was only later I heard this was a fashion statement, but meanwhile I felt so troubled that I stepped forward and offered one particularly pathetic creature in rags a HK$50 note. Well, she hauled off and slapped me, while letting forth a stream of pejoratives the likes of which I had not heard since an unfortunate confrontation with a Tourette’s sufferer on the promenade in San Sebastian in 1983. (I believe that outpouring of bruising invective was in Basque, but I have no way of knowing.) I retreated, stunned by the onslaught, while my Florentine friend began waving his arms, gesticulating wildly and generally being Italian in a chaotic demonstration of sympathy for me and for women shamed by penury. Naturally upset and bewildered, I wandered off to the Four Seasons to calm my nerves with a small brandy, not imagining for a moment that I would be assailed by yet more impoverished women, a few looking more down-and-out
than the Mandarin’s penniless. Here, the jeans sported were nothing more than remnants, slashed in a razor-wielding frenzy, hacked, gashed, chopped and peppered by a 12-gauge shotgun blast. It is disturbing to think that some people are so needy they can’t afford a new pair of jeans from Gap. Or is haute couture driven largely by shepherds? Later I discovered the ruse: Today’s fashionistas demand their garments horrendously massacred and sold at alarming prices. The unadulterated product is considered quaintly démodé. Maybe I’ll buy some new shirts, mutilate, crush, crumple and rip them to bits, then parade past Giovanni like George Clooney. Either I’ll start an avant-garde movement, or be led quietly to the door.
