“BEST EYEWEAR” he Boston Symphony Orchestra has a summer home at Tanglewood, and the Chicago Symphony Orchestra has Ravinia. But Pasadena has no reason to be jealous. Its outdoor summer concert venues rival some of the nation’s finest. OK, so they’re on a smaller scale. But that’s part of what makes them wonderful. For the past 12 years, Southwest Chamber Music has made The Huntington Gardens its summer home. Southwest Chamber Music is something of an international phenomenon. The Pasadena-based ensemble led by Artistic Director and Conductor Jeff von der Schmidt earned four Grammy nominations in three consecutive years and brought home two awards for its recordings of the music of Mexican composer Carlos Chávez. In addition to reaching out to the community with its concerts and educational programs in the public schools, Southwest Chamber Music has also touched the international community with its recordings and Composer Portrait Series. Pasadena Mayor Bill Bogaard even gives Southwest Chamber Music’s CDs as gifts when he travels abroad. Our other summer music highlight this month is the Pasadena Jazz Institute. For the third year, “Jazz on the Terrace” brings summer concerts to the rooftop of the Pasadena Museum of California Art. Carl Kozlowski talked to founder Paul Lines about his dreams for the Institute now in its fifth season. Lines, the do-it-all man behind the Institute, shared the tough times he made it through, his vision for the future and his enthusiasm about what he calls “America’s classic music.” So there’s no need to travel far. AN APRIL EXHIBITION AT THE PASADENA MUSEUM OF CALIFORNIA ART showcased images that included a homeless man, a brave American soldier as he served in Iraq and a Tibetan monk, as well as quintessential California landscapes of locales ranging from the wine country and the High Sierras to Laguna Beach and La Jolla. This eclectic collection represents new work by 119 of the country’s foremost fine artists and was displayed as part of California Art Club’s 95th Annual Gold Medal Juried Exhibition. The club, founded in 1910, has a history of being untraditional in its mission to promote the traditional art forms of painting, drawing and sculpture. It was the first artists’ organization to allow women as members. In the late 1920s and 1930s, when the club operated out of the Hollyhock House in Barnsdall Park, it was a catalyst for discussions on groundbreaking efforts in art, literature, music, architecture, theater and film. ‘Expanding Horizons’

ITH ITS SUMMER FESTIVAL AT THE HUNTINGTON, Southwest Chamber Music moves its intimate concerts outdoors, to an ethereal garden setting. Imagine notes from Mozart’s “Quartet for Flute and Strings” set free like butterflies among the camellias and palm trees of The Huntington Gardens. For the 13th annual festival, Artistic Director and Conductor Jeff von der Schmidt has scheduled plenty of Mozart in celebration of his 250th birthday. But von der Schmidt has also included more contemporary selections: an emotional work by Eric Zeisl, who fled Vienna during the second World War and had a successful composing career in Hollywood; a masterpiece written by James Newton of the Luckman Jazz Orchestra and dedicated to Winnie Mandela; and a piece about spring rain by Chen Yi, an up-and-coming young composer from China working in the United States. Embracing the diversity of new music being composed throughout the world, while respecting the tradition of European music, has been part of Southwest Chamber Music’s unique focus. Southwest Chamber Music’s current season is called “Expanding Horizons” in recognition of its continuing mission to create multicultural programs that reflect the diversity of its audiences. “I believe that one of the most important things to

do with classical music is to integrate the world around us into its core repertoire,” said von der Schmidt who cofounded Southwest Chamber Music with his wife Jan Karlin 19 years ago. “These expanding horizons have helped us look at the potential audiences of Southern California as unlimited.” “We tend to be this huge sponge of a culture,” von der Schmidt said about Southern California. “I find that inclusive programming is very, very interesting and widely accepted. I want to change it from accepted to expected.” While Southwest Chamber Music’s diverse programming might have seemed like an artistic risk, it has definitely paid off. This year the ensemble will move from The Huntington Art Gallery loggia, which will be under construction, to the garden terrace next to Friends Hall, increasing the number of tickets they can sell. And filling those additional seats won’t be a challenge. “For over a decade now, we’ve been selling these concerts out,” von der Schmidt said. “By and large, people have enjoyed meeting and hearing from composers of their own time.” In further testament to its success in promoting cultural diversity in music, Southwest Chamber Music has a 12 CD set of music from its “Composer Portrait Series,”

Cambodian-American composer Chinary Ung, who teaches at the University of California, San Diego, was the focus of this year’s series. That collaboration will take Southwest Chamber Music to Cambodia and Vietnam to perform concerts and educate students. The Vienna-trained von der Schmidt said that Southwest Chamber musicians will be “the first Americans in residence at the Hanoi National Conservatory since the end of the Vietnam War.” Perhaps Southwest Chamber Music’s greatest success has been its multi-year project aimed at recording, for the first time, all of famous Mexican composer Carlos Chávez’s chamber music. The first three volumes of the “Complete Chamber Music of Carlos Chávez” earned four Grammy nominations in three consecutive years. The final CD is due out this summer. Southwest Chamber Music won 2003 and 2004 Grammy Awards for “Best Small Ensemble” for volumes one and two. Volume three, which was recorded in Los Angeles with the Mexico-city based Tambuco Percussion Ensemble, received 2005 nominations for “Best Small Ensemble” and “Best Classical Album.”

Though they didn’t bring home another Grammy this year, the experience has been instrumental in earning Southwest Chamber Music an international reputation and a lot of visibility. “It’s completely changed who we are,” von der Schmidt said. “Some friends of mine in jazz said, ‘Well, you know you’re not a one-hit wonder.’ To have four nominations … puts us in the category of every international artist in the field, and this is something that’s supposed to be done by budgets in the millions, not in the thousands like ours. This is like a small independent film that was nominated for ‘Best Picture’ at the Academy Awards.” Von der Schmidt humbly attributes the success of the project to a heightened atmosphere of cultural sensitivity. “I think it was the right project at the right time,” he said. “Everyone is becoming more and more aware of the Latin influence in our own country, and that influence translated into votes for our project at the Grammys.” But von der Schmidt also selected Chávez’s works for a personal reason. “I grew up in Monterey Park, and the family that took care of me was from La Paz in

Ensenada,” he said. “And during the 1960s, Columbia Records had issued a series of recordings with Carlos Chávez conducting the National Symphony in Mexico City of all six of his symphonies. And those records became the soundtrack of my childhood. I would wait for my parents to pick me up from work in these friends’ homes from Mexico, and Chávez would always be on in the background.” Southwest Chamber Music percussionist Lynn Vartan, who performed with the Tambuco Percussion Ensemble on the third CD, was especially pleased that percussion music in particular received that level of recognition. Vartan, who will also play the marimba for James Newton’s piece on August 11 and 12, said the project was a unique experience. “In the world of percussion, Tambuco is incredibly well-known,” Vartan said, “and the music that we did, the music of Carlos Chávez, is also incredibly well-known. The two pieces in particular, ‘Tocada’ and ‘Tambuco,’ the name of the piece for which the ensemble was named, are two landmark percussion pieces in our sort of historic repertoire, which of course —Continued on page 18 ARROYO ~ JUNE 2006 ~ 15

BY CARL KOZLOWSKI ~ PHOTOS BY ERNEST KOBERLEIN AUL LINES HAS HEARD A LOT OF GREAT MUSIC IN his lifetime, and for the past five years, he’s been sharing his favorites with area listeners as the founder of the Pasadena Jazz Institute. Bringing in shows by luminaries like Rita Coolidge or presenting an innovative, jazzy take on “The Nutcracker,” his productions have added flair to the Crown City’s nightlife. Now, having reached the milestone of the Institute’s fifth anniversary, Lines is proudly looking back on his accomplishments while aiming strongly for future successes. And starting with a fifth anniversary party on June 8, this summer could be his most exciting one yet. “I guess the common thought that it takes three to five years to build a business is true. I really feel like after five years things are really coming together. Everything we do has continually expanded,” says Lines. “Last year we did four shows on the Terrace [of the Pasadena Museum of California Art], and this year we’ll do 21, plus we’ve added a series of piano solo concerts inside there. We’re rolling up our sleeves to do more than we normally would.” Indeed, Lines is headed for quite a workout this year, as the jazz camp he started for area youths has grown into hosting five week-long sessions at Pasadena City College, beginning July 24. The demand for the camps has grown from 10 students four years ago to an anticipated 200 students this year. He’s also offering a weekly series of Friday night jazz concerts at the Paseo Colorado mall courtyard and shows

featuring piano soloists in the Founders Gallery of the Pasadena Museum of California Art (PMCA). Pasadena might have once relied on the Playboy Jazz Festival to send some shows to the city limits, but now it’s clear that Lines is definitely the driving force for the music in the city. “People asked when I started, ‘Why Pasadena? Why not Los Angeles?’ I looked at the city of Pasadena, whose founders envisioned it as the Athens of the West,” explains Lines. “I surveyed the cultural scene, saw numerous museums, theater in the city and dance groups, but something important was missing and that was something the Jazz Institute gives to Pasadena and provides it with the last remaining piece of its cultural puzzle. You have a hole in the cultural bucket without America’s classic music, which is jazz, so Pasadena is a perfect place to add this cultural aspect.” Lines has long had a professional connection to jazz, having been a drummer for years before starting the Institute. In fact, he still plays shows, including a string of gigs with legend Mose Allison in Phoenix in May. He said he was inspired to create the Institute one day while driving past downtown L.A.’s Walt Disney Concert Hall, as it was under construction. “I experienced an epiphany then, back when it was a hole in the ground and had a sign saying ‘Future home of LA Philharmonic,’” says Lines. “I saw it as a big shiny museum to preserve Europe’s classic music. doesn’t date back that far; percussion ensemble is rather new. So those pieces are some of the first pieces written for percussion ensemble. It was really amazing to have the chance to record these pieces with a Mexican percussion ensemble that is so steeped in the history of this composer, and was in fact named after that composer’s piece. And the sessions, we just had so much fun, I can’t even tell you.” Southwest Chamber Music’s partnership with the Tambuco Percussion Ensemble led to its being invited to Universidad Autónoma de México in Mexico City to perform all the works in a five-concert series. “[It] is unprecedented for an American ensemble to get an invitation like that,” von der Schmidt said. As Southwest Chamber Music heads toward its 20th anniversary season, it continues to broaden its horizons and audiences not only with its concerts and recordings but also with its educational programs. Project Muse brings concerts to six schools in the Pasadena and Los Angeles Unified School Districts. The Mentorship Program provides middle and high school students with weekly lessons. Still another program that reaches out to children who might not otherwise have the opportunity to hear classical music is Music Unwrapped, which features family concerts at the Colburn School for Performing Arts. So, if you haven’t yet heard the Grammy-winning Southwest Chamber Music play at one of the regular season concerts at the Norton Simon Museum or the Colburn School or at the special “Blendings: Wine and Music” events at the Armory Center for the Arts, the Summer Festival might be the ideal time. Perhaps unconsciously using an analogy fitting with “Blendings,” von der Schmidt said, “I think we’re like wine makers where now the wine’s really good. into construction himself, Lines started modestly, hosting the first season of the Institute’s shows in the 135-seat Pasadena Playhouse Balcony Theatre. He takes pride in re-opening that space after a decade of dormancy. He found such a positive response that he was able to move into a 209-seat venue for the second season and then exploded onto the PMCA Terrace with its 400plus seating capacity from the third season on. “We’ve nearly doubled our audi- Paul Lines, founder of the Pasadena Jazz Institute ence every single season, and I don’t know any performance group that can boast of such figures,” says Lines. “I envision an actual Institute someday, with a gallery that holds a pictorial history of jazz from Scott Joplin to John Coltrane, and three busloads of kids every day taking tours of the gallery and then sitting in a theater to see their first jazz concert and then having a place to study jazz performance.” Lines names jazz great Wynton Marsalis’ ambitious Jazz at Lincoln Center series in New York City as the model he hopes to follow “because they started a house for jazz in New York. We have the chance to be the Lincoln Center of the West Coast.” While that goal may sound overly ambitious, Lines has been through enough ups and downs already with the Institute to know he has to keep a level head. “Since the beginning, I think this has been a lesson for everybody who tries to do something big and nearly feels like giving up, and I’ve nearly given up every year. We were at the Balcony Theatre and lost our lease, and I was gonna pack it in,” Lines recalls. “I then found Travis Auditorium at Fuller, doing jazz concerts at a seminary, serving tea at intermission, but by the end we were packing that place. Things have come up where it’s been a struggle because we have not succeeded in funding the idea so much other than myself with my Capital One card.” What nearly did the dream in for good was the highly ambitious “Nutcracker Swings” show in December 2004, in which Lines attempted to pack the Civic Auditorium for several shows that mixed ballet with modern dance, all backed by jazz-adapted classic Tchaikovsky tunes. While the shows drew critical raves and thoroughly entertained those in attendance, filling the huge venue was still outside Lines’ grasp at such an early stage in the Institute’s history. He was ready to pack it in when a musical legend appeared, almost like magic, to save the day. “It was an artistic success but not a financial one. I sat down and talked to this lady for an hour in a nearby bar, not knowing who I was talking to. She told me she was in town as a jazz singer, and I thought ‘another one’ ‘cause I was down and out,” Lines says. “I got up, said ‘What’s your name?’ and she said, ‘I’m Rita Coolidge.’ And I got excited again because she really encouraged me to move forward and then agreed to perform in our Jazz on the Terrace series last year. “If I get excited and enthused about something, I can garner the forces to really move mountains. I’m doing it all — executive producing, directing, composing — all those things. MANY PEOPLE OWN DOGS. AFTER ALL, DOG IS MAN’S (OR woman’s) best friend. But dogs are a lot of responsibility. And they sometimes misbehave. Two common problem behaviors are incessant barking and jumping on people. Dogs are going to bark. There’s no avoiding that. However, some dogs bark more than they otherwise would because of how their owners respond to the barking. Likewise, many dogs jump on people because of how the owners respond. To solve these problems, the first thing to consider is what you do when your dog barks or jumps up. Not surprisingly, many owners scold their dog by yelling at it to stop barking or jumping. Or when the dog jumps up, the owner repeatedly pushes it down. Although these actions seem to work in the short run by getting the dog to stop barking or jumping, they often inadvertently reward the dog’s behaviors by immediately giving them attention. With the exception of food, dogs want attention. So when your dog barks or jumps on you or others, it gets the attention it wants, which teaches the dog to bark or jump at those times. To change your dog’s behaviors, you must change your behaviors. First, you must ignore the barking and jumping and ask your guests to do the same. That means do not speak to, yell at, look at or touch the dog. I know you say that you’ve tried this and it didn’t work. One thing to know about ignoring behavior, however, is that the behavior will almost always get worse before it gets better. That’s just your dog trying harder to get the attention you’re withholding. Once you begin to ignore, you must be consistent, which means do not give in no matter how bad the behavior gets. You must plan to ignore the behavior when you know you can wait it out. Giving in after you’ve begun ignoring is worse than not ignoring at all because you will teach your dog to engage in longer bouts of the behavior. It is also essential that you (and your guests) reward any appropriate behavior that your dog does. Such behaviors could include sitting, playing with a toy, lying down or just walking around. You can reward these alternative behaviors by praising or petting your dog or occasionally using a treat. If the dog jumps on you or barks, immediately ignore the behavior by looking away and not saying anything. Once your dog has stopped and begun to do something else, immediately pay attention to it again. If you consistently follow this simple advice, you can begin to enjoy a quieter and less hectic life with your dog. AM

The Pasadena Arts Council honors six leaders in the arts community with its Gold Crown Awards. BY CARL KOZLOWSKI PASADENA’S A GREAT TOWN FOR THE ARTS, whether one loves listening to live music, admiring artworks in museums, seeing plays at worldclass theaters or catching a film on one of the city’s more than 40 movie screens. The city also has plenty of arts heroes worthy of awards. On Sunday, June 4, six of the top arts leaders in the Crown City will be given Gold Crowns thanks to a special ceremony hosted by the Pasadena Arts Council and Executive Director Terry LeMoncheck. The Gold Crown honorees are selected for their leadership in inspiring a deeper commitment by others, the delight inspired by their artistry and the dedication they show to new generations of arts-loving youth. Arroyo congratulates each of the honorees: Mayor Bill Bogaard has experienced several incarnations in the arts world, as a board member, donor, collector, promoter and even participant in arts and culture activities throughout his lifetime. He has supported visual arts, music, theater and dance since he moved to Pasadena in 1970. He also laid the groundwork for the city’s first Arts Commission, played a key role in the adoption of the city’s cultural master plan and helped lead the way in drawing the prestigious Art Center College of Design to Pasadena. Billy Mitchell is a jazz musician extraordinaire who plays both old-school be-bop and contemporary smooth jazz. He has shown a similarly broad range of creativity when offstage. Most importantly, Mitchell founded the Scholarship Audition Performance Preparatory Academy (SAPPA) in 2002, a group that works to develop students’ skills toward the ultimate goal of applying for and winning arts competitions. Kevin X. Nguyen is being honored for his work as an artist, industrial designer and potter. Yet his own personal travails en route to his current status as the co-founder of the highly popular Xiem Clay Center show an even more dedicated side, as he arrived in the United States from his native Vietnam at age 14, mastered English and

Spanish and ultimately graduated from Art Center College of Design. The Pasadena Junior Theatre is the only group honored with the award, but it’s certainly made its mark by providing professional theater and theater education experiences to children of all ages, cultures and levels of interest. Founded in 1999, the organization brings low-cost performing arts classes to the public schools, so that all students can have artistic opportunities. Hilary Thomas is yet another of this year’s winners, thanks to the fact that this Joffrey Ballettrained dancer founded Lineage Dance in 1999 to raise money for charities. With her dancers, Thomas has raised nearly $75,000 through benefit performances across the nation. The next performance, which will benefit Global Aids Interfaith Alliance, is June 3 (see the List on page 60). Read more about

White has served Pasadena throughout her 40 years here, but her biggest impact has been through her work with the Pasadena Playhouse over the past decade. She was first its director of development, and for the past six years, she’s been the theater’s executive director. White also volunteers with Union Station Foundation and Young & Healthy and served for two and a half years as President of the Pasadena Arts Council’s Board of Trustees. Together, these artists are role models that make our city an artistically vibrant place to be. ERUSING JIM WATTERSON’S BIO IS A BIT LIKE OPENING an inspirational novel. A brief catalog of the myriad outreach campaigns he’s spearheaded, charities for which he’s volunteered and artistic institutions he’s served, it reads like the classic gentleman’s charmed life, in which said genteel character brings together the haves and have-nots while hobnobbing with the talented glitterati. “I love helping people,” Watterson says with a self-deprecating chuckle. “It’s [about] solving the problem; it isn’t so much altruism. I wish I could paint myself into a more saintly corner, but … the minute someone says, ‘I’ve got a problem,’ I say, ‘All right.’ That’s just my natural bent. So that’s how I get sucked into the Bermuda Triangle of all these events.” “All these events” is a reference to his extensive networking and fund-raising endeavors. At the nexus where philanthropic, religious and social service organizations overlap and collaborate, the 71-year-old Watterson has been one of greater Pasadena’s most sought-after and widely respected volunteers for the better part of the past three decades. He currently sits on the board of directors for the Pasadena Playhouse, Pasadena Dance Theatre, Friends of the Levitt Pavilion and The Pasadena Symphony. In the past, he has served on the boards of the American Cancer Society, Armory Center for the Arts, Arts Inc., Centre Theatre Group, the Children’s Burn Foundation, Whittier College, Shakespeare Festival and Young & Healthy. He’s chaired benefits for the Playhouse, The Symphony, Descanso Gardens and Friends of the Joffrey Ballet. He’s a former member of the

Vestry at All Saints Episcopal Church, during which tenure he played a vital role in such community events as the annual Posada, a candlelight walk benefiting AIDS Service Center. As vice president in charge of public relations and special events at Robinsons-May, Watterson crafted what he calls “strategic alliances” — partnerships between the corporation and the community, commerce and art, that essentially marketed philanthropy in mutually fruitful ways. Those relationships begat outreach campaigns benefiting Downtown Women’s Center, the Los Angeles Public Library, the Make-aWish Foundation and Read America and led to various projects that recruited celebrities such as Julie Andrews, Edward James Olmos, Jack Lemmon and Jimmy Stewart in support of worthy charities. When Watterson retired from Robinsons-May after 21 years in 1998, he easily segued from organizing events for profit into more passionately engaged volunteerism. “For the last 20 years I was in the company,” he explains, “I was also involved in philanthropy as a volunteer. So I had this kind of double vision: I was giving money away, and I was also trying to get it. It helped me see both sides of it. I tried to bring what I would call progressive marketing savvy to the nonprofit world.” On March 19, friends and colleagues gathered to formally salute his efforts at a private house concert by Rock & Roll Hall of Famers David Crosby and Graham Nash. Fittingly, the event was also a fund-raiser for the Grace Center, a nonprofit organization serving abused women —Continued on page 50

and children in the San Gabriel Valley. “How can you go through life when you’re involved with all this humanity and not be touched by it?” he replies when asked how he came to be such a dedicated volunteer. He traces most of his activism to the day he first set foot in All Saints Church. “I don’t think I’d been to church in 15 years at that point,” Watterson recalls. “I walked in, George Regas was preaching, and that was the beginning. It took me another 14 years before I finally moved here [to Pasadena]. Best decision I ever made.” All Saints has a lengthy history of practicing the gospel it preaches via social activism; AIDS Service Center, Grace Center, Union Station and Young & Healthy are some of the now-independent agencies servicing Pasadena that evolved out of church programs. For Watterson, taking a leadership role in the congregation naturally opened doors to more widespread community involvement. It’s a logical assumption that volunteerism is an expression of his religious beliefs, but, while he acknowledges All Saints as “the original link,” he also credits family and a bedrock love of humanity. “The whole concept of giving probably comes 50 ~ JUNE 2006 ~ ARROYO

out of a spiritual core,” he says. “But I’m fond of people. … “People used to walk by my office when I was at Robinsons-May and say, ‘You’re laughing too much’ or ‘You’re having too much fun,’ and I’d say, ‘Oh, no such thing.’ Having fun is one of the best rewards of living. I’ve just had fun working on all these events. If you can engage your constituents and have fun and give them a real challenge, what better situation is there?” That said, he’s eyeballing the prospect of winding down his demanding volunteering schedule, in part so he can devote more time to his beloved rose garden. “I can always tell when roses are in season,” he says, “because my arms and hands are all scratched up.” He also hopes to spend more time developing an idea for a public radio program, a pet project his charitable commitments have continually pushed to the back burner. “I just need to gather my wits and courage about me and try to make it happen,” he says. “It’s something I’ve never done before.” To those who wish to become similarly involved in the community but don’t know how, he recommends doing some online research: “What’s your interest? If it’s music or ballet or art or arts education, do a little homework on the computer and find out which organizations fit into your mindset.

“If people only knew what the rewards were, they’d [volunteer] in a minute, in a heartbeat.” If Watterson follows through on his pledge to scale back his volunteerism, it will be interesting to see who fills his metaphorical shoes. “A lot of younger people aren’t stepping up to volunteer,” he notes. “Maybe they haven’t had enough hard knocks in life. I think there’s a fear in some organizations that when a certain group of people becomes too old to volunteer any longer, there’s nobody to take their place. [Laughs] Some of those older folks better keep their health!” In these days of global uncertainty, many people feel too beaten down to volunteer for causes in which they’re afraid to invest any hope. Watterson understands that mindset, but dismisses it. “It’s easy to get angry. And it’s easy to get discouraged. All you have to do is open the newspaper or watch local television, and you’re ready to run and hide under the covers. We all have a lot to deal with. “You can either whine about it or do something about it. A friend of mine used to say to me, when things got tough, ‘Turn it around.’ That was his mantra. ARELY ARE HOTEL CHEFS GIVEN THE credit they’re due. Yes, there have been a few, like Joël Robuchon and Alain Ducasse who earned multiple Michelin stars in France, who manage to turn what is most commonly considered an ordinary experience into a world-class platform for high art with their food, their vision and their cuisine. But how often in America do we see this phenomenon? It’s generally the case that hotel guests prefer to travel outside the confines of their temporary abode in order to experience the hip, trendy dining establishments outlined in the room’s guide, the de rigueur activity known by food cognoscenti as “covering one’s bases.” The Ritz-Carlton is doing something to change all that. Craig Strong, Chef de Cuisine of the hotel’s acclaimed Dining Room, gives diners a reason to stay in. A native Californian, Strong is rapidly making a name for himself in the food community. Like all great chefs before him, Strong is single-minded in his pursuit of bold new flavors, ever-evolving ethnic fusion and culinary preeminence. How would you describe your cuisine? It’s modern American, representative of the melting pot of cultures here. My techniques are classical French because I went to a French culinary school, but I use international ingredi-

ents. Thai, French, Spanish — it’s all here. And I blend them together in a way that is distinctly Southern Californian. What are some of your favorite ingredients? I lived in Spain for two years, and I fell in love with it. I’m really into Spanish olive oils, especially the ones from outside of Barcelona made from the tiny Arbequina olives. I love Spanish chorizo. What else? Echiré butter from Normandy and good sea salt — I have three or four kinds that I use. Tell me about your philosophy of cooking. There’s a lot of sensuality in cooking. Food is something you touch softly, caress. You don’t throw it around; you don’t disrespect it. And when you’re cooking, you’re doing it from inside, from the heart. You can’t just be going through the motions. I often say to my guys,“The way you cook is by making love to the food.” It doesn’t take five minutes. Not if you do it right. When you’re really into what you’re doing, you have absolute consistency. Everyone wins when you cook like that, and it’s more fun too. What do you enjoy most about being a chef in Pasadena? Pasadena is a great city. There are so many wonderful people who live in the neighborhood. There’s a lot of tradition,

families who have lived here a long time. They love the hotel. The hotel is one of those landmarks that is looked upon with fond memories. There are so many people who come to the restaurant and say, “You know, we were married here 50 years ago,” and they’re celebrating their 50th wedding anniversary with me. I feel like I’m part of history. What do you think distinguishes you as a chef? You know, you’re a product of your experiences. Most of my experiences have been with the Ritz-Carlton. I’ve worked for this company for 12 years, and it’s been at some extraordinary properties. I’ve worked in Philadelphia, Atlanta, Barcelona. I’ve spent time in Hong Kong, and I’ve lived here in Southern California. My heart is here in Southern California, and I like that style of cooking where things are really light, there’s a lot of seafood, and you get to use great, fresh, organic, seasonal products. My years in Spain really left an impression on me. I worked with a great team of people, and they were always excited to teach me things and show me what it was all about. They were so proud of their culture and heritage. Working side by side with people, sweating, working under great pressure, you form strong bonds. Ingredients: poached kumquats (recipe to follow) lime vinaigrette (recipe to follow) 8 sea scallops 1 T vegetable oil 1/2 - 1 oz osetra caviar (depending on taste) 4 cups baby mesclun, washed and dried salt and pepper to taste nasturtium flowers Poach kumquats as directed. Prepare vinaigrette as directed. Set aside. Pat scallops dry and season with salt and pepper. In a sauté pan, heat the oil and cook the scallops, turning once, until golden, for about 2 to 3 minutes on each flat side. Slice scallops into thirds. Arrange the slices on one side of each plate, and dress each portion with equal amounts of kumquat slices then caviar. Dress mesclun with vinaigrette. Divide equally among plates, next to scallops. Garnish salad with nasturtiums and serve. Serves 4 as an appetizer. Poached kumquats 4 kumquats 1 cup water 2 T sugar Slice kumquats as thin as possible. Remove any seeds, and place the slices in a shallow bowl. Boil water and sugar. Pour over kumquats and let stand for several minutes. When ready to use, remove slices from poaching liquid and set briefly on a paper towel. Lime vanilla bean vinaigrette 1 vanilla bean, halved lengthwise Zest and juice of 1 juicy lime 1 T grapeseed oil 2 T extra virgin olive oil With the tip of a knife, scrape the seeds from the vanilla bean into a mixing bowl. Add the lime zest, juice and grapeseed oil. Mix gently. Slowly whisk in olive oil to form a light emulsion.

Wine enlightenment Find your own vinous path by planning a tasting with friends. BY GREG GILLOOLY FOR MANY WINE LOVERS, ME INCLUDED, THE PRINCIPAL JOY OF wine is the journey of discovery, not the destination. Each new wine carries with it the history of its place of origin and the people who produced it. Each bottle is an expression of a culture, a time, a philosophy. Wines from a single village made by different people will smell and taste different from each other. Wines made by the same people in different years will also taste different. Organized wine tastings are a great way to study these differences and to learn from them. Wine appreciation is a hobby meant to be shared with friends, and there's no better way to learn and have a good time than to gather a group for some serious (but not too serious) wine tasting. Here are a few suggestions for planning a successful tasting: • Probably the most important rule is to aim the tasting at the level of interest of your group; don't make it too technical if most of your friends aren't seriously into wine as a hobby. • Offer plenty of paper and pens, and encourage everyone to take notes. Scorecards are useful tools, but they assume that your group has mastered the mechanics of sensory evaluation. Jotting down your thoughts of the appearance, aroma, flavor, aftertaste and overall impression of each wine is an excellent way to help you focus. • Have an overall theme for the tasting. The possibilities are endless, but in each case the idea is to learn something by comparing similar-onlydifferent wines to see if you can pick up consistent differences among them. For instance, you could try several different wines from Napa; one each of the same varietal (grape) from Napa, Sonoma or Mendocino; or several different varietals such as cabernet, pinot noir and zinfandel for reds or chardonnay, sauvignon blanc and viognier for whites. You could even set up a “France vs. California shootout.” • Have bread, cheese and fruit available, and lots of water for sipping between tastes and for rinsing glasses. • Put out some buckets in case people want to spit out some of the wine. This isn't necessarily a negative commentary on the wine, but wine hobbyists generally swallow only a little (if any) of each wine presented during a tasting in order to keep control of their senses. • If you'd like to have more substantial food at your party, consider holding it until after the tasting session; then folks can relax and sip the leftover wines with something good to eat. Finally, how you taste wine and how you enjoy it are your decision. Wine is a personal experience as well as a social beverage. Find your own vinous path. Enjoy. I’VE NEVER BEEN EXACTLY SURE WHY it is, but the peaceful lull of warm summer nights in Southern California seems to flow most naturally with the eclectic sounds of jazz. Refreshing programs like the Pasadena Jazz Institute’s Jazz on the Terrace concert series (see feature on page 16), the Old Pasadena Jazz Fest in July, last year’s 14week Summer Jazz Series at Paseo Colorado and last month’s Pasadena Summer Fest are wonderful ways to unwind with family and friends and can be creatively inspiring for the artistic mind. It’s that rare art that can set the heart and soul on fire with its composer’s passion, a curious melody that’s often chaotic in its original form, yet articulate and purposeful in its finished state. For decades, that music has reverberated across generations, crossing barriers of time, age, race and sex while moving beyond tradition and producing some of the most renowned figures in the world of music. Over the years, many artists in Los Angeles have found their lives closely intertwined with jazz. Steve Isoardi, co-editor of “Central Avenue Sounds: Jazz in Los Angeles” and editor of “Jazz Generations,” chose to focus on those extraordinary individuals in his resonating new book, “The Dark Tree: Jazz and the Community Arts in Los Angeles.” Isoardi presents a colorful picture of the vibrant African-American arts movement rippling through 1960s and 1970s Los Angeles. The book highlights jazz pianist Horace Tapscott, his founding of the Pan Afrikan Peoples Arkestra and its rightful place in history along with the Union of God’s Musicians and Artists Ascension (UGMAA) Foundation. Intricately spun and rife with the political and cultural details that set the context for each critical building block, “The Dark Tree” is “narrated” in part through the voices of those who actually lived through the period, including Leimert Park’s Kamau Daaood, poet and spoken word artist, co-founder of L.A.’s World Stage Performance Gallery and author of “Language of the Saxophones.” Summer is Southern California’s ideal season to enjoy live jazz performances, so Vroman’s Bookstore welcomes both Steve Isoardi and Kamau Daaood at 7 p.m. Thursday, June 1, for a discussion and book-signing. Though it took a little more than waving a magic wand, Tina Lenert and Mike Caveney transformed their Pasadena home. BY CARL KOZLOWSKI ~ PHOTOS BY BILL TAYLOR

OU MIGHT THINK IT TAKES A BIT of magic for any couple to stay happily married for more than two decades. But magic is literally at the core of Tina Lenert and Mike Caveney’s relationship. That’s because they are both professional magicians, traveling the country and the globe individually and together to amaze and astound audiences with their prestidigitational prowess. And as proud owners of a 5,000-square-foot Craftsman California stick chalet home in the Prospect Park neighborhood of Pasadena, they have done their share to preserve the magical appeal of one of the city’s finest neighborhoods. “We each saw this house separately while we were out running through this neighborhood, before we were even married, and without knowing we were talking about the same house, we each said we had to show the other this amazing house,” recalls Caveney. “So it was our dream home, but it didn’t go up for sale for another six years.” “And even then, since we’re self-employed as magicians, we didn’t have the W-2s the bank wanted to see. But we fought for it, and six months later we got it,” says Lenert. As their careers have boomed into international successes, Lenert and Caveney’s worries have also disappeared as if in a puff of smoke. They are regularly nominated for awards in the magic profession. And though they didn’t win this year, each was nominated for “Stage Magician of the Year” by the Academy of Magical Arts. Caveney joined a fellow magician friend in buying the Egyptian Hall Museum, “the oldest, largest magic museum anywhere,” five years ago, and it’s a collection he keeps secured in the home’s spacious upstairs quarters. On display is an ample collection of classic vaudeville-era posters and shelves filled with magical devices from across the decades. Caveney also uses a room in the basement to create new props and work on home improvements, such as the artificial waterfall he created for the front lawn. While the house is built from stately redwood on the exterior and Douglas fir on the inside, the way that Caveney and Lenert have chosen to reconfigure the Victorian-era original designs for their own personal 62 ~ JUNE 2006 ~ ARROYO

needs is also impressive. They have converted the dining room into a library filled with magic books dating back to the 1500s and have turned a butler’s pantry into a library annex packed with bound volumes of magic magazines from the 1700s to the present. Most impressive of all, however, is the giant tree house the couple built in their backyard. They were inspired by a Smithsonian magazine cover story about tree houses. Theirs isn’t just for show, as it uses solar power to operate a TV and stereo and was designed to match the look and feel of the main house. Long before they transformed their house into a magical abode, Lenert and Caveney met each other in the ’70s in an equally bewitching location: the Magic Castle club in Hollywood. “We had both heard of each other for years before we met, but we were finally booked for the same three-performer show,” recalls Lenert, 57, who was born in Venezuela to American parents and moved to Malibu at age 12. “Our acts are really different: He’s a standup comic, close-up magic kind of per-

former, always bantering with the audience, while my act is silent and movement-based, which has been key in enabling me to perform all over the world.” Indeed, she and 55-year-old Arcadia native Caveney have had some truly memorable adventures, including performing together at the London Palladium. Separately, Lenert just returned from performances in Finland, within the Arctic Circle, while Caveney has done magic on the Orient Express through Switzerland, and on a cruise ship that sailed through India, Africa and the Cape Horn of South America. Lenert took up the harp when she was 40 and recently studied modern dance. While Caveney expresses his admiration for her ongoing curiosity, he is content practicing the passion he’s had since he was 9 years old. “My cousin gave me my first trick then, and I’ve been interested ever since,” explains Caveney. “L.A. was the magic capital of the world from the ’50s into the early ’80s, and I can’t imagine a better environment to be in close to the action.” AM

Once you’ve selected a contractor, you’ll need to consider the contract itself. • The initial deposit legally cannot be greater than 10 percent or $1,000, whichever is less. Also, never pay cash for any work done, and keep your checks as receipts of payment. • A key component of the contract is the time clause. Get an estimated completion date for each phase of the project and indicate the credit amount for each day the project is delayed (e.g., $100/day), excluding factors out of the contractor’s control like weather. There’s nothing worse than having no remedy when the contractor doesn’t show up for a week and the project is months behind schedule. • In the contract, schedule payments after certain milestones — framing, plumbing, cabinets and flooring — are completed and inspected. Save an additional 10 percent for the final payment. Remember, if the contractor defaults, you’ll need enough money to complete the job with someone else. • One of the most important protections you can have is being specific in the contract. Specify quality, quantity, color, size, brand name, model number, etc. If you don’t anticipate each detail and have it in the contract, you will have extra charges and may be unhappy with the final result. Sketch out floor plans and elevations (floor to ceiling angles) with exact locations. Walk through someone else’s kitchen or bathroom and try to capture every detail and make sure it’s in your contract. Attach pictures and sketches to the contract. Describe materials thoroughly: Don’t just say tile — the contractor may think $1.50/sq. ft. white ceramic when you were thinking $10/sq. ft. travertine. Make sure costs for clean-up and removal of all debris are included in the contract. Finally, add change orders as needed. • You may want to hire an independent specialty contractor for each phase of work. For instance, after the contractor says the electrical work is done, hire an independent electrician before the walls are closed and before payment is made. The extra $150 for an $8,000 job will be well worth it. Pay each installment only after your independent inspector and the city inspector have signed off.
