Perhaps it would be more accurate to say that “Animal House,” an imaginary dorm for all manner of bestial residents, is where Altadena photographer Catherine Ledner’s heart is. It’s “housed” in her new book, for which she placed 39 wild creatures against stylish wallpaper backdrops in her studio and watched what developed. Jenine Baines talks to Ledner about her witty take on a phrase that’s so dear to the hearts of California designers and architects–bringing the outside in. With all this good animal lovin’ going around, perhaps you can forgive us for dispensing with the traditional turkey recipe. Instead, Leslie Bilderback, a South Pasadena chef and cookbook author, launches her new column, Kitchen Confessions, with a secret recipe for a holiday treat guaranteed to win kudos from friends and family. Bilderback is a certified master baker who has worked in such highly regarded kitchens as Los Angeles’ Angeli and Georgia and authored two cookbooks for Alpha Books, “The Complete Idiot’s Guide to Comfort Food” and “The Complete Idiot’s Guide to Success as a Chef.” A former executive chef at Pasadena’s California School of Culinary Arts, Bilderback continues to share the wealth (of information) at her website, www.culinarymasterclass.com. Truman Capote wasn’t the only one known to savor the stark pleasures of a Black & White Ball. It’s also the theme of Los Angeles Master Chorale’s annual fundraiser, and on Nov. 10, the company’s supporters gathered at the California Club in downtown Los Angeles for a stylish evening honoring La Cañada Flintridge donors Marguerite and Robert Marsh. The acclaimed chorus conducted by Eagle Rock’s Grant Gershon invited fans to dust off their top hats and flapper-wear for an Art Deco–style evening, which culminated in the choristers’ eclectic performance of works by Cole Porter, Samuel Barber and Ricky Ian Gordon. Guests danced to 1920sand ’30s-era jazz and swing tunes played by Mora’s Modern Rhythmists. The event raised $275,000 for the resident chorus 4 of Walt Disney Concert Hall.

About 250 guests gathered at the California Club in downtown Los Angeles for the Girl Scouts’ Mt. Wilson Vista Council’s annual gala on Nov. 3. Several scout musicians joined the Los Angeles County High School for the Arts Jazz Combo to regale their supporters at the fundraiser for the Arcadia-based group. At the dinner, the council honored Betsy Berkheimer-Credaire with the Girl Scouts’ Courage Award, while “Hannah Montana” creator/producers Steven Peterman and Michael Poryes took home the Girl Scouts’ Confidence Award. Also honored was Annette Castro Ramirez, who received the Girl Scouts’ Character Award. Shortly before the world’s eyes turn to China for the 2008 Summer Olympics, the pint-size members of the Los Angeles Children’s Chorus will get a closeup look for themselves. The Pasadena-based troupe is planning a two-week China tour in early summer, with stops in Beijing, Hong Kong and Shanghai. And the LACC, considered one of the country’s leading children’s choruses, is traveling in good company: alongside the Stanford Symphony Orchestra, whose musical director and conductor, Jindong Cai, grew up in Beijing. For the young chorus members, the international adventure will offer opportunities to perform, meet their music-loving peers and get a firsthand education in local culture and history, according to Rachel Fine, LACC’s executive director. “China is on everyone’s mind these days, and it’s especially exciting for us to be there before the Olympics,” she says. “We like to give our children a chance to explore an area, like China, that hasn’t been developed yet; we want them to see and experience the traditional China.” Of course, not all news from the Middle Kingdom has been good: China’s grim record on human rights has triggered protests of a Beijing Olympics float in Pasadena’s Tournament of Roses Parade. But, Fine says, the company’s Chinese connection is a harmonious one. “We are speaking the international language of music,” she says. “Songs can unite us across countries and borders.” To that end, the LACC’s Dec. 9 winter concert will include the Los Angeles premiere of “The Cataract of Mount Lu” by the esteemed Chinese composer Chen Yi. Sung in Mandarin and accentuated with sounds of nature,

the choral work is part of a larger piece, “Chinese Poems for Children’s Chorus in Six Levels,” written in 1999 for the San Francisco Girls Chorus. Joshua Kosman of the San Francisco Chronicle noted its “intricately wrought harmonies and graceful pentatonic melodies with the occasional chirrup and whooping glissando.” This is the first time LACC has performed a piece from Chen Yi, whom Fine calls “one of the foremost female composers alive today. It’s not common for composers to write for children’s choruses. We’re so fortunate to be doing this.” Such an ambitious program isn’t unusual for the group, which isn’t limiting its foreign affairs to Mandarin. Indeed, LACC’s winter concerts will feature a wide range of languages, from French, German and Spanish to Latin, Czech and Catalan. For 22 years, the organization’s reach has earned it critical acclaim. Along the way, it has trained more than 1,000 boys and girls in the art of bel canto (beautiful singing) and notched more than 300 performances with such renowned companies as the Los Angeles Opera and the Los Angeles Philharmonic. LACC has come a long way since 1986, when founder Rebecca Thompson launched it as a small children’s chorus assembled for a “War Requiem” concert at Pasadena Presbyterian. (Good things come full circle: This January, the chorus will once again perform Benjamin Britten’s electrifying piece at Walt Disney Concert Hall, under the baton of Lorin Maazel.) chamber group. This year’s enrollment is the largest yet, with singers coming from 65 communities across Southern California (though most live in the San Gabriel Valley). Members attend once- or twice-weekly rehearsals as well as classes in music theory. Throughout the year, they perform at top local venues like the Music Center and the Hollywood Bowl. Their programs run the gamut of classical music, folk, jazz and spirituals. Plácido Domingo, the Eli and Edythe Broad General Director of LA Opera, praises the musical sophistication of his junior colleagues.“I look forward to conducting them again this season in ‘La Bohème,’” he wrote in an email. “Their participation in some of our more theatrically adventurous projects here over the years—such as ‘Grendel,’ ‘Der Rosenkavalier’ and ‘Hansel and Gretel’ — has been particularly rewarding.” The choirs also perform free at area retirement homes and public schools. It may sound exhausting – especially for homework-burdened youth – but the singers say that being a member of LACC is exhilarating and well worth the time and energy. “Every day I’m here, I love it,” says Gregory Sliskovich, 14, of Sherman Oaks, a member for four years. “Singing gives me an awesome feeling of power and strength. It’s like all that emotion that’s inside, all balled up, can come out in a beautiful, powerful way.” A member of the concert choir, Sliskovich tried out at LACC’s annual auditions when he was in fifth grade at the urging of his music teacher. “I was scared out of my mind,” he says with a laugh, “but they were all very nice and supportive. I couldn’t believe it when they said I was in.” To be sure, the audition process can be trying: Two out of three children don’t make the cut. “It’s one of the hardest things for us to do,” admits Anne Tomlinson, artistic director. “We would love to expand but we are maxed out.” (The next auditions are slated for June 12-14, 2008.) 14 ~ DECEMBER 2007 ~ ARROYO

During auditions, would-be choristers ages 8 to 12—the cut-off point for joining—are broken up into groups of five to reveal each child’s music knowledge, voice and ear quality and eagerness to learn. Singers and their families must also commit to a September-to-May year of study as well as annual tuition, which runs from $900 to $1,450. For financially strapped families, LACC has a “robust scholarship program,” according to Fine. In fact, LACC’s finances are flourishing. The organization has loyal benefactors who help bankroll an annual operating budget of $1.3 million, and its spring fund-raising gala brings in about $200,000. Annual sales of poinsettias from mid-October to mid-November also feed the kitty. The ongoing support has paid off in some striking accomplishments. LACC was the subject of the 2001 documentary “Sing!” which was nominated for an Academy Award and is still shown on PBS stations nationwide. And last year, the chorus commissioned and performed the world premiere of an original opera, “Keepers of the Night, “ by Peter Ash and Donald Sturrock. The production, which featured opera stars like Pasadena mezzo-soprano Suzanna Guzman, was reportedly the most ambitious mounted by any children’s chorus in the nation, although its reach may have exceeded its grasp, according to some critics who gave it mixed reviews. But Grant Gershon, who conducted “Keepers of the Night,” remains one of LACC’s biggest fans. The Los Angeles Master Chorale’s music director praised it as “a world-class, terrific organization. They have a great system for producing such well-trained kids that they are vocally and musically prepared for anything.” Indeed, Gershon says he has jumped at the chance of collaborating with them whenever he can. “Working with children takes you back to that place in your own life when everything was a new discovery,” he says. “They remind us how music, this incredible, wonderful thing we live with each day, is a true wonder beyond ourselves.” AM

Where Nativities Go Native THE FOLK TREE CELEBRATES THE SPIRIT OF THE SEASON WITH NATIVITY SCENES FROM AROUND THE WORLD. BY JENINE BAINES Wendy Reynoso has her own twist on Christmas tradition: For the past 20 years, she has kicked off the holiday shopping season by skipping a visit to the local mall and heading instead to a small store on Fair Oaks Avenue in Pasadena. The Folk Tree may be a year-round mecca for collectors of global folk art, but Reynoso makes her December pilgrimage with one goal in mind: to check out the shop’s extensive collection of nativity scenes available until New Year’s Eve. “I especially like nativities that represent the country they came from,” says Reynoso, whose collection of manger scenes long ago exceeded 200.

Indeed, not all nativity scenes depict the Holy Family in flowing medieval robes, vying for space in a traditional manger with sheep, cattle and the occasional angel. Reynoso’s trove includes an African nativity from Ghana, crafted from rubber. The manger is actually a hut, and Jesus is lying atop a palm leaf; guarding him are an alligator and tapir, with a cockatoo (instead of a star) on the roof. In keeping with African tradition, there are only two Wise Men, not the three of western lore. In another of Reynoso’s favorites – a nativity scene in the style of Mexico’s most famous religious tradition, El Día de Los Muertos (the Day of the Dead)– every figure,

both human and animal, from Christ Child to Wise Man, is duly skeletal. “Rocky will see something while she’s on one of her buying trips and think, ‘Wendy would like this,’” says Reynoso of Rocky Behr, the peripatetic owner of the Folk Tree. “She finds things that you won’t see anywhere else.” At the shop’s 21st annual International Nativities Exhibition, visitors can see scenes ranging from 2-inch miniatures no larger than thumb size – the tiniest are housed in painted walnut shells – to sculptural pieces up to 3 feet high. nacimientos (Latino nativity scenes), such as those by Ceciliana Victoriana of Michoacan, some figures are dressed like the people of the village in which they were made. “The details extend down to their aprons and shawls,” says Behr. “The authenticity is amazing.” A nativity can come not only in any size and wardrobe but in many materials, including wood, straw, clay, lead, tin and glass. Peruvian nativities – where the Holy Family is commonly housed in a boat rather than a manger – are crafted from potato-paste paper. “Few people know this, but there are literally thousands of different kinds of potatoes grown throughout the world, and many of them flourish only in Peru,” says Gail Mishkin, curator of the Folk Tree gallery. “In Peru, people will often say, ‘That’s more Peruvian than a potato.’ So it’s not surprising that local artists would find a way to use them in their nativities.” In Oaxaca, Mexico, artisans are more likely to work with clay. The Folk Tree’s offerings include ceramics by such renowned craftspeople as Dolores Porras, described by Behr as “the Picasso of Mexican pottery”; Antonio Pedro, known for his black pottery; Enedina and Angelica Vasquez, whose nativities are not painted but get their bright color from ground-up stones; and the Aguilar family, which includes not only Josefina Aguilar, celebrated worldwide as a folk artist, but also her sister Guillermina, brother Jesus and their children. “Josefina is an outstanding example of the creative spirit in Mexico,” says Behr. “Oaxaca has a strong tradition of creativity in both craft and fine art. I can think of no single section in the world where so much wonderful folk art is created.” Behr speaks with authority, having circled the globe in search of unusual pieces. “You name it, Rocky has probably been there,” Mishkin says. “She even bought nativities made out of candy wrappers when she was in Poland a few years ago. She also travels to the American Southwest to purchase nativities from the Zuni and Hopi Indians, which are fascinating works of art because they blend two cultures – Christian, through the traditional manger scene and characters, and Native American, through decorative motifs that illustrate the Indians’ reverence for the earth.” But it is on her treks to Mexico that Behr discovers the bulk of her treasures. Rich lodes of nativities are for sale in Mexico City’s Merced Market and Guadalajara’s suburb of Tonala, centers for much of the country’s finest ceramics and pottery crafted by more than 6,000 artists, Behr says. “The markets are blocks long and have

booths where you can buy clothes for the Christ Child figure or new figures to add to the nativity scene you already own,” she says. “Some nativities have been cherished by families for generations.” Although the custom of putting up a Christmas tree has become increasingly popular, far more Latin American families still celebrate Christmas with nacimientos. It’s traditional to set up nacimientos on Dec. 16, the first day of Las Posadas – a nine-day reenactment of Mary and Joseph’s journey to Bethlehem, with each day representing a month of Mary’s pregnancy – but Baby Jesus doesn’t appear until Dec. 24. The Three Wise Men are added on Jan. 6, Three Kings Day. Nacimientos are usually dismantled by Jan. 15, in time for school and regular work schedules to resume. In some countries, however, the nativity scene cannot be taken down until the parish priest visits and offers a special blessing. Often, during her travels to major cities and to smaller, remote villages in the mountains, Behr purchases nacimientos directly from the artisans. “Business relationships have blossomed into lasting friendships,” says Behr. “It’s so exciting, over the years, to see talents develop, families grow, and know that my role as a kind of cultural ambassador has enriched the lives of so many, whether they’re customers or the artists themselves.”

Behr also occasionally leads customers on tours; on one trip, Reynoso noted that villagers tended to remember the intrepid tour guide, even if she hadn’t visited in years. Behr recently guided a 13-day trip to Michoacan, Mexico, to celebrate the Day of the Dead. The tour included visits to workshops – where potters, mask makers, coppersmiths, silversmiths and weavers still employ the techniques of their ancestors – as well as a pilgrimage to the cemeteries near Lake Pátzcuaro. “Word will spread instantly throughout town when Rocky’s there,” Reynoso continues. “They realize that she has so much knowledge and love of the art and the people. She never tries to influence them and westernize their art.” Certainly, many of the Folk Tree’s artists are renowned in their field, but the prices at the Folk Tree are not necessarily lofty. Reynoso recalls collecting miniature nativities for no more than $10 each when she began, although larger, more spectacular scenes may sell today for up to $4,000. “It was when Rocky told me that I could purchase on layaway that I knew I was in trouble,” Reynoso says with a laugh. An Animal House With High Style PHOTOGRAPHER CATHERINE LEDNER BRINGS THE OUTSIDE IN, IN A SURPRISING WAY, WITH HER NEW BOOK. BY JENINE BAINES

All it takes is one step through the front gate of Catherine Ledner’s Altadena home to understand why the photographer chose to make animals the subject of her first book: “Animal House,” a collection of 39 portraits of, well, animals, each captured in regal, whimsical or witty splendor in its own carpeted and designer-wallpapered room. Only an animal lover extraordinaire would landscape her front lawn with a pen large enough to house nine rabbits comfortably. A 10th rabbit, a Flemish Giant named Isabelle, has her own burrow at one end of the yard, and when the front door is conveniently left open, she has access to the house itself. Unquestionably, Ledner’s art imitates her

“I’ve liked animals my whole life,” says Ledner, 44, whose house is life. also home to two dogs and two cats —and there’s still room left over for her husband, bridal-gown manufacturer Kyle Riddle, and their 18-year-old son, Winston. “I would love a goat, sheep and a horse. Maybe even a pig.” Yet when Ledner shot her first animal portrait, she had no idea that she was embarking on a five-year-long project that would culminate in a book. A successful commercial and editorial photographer, whose work has appeared in such publications as the New York Times Magazine and Travel+Leisure, Ledner assumed that she was simply on assignment to shoot a stock photo of a black bull for Getty Images when she and her quarry showed up, incongruously enough, at Los Angeles’ hipper-thanthou Smashbox Studios. —continued on page 32

“There was this moment when the lion was sizing me up,” Ledner confesses. “But I don’t have that fear. I’m far too busy being curious about the animal.” “But everyone loved it,” recalls Ledner, who earned BFAs at Pasadena’s Art Center College of Design and New York University. “So I thought, ‘I’m just going to keep going.’ ” To keep going was an expensive proposition, Ledner soon discovered. It cost money to wrangle the animals, import their trainers and provide transportation both to and from Ledner’s studio in South Pasadena. For the more highly strung animals, there was the added cost of arranging a visit or two before the actual shoot so they could become comfortable with Ledner and her lens. The project also ate up a fair amount of Ledner’s free time. Shoots had to be scheduled for when she wasn’t working for companies like VISA and Microsoft, among others. Plus, getting just the right shot often took nearly superhuman patience. “I wanted it to be real,” says Ledner. “So I’d wait however long it took for the animal to be comfortable with me, then see what he’d do on his own.” In its own fictional neighborhood, “Animal House” is a spacious place, with each beast allotted its own uniquely decorated room. Ledner would collect swatches of wallpaper from a veritable Who’s Who of design houses, including Josef Frank, Cole & Son, Clarence House and Scalamandre. She would tack them up on a wall, then gather images of the animals she planned to photograph and ask herself, “Who goes with what?” Perhaps nothing more vividly – and poignantly – illustrates the homey aspect of “Animal House” than the book’s endpapers. They are architectural drawings of the bestial abode, inspired by Ledner’s actual childhood home in New Orleans, which was designed by her father, Albert Ledner, the modernist architect known for his eccentric buildings in that city and New York. Indeed, 32 ~ DECEMBER 2007 ~ ARROYO

the fox now “inhabits” a room located roughly where Ledner’s old bedroom had pride of place. Housemates for the fox range from standard domestic pets like the cat, dog, turtle and, yes, the rabbit, to less house-friendly, more formidable creatures (for most of us, if not for Ledner) like the lion, zebra, orangutan, kangaroo, squirrel, flamingo and turkey. Amazingly enough – with the exception of the turkey, who refused to stay put and kept darting all over the studio – the animals sat obediently for their portraits. “There was this moment when the lion was sizing me up,” Ledner confesses. “But I don’t have that fear. I’m far too busy being curious about the animal.” The decision to indulge this curiosity by photographing her subjects in “rooms” – actually a carpeted floor against a flat decorated with wallpapers – came about, says Ledner in the book’s introduction, because she had “always been intrigued by the juxtaposition of the expected and the unexpected and what that friction reveals.” The results of that “friction” instantly captivated the editorial team at Welcome Books, the publisher of “Animal House.” “The fox really captured me,” recalls senior editor Katrina Fried. “He was looking right at me and I saw him in a whole new way. Catherine put him in a context that he didn’t seem to belong in, and yet he fit.” The next step for Ledner and Fried was to say, “What if?” What if the scenario was real beyond the moment the photographs were snapped? What if animals truly ruled the roost? “We imagined this actual place filled with these incredible rooms,” Fried says. “We played with the fantasy.” The women strewed die cuts of keyholes, windows and skylights throughout their imaginary house. The fox lies in wait on the other side —

the next page — of the hen’s wall. A literal bull’s eye, only his eye, first peers through a keyhole. A zebra gazes straight at the reader through a window, from behind its blinds. A mouse hides from a cat in his “hole” on the next page. Another page turns to reveal an owl staring through a window. “It took a lot of time,” Fried says. “The interplay between the design and the images was so critical to get right. You can’t make a mistake and miss. If you miss, it’s not clever. It becomes silly.” Fried and Ledner faced this same challenge while selecting the line or two of verse that accompanies each portrait. Their prerequisite was to find text that was witty, not too long and geared to children of all ages. “We didn’t want to use strictly juvenile verse, but at the same time we didn’t want to eliminate children from enjoying the book,” says Fried. “What we came up with, after looking through dozens and dozens of books of verse, was G-rated but sophisticated.” For instance, accompanying the portrait of the cow is a verse by Ogden Nash: “The cow is of the bovine ilk; One end is moo, the other milk.” At one point, Welcome Books considered pairing snippets solely from Nash’s book of animal poetry, “Zoo,” with Ledner’s photographs. But the poems and portraits wound up not meshing as well as hoped; for one thing, Nash’s menagerie didn’t quite match Ledner’s. The publishing house also decided that “Animal House” would work best with only one vision – Ledner’s – guiding its flow. Although Fried says it was “surprisingly difficult to find material that fit perfectly with Catherine’s work,” poems by writers ranging from Theodore Roethke to E.B. White were eventually found for each portrait. Even the sloth has his snippet—printed upside down, exactly as the sloth is hanging. An upside-down sloth might be a tough act to follow. Does Ledner plan to tackle a second book? Will it be about rabbits? After all, they were Ledner’s favorite pets as a child. And, as an anoymous author notes in the book, they provide plenty of subject matter for an animal portraitist: “It is the unfortunate habit/of the rabbit to breed like a rabbit. One can say without question/this leads to congestion/in the burrows that rabbits inhabit.” “I’ll definitely produce a second book,” Ledner replies with a smile. “I know exactly what I want to do. But it won’t be about rabbits. It’ll be about dogs.” AM

Rock This Town for the Holidays NEW RELEASES OF JINGLE BELL ROCK, JAZZ, GOSPEL AND POP TO GET THE PARTY STARTED BY KIRK SILSBEE The recording industry's fortunes wax and wane. Record labels downsize; brick-and-mortar stores close; the iPod threatens to wipe out the compact disc. Yet one truth continues to prevail: In December, Americans want holiday-theme music. And musicians, it seems, are only too happy to accommodate them. Let's wade through some of the current offerings: Phil Spector’s “A Christmas Gift For You” (ABKCO) not only gave teenagers their own longplay holiday record in 1963, it midwifed a genre: the holiday rock album. Spector utilized his full stable of singers (the Ronettes, the Crystals, Darlene Love and the Blossoms, Bobby Sheen), Jack Nitzsche’s effective arrangements and the Wall of Sound studio band to set a standard that has yet to be equaled. The unofficial star of that album was Love, Spector’s great utility singer. Her Spector days long over, Love’s annual live Christmas show in New York City is a hot ticket item each December. Her new “It's Christmas, Of Course” (Shout! Factory) is much anticipated. She’s singing an octave lower these days, which is a natural adjustment with age; gone is the wailing, semi-operatic upper register. But with age comes wisdom. Her low tones are broad and rich, and Love’s gospel instincts get free reign here in a way they didn’t under Spector’s aegis. There are moments when Love’s deeply felt vocals rub shoulders with those of gospel royalty like Marion Williams or Ruth Davis. That said, the mostly original material is seldom inspired. Spector’s Brill Building songs, Nitzsche’s charts, the band and the Blossoms bolstered Love’s melodic qualities. The songs on “Christmas, Of Course” are largely devoid of melody. And the cartoonish packaging, worthy of a bargain oldies collection on a late-night cable commercial, is simply egregious. Vince Guaraldi birthed another genre, Christmas piano jazz, with his timeless “A Charlie Brown Christmas” soundtrack (often imitated, never duplicated). It used the best elements of swinging piano jazz in an easy listening context that

skirted the cheesiness of lounge music. Trio West (pianist Eldad Zvulun, bassist Neil Miner and drummer Tobias Gebb) won’t make you forget Guaraldi and his trio, but their engaging “Trio West Plays Holiday Songs” (Yummyhouse) is a nice soundtrack to a fireplace rendezvous. They reference Guaraldi (“Christmas Time Is Here”) but assert their own musical identity: Consider the way they recast “God Rest Ye Merry Gentleman” as a Latinized Horace Silver funk dumpling. This album is unassuming but solid, and worth searching out. Another good jazz collection is “Carol of The Bells” (Owl Studios) by the Buselli-Wallarab Jazz Orchestra. This Midwestern outfit has demonstrated plenty of firepower elsewhere. It’s therefore admirable that the music is rendered in a swinging yet low-key dynamic here. Co-leader and trombonist/arranger Brent Wallarab doesn’t use the occasion to show how hip or intellectual he is. His charts glorify the songs, not himself. The title track retools the old English tune (referred to in Shakespeare’s “The Merry Wives of Windsor”) in a deliciously clever way. The occasional warm vocals of baritone Everett Greene recall Al Hibbler or Milt Grayson, which is a nice twist of nutmeg on that eggnog. Tenor and soprano saxophonist Boney James serves a low-carb collection of “jazz-lite” titles on “Christmas Present” (Concord). This would be aces as background music for a party. Joni Mitchell’s “River” is an odd choice amid overly familiar holiday fare, but its melancholy somehow works here; every party needs at least one depressive. Chanté Moore sings the gold digger’s anthem “Santa Baby” with all the conviction of a telephone operator. (Consider the devolvement of the song’s interpreters—from Eartha Kitt to Madonna to, well, take your pick of present-day pretenders and poseurs.) There’s no heavy improvi-

sation here; Boney pretty much plays the melodies and lets it go at that. Michael Bolton’s “A Swingin’ Christmas” is also a Concord issue. He has the cream of Los Angeles’ studio musicians on this frothy concoction, but, unfortunately, they don’t get to blow. The wonderful composer/arranger Chris Walden keeps the charts simple and straightforward for Bolton. His one-dimensional voice, with its laryngitic patina, strains in the head tones. That’s what his fans expect. This is another one that melts in your ear but leaves nothing in your head or heart. San Francisco singer Jacqui Naylor has plied her icy-cool vocals up and down the coast for years. It’s hard to tell just which demographic she had in mind with “Smashed for The Holidays” (Ruby Star). What does one do with “Santa Claus Is Coming To Town” as a country-rock bust-out? Likewise, “Santa Baby” is overlaid on top of Led Zeppelin’s reggae rocker “D’Yer Maker,” and “What Child Is This?” gets a “Babe, I’m Gonna Leave You” treatment. Naylor’s lower register is especially flat on a Les Paul guitarfueled “We Three Kings.” And when “Silver Bells” is mated with a drum-pounding “Every Breath You Take,” it calls for a shot of Nyquil, not a brandy. A surprise in this year’s holiday-release derby is Relient K’s “Let It Snow, Baby…Let It Reindeer” (Capitol Music Group). Here I am again in full-throttle holiday mode. Do I look stressed? I think I look like every other parent in the school drop-off zone, every power shopper at the mall. And we all look like the Grinch. It’s a tough season for everybody. But when you’re a chef, the expectations are just a bit higher. No store-bought pies, Poppin’ Fresh rolls or pre-fabricated gingerbread houses allowed. There is pressure, to be sure, and occasionally I fantasize about faking amnesia. (“Oven? What’s an oven?”) But those times are outweighed by the satisfaction I get from the fabulous food I get to make. I actually love this time of year. Christmas cooking is my annual culinary tour de force. Planning begins after Halloween, as the jack-o’-lantern grows moldy and caves in on itself. Thanksgiving comes and goes as something of a warm-up. I realize that it is the World Series of cooking for many, but in our house, Thanksgiving dinner is AAA ball. Turkey, stuffing, pumpkin pie, yadda, yadda, yadda. Then it’s on to bigger and better things. Our Christmas dinner is an elaborate Anglo-Norse-Franco-Celtic affair, which entails several days of prep. But before I can even begin to think about that endeavor, my attention is diverted to the calendar as it slowly fills with culinary commitments. It’s not long before the house is filled with the aroma of gingerbread, caramel and chocolate, with subtle undertones of pine and a hint of cardboard and packing peanuts. There is always something—and someone—to cook for. People frequently volunteer me to provide the culinary fare for office parties, church socials, pageants, parades, concerts, recitals and teacher appreciation (a.k.a. bribes). And then there are the gift baskets. I began putting them together many years ago, in a (pre-incarceration) Martha Stewart moment. Everyone gets a basket, and the annual production of my stockpile has become one of my favorite holiday rituals. Now, I am a classically trained chef, with a master certification in baking. Still, I pretty much produce the same six recipes every year. When I started, everyone raved about them. So I kept it up. Recently, however, it occurred to me that my friends and family may not like these treats at all. What if they praised them because they thought they had to? Or what if these cookies are like pastry placebos, and they just think they’re good because they came from a chef? Could I whip out a box of Duncan Hines and get the same reaction? Or maybe, the annual arrival of my gift has become the family joke. So this year, I vowed to wow. I sat down and sifted through hundreds of recipes, looking for something new. But in all honesty, nothing really


wowed me. I guess the reason I make the same six recipes every year is because I like them. I wait all year to make and eat them. They are my favorites. And isn’t that a part of Christmas too? In addition to the giving, aren’t we entitled to indulge ourselves just a bit? Just this one time a year? I think so. So if you are on the gift-basket list, please keep up the farce. PEPPERMINT TOFFEE Don’t confine yourself to the written recipe. Try topping your toffee with white chocolate and macadamia nuts, or milk chocolate and toasted sesame seeds. If you use almonds, it tastes just like Almond Roca. 1 1/4 cup brown sugar 2 tbsp. water 1/2 cup butter

1 tsp. vanilla 1/4 tsp. baking soda 1 cup crushed candy canes

6 oz. bittersweet chocolate, chopped (or 1 cup chocolate chips)

Spread out a large sheet of parchment or waxed paper, and coat it evenly with pan spray. In a large saucepan, combine sugar, water and butter, and bring to a boil over high heat. Cook to hard-crack stage (285°F), and remove from heat. Quickly stir in vanilla and baking soda, and stir until the mixture is foamy. Immediately pour out onto prepared paper and spread as thin as possible. Work fast! The candy cools quickly. Sprinkle toffee with chocolate, let stand for 5 minutes, until it melts. Then spread the chocolate thin, and sprinkle it with crushed candy canes. Chill just until chocolate is set, then break into chunks and serve, or store air-tight in the freezer. Makes about one pound of toffee. SUGAR HINTS: When cooking sugar on top of the stove, a candy thermometer makes the task super simple, provided that the thermometer is accurate. The old-fashioned method of testing sugar stages with ice water is easy, too, and, in most cases, more reliable. Have a bowl of ice at the ready as the sugar cooks. As the bubbles get larger and the mixture starts to thicken, spoon out a small amount into the ice water. Immediately feel its consistency. If the recipe calls for soft-ball sugar, you should easily be able to form the sugar into a ball. Hard-ball sugar will keep its shape once formed. In the crack stage, sugar will harden immediately once it hits the water and crack easily. Hard-crack candy will not stick in your teeth when you chew it.

That Championship Season —22 Years Ago “QUANTUM HOOPS,” A NEW DOC ABOUT CALTECH'S LONG-LOSING BASKETBALL TEAM, MAKES A SLAM DUNK ON THE FILM FESTIVAL CIRCUIT. BY STEVE COULTER

“Success is a journey, not a destination... Not everyone can be number one.” – Arthur Ashe Those are the first words spoken by narrator David Duchovny in the opening scene of the CalTech basketball documentary, “Quantum Hoops.” His deadpan delivery is in lockstep with the innocuous sports footage dancing across the screen. It is, for all intents and purposes, the perfect start to yet another film about the spirited world of collegiate sports. Then, just as the last word crosses his lips, the shot freezes, and we are reminded that this is anything but your average documentary. The scene fades on a tight shot of Braun Athletic Center’s floorboards and these words materialize: “On January 24, 1985, CalTech defeated the University of LaVerne. They haven’t won since.” What immediately follows is a sequence that writer/director/producer/editor Rick Greenwald calls a “blooper ballet” – although he admits that these opening scenes might be a little misleading. “I had to show where they came from to show where they’re going. Strangely enough, I had to go through hours and hours of footage to get those really bad, clowny bloopers.” A SoCal native who has made a successful career of editing reality TV, Greenwald knows a thing or two about how to make other people look foolish for fun and profit. With “Quantum Hoops,” however, the self-professed sports fanatic found a story that revealed itself to him like the layers of an onion. It was a lengthy process that

became a labor of love and ultimately appealed to his better nature. The resulting film is much more than just a chronicle of chronic failure, and much less meanspirited than the subject matter might allow. Sure, there are laughs – even “clowny” laughs – in the film, but “Quantum Hoops” offers none of the bleak voyeurism that passes for mainstream entertainment these days. That, says Greenwald, is by design. “I’ve been in reality TV as an editor, and I know what we do – we manipulate,” he says. “The producer says ‘make this funny,’ so you cut something out of sequence and you lie to make it funny by making people look like idiots. I didn’t want that for this film. I had a responsibility as a documentary filmmaker to tell the truth.” Greenwald officially began filming CalTech’s Beavers in January 2006, and by season’s end, he was convinced that he had a compelling story to tell. The team, after all, featured some of the world’s best and brightest young minds getting their clocks regularly cleaned by opponents from lesser institutions of higher learning – sometimes by as much as 60 points a game. Among the starters on the 2006 team was a group of seniors with daunting majors the likes of which you probably wouldn’t find on most NCAA rosters. They included Day Ivy (applied mathematics and economics), Jordan Carlson (physics), Dean Reich (applied physics), Ben Sexon

(mechanical engineering) and Scott Davies (applied physics and economics). The entire 2006 squad featured only six players with high school varsity basketball experience – and none of them, according to the film, received offers to play for any other colleges. For dedicated head coach Roy Dow, “recruitment” at CalTech primarily consists of open tryouts, only the first step in a season full of uniquely frustrating challenges. It is the Beavers’ enthusiasm and drive in the face of such overwhelming odds, according to Greenwald, that makes their story so compelling – especially when you consider the daunting scholastic workload required of students at a school regularly ranked among the top five academic institutions in the world. “These kids are geniuses,” he says. “They know the plays inside and out, but they just can’t always get their bodies to do what their mind is telling them to do. The reality is that CalTech basketball is purer than Little League Baseball.” So far, “Quantum Hoops” has garnered a fair amount of attention on the festival circuit, including an Audience Choice Award at the 2007 Santa Barbara International Film Festival. The film has also been shown several times on the CalTech campus and recently had its official theatrical debut at Laemmle’s One Colorado in Pasadena. A Wine Weekend in Monterey

EACH YEAR, WINEMAKERS SHOW OFF THEIR STUFF IN THIS HIDDEN JEWEL OF A DISTRICT ON THE CALIFORNIA COAST. BY IRENE LACHER

I generally prefer my forays into unconsciousness to take place beside the sea, whenever possible. I’ve fallen asleep–merrily, I might add–to the tune of the punishing waves off Oahu, and I’ve drifted off to the tinny strains of Chinese opera floating over the South China Sea off Hong Kong. But nothing quite sounds like Monterey Bay, whose pulsing waves are accompanied by the constant barking of sea lions, as relentless as a cicada’s chirp. I grab the binoculars in my room at the Monterey Plaza Hotel and walk out onto the balcony to seek my tormentors, but all I see are lights skipping across the noisy water. Hey, you try finding those damn cicadas in the backyard. Actually, I’m heartened to realize that the hard-working entertainers of marine parks and zoos do have a room of their own, somewhere. And so I succumb. I’m here from Nov. 8 through 11 for the 11th annual “Great Wine Escape Weekend,” which is headquartered at my elegant hotel on Cannery Row. The event was launched by the Monterey County Vintners & Growers Assn. to spread the word about its wines, which you may have bypassed in your hunt for the better-known wares coming out of Napa and Paso Robles. What you may not know is that many of those more familiar wineries have been using grapes grown in Monterey, which ships out 70 percent of its fruit. I learn this at a morning seminar, which kicks off the weekend of tastings, winery tours and meals cooked by top chefs from Los Angeles to San Francisco. I descend to a hotel conference room where long tables have places for each attendee set with nine tasting glasses representing each of the area’s officially recognized wine-growing districts. Monterey’s wine-growing area is a nearly 100-mile-long finger of Salinas Valley land stretching diagonally inland from Monterey Bay, sandwiched between the Santa Lucia Range and the Gabilans. The ocean breezes hurtling in from the bay allow for a long growing season—as much as 60 days longer than usual—producing well-balanced, mature fruit, which may require less manipulation at the winemaker’s end. The area is particularly known for its Chardonnay, but the area’s best Chards, like those produced by the Mer Soleil Vineyard in the up-and-coming Santa Lucia Highlands, are floral and crisp, nothing like the heavily oaked wines falling out of fashion. Winemakers here also produce soft, low-sugar Rieslings and vibrant reds–Merlot, Cabernet, Syrah and, particularly, Pinot Noir. This year was “a winemaker’s dream” for Monterey Pinot Noir, because it was the coldest in 35 years, which kept the grapes on the vine for almost nine months, according to Steve Pessagno of Santa Lucia’s Pessagno Winery. Put picking up a Pessagno Pinot Noir on your to-do list for 2009. In the meantime, try the 2004 from Michaud Vineyard or the 2005 from Belle Glos. (Other standout reds include Bargetto’s 2004 Merlot, Scheid’s 2004 Claret and Hahn’s 2005 Estate Merlot.) I’m seated next to a couple of oenophiles from New Orleans. The wife is wearing a pink hoody emblazoned with wine bottles, so I’m not too surprised that this particular mountain came to Mohammed to get a hit of Monterey wine. “It never 56 ~ DECEMBER 2007 ~ ARROYO

leaves the state,” the husband complains good naturedly. (How else could you complain when you’ve been sipping wine since 9:30 in the morning?) “Y’all drink it all.” For lunch, we move down the hall for a spectacular meal of poached lobster with panne cotta and elk tenderloin with bacon-wrapped salsify, prepared by Warren Schwartz, the chef of Whist at Santa Monica’s Viceroy Hotel. The dishes are paired with a pretty 2005 Lockwood Sauvignon Blanc and a 2004 Line Shack Cabernet. Dinner for my group is held at the celebrated Monterey Bay Aquarium. (Are you getting the hang of the rhythm of the weekend yet?) My favorite exhibit is the newest, the aptly titled “Wild About Otters,” which features two large tanks,

each holding a furry family licking its paws and playing adorably. I begin to fantasize about having my own personal otter until an aquarium guide tells me that the wolverine-like beasts chewed through a diver’s mask and air tubing before the aquarium figured out that otters and divers don’t mix. On to dinner. At the aquarium’s Portola Café overlooking the bay, executive chef Dory Ford serves a lovely grilled arctic char in line with its “seafood watch” program, which guides consumers to avoid species that are overfished or contaminated. At my table sits Jason Smith of Paraiso Vineyards in Soledad, home to the infamous prison. He explains how the area’s boutique wineries have struggled with geography, scattered as they are among hilly roads, unlike the easily traveled wine trails of Napa and Sonoma. What’s more, most of the hotels are located miles away on the Monterey Peninsula, (no) thanks in part to a highly restrictive zoning policy. Not that Smith blames prospective hoteliers.“The reality is, no one is going to build a hotel in Soledad,” he says. (The winemakers’ association is lobbying to carve out a wine corridor centered on River Road with the addition of 40 new wineries.) But small is beautiful, because it gives winemakers a chance to be creative, according to a number of refugees from large, corporate wineries in Napa. Many Monterey wineries are family-owned businesses, which pass down a passion for winemaking—and experimentation—through the generations. “Are there more things to discover? Marvelous Mojitos AN INNOVATIVE CUBAN EATERY IMPROVES ON THE ORIGINAL. BY MANDALIT DEL BARCO Let’s cut to the chase: The mojitos at Mojitos Restaurant and Rum Bar are exquisito—exquisite, the best. While you listen to classic salsa music from the ’70s, the bartenders at this fabuloso new Cuban restaurant make each mojito individually with Cruzan rum, crushed mint leaves, lime juice, ice and sugar cane, fresh squeezed at the bar. The house mojitos are perfect, but the shredded coconut mojitos are divine. In fact, the mojitos come in many flavors: natural mango, raspberry, orange, pineapple, blueberry, watermelon and pomegranate. The flavored mojitos are just the start of the original specialties you’ll find at this seductive Pasadena restaurant, which opened in late September. Owners Phil and Carmen Castaneda are new to the restaurant business, and they’re introducing diners to a menu that represents panLatino hybrid cuisine, branching out across the Americas from Peru to Nicaragua, Mexico, Cuba and north to California. “We’re Cuban. We love to cook,” Carmen says of herself and Phil, both born on the Caribbean island. “And while we want to have real Cuban food, you almost can’t feed people real Cuban food. It’s not healthy, and it’s heavy. So it’s really Latin food with a Cuban undertone.” Before taking on the restaurant, Carmen cared full-time for their 9-year-old triplets and occasionally produced fundraisers for Huntington Hospital in Pasadena. Phil was a senior vice president for MTV, producing such reality shows as “The Simple Life,” “The Real World” and “Road Rules.” It was Phil’s dream to own a restaurant when he turned 50, and he got his chance earlier this 58 ~ DECEMBER 2007 ~ ARROYO

year, when the couple took over the former Xiomara’s, a Cuban restaurant that operated for 15 years in Old Pasadena. “We were walking down the street and ran into Xiomara [Ardolina],” recalls Carmen of the restaurant’s chef. “She says ‘I’m going to sell.’ My husband says, ‘Really? Well, I’m going to buy you out.’ That was on a Tuesday. We were in escrow on Thursday, and we closed three weeks later. We had no idea it would happen. It just fell into our laps.” The Castanedas renovated Xiomara’s oncegaudy, mirrored interior, adding a long wooden bar and fresh-cut flowers. They also revamped the dinner menu, encouraging chefs Robert Humphrey and Kyle Mack to experiment beyond the obligatory Cuban moros y cristianos (black beans and rice), ropa vieja (a shredded steak dish made here with spicy duck) and bistek de palomilla. The result was an eclectic feast, which includes marinated Nicaraguan skirt steak, seafood paella and a fancy tortilla soup. My dinner companions and I began our meal with the ceviche appetizer, which was just the right blend of marinated shrimp and scallops, cilantro, avocado, jicama and tomato. Take it from this Peruvian-Mexican-American: This is the real deal. It came with buttered bread, flatbread crackers and jalapeño cheese sticks—all baked fresh in the kitchen. My friend Veronica loved the succulent panseared organic chicken breast over coconut rice. The creamy ancho-chile chicken sauce tasted a bit like a peanut sauce. This was our favorite entrée of the evening. Kelly noted the “New World flavor” of the grilled Chilean sea bass served with a corn crust,

corn stew and mashed potatoes infused with poblano goat cheese. The savory sea bass was offered as a substitute for the out-of-season Alaskan halibut on the menu. I sampled the tender 20-oz. prime bone-in rib-eye, sherry glazed with mushrooms, which came with crispy yucca fries and toasted-almond green beans. Even better were the boneless beef short ribs with “chorizo-smashed” new potatoes. The meat sautéed with veal juice simply melted off the fork. We ended our meal by sharing a chocolate bread pudding with coffee cream sauce. (Warning: You’ll need to order this at the beginning of your meal, since it takes more than half an hour to prepare). Our only complaint was that the café con leche was made with what tasted like considerably more than a pinch of salt. When Carmen tried the coffee, she immediately sent it back, ordering the staff to cease making the foam with salt and sugar, so that diners can sweeten the coffee themselves. It’s the kind of small detail Carmen wanted to fix right away. In the end, my companions and I agreed the rest of the meal was light enough that we could still go dancing after dinner. In the back atrium, Mojitos will soon feature live bands, with Latin jazz on Fridays, salsa on Saturdays and, perhaps soon, a Latin jazz brunch on Sundays. AM Mojitos Restaurant and Rum Bar 69 N.
