These days, the British strawberry season extends to late September, but it’s during June’s long, sunny days that homegrown varieties such as Elsanta and Jubilee are at their sweetest. Not only are these heart-shaped, juicy red beauties delicious in desserts, they are also rich in vitamin C – so it’s In a rush? Ready, set… prep! START PREPPING EARLY, SO YOU CAN KICK BACK AND ENJOY THE COMPANY (AND THE FOOD) l Sort out your fridge the night before to ensure there’s enough space for all the food, and any lovely leftovers. l Make your dips and prepare your veg, covering with clingfilm to keep them fresh. l Marinate meat as early as possible (ideally overnight), so it has time to soak up all the gorgeous flavours. l Check you’ve stocked up on plenty of ice for drinks and napkins for sticky hands. l Half an hour or so before guests arrive, fire up the BBQ to heat the coals. deep south Mark Richmond, Innovations Development Chef at Asda, explains how the Memphis world BBQ championships inspired our range

A

mericans really are very serious about BBQ. So, when we flew to the USA for the World Championship Barbecue Cooking Contest in Memphis, we were keen to learn as much as we could about the secrets behind the mouthwatering flavours of the Southern States. What made smoky Texan sauce, or hickorysmoked Alabama ribs so tasty? How could we perfect succulent pulled pork? By taking part in the competition ourselves, we learnt so much just from sampling other competitors’ recipes and seeing their techniques. Memphis is known for its dry-rub ribs; the Carolinas for shoulders, hogs and vinegar. Ultimately, though, it’s all about simplicity – and the smoke is king. We took what we’d learnt

and then developed a range we’re proud of. Our Oak Smoked Beef Rib defines what BBQ is all about – it’s where the meat is rubbed and drysmoked for a long time and, because it’s cooked on the bone, it just falls apart on the fork. Oak Smoked Beef Burnt Ends are the ends of a brisket, which ‘catch’ most on the BBQ, and are super-tender. Spicy Chipotle Pulled Pork is inspired by heading even further south into Mexico. We’ve smoked a hot chilli to infuse the pork with a smoky, spicy flavour. For me, this makes the ideal burrito with avocado and salsa. 1 STEP 1 Split the bagels in half – you will need to ask an adult to do this for you. Toast in the toaster or under the grill for 1-2 mins until the cut sides turn light golden. Use your fingers to carefully separate the slices of prosciutto, then tear them into bite-sized pieces.

2 STEP 2 Put the bottom halves of the bagels on a clean work surface. Spread each one with ½tbsp of the soft cheese. Top the cheese with the prosciutto, sundried tomatoes, red onion, rocket, a grind of black pepper and the other bagel halves.

Put the sliced cucumber in a large bowl, then add the white wine vinegar, chopped parsley and a grind of black pepper. Toss together until the cucumber is coated with the dressing. Serve the brunch bagels with the salad on the side.

rowing up, Mum used to do most of the cooking in our crazy household. But, on a Saturday morning, without fail, my dad, Eddie, would make me a mean beans on toast while mum was busy ferrying my sisters to dance class. And it wasn’t just any old beans on toast. First off, Dad would nuke the bacon in a heavy pan until it was almost brittle. He’d then pour the baked beans in to reduce with the fat, absorbing all the wonderful flavour of the bacon, and ladle it over thick chunks of white bread. After wolfing it down, we’d throw the crumbs onto the lawn and watch the birds flock into our garden. I’ll never forget those precious memories. To this day, I still make it for my kids. It was important for me to teach Charles, 23, TJ, 21 and Tuesday, 20 to cook from an early age. Dad

1 For the roti, sift the flour and salt into a large mixing bowl and add the sesame seeds. Make a well in the centre and add the vegetable oil, plus 130ml warm water. Stir together, tip onto a clean work surface and knead for

a few minutes or until smooth. Place in a lightly oiled bowl, cover with a clean tea towel and leave to rest for 25-30 mins. 2 Meanwhile, start on the curry. Preheat the oven to 180C/Fan 160C/Gas 4. Bring a large pan of lightly salted water to the boil, add the potatoes and cook for 15 mins. Drain and set aside. 3 Place the aubergines on a roasting tray, drizzle with 2tbsp of the olive oil and toss together. Oven-cook for 15-20 mins or until soft. 4 In a casserole dish, heat the remaining oil on medium. Add the shallots and cook gently for 5 mins. Add the peppers, garlic and chilli and cook for a further 5 mins. Stir through the spices and cook for a final 1 min. Add the potatoes and aubergines and pour over

the coconut milk. Slowly bring to the boil, reduce to a simmer and cook, uncovered, for 20 mins. Remove the chilli halves, then stir through the pineapple, peanut butter, lime juice and chopped coriander. Taste and season. 5 Divide the roti dough in to 8 pieces and roll into rounds on a lightly floured surface. Heat a nonstick griddle pan over a medium heat until almost smoking. Add the roti one at a time. Cook for 2 mins on each side or until puffed up and slightly charred. 6 Serve the roti with the curry topped with the coconut flakes and lime wedges on the side. Whisk the lime juice, zest and cornflour into the sauce left in the cooker and stir until it has thickened. 6 Use two forks to shred the pork, then return to the slow cooker and mix with the sauce. 7 Fill the taco shells with the pulled pork and top with the onion, sweetcorn, lettuce, coriander and chilli, if using.

A Provençal classic similar to foccacia

l 500g white bread mix l 2tbsp olive oil l 3tsp fennel seeds (optional) l 20g plain flour, for dusting 1 Put the bread mix in a large bowl and make a well in the middle. Add the oil, fennel seed (if using) and 350ml lukewarm water. Mix with a wooden spoon to create a soft, sticky dough. 2 Tip onto a lightly floured work surface and knead for 10 mins until elastic (see Top Tip). Return to the bowl, cover with a damp, clean tea towel and leave in a warm place for 30 mins. 3 Dust a baking tray with the flour. Put the dough on the tray and press into a flat, oval shape. Cut a thin, vertical hole out of the middle, then 4 diagonal cuts either side, to create a leaf pattern. Pull at both ends to stretch the dough and emphasise the holes. 4 Cover with a damp clean tea towel and leave in a warm place until doubled in size. Preheat the oven to 230C/210C Fan/Gas 8. 5 Uncover the loaf and bake for 15-20 mins until golden, risen and hollowsounding when tapped. Cool on a wire rack.

1 Make your starter 5 days before you want to bake the loaf. Mix 200g strong

bread flour with 200ml lukewarm water, put in a nonmetallic bowl or a large glass jar, uncovered, and set aside overnight. 2 The next day, mix 100g of the flour with 100ml lukewarm water and mix into the starter. Leave overnight, uncovered, then repeat this process over 3 days until you have a bubbling starter. Store in the fridge, loosely covered with clingfilm, until ready to use. (To keep the starter ‘alive’ for future use, bring it up to room temperature once a

month and ‘feed’ it with flour and water, as before.) 3 To make the loaf, put the flour and salt in a large bowl and make a well in the middle. Pour in 50g of the starter mixture and 360ml lukewarm water. Mix with a wooden spoon to create a soft, sticky dough. Add more water, if necessary. 4 Tip onto a floured work surface and knead for 10 mins until the dough is elastic when stretched. 5 Put in a large, well-oiled bowl, cover with a damp, clean tea towel and leave in a warm place for 3 hrs. 6 Tip onto a work surface and knead for 2 mins to knock out any air bubbles. Shape into a smooth ball and dust with flour. 7 Line a medium-sized bowl with a clean tea towel and dust with flour. Add the dough, cover with a damp tea towel and leave for 6-8 hrs until doubled in size. 8 Heat a large baking tray in the oven at 230C/210C Fan/Gas 8. Put a small roasting tray on the floor of the oven. 9 Remove the baking tray from the oven, dust with flour then gently tip on the dough. Score 2 lines 2mm deep down the middle of the loaf with a serrated knife and slash 2 cuts across. Put on the middle shelf of the oven and pour 300ml boiling water into the roasting tray. Bake for 35-40 mins until golden brown and hollowsounding when tapped. Cool on a wire rack. Each 77g serving contains: ENERGY

or 30 years, I’ve loved baking. The smell of freshly baked bread conjures up memories of my grandma, who I used to help in the kitchen when I was a teen. Still, it was being taught to bake by my brilliant Home Economics teacher that spurred me to secure

a job in a craft bakery, aged 18. Over a decade ago, I made the move into retail and worked my way up to Master Baker at Asda. My job now involves designing new products, sampling and checking quality to make sure our bread is up to scratch – of course, that means I eat a lot of it! I was in my element designing the Speciality range, inspired by breads from around the world. In 2014, we travelled to Paris and Belgium for inspiration, meandering from bakery to bakery, absorbing the atmosphere and learning new skills. The range includes an Italian Ciabatta, a Mediterranean Bloomer packed with olive and tomato flavours, and a French-inspired Carrot & Pumpkin Pavé – an ideal sandwich

METHOD FOR ALL CAKES 1 Preheat your oven to 160C/140C Fan/Gas 3. Grease and line your cake tin(s) with baking paper. 2 Beat the butter and sugar together with an electric hand-whisk until the mixture is pale and creamy. 3 Gradually add the eggs and vanilla extract, whisking between each addition, until well combined. 4 Sieve the self-raising and plain flour together into the bowl, then gently fold into the mixture using a large metal spoon. 5 Transfer the mixture into the tin, smooth the top with the back of a spoon and bake in the oven – time it according to the tin size (see left). The cake is done when it is golden brown, springs back when lightly pressed, and a skewer inserted into the centre comes out clean. If the top of the cake starts to brown too much before the centre is cooked through, gently lay a piece of baking paper over it to protect it for the rest of the baking time. 6 After removing the cake from the oven, leave it to cool in the tin for 15 mins then turn out, peel off the baking paper and leave to cool completely on a wire rack.

Basic buttercream

Use this rich, sweet mixture as a filling and coating for sponges FOR 1 QUANTITY

1 Put 50g unsalted butter, softened in a bowl with 100g icing sugar. 1 Slice the cake in half horizontally, then sandwich back together using the jam and three quarters of the buttercream. 2 Mix the royal icing sugar to a thick paste with about 2tsp water. Put 1tsp of it in the centre of the cake board, place the cake on top, then spread a thin layer of the remaining buttercream over the outside. Chill for 30 mins. 3 On a surface dusted with icing sugar, roll out 600g of the white ready to roll icing to 2-3mm thick. Drape it over your rolling pin and lift over the cake, positioning the front edge at the frontbottom edge of the cake. Smooth the fondant over the top and sides, easing out any lumps. Trim the excess.

4 Position the ribbon around the base of the cake. Secure the ends with a dab of royal icing. 5 Divide the remaining ready to roll icing into 3 x 60g pieces. Add 3-4 drops blue food colour to the first one, and knead well to get a uniform shade. Repeat with the other 2 pieces of icing and the yellow and green food colours, working with one colour at a time. 6 Shape 7 cubes using all 4 pastel colours of icing. Leave to dry on baking paper. 7 Spoon the remaining royal icing into an icing bag and snip the end to create a tiny hole. Pipe the letters for NEW BABY, one on each of the 7 pastel cubes. Pipe the bunting string all

around the top of the cake. 8 On a work surface dusted with icing sugar, roll out small amounts of the remaining coloured icing. Keep covered with cling film to prevent drying out. 9 Cut into small bunting triangles. Secure to the cake with royal icing. Once all the bunting is in place, roll out more icing and cut out round buttons, then use the end of a cocktail stick to create four buttonholes in each. Secure on cake with tiny dabs of royal icing. On a surface dusted with icing sugar, roll 800g of the grey icing into a large square 3mm thick. Drape over a rolling pin and lift over the square

cake, positioning the front edge at the front-bottom edge of the cake. 4 Smooth the fondant over the top and sides, easing out any lumps or pleats. Trim the excess and add back into the remaining icing. 5 Cover the round cake with the remaining fondant. Leave both cakes to dry and firm up for at least 2-3 hrs. 6 Put 1tsp of the royal icing on top of the square cake and place the round cake on top – press down gently so it sticks firmly in place. 7 Use the edge of a clean ruler to create brick walleffect lines in the fondant. 8 Trim the rim of the cornets with scissors so they fit on top of the cake. Spread 1 of the ice cream cornets with royal icing, then cover with the sprinkles. Repeat with the other 4 cornets. 9 Create the door from a rectangle of white chocolate. Stick on the cake with royal icing, then add a drawbridge on the board, connected with the fizzy wand halves. Stick 2 chocolate-square windows on each wall and frame with lengths of strawberry lace. Decorate the bottom edge of each cake with jelly tots and dolly mixture. 10 Stick 1 ice cream cornet on each corner of the square cake, and one in the middle of the round cake. Lilac ombre wedding cake

Spread the cake with a thin layer of buttercream. Place the small cake on a circle of thin card, cut to the size of the cake. Spread with buttercream. Chill both cakes for 30 mins. 3 Roll out 250g of the icing on a surface dusted with icing sugar. Drape over a rolling pin and lift over the small cake, smoothing to cover. Repeat with the larger cake and 600g icing. Leave to dry for 2-3 hrs. Wrap the trimmings in clingfilm. 4 Reserve 100g of the remaining icing. Divide the rest into 3. Knead 2 drops of food colour into the first piece, 4 into the second and 6 into the third, so you get 3 different shades of lilac. 5 Roll out the white icing, trim, and cut into 26cm x 4cm strips. Cover these with clingfilm. Use the back of a teaspoon to thin out the top edge of each strip for a frilled effect. Attach to the cake, starting at the top, then tease into waves with your fingers. Overlap the strips slightly at the join and continue adding all the way around and down the cake. 6 Once the white has run out, repeat with the palest icing and moving onto the darker shades. Once the small cake is covered with frills, carefully place in the centre of the larger cake. Continue sticking frills to the larger cake. 7 Wrap the base of the flower in clingfilm and place on top of the cake.

hen Instagram launched in 2010, the social networking site was mostly used for uploading snaps of breakfast, browsing beautiful travel photography and adding a retro filter to your fave holiday pics. In 2017, a lot has changed. Fashion and parenting bloggers are gaining cult followings and fitness enthusiasts have reached worldwide audiences with their workout demos. Step forward the age of the ‘Insta-celeb’. Good Living chats to the women you need to be following. First up, we quiz fitness instructor Carly Rowena, 30, on her rise to Insta-fame and top tips… What was your job before you became a fitness guru? I was working in marketing for a car company. It was OK but I wanted a job I loved. I’d find myself Googling ‘What

career should I go for?’ just to see what results came up. I think it once told me to live on Richard Branson’s Necker Island. Obviously, that was never going to happen but I knew I needed to find a new direction!

comments from followers and friends who said I should start training people. It was a lightbulb moment for me. I got my fitness instructor qualification and, six months after that, I handed in my notice.

Why did you start Instagramming? Unlike other social platforms, it generally felt really positive. The videos that weren’t overly polished and aimed at ‘normal’ girls who just want to get fit without spending hours in the gym really appealed to me. So I began to do the same.

Any good fitness tips for busy mums? You don’t have to join a gym to get fit. Get the whole family to write down different exercises on pieces of paper and place them in a jar. Then, while the dinner’s on or when there’s an ad break on TV, set everyone a challenge to carry out one of the exercises. Just had a baby? Pop on a backpack filled with items when you go out with the buggy to increase the intensity of the walk. Or, set your alarm 10 minutes earlier than usual in the morning and use a fitness app to do a mini workout. My faves are Sworkit and Earthmiles.

When did you realise it had become more than just a hobby? I was contacted by a company about running a boot camp. I didn’t have any fitness qualifications so I had to turn it down but it was a real milestone. I was also getting

A Father’s Love We meet two very special dads – one coping with a tragic loss, the other sharing his home as a foster carer ‘I felt like an outsider’ Andy Szebeni, 48, from Croydon is a primary school teacher and dad to Ffion, five, and Laszlo, four. A few months ago, I noticed my little boy Laszlo seemed withdrawn. Sitting down beside him, I asked what was the matter – although I was pretty sure I already knew. ‘It’s Mummy,’ he cried. ‘She’s not here.’ As a dad, all you want to do is make everything OK – but this was one hurt I couldn’t hug away. Laszlo’s mum, my wife Sharon, had died a year earlier, in February 2016. And her death had turned our lives upside down. Smart, generous and kind, Sharon was so wonderful, I often wondered why she wanted to be with me. Then, in January 2015, she was diagnosed with skin cancer after suffering from a bleeding mole. Naively, we assumed she’d be fine following surgery to remove the mole and surrounding lymph nodes. She seemed OK afterwards, and we tied the knot a few months later. But shortly after that, in August 2015, the cancer spread to her brain. Determined to stay positive, she tried radiotherapy and chemo, but the cancer was brutal – within months, Sharon was bedridden and 106 | GOOD LIVING

sleeping most of the time because of the medication. Her parents helped with the kids so we were able to keep them in their routines. Aged just two and three, they were, thankfully, oblivious. Meanwhile, I tried to stay strong for everyone else. But it was devastating watching Sharon, robbed of all her dignity. As the end approached, I remember saying to her, ‘You can let go now.’ But she shook her head. ‘No, I want to keep fighting.’ It was typical of Sharon, but it wasn’t enough and, in February 2016, just 13 months after her initial diagnosis at the age of 44, she passed away. Telling the children was so difficult. In tears, I tried to explain Mummy wasn’t coming home from the hospice, but they were too little to comprehend it – Ffion just nodded and said, ‘Can I watch CBeebies now?’ The months afterwards were a blur of funeral arrangements, sorting out the probate, and the terrible sadness of rolling over in bed at night to find her gone. All of a sudden, I understood how people could get eaten away by grief, but I knew Sharon would have wanted me to fight it. Signed off from work for ten weeks, I threw myself into ‘normal’ life – work, housework, playing with the kids, trips out at the weekend to National Trust houses and parks. Our childminder, Lynn, was a huge help at home and, on the surface,

I was holding it all together. But now I was a single dad, I felt like an outsider – not invited to play dates or coffee mornings, like the mums were. When I was out, with five bags in one hand and trying to manoeuvre the buggy with the other, no one ever offered to help. I was only sleeping four hours a night, breaking down in private at lunchtime in school, and wondering how the hell I was going to carry on. How would I manage, having to make all the important decisions about the kids’ lives? Was I going to be alone forever? The loneliness was crushing. Likewise, the kids seemed fine – aside from little wobbles like Laszlo’s, they were as chatty and funny as ever – but who knew how it had really affected them? A hospice worker had mentioned WAY Widowed & Young, a charity for bereaved people, so shortly after Sharon’s death I decided to contact them. It was a lifeline, helping us meet up with other families in the same situation, and keeping the loneliness at bay. I realised it was OK to admit I was struggling. It was OK for the kids to see me cry. In February I got signed off from work again, and now I’m focusing on coming to terms with what happened. I talk about Sharon to the kids all the time. I want them to know how special their mum was, how she loved travelling and books, and had this kind of inner calm. In March, the kids proudly presented me with a Mother’s Day card, which was so unexpected, I broke down in tears. ‘Fostering is challenging – but so rewarding’ Kusi Appauh, 53, is a support worker for teens. He lives in Chingford, London with his children Zachariah, 14, Maxwell, 12, and his foster son, 16. In 2011, my sons’ mum and I split up, with the boys dividing their time between our homes, giving me more time to devote to another child. After discussing the idea carefully with them, I applied to TACT, the UK’s largest fostering and adoption agency. My first placement, a British boy aged 15, was with me for three years. In care since he was little, he skipped school and took drugs, and had run away from his previous foster home. It often felt difficult, when he got in trouble at school or with the police. I tried to be firm, supportive and patient, and it was so gratifying to see him settle down at school, then go on to college. Now, we have an Albanian asylum seeker. He’d travelled to the UK on a lorry and was begging on the streets after his parents threw him out. He didn’t speak any English but he’s now flourishing at school and has learnt to care for himself – in Albania, he never washed, so he had to learn things like how to shower and brush his teeth. Juggling it all can be difficult, but I spend quality time with each of them. Zachariah and Maxwell have never doubted how much I love them. Yes, fostering is challenging, but so rewarding. Literally nothing. Just sitting in a comfy chair with not one lucid thought in my head. No work, no distractions, no one putting me in their schedule. Just transcendental nothingness, like an astronaut floating in zero gravity in an endless universe. Not in an oldcurmudgeonly way either, you understand – I’d be smiling like the Cheshire Cat the whole time. Bliss. Unfortunately, true peace and quiet only seems to exist for other people. On Mother’s Day, mums are ordered to put their feet up and mooch around in fluffy white robes getting luxurious spa treatments. But – and this really stings – for some absurd reason, pampering treats don’t play into a modern male aesthetic. It’s just not the done thing. We men are seen as being active, impatient. We’re still tangled up in ridiculous, outdated notions of being hunter-gatherers. We don’t want to sink into Jacuzzis, they say (SPOILER ALERT – yes, we do!) Or to apply cucumber facemasks (SPOILER ALERT – yes we do!) Or to wear big fluffy robes... you get the gist.

Bathing frequently helps to remove dirt and grease from their precious feathers, but birds will only have a splash where they feel safe. Place your bath in a spot where they have clear visibility, with bushes nearby to allow for a swift escape from predators. Clean and refresh the water once a week, too, to keep the regulars happy!

I loved the macarons from Ladurée in Harrods so much I tried to make my own – but they melted into a massive solid block and looked so awful I had to chuck them away. Guilty pleasure? When I order a roast in a restaurant I’ll always ask if I can have some crackling, even if I’m not having pork. Do you have a handy kitchen tip? If you burn the bottom of a pan, fill it with boiling water, put it back on the hob and add a bit of washing powder – it will loosen anything that’s stuck.
