STICKY SITUATION ‘This onion marmalade is delicious with baked Camembert or ham, or put in a pretty jar to give as a homemade gift. Fry chopped onions in a little oil, cover with a lid and heat on low for 30 mins or until softened. Add a good sprinkling of sugar and sweet chilli sauce to taste, then cook for 30 mins more until most of the moisture is gone. Allow to cool then add a good splash of apple cider vinegar and a squeeze of balsamic vinegar. Heat again until sticky and thick. Transfer to sterilised jars and keep in the fridge for up to 2 weeks.’

Brilliant roasties When I roast potatoes, I often add sprigs of rosemary and garlic cloves and I always make them with goose fat – it gives the best texture and taste. Peel the potatoes the night before and leave them in a big pan of cold water. The next day, drain and replace the water, parboil the potatoes, drain, toss in melted goose fat to coat, then roast.

‘I bake my way through December, making treats to share and give as presents. I adore being in the kitchen, cooking and hanging out with friends – it’s the perfect antidote to the stressful side of the festive season. ‘I always love a recipe that can be flexible, such as these florentines. My son, eight, and daughter, six, refuse to eat Brussels sprouts. How can I jazz up my sprouts to tempt them? Caroline Evans, Cardiff ‘It can be so hard getting children to eat sprouts. I find the best way to make them more appetising for kids – and adults – is to roast them with butter and add chestnuts or bacon. ‘This soup is so quick and simple that I had to add a touch of flair with the Parmesan ‘coral’. 1 Preheat the oven to 190C/170C Fan/Gas 5. 2 Bring a pan of water to the boil and simmer the peas for 3-4 mins. 3 While the peas are cooking, pile the grated Parmesan on a nonstick baking tray so that, when it melts together, it will form a crisp shaped like delicate lacy coral. Stir in ¼tsp of the cumin after the potatoes have been cooking for about 7 mins. 2 When the potatoes are cooked, add another ¼tsp cumin and the spinach leaves. Set aside for the spinach to wilt.

Fisherman’s pie
‘Frozen fish is the key to the simplicity of this dish – just chop it and throw it in straight from the freezer. The result is a beautiful, creamy sauce with a vibrant pea mash and crunchy topping.’ SERVES 1 READY IN 40 MINS l 1 potato, peeled and

1 Preheat your oven to 190C/170C Fan/Gas 5. 2 Put the potato in a pan, cover with water, bring to the boil then simmer until tender. Add the peas and bring back to the boil. Drain, then return to the
pan. Mash the potato and peas with a drizzle of the olive oil and season with black pepper. 3 Meanwhile, pan-fry the onion in a little of the olive oil over a medium heat – cook for 2-3 mins until soft but not browned. Season well with black pepper and add the flour. Stir for 1 min then slowly add the milk, stirring continuously, to create a sauce. 4 Cut the frozen fish fillet into bite-sized chunks using a serrated knife and add them to the sauce. Simmer for 5 mins to thaw the fish, then transfer
the mixture to a small ovenproof dish. Spoon the mash over the fish filling. 5 In a small bowl, combine the breadcrumbs with the remaining olive oil, a good grind of black pepper and the crushed garlic clove. Scatter them over the mash to create the crunchy topping. 6 Cook the pie in the oven for about 20 mins, until the crumb topping turns golden brown and the filling is piping hot.

1 Preheat the oven to 180C/160C Fan/Gas 4. Put the butter, brown sugar, chocolate and coffee into a pan. Heat gently for 3-4 mins, stirring constantly, until melted and glossy. Transfer to a bowl and leave to cool for 10 mins. 2 Add the eggs to the slightly cooled mixture and beat in. Beat the butter and sugar together until fluffy, then whisk in the eggs, one by one. If the mixture looks as if it has split, add 1-2tsp of the flour as you go. 3 Fold in the flour and

Cool for 5 mins in the tins, then transfer to a wire rack to cool completely. 4 Just before serving, whip the cream and icing sugar until it just comes together in very soft peaks. Don’t overwhip or it will become grainy. Strain the soaked cherries, reserving the brandy. 5 Place one of the sponges on a cake stand. Drizzle with one third of the brandy then spread one third of the whipped cream right to the edges. Dot with half of the
soaked cherries, then add another sponge. Repeat with the brandy, cream and remaining soaked cherries, then add the final sponge. Drizzle with the remaining brandy, then spread the top with the cream and, using a large spatula, scrape around the sides until smooth. 6 Decorate with the fresh cherries. Serve immediately or chill until required. TIP Make the cake layers 3-4 days ahead and store in an airtight container. Or keep the assembled cake in the fridge for up to 2 days. 1 Take the turkey from the fridge 1 hr before cooking. Preheat the oven to 200C/ 180C Fan/Gas 6. 2 Juice 1 lemon (reserve the halves). Mix with 50g butter. To test, pierce the thickest part of the thigh – the juices should run clear. If pink, roast for 15 mins and check until done. 6 Tilt the turkey to let any juices run into the tin. Put it on a platter, cover in foil and a tea towel, and leave to rest for at least 30 mins. 7 For the gravy, skim any fat from the juices then stir in the flour. Cook on the hob for 4 mins, stirring, then stir in the stock. Simmer. Pour into a gravy boat. 8 Serve the bird with the gravy and garnishes. Each 156g serving contains: ENERGY

1 Check the salmon for small bones and, using a clean pair of tweezers, gently pull out any you find. Skin the fillet. 2 Put the salmon, beetroot juice and gin in a plastic bag, seal and sit it in a small plastic container – the fish needs to be completely covered by the liquid. Chill in the fridge for 12-24 hrs, turning the bag over every 6-8 hrs. 3 Remove the salmon from the bag and gently pat dry
with kitchen roll. Transfer to a serving platter and garnish with the dill sprigs. 4 Mix the Dijon and wholegrain mustards with the prosecco and honey. Rib of Beef ● 2tbsp sunflower oil ● 25g butter ● 1 shallot, finely chopped ● 1tsp chopped thyme ● 100ml red wine ● Extra shallots, halved, to garnish (optional) ● 225g blackberries ● 200ml beef stock ● 2tbsp blackberry jelly or jam 1 Take the joint out of the fridge 2 hrs before cooking. 2 Preheat the oven to 180C/ 160C Fan/Gas 4. Season the joint on all sides.
3 Put the oil in a heavy roasting tin and heat on the hob. Add the beef and sear on all sides. Roast for the calculated cooking time (see right), basting occasionally. 4 Remove the joint from the tin and set on a warm plate. Cover loosely with foil and leave to rest for 15 mins. 5 Meanwhile, skim off the fat from the juices in the tin. Add the butter, chopped shallot and thyme to the tin and cook on the hob for 2-3 mins, stirring, until softened. Add the wine and scrape up any bits from the bottom of the tin. Simmer until reduced by half.
6 In a separate frying pan, pan-fry the halved shallots for garnish, if using. 7 Add the blackberries, stock and jelly to the roasting tin. Cook for 3-4 mins until the sauce has thickened and coats the back of a spoon, and the berries are starting to burst. Pour into a jug and serve with the beef. TO CALCULATE COOKING TIME Weigh the beef joint. For rare, allow 20 mins for every 450g, plus 20 mins. For medium, 25 mins for every 450g, plus 25 mins. Bring to the boil over a medium heat; remove from the heat. 4 In a bowl, mix together the eggs, 120g of the sugar
and the cornflour. Gradually whisk in the milk to create a smooth custard. Pour into a clean pan and bring to the boil, on a low-to-medium heat, stirring continuously until smooth and thick. Remove from the heat, pour into a piping bag and leave the custard to cool fully. 5 Pipe the custard to thinly cover each biscuit base. 6 Set 8 strawberries aside. Remove the stalks from the remaining strawberries, trim so they are the same height and cut in half. 7 Position the strawberries on the custard base with the cut sides against the chef rings. Pipe in the rest of the custard, filling in the gaps between the strawberries, and smooth over the tops. Cover with
clingfilm and chill in the fridge for 2 hrs. 8 Over a medium heat, dissolve the remaining 60g sugar in a pan, swirling occasionally. Increase the heat, allowing the sugar to turn to a dark caramel. Remove from the heat and leave to cool for 2 mins. 9 Tilt the pan and dip the strawberries in the caramel. Put on a lined baking tray and allow the remaining caramel to cool slightly. 10 Carefully remove the puds from the chef rings and peel off the paper. Season with black pepper. 4 Put the naans on a baking tray, top with the beef mixture and sprinkle on the paneer. Bake for 8 mins until the cheese has browned slightly. Camembert & herby bread wheel

1 Make the bread mix up to step 1 of the pack instructions. Roll out to 50cm x 30cm on a lightly floured surface. 2 Stir the garlic into the butter and brush over the dough. oven to 210C/190C Fan/Gas 7. 4 Bake the wreath for 10 mins. Score the Camembert, drizzle with the olive oil and poke in the rosemary. Reduce the oven to 180C/160C Fan/Gas 4, put the Camembert in its lid and bake for 15 mins until the cheese is melted and gooey and the bread golden. 5 Slide the wreath onto a serving plate, adding the checked wrap under the Camembert box, if you like. 1 Preheat the oven to 120C/100C Fan/Gas ¼. Line a baking tray with baking paper. 2 Beat the egg whites until stiff peaks form. Slowly whisk in the sugar, 1tbsp at a time, until stiff and glossy. Fold in the vinegar, cornflour and vanilla essence. 3 Using a dessertspoon, put spoonfuls of the meringue in a wreath shape, making sure they touch, and make a small dip in the top of each (these will be filled with cream later). Bake for 1 hr 15 mins, then turn off the oven and leave the wreath to cool inside. 4 When you’re ready to serve, whisk the cream with 75ml of the smoothie until soft peaks form. 1 Put 200g chopped dates, 200g mincemeat, 100g dried mango or apple, snipped into pieces, 150g porridge oats and 25g Whitworths Crystallised Fiery Ginger into a food processor. silver cake decoration balls (optional) ● 1tsp vegetable oil ● 515g caster sugar ● ½tsp vanilla extract ● 1tsp white wine vinegar ● 1tsp cornflour ● 175g desiccated coconut ● 200g white chocolate ● 140g pack Dr. Oetker Liquid Glucose ● 500ml double cream ● 250ml bottle Innocent Totally Tropical Smoothie ● 225g raspberries ● You will also need a round balloon and a sugar thermometer 1 Start by making the trees. Whisk 1 egg white until soft peaks form. Whisk in the icing sugar until the mixture is stiff, smooth and glossy. Stir in green food colouring 1 drop at a time, to get your desired shade. Spoon the icing into a piping bag fitted with a small star nozzle. 2 On baking paper, draw 3 triangles, 10cm tall x 6cm at the base. Lay a Matchmaker down the centre of each triangle, for a trunk. Starting at the top, pipe from side to side, following the triangle template, to create a fir tree shape over the trunk. Repeat to make 6 trees – 64 | ASDA.COM/GROCERIES
vary the sizes for a natural look. Dot with shimmer balls, if using. Dry overnight. 3 For the meringue cake, preheat the oven to 190C/ 170C Fan/Gas 5. Grease 2 x 18cm loose-bottom cake tins and 1 deep, 15cm, loosebottom tin with ½tsp oil, then line with baking paper. 4 Whisk the remaining egg whites until stiff. Gradually add 315g caster sugar, 1tbsp at a time, whisking until the mixture is stiff and glossy. Whisk in the vanilla, vinegar, cornflour and coconut. 5 Divide equally between the tins, level and bake for 30 mins until the meringue is crisp and pale gold. Turn out and cool on a wire rack. 6 For the shards, melt the white chocolate in a bowl over a pan of simmering water – don’t let the base of the bowl touch the water. Pour onto a sheet of baking paper and top with another sheet. Spread the chocolate in a thin layer between the 2 sheets of paper, then roll it all into a tube. Chill until set. 7 For the globe, grease the rim and outside of a small bowl, 3-5cm wide, with the other ½tsp oil. Place upright on a sheet of baking paper. 8 Fill a balloon with about 1.5L water, to around 13cm in diameter. Squeeze the open end to release any air bubbles, then tie a knot in it and position the balloon, knot-side down, in the bowl so it bulges over the rim. 9 Put the remaining 200g caster sugar, liquid glucose
and 50ml water into a pan. Place over a low heat and dissolve the sugar, swirling the pan occasionally. Use a wet pastry brush to brush off any sugar that sticks to the sides of the pan. 10 When all the sugar has dissolved, increase the heat slightly and simmer for 5-7 mins or until the sugar syrup reaches 150C* – test with a sugar thermometer. If it looks like it is starting to caramelise, reduce the heat. 11 Pour the sugar over the top of the balloon, using a circular motion so it covers it fully, then leave to set for 15 mins or until rock solid. 12 Place the bowl and the balloon in an empty sink. With scissors, gently snip off the knot. Let the water drain away down the sink. 13 Remove the balloon and trim any thin, ragged edges off the base of the globe – take care not to crack or smudge the ‘glass’. Set aside in a cool, dry place until needed – do not refrigerate. 14 To assemble, whip the cream and the smoothie
together into soft peaks. Stack the meringues on a cake board with the smallest one on top, sandwiching the layers together with half the cream and the raspberries. Spread the remaining cream all over the top and sides. 15 Unwrap the chocolate roll and snap into 10cm shards. Arrange around the layers, sticking them onto the cream coating. 16 Push 3 trees into the top of the cake. Arrange the rest around it – press them into the cream so they stand up. Dust the board with icing sugar. Balance the dome on its side in front of the trees – secure with icing if needed – to create the look of a perfect globe when the cake is viewed from the front. Dust with icing sugar for a snowy effect. (Please note, the sugar-glass globe is for decoration only and should not be eaten.) Each 77g serving contains: ENERGY
