Who doesn’t love a wedding? And a royal one at that! With classic cakes fit for any prince or princess, join me in toasting Harry and Meghan with our cover recipe Victoria sponge (p40). Salad, cocktail, breakfast, afternoon treat… this versatile fruit ticks every box. I’ll definitely be tucking into our French toast at the weekend – with a cup of tea, that is! If you have more of a savoury tooth, then I suggest you try our guest chef Joudie Kalla’s Eastern feast (p50). Vibrant, hearty and cooked with love, these dishes are more than worth the wait. And if, like me, you look for any excuse to feed family and friends, have a go at our barbecue marinated joints (p11) and fruity grilled desserts (p16). Our caramelised bananas tucked up in foil take me back to camping in France, when Dad would man the barbie come rain or shine. To this day, I’m convinced even a twister wouldn’t have moved him! If you’re more of a fair-weather griller, our recipes can be cooked indoors, too, so rain will never stop play. With so many great recipes this month, why not treat yourself? I promise I won’t tell…

Steak with coffee & cardamom rub

1 Toast the cardamom pods in a hot pan until they release their aroma. Bash with a rolling pin, discard the shells and finely crush the seeds. 2 Mix with the espresso powder, garlic and chilli, and rub over the steaks. Marinate in the fridge for 20 mins then drizzle with the oil. 3 Heat the barbecue or a griddle to high. Fry the steaks for 4 mins on each side. Spatchcock chicken with Cointreau & clementines

● Zest and juice 2 clementines, plus

extra clementine halves, to serve ● 1tsp ground cumin ● Few sprigs thyme, leaves picked ● 3 cloves garlic, crushed ● 85g bag watercress ● 2tbsp flaked almonds

1 Put the chicken breast-side down on a chopping board. Cut along either side of the backbone with kitchen scissors, remove the bone and score the skin and flesh with a knife. 2 Mix the Cointreau, clementine zest and juice, cumin, thyme and garlic, and season with black pepper. Rub over the chicken and leave to marinate in the fridge for 20 mins. 3 Preheat the barbecue to medium or the oven to 200C/180C Fan/Gas 6. 4 Cook the chicken skin-side down on the barbecue for 20 mins until crisp. Turn over and cook on the other side for 20 mins, or until cooked through. Alternatively, put in a roasting tin and cook in the oven for 50 mins, or until cooked through. 5 Barbecue the clementine halves for 2 mins, or add to the roasting tin for the last 15 mins of cooking. 6 Move the chicken to a plate, cover with foil and rest for 20 mins. 7 Serve with the roasted clementine halves, watercress and almonds. 1 Put all the ingredients for the syrup in a small pan. Slowly bring to a simmer, cover and cook over a medium heat for

Victoria sponge

Considered the quintessential English teatime treat, the Victoria sponge was one of Queen Victoria’s favourites. After her husband Prince Albert died in 1861, the Queen often held ladies’ tea parties at Osborne House, her residence on the Isle of Wight. According to historians, it was here that the cake was first named after the queen. Originally intended to be eaten by children as it contained no nuts or fruit pieces, the Victoria sponge was then decorated with just a single layer of jam. It was only in the 20th century that a luxurious helping of whipped cream was added. Delicious!

1 Preheat the oven to 180C/160C Fan/Gas 4. Grease and line 3 x 20cm round cake tins. 2 Beat the spread and sugar until creamy. Beat in the eggs one at a time, adding 1tbsp of the flour with each of the last 2 eggs. Fold in the remaining flour. 3 Divide the cake mixture between the tins. Bake for 25-30 mins, or until the tops spring back when lightly pressed. Spread with another third each of the jam and the mascarpone mixture, then top with the last cake. 5 Stir the remaining jam to loosen. Fold it gently into the remaining mascarpone mixture to create a ripple effect. 6 Top the cake with the ripple mascarpone, then the fresh summer fruits and rosemary sprigs. Grease an 18cm x 26cm x 4cm-deep traybake tin. Line the tin with baking paper, folding the centre of the paper up into a divider that splits the tin in half lengthways. 2 Put the spread, caster sugar and eggs in a bowl. Sift in the flour and baking powder. Beat until the mixture is smooth and creamy. Scrape down the sides of the bowl with a spatula and beat again.

3 Put half the mixture in one side of the tin. Stir the pink colouring into the remaining mixture, then spoon into the other side of the tin. Level both sides and bake for 30 mins. 4 Turn the cakes out onto a wire rack, cool slightly, and peel off the paper. Trim the edges, then halve each cake lengthways to make two thinner ‘sticks’ of each colour. All the pieces should be the same size, so trim again if necessary.

5 Thinly spread jam on one long cut side of each piece, then stick a yellow piece to a pink piece. Spread jam on top of the 2 pieces and put the remaining 2 on top, alternating pink and yellow for a chequerboard effect. 6 Lightly dust a clean work surface and rolling pin with caster sugar and roll out the marzipan to a rectangle of about 19cm x 43cm. 7 Stir the jam to loosen, then brush over the top of the marzipan. Tiffin

According to the former personal chef to Queen Elizabeth II, tiffin is one of Her Majesty’s ‘favourite afternoon tea cakes by far’. So much so, she has leftovers sent from Buckingham Palace to Windsor Castle! Tiffin is also a hit with Prince William – he chose it as his groom’s cake when he married Kate in 2011.

l 200g Asda Dark Chocolate (60% cocoa solids), chopped l 200g Asda Milk Chocolate, chopped l 3tbsp golden syrup l 300g unsalted butter l 200g crunchy biscuits, such as Hobnobs or digestives l 100g Maltesers l 100g flaked almonds, toasted l 100g Asda White Chocolate, chopped 1 Reserve half of the dark chocolate. Put the rest in a large bowl with the milk chocolate, syrup and butter. Set over a pan of simmering water, making sure the bowl doesn’t touch the water. Leave, stirring occasionally, until the chocolate melts, then stir to combine. 2 Remove the bowl from the pan. Put the biscuits in a large freezer bag and bash with a rolling pin to break into small pieces. Add to the bowl along

with the Maltesers and the almonds. Stir until mixed. 3 Line a traybake tin (about 18cm x 30cm) with clingfilm. Put the chocolate mixture in the tin and level the top. Allow to cool, then chill in the fridge for at least 1 hr. 4 Melt the reserved dark chocolate and the white chocolate in separate bowls. Pour the dark on the tiffin,

W

hen I was two, Mum had a meltdown in the kitchen and said, ‘That’s it, I’m not cooking any more!’ And she meant it. After that, Dad always did the food shopping and cooked the meals, including Sunday lunch for six! His standout dish was chicken stew and rice. It sounds so simple, but this amazing concoction, all bubbling away in a rich yellow stock with a tang of white wine, is filling and really delicious, too. It always transports me back to the age of eight, when we first moved to London. Dad used to cook it in the winter and the windows would steam up. The best part of making it is when the white wine burns off in the broth – it smells amazing and always reminds me of home. Dad’s manic in the kitchen. My boyfriend James [Haskell, 33, the England rugby professional] learned this the hard way when they first met. Dad was cooking and James went to give him a hand. Five minutes later, he came back looking crestfallen, saying, ‘Your dad’s just told me to get lost!’ When I asked Dad to teach me how to cook, this was the first dish he chose. Then, during my teens, he relinquished control of the kitchen and I became the family chef. I’ve recently started making this dish for James and I’m glad he loves it, too! ith the month of Ramadan set to begin on 15 May, we sat down with Joudie Kalla, chef and author of Palestine on a Plate, for some comforting Middle Eastern recipes. FOR THE LABNEH l 800g Asda Full Fat Greek Style Yogurt l 1tsp salt FOR EACH TOAST l 1 slice Extra Special Sourdough Boule l 1 ball labneh (see above) l 1tbsp clear honey l 1 ripe fig, sliced l ½tsp chopped chives

1 Prepare the labneh at least 24 hrs before serving. To make it, line a sieve with 5 sheets plain (not printed) kitchen roll and set it over a large bowl. Mix together the yogurt and salt, pour into the sieve and twist the ends of the kitchen roll to close. Set aside in the fridge to allow the liquid to drain out.

2 After 24 hrs, the labneh can be served as a spread or dip. After 48 hrs, it will be more solid but still spreadable. Roll it into 12 balls – these can be stored in the fridge, covered, until needed. 3 To serve, toast the bread. 1 Bring the milk to a boil in a large pan. Add the wine vinegar, then cook for 2 mins until the curds separate from the whey. Arrange on the trays and bake for 8-10 mins, until golden. 5 Meanwhile, to make the syrup, put the remaining

125g caster sugar in a pan with 150ml water and bring to a boil. Cook for 10 mins or until reduced by half. Turn off the heat, add the lemon juice and allow to cool. 6 When the pastries are fully cooled, carefully open each folded triangle and spoon in some of the cream mixture. Traditionally used to fill tacos, these smoky spiced pork skewers are also fantastic in a salad Co-founder of the Mexican street food group Wahaca, Thomasina Miers won MasterChef in 2005 and has since written six cookery books, including Mexican Food Made Simple. ‘It wasn’t until I went to Mexico that I found out how diverse the food from the region is,’ says Thomasina. ‘People often think the Latin American diet is unhealthy, but when you eat authentic food, the reality can be very different. The native Mexican diet is rich in veg and fruits, and a lot of it is gluten-free. Latin American cooking is about fresh, colourful ingredients coming together to make veg-packed, nutritious dishes. What I love most about that region is its passion for eating good food with friends and family. SERVES 4 READY IN 40 MINS, PLUS MARINATING PRICE PER SERVING £1.24

FOR THE PORK KEBABS l 2 cloves garlic, chopped l 1tsp ground cumin l 1tsp mild chilli powder l ½tsp smoked paprika, plus extra to serve l 50ml fresh orange juice l 1tsp rapeseed oil l 480g pack Butcher’s Selection Pork Loin Steaks, cut into 3cm chunks l You will also need: 8 wooden skewers, soaked in water for 1 hr FOR THE SALAD l 200g long-grain rice l 400g can pinto beans, drained and rinsed l 1 iceberg lettuce, shredded l 150g fresh pineapple, cut into chunks l 3 tomatoes, diced TO SERVE l 3tbsp reduced-fat soured cream l 2 spring onions, shredded l 10g coriander 1 In a bowl or large zip-seal bag, mix together the garlic,

cumin, chilli powder, paprika, orange juice and oil. Add the pork and stir or shake well to coat. 2 Put the pork in the fridge and leave to marinate for at least 1 hr, preferably overnight. 3 For the salad, cook the rice according to the pack instructions. Drain well, then stir through the beans. 4 Preheat the grill and line the grill pan with foil. 5 Thread the pork onto the skewers, reserving any leftover marinade. Put the skewers on the grill pan and cook on one side for 6-8 mins, until they are beginning to char. 6 Baste with the leftover marinade before turning and cooking for a further 8 mins on the other side. 7 Assemble the salad bowls. Start with a base of the rice and beans, then plenty of shredded lettuce. Top each bowl with 2 pork skewers per person – remove the meat from the skewers first, if you prefer – followed by the pineapple and tomatoes. 8 In a small bowl, stir a pinch of smoked paprika into the soured cream. 9 Finish the bowls with the spring onions and the coriander. Serve with the soured cream on the side. Energy

Beauty blunder That foundation you bought is roughly 50 shades too dark for your skin tone Go back to basics ‘Getting the wrong colour foundation is probably the most common beauty mistake. If you’ve accidentally bought a shade that’s too dark, don’t worry: you can get a new lighter tone and mix the two until you get the perfect colour. Or hang onto the darker shade for the summer months when you have a tan. To get it right next time, test the colour on your jawline.’

Beauty blunder You haven’t cleaned your make-up brushes since, oh, about 2015 Scrub up ‘Sounds obvious, but a dirty brush won’t actually work as well as when you first bought it. ‘cooking for mary berry was so nerve-racking’

What’s your go-to breakfast? Charlie and I are on a smoothie kick at the moment. He makes them with almond milk, spinach or kale, flax seeds, frozen mixed berries and frozen blueberries. Ted loves them, too. Are you a snacker? In the make-up room at The One Show, we have a drawer full of really nice chocolate and there’s always a bag of Haribo in there. Weirdly, I crave apples or tangerines before chocolate and sweets, which is lucky! Do you watch your weight? I believe that a little bit of everything is key, so if I’ve had a bad day, I’ll try to be good for a couple of days – but I’m not manic about it. Life’s too short. Are you a good cook? I’m pretty rubbish at cooking, but I am getting there under Charlie’s supervision. He’s a trained chef. It’s one of the reasons we got married – I knew I’d be sorted for food! First thing you ever cooked? A sausage plait, when I was 13, in cookery class. I was banned from

the lessons shortly after that because I set fire to a tea towel. What was food like growing up? Dad couldn’t cook. Once, Mum had to go into hospital for an ear operation so, for the first time, we were home alone with Dad. One day he served crackers with sliced ham and tomato ketchup. Shocking! After that, he taught himself

to cook and now he does risottos and curries. He’s my inspiration! What dish reminds you of home? Corned beef pie. It’s just corned beef mixed with mashed potato and onions in pastry. It’s a sacred mother recipe, so we only have it when we go down to visit her. It takes me back to Sunday evenings, with Antiques Roadshow on in the background. Any exciting food discoveries? I had the most delicious food I’ve ever tasted in Vietnam. The curries were amazing – full of lemongrass and lime. We also had banh mi, which is like a ham and cheese sandwich but done in such a fantastic way. When we got home, we spent a whole day searching London for one. You once cooked for Mary Berry on TV – was it nerve-racking? Yes! She’s ‘good housekeeping’ while I’m ‘bad housekeeping’. We made a Christmas cake and then I made her rissoles, which you don’t get anywhere other than South Wales. She told me they reminded her of the war! She made them for her husband, took a picture and sent it to me! Alex’s debut parenting book Winging It! is out now, £8
