My dad runs a tight ship when it comes to holidays. He used to ration me and my sister to one tiny duffel bag when we went away – whether two days or two weeks, it never changed. Packing filled us with fear and we felt Sarah Thom judged if the zip was half closed or something had to sit Asda Editor on the back seat. Not only was the car packed with military precision but we had to leave at the exact time Dad stated – he’d sit in the car with the engine running if we didn’t hit the deadline. I have fond memories of these holidays – the days spent in the pool and the evenings around the barbecue were the perfect way to pass the hours. Looking back at photos has also reinvigorated my love for the ‘uniform’ any serious camper donned in the early 90s: the shell suit. Not too great around open flames, it was ideal for an early morning dash to the shower block! Whether garden-hopping or island-hopping, I hope you have as much fun creating your own holiday memories as I’ve had recalling mine.

TOP TIP Put fridge-cold tomatoes on a sunny windowsill to warm up a little before serving

‘You say tomato – I say tomatoes on the vine. And for aromatic, intense sweetness, go for a baby plum or cherry tomato variety. I like to let the flavour do the talking and simply slice and season with a grind of black pepper before I tuck in. You can also drizzle them with olive oil, then roast on the vine until the skins blister and they burst open. Serve as a side, in an easy pasta sauce or as a topping for sourdough toast. Small and mighty, their juicy sweetness and vibrant colour can also transform traybakes, sarnies and savoury tarts. They pair very nicely with soft cheeses, too, such as feta or ricotta, along with a sprinkling of dried oregano or marjoram. Or serve with sliced mozzarella and fresh basil leaves for a classic Italian Caprese salad. And that’s how we say tomato!’

‘Pre-cut fresh herbs are an easy way to add flavour and decoration to dishes – but they’ll wilt without TLC. Snip stem-ends off herbs such as mint, parsley and coriander, put them in a jar of water, loosely cover with a plastic bag, then store in the fridge. Basil should be kept at room temperature. Alternatively, dunk tired herbs in ice water for 10 minutes to refresh. Pat dry with kitchen roll, then store in an airtight container or zip-seal bag and use within two days.’

chefs an nd authors of The Hang Fire Cookboo ok, for their tips for a smokin’ spread. ‘There’s something wonderffully primal about fire,’ says Sam m. ‘It draws people in for warmth and food – then you throw some aw wesome flavours on that

Cola hot wings

● 12-15 chicken wings FOR THE COLD BRINE ● 2 x 330ml cans cola (not low-cal) ● 3tbsp hot pepper sauce ● 1tsp onion powder ● 4 cloves garlic, peeled ● 1tbsp fine sea salt ● 1tsp cracked black pepper FOR THE RUB ● 100g Yardbird Rub (see recipe, right) ● 2tsp cayenne pepper ● Oil, for rubbing FOR THE COLA BARBECUE SAUCE ● 330ml can cola (not low cal) ● 300g ketchup ● 1tbsp tomato purée ● 6tbsp Worcestershire sauce ● 1tbsp hot pepper sauce ● 1tbsp smoked paprika ● 1½tsp onion powder ● 1½tsp garlic powder ● 1tsp coarsely ground black pepper

1 In a large bowl, whisk the ingredients for the cold brine together until combined. Add the chicken wings and stir to make sure they are well covered. Cover with clingfilm and leave in the fridge to marinate for 3-5 hrs. 2 Discard the marinating liquid and pat the wings dry with kitchen towel. In a bowl, mix together the Yardbird Rub and cayenne pepper then put in a shaker. (Store any leftover Yardbird Rub in an airtight jar to use another 12 | ASDA.COM/GROCERIES

time.) Rub the wings with a little oil and sprinkle liberally with the rub mixture. Leave in the fridge until you’re ready to grill. 3 Preheat your grill to low to medium. Put the chicken wings on the grate over indirect heat and cook for 30 mins. 4 Meanwhile, put the ingredients for the cola barbecue sauce in a pan and whisk over a high heat for a few minutes, until the mixture comes to the boil. Reduce the heat to low and simmer, stirring occasionally, for 20 mins until thickened. 5 Pour ⅓ of the cola sauce into a small bowl and set aside. Transfer the rest to a jar and allow to cool completely before storing in the fridge for another time; it will keep for up to 1 month. 6 After the wings have been cooking for 30 mins, brush with the cola sauce then close the lid of the barbecue. Cook for 10-15 mins to allow the cola glaze to set. 7 Test the chicken is cooked through – the juices should run clear when a skewer is inserted into the thickest part of the wing. Transfer to a plate and serve with the remaining cola barbecue sauce for dipping. Energy

1 Put the cabbage, carrots and white onion in a bowl, add the ingredients for the slaw cure and mix well. Cover and chill for 2-3 hrs or overnight. Drain and discard any liquid. 2 In a bowl, whisk together the dressing ingredients and season with black pepper. 3 Add the peppers and spring onions to the ‘cured’ veg and mix well. Stir in the herbs and dressing. Chill for 1 hr; mix and serve garnished with coriander. 2 of your 5-a-day

Aloha Boyo grilled lamb kebabs

Boneless Lamb Shoulder (typically 1.1kg) FOR THE MARINADE ● 3 cloves garlic, chopped ● ¼ small leek, chopped ● 1 red chilli, chopped ● ½ thumb-sized piece ginger, peeled and chopped ● 250ml fresh pineapple juice ● 50ml dark soy sauce ● 3tbsp sesame oil ● Juice ½ lime FOR THE KEBABS ● 2tbsp soft light brown sugar ● 50g unsalted butter ● 1 ripe pineapple, peeled, cored and flesh cut into 5cm cubes ● Vegetable oil, for brushing FOR THE SAUCE ● Small bunch coriander, chopped ● Small bunch flat-leaf parsley, chopped ● 1 red chilli, deseeded and finely chopped ● Zest and juice ½ lime ● 100ml olive oil ● 2tbsp cider vinegar TO GARNISH ● Vine tomatoes, lime wedges and coriander 1 Cut the lamb into 5cm cubes. Put the marinade ingredients in a food processor, season with black pepper and blend until smooth. Put the marinade and lamb in a ziplock bag or lidded plastic container. marinade around the lamb, making sure the meat is well covered. Leave in the fridge for 3-5 hrs, or overnight for a stronger flavour. 2 To make the kebabs, remove the lamb from the fridge and pour the marinade into a pan. Bring to the boil over a medium-high heat, then reduce to a simmer for 10 mins or until the liquid has reduced by half. Add the sugar and butter and stir through until dissolved. 3 Now take 6 bamboo or metal skewers. (If using bamboo, pre-soak them in water for a few hours or overnight – this will stop them burning.) Thread the lamb and pineapple on to the skewers, alternating meat and fruit. 4 Preheat your grill to hot, making sure the coals are white if using charcoal. Brush the kebabs with a little oil. For medium-rare lamb, grill for 3 mins on each side, brushing with marinade as you turn them. If you like your lamb more well done, add another minute per side. 5 Mix the sauce ingredients in a bowl. Arrange the kebabs on a plate and garnish with the tomatoes, lime and coriander. Drizzle the sauce on top or serve on the side for dipping. Energy

SERVES 10 READY IN 2 HRS 30 MINS, PLUS MARINATING PRICE PER SERVING 80p ● 10–12 bone-in, skin-on

chicken thighs FOR THE MARINADE ● Juice 1 lime ● Juice 1 medium orange ● 100ml pineapple juice ● 2tbsp Thai fish sauce ● 50ml sesame oil ● 50g soft light brown sugar ● 1tbsp sweet chilli sauce ● 2tbsp chopped fresh ginger ● 10 cloves garlic, sliced ● 2 long red chillies, sliced lengthways ● 5 spring onions, sliced ● Small bunch Thai or regular basil, chopped FOR THE BASTING MIXTURE ● Juice 1 lime ● 125ml groundnut oil ● 2tbsp soft light brown sugar ● 1tbsp soft dark brown sugar FOR SMOKING ● Apple, pear, cherry, birch, alder or beech wood will work well 1 Use a sharp knife to trim away any extra-fatty parts from the chicken thighs. Put in a large zip-seal bag. 2 Whizz the marinade ingredients in a food processor or blender, pour into the bag and massage the marinade all over the chicken. Push out as much air as possible and seal the bag. Put in the fridge to marinate overnight. 3 The next day, combine the ingredients for the basting mixture in a small

NO SMOKER? NO PROBLEM! ‘You can coo ok these thighs in the oven. Simply follow the recipe up untiil you put them in the smo oker. Preheat your oven to 180C C. Place the thighs on a wire rack over a roasting tin and cook for 45–50 minutes, basting once during the final 15 minutes. Make sure that the internal tempera ature of the chicken reaches 75C on an instant-read thermometer before serving.’

Briony says: ‘A simple bake that looks really impressive? What’s not to love! My brother made a rainbow cake for my birthday a few years ago, despite having never baked before, and he was so proud when he finally got to present it. This cake is really fun and colourful – and not as tricky as it looks. Plus, it’s always exciting to cut the first slice and reveal there’s a rainbow inside as well. Why not give it a go?’

BRIONY’'S TOP TIPS Mix it up ‘Using ready-made frosting just makes life a bit easier! Before you get started, put the frosting in a bowl and give it a really good mix until it’s nice and loose. If it’s still a bit stiff, add a splash of milk to help it glide.’ Make it stick ‘When assembling the cake, pop a bit of frosting on the bottom of the base cake to stick it down and stop it slipping all over the place.’

● 400g self-raising flour ● 1tsp baking powder ● 7 large eggs ● 2tbsp whole milk ● 2 of each Dr. Oetker Extra

1 Preheat the oven to 200C/180C Fan/Gas 6. Grease and line 5 x 20cm round sandwich tins. 2 Put 400g of the sugar, the Best for Baking Cakes, flour and baking powder into a large bowl. Crack in 5 of the eggs and add the milk. 3 Beat with an electric whisk until fluffy. Divide into 5 bowls. Add ½ tube of blue food gel to one, then repeat with the other colours. Mix gently until coloured evenly. 4 Spoon each batter into

a separate cake tin and level the tops. Bake for 18-20 mins until a skewer inserted comes out clean. Cool fully on wire racks. 5 Meanwhile, reduce the oven to 140C/120C Fan/ Gas 2. Line 2 baking trays with baking paper. 6 Separate the remaining 2 eggs and put the whites in a large, clean bowl (save the yolks for another recipe). Beat with an electric whisk until soft peaks form. Beat in the remaining 100g sugar, a spoonful at a time, until incorporated, then beat on high until thick and glossy. 7 As shown in the images below, using a clean, wet paint brush, paint stripes of each colour of food gel up the inside of a large piping bag. Put the meringue in the bag. Cut off a 2cm hole at the end and pipe 18 meringue ‘kisses’ onto the trays. Bake

for 30 mins then turn down to 120C/100C Fan/Gas 1 and bake for a further 45 mins. Leave to cool. 8 To assemble, sandwich the layers together with frosting, starting with the blue cake on the bottom, then green, yellow, orange and red. Coat the outside in a thin layer of frosting and chill for 30 mins. 9 Reserve some frosting for the top of the cake then divide the rest between 5 bowls. Use ½ tube of each food gel to colour each one. Divide into 5 piping bags then cut off each bag 2cm from the tip. Pipe a 2cm-deep line of each icing around the cake, starting with blue on the bottom. 10 Smooth with a cake scraper or palette knife. 11 Ice the top of the cake with the reserved frosting. Top with the meringues just before serving. Energy

1 Fill a medium-sized pan about a quarter full with water. Bring to the boil. Meanwhile, crack an egg into a cup, ramekin or saucer. Make sure it’s as fresh as possible, so it will hold a round shape better as it cooks.

Poach 2 large eggs. Mash 2 ripe avocados, peeled and destoned, with 1tsp lime juice. Brush 2 thick slices Extra Special Sourdough Boule with 2tsp olive oil. Toast on both sides under a hot grill. Spread the mashed avocado on the toast, then top each slice with a poached egg. Season with ground black pepper and serve garnished with cress and chopped red chilli.

Stock up on beans ‘There are a few tins of things that are a staple in my cupboard, and they include beans. Tinned beans are cheap and a source of protein and fibre. I suggest having beans, tinned fish and tinned tomatoes in your cupboard at all times!’

Build up your meal ‘Some tinned stuff won’t be as good as the fresh version but you can still use them up. Tinned peas and carrots are better than no peas and carrots. Think of them as building blocks for a meal. Chuck them in a stew or curry and you won’t even notice they’re not fresh.’

Love your leftovers ‘When I have small amounts of curries and stews – that I’ve made from tins – left over from a meal, I make them into toasties. I invested in a sandwich toaster and now any bits that don’t get eaten make a delicious warm sandwich the next day.’

amily time is key for me, so even though I travel a lot, I make sure I’m home for Father’s Day. Our boys – Jesse, 16, Marmaduke, 13 and Huckleberry, 10 – always make me a card, which is a real highlight, and we’ll cook together, too. One of them does a great fry-up and another loves baking – his Dairy Milk digestive biscuit melt is beyond good! It’s camping together I enjoy the best, though. We don’t go as much as people might expect, but the boys love it. We swim in rivers, make a camp and fire, cook, then fall asleep under the stars. We love this campfire dish as it’s fresh and full of lean proteins and veggies. You could say it’s a one-pot meal – it’s super-simple and the perfect end to the day, cooking up the fish we’ve caught. Aside from eating with my boys, one of my best campfire meals was with President Obama for reality series Running Wild. The White House chef was there, but the President tucked into the wild bear-killed salmon I prepared. Then he made me American s’mores, with cookies, chocolate and marshmallow. In truth, his recipe won the day – when filming stopped, his 60 Secret Service agents all tucked in with us!

amping has always been a bit of an escape. I was about seven n when my mum and dad first started taking me. I rem member being woken at the e crack of dawn, bund dled into the car and driven down to campsites in De evon where we’d spend weekks outside, away from their work and suburban life. I remember feeling really y ‘free’. My parents separrated when I was about 10. It was a difficult time for me, but I threw myse elf into the Scouts and loved d being away from home e, learning to make fires and cook outdoors. There e’s something special about being out in the wild and seeing all those stars. A few years later, my stepd dad taught me to forag ge on our camping holidays. It was so exciting, being g outdoors with him, learning how to ‘survive’, and I knew I wanted to recre eate similar memories for my children, Ottilie, nine, and Seraphina, five. Luckiily my wife Kate, 42, enjoy ys camping, too, so when n Ottilie was three, we went on our first family

Keith’s love of camping grew as a child through trips with his parents trip. It was surprisingly easy y to put Ottilie to bed – all that fresh air is brilliant for children – and we spent even nings to ourselves, drinking wine or reading books. Now the kids are olde er we sit up playing card ds and board games. Th here’s nothing like cookking outdoors. We have a sm mall camping stove and we’ll make chicken and vege etable stir fry or attach the grill for sausages. It’’s not always peaceful. Once, in the Dordogne, we

were all kept awake by ya pond full of croaking toads. But that’s the beauty of camping – if something g’s not working out, you ju ust pack up and move on. Not only is it so accesssible, and works on any budg get, but it lets me maximise e my annual leave by spendiing it with my family – and th hat’s what holidaying’s all ab bout.

here’s an art to packing for your hols. Whether you’re trying to get the most space from your case or streamline the essentials, it can cause a lot of needless stress. Well, not this summer… ‘I could talk about packing all day long,’ says Anna, who runs award-winning lifestyle blog The Anna Edit. ‘It takes a bit of practice but anyone can become a packing pro. I’m excited to share my tried-and-tested tips with you here.’

BE MINDFUL OF SPACE

‘Overpacking is easily done, so think about what you really need. I set myself the 10 x 10 Challenge – taking 10 items that can be worn as 10 different outfits. It’s tricky but good for short trips with just hand luggage.’

NEVER PACK VALUABLES ‘My husband learned a tough lesson when he packed his expensive camera in his suitcase and it was broken when he arrived at the other end. So if you can, carry laptops, cameras and other valuables as hand luggage.’

ROLL, DON’T FOLD

‘I roll up everything in my case – even pants. It saves space, stops clothes creasing as much as folding and keeps things more organised. Roll clothes as tightly as possible and then slot them in.’

CARRY-ON ESSENTIALS

BEFORE YOU BEGIN… ‘Check the weather! Never assume it will be sunny, showery or any of the things you think you know about your destination. Check close to departure, then pack appropriately.’

SWADDLE BREAKABLES ‘I bought a china bowl on my last holiday. What was I thinking? But whenever I have breakables – or bottles of wine – to pack, I roll them up in a towel or jumper which will help cushion any blows.’

USE YOUR SHOES ‘Shoes are handy to pack things inside. I normally make use of the space to pack a cami top or some underwear.’

Talking about mental health can be difficult for anyone and statistically, it’s men who are more likely to suffer in silence*. Good Living asked four men to share their tales of speaking up and seeking help… Can you describe the mental health struggles you have faced? Greg: My eldest brother, Edward, was severely disabled and when I was 14, he died. I felt I needed to be strong for my family and bottled up the grief. It felt like a dark cloud had covered me and weighed me down. A year later, I had a breakdown. I woke up and didn’t think I could face the day. It was suffocating. Tony: I was about 20 when I started seeing things. I remember looking up at the night sky and seeing just a wall of hard black. This was in the 1970s and I was scared to see a doctor in case it went on my record and I lost my job. Eventually, I was diagnosed with psychosis. Andy: For me, it came at what should have been one of the happiest times of my life – the birth of my first daughter, Ffion, in September 2015. I had always thought I’d make an amazing dad, but when she came home from the hospital, I felt overwhelmed. I was crippled by anxiety and struggled to help look after her, even just changing her nappy. I felt completely out of my depth. Jonny: At school, I always felt different and struggled to make friends. At 15, depression hit but I didn’t see a doctor until I was 17. The waiting list for mental health services was too long, and I decided going to university for ‘the time of my life’ would solve it. In 2008, 94 | GOOD LIVING

‘Just having someone listen was a massive thing for me’

my final year, I had a breakdown; I felt like I was possessed. I was put in a psychiatric hospital and diagnosed with schizoaffective disorder – and a month later planned to end my life. What was the turning point? Jonny: I was stopped on the edge of Waterloo Bridge by a stranger**. He was so non-judgemental and

compassionate. The key was just him saying, ‘You’re going to get better’ – no one had said that to me in hospital. The next couple of years were tough; I didn’t want to talk to therapists, I just wanted to run away from it all. Finally, in my mid-twenties, I started to talk about my disorder in YouTube videos and the response was amazing. Tony: My turning point was calling Samaritans – just having someone

Was there a point where you knew things were starting to get better? Jonny: I started seeing progress in therapy. I began actually wanting to see people and engage in society. If you’re in the depths of depression, you struggle with the symptoms and your judgement is clouded so you think you’ll never get better. It’s important for people to know you can get there.

listen was a massive thing for me. It gave me the confidence to see a doctor, who prescribed medication; the difference it made was phenomenal. Andy: For me, it was a text from a friend the day after Ffion came home to ask how it was going and I replied honestly, ‘This is horrible, I hate it, I don’t know what to do.’ Seconds later, he rang to say he’d been through the same thing. He basically said, ‘You’ll never be the dad you think you’re going to be – you’ve never done it before.’ It really helped. Greg: I was at boarding school and I felt so shut off. I left Mum a voicemail saying, ‘I’m really not OK.’ My parents came to the school and I started counselling two weeks later.

Greg: I started to look forward to counselling and talking about what had been good – and bad – for me that week. It’s the little victories that make you realise you’re on the way. Andy: Bronwen, our second daughter, was born in January and I was so anxious that the same thing would happen again. Bizarrely, she came along so quickly, I ended up delivering her in our bathroom at home! I was like, ‘I can deal with anything after that!’ Weirdly, the thing that put me in a dark place was also what ‘saved’ me. Tony: For me, it was the realisation that I had been ill three times – and I had also got better three times. Why do you think men find it difficult to address their mental health issues? Jonny: I used to cry a lot as a kid, and people would say, ‘Come on, big boys don’t cry.’ Being told from a young age that boys shouldn’t be vulnerable has a lasting impact. Boys I speak to in schools are often embarrassed to talk about how they feel. Tony: It’s the typical things people say, like ‘man up’ and ‘sort yourself out’ that stop men talking. You’re brought up to take the role of provider in life, so if there’s a problem, you sort it out. Andy: Yes, growing up, my role models were my granddads and my dad. My dad went through a bad spell last year but got the help he needed – and I think it’s because he’d seen me open up. What do you do to help maintain good mental health now? Tony: I still get depressed and anxious but when I do, I’ll go for a run which I love, talk to my wife or see friends. Greg: I’m very lucky that I’m no longer in the situation that I was a year ago. It will always be there but it’s taken more of a back seat. I find writing helps, and playing team sports. Or just taking time to myself to sit and think. Jonny: Being kinder to myself, more compassionate. Sleep is so important,

WHERE TO GO FOR SUPPORT We asked Matt Johnson – co-host of The Naked Professors podcast and mental health campaigner – for his advice… ● Speak up The best thing you can do is communicate. Suppressing your emotions will only make you feel worse. People will want to help and if you’re worried about talking to friends or family, try a helpline first. ● Be kind to yourself Take practical measures to make yourself feel better. Simple things like drinking more water, taking deep breaths, getting outside for a walk or a run or even going to the cinema and escaping into a film can help.

● #AskTwice If you’re worried about someone, ask them how they are – twice. Make a connection and make sure you get a straight answer. and I am mindful of stress and not working myself into the ground. Andy: Ffion is talking a lot now, so I get a lot of affirmation from her. At the coast recently, I was teaching her to fly a kite and I actually took a physical step back and thought, ‘This is it, this is something to hang on to.’ What else have you learnt? Tony: ‘This too will pass’. No matter how bad you feel, it will change. Andy: I feel I’m a better person for it, much more empathetic. I want to hear other people’s stories and help them. Jonny: I appreciate life so much more. It was colourless before; it felt like a burden. Now I get moments where I go for a walk or I see friends and I’ve just got this power – like, wow, there’s colour back in life. I feel much happier. Greg: The main thing is being able to talk and not bottle it up. To realise you’re not alone and there’s someone else out there going through it, too. I’ve gone from feeling ‘this is the worst thing in the world’ to realising I can take something positive from it.

‘MY COOKING STYLE? I JUST MAKE IT UP AS I GO ALONG’

What food reminds you the most of being a child? My mum came to the UK from Jamaica when she was eight and was taught to cook authentic Caribbean food by her grandmother. ‘Saturday soup’ is a classic dish – it’s made using a joint of beef and all sorts of veg, served with dumplings. I make it every week. So this was your favourite when you were young? Funnily enough, when I was growing up, I didn’t want to eat Caribbean food! I was a typical kid and just wanted to have pizza and fish fingers like my friends. What was the turning point? When I was in my mid-20s, I saw my mum preparing amazing food and realised, ‘Wow, this woman can cook!’ I suddenly ‘got it’ and asked her to teach me all the dishes we grew up with, like chicken, rice and peas. What do you like making most? I love Moroccan and Italian food and British classics – I often make shepherd’s pie but with sweet potato mash on top. I like trying different

things, too. The other day, I made a lentil curry with rice and spinach. My son wolfed it down and then said, ‘That chicken was lovely!’, which made me laugh. Do you have a cooking style? I cook most days, but I don’t really follow recipes – I just make it up as I go along. My mum is the same – she doesn’t measure out ingredients,

even when she bakes a cake, and everything always turns out beautifully. How was it being on Celebrity MasterChef in 2014? I got to the semi-finals, but then I messed up. I was making Jamaica’s national dish, ackee [a Caribbean fruit] and saltfish, but I’d only ever made it with prepared cod before. I was given a piece of fish that needed filleting and boning, and I didn’t have a clue! Still, I got the MasterChef apron, which I always wear when I cook. Perfect dinner party menu? I’d serve garlicky prawns, followed by a big roast leg of lamb with all the trimmings. For dessert, I’d make an apple tart with ice cream. I met the chef Jean-Christophe Novelli when we were filming This Morning in Bordeaux and he showed me how to add star anise to the apples, which makes such a difference to the flavour. What’s your everyday diet like? I have a balanced attitude to food – I eat what I want within moderation and I’ve got a personal trainer, so I’m mindful of staying strong and healthy.
