Welcome

The term ‘trick or treat’ may nowadays be used more as a statement of intent than a question (and coupled with an outstretched hand and a face full of Sarah Thom expectation), but when the witches, Asda Editor devils, ghouls and spirits come a-knocking, it’s hard to escape. I’ve never seen a transformation quite like the one on my street on 31 October – my once-busybody neighbourhood feels deserted. I’m pretty sure this is not because my neighbours are unprepared, more that they dread the onslaught of ‘little monsters’. The kids may look scary, but bolting the doors, closing the curtains and turning out the lights is a little dramatic, wouldn’t you say? I love Halloween. I embrace the night, stockpiling enough candy to make Willy Wonka’s eyes water, and lining my drive with so many pumpkins I’m scared an aeroplane might land. Yet, the joy on the faces of the little ones when a front door actually opens and the person behind it offers up a cauldron of goodies is beyond compare. So quit cowering behind a cushion and welcome the horror! You’re not scared, are you?

1 Wash and dry 6 eating apples. Push an ice lolly stick firmly into each one, through the base. Grease a sheet of baking paper with unsalted butter. Fill a bowl with cold water. 2 Heat 450g demerara sugar, 50g unsalted butter, 2tsp cider vinegar, 1tbsp Asda Clear Honey and 150ml cold water in a pan, stirring, until the sugar dissolves completely. 3 Boil for 10 mins or until a little of the mixture dropped into the bowl of water hardens right away. Don’t worry if it looks frothy. 4 Remove from the heat then dip the apples in the toffee to coat – take care as it’s very hot. Harissa butternut squash rolls A veggie delight with tender spiced squash and nutty chickpeas wrapped in flaky pastry SERVES 8 READY IN 1 HR 30 MINS, PLUS COOLING PRICE PER SERVING 44p

● 400g Frozen for Freshness Butternut Squash Chunks ● 1 red onion, chopped ● 2 cloves garlic, crushed ● 1tsp rapeseed oil ● 210g tin chickpeas in water, drained and rinsed ● 1tbsp harissa paste ● Handful spinach ● Juice ½ lemon ● 375g pack Asda Ready Rolled Light Puff Pastry ● 1 medium egg, beaten ● 1tsp poppy seeds ● 100g sweetcorn relish 1 Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray with baking paper. 2 Cook the butternut squash in a pan of boiling water for 10-12 mins until tender. Drain well. 3 Fry the onion and garlic in the oil on a low heat for 6-8 mins until soft. Add the squash, chickpeas, harissa and spinach; cook for 2 mins or until the spinach wilts. 4 Mash into a rough paste. Stir in the lemon juice, season with black pepper and allow to cool. 5 Unroll the pastry and cut into 8 rectangles. Spoon a thick line of filling down one long edge of each. Brush the other long edge with beaten egg, roll up and put on the tray, join-side down. 6 Brush the remaining egg over the tops of the rolls, sprinkle with the poppy seeds and bake for 40-45 mins until golden. Enjoy warm, or cool on a wire rack. Serve with the sweetcorn relish. Energy

The skill

1 To serve 4-6, wash and peel 1kg Maris Piper or King Edward potatoes, then cut into even-sized chunks.

2 Put in a pan of cold water, bring to the boil and simmer for 12-15 mins until soft, testing with a fork.

3 Drain the potatoes, then set aside to steam dry in the colander for 5 mins.

4 Return the potatoes to the pan and mash thoroughly until smooth.

5 Stir through 75ml warm milk and 50g unsalted butter, then season with freshly ground black pepper.

6 If you’d like a herby mash, add 2tbsp chopped fresh herbs, such as chives or parsley, and stir to combine.

1 Heat half the oil in a nonstick frying pan. Cook the onions over a low heat for 10 mins, until softened. Add the garlic, thyme and balsamic vinegar (if using). Season with black pepper, then cook for another 10-12 mins, until sticky. 2 Remove the thyme. Divide the onions between the bases of the rolls and top with the feta. Add the rocket and sandwich with the top of the rolls. 3 Brush each roll with the remaining oil. Heat a frying pan and fry 2 paninis at

Selection British Chicken Breast Portions ● 4tbsp whole milk ● 120g reduced-fat green pesto ● 140g Extra Special Sourdough Baguette, blitzed into crumbs ● 300g Chantenay carrots ● 1tsp rapeseed oil ● 600g white baking potatoes, peeled and chopped ● 160g spring greens ● 10g chopped chives 1 Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray with foil. 2 Cut both chicken breasts in half horizontally, sandwich in clingfilm and bash to a thickness of 1cm using a rolling pin or meat mallet. 3 In a shallow bowl, stir together 1tbsp of the milk with the pesto. Put the breadcrumbs into a shallow dish and season with black pepper. 4 Toss the carrots with the rapeseed oil in a roasting tin and cook for 25 mins on the lower shelf of the oven, until beginning to brown. 5 Dip the chicken into the pesto mixture then coat

elcome to the second in our Asda Kids’ Kitchen series, which features recipes created for kids, by kids. This month, 12-year-old Eddie showcases his culinary skills with his take on Southern-fried chicken. Already a budding chef, Eddie was keen to whip up this homemade version of his favourite fast-food treat, recreating a dish the whole family can enjoy together. Here, he shares his top tips and even lets us in on what’s at the top of his foodie wish list. Go Eddie!

Eddie says: ‘I really want to be a chef when I grow up. I started cooking lessons at school about three years ago, making things like lentil curry and spaghetti Bolognese, and really enjoy it. Mostly, I look online for new recipes to try, such as sushi or a roast dinner, but I also like to come up with my own ideas. I’d give today 10/10! I really enjoyed cooking in front of the camera. Gregor, the food editor, showed me how to use a garlic crusher rather than chop the garlic, which is so much easier. I’ll definitely be asking for this kitchen tool for Christmas!

LET’S COOK!

When using the oven or hob or handling hot food, always ask an adult to help. Put the rice and 400ml cold water in a pan on the hob. Bring to a simmer. Preheat the oven to 200C/ 180C Fan/Gas 6. Line a baking sheet with baking paper. Remove the pan from the heat after 25 mins. Stir in the fresh and frozen veg. Cook for 5 mins, drain and cool slightly. Mix the breadcrumbs with the herbs and spices, then put on a saucer. Put the beaten eggs into another saucer. Dip one piece of chicken at a time in the eggs, then in the crumbs to coat. Arrange on the lined sheet then bake for 25 mins, until cooked through. Divide the rice mixture into 12, and roll into balls. For the sauce, mix together the rest of the ingredients. Transfer to a small pot. Serve the chicken with the rice balls and the sauce.

Heat a glug of olive oil in a frying pan (ovenproof, if you have one) and cook the meatballs over a medium heat for 5 mins. 3 When the beef starts to brown, add the onion and green pepper, then fry for 5 mins or until the onion starts to colour. Briony. ‘However, it was Lucy Lovell’s super-spooky cake that really caught our eye. It’s colourful and quirky, and it’s just the right level of gruesome for Halloween, too. Pumpkin Mallows

1 Preheat the oven to 200C/ 180C Fan/Gas 6. Grease 2 x 21cm springform cake tins or 2 x 2L Pyrex bowls and line with baking paper. 2 Beat the Best for Baking Cakes with an electric whisk until fluffy and pale. Whisk in the caster sugar. Beat in the eggs and milk a little at a time until combined. 3 Sift the flour and baking powder into another bowl. Slowly mix in half the eggs with a wooden spoon until combined. Stir in the rest. 4 Divide the cake mixture between the 2 tins and

level the tops. Bake in the middle of the oven for 35-40 mins until a skewer inserted into the centre comes out clean. 5 Cool the cakes in the tins for 10 mins. Transfer to a wire rack, remove the paper and cool completely. Chill for 2 hrs in an airtight container in the fridge. 6 Place the first sponge on a cake board, spread the top with frosting, and put

the second sponge on top. 7 Trim the stacked cakes as necessary to get a pumpkin shape (see Briony Says… on p76). Spread all over with frosting and smooth with a palette knife. Chill in the fridge for 30 mins. 8 Reserve 200g of the white icing. Knead the rest to soften, then add the orange gel colour. Knead until you get a uniform colour. Dust with

STEP BY STEP: HOW TO COVER YOUR PUMPKIN CAKE

When rolling out the icing, make sure your work surface and rolling pin are liberally dusted with cornflour or icing sugar to avoid any sticking. 74 | ASDA.COM/GROCERIES

Gently lift the icing ‘pancake’ using your rolling pin – or your hands – and drape it very carefully over the top of your cake.

Use your fingers to smooth the icing over the top of the cake and down the sides. Push out any creases or bubbles and work gently into the carved wedges.

When covered, trim off the excess icing with a knife. Don’t cut too close to the cake – leave about 1cm to push underneath the base for a neat finish.

cornflour and roll out into a 5mm-thick circle large enough to cover the cake. 9 Take the cake from the fridge and drape the icing over it – follow our step-by-step guide to perfect icing (below left). 10 Once covered with the icing, gently press the base of a glass into the top of the cake to create a small well. 11 For the ganache goo, put the white chocolate chips and cream in a small glass bowl. Microwave in 30-sec bursts, stirring well each time, until melted and smoothly combined. 12 Add 1tsp of the green gel colour and mix to a uniform green shade. Pour into the well on top of the cake and use a teaspoon to drip more goo down the sides. 13 Halve the choc sticks and use to create the ‘firewood’ around the base. 14 Knead the remaining icing with 3 drops of the violet gel colour. Reserve a little, then divide the rest into 2 pieces and roll into tentacle shapes. Roll the reserved icing into tiny balls, stick on the tentacles with a dab of water then press the blunt end of a wooden skewer into the centres to create suckers. 15 Decorate the cake with the tentacles, teeth and eyeball sweets, and edible eyes. Finish with the mallow pumpkins at the base. Energy

‘Turning Lucy’s fabulous design into a cake was more straightforward than the spooky detailing suggests. The first thing to focus on was getting the pumpkin shape – this sponge recipe is my go-to for novelty cakes because it holds well. Bake in two springform tins, cool and chill, sandwich, then trim to shape. Or, if you have two 2L Pyrex bowls, bake the cakes in those, then sandwich together base-to-base into a ball shape. Carve small wedges out down the sides to get the same look as a pumpkin, then ice and decorate.’

Lucy Lovell, 32, from Dorset, shares the inspiration behind her design… ‘I love baking and have been making cakes since I was little. My nan and mum were great teachers! I really like cake decorating, so this was a chance to be creative. I wanted to design something instantly recognisable as Halloween, so a pumpkin cauldron felt perfect. This cake is great for beginners because you can hide a mistake with an extra bit of gloop! I’m a massive Bake Off fan, so meeting Briony was very surreal. She really did my cake justice. It’s exactly how I imagined it. It’s amazing!’

NO -CARVE PUMPKINS! Pick a pumpkin, then add paint and spooky decorations for the ultimate doorstep display

SPIN A WEB YOU WILL NEED ● Paintbrush ● White acrylic paint ● Gold paint ● Fake spiders ● Black wool ● Dressmakers’ pins ● Glue HOW TO DECORATE 1 Wipe down the pumpkin and dry with a tea towel. 2 Brush white paint all over the pumpkin, including the stalk. If more than one coat is needed, allow to dry between coats.

SEQUIN STRIPES YOU WILL NEED ● Paintbrush ● White acrylic paint ● PVA glue ● Gold glitter (or metallic gold paint) ● Black paint ● Black sequins HOW TO DECORATE 1 Wipe down the pumpkin then paint it white all over, as before. 2 Mix equal amounts of PVA glue and glitter, then paint onto the stalk with a clean brush. Dab on more gold glitter to cover, pressing into place in a thick layer. (Alternatively, paint the stalk metallic gold.) 3 Using the natural lines 82 | ASDA.COM/GROCERIES

on the pumpkin as a guide, paint every other segment with the black paint – allow to dry between coats if you need more than one for a deep black colour. Allow to dry completely. 4 Paint each black segment with PVA glue (it will dry clear) then sprinkle handfuls of the sequins over it. Don’t worry about being too precise as any overlap will add to the sparkly cascading effect. Allow the glue to dry, then add to your display.

3 Clean the brush; paint the stalk and the spiders gold. 4 Starting at the base of the pumpkin, pin the end of the wool in place. Wind it around the pumpkin vertically, so it sits in each of the grooves; secure with pins if needed. 5 Wrap more wool around the pumpkin for a web effect, pinning in place when you change direction. 6 Glue on the gold spiders for a glittery, creepy finish.

LET’S GO BATTY YOU WILL NEED ● Paintbrush ● White paint ● Bat template (see details, left) ● Scissors ● Thin black card ● Pencil ● PVA glue HOW TO DECORATE 1 Wipe down and dry the pumpkin, then paint it white all over, as before. 2 Meanwhile, print out the bat template on plain paper and cut it out carefully. 3 Place the template on

the black card and draw around it with the pencil. Repeat until you have about 20 black bat shapes, then cut them out. 4 Fold the wings so they stick up at a slight angle on each side, then arrange the bats on the front of the pumpkin in a group, sticking them in place with dabs of PVA glue. Allow to dry before putting on display.

BOO! GRAFFITI YOU WILL NEED ● Black acrylic paint ● Paintbrush ● ‘BOO!’ template (see details above) ● Sharp scissors or craft knife ● Sticky-backed plastic ● White acrylic paint ● Small sponge HOW TO DECORATE 1 Wipe down the pumpkin and allow to dry. 2 Brush black paint all over the pumpkin. Allow to dry between coats, then dry completely. 3 Meanwhile, print out the

‘BOO!’ template and cut out the individual letters. Place one at a time onto the front, shiny side of the sticky-backed plastic and cut out to create stencils. 4 Peel the backing off the ‘B’ and stick it on the top half of the pumpkin. Smooth down to make sure it’s firmly stuck in place and moulded to the curves, with no gaps. Repeat with the remaining letters. 5 Pour white paint on an old plate and dip the sponge in it. Starting with the stalk,

dab it over the top half of the pumpkin, working down to just below the letters. Allow the paint to dry completely. 6 Carefully peel away the plastic to reveal the ‘BOO!’, then it’s ready to scare!

A diagnosis of breast cancer is frightening news that no one wants to hear. Yet, living with a serious illness can have a positive effect, as raising awareness may encourage others to be more mindful of their health and carry out the checks that could save their lives. Plus, thanks to ongoing medical research and advances in science, breast cancer survival rates are improving and have doubled over the past 40 years in the UK*. Here, four people share their experiences of breast cancer – and you can read more in a new book available in store in aid of our Tickled Pink campaign that supports charities Breast Cancer Now and Breast Cancer Care. What events led up to your breast cancer diagnosis? Sonia: I was on holiday in New York with my boyfriend. I rolled over in bed one morning and my arm rubbed against a lump in my breast. My mum got breast cancer when I was eight and passed away when I was 14, so I immediately guessed that’s what it was. Andy: I’d had pain in my nipple on and off for about six months, so decided to get it checked out. Jacqui: I was in bed and lifted my arm, and it felt as if flesh was tearing. I had a feel and there was a lump. Emma: I first found a lump in October 2013 but was told I was too young to have breast cancer. Then, in April 2014, I found another lump, so I went back to the doctor, who did a biopsy. A couple of days later I was taken so ill that I was rushed to hospital for treatment. What do you remember about when you were first diagnosed? Sonia: Because of what happened to my mum, getting breast cancer was my biggest fear. And that fear became reality. It was surreal. Jacqui: I was absolutely stunned when I got the news. There’s no history of breast cancer in my 118 | GOOD LIVING

family – in fact, no cancer, full-stop. Emma: I was on my own in the hospital and the doctor came in and confirmed that I had breast cancer. Then, five days after the first diagnosis, I was told that the small tumour in my breast had broken away and lodged in my bones and that I actually had incurable secondary breast cancer and might not make it until Christmas. It was then I realised that I was in a very bad way. Andy: I overheard my doctor discussing my case when I was having tests, so by the time he spoke to me about the results, I’d looked up the terms he’d used and knew that he’d been talking about breast cancer. But as for getting the diagnosis, it’s like the cliché – you never expect it to be you.

‘Breast cancer had always been my biggest fear – then it became reality’

How did you explain the news to your children? Emma: My three were 15, nine and seven at the time. I didn’t tell the two younger ones what I had – they just knew I was having medicine because I had a ‘poorly boob’. Only Gracie, my eldest, knew I was pretty ill. Jacqui: It was my dad who told my

daughter Steph. He took her out to his greenhouse to help him pot some plants and explained that I had ‘naughty cells’ (we didn’t want to use the word cancer with her). She was only eight then and she got really angry and tipped all of the plants out of their pots, then ran off crying. But later she came and gave me a big hug and from that day on, she became my absolute rock. Andy: My daughter Hannah, who was nine at the time, was surprisingly calm. ‘I spent my year in chemo planning a huge party to celebrate getting through treatment’

10 years before and survived it, so I think that helped put her mind at rest. She dealt with it really well. How did cancer affect your day-to-day life? Sonia: It affected every aspect. I was having chemo so I felt sick quite a lot, was low on energy and couldn’t socialise or work. Emma: It had a huge effect because after a cancer diagnosis, you can never go back to the old you. My cancer support group calls it ‘the new normal’. Chemo was gruelling – I tried to sleep while the kids were at school so I had the energy when they were at home. Jacqui: I had chemotherapy every Thursday, which meant that I was out of action for the entire weekend. I felt as if I had handed my daughter over to my mum and dad for that entire year of treatment. I missed her so much. Andy: My chemotherapy was less frequent: every three weeks. But when they switched the drugs,

I reacted badly to them and was in hospital for four days being sick. Radiotherapy really took it out of me, too – I felt so tired, I could barely walk. How did you keep your spirits up? Jacqui: I spent my year in chemo planning a huge party to celebrate getting through treatment. When it

happened, so many people came, even the chemo nurses. It was wonderful. Andy: Music really helped. In my first chemo session, I listened to The Black Parade by My Chemical Romance. It’s odd because the album is quite dark. Sonia: I made a joke out of everything. By my second chemo, I had shaved my head, so when I threw up I said to my dad, ‘Well, at least you don’t have to hold my hair back now!’ and everyone burst out laughing. My dad is bald as well, so we looked like Phil and Grant Mitchell from EastEnders. That made us laugh, too. Emma: I use humour as well. Our loft is in an absolute state but I joke that I won’t have to worry about it! How has cancer treatment affected you physically? Andy: I had a mastectomy, so I felt self-conscious the first time I went on holiday after surgery. Emma: I’ve put on weight. I was a size eight when I was diagnosed, now I’m about a 14. Sonia: I had fat removed from my stomach to be used for breast reconstruction surgery, so I came out with hip-to-hip scars, which I never expected when I was first diagnosed. I have the faulty BRCA2 gene, which increases my risk of breast cancer, so I made the decision to have both breasts removed. Jacqui: Recently, I’ve been having aches in my bones. My oncologist told me that the treatment would affect my bones and teeth – and GOOD LIVING | 119

now, 21 years on, I’m feeling it. How have your experiences affected your mental health? Jacqui: I take mild antidepressants for post-traumatic stress disorder. After cancer, the anxiety about it coming back can be terrible. Sonia: I used to suffer with panic attacks, depression and anxiety. Getting my diagnosis, though, was such a big deal that my anxiety took a back seat for a while. So I actually felt calmer during treatment. Emma: I’m very up and down. I live in six-month gaps between scans. After a scan, I have to wait two weeks for the results, and the ‘scanxiety’ feels unbearable at times. Are there any ways in which your life has changed for the better since your diagnosis? Andy: I’m more of a ‘doer’ now and want to raise awareness about breast cancer in men. I’ve done things like abseiling from the top of the Madejski Stadium [the home of Reading Football Club] to raise money for Breast Cancer Care. Jacqui: I do more, too, like taking

to the catwalk as part of The Breast Cancer Care London Fashion Show last year, which was amazing. Emma: I’ve written articles about my experience for the Huffington Post and Metro websites. I also work with the Younger Breast Cancer Network (YBCN), an organisation for women under 45 who have got or had a breast cancer diagnosis. I’m grateful for the opportunities I would never otherwise have had, so I’m going to carry on for as long as I can. Sonia: Now, post-cancer, I put myself first more. Plus, I’m on a mission to raise awareness and offer support to other young women who need help like I did.

‘I’d try any food once except maybe live bugs!’

What’s your idea of food heaven? I’m a real sushi freak. I could eat it for every meal. What dish reminds you of fond childhood memories? Mum’s spaghetti Bolognese with Parmesan on top was always a family favourite. Loads of veg, whole button mushrooms, tomato paste and browning sauce made it full of flavour. Has becoming a mum changed the way you look at food? I’ve always had a fairly healthy attitude towards food, but since having Benjamin I definitely take more notice of ingredient labels and levels of sugar, sweeteners and other additives. Was your Strictly partner Giovanni Pernice a big foodie? Giovanni loves good Italian food, but he has quite a sweet tooth as well. Debbie McGee, who also danced with him, let me into a brilliant secret – on a tough day, you could always cheer him up with some millionaire’s shortbread!

I’ve been introduced to pease pudding and stottie cakes

Did you make any changes to your diet when you were doing Strictly? I needed to eat little and often. I wasn’t comfortable jumping around on a full stomach, so I would snack on fruit, nuts and oat bars. And I drank a lot of coffee – probably too much! What’s your daily diet like? I keep it simple: chicken salads, veggie omelettes, steak with veg, fish with

brown rice. I buy low-calorie snacks to satisfy my sweet and savoury cravings between meals. Has your husband converted you to the local Sunderland cuisine? Since living in the North East, I’ve been introduced to pease pudding, stottie cakes and chicken parmo [breaded chicken topped with white sauce and cheese], but they’re not on my list for dinner, to be honest! Would you rule out a stint trying the tucker on I’m a Celebrity…? I would try any food once, if it’s cooked… even bugs. I wouldn’t be able to eat anything still living. I think it’s a bit cruel eating live creatures for entertainment. Cruel to the bugs, not the celebrities! It’s Halloween time! How does the Tozer household celebrate? We go big! We love to dress up and paint our faces. We invite friends round and I’ll do a spooky finger-food spread with red food colouring ‘blood’ in the drinks and scary eyeball cupcakes.
