A brilliant barbecue is all about relaxing with friends and family, but a little advance preparation will help make sure the food you cook is both delicious and safe to eat. Here are some top tips*… ● Store raw meat separately from other food in the fridge before cooking. Take care to use diferent utensils, plates and chopping boards for raw and cooked food, too. And don’t wash chicken or any other type of raw meat – you’ll just splash germs everywhere. But do wash your hands both before and after handling raw food. ● Use a meat thermometer to check food is cooked through. Or if you’re unsure, pre-cook meat and poultry in the oven then fnish on the barbecue, to give it that smoky, chargrilled look and favour. ● If you don’t pre-cook your meat, cut open any poultry, pork, burgers, sausages or kebabs before serving, to double-check that they’re piping hot and cooked through – make sure any juices run clear and that none of the meat is pink. ● Disposable barbecues take longer to heat up and to cook food, so don’t just go by timings – test the food is properly cooked (see above) before serving.

CARROT NOODLES

Peeled into long, thin ribbons, carrots work brilliantly as ‘noodles’ in soups such as pho, a classic Vietnamese broth. Try our recipe for Beef Pho with Carrot Flat Noodles (below).

To make... Using a peeler, cut thin ribbons of carrot, then cut each one in half down its length to make wide noodles. Fry crushed garlic and sliced ginger in a little oil in a pan until soft. Add hot beef stock (made from a cube) and a dash of Thai fsh sauce. Simmer for 20mins. Put thin strips of raw beef steak and a handful of beansprouts in a bowl with the carrot noodles. Pour over the hot broth – the heat from the liquid will cook the beef and noodles. Garnish with chopped chilli and coriander.

CAULIFLOWER RICE

Caulifower is being tipped as one of this year’s trendiest foods, with chefs including sisters Jasmine and Melissa Hemsley serving it roasted, fried or mashed. Try our tasty alternative to rice. When fried, as in our Prawn Caulifower Fried Rice (right), it develops extra favour and a grain-like bite.

Raw carrot noodles also add a crunchy texture to salads

To make...

Remove the tough stalk from a caulifower, then cut the rest into large pieces. Grate, or pulse (in short, quick bursts – don’t blitz) in a food processor, until it has a rice-like texture. Add sesame oil to a wok and, over a medium heat, fry crushed garlic, chopped red chilli and grated ginger. Add the caulifower and stir it through as it cooks until it resembles fried rice. Throw in a handful of cooked prawns, mix well, then make a well in the middle. Crack in an egg and leave to set slightly, then break up with a wooden spoon and stir through the ‘rice’. Serve topped with sliced spring onion and chopped peanuts.

This cauliflower rice can be cooled and frozen after it’s fried (but before the prawns and egg are added). It will keep for up to two months and makes an easy side dish for curries and chilli – just thaw and fry in a little oil to heat through

SWEET POTATO PIZZA BITES

We’ve used slices of sweet potato instead of dough bases in our Sweet Potato Pizza Bites (below). When roasted, the veg slices form a wonderfully crisp crust with a soft, moist centre – perfect for fnger-food pizzas.

To make...

Preheat the oven to 180C/160C Fan/Gas 4. Peel, then parboil some sweet potatoes. When cool, slice into 1/2 cm-thick discs. Put on a baking tray, drizzle with oil and season. Roast for 15-18mins, then top with mozzarella and chopped cherry tomatoes. Put under a preheated grill until the cheese melts. Garnish with fresh basil to serve.

Get creative with your toppings for these little sweet potato pizzas. Try adding finely chopped salami or chorizo, roasted red peppers and sun-dried tomatoes, or a little pesto

Mushroom buns are high on flavour and low in carbs

Lightly grilling the Portobellos after brushing them with oil enhances their meaty texture, so they hold their shape. To add crunch, mix sesame seeds or breadcrumbs with the Parmesan topping (see recipe)

MUSHROOM BUNS

The meaty texture and rich, earthy favour of large, fat Portobello mushrooms make them a wonderful alternative to bread buns for burgers or sandwiches. Try our simple and delicious Chicken Mushroom Bun recipe (right).

To make...

Preheat the grill. Brush 2 large Portobello mushroom caps to clean, then oil lightly on both sides. Grill for about 8mins, turning halfway through, until just tender – make sure they hold their shape and don’t shrink too much. Sprinkle some grated Parmesan on top of each mushroom, then return to the grill for 1min, or until the cheese turns golden. Use the mushrooms to sandwich slices of cooked chicken breast (or a beef burger if you prefer). Garnish with sliced red onion and roasted peppers from a jar.

LEEK CANNELLONI To make... Leeks are the ideal shape to act as a veggie stand-in for pasta tubes in our Leek Cannelloni recipe (right). Just remove the inner layers of the leeks, then cook the leek tubes until tender but not soggy. Leeks can be used instead of pasta in lasagne, too – cook as above, then slice open and fatten out the layers to form sheets.

Preheat the oven to 160C/ 140C Fan/Gas 4. Wash some leeks and trim of the tough, leafy tops and roots. Gently, yet frmly, push the centre layers of the leeks up and out, so you are left with the outer tubes. Finely chop the removed inner layers and fry in olive oil. Add chopped spinach and cook until wilted. Mix with

ricotta cheese, then put in a piping bag, or a plastic bag with the corner cut of, and use to stuf the tubes. Put in a greased baking dish. Top with breadcrumbs and grated mature Cheddar. Bake until the cheese melts and the crumbs turn golden.

CABBAGE BURRITOS

Lightly cooked cabbage leaves make a great substitute for four tortillas in our Mexicanstyle Cabbage Burritos (below). Use the bigger, outer leaves of the cabbage for wrapping, as they’re stronger and less likely to tear than the inner leaves.

To make...

Fry chopped onion, chilli and garlic in oil, then add minced beef. When the mince is browned, add canned chopped tomatoes and red kidney beans, plus paprika and cumin. Simmer until the mince is cooked and the sauce has thickened. Lightly blanch the outer leaves of a Savoy or green cabbage. Lay fat and spoon the mince flling in the centre of each. Wrap tightly, then wrap in another leaf, for a double layer. Serve with salsa.

How to cook perfect asparagus You only need to cook the spears very gently, to keep them sweet and succulent. Steam or lightly boil them for about 2-3mins – the delicate green spears should be tender on the outside, with a light bite in the middle. Alternatively, for a slightly nutty favour, grill or griddle the spears for 2-3mins, turning them over midway through.

Hollandaise sauce is one of my all-time favourites and a great recipe for any cook to get under their belt. Once you can make this classic recipe, you can adapt it for all sorts of diferent dishes.

Glynis’ tips ● If the sauce starts

4tbsp white wine vinegar 1 bay leaf 6 black peppercorns 3 large egg yolks 150g unsalted butter, at room temperature, cut into 1/2 cm cubes A small squeeze of lemon juice Griddled asparagus, to serve 1 Fill a large bowl with cold water. Put the vinegar, bay leaf, peppercorns and 3tbsp water in a small pan, then simmer, uncovered, until reduced to about 2tbsp. Immediately dip the pan base in the bowl of water, to cool it down and stop the mixture evaporating.

2 Put the egg yolks in a large bowl with 15g of the butter and a small pinch of salt. Beat together until well blended. Carefully strain the vinegar and herb reduction through a sieve into the egg mixture. 3 Put the bowl on top of a pan that’s a quarter full of simmering water – make sure the bottom of the bowl doesn’t touch the water. Whisk with a balloon whisk, or an electric handmixer, on a slow speed, for 3-4 mins, until pale and beginning to thicken. Do not allow the mixture to overheat or the eggs may scramble. If the sauce seems to be getting too

to separate or ‘split’, transfer it to a bowl using a spatula. Add a tiny amount of cold water, then whisk in the rest of the butter, a little at a time. ● You can make the sauce faster in a food processor. After step 2 in the recipe, put the yolks and vinegar reduction in the processor. Melt the butter in a pan – it will separate and the solids will sink. With the mixer running, slowly pour the liquid (but not the solids) over the yolks. If the sauce is too thick, thin it down with a little water. Add the lemon juice and season.

hot, remove the bowl from the pan and add a few drops of cold water, then continue whisking. 4 Beat in the remaining butter, on a slow speed, a cube at a time. Beat well after each addition and allow it to emulsify – combine and thicken – before adding more. When the sauce has a light, creamy consistency, remove from the heat and whisk for another 1min. Stir through the lemon juice and season. Serve poured over the asparagus. Each 15g serving contains: ENERGY

pring brings one of the great delicacies of the vegetable world – asparagus – to John Harper’s 850-acre farm in the Severn Valley. ‘It’s a wonderful moment when the frst green shoots appear,’ says third-generation farmer John. ‘Here in Worcestershire we get the asparagus early, because the River Severn is warmed by the Gulf Stream.’ British asparagus season is short, lasting around eight weeks each year. And changeable weather makes it impossible to predict exactly when those frst shoots will appear. ‘It needs to be warm and dry for asparagus to come through. Our crop normally

arrives in midto-late April,’ says John, who h set up Harper Farming with his wife, Alice, in 2005. w They’re among a handful of top-quality h growers who are supplying Asda with asparagus this spring. It’s always a race to get the spears from feld to plate in the shortest time possible, for maximum freshness. The asparagus is usually picked in the dew of early morning, then chilled and packed, ready to be in store by the next day. ‘All the harvesting is done by hand by our team of pickers,’ explains John. ‘They travel up and down the asparagus beds in motorised buggies, which

means one person can harvest up to fve acres in a single day.’ With British asparagus widely regarded as the best in the world, its arrival is one of the highlights on the foodie calendar. So what is the best way to eat it? John likes to dip the tender green spears into the yolk of his morning egg, while his wife prefers them grilled and then wrapped in thin sheets of Parma ham. And there’s more to asparagus than just its delicious taste, says John. ‘It’s high in folic acid and a source of antioxidant vitamin C – so it really is a treat all around.’ The delicate spears of asparagus are picked by hand in the dew of early morning for maximum freshness

3 For the base, empty the pizza mix into a bowl and add 200ml warm water. With a fork, mix into a ball of dough. Knead on a lightly foured surface for 5mins. Shape into 2 balls. Roll out each ball to a circle 20cm across. 4 Place each base on a lightly greased and foured baking tray. Cover with oiled clingflm and leave in a warm place for 10mins, to rise (leave 1-2mins longer for a thicker crust, or 1-2mins less for crispier). 5 Barbecue or griddle the courgettes and peppers for 1min on each side, until charred. Leave to cool. 6 Thinly spread the pizza bases with the bianco

sauce, then sprinkle on the shaved Parmesan. Top with the veg and the mozzarella. 7 Slide the pizzas on the barbecue grill, put the lid on and cook for 7-8mins, until the bases are golden and the cheese has melted. BBQ SPECIAL Special spatchcock chicken Spatchcocking a chicken makes it cook more quickly, while barbecuing it makes the skin extra crispy

2 small Butcher’s Selection Chickens, 1.1kg each 2tbsp lemon juice 2tbsp balsamic vinegar 2cm piece fresh root ginger, peeled and grated 2tbsp sunflower oil 3tbsp Amoy Reduced Salt Soy Sauce 1 clove garlic, crushed 3tbsp clear honey 1 Put the chicken breast-side down on a board, with the tail end towards you. Using kitchen scissors, cut along both sides of the backbone and through the ribs. Remove the back bone and discard. 2 Turn the chicken over so the breast is on top, fatten it with your palm. It should be the same thickness all over, so it cooks evenly. If it’s not, make cuts in the thicker fesh. 3 Push 2 metal skewers diagonally through the thigh, breast and wing of

each chicken, then put it in a non-metallic dish. Mix the lemon juice, vinegar, ginger, sunfower oil, soy sauce, garlic and honey, then brush over the chicken. Cover with clingflm and refrigerate for 1-3hrs, basting with the marinade occasionally. 4 Lift out and cook on the barbecue for 15-20mins, until golden and slightly charred. 1 Preheat the oven to 180C/160C Fan/Gas 4. Put a baking tray on the middle shelf. Brush the insides of 4 ramekins with the melted butter, then coat with a little caster sugar. 2 Put 25g of the caster sugar in a pan. Add the cornfour, plain four and the cream. Mix until smooth. 3 In another pan, heat the milk until just boiling, then pour a little into the cream

mixture. Over a medium heat, whisk until it forms a thick consistency. Pour in the rest of the milk, whisking all the time – be sure to take the whisk right into the corners of the pan. 4 When the mixture starts to thicken, remove from the heat. Add the lemon zest and juice. Cool for 2mins, then mix in the egg yolks. 5 In a clean bowl, whisk the egg whites with an electric whisk until they form stif, glossy peaks. Add the rest of the caster sugar. Whisk until stif.

6 Fold a spoonful of the egg whites into the lemon mixture, to make it less stif, then fold in the rest. 7 Spoon into the ramekins, then put on the baking tray in the oven. Bake for 25-30mins, until the soufes are golden brown and give a little wobble when shaken. 8 Sift icing sugar on top and sprinkle with lemon zest. Serve immediately. We’ve created a version of the classic Italian lemon liqueur limoncello for gin lovers MAKES 2 x 750ML BOTTLES READY IN 1HR PLUS MATURING PRICE PER SERVING 28p 6 unwaxed lemons 1 lime 1 litre Asda London Dry Gin Few sprigs rosemary 750g caster sugar 1 Sterilise a large jar (see tip below). GREAT BAKES Rosemary The fresh, distinctive taste of rosemary adds extra depth to sweet treats. You can use the fnely chopped leaves in cakes, cookies and sweet pies. Or add whole sprigs to sauces or custards during cooking for an infusion of favour, then remove before serving. It’s a great match for lemons, apples, pears, peaches, fgs and vanilla favours.

Rosemary drizzle cake

Lemon is a great partner to rosemary, for a lovely balance of citrus and herby favours SERVES 16 READY IN 1HR 45MINS PRICE PER SERVING 21p 175g butter, softened, plus extra for greasing 100ml lemon juice (about 2-3 lemons) 275g caster sugar Sprig rosemary 2 level tbsp fnely chopped rosemary leaves 175g self-raising four 50g plain four 3 large eggs Finely grated zest 1 lemon 1 Preheat the oven to 180C/160C Fan/Gas 4. Grease a 20cm round, deep cake tin and line the base with baking paper. 2 For the drizzle, put the lemon juice, 100g of the sugar and the rosemary

sprig in a small bowl. Leave it in a warm place – next to the oven is ideal – so the favours can infuse, stirring occasionally. The sugar should be dissolved by the time the cake is ready. 3 Meanwhile, put the rosemary leaves in a food processor with both fours. Whizz until the rosemary is cut into really tiny pieces. 4 Beat the butter and remaining 175g sugar together until light and creamy. Beat in the eggs, one at a time, beating well after each addition – add a spoonful of the rosemary four with the last egg. 5 Fold in the rest of the

four and the lemon zest. Transfer to the cake tin and level the top. Bake for 45mins, or until the top springs back when lightly pressed and a skewer inserted in the middle comes out clean. 6 Remove the cake from the oven. Leave for 10mins, then pierce all over with a skewer – this will allow the drizzle to soak into the sponge. Remove the sprigs of rosemary from the drizzle, then spoon over the cake. Leave to cool in the tin.

Toss well, then roast in the oven for 10mins, or until the broccoli is just starting to turn crisp at the ‘fowery’ end, and the tomatoes are slightly softened. 2 Meanwhile, bring a large pan of water to the boil.

Add the pasta, stir once, then return to the boil and cook according to the pack instructions. Drain well. 3 In a large bowl, mix the pasta with the cannellini beans. Stir the spinach leaves through while the pasta is still warm – the heat will wilt them a little without getting overcooked. Italian-born chef Gennaro Contaldo is best known as the star of BBC show Two Greedy Italians, alongside fellow restaurateur Antonio Carluccio. Gennaro, who mentored Jamie Oliver, is also a regular on Saturday Kitchen and has a new book out, Slow Cook Italian. We nabbed him for a quick chat… How did you frst get into cooking? Wonderful food was all around me as I was growing up, and I was always watching or helping my family in the kitchen. What’s your signature dish? Tagliolini [a very thin, fat ribbon pasta] with black trufe shavings. What’s been the proudest moment of your career so far? Winning an award for Best Italian Restaurant, in 2005. Any culinary disasters? I once drizzled trufe oil all over several batches of focaccia, instead of using normal extra virgin olive oil. It tasted really nice but it was a very expensive mistake to make! What’s your favourite meal? I love Scialatielli Con Frutti Di Mare, a type of long, thick spaghetti with seafood. Also, Alici In Tortiera – fresh anchovies with garlic and parsley, gently baked in the oven. When I return home to Italy, my friends and family cook for me and the favours they serve are the ones I was brought up with. That, for me, is the best! Can you share some cookery tips? Bust any rust in your frepit. First, light a fre in the pit to loosen the worst of it*. Allow to burn out and cool, empty out the ash, then scrub with a pot scourer and a steel wool pad.

Clean your grill and give your

barbecue an MOT. To get rid of grime, sprinkle coarse sea salt on lemon halves, rub them over the grill, then rinse. Don’t forget to stock up on charcoal or gas, and replace any damaged gas hoses.

Use containers and pots to bring instant colour and personality to your garden or patio. Choose from ceramic, galvanised metal, stone or terracotta planters. Fill with compost, then pot up with bedding plants such as geraniums, begonias and petunias, which should bloom all summer.

Blitz moss or algae on paths, decking and furniture. All you need is white vinegar and a stif brush or sponge. Dilute the vinegar with an equal amount of water – or use it neat on really overgrown areas – then get scrubbing. Alternatively, use a pressure washer to blast away stubborn green patches**.

Gianna Knowles, mum to Hannah, 19, and David, 17 ‘Kids need help making sense of their day. Secondary school brings all sorts of challenges they need to discuss with parents, from friendships to nasty jokes. Sorting out homework is just part of it. There’s a whole mass of coursework these days, and teens may feel so overwhelmed that they either avoid doing it or spend ages on some bits, then rush through the rest. ‘I help my kids create a homework timetable – with fun things to look forward to afterwards as “rewards”. ‘Even checking the calendar with them can make a big diference. It helped my daughter realise she didn’t need to panic about revision but did need to get cracking with it. I’ve got years of practice organising myself, and my kids can beneft from that. ‘Sometimes supporting them just involves making cups of tea, but I’ve lost count of the times one of

mine has told me they don’t know what they’re meant to be doing because they didn’t understand what the teacher said. Going through their notes with them can have an amazing efect as they suddenly “get it” and are able to get started. ‘Of course, there are times when, as a parent, you don’t know the answers at all (especially as they get older). But it’s quite nice to learn stuf together. ‘Parenting teens can be hard – but with homework, you can all co-operate rather than being at loggerheads.’

Anna McLuckie, mum to Lizzie, 15, and Finbar, 10 ‘I expect my children to do their own homework. I’m supportive, and make sure they have somewhere to do it, plus all the necessary materials or internet access. However, I’ve always made it clear it’s their responsibility to do the work. ‘After children’s early years, I feel it’s important that they learn to organise homework for themselves. It’s part of their education to practise and develop independent study skills.

So if they don’t understand their homework, I tell them they need to talk to a teacher. If they’ve left it until the last minute and say “It’s due in tomorrow but I don’t understand it”, I’m afraid I take the hard line of pointing out this is their problem. If they’d looked at it earlier, they could have asked a teacher, but now they are going to have to make the best of it. ‘Of course, children can feel it’s embarrassing to admit to a teacher that they didn’t understand – but it’s a key skill they need to learn. If I intervene and explain it, that won’t happen. ‘In any case, after a certain point I can’t help. In the past, I got involved with the occasional craft project, and I can advise on languages and English, but something like secondary-level chemistry is utterly beyond me. ‘I appreciate that it’s completely diferent if you have kids who need more support than average. But with mine, I put my time and energy into supporting them with the things that school doesn’t ofer. I see it all as helping children broaden their horizons and working together towards a responsible, self-reliant adulthood.’
