September Whenever I cook, I seem to try to get it done as quickly as I can. It’s not that I don’t enjoy cooking; I think it’s that as an enthusiastic teen, I spent too many evenings trying to cook alongside episodes of Ready Steady Cook. I found it fascinating how they could whip up meals in under 20 minutes. The tips I picked up, and the notion of making things simpler in the kitchen, have stayed with me. We know that cost and time are often the most restricting aspects of our customers’ lives. So, from this month, we’re dedicating a new feature to addressing just that. In ‘How to be a clever cook’, on p45, you’ll fnd lots of helpful advice to save you time, as well as making more of the food you buy, and there are fve quick, tasty weekday meals to feed the whole family, too. As the leaves begin to fall, celebrate autumn’s harvest with our tasty recipes – perfect for the chilly evenings ahead

WHITE ONIONS

A cooking staple, onions are mostly used to provide a base for other favours. But they can also be the star of the show – try in a delicious French onion soup.

SWEDE

Add a splash of colour to your Sunday roast by serving a side dish of mashed swede and potato. Just use half and half – the swede turns a vibrant orange when cooked and lends an almost nutty favour.

BRUSSELS SPROUTS

Don’t save sprouts for Christmas! For a speedy side dish, finely shred and stir-fry with pancetta. Toss with chopped nuts to serve.

WHITE CABBAGE

Sweet and earthy white cabbage is great for adding extra crunch to stir-fries – make sure it’s fnely shredded, so it cooks quickly and evenly. To give a spicy kick, add some green chilli and sesame oil.

BUTTERNUT SQUASH

The skin should be discarded, but don’t waste the seeds. Scoop them out, rinse, then roast for a super snack.

SAVOY CABBAGE

The grooves in the crinkly leaves are perfect for soaking up sauces. Or try blanching leaves whole, then use to wrap savoury rice and vegetables into parcels for an easy lunch.

CHANTENAY CARROTS

This variety of carrot is known for its short, triangular shape and extra-sweet taste. There’s no need to peel, wash or chop – just steam and toss with a little butter to serve.

PARSNIPS

Why not whizz up parsnips into a tasty curried soup? Simply add Indian-inspired spices, such as cumin, turmeric and coriander.

COURGETTES

These make an excellent alternative to pasta. Using a vegetable peeler, take of long thin strips and boil in lightly salted water for a few minutes. Drain and serve with your favourite sauce for a quick midweek meal. SEPTEMBER 2014 | ASDA.COM/MAGAZINE | 19

Garlic Granules 1 level tsp ground cumin 1tbsp flat-leaf parsley, finely chopped 4 large eggs, to serve 1 Preheat the oven to 200C/180C Fan/Gas 6. Put the oil in a large roasting tin and put in the oven to heat. 2 Place the potatoes,

parsnips and carrots in a large pan, cover with cold water and heat until simmering. Cook for 3mins, then drain well. 3 Remove the baking tray from the oven and carefully add the drained potatoes, parsnips and carrots, along with the onions. Toss in the oil and sprinkle with the garlic

granules and cumin. 4 Cook in the oven for 35mins, turning the vegetables over and moving them round the pan halfway through to make sure they’re evenly cooked. 5 Remove from the oven, toss with the chopped parsley, then season. Top each portion with a poached or fried egg.

over a medium heat until tender. Add the spinach and cook until wilted. 2 Lightly beat the eggs until evenly mixed. Add the Parmesan and basil, then season. Pour the egg into the pan and stir to distribute the vegetables evenly. Tear the mozzarella into pieces and put on top.

3 Cook over a low heat until the base is set but there is still a flm of liquid egg on top – this takes about 10-15mins. 4 Heat the grill and put the frittata under it for 2-3mins until the top is golden and the egg is set. 5 Sprinkle the top with Parmesan and basil leaves before serving.

Add the sprouts and cabbage and cook for 2-3mins. Cover with the lid and cook for 4-5mins more,

or until just soft. Drain of any liquid and discard. 4 Mix together the ricotta, chopped thyme and half the sprout and cabbage mixture. Spread over the pizza base. 5 Scatter over the rest of the mixture, along with the Parma ham. the cabbage, carrot, spring onions and pepper. 4 Whisk the soy sauce, oil, and lemon juice until well combined. Add the chilli (if using) and coriander. 5 Pour the dressing over the coleslaw and toss everything together. 6 Serve the coleslaw on top of the potatoes.

From townies to crookies, there’s no limits to what you can make with combo-bakes. The fun new cooking trend takes two classic desserts and combines them to create something totally new and irresistibly delicious. It started in New York, when bakers crossed a croissant with a doughnut. Since then cooking fans have come up

with exciting creations including the mufe (mufn meets wafe) and crookies (croissant and cookie). Now you can try out the trend as we bring you four exciting combo-bake recipes, in the latest of our four-part Baking Special. In the frst two parts, we showed you how to make a kids’ pinata cake and revealed the classic

recipes that everyone needs. Get the best of both worlds with a gooey brownie in a crisp pastry case SERVES 12 READY IN 1HR 10MINS PRICE PER SERVING 57p FOR THE PASTRY Preheat the oven to 180C/160C Fan/ Gas 4. Sift 200g plain flour, 1 level tbsp icing sugar and a pinch of salt into a bowl. Rub in 115g cold butter, cut into small cubes, and add enough water to make a stif dough. Roll out on a lightly foured surface and use to line a 22cm fan tin. Prick the base with a fork and

chill for at least 15mins. FOR THE PECAN FILLING Lightly beat 1 medium egg with a fork. Add 50g soft brown sugar, 75g maple or golden syrup and 15g melted butter and beat until just blended. Add 100g roughly chopped pecans, spread in the base of the pastry case. Bake for 15mins.

FOR THE BROWNIE TOPPING Melt 175g dark chocolate (70% cocoa solids) and 85g butter in a bowl standing over a pan of hot water. In another bowl, whisk together 50g caster sugar and 2 medium eggs until foamy. Stir into the melted chocolate along with 50g plain flour. Carefully spread the

chocolate layer over the pecan layer. Bake for 20-25mins or until cooked like brownies – frm to touch but gooey inside. Dust with icing sugar and scatter over a few chopped pecans to serve. Each 93g serving contains: ENERGY

Part pastry, part sponge, plus juicy raspberries, to get a mix of textures and favours that’s utterly irresistible SERVES 12 READY IN 1HR 30MINS PRICE PER SERVING 28p FOR THE CAKE Preheat the oven to 180C/160C Fan/Gas 4. Grease and line the base of a 20cm shallow cake tin. Beat 100g softened unsalted butter and 100g caster sugar until creamy. Add 2 medium eggs, one at a time, beating after each addition. Fold in 100g self-raising flour. Put in the tin and level the top. Bake for 20-25mins or until the top springs back when lightly pressed. Cool on a wire rack.

Put the other strips of pasta on top and, using your fngertips, press down between the flling and around the edges, making sure to get rid of any air in the parcels. 6 Cut between them and pinch the edges together to seal thoroughly. Put the ravioli on a rack and leave in a cool place for 20-30mins to dry slightly. Add the ravioli to a large pan of lightly salted boiling water, a few pieces at a time. Simmer fast for 3-4mins, or until just tender. Remove with a slotted spoon and keep warm while you cook the rest of the ravioli. Divide between 4 plates. 7 To make the sauce, put the butter, basil and walnuts in a small frying pan. Heat gently until the nuts and butter just start to brown – watch carefully because it will burn quickly. Drizzle over the ravioli, season with pepper and sprinkle Parmesan on top. Serve with rocket.

Glynis’ tips ● The traditional way to mix pasta dough is with your hands. It allows you to mix thoroughly and to feel when the texture is right. The more often you make it, the easier it will become. ● Use the right four – “00” grade is very fne and ideal for making pasta. ● To save time, you could use a tub of Chosen by you Tomato & Basil Sauce instead of making your own.

● When wrapping the pasta dough in clingflm (Step 2), be sure to wrap it really well to get rid of any air that would make the surface dry out. ● You can freeze the uncooked ravioli. Line a shallow container with clingflm and dust with four. Put in a single layer of ravioli, cover with clingflm and freeze. To cook from frozen, add 1-2 mins to the cooking time.

1 Put the four on a work surface, shape it into a pile and create a well in the centre. Add a good pinch of salt, 4 eggs and the oil. Using your fngers, mix the eggs and oil together, gradually mixing in the four until everything is combined and you have a stif dough. 2 Clean the work surface, then four lightly and knead the dough for 10-15mins until it’s smooth and a bit stretchy. Wrap tightly in clingflm and leave in a cool place for at least 1hr. 3 Meanwhile, cook the spinach in a nonstick pan until it wilts. Chop it up roughly. Allow to cool, then mix the spinach with the ricotta, Parmesan and nutmeg. Season and chill. 4 Cut the pasta dough in half. Roll one portion out on a lightly foured surface to the thickness of a 10p piece. Trim to a rectangle 36cm x 24cm. Lightly mark it into 24 x 6cm squares. Cut into 6 strips of 4 squares each. 5 Put the spinach flling in a piping bag and pipe a blob in the centre of each marked pasta square. Roll out the rest of the dough to the same size and cut into

Boil the potatoes until tender, then mash with 4tbsp of the milk and the butter. Season. 2 Meanwhile, heat the oil in a large frying pan, add the mushrooms and cook over a medium heat, stirring

LEARN ABOUT FOOD From this month, cooking lessons are back on the curriculum in UK primary schools. To help inspire children to put on aprons and be busy in the kitchen, Asda is getting involved as well, helping teachers and parents teach children what food is all about – in the classroom and at home. Getting this knowledge across to kids is crucial – and we need to start when they’re young. Learning how to cook means that kids can feed themselves well later in life. And knowing about nutrition and where their food comes from encourages them to be more interested in eating healthier food. Plus it’ll make them more adventurous when it comes to trying new things – including veg!

Youngsters are taught essential cooking skills, such as grating, chopping, weighing and mixing, plus they also discover what makes each dish healthy.

To help the whole family get involved, we’ve put together a collection of simple dishes that you can make with the kids, to complement what they’re learning at school. ● For teachers, we’ve created a special Community Life Tool Kit for Schools, designed to cover all the basics of food education. It’s packed with useful teaching materials, lesson plans and step-by-step recipes for school cookery classes. ● Teachers can also call or pop into their local store to ask the Asda Community Life Champion – who coordinates community and charity events – to come into their school to hold fun ‘taste and discovery’

sessions. They’ll talk to the children about where their food comes from and what makes a healthier, balanced diet, and even help them cook recipes featured in the Tool Kit.

In the classroom To show how much fun cooking can be, Asda Magazine Food Editor Glynis McGuinness and Community Life Champion Michelle Frost, from the Bury St Edmunds store, recently visited children at Great Dunmow Primary School in Essex to give them a special cookery lesson. The kids loved making juicy fruit salad, mini frittatas and beef burger sliders – as you can clearly see!

Is it a good idea to take your kids food shopping?

Sarah Herbert, mum to fouryear-old Sam ‘As long as you’re not in a rush, a stroll around a nice big supermarket with the kids can actually be fun. ‘It’s good for them to learn that food doesn’t just magically appear; someone has to go out and choose it, not to mention pay for it. You can get them on board with next week’s menu by letting them help “choose” (between two options, not the whole shop!). ‘I think it’s good for them to see food as ingredients too, instead of just a whole meal appearing on a plate. It can be educational in other ways: my son Sam is learning all about “where things are grown” at school, so we chat about that. We also talk about numbers and adding up, using examples in the shop, and when he was younger we did “look for” colours. ‘If your local store sells kids’ clothes, it’s great to be able to get stuf while

they’re with you, without worrying that it won’t ft or they’ll hate their new top. ‘You can also turn all sorts of things into a game. Sam loves ticking of a list, or being sent of down the aisle to fnd the tuna. And if all else fails, we go to the pet food aisle and coo over the big pictures of cats and dogs. Who could enjoy that more than a young child?’

Rose used to shout, “Mummy, I hate shopping!” These days she’s keen to “help”, so she’s constantly trying to get out and lend a hand. She’s particularly keen on the cleaning aisle. It must be the lure of all those chemicals. ‘Sometimes, we have to double back to a previous aisle to pick something up. That can trigger a major meltdown. A bribe can work, but that means opening something in the trolley and handing a leaking bag of crumbs to the person at the checkout. ‘Finally, the packing and paying. I have to catch glass jars and boxes of eggs as Rose tries to hurl them into the bags. And don’t get me started on trying to keep the children under control while using self-checkout machines... ‘That’s with just one child! I still shudder at the thought of the time I took my youngest along, too. They fought the whole time about who had the most new socks. It was so stressful that I had to take us all of to the cafe to recover before tackling the car park again. ‘Much as I love my kids, I would defnitely recommend giving family shopping trips a miss!’
