Producer Makhan Padda introduces us to his Worcestershire farm, where he grows juicy red strawberries

WHO GROWS IT STRAWBERRIES ‘I love the smell and taste of fresh strawberries,’ says Makhan Padda, Founder and Owner of Vicarage Nurseries, an award-winning, familyowned farm in Worcestershire. Established in 1996, the farm was set on a 2.6-acre site and run as a one-man operation. Fast-forward to the present day and Vicarage Nurseries now stretches to more than 300 acres with up to 500 seasonal staff and a soaring production of 900 tonnes of strawberries. A GREAT SUCCESS In 1966, Makhan moved to the UK from Punjab in India, where he grew rice, sugar cane and wheat. He had a variety of jobs before venturing back to agriculture in 1996 to start Vicarage Nurseries. With no prior knowledge of growing soft fruit, Makhan worked hard to become well respected in
the local community. In fact, he’s known to many in the area as Mr Strawberry, and last year, the company was named Soft Fruit Grower of the Year by Horticulture Week magazine.

STRAWBERRY PRODUCTION ‘We grow strawberry plants in soil on poly-covered high beds and in peat bags on beds under polytunnels,’ Makhan says. ‘This year, we’ll be supplying eight different varieties to Asda.’ DELICIOUS STRAWBERRIES Makhan likes to share his strawberries with his eight grandchildren – he always takes a tray when he visits and makes them strawberry yogurt, which goes down a treat. Well respected in the local community, Makhan is known to many people in the area as Mr Strawberry 1 Vicarage Nurseries employs up to 500 seasonal workers for field preparation, installing irrigation, tunnelling, planting, mixing fertilisers, weeding, spraying and harvesting. 2 The strawberries are picked when 80 per cent of the fruit is coloured red. 3 Strawberries planted in June start showing flowers after 30 days of planting and, under normal weather conditions, the fruit is ready to harvest after 60 days of planting.

BASIL Here are some ideas for this aromatic and versatile herb. For maximum flavour, always tear and add to dishes just before serving. ♦ Add a handful of torn basil to tomato-based pasta sauces. ♦ Sprinkle on top of your favourite pizza. ♦ Stir torn basil into salads and dressings. ♦ Make pesto with basil, pine nuts, Parmesan and olive oil. Serve with pasta.
3 WAYS WITH… AVOCADO To prepare, run a knife around the avocado, cutting through to the stone. Twist to separate, then use a teaspoon to remove the stone. Run a spoon under the skin to remove the flesh.
Avocado & Marie Rose sauce ♦ Mix approximately equal amounts of tomato ketchup and mayonnaise together in a small bowl. ♦ Stone and skin an avocado and chop into bite-sized pieces. ♦ Serve with the sauce.
Avocado salsa ♦ Stone, skin and roughly chop an avocado. ♦ Put in a bowl with a few chopped cherry tomatoes and mix well. ♦ Add some finely chopped red onion and a little chopped fresh coriander. Stir and serve.
Avocado, chicken & bacon melt ♦ Mix some chopped cooked bacon with some chopped cooked chicken, cubed avocado, grated cheese and mayonnaise. ♦ Put onto a halved ciabatta roll. Toast for 2-3 minutes, then top with the other half.

Beetroot
This deep purple root adds subtle sweetness and stunning colour to an amazing range of dishes
Lamb & beetroot burgers with oven-baked crisps These succulent lamb burgers are great teamed with home-baked beetroot and parsnip crisps 1 large fresh raw beetroot, peeled 1 large parsnip, peeled 150g vacuum-packed cooked beetroot 600g minced lamb 2tbsp breadcrumbs 1 free-range egg 1tsp chopped fresh thyme 1tbsp sweet chilli sauce 2tbsp sunflower oil 8 bread rolls and a selection of salad, to serve
❶ To make the crisps, slice the raw beetroot and parsnip very thinly with a vegetable peeler. Spread out on kitchen paper for 1 hour to dry. ❷ In the meantime, to make the burgers, finely dice the cooked beetroot and pat dry with kitchen paper. Add this to the lamb, breadcrumbs, egg, thyme and chilli sauce in a large bowl and mix together. Season to taste.
Shape into eight burgers and chill for 1 hour. ❸ Preheat the oven to 180C/ 160C Fan/Gas 4. Put the veg slices in a bowl, drizzle over the oil and season. Mix with your hands until evenly coated. ❹ Place the slices in single layers on two baking sheets lined with baking paper. ❺ Bake for 20-25 minutes until golden around the edges, checking frequently.
Turn halfway through cooking if the slices are cooking unevenly. Cool on a wire rack to allow the slices to crisp up. ❻ Meanwhile, cook the burgers on a griddle or frying pan for 8 minutes on each side. Serve in bread rolls with a selection of salad and the beetroot and parsnip crisps.

❶ Preheat the oven to 190C/ 170C Fan/Gas 5. Add the potatoes and sweet potatoes to a pan of boiling water. Return to the boil and simmer fast for 5 minutes. Drain well. ❷ Put the potatoes in a large, ovenproof dish with the beetroot, onions and chorizo. Mix together the oil, mustard and Worcestershire sauce, pour over the vegetables and mix well. Bake for 40 minutes, stirring halfway through. ❸ Fry the eggs in a little oil and serve on top of the hash. Season with black pepper.

Chocolate & beetroot brownies Grated beetroot adds a lovely moistness to these classic brownies 200g Asda Dark Chocolate 200g butter 3 free-range eggs 1tsp vanilla extract 275g caster sugar 200g self-raising flour 200g fresh raw beetroot (peeled weight), grated
❶ Break the chocolate into pieces. Put in a large bowl with the butter and stand it
above a pan of simmering water, making sure the base of the bowl doesn’t touch the water. Leave to melt, stirring constantly. Allow to cool slightly. ❷ Preheat the oven to 180C/ 160C Fan/Gas 4. In a bowl, beat together the eggs, vanilla extract and sugar. Whisk in the chocolate mixture, then gently fold in the flour and beetroot. ❸ Spoon the mixture into a
20cm square roasting tin and bake for 40-45 minutes. Cool in the tin for 5 minutes, remove, then finish cooling on a wire rack. Cut into squares to serve. TIP For a dairy-free version of these brownies, swap the butter for soya spread and use dairy-free chocolate. HIGH

Heat until simmering, then cover and simmer gently for 30 minutes.
❹ Add the beans to the pan, return to the boil, cover and simmer gently for 30 minutes. Serve with the potato wedges. TIPS Store in a cool box when travelling. To reheat the wedges on a camping stove, cook in a nonstick frying pan, turning often, until really hot. To reheat the pork and beans, put in a large pan, cover and simmer gently until really hot. These American family favourites are a cross between sweet scones and British-style shortbread. They’re easy to make – the secret to their success is to handle the dough as little as possible in order to keep the shortcake light. The classic filling is a combination of softly whipped cream and fresh strawberries. You can use other fruits, too – try raspberries, blueberries, or sliced peaches or nectarines.
1 Preheat the oven to 190C/170C Fan/Gas 5. Line two baking trays with baking paper. Sift the flour with the baking powder and a pinch of salt. Add the butter and stir once to coat in flour. Lift pieces of the butter and some flour out of the bowl and gently rub together between your fingertips and thumbs. Keep doing this until the mixture resembles coarse breadcrumbs.
2 Stir in the sugar. Mix the milk with 1tbsp of the whipping cream and then pour it into the bowl of rubbed-in crumbs. Mix with a round-bladed knife to make a soft dough. Gather the dough together with floured hands and put on a lightly floured surface. Pat down evenly with floured hands until it is about 1cm thick. It’s too soft to roll out.

Using a 6cm cutter, cut out as many rounds as possible. Gather up the leftover dough, pat out again and cut more rounds. Repeat until you have eight rounds in total. Place on the baking trays, leaving a gap between each to allow them to spread slightly. Bake for 15-18 minutes until risen and golden brown. Leave on the trays for 5 minutes, then transfer to a wire rack to cool.
4 Whip the rest of the cream with the icing sugar and vanilla until it starts to thicken and just holds its shape. Take care not to over-whip – if using an electric mixer, set it on the slowest speed. Slice a few of the strawberries. Sandwich the shortcakes with the cream and sliced strawberries, and dust with icing sugar. Serve the rest of the strawberries separately in a bowl.
Glynis’ tips ● You could also make this recipe into one large shortcake and serve it cut into slices. Divide the dough in half and pat each portion into a 17cm round. Bake as above for 17-20 minutes, then assemble.
● Instead of whipping cream, you could use 125g mascarpone mixed with 1tsp icing sugar, a few drops of vanilla extract and 1-2tbsp whole milk. This keeps better than whipped cream if you serve the shortcakes outside on a hot day.

dips
Take our basic recipe and add different avours for seven delicious dips
The basic dip Stir some Asda Lighter Plain Soft Cheese until it has softened. Mix with a spoonful each of reduced-fat sour cream and Asda Light Mayonnaise. Season well then add extra ingredients to taste.
Thousand island Stir in some tomato ketchup, Worcestershire sauce, a little Asda Horseradish Sauce and a few drops of Tabasco.

❶ Put the chicken and stock in a pan. Heat until simmering, then cover and cook for 20 minutes. Creamy fish bake The sunflower seeds in this topping add a satisfying crunch and flavour 400g new potatoes 250g smoked cod fillet, skinned 250g cod fillet, skinned 300ml semi-skimmed milk 160g pack baby spinach 325g frozen peas 25g butter, plus extra for greasing 25g flour 75g extra mature Cheddar, grated 4 sun-dried tomatoes, drained and chopped 50g fresh breadcrumbs 25g sunflower seeds
❶ Preheat the oven to 190C/ 170C Fan/Gas 5. Boil the potatoes until tender. Drain, allow to cool, then slice thickly. ❷ Put the fish in a large pan with the milk and heat gently until simmering. Partially cover and cook gently for 8 minutes. Drain, and reserve the milk. Break the fish into chunks, removing any bones. ❸ Stir-fry the spinach in a dry, nonstick frying pan until it wilts. Set aside. Boil the peas for 4 minutes. Drain and set aside. ❹ Melt the butter in a small pan. Remove from the heat and stir in the flour. Gradually stir in the reserved milk, then return to the heat. ❺ Whisk until boiling and thickened. Remove from the heat and stir in two-thirds of the cheese, the tomatoes, peas and fish. ❻ Grease an ovenproof dish and cover the base with the sliced potatoes. Add the fish mix and top with the spinach. ❼ Mix the crumbs with the seeds and remaining cheese. Sprinkle on top and bake for 30 minutes.

❶ Mix the tandoori spice mix with the yogurt and lemon juice in a small shallow dish.
Add the lamb and turn the meat in the paste so that all the pieces are coated. Cover loosely and chill for 30-40 minutes. ❷ Mix the orange juice with the sultanas or raisins and grated carrot. Set aside. ❸ Preheat the grill or a griddle. Remove the lamb
from the marinade and grill or griddle for 5-6 minutes, turning occasionally. ❹ Garnish the carrot salad with the coriander and serve with the lamb escalopes and warmed naan bread.

Halloumi keeps in the fridge for weeks, unopened, and it cooks in minutes, making it handy when you want to prepare a quick, last-minute meal 2tbsp balsamic vinegar 1tbsp olive oil, plus 1tsp for cooking 1tsp coarse-grain mustard 3 courgettes, topped, tailed and cut into long, thin ribbons with a potato peeler 3 spring onions, trimmed and sliced 1 red chilli, deseeded and finely chopped (optional)
12 cherry tomatoes, halved 70g pack rocket 250g Asda Chosen by you Halloumi, drained
❶ In a large bowl, whisk together the vinegar, olive oil and mustard, and season with pepper. Set aside half the dressing. Add the courgette ribbons to the bowl, along with
the spring onions and red chilli (if using), and toss to coat in the other half of the dressing. Set aside for 10 minutes. ❷ Divide the salad between four serving plates, and add the tomatoes and rocket. ❸ Cut the halloumi into eight slices and pat dry with kitchen paper. Brush with olive oil on both sides. Heat
a dry, nonstick frying pan or griddle and cook the halloumi for 2 minutes on each side until tinged brown. ❹ Arrange two slices of the halloumi on top of each salad, drizzle on the remaining dressing and serve at once.

❶ Heat 1tbsp of the oil in a large saucepan, add the leek and stir. Cover and cook over a low heat for 5 minutes, stirring occasionally. ❷ Meanwhile, heat 1tbsp of the oil in a frying pan and cook half the turkey over a high heat, stirring often, until lightly brown all over. Transfer to a plate. Repeat with the remaining oil and turkey. ❸ Add the turkey, stock, tomato purée and herbs to the pan and heat until simmering. Cover and simmer very gently for 25 minutes. ❹ Add the carrots, cover and simmer for 5 minutes. Add the peas and beans, cover and simmer for another 5 minutes. ❺ Mix the cornflour with 3tbsp cold water. Stir into the pan and heat until slightly thickened. Serve with boiled new potatoes.

DAIRY FARMER Geoff Spence, Lowfields Farm, Northallerton, North Yorkshire Geoff Spence is the third generation of his family to work the farm and is no newcomer to industry success – Lowfields is the only farm to have won both the Gold Cup award for the Best Dairy Farmer (2009) and the Farmers Weekly British Dairy Farmer of the Year award (2007). The North Yorkshire farm is home to 340 Miresdale pedigree Holstein milking cows, which produce more than 90,000 litres of milk every week. SHEEP FARMER Simon Stott, Laund Farm, Preston Third-generation farmer Simon Stott and his father John have 400 dairy sheep, including Swaledale and Bluefaced Leicester breeds. John was the winner of the British Sheep Farmer of the Year 2011, and has been working their 500-acre hill farm in Lancashire for over 50 years. In addition, Simon and John originally set up Sheep Milk UK, a co-operative of local sheep milk producers. Sheep milk is supplied by members of the co-operative to 11 dairies in the north of England, where it is made into cheese. Open Farm Sunday activities: Sheep milking, sheep clipping, dog trials and cheese-making demonstrations throughout the day.

175g plain flour, plus extra for rolling out Good pinch each of mustard powder, cayenne and salt 100g butter, diced 40g mature Cheddar, grated 25g Parmesan, grated 25g sesame seeds 15g poppy seeds 1 large egg, separated
❶ Preheat the oven to 190C/170C Fan/Gas 5. Line two baking trays with baking paper. Sift the flour, mustard, cayenne and salt into a bowl. ❷ Add the butter and rub in between your fingers and thumbs until it looks like crumbs. ❸ Add the cheeses and seeds and mix evenly. Mix the yolk with 4tsp cold water and add to the flour. Use a round-bladed knife to form a stiff dough. You may need to add a few more drops of water. ❹ Roll out on a lightly floured surface to 5mm thick. Cut out A and D letters using a small knife. You could use a pastry cutter to shape the round part of the D. Gather up the leftover dough and repeat. You should end up with six As and 12 Ds. ❺ Space out the biscuits on the baking trays and brush with the egg white. Bake for 15 minutes. Cool for 5 minutes, then transfer to a wire rack. CALORIES

Men aren’t exactly known for their willingness to seek help when it comes their health. In fact, in a recent study, one-third said they’d only see a doctor if prompted by their partner, or if they felt they really needed to. Men are often embarrassed to discuss their symptoms, but an early diagnosis can make a big difference to a successful outcome.
Asda’s in-house pharmacists can advise on a range of health issues and prescribe over-the-counter treatments†. Here, David Gallier-Harris, one of our pharmacists, answers your most common queries and explains that it’s never too late to get healthy.

What types of illnesses are men most at risk from? ‘The number one health issue that affects men is cardiovascular disease,’ says David. ‘This is used to describe a range of conditions, such as having a heart attack or stroke.’ Are men more likely to suffer from certain conditions at certain ages? ‘Cardiovascular disease can affect men in all age groups, but the chance of complications starts to go up in the mid-40s and keeps rising as you get older,’ David points out. ‘As you approach 45, it’s worth having health checks every few years.’
Which heart health-related warning signs should never be ignored? ‘More often than not, there are no real immediate warning signs. Prevention is better than cure and having a health check to determine your blood pressure, cholesterol levels, diabetes risk and body mass index, and making lifestyle changes, such as stopping smoking, can make a huge difference.’ At what age are men most likely to suffer from prostate problems? Prostate problems affect around 60 per cent of men aged 60-plus to some degree, but these are often

Men are more likely to develop cardiovascular disease at an earlier age than women*** easily treatable,’ says David. ‘Symptoms often include difficulty in passing urine or feeling that you’ve not fully emptied your bladder. Have a chat with your pharmacist or GP to discuss any symptoms.’ What medical conditions are men more likely to suffer from now, compared with 10 years ago? ‘Type two diabetes is on the rise,’ says David. ‘This might be explained by obesity rates, which have increased steadily over the past 30 years. It’s thought that diabetes is linked to excess body fat in almost two-thirds of cases.’
What is your top tip for men who want to lead healthier lives but lack motivation? ‘It’s never too late to make changes to your lifestyle – changes which will have a real benefit to your health,’ says David. ‘For example, giving up smoking has a benefit from the moment you stop, with your blood pressure returning to normal after about 20 minutes. After just five years, your risk of having a heart attack falls to about half of that of a smoker.’ What’s your advice for men concerned about a health issue but who are reluctant to seek help? ‘Don’t be afraid to come and see us,’ urges David. ‘Any conversation you have with a member of the Asda pharmacy team is completely confidential. We have a consultation room in all our pharmacies. Just ask for a private chat with the pharmacist.’

Cosmetics usually have a sellby date of two years, so ditch anything that’s been lurking for longer than that. TIP: If you’ve had an eye infection, replace all eye make-up and wash your applicators. Mascara has a particularly short shelf life. Replace after three months when it starts to get clumpy. TIP: Avoid pumping the wand, which forces air into the barrel, causing mascara to dry out.

HOW TO MAKE IT: 1. Cut the pork fillet into bite sized chucks, then place in a medium sized bowl, add the groundnut oil and soy sauce. Leave to marinade in the fridge for a couple of hours. 2. In a small saucepan, heat the coconut milk with the curry paste and cook for a couple of minutes. Then stir in the honey, peanut butter and soy sauce. 3. Remove from the heat and leave to cool. Add the mayonnaise and lime juice, and mix the satay sauce up nicely.
5. Cook the pork skewers on the griddle or BBQ for 3-4 minutes on each side or until the pork feels firm to the touch and there is no sign of blood. 6. Brush the pork with a little of the satay sauce and cook for a further 30 seconds on each side, or until the sauce starts to caramelise. Serve the pork with the rest of the satay sauce and lime wedges.

HOW TO MAKE IT: 1. Make the marinade by mixing together the mayonnaise, Worcestershire sauce, paprika, honey and chopped spring onions. 2. Season with pepper and rub the marinade all over the chicken wings. 3. Set aside in the fridge for at least three hours, or overnight if you have the time. 4. Once marinated, BBQ the wings over a medium heat until they are sticky, golden and cooked through. Great with grilled vegetables.
