This month
Welcome to
Spring has ofcially sprung, and across the country the casserole dishes have been put into hibernation and a celebration of all things luscious and green has begun. I love embracing the seasonality of food and adapting tried and tested dishes to take on a new life. Roast chicken becomes a dish best served with a light broth instead of a gravy, and the potatoes make way for green leeks and runner beans. That doesn’t mean I won’t still be tempted by a good old roast though – our hassle-free Sunday menu on page 35 is delicious and it couldn’t be easier. Although I’m not a mother myself, I look forward to Mother’s Day as a reason to get together and this month I’m going to make a special contribution to the gathering – our fabulous custard slices on page 41. We’ve got a recipe for getting the puf pastry just right, plus the flling and the icing, and I’m more than ready for the challenge!

Leading the way on IVF...
New mum Carla Tapping is still over the moon after giving birth to gorgeous baby Louie last November after receiving IVF medication from the Milton Keynes Asda Pharmacy. ‘Louie’s doing amazingly well. He’s happy, healthy and putting on lots of weight,’ says Carla. ‘In fact, size wise, he’s actually now overtaken all the other babies born at the same time as him! I’m absolutely loving being a mum – I feel very lucky.’ ‘I haven’t been back to

Meet our bouquet designer, Sarah Oliver, who’s been busy researching the latest fower trends and choosing our great-quality Mother’s Day bouquets ready for the big day

hoosing just one bouquet for Mother’s Day is difcult, but imagine designing hundreds of them every year? Well, that’s what new product development manager Sarah Oliver does. Working for our partners in fower production, IPL, Sarah selects all the bouquets and pot plants we sell in store. Following trends Working closely with Asda’s fower buyers, Sarah spends time researching bouquet trends from around the world before coming up with her designs. ‘I go as far afeld as China, looking for new trends. I also check out what other supermarkets are doing, and regularly visit London to see what
other people are up to. ‘We start working on events like Mother’s Day 10 months ahead, and are constantly looking for new products. Chrysanthemums and carnations are always popular for Mother’s Day, and we sell a lot of roses, too. And the traditional colours of pink, cerise, purple and white work well for us. This year, we’ve also included scented fowers such as stocks and freesias.’

‘During production, I go on the factory line and make sure the fowers are of the highest quality and the bouquets are being put together just how I designed them.’ The fowers in all our bouquets are of the same high quality, but the fower heads might be bigger, or they may come from a diferent country. These tiny leaves add a warm favour. Like rosemary, thyme withstands lengthy cooking so it’s perfect for home-made oven chips.

Herbs
Use aromatic herbs to give a fresh lift to all sorts of dishes ‘Don’t just stick with herbs that you’ve always used – it’s good to try something new! Fresh herbs are a great way to brighten up dishes and you’ll fnd a wide range available in store. Buy them growing in a pot or ready-cut in packs. Cut herbs can be stored loosely in a plastic bag in the fridge – apart from basil which should be stored with its stalks in water somewhere dark.’ Damon Johnson, Head of Produce Quality
Rosemary
It’s best to remove the slender leaves from the stalks of rosemary. Then chop fnely and enjoy the strong, slightly citrus favour with lamb, pork, fsh and vegetable dishes.

Coriander
This citrussy herb is popular in Asian and South American cooking. For garnishes, use just the leaves, but for salsas and soups you can use fnely chopped stalks as well.
FRESH HERBS
Basil
To preserve its punchy favour, basil is better torn rather than sliced. It should be used raw or added at the end of cooking. A few whole leaves will add a punch to salads, sandwiches and toasties.
Dill
With hints of fennel and celery, these feathery leaves are mainly used in pickles and fsh dishes. For a subtle change, try adding a little chopped dill to your fsh batter mix.
Chives
They are the smallest member of the onion family, but unlike onions chives are best added at the end of cooking. Try in a savoury porridge with a little fried bacon.
Mint
This distinctive-smelling herb has a lovely fresh favour for teas, sauces and jellies. When boiling new potatoes try adding a sprig or two to the water.

BASIL PESTO
Toast a handful of pine nuts and put in a food processor together with a bunch of basil, a large handful of grated Parmesan, a crushed clove of garlic and a good splash of olive oil. Blitz well, adding more oil if needed. Store in the fridge for up to 10 days.

THYME BUTTER
Put a block of softened butter in a bowl. Add a few tablespoons of chopped thyme and beat together with a wooden spoon. Roll the butter between 2 sheets of clingflm into a log shape. Add some whole sprigs of thyme, then reseal the clingflm. Chill until set. Spread on toast or stir through pasta.
• Feta & basil kebabs
Cut some feta cheese into cubes. Place in a bowl and drizzle with a little olive oil. Then stir in some torn basil leaves and leave to marinate for 30 minutes. Thread onto skewers with some cherry tomatoes.

• Baked thyme Camembert
Stud an unwrapped Camembert cheese with thyme sprigs and 2 peeled garlic cloves. Drizzle on a little maple syrup. Wrap in foil and bake on a baking sheet at 180C/160C Fan/ Gas 4 for 10 minutes.
Microleaves

MINT TEA
Why not also try…
The edges of mint leaves start to bruise as soon as they’re torn. If you’re using it as a garnish or in a salad, chop or shred at the last minute before adding to the dish.
Cook a sliced shallot and crushed clove of garlic in a little butter until soft. Add a cupful of white wine and a cupful of stock and simmer until halved in volume. Stir in a cupful of crème fraîche and heat gently, stirring, until just simmering. Stir in some chopped chives and serve with fsh or asparagus.
• Cheese & chive omelette
Mash some goat’s cheese, add chopped chives and use as an omelette flling. • Fishcakes with chives Mix leftover mashed potato with fakes of cooked fsh and chopped chives. Make into patties, roll in breadcrumbs and shallow fry.
The quickest, easiest way to ‘chop’ chives is to snip them with scissors.
Tip
Roughly tear the leaves of a bunch of mint and put in a teapot. Cover with boiling water. Use a wooden spoon to gently bruise the leaves – this releases the oils. Stir in a few teaspoons of sugar to taste. Leave to infuse for at least 5 minutes, then strain into cups.

Freezing herbs
Fresh herbs don’t freeze well but are ideal for herb ice cubes. Chop the leaves, put in an ice cube tray, fll with water and freeze. Great for soups and sauces.

Perfect pancakes Serve fippin’ great ones every time with this easy recipe Sift 115g plain four into a bowl with a pinch of salt. Make a hole in the centre and drop in 1 egg. Measure 275ml milk into a jug, pour a little into the four and whisk together. Gradually add the rest of the milk, stirring. Lightly grease a pan and heat until hot. Pour in enough mixture to thinly cover the base. Cook until golden, then fip over. Repeat with the

A piping bag
Add herb sprigs for flavour REALLY GOOD ROASTIES
It’s really easy to make your own piping bag – and the results will look so much more professional! 1 Cut a piece of greaseproof paper into a perfect square. 2 Fold in half, corner to corner. Cut down the fold to make two triangles. 2 Take one triangle and fold the right side so that its tip meets the triangle top. 3 Hold these two points together with your fnger and thumb. With your other hand, curl the paper around them to make a cone. 4 Fold down the entire cone rim to secure. Fill with icing, snip of tip and get piping.
For the best results when roasting potatoes and lots of other vegetables too, don’t overcrowd them in the tin. If they’re packed in too closely, the veg can end up steaming rather than roasting – and they will also take more time to cook. If necessary, divide the vegetables between two tins.
To check an egg is fresh... Fresh eggs give the best results for baking. To test how fresh an egg is, put it in a bowl of cold water. If it sinks to the bottom, it’s really fresh. If it starts to stand up, it’s still quite fresh. If it foats to the top, it’s no longer fresh. And if you’re not sure, just go by the sell-by date.

SERVES 4 READY IN 1HR PRICE PER SERVING £1.25 1 vegetable stock cube 1tbsp olive oil 15g butter 3 leeks, trimmed and sliced 325g arborio risotto rice 125ml white wine (optional) 1tbsp chopped fresh thyme 225g frozen peas 100g pancetta, grilled 75g Parmesan, grated 1 Dissolve the stock cube in 1 litre hot water in a saucepan. Keep hot. 2 Heat the oil and butter in another large pan. Add the leeks, cover and cook over a medium heat for 10 minutes, stirring occasionally, until soft. 3 Stir in the rice, then add the wine and allow it to simmer until it has been absorbed. 4 Add a ladleful of stock with the thyme and peas. Stir gently and simmer until it is almost absorbed. Continue to add the stock a ladleful at a time, allowing each to be absorbed before adding the next, until the rice is creamy and tender. 5 Crumble the pancetta and stir in with the Parmesan. Leek & potato soup v Served with a chunk of crusty bread, this soup makes a lovely warming meal SERVES 4 READY IN 1HR PRICE PER SERVING 71p 40g butter 4 leeks, trimmed and sliced 200g potatoes (peeled weight), sliced 750ml hot vegetable stock, from 1 stock cube 100g ciabatta or other bread, preferably 2–3 days old 2tbsp olive oil 150ml single cream 1 Melt the butter in a large saucepan. Add the leeks and potatoes and stir to coat. Cover the pan and cook over a very low heat for 10 minutes, stirring occasionally. 2 Add the stock, cover and simmer for 20 minutes. Leave to cool slightly for 10 minutes, then purÊe with a hand-held blender or in a blender or processor. 3 Meanwhile, heat the oven to 190C/170C Fan/Gas 5. Cut the bread into cubes and toss in the olive oil until all the pieces are coated. Season and put on a baking tray. Bake for 10 minutes. 4 Return the soup to the saucepan. Stir in the cream and reheat until very hot but not boiling. Serve with the croutons sprinkled on top.

1 Preheat the oven to 180C/160C Fan/Gas 6. Lightly grease 12 holes of a mufn tray. Cut the roots and tough green leaves of the leek and cut the leek into quarters, lengthways, and slice finely. 2 Cook the leek in 1tbsp of the butter in a saucepan over a low heat, stirring often, for about 5 minutes or until softened. Set aside.

Stir into the leeks and bacon. Add the grated

cube and add 1 sprig thyme. Heat until simmering, cover and simmer for 25 minutes. Drain, reserving 400ml stock. Discard the thyme. Cut the chicken into pieces. 2 Meanwhile, melt the butter in a saucepan. Add the leeks, stir to coat, cover and cook over a low heat for 10 minutes. 3 Remove from heat and stir in the flour. Stir in the reserved stock and heat, stirring all the time, until simmering and thickened. Add to the chicken with the crème fraîche, zest, ham and remaining thyme (leaves only). Season and put in a pie dish about
18cm x 24cm. Set aside to cool. 4 Preheat the oven to 200C/ 180C Fan/Gas 6. Unroll the pastry and cut a pie lid slightly larger than the pie dish. From the pastry scraps, cut a strip about 1cm wide. Dampen the rim of the dish and lay the strip on it. Dampen the pastry strip and put the pastry lid over the top of the pie, pressing the edges down lightly. 5 Make a hole in the middle. To keep the chicken wonderfully moist and juicy, roast it in water and turn over halfway through cooking. The juices make the base for a tasty sauce, too SERVES 4 READY IN 2HRS 45 MINS PRICE PER SERVING £1.54 1 Asda Large Chicken (about 1.6kg) 1 bay leaf Few sprigs thyme 1 small carrot, sliced 2 shallots, halved 25g butter, melted 1 level tbsp cornflour mixed with 1tbsp cold water Purple radish microleaves* and salad cress, to garnish 1 Preheat the oven to 180C/ 160C Fan/Gas 4. Put the chicken in a roasting tin, breast-side down. Add the
bay leaf, thyme, carrot and shallots around the chicken. Brush melted butter on the chicken. Add water to to a depth of 2cm. Cover loosely with foil. Cook for 30 minutes. 2 Remove the foil and turn the chicken breast-side up. Brush butter over any skin not covered by water. Cook, uncovered, for another 1 hour 40 minutes. green beans to a pan of boiling water, then bring back to the boil. Simmer fast for 4 minutes, and then drain. ● Meanwhile, melt 10g butter in a large frying pan and cook 1 bunch spring onions, trimmed and cut
Hasselback potatoes ● Preheat the oven to 200C/180C Fan/Gas 6. Take 600g large baby potatoes and cut parallel slices across each potato, about 3mm apart. Cut about three-quarters of the way down and take care not to go all the way through. ● Put on a baking tray with a rim or in a shallow roasting tin. Mix 15g butter and 1tbsp oil together and brush generously over the potatoes. ● Cook in the oven for 1 hour or until tender and golden and crisp on the outside, turning halfway through. Serves 4. Light, buttery rough puf pastry is made in layers and used in everything from jam turnovers and Eccles cakes to sausage rolls and meat pies. Here, it’s sandwiched with a confectioner’s custard and fnished with a smart icing efect. We’ll show you how! MAKES 8 READY IN 1HR 30 MINS PLUS 1HR 30 MINS CHILLING PRICE PER SLICE 24p 125g plain flour, plus 10g for the custard 85g butter, at room temperature 2 large egg yolks 40g caster sugar 200ml whole milk 15g cornflour Few drops vanilla extract 150g icing sugar Few drops pink food colouring

pastry 90 degrees so that the side showing layers is facing you. Press the edges with the rolling pin, then repeat the rolling and folding. If any butter breaks through, dust it with four. Make sure that the butter doesn’t become soft. Wrap in clingflm and chill for 30 minutes. Repeat with another two rollings and foldings as before. Wrap and chill for 30 minutes. 5 Preheat the oven to 220C/ 200C Fan/Gas 7. Roll the pastry out on a foured surface to the thickness of a pound coin. Trim the edges, cut into 8 rectangles and put on a baking tray. Prick with a fork. Bake for 10 minutes. Allow to cool. 6 To make the custard, whisk together the yolks, caster sugar, 4tbsp milk, the cornfour and 10g plain

four until smooth. Heat the remaining milk until hot but not simmering. Gradually add to the yolks in a thin stream. Pour into a pan and cook over a low to medium heat, stirring continuously, until it comes to the boil. Make sure the wooden spoon goes right into the corners of the pan. If the custard starts to form lumps, whisk with a wire whisk until smooth. Add the vanilla extract. Pour into a bowl and cover the surface with clingflm. Cool, then whisk until smooth.
7 Cut each pastry slice in half through the middle. Pipe or spoon in the custard. 8 Mix the icing sugar with 2-3tsp warm water to make a coating icing. Colour a little of the icing pink and put in a piping bag. Spread white icing on the slices and immediately pipe four lines of pink across each. Run a skewer through the lines for a feathered efect. Leave for 15 minutes to set. Each 108g serving contains: ENERGY

Getting it right... Make up a sandwich with your choice of flling, using no butter inside. Then, very lightly butter on the outside and pop into a sandwich toaster or under the grill. How to make it… 1 Preheat the oven to 190C/ 170C Fan/Gas 5. Remove and discard any skin from the chicken and any fat from the ham. 2 Cut the chicken and the ham into very small pieces – about the size of a pea. 3 Put the chicken, ham and mushrooms in a bowl, add the tomato and basil sauce and mix together. 4 Grease a 21cm square ovenproof dish with oil. Put a whole lasagne sheet in the bottom, cutting the second sheet to ft without overlapping. Cover with half the chicken mixture. Cover with another layer of lasagne, as before. 5 Top with the rest of the chicken mixture, followed by a fnal layer of the lasagne sheets. Spread the cheese sauce on top and sprinkle on the grated cheese. Put the dish on a baking tray and cook in the oven for 35-40 minutes.

From slow-cooked cottage pie to home-made burgers and classic ragù sauce, here’s how to get the most from this great-value, versatile ingredient – and create mouthwatering family meals We’ve all got our favourite ways of serving up mince, but there are so many diferent things you can do with this useful ingredient. Try swapping beef mince for pork, lamb or turkey, for example – they all work in any mince recipe. Or how about trying a new cooking method? Over the next four pages, we show you three classic ways with mince, as well
as simple additions and tasty new twists to keep the family guessing. If you want less fat and saturated fat, choose the leaner types or remove fat while cooking. If you’re slow-cooking mince in stock, skim the fat of the top with a spoon. For burgers, grill rather than fry, so the fat drains out. Or when using mince in a sauce, pour of any fat after browning.

SLOW-COOKED MINCE The easiest way to cook mince is to casserole-cook it very slowly in the oven with a little chopped onion and stock. This gives really tender meat that’s great for using in pies and hotpots.

Cottage pie

The twist Spicy sweet potato cottage pie Soften the onion in the oil as for the cottage pie recipe. Add 1 level tsp each ground turmeric, ground coriander, ground cumin and crushed dried chillies. Stir over a low heat for 1 minute before adding the mince and four. Replace the brown sauce with 3tbsp mango chutney. Replace the potatoes with sweet potatoes and leave the milk out of the mash. Bake as in the main recipe.
And also try... Cottage pie with rosti topping For a variation on the cottage pie topping, boil
700g potatoes (peeled weight), cut into chunks 15g butter 3tbsp milk 1 Preheat the oven to 160C/ 140C Fan/Gas 3. Heat the oil in a fameproof casserole dish and cook the onion
until soft and translucent. Remove from the heat, add the mince and stir until evenly mixed. 2 Pour the stock over the mince. Cover and cook in the oven for 1 hour 40 minutes. Add the brown sauce and stir well with a fork to break up the meat. 3 While the mince is cooking, simmer the potato until tender. Drain, return to the pan and stand over a

Grate the cooked potatoes with the coarse side of a grater and mix with a little melted butter. Spread evenly over the mince in the casserole dish and sprinkle with grated cheese. Shepherd’s pie Replace the beef mince in the classic cottage pie recipe with lamb mince. Add 1tbsp tomato purée and 2tsp mixed dried herbs when you add the stock. Leave out the brown sauce. Top with mashed potatoes and bake as in the main recipe.

2 large baking potatoes 2tbsp sunflower oil, plus 1tsp for brushing 420g Butcher’s Selection Extra Lean Beef Mince 1 medium egg, beaten 100g fresh breadcrumbs 2tsp Worcestershire sauce 1tsp Dijon mustard 1tbsp chopped parsley 4 spring onions, trimmed and finely chopped 4 burger buns, to serve Tomato ketchup and salad, to serve 1 Preheat the oven to 180C/ 160C Fan Gas 4. MEAT SAUCES Mince is great for making meat sauces because it cooks quickly – if you’re really short of time, you can cut the simmering down to just 10 minutes. However, cooking the sauce for longer means you’ll get a richer, more rounded favour and the mince will be more tender.

Ragù sauce
Make this meaty sauce and experiment with diferent ingredients to make the variations below SERVES 4 READY IN 1HR 10 MINS PRICE PER SERVING £1.57 1tbsp olive oil 1 large onion, finely chopped 1 carrot, finely diced 1 stick celery, diced 80g Asda Chosen by you Diced Pancetta 1 clove garlic, crushed 1tbsp tomato purée

Replace the steak mince in the classic ragù recipe with lamb mince. Leave out the celery, pancetta and wine and add ½tsp ground cinnamon. While the sauce is cooking, boil 350g macaroni for 12 minutes. Drain and put half in an ovenproof dish. Top with the sauce and then cover with the rest of the macaroni, pressing it down lightly. For the topping, mix 2 beaten eggs with 450g Greek style yogurt and 50g grated Cheddar. Spread over the macaroni and sprinkle with more cheese. Refuel If you’re a non-morning person, chances are you skip breakfast, too. But if you can tackle the second, you may fnd you’ve made great strides with the frst. ‘Overnight, your body has been fasting,’ says Alison Clark of the British Dietetic Association. ‘Your liver’s been using up glucose stores to keep you going through the night. If you don’t get your blood sugar levels up, you’ll get tired, grumpy and crave all the foods that give you a quick sugar hit.’ A good breakfast will help you refuel and stop pushing that hardworking liver. Alison recommends complex, low GI carbs such as porridge or low-sugar muesli.
