I’m heading into the New Year feeling both optimistic and realistic. I know I’ve spent and eaten too much over the festive season. Dark leafy greens, such as kale, spinach and broccoli provide you with vitamins C and K. Adding them to soups and stews is an easy way to enjoy their benefits.

Orange juice is a classic wake-up drink but why not try them in a smoothie? Or use mangoes and peaches, they’re all a good source of vitamin C, which helps to maintain healthy skin and vision.

Thiamine, which helps to maintain a healthy heart, is found in kiwis, asparagus, and pistachio nuts. Peas are a good source, too, so keep some in your freezer. They’re handy when you’re making a quick supper.

YELLOW If you’re feeling tired, eat some bananas. They’re are a source of potassium, which is good for maintaining the balance of fluid in your body. A lack of potassium can lead to tiredness.

Cook some peeled, sliced potatoes with washed and trimmed sliced leeks in a little butter for 10 minutes. ◆ Pour in hot vegetable stock to come 2cm above them, add a handful of frozen peas and simmer for 15 minutes. ◆ Remove from heat and add a handful of chopped mint. Liquidise until smooth. Serve with crème fraîche and chives.

Mash up a couple of bananas with the back of a fork in a bowl. Add a good splash of orange juice and blitz with a handheld blender until smooth. ◆ Add a few tablespoons of fat-free natural yogurt and a tablespoon of honey. ◆ Stir to combine, adding more orange juice if you like it thinner. Serve in a tall glass with a straw.

Preheat the oven to 200C/180C Fan/ Gas 6. Cut 250g butternut squash into 1cm pieces, put on a baking tray and toss in 1tsp oil. Roast for 30 minutes until tender, turning halfway through. ♦ Heat 1.3 litres vegetable stock to just below boiling point. Keep hot. ♦ Fry 1 finely sliced leek in 1tbsp oil until soft. Add 1 chopped red pepper

and 1 chopped clove garlic and cook for 1 minute. Add 350g Arborio or Carnaroli risotto rice and stir over a low heat for 1 minute. ♦ Add a ladleful of stock and simmer until almost evaporated, stiring gently. Continue adding stock in this way until the rice is almost tender. ♦ Stir in 200g frozen peas, 2tbsp

chopped flat-leaf parsley and the squash. Simmer for 5 minutes, adding stock as before. ♦ Grate 100g Extra Special Parmigiano Reggiano. Stir half into the risotto and sprinkle the rest on top. Serves 4 LOW CALORIES

KNOW YOUR... GRAINS You already know rice and pasta, but why not try these tasty, low-cost grains for a change? ♦ Bulgar wheat This has a nutty taste. Add tomatoes, cucumber, onion and lemon juice for a Mediterranean salad. ♦ Quinoa A good source of protein, this gluten-free seed has a delicate flavour. Use instead of rice. ♦ Pearl barley Use this to thicken soups and stews. It’s also great in risottos. ♦ Cous cous Ready-flavoured or plain, this wheat-based staple is so versatile. How do I cook the perfect rice? Mike Carolan

Put the rice in a sieve and rinse under cold water until the water runs clear. This stops the grains sticking together when they’re cooked. Transfer to a large saucepan and pour in 300ml cold water per 70g rice. Season and stir once – you don’t want to break the grains as this releases the starch and makes the rice sticky. Lemon & ginger cheesecake We used candied lemon slices to give this recipe a special touch – they’re easy to make and have a deliciously sweet and tart flavour SERVES 16 READY IN 2 HOURS PRICE PER SERVING 40p 125g granulated sugar 2 whole lemons, finely sliced, plus the finely grated zest of 1 lemon and 3tbsp juice 200g digestive biscuits 3 balls stem ginger in syrup, drained 75g butter, melted 600g Asda Plain Soft Cheese (full fat) ¼tsp Extra Special Vanilla Extract

2 level tbsp cornflour 175g caster sugar 200g crème fraîche 3 large eggs 1 Dissolve the sugar in 200ml water in a small pan. Add the lemon slices and simmer, uncovered, for 25 minutes until translucent and tender, checking occasionally to make sure the pan doesn’t boil

dry. Lift out and leave to cool. 2 Meanwhile, preheat the oven to 160C/140C Fan/Gas 3. Grease a 22cm deep cake tin. Put the biscuits and stem ginger in a food processor and whizz to make crumbs. Mix with the melted butter. Press firmly onto the base of the cake tin with the back of a spoon. Bake for 10 minutes. 3 Blend the soft cheese with

the vanilla, lemon zest and juice, cornflour, caster sugar, crème fraîche and eggs until smooth. Pour into the tin. Bake for 45-50 minutes in the oven or until just set. 4 Cool, then refrigerate. Top the cheesecake with the glazed lemon slices to serve. MED

1 Heat the oil in a pan, add the spring onions and ginger and cook over a low heat for 1 minute, stirring all the time. Add the curry paste and cook for another minute. 2 Add the coconut milk and stock and simmer, uncovered, for 10 minutes. Meanwhile, cook the udon noodles as instructed. Drain. 3 Add the Thai fish sauce, lime zest and juice, mangetout, beansprouts and pak choi to

the coconut milk and simmer for 4 minutes. Add the prawns, coriander, mint and chillies and simmer until the prawns turn pink and everything in the soup is hot. 4 Divide the noodles between 4 bowls and pour the soup on top. Serve sprinkled with the peanuts and garnish with extra fresh herbs and chilli.

Duck breast with orange sauce Our tangy and sweet sauce was made using marmalade – it’s speedier than making a classic recipe with just fresh oranges but just as delicious SERVES 4 READY IN 30 MINS PRICE PER SERVING £4.13 4 Asda Duck Breasts 2 oranges 1 small shallot, chopped 1 level tbsp plain flour 150ml hot chicken stock made with 1/3 stock cube 4tbsp orange marmalade Roast potatoes and green beans, to serve 1 Pat the skin of the duck with kitchen paper. Make parallel cuts in the skin, taking care not to cut through into the flesh. 2 Grate the zest of ¼ of an orange and squeeze the

juice from both oranges – you need 150ml. 3 Preheat the oven to 200C/ 180C Fan/Gas 6. Put the duck breasts skin-side down in a cold frying pan. Cook over a medium heat, for 5 minutes until the skin is golden brown and starting to crisp, and a lot of fat has run out. Drain off the fat and reserve. Turn the breasts over and cook the other side for 1 minute. 4 Transfer to a roasting tin, skin side up, and cook in the oven for 9-15 minutes, depending

on how pink you like your duck. Leave to rest for 10 minutes. 5 Cook the shallot in 1tbsp of the duck fat until soft. Remove from the heat, add the flour then stir over a low heat for 1 minute. Gradually stir in the stock and orange juice and zest. Simmer for 3-4 minutes. 6 Add the marmalade and simmer until it melts. Serve the sauce with the duck, green beans and roast potatoes. HIGH

Gluten-free clementine cake This moist cake will keep for up to 4 days MAKES 25 SQUARES READY IN 1HR 45 MINS PLUS SIMMERING THE FRUIT PRICE PER SERVING 17p 350g clementines or satsumas (3-6 fruit) 6 large eggs 225g caster sugar 50g Asda Free From Plain Flour 1 level tsp Dr Oetker Gluten Free Baking Powder 250g ground almonds Icing sugar, to decorate 1 Put the fruit in a pan. Cover with cold water. Simmer, covered, for 1½ hours. Drain. Halve, discard pips and purée the fruit (plus peel) with a hand-held blender. 2 Preheat the oven to 190C/ 170C Fan/Gas 5. Line a 22cm shallow square tin with baking paper. Using an electric mixer, whisk the eggs and sugar in a bowl, over hot water, until pale and mousse-like. This will take 10-15 minutes. 3 Sift in the plain flour and baking powder, then add the almonds and citrus purée. Fold in gently until just evenly mixed. 4 Transfer to the tin and bake for 45-55 minutes or until a skewer inserted in the middle comes out clean. Check after 40 minutes – if the top is browning too fast, cover loosely with foil. 5 Leave to cool in the tin for 15 minutes, then transfer to a wire rack until cold. Just before serving, dust with icing sugar and cut into squares. MED

Salmon fillets with pink grapefruit salsa Our colourful salsa lends a refreshing burst of flavour to enjoy with the fish SERVES 4 READY IN 30 MINS PRICE PER SERVING £2.93 2 pink grapefruit 2 ripe avocados, skinned, stoned and cut into small pieces 1 red chilli, deseeded and finely chopped ½ small red onion, finely chopped 4tbsp chopped fresh coriander 1tbsp mild olive oil, plus 2tsp for brushing Finely grated zest of 1 lime

plus 1tbsp juice 250g basmati rice 4 salmon fillets 1 Preheat the oven to 200C/ 180C Fan/Gas 6. Put the grapefruit on a large plate, one at a time and cut off the peel (see Cooks’ Tips on page 25). Remove segments and cut into small pieces. Reserve any juice that escapes. 2 Put the grapefruit and juice

in a large bowl. Add the avocado, chilli, onion, half the coriander, 1tbsp of the oil and the lime juice. 3 Rinse the rice in a sieve under cold water. Put in a pan with a pinch of salt and 1 litre cold water. Bring to the boil, cover and simmer gently for 10-12 minutes. Drain, add the rest of the coriander and the lime zest and fluff up with a fork. 4 While the rice is cooking,

brush the salmon on both sides with the rest of the oil. Heat a griddle pan or dry frying pan until hot. Cook the salmon fillets for 2 minutes on each side. 5 Put on a baking tray and cook in the oven for another 4-5 minutes. Serve the salmon with salsa and rice.

1 Remove most of the skin from the chicken. Score the flesh with a sharp knife. 2 Put the chicken in a large ovenproof dish. Return, uncovered, to the oven for 25-30 minutes until golden brown. 5 Meanwhile, cook the rice until tender, adding the peas and sweetcorn for the last 5 minutes. Drain well. SERVES 4 READY IN 1HR PLUS CHILLING PRICE PER SERVING £1.94 2 x 230g packs smoked river cobbler 400g Maris Piper potatoes, peeled weight Finely grated zest of ½ lemon 2 level tbsp Asda Mayonnaise 1½ level tsp Extra Special Horseradish Sauce 2tbsp curly parsley, chopped Flour for dusting 2 large eggs 125g fresh breadcrumbs (from bread 2–3 days old) 5tbsp sunflower oil for shallow frying Potato wedges, frozen peas, and lemon, to serve 1 Preheat the oven to 180C/ 160C Fan/Gas 4. Put the fish in the middle of a large sheet of foil. Wrap to make a large parcel with tightly sealed edges and room inside for the air to circulate. Put on a baking tray and cook for 15 minutes. Remove from the oven but leave in the parcel for another 10 minutes to carry on cooking. 2 Meanwhile, cut the potatoes into evenly sized chunks and put in a pan of cold water. Cover, bring to the boil and simmer for 10-15 minutes. Drain

in a colander. Return to the pan and stand over a low heat for a minute to allow excess water to evaporate. Use a masher to make a fairly dry mash. 3 Transfer to a large bowl and stir in the lemon zest, mayonnaise, horseradish and chopped parsley. Season with pepper. Unwrap the fish and drain off the juices. Break it into flakes with a fork, then stir into the potato, taking care not to over mix and break up the fish too much. Leave until cold. 4 Dust your hands and a board with flour. Shape the mixture into 8 cakes. Lightly beat the eggs in a large dish. Place the breadcrumbs on a large plate. Dip the cakes in the egg one at a time and brush all over. Put them in the crumbs and pat on to coat. 5 Put the fishcakes on a plate and chill for 30 minutes. 6 Heat the oil in a large frying pan and fry the cakes, over a medium heat, for about 5 minutes on each side. 7 Serve with potato wedges, peas and a lemon wedge. Doughnuts are a classic teatime treat and very inexpensive to make. Because the dough is enriched with eggs, butter and sugar, it’s softer than traditional bread dough. Follow this easy, step-by-step recipe and you’ll have doughnuts with an irresistible cakey texture and a jammy centre.

Rub the butter into the flour. Stir in the yeast and 50g of the sugar. Mix the milk with 100ml boiling water and test the temperature with your finger – it should be tepid. Add to the flour with the eggs and mix with a wooden spoon to make a soft dough. Flour your hands and gather the dough together.

Put the dough on a lightly floured surface and knead for at least 10 minutes. To knead, fold the dough in half, then push it firmly away from you with the heel of your hand. Fold it over again, turn it slightly on the board and repeat. Keep doing this until the dough is stretchy and elastic.

Put in a greased bowl, cover with clingfilm and leave in a warm place until doubled in size. Press the air out of the dough, and cut into 16 even-sized pieces. Shape into doughnuts (see tip below). Place on 2 greased baking trays, cover with greased clingfilm and leave until doubled in size.

Fill a deep-fat fryer with oil or one-third fill a large pan. Heat to 160C or until a piece of bread browns in 70 seconds. Fry the doughnuts, a few at a time, for 5 minutes, turning once. Cool on a plate lined with kitchen paper for 5 minutes.

Fill a large bowl with the remaining caster sugar, add the ground cinnamon and mix together. Toss each doughnut in the sugar until well coated. Leave until completely cold.

Make a hole in the side of each doughnut with a sharp knife, twisting it around. Put the jam in a piping bag (or you could use a freezer bag with the corner snipped off) and pipe jam into the hole. Eat the same day.

GLYNIS’ TIPS ● It’s important to use strong, bread-making flour with a high gluten content for these doughnuts. Gluten is the protein in the flour that makes the dough stretchy and elastic when it’s kneaded – and it gives a light result when cooked. ● To shape the doughnuts, lightly flour your hands

and roll a piece of dough around in your palms to form a ball shape with a smooth top. Put them on the greased baking trays, smooth-side-up. ● To vary the fillings, try using different flavoured jams or lemon curd – or what about a smooth tangy apple sauce for a really fruity alternative?

Preheat the oven to 220C/200C Fan/ Gas 7. Sift together the flour, spice, and a pinch of salt. 2 Rub in the butter using your fingers until it’s like breadcrumbs. 3 Stir in the yeast and 50g sugar. 4 Add the egg and milk to the flour and mix into a sticky dough using your hands. 5 Dust a work surface and your hands with the flour. Knead the dough for 10 minutes – hold it with one hand and push it away with your other. Fold it over, turn it around and push away again. Repeat for 10 minutes. 6 Cut into 8 even-size pieces and shape into balls on the floured surface. Shape into hedgehogs, pulling out one end to make noses. Snip all over with scissors to create spines. 7 Press in currants for eyes and noses, then place the buns on the baking tray. Lay a sheet of greased clingfilm on top and leave in a warm place to double in size. Remove film and bake for 12 minutes or until golden brown. For the glaze, heat 25g sugar and 3tbsp milk in a pan, simmer for 2 minutes. Brush over the buns as soon as they come out of the oven. Cool on a wire rack. MED

Feature wall Wallpapering a whole room can sometimes be a little too much, particularly if the room’s quite small. Instead, create a feature of just one wall with a boldpatterned paper. It changes the look of the room, without too much effort. Add some soft furnishings and accessories in a co-ordinating colour and it’ll feel like a new room. Here, we’ve used Dulux Graphika in Blackberry, £18.97.

Stair flair DECORATING TRICKS It’s easy to change the proportions of a room if you know what to do!

Vertical stripes Make ceilings feel higher by using vertical stripes. They lead your eye up, giving a greater feeling of space.

Horizontal stripes Paint horizontal stripes on walls to make a narrow room seem wider.

Instead of carpeting your stairs, how about using different wallpapers on the risers (the flat bit you can see)? It looks stylish and is a great way of using up leftover paper. We used Dulux Blossom Rose, £18.97. Alternatively, paint all the stairs in a bold colour and add a large number to each riser, starting with ‘1’ and working upwards.

You might not realise it, but you have a lot of strengths and qualities, so stop and think about them. Psychologist Sue Firth (sue-firth.com) suggests a simple exercise to prove it to yourself. ‘Draw a long line representing your life and think about all the things you’ve done that went well or you really enjoyed. List them along the timeline with explanations about them. It’s fun, and works as a visual reminder of the things you’re good at.’ You may not like the way you look either, but it’s important to focus on the things you do like, says confidence coach Jo Painter, ‘And stop reinforcing the negative by talking yourself down.’

LEARN TO SAY NO Do you often find yourself being talked into doing things you’d rather not, like working late or picking up the kids when it’s not your turn? Not being able to say no when you’re already overworked can lead to stress, anxiety and depression. ‘One way to give yourself confidence to say no is to talk about it. Explain clearly why you can’t do it and suggest an alternative,’ advises psychologist Susan Quilliam (susanquilliam.com). You’ll feel much better for setting some boundaries.

IMPROVE YOUR BODY LANGUAGE

‘Start by changing your body position,’ says Gillian Butler, author of Overcoming Social Anxiety and Shyness. ‘Sit up straight, make eye contact, and speak clearly.’ Whether it’s the PTA or the company board, this is just one of the confidence-boosters you can try. It’s all about seeming to be confident even if you don’t feel it. And if you’ve got to do a presentation, she suggests you pretend you’re talking to one person – a group is just a bunch of people each listening to you after all.

A PROBLEM SHARED…

If something – or someone – is bothering or upsetting you, don’t keep it bottled up. Talk it over with a good friend or your partner, who will likely ofer you a diferent perspective. Even talking about something trivial like an irritating work colleague will help to stop tension building up.

Many of us associate learning with being at school or college, but studies have shown that continuing to learn throughout life can give us greater satisfaction, optimism and help boost self-esteem. We know exercise is good for us physically, but it has lots of feel-good benefits, too. Even moderate exercise like going for a walk releases chemicals in your brain that help to lift your mood. Exercise will also help you sleep better, give you more energy, and help you to be more body confident. The NHS recommends adults aim for at least 150 minutes exercise a week.

TAKE TIME TO LISTEN If you’re struggling to get through to a stroppy teenager, or finding it difficult to communicate with a friend or partner, try not to take it personally and listen to what they have to say. Learning to empathise and accept that sometimes you’ll disagree is perfectly normal in any relationship.
