While I tend to keep my Valentine’s Day celebrations low-key, I do think it’s a great opportunity to show loved ones how much you care. In fact, our readers often tell us it’s not only about romance for them, but also a good excuse to go out for a meal with the whole family, or have fun making gifts with the kids. I relish any excuse to put on a spread for my friends and relatives, Valentine’s Day or not. Most of them think my obsession with feeding them is just a hobby. What they don’t realise is that I’ll only cook for you if I really love you. You can count the number of dishes or courses I serve up as a refection of my afection, and if there’s a cheeseboard involved, then consider me truly smitten – there’s nothing subtle about it. Dougie My favourite book was Dogger by Shirley Hughes. It’s about a boy who loses his toy dog. I went through something similar, so I could relate to the story! I also loved Where The Wild Things Are by Maurice Sendak. Tom I loved the Dr Seuss books, especially Green Eggs And Ham. I also had a copy of The Snowman that my dad made come ‘alive’ by wobbling the pages to answer questions. I was a gullible child.

I now realise I loved it also because it is beautifully written, fnely crafted and supremely funny. Kipling plays wonderfully with words – ‘the great grey-green greasy Limpopo River, all set about with fever trees’.

Just follow these simple tips…’ 1 It’s a snip Carefully lay your bouquet on its side and cut 1cm of each stem at a 45 degree angle – this will give a greater area for absorbing water. 2 Leave it out Remove any leaves that will be submerged under the water. It prevents them from rotting and causing the water to discolour. 3 Size matters Don’t cram the stems into a vase that’s too small. Fill vases three-quarters full with tepid water. All our bouquets come with a sachet of fower food, which will help to prolong the life of your blooms. 4 Sitting pretty Choose a cool spot to display your bouquet, away from direct sunlight or radiators. This helps to slow water evaporation and wilting. 5 Spray away Lightly spritz your bouquet with water every day to stop the fowers from drying out. 6 Bloom boost Every couple of days, throw away the old water from the vase and replace it with fresh tepid water. If the fowers start to droop, re-cut the stems to help the plant take in more water. Most importantly, sit back and enjoy the display!

750g Butcher’s Selection Unsmoked Gammon Roasting Joint 200ml cider 110g bag Asda Tender Leaf Salad 1tbsp capers, drained 50g frozen peas, simmered for 2mins and then drained 3 radishes, sliced 10 Chosen by you Baby Gherkins, sliced 1tbsp cider vinegar 2tbsp olive oil 4tbsp reduced fat creme fraiche 1tsp Dijon mustard 1tbsp fresh parsley, chopped 1 Preheat the oven to 140C/120C Fan/Gas 2. Put the gammon in a roasting dish and pour over the cider. Cover the gammon with foil and cook for 4hrs. 2 Remove from the oven and set aside to cool. 3 Pull the pork apart with a fork to get long shreds. You only need to use about a quarter of the ham – store the rest in an airtight container in the fridge. 4 Toss the ham with the salad leaves, capers, peas, radishes and gherkins. 5 To make the dressing, whisk together the vinegar, oil, creme fraiche, mustard and parsley in a bowl. Top and tail the parsnips, and halve across the middle. Then cut the thinner ends in half and the thicker ones into quarters. Toss with 2tsp of the oil to coat, then drizzle over the maple syrup. Transfer to a roasting tray. 2 Roast in the preheated oven for about 30mins, until golden, shaking the tray from time to time so the parsnips cook evenly. 3 Heat the stock in a pan with 450ml water until simmering. Leave gently simmering until ready to add to the risotto. 4 Cook the onion in the butter and another 2tsp of the remaining oil until soft, over a low heat. further 1min. Stir in the rice and cook for 2mins, so that it absorbs the oil. Add the safron along with the thyme leaves and a ladleful of stock. When the stock has been absorbed, add another ladleful. Stirring often, continue adding the stock, one ladleful at a time, until all the liquid has been soaked up by the rice. This will take up to 30mins. 5 Meanwhile, heat the remaining oil in a frying pan. Cook the chicken on a high heat, skin-side down, for 4-5mins, until the skin is golden and crispy. Turn the chicken over and cook over a medium heat for 6-7mins, until cooked through. Put on a warm plate, then cover with foil and set aside until needed. 6 Put about a third of the roasted parsnips in a food processor and blitz until smooth. Stir into the cooked risotto along with the remaining roast parsnips, reserving a few to serve on the side. 7 Slice each chicken breast into 4 thick strips and serve skin-side up, with the risotto and parsnips on the side. Garnish with a few of the extra thyme leaves and a sprinkling of cracked black pepper, if you want.

Rhubarb triangle Discover the magic that goes into growing Yorkshire’s famous forced rhubarb
Janet Oldroyd-Hulme has been called the ‘high priestess of rhubarb’ – for good reason. She’s a fourth generation grower at E Oldroyd & Sons in West Yorkshire, which is famous for its top-quality forced rhubarb. ‘Our rhubarb is very tender and much sweeter than outdoor grown,’ says Janet. ‘There’s no comparison.’ This year, the company will be supplying 20 tonnes to Asda from its base in West Yorkshire, just seven miles from our head ofce, in Leeds. It’s the star of many traditional British dishes, but rhubarb was frst grown in Siberia and was originally brought here to use in medicine, before people realised that it was delicious to eat, too. The method of ‘forcing’ rhubarb – accelerating growth by keeping it in warm, dark conditions – began in West Yorkshire back in

1877 after being discovered by chance. Special rhubarb sheds were built and as demand grew, so did the industry. At its peak, 200 Yorkshire growers covered a 30-square-mile area that became known as the ‘Rhubarb Triangle’. Today, there are 11 growers, including Janet’s team, covering a nine-square-mile triangle between Wakefeld, Morley and Rothwell.
Grand tradition
While production has fallen, little else has changed since the 19th century. The rhubarb roots are still grown outside for two or three years, then dug up and moved to heated sheds. They’re placed on the shed foor, washed, then kept in total darkness. In these special conditions, the forced shoots are ready within six weeks. The rhubarb is then ‘pulled’ (handharvested), by candlelight, because electric light spoils the colour and crop. It’s an amazing sight. ‘We get lots of tourists and they always gasp when they go into the sheds,’ says Janet. At the height of the rhubarb season, between January and March, visitors can walk through beds of rhubarb lit by fickering candles, surrounded by crimson stems that rise to waist height, with dazzling yellow leaves. ‘It’s beautiful and a bit spooky,’ says Janet. ‘You can hear the buds gently popping as they burst and the creak of the rhubarb as it grows.’ In an age of mechanised farming and imports, no wonder chefs are now leading a rhubarb revival. ‘It’s glorious in cakes, crumbles, steamed puddings and tarts,’ says Janet. ‘The tangy favour also goes beautifully with mackerel, lamb and pork. Plus, it adds a vibrant splash of colour.’

WHAT IS IT? Rhubarb is a vegetable, not a fruit as some people believe. The stalks are usually eaten in desserts, but are also delicious in savoury dishes – try them with roast pork or in salads. Dried rhubarb roots are also used in traditional Chinese medicine. HOW IT’S PRODUCED The stalks of the rhubarb plant grow from a sturdy underground root. These roots can survive hard frosts, so rhubarb thrives in the UK. Forcing rhubarb – growing it in artifcial darkness – produces the best stalks, with a vibrant pink colour, tender texture and bittersweet favour. In 2010, Yorkshire Forced Rhubarb was awarded a Protected Designation of Origin (PDO), giving it the same status as Champagne and Parma ham.

This family recipe is a perfect blend of creamy flling and tangy rhubarb topping SERVES 14 READY IN 1HR 20MINS, PLUS COOLING PRICE PER SERVING 46p 200g digestive biscuits, crushed 85g melted butter 400g cream cheese 2 large eggs 140g caster sugar 11/2tsp vanilla essence 450ml sour cream For the topping: 55g caster sugar 250g Yorkshire Forced Rhubarb, chopped 1tsp arrowroot
1 Preheat the oven to 190C/170C Fan/Gas 5. Lightly grease a 20cm springform cake tin. 2 Mix the biscuits and butter. Put in the tin and press down into the base. 3 Mix the cream cheese with the eggs, 100g sugar and 1/2tsp vanilla essence. Spread over the biscuit base. Bake for 25mins. Remove from the oven and leave to cool for 25mins. Keep the oven on.
4 Meanwhile, mix the sour cream with the remainder of the sugar and vanilla essence. Spread over the cheesecake and return to the oven for 10mins. Chill in the fridge overnight. 5 Once chilled, make the topping by dissolving 55g sugar in 2tbsp water, on a low heat. Add the rhubarb, cover and cook for 2-3mins, until it begins to soften. Remove from heat. 6 Mix the arrowroot with
2tbsp water. Add to the rhubarb mixture. Stir, then cook over a low heat until it thickens. Leave to cool. 7 Remove the cheesecake from the tin. Spoon on the topping. Chill for at least an hour before serving.

SERVES 16 READY IN 2HRS 20MINS PLUS COOLING PRICE PER SERVING 20p 500g sweet potatoes 225g self-raising flour 2 1/2 level tsp ground ginger 1 /2 level tsp ground cinnamon 75g crystallised ginger 150g Flora Original 150g light soft brown sugar 3 large eggs 125g icing sugar 1tbsp lemon juice 1 ball stem ginger in syrup, drained and chopped, plus 1tbsp syrup from the jar 1 Preheat the oven to 200C/180C Fan/Gas 6. Line a loaf tin with baking paper. Wash the sweet potatoes and prick each one a few times with a fork. Bake in the oven for 1hr, until soft and gooey – pierce with a knife to test.
Cut open and remove 225g fesh (you could use the leftovers to thicken stews). In a bowl, mash to a puree with a fork. Leave to cool. 2 Reduce the oven to 180C/ 160C Fan/Gas 4. Sift the four, ground ginger and cinnamon into a bowl. Cut the crystallised ginger into raisin-size pieces, then
stir into the four mixture. 3 Beat the Flora and sugar until light and creamy. Beat in the eggs, one at a time, adding a spoonful of the four with the last two. 4 Fold in the rest of the four, plus the sweet potato. Put in the tin, level the top and bake for 1hr, or until a skewer inserted in the
middle comes out clean. Put on a wire rack to cool. 5 Mix the icing sugar with the lemon juice, ginger syrup and 1tbsp water. Drizzle over the cake and scatter on the stem ginger. Each 93g serving contains: ENERGY

Pat the skin with kitchen roll, to remove any traces of marinade. Put in a cold, nonstick frying pan, skinside down, then turn on the heat to medium. Cook for 5mins, until lots of fat runs out and the skin is golden and starting to crisp. Drain of the fat and reserve – it’s great for roasting vegetables. Turn the duck over and cook for 1min. 4 Transfer the duck to a roasting tin, skin-side up. Cook in the oven for 10mins if you like your
meat slightly pink, or 12mins for well done. Put on a warm plate and cover with foil. Rest for 10mins. 5 Meanwhile, strain the marinade into a pan, heat until boiling, then simmer for 5mins. Mix the cornfour with 3tbsp cold water and stir into the marinade. Simmer for another 2mins. Pour on the duck. Serve with the rice and veg. Each 257g serving contains: ENErGY

One of the simplest ways you can help your heart health is by changing the way you prepare food. Instead of using cooking methods requiring lots of extra oil, like frying, try steaming, roasting, baking and poaching, to reduce the amount of fats in your meals. Eating a well-balanced diet can also play an important part in reducing your risk of developing coronary heart disease, as well as helping to prevent weight gain, and reducing your risk of diabetes and high blood pressure*. In addition to getting your 5-a-day of fruit and vegetables, try to eat wholegrain varieties of starchy foods such as bread and rice. Cutting back on salt* is also a good idea, since eating too much can increase your risk of developing high blood pressure, which in turn can put you at greater risk of coronary heart disease. Herbs and spices C I NN A MO

You can use them as they are, or toast or crush them for even more favour The whole sticks are milder than the ground version, so they’re great for giving a subtle sweet, smoky favour to dishes. Try adding one stick to hot drinks, casseroles, when poaching fruit, or even rice (while boiling), for an extra infusion of favour. Remove before serving.

This aromatic herb adds a subtle fragrance to dishes. The dried leaves are best used in slow-cooked recipes such as casseroles or stews, to give the favour time to develop. They’re usually removed from dishes before serving, but are good for decorating plates. Thread on lamb or pork kebab skewers for added aroma and an attractive fnish.

BAY leaves
These star-shaped pods are the dried fruit of a tree native to China. The pods contain seeds with a strong aniseed favour that works well in Asian dishes – in fact, it’s a vital ingredient in Chinese 5 spice mixes. Use in both savoury dishes and desserts, such as rice pudding or stewed fruits.
Cardamom belongs to the ginger family, and has an enticing aroma with a warm, spicy-sweet favour. You can add whole pods to dishes, or the seeds can be ground and stirred in. Use in curries and soups, or in sweet treats such as biscuits, crumble toppings or even ice cream, for a tasty and exotic twist.
The perfect choice to give dishes a fery kick, these pungent seeds can be black, yellow or brown (mustard powder contains a mixture of all three). Add the whole seeds to stir-fries, or for a slightly nuttier, extra-intense taste, toast and use in curry pastes (see panel on the right).

Cloves
Cloves are the unopened fower buds of a tropical tree. Used in both sweet and savoury dishes, they have an intense sweet, spicy and slightly peppery taste, and a strong aroma, so use in moderation. Stud hams, fruit, and onions with whole cloves to add favour. Remove before serving.
FAVOURITE FLAVOURS
Derived from the fower of a crocus, this is said to be the world’s most expensive spice, but don’t be put of – you only need a few strands to add brilliant favour, aroma and golden colour to foods. The rich, musky favour works well in stocks, risottos and soups.
FENNEL SEEDS
More versatile than fresh fennel, the seeds taste similar to licorice and add a lovely crunch to dishes. Try them whole in breads and chutneys, too. To really bring out the favour, dry fry the seeds before using. They can also be toasted or ground, to add to curries.
CLEVER WAYS WITH SPICE Toasting Buying spices whole means you can toast and grind just as much as you need to use straight away, so you get a fresher favour. Heating the spices gives them an added depth of taste and texture.
Crushing Crushing or grinding whole spices releases fragrant aromas and favour. You can do it yourself using a George Home pestle and mortar, £5. Or put them in a plastic bag and crush with the end of a rolling pin. You could also use a clean cofee grinder. It’s great to crush your own spices for curries, as you can toast them frst. To make a curry paste, simply mix with chopped onion and tomato puree.

Eclairs
First it was cupcakes, then macarons – now eclairs are our new favourite bake. Update the classic choux pastry treat with our irresistible fllings and toppings
Classic chocolate eclairs SERVES 14 READY IN 1HR 15MINS PLUS COOLING PRICE PER SERVING 18p 75g Asda Strong White Bread Flour 50g unsalted butter, plus 50g for the topping 2 large eggs 200ml double cream 200g dark chocolate (50% cocoa solids), plus a little extra, finely grated, to decorate (optional) 1 Preheat the oven to 200C/180C Fan/Gas 6. Line 2 baking trays with baking paper and sift the four into a bowl. 2 Cut 50g butter into cubes and put in a pan with 150ml cold water and a pinch of salt. Heat until the butter melts, then bring to a boil. Remove from the heat immediately, then add all the four at once. Beat hard with a wooden spoon until the mixture forms a ball of dough that leaves the sides of the pan clean (see tip, top right). Let it cool for 15mins. 3 Lightly beat the eggs in a jug. With an electric hand mixer or wooden spoon, beat the eggs into the dough, a little at a time, until it forms a frm, glossy ball. 4 Put the mixture in a piping bag ftted with a 1cm plain
nozzle. Alternatively, put the mixture into a freezer bag and snip of one corner. Pipe 14 eclairs, each about 10cm long, on the lined trays. 5 Bake for 25mins until well risen and golden – don’t open the oven door while cooking, or they won’t puf up properly. Cut a small slit in the side of each eclair to let the steam escape (see tip). Return to the oven for 3-4mins. Cool on a rack. 6 Whip the cream until it just holds its shape. Put in a piping bag. Cut along one side of each eclair and open like a bread roll. Pipe in a thick layer of cream. 7 Break the chocolate into squares and put in a bowl with 1tbsp water. Stand over a pan of simmering water, making sure the bowl doesn’t touch the water. Melt the chocolate, stirring often. Spread on top of the eclairs. 8 Sprinkle with grated chocolate (if you want). of salt. Make a well in the centre and then break in the egg. Add about 70ml of the milk, then beat with a wooden spoon. Gradually draw in the four from the sides as you mix, adding the rest of the milk, a little at a time, to form a thick batter.

If you have time, cover it with clingflm and leave for 30mins – this allows the four grains to swell, which makes the pancakes lighter. 3 Grease a small, nonstick frying pan with oil. Wipe away any excess oil with kitchen roll. Heat the pan over a medium heat. 4 Stir the batter, then pour enough in the pan to thinly cover the base, swirling it around to coat evenly. Cook until the underside is

DECORATED TREAT BOXES For an extra-special gift, package your Cheese Palmier Hearts in a pretty favour box. Here are two simple designs to try… YOU NEED Pen, scissors Card (any colour) Wrapping paper and stickers (optional), to decorate Glue stick or Blu Tack Glu Dots Asda Favour Boxes (£2.25 for 8-pack) Gift ribbon
Cheese palmier hearts Preheat the oven to 200C/180C Fan/ Gas 6. Roll out a sheet of puf pastry to form a rectangle the thickness of a £1 coin. Trim to 17cm wide. Brush with beaten egg, then scatter with grated Cheddar. Roll the two longer edges in towards each other, to meet in the centre. Cut the pastry widthways into 1 /2 cm slices (ask a grown-up to help). Pinch the bottom of each slice to form a heart shape. Put on a lined baking tray. Bake in the oven for 10mins, or until pufed up and golden. Cool them on a rack then put in a gift box (see right). They’ll keep for up to 2 days.
SWEETHEART BOX 1 To decorate your box, fold a piece of card in half, and draw one side of a heart along the fold. Cut out*. Unfold to get a complete heart. 2 Using a diferentcoloured piece of card, or wrapping paper, repeat step 1 to make a slightly smaller heart. 3 Using a glue stick or Glu Dots, stick the smaller heart on the larger one, to make one heart with a border. Stick
on the side of the box. 4 Tie a bow in a short length of ribbon and stick on the heart. Fill the box with treats. Tie the handles together with more ribbon.
LOVEBIRDS BOX 1 Draw a bird outline on a piece of card, then cut out*. Turn it over and use as a template to make another bird facing the other way. 2 Place a heart sticker or cut-out card on a corner edge of the box. Stick on the birds so they’re each facing one side of the heart. 3 Fill with your treats, then tie with ribbon.

VALENTINEÕS DAY BUNTING
This heart bunting is pretty enough to decorate their bedroom all year round, not just on Valentine’s Day. Just make sure it’s out of reach of younger kids.
Turn the card over and glue the other piece of gift wrap to it in the same way, so that the card is ‘sandwiched’ inside the sheets of gift wrap. 3 Use the templates to draw heart shapes on the covered card, then cut them out. 4 Repeat until you have enough hearts to cover the bunting to the length you want, allowing for a gap of about 3cm between each heart. 5 Using the miniature clothes pegs, peg the hearts on the ribbon, starting and fnishing 15cm from the end. Use these ends to tie or pin the bunting in place on a wall or from the ceiling.
YOU NEED Sheets of card Pen, scissors, glue stick Roll of pink metallic gift wrap Long length of gift ribbon Miniature clothes pegs TO MAKE 1 Cut out a large heart template from the card*, following step 1 for the Loveheart Box instructions, on p67. Repeat to make a slightly smaller heart shape. 2 Get the gift wrap and cut out two rectangles slightly larger than the remaining sheets of card*. Apply the glue stick all over one side of the card, then carefully smooth one sheet of gift wrap on the sticky side.

Line a baking tray with baking paper. In separate bowls, melt equal amounts of milk chocolate and white chocolate, by standing them over pans of simmering water – make sure the bottoms of the bowls don’t touch the water. Once melted, drizzle both types of chocolate carefully over the lined baking tray, then drag the end of a cocktail stick or fork through the mixture to get a marbled efect. Helen Ravenhall, mum to Edward, 15, Oliver, 13, and Berenice, eight ‘My husband, Stuart, and I joke that we celebrated our 10th wedding anniversary “just the fve of us”, with a trip to the zoo and a meal with the kids, including our, then very new, third baby! I can’t say it was very romantic, but it was exactly what I wanted. ‘Kids may get in the way of romance, but ours have added far more to our lives. We’ve been together for 22 years, so we had a fair bit of pre-children time together. These days we manage a weekend away on our own once a year, but most of the time we’re busy being parents. And of course, now they’re teenagers, they’re up late into the evening, so we can’t exactly enjoy a candlelit meal at home with them sitting at the same table! ‘Yet even in those pre-kids days, I think we often did that sort of thing because we felt like we should. Now we realise we
can do what we want – and that means being a family. ‘Don’t get me wrong, I love fowers, but I’d rather my husband spend the money on a treat for the kids, or a family adventure, than a big, fashy bouquet. ‘Now our eldest two are teens, I’m aware they won’t be with us for ever. I want to grab every moment we have all together. After all, there’ll be lots of time for romance when it’s just the two of us again!’

Adding a baby to our lives has changed things, but I’d never say it feels less romantic. ‘When I was pregnant, I felt like I was falling in love with my husband, Mark, all over again – and while that may have been the hormones, it’s continued. We both adore our son,
Miles, but we’ve also worked very hard at fnding time for the two of us. ‘Obviously, when Miles was tiny, we weren’t able to carve out so much time for each other, but now that he’s a bit older, he’s happy to be babysat. I’ve realised that’s vital, to keep our relationship alive. We don’t have a set “date night” but we do plan to do things together, such as going for a meal nearby, or even an afternoon out if we can arrange it. ‘It’s not just about having time alone with my partner. As a mum knee-deep in nappies, I fnd someone making my life easier very romantic. The other day I was at the end of my tether, and my husband swept the baby up and said, “Go and have some you-time”. That’s just as romantic to me as being swept of my feet. ‘He also brings me fowers regularly, which reminds me that I’m not just “Mum”, however much I love being a mother. And on the 16th of each month, we share a bottle of sparkling wine to celebrate our son’s birth, on 16 January. ‘To me, that’s what romance is all about – taking time to make every day special, and looking out for your partner.’
