When my much, much, much, MUCH older sister was a hospice nurse many years ago, I asked her how she coped with that kind of work. She told me that making people’s last hours, or last months as comfortable and pain-free as possible; sharing their lives and helping them on their journey was a privilege. I remember thinking ‘wow, that’s a fantastic attitude’. And this month in YOU, we feature, again, some amazing people, on amazing journeys, with amazing attitudes. One is local hairdresser Hayley McLeod who has been battling breast cancer with a positive attitude and the other is former Ashburton girl Hollie Woodhouse, who is an adventurer who takes on massive challenges with a smile on her face. Endurance athlete and adventurer Hollie Woodhouse is living life to the max and encouraging others to do the same. From running through the Sahara Desert and the Amazon Jungle, to crossing the Greenland Ice Cap and helping save Kenya’s rhino population, she manages to pack almost every year with one unbelievable challenge after another. Known to her devoted following as The Adventurous Kiwi, the Mid Canterbury-raised athlete is now inspiring the next generation with her globe-trotting stories. Hollie caught up with YOU magazine’s Megan Gnad, to discuss the epic challenge LITTLE BLUE PENGUIN that altered her outlook on life, motivational speaking and exploring her own backyard. Whether it’s an ultra-marathon through the jungle, or a run in the hills around Canterbury, Hollie Woodhouse loves getting out into the great outdoors and challenging herself. PHOTOS BILL IRWIN

Hollie’s on top of the world

t was an Outward Bound course that changed everything for Hollie Woodhouse. Taken to a remote location at midnight during a solo camping experience, participants were required to write themselves a letter to read upon their return home. Hollie’s message was simple; complete one thing each year that would challenge her. At the time she had no idea what that sentence would lead to, but the course, sponsored by Advance Ashburton, has

since spurred a movement and become a tagline that’s encouraging thousands of like-minded adventurers to take the plunge and create their own unique adventures. “On Outward Bound, I realised I loved the outdoors and that was missing from my life at that time,” Hollie says. “It was enough for me to take the first step and the Coast to Coast became that first step.” A zest for the great outdoors stems right back to Hollie’s childhood, growing up in Carew, near Mayfield, on a sheep and beef farm.

It was an “everyday adventure life” exploring the sprawling land on ponies with her twin sister and brother who was just one year older. “There was always adventure buddies,” she remembers. “We never went overseas, holidays were jumping in the Toyota and going camping.” After completing a Bachelor of Design at Victoria University, Hollie ventured over to Sydney for three years, before returning to Ashburton. continued over page

From P5 A move to Christchurch followed, where she’s working as part of the creative team at the New Zealand Merino Company. Between work and everyday life, Hollie was already plotting the early stages of what would become the foundation of The Adventurous Kiwi. As she worked towards her first twoday Coast to Coast challenge in 2013, she started writing a blog outlining her training and experiences travelling to new parts of the world. Blogging was still in its infancy, so unprepared for the following it would generate, Hollie continued sharing her stories, which led to the launch of her own magazine, Say Yes To Adventure. The lifestyle adventure-based product, which is on pause for the time being, encouraged people to write in with their own exciting stories. fter completing her first Coast to Coast (which, by the way, was “so good, I couldn’t wipe the smile off my face”), Hollie spent the following year working

and travelling in the UK and Europe. From there, she travelled to visit her sister and brother-in-law, living in Kenya. Based on Borana, a high-end lodge and conservancy, they had just relocated 21 black rhinos, working with rangers who provide 24/7 protection from poachers. Her brother-in-law had founded a charity For Rangers, which provides rangers with training and everyday equipment. When Hollie arrived, they came up with the idea of competing in one “crazy event” each year to raise money for them. “At the rate they were going, our grandchildren were never going to see these rhinos in the wild,” Hollie says of her inspiration to support the For Rangers’ work. Six months later, taking with her 10kg of donated New Zealand Sock Company socks from Ashburton, for the rangers, she travelled to Kenya on her way to Morocco, to take part in the infamous Marathon des Sables as part of its 30th anniversary. The six-day ultra-marathon – including one rest day – takes participants across the Sahara Desert on an epic 254km race.

Battling through blistering temperatures, and billowing sand, all while carrying all your own food and gear, the event works out to be a marathon a day. Completing the epic race with 1500 others, she’d caught the ultra-marathon bug, all while helping raise $US100,000 to benefit For Rangers. To date, more than $1 million has been raised – every cent of which goes to supporting the rangers on the frontline protecting Africa’s wildlife. arly on, Hollie learned it’s important to have a goal to work towards following a major adrenaline-filled adventure. Coming home and doing nothing, after participating in something so significant, was not an option. Throughout 2015, she took on the Mt Difficulty Ascent, a 25km mountain run (completed in a time of 3hr 42min), and then the Heights of Winter Rogaine, a 12-hour cross-country navigation event held at Blythe Downs in Greta Valley, North Canterbury. Of course, for Hollie, these challenges

were training for what she really had her sights set on – the Amazon jungle. Hidden deep in the rainforest lies the Manu National Park, where the Jungle Ultra takes place, run over 230km, offering a glimpse into the Unesco world heritage site. Starting from Cusco (3400m), the fully self-supported event winds through mountain roads and village tracks, down 10,500ft to the jungle below. Raising funds again for For Rangers, Hollie signed up to compete with nine friends in June 2016, and loved every minute. Except for the creepy crawlies. “If you put your hands down, there were bugs everywhere,” she recalls. “We were chased by a pack of hornet bees, they’re ruthless … “But, it’s beautiful. It’s like the West Coast on steroids, all the plants and butterflies, and snakes and spiders … It’s awesome.” Spaces are limited, so only 50 ventured into the jungle, carrying their own 10kg packs that contained hammocks to sleep in

at the end of the day. “I’m lucky I can sleep anywhere, but I got a stomach bug, so the first few days were a bit slow. I was the only one who was better at the end than at the beginning.” By now, followers of Hollie’s social media were gripped, hanging off her every insta-perfect photo and message. When she returned home, she was approached by Kathmandu, which had just taken over the Coast to Coast naming rights. Becoming a brand ambassador, she committed to once again completing the one-day gut-busting event in 2017 (finishing in 15 hours, 24 minutes). During this time, she also featured in a documentary, commissioned by Kathmandu, and produced by Resonate Productions, which followed Hollie and Robyn Dewson’s journey on the Kathmandu Coast to Coast. The inspirational film, titled Waters of the Greenstone, subsequently premiered at the Mountain Film Festival. “I’ve always had lots of people following my journey, inspiring everyday people to give it a go. A lot of people have grown up

knowing about Coast, and think, I’m going to give this a crack. It is a pretty big commitment financially, as well as time.” y now, Hollie was a regular at events on the adventure sports calendar, signing up for the Challenge Wanaka Half-Ironman in a team and the ‘urban’ Spring Challenge, based in Manukau. But, the most epic adventure was still to come. The adventure that would change everything. It would alter her entire outlook and view of the world. Last year, Hollie was chosen to cross the Greenland Icecap (a 560km trek) thanks to New Zealand-based charity, The Antarctic Heritage Trust, as part of their third Inspiring Explorers’ expedition. Guided groups set off from Kangerlussuaq, and started walking west to east – nine hours a day for 29 days, while pulling a 60kg sledge. On her blog, Hollie describes the moment they were dropped off and the bus vanished into the distance: “A wave of nerves washed over me. continued over page

From P7 “Entirely new to Nordic skiing, I spent a good couple of minutes trying to attach my boots to my skis, noting that everyone else appeared to have managed with ease. This was it. Was I ready? The answer in my mind was ‘No...’. But, there’s nothing quite like a challenge, and I could sense that whatever lay ahead would be the exact definition of that.” t most certainly proved to be a challenge. Some days they walked for 15 hours, pitched a tent, stopped for dinner and slept, before starting all over again. “If winds were over 30m/h, it was too dangerous to keep walking, so we had a few down days, which was bittersweet, because you knew you had to keep going. The sun went down at 11pm and up at 1am, but it was never dark, always dusk. It was so easy to lose track of time, but our guide had a satellite phone, and we’d get weather reports and communication.” Plagued by storms and sickness, the mission was tough, and made more frantic near the end when the group ran out of food, missed their connecting return boat, and had to be helicoptered (which was picking them up regardless of location) back with only two hours to spare. “It’s all about those top two inches,” Hollie says. “I couldn’t give up. I looked back through my diary, and only by day 16 did I start to be outwardly

ventures I’ve done. I’m aware not everyone is into adventure, but I hope there’s one or two within the room that I inspire enough for them to say I want to do something like that. It’s just opening possibilities.” n February this year, Hollie completed her third Coast to Coast, this time a tandem effort with friend, British adventurer, Anna McNuff (a legend in her own right, who, as the ambassador for UK Girl Guiding, is currently running 2620m/4216.5km throughout Britain, barefoot). Hollie says she doesn’t have any major events on the horizon at the moment, but is looking forward to attending the new For Rangers’ ultra this year as part of the support team. The event takes place through different Kenyan conservancies over five days, raising funds for the charity. “I said this year was about exploring what’s on my doorstep. I’ve done a lot more around Banks Peninsula and Tekapo, and just enjoying coming home and having a warm bed, and a wine! “I guess I’m turning the big daddies into a few micro-adventures. It’s a direct counter balance to Greenland, which was so big and so extreme, to then find comfort in a run in the hills, which I love. “I don’t go out looking for adventures, I just make sure I’m doing the right things so when an opportunity comes along, I’m in the right place to take it. I’m always saying yes, sometimes to my detriment. “I’m good at planning, and organising, and sometimes it gets to Thursday and I think, ‘why? I just feel like watching Netflix all weekend!’ But it gets to the end of the weekend, and I always think, ‘that was so cool, I’m so glad I went and did that’.”

The most enjoyable part for me was the final week, when what I was doing had become the new normal, and, even though we were doing massive days and it was full-on, my body had adjusted, but it took a long time.” For Hollie, Greenland was the turning point that altered her perspective on life. “I was at my absolute limit; it was by far the toughest challenge. I always plan another challenge when I finish because I’m thinking what’s next, but Greenland completely changed me and changed my appreciation for what I have; my family, my boyfriend and the fact we live in a really cool part of the world where we’re so fortunate. It puts life into perspective. “Greenland was different, I think I came back and I was so grateful for what I have.

I never once felt my life was in danger, but looking back you think, ‘gee, that’s quite a big thing’.” efore Greenland, Hollie had done a little bit of motivational speaking, but quickly realised she now had a very good, inspirational story to tell. “Greenland dished up every scenario imaginable that I can talk about. It was the turning point. Yes, my other adventures are great, but I actually felt like I had quite a good story to share, because I was pushed so much. “If things had gone smoothly, I wouldn’t have had quite the same emotion. I still talk about finishing and it’s still just right there, emotionally. It was utter relief we’d done it, relief we didn’t have to go back, we’d successfully achieved our goal, we’d run out of food, the helicopter had come, we were getting out of there no matter what. Even right down to the last six hours, we didn’t think we were going to finish because there was coastal fog around.” Hollie is now taking this incredible story further afield, speaking at events and schools to inspire others to overcome obstacles of all kinds. “When I tell the story to people, I like to think they see an ordinary person, someone they can relate to and see the ad-

t’s not how much you’re exercising, but how you are exercising. Do you do 10,000 steps per day? Do you have a physical job? Well I’m sorry to be the one to tell you, but that doesn’t mean that you are meeting the physical activity guidelines or that you are fit and healthy … Firstly, let’s explain why hitting the fabled 10,000 steps on a step-counter isn’t a magic bullet and why not all steps are equal. If a lot of the activity or steps that you do are low intensity during your day-today activity or work, without challenging your cardiovascular system, you shouldn’t be including them as exercise. It is good movement, but it isn’t having good health benefits. The physical activity guidelines for adults as a minimum aim is 150 minutes per week of moderate intensity physical activity where you have in increase in breathing and heart rate, but can still have a conversation, or half that amount of time of vigorous activity. On top of that you should also do two sessions of strengthening activities per week. Keep in mind that this is the base goal

and the ministry of health recommends that for when possible, you can aim for double that number of minutes for added health benefits! The important thing to take from the physical activity guidelines is that the exercise needs to be moderate activity and challenge your cardiovascular system to give you health benefits and this is different for everyone. Secondly, have you ever thought “but I work a physical job, I don’t need to do extra exercise”. That’s not the case sorry! That’s the activity paradox where those with a high level of physical activity at work had a significantly higher level of mortality than those with low levels (Coenen et al., 2018). This is because you are regularly, day in, day out challenging your bodies, without adequate recovery time – a bit like if you played rugby five to six days a week! Without adequate recovery, you get a build up of inflammatory markers in your blood stream and are actually at more risk of pain, disease and injury.

So, if that isn’t enough to convince you to aim for the recommended activity levels, here are 10 great reasons: 1. You’ll be in better overall health. 2. You’ll have more energy. 3. You’ll have better posture and balance. 4. You’ll have stronger muscles and bones. 5. It’s fun. 6. It raises your self-esteem. 7. It helps you manage your weight. 8. It improves your fitness. 9. It can improve your sleep. 10. You’ll feel more relaxed and less stressed! Do it for yourself, do it for your health and do it properly – counting steps is ok, but isn’t the be-all and end-all and having a physical job does not count. Positively fighting cancer

Having a positive attitude is helping Hayley McLeod fight breast cancer. Susan Sandys reports.

As Hayley McLeod sat in the Canterbury Breastcare waiting room after a series of scans and tests, she hoped her results would not come back positive for cancer. The Ashburton mum of three thought it would probably be okay. It had, after all, been only a very small lump that she had noticed four months earlier. It had not grown or become painful, and even her doctor and the Breastcare surgeon had not thought it would be anything. But then the surgeon herself came out into the waiting room, and put her hand on Hayley’s shoulder, letting her know it was time to come and hear her diagnosis. It was the surgeon’s compassionate approach that made Hayley think the worst. “I knew she had bad news,” Hayley said. The surgeon informed her, and husband Hamish, of the “good news” first, and that was that her lymph nodes were clear, but then gave the diagnosis which has since propelled Hayley’s life into a roller coaster ride of surgery, chemotherapy and recov-

ery. It was cancer. It all began in November last year when Hayley first noticed a painless, moveable lump, the size of a pin head, in her left breast. She had it checked by her GP, who advised her to keep an eye on it, and if it grew or became painful, to come back in six weeks. As for any family with young children, the Christmas period was busy and did not seem to offer any opportunities to get to the doctor. The lump had not changed in the way the doctor said might cause concern, and Hayley felt as fit as ever, so soon forgot about it. However, a friend kept reminding her that she should go back and get it checked again. “I’m really grateful that she did that, otherwise I might not have gone back.” This time her GP referred her straight to Canterbury Breastcare, and over the next week she had a mammogram, ultrasounds, a biopsy and fine needle aspiration of nearby lymph nodes. She was also checked by the surgeon, who found a bigger lump near the initial small one.

All the tests were done within a week of that second visit to her GP, the quick response assisted by her private health insurance. And it was just one week later that she had surgery to have the two lumps removed. Doctors learned that the smaller lump, just two millimetres in diameter, was stage two cancer, while the larger one, 13 millimetres in diameter, was stage three. They thus decided a full mastectomy of the affected breast would be the best

course of action and 10 days later Hayley was in surgery again, this time to have her whole breast removed. It was a busy time for the family, with five-year-old Maggie having her first school visit, and seven-year-old Charlotte having a birthday, but the surgery went well, and all has been on track since with Hayley’s recovery going according to plan. The first four rounds of AC chemotherapy were gruelling, causing nausea and vomiting.

She is now onto the less-harsh paclitaxel chemo, having had her first round of 12 earlier in August. With no known cancer remaining in her body after the surgery, Hayley feels like she “had” cancer, rather than has it now, and is generally positive about her experience. The 31-year-old is grateful for an extensive network of friends and family, as well as her supportive husband, and last but not least, Cancer Society Ashburton. continued over page

And she is grateful her journey with cancer has made other people more aware of the importance of getting any lumps and bumps checked out by their GP. “I’ve had two friends who have gone and had lumps checked,” she said. There had probably been just one down moment, when three-year-old son Fergus inadvertently said goodbye instead of goodnight to her one night, making Hayley think how terrible it would be to really have to say goodbye. Hayley is a hairdresser by trade and has always had long hair. As a side-effect of the chemo her hair has fallen out, but she knows that once the treatment is over, it will all grow back again. “To be fair I think the whole thing has been harder on my husband, because he’s sitting there watching, and thinking we have three young children, how can this be happening? But I have never once thought ‘Oh my god this is going to get me’,” she said. “I think if you have a positive attitude towards it, and the people around you are positive, it can make a big difference.”

Daffodil Day is one of the most important fundraising and awareness campaigns in the country. As well as providing an opportunity to raise awareness of cancer in New Zealand, Daffodil Day is a major funding source for the Cancer Society. The daffodil is one of the first flowers of spring, whose bright yellow blooms remind us of the joys the new season will bring. It represents the hope there is for the one in three New Zealanders affected by cancer. The donations received go towards vital scientific research into the causes and treatment of all types of cancer, as well as providing a wide range of support services, information, health promotion and education programmes to reduce cancer risk, awareness campaigns and programmes for people affected by cancer. You may provide support for a short time or over months or years.

What is cancer? Cancer is a disease of the body’s cells. Our bodies are made up of millions of cells which normally grow, divide and are renewed in a controlled way, and we remain healthy. However sometimes this control is lost (due to an abnormality in the cells, such as a genetic mutation) and the cells duplicate themselves instead of renewing. A solid group of these cells is called a tumour or growth. Tumours can be either benign (noncancerous) or malignant (cancerous). Benign tumour cells stay in one place in the body and are not usually dangerous. Malignant tumour cells may travel through the lymphatic system (the body’s drainage system) to lymph nodes or through blood to other parts of the body. This spread of a cancer from one organ to another organ or part of the body not directly connected with it is called metastatis or metastatic cancer. Cancer actually refers to about 100 different diseases as cancerous cells can

arise from almost any type of tissue cell. Cancer is not contagious and cannot spread from person to person, however factors can lead to an increased risk of developing cancer such as smoking, sedentary lifestyle, obesity, alcohol consumption, or some environmental or genetic risk factors. Cancer, unlike many other diseases, can develop at any stage in life and in any body organ. Each person’s cancer has a different cause, diagnosis method, prognosis, treatment and care need. New Zealand has an increasing number of people diagnosed with cancer mainly because of population growth and people living longer. Most cancers occur in older people, but because of screening programmes, improved detection and treatments fewer people now die of cancer in New Zealand.

Healthy snacks on the run

t is often a struggle to find the right healthy snack for your lunchbox or to eat at home that will give you plenty of energy and nourishment. It can be difficult, so here’s some ideas for healthy snacks that are easy to prepare and portable: Fruit: Apples and mandarins are high in fibre and water, making them a filling and nourishing option when you are very hungry and thirsty at the same time. They are packed with vitamin C. Bananas are a great fruit for energy and packed with magnesium and potassium (great after exercise). Grapes are also high in fibre, B vitamins and potassium to help combat stress. Nuts and dried fruit: A great snack is a mixture of dried nuts of your liking and dried fruit, such as cranberries, added together in a container as a portable option for when you need a snack on the run. Foods such as these are full of fibre which can help as a snack option between meals. They are loaded with essential nutrients the body requires for optimum functioning. Homemade energy balls: Energy balls can be made from a variety of ingredients, some are made using oats as a base with dried fruit, nut butter and coconut, while some are made with dates as the base and various dried fruits. All the ingredients are beneficial as they are high in vitamins, minerals, fibre and protein. A great snack option that is sustaining and fulfilling. Hummus

Hummus is a great option, it is filling and loaded with nutrition. It is recommended that we eat foods of the pea variety, but other than green peas it is often difficult to get them into our diets. Hummus is a quick and easy dish that allows for plenty of fibre and protein. Made with ingredients such as chickpeas, olive oil, lemon juice and garlic. Adding in carrots as the dipping option another great source of fibre, vitamins A and minerals. Hard-boiled eggs: Hard-boiled eggs are quick and easy to prepare. They can be sandwiched between two pieces of bread to make a quick lunch, or they’re just great on their own as a quick protein snack. Eggs contain a wide variety of nutrients that we require, such as protein, iron, calcium, vitamin D, A, B12, and B6. Popcorn: Popcorn is actually a healthy snack food as long as it is prepared in the right way. Using olive oil and a small amount of rock salt can be a healthy way to have a high-fibre snack with the benefit of getting the nutrition from the oil and vitamins and minerals that popcorn contain. It is also considered to contain antioxidants that are helpful in the protection of various chronic health conditions. Edamame beans: These can be found in the frozen section of the supermarket and can be boiled or steamed. It is a food that is often eaten at Japanese restaurants. A healthy

and filling side dish or snack option full of fibre and essential nutrition and high in protein, great either hot at home or served cold in your lunchbox. Baked vege chips: Baked vegetable chips can be a nutrient-dense snack and homemade is the better option than store bought, avoiding the additives and oils such as canola. Making your own is quick and easy and a great way to get those much-needed vegetables in your diet such as sweet potatoes, carrots, zucchini and beetroot, baked in the oven brushed with olive oil. Homemade baked or raw muesli slice: A quick, easy slice to make at home, with not many ingredients required! Most are packed with essen-

tial vitamins, minerals, protein and fibre. With this type of slice the ingredients can be mixed together and baked or left raw. Either way they are super delicious. Ingredients used are oats, seeds and dried fruits. These slices are considered rich in carbohydrates that fuel the body with plenty of energy and are also considered beneficial to bowel and cholesterol health. The recipe I’ve provided this month is a quick and easy option to help make seeds and nuts more palatable. A nutricious snack to have on hand in your bag or ready to place in your lunchbox for an extra food source. Homemade protein bars: These are an alternative option to the oat muesli slice that only includes seeds, nuts, dried

Healthy slice with cranberries and apricots

This is a healthy slice that is packed with nutrition, a great way to get a good serving of seeds into your diet, along with the dried fruit. This slice makes for a great snack for lunches and in between meals, eating on the run and a post-sport treat.

– In a bowl place the rolled oats, coconut, pumpkin seeds, sunflower seeds, and flaxseeds. – Place the chopped apricots and cranberries into the bowl of dried ingredients. – Melt butter and stir into dry ingredients. Then melt the honey slightly and also place into the dry ingredients. Stir until well mixed. – Place the mixture into a slice tray, then press firmly and evenly into corners. – Let set for 4-8 hours. Overnight is the best option. – Slice into small slices as this is quite a sweet slice. – Store in a sealed container in the fridge.

health night The Ashburton Freemasons have announced that they have organised a Men’s Health Night to be held at the Ashburton Lodge rooms, 111 Havelock Street, at 7pm on Thursday, 29 August. The thrust of the evening is to draw attention to some of the most serious health threats to men, how to recognise if you have an emerging problem in these areas, and what to do about it. The Freemasons have organised some high quality speakers to talk about issues such as prostate cancer, bowel or colorectal cancer, and heart

disease. They include a urologist, a colorectal surgeon and a cardiologist. Also in attendance will be local GPs to deal with other health areas such as diabetes that may be raised during the evening. Questions on any of these topics will be welcomed. There will be a gold coin door charge on the evening, and proceeds will be later donated to one of the Ashburton health support groups. A light supper will be provided by the Freemasons. Warm you up FROM JAPAN with Miya Komatsu

It’s still very cold out there, so here is something yummy to warm your tummy. I would like to share two family-recipe soups and a Japanese-style curry made from scratch. You can find a box of Japanese curry sauce (roux) in the Asian food corner in a local supermarket. But it’s not hard to make, so please, enjoy this recipe and give the curry sauce a go. Miya Komatsu is a Japanese-trained chef and nutritionist who has made Ashburton her home. She has been living here for 14 years Recipes over page

Chicken soup with dumplings Two servings

Dumplings 1/2 C flour Pinch of salt 1/4 C water

Soup 200g chicken breast, cut into bitesized pieces 1/2 carrot, cut lengthwise and sliced 150g pumpkin, cut into bite-sized pieces 1/4 leek, sliced 2 leaves cabbage, cut into bite-sized pieces 2C water 2t powdered chicken stock 1T sake 1t soy sauce

– Making dumplings. Put flour, salt and water into small mixing bowl. Mix and knead well with fingers. Put aside and rest 30 minutes. – In soup pot, boil water, chicken stock, sake and soy sauce together. – Add chicken into the soup and cook 5 minutes then add all the vegetables. Cook until chicken and vegetables are cooked. – Roll teaspoonfuls of dumpling dough into balls and press centre. – Then drop into the boiling soup, cook around 10 minutes or until dumplings are fully cooked. Handy hint – Use 1/2 C rice flour and 2T cornflour for gluten-free dumplings.

Tonjiru Pork miso soup Two servings

1T sesame oil 100g pork belly, thinly sliced 100g red kumara, cut into bitesized pieces 100g swede, peeled and cut into bite-sized pieces 1/4 carrot, cut lengthwise and sliced 2C dashi stock, or 2C water with 2t dashi powder 2T miso 2 spring onions, chopped

– Put soup pot on medium heat with sesame oil. Add the pork and cook until nicely browned. – Add all vegetables and saute five minutes. – Pour the dashi stock into the pot and bring the soup to boil. – Simmer until the vegetables are soft, about 15-20 minutes. – Add miso into the soup using a strainer so miso is completely dissolved. – Serve topped with spring onions.

Japanese-style curry Four servings

300g chicken, or any kind of meat, cut into bite-sized pieces 1/2 onion, cut into bite-sized pieces 1 medium sized potato, cut into bite-sized pieces 1 carrot, cut into bite-sized pieces Steamed rice, as much as you want Curry sauce 1/2 onion, thinly sliced 1 clove garlic, minced An inch cube ginger, minced 2T butter 4T flour 3T curry powder 4C water 3t chicken stock powder 2T tomato sauce

1T worcestershire sauce 1T of chutney or sugar

– Curry sauce: Put soup pot on medium heat with 2T oil. Add onion, garlic and ginger then saute about 10 minutes until caramelised. – Turn heat down to low, add the butter and flour, then stir well. – Add curry powder and cook until fragrant. – Pour in 1C water and mix until curry paste dissolved. – Add the rest of the water and all other sauce ingredients. – Heat until the sauce boils, then simmer for about 30 minutes, stirring constantly.

– In a frypan, heat 1T oil over medium heat. Add the chicken and cook until nicely coloured. – Add all vegetables, with salt and pepper for taste, and stir-fry until the chicken and vegetables are almost cooked through. Set aside. – When the curry sauce is thickened and shiny, add cooked chicken and vegetables into the sauce pot. Simmer another 20-30 minutes until everything is fully cooked. – Serve with steamed rice. Handy hint – If you are serving for young children, try adding a grated apple. It’s a common technique in Japan.

O

oooh hello spring! Actually you can forgive me for thinking spring has come early, as all month blossoms have been blooming, baby animals are being born and, although we’re still in August, I’m calling it. It’s spring. This declaration is cemented by a gorgeous fluffy wee arrival too. One ‘spring’ evening in winter, I had just finished work and finally slid down the shingle drive well after dark. I’m a creature of habit and usually walk into the house, drop a dozen or so bags with everything from heels, hair products and makeup, to greens and groceries, then check emails, flick the jug on, and mooch around looking for mail and searching for my big fluffy slippers (I have not transitioned to Ugg boots yet). All this happens as I chat to the farmer, slowly heading to the lounge, where I expect to find him resting his weary bones! Tonight though, even though the warmer weather feels like it’s here, we still had the fireplace cranking and right smack bang in front of it, in the place I usually sit ... was a big ball of fluff ... a baby lamb! Turns out its mother didn’t like it that much (brutal huh?), so here I was once more with a newborn baby in the nest. As naming them is top of my list, I quickly asked the farmer if it was pink or blue? But he suggested I check for myself, and sure enough we had a gorgeous wee boy! There he was, snuggled into one of the children’s favourite blankets and plonked in an old washing basket. Now there is a reason it was an old washing basket and one I never use anymore – the bottom has a huge crack and gaping hole in it, which in itself is fine, but not so flash when the newborn starts peeing everywhere, creating a big puddle in the very spot I usually sit. Sigh.

I’ve lost my spot, we’re back to bottle feeding and, on top of all this, I really do need to wait for the even warmer weather so I can shampoo my carpets before life at the farm will get back to normal again! PS: The children named the lamb

It is that time of year when you ponder what to plan for your office Christmas party. What will everyone enjoy doing? How do we better last year’s event? What is a good way to reward staff? 1. Family fun day

In this age of working longer hours, flexible working arrangements and technology making work accessible 24/7, the contribution of families is vital in the success of a business. Family fun days can be a great way to acknowledge and involve both staff and families in a fun, relaxed and social environment with something for all ages to enjoy. When organising family fun days, some things to consider are catering for all ages, providing entertainment for both kids and adults, what infrastructure needs to be brought in, applying for council permits for outdoor venues, and conducting a risk assessment.

Budget can also be a concern when you start to forecast total numbers to include families.

2. Christmas team challenge

If your team enjoys problem solving or adventure type activities, a fun day-time team building event followed by a barbecue and drinks may be ideal for you. Some team building programmes like Mission Impossible and City Scramble provide the opportunity to explore your region, and others like Survivor and Beach Olympics are perfect to enjoy a beautiful location. Christmas-themed team building programmes such as Hunt For Santa’s Sleigh, Christmas Cluedo and Christmas Dinner are fun with various bonding exercises. Most of these Christmas team challenges are great for day and outdoor Christmas activities.

3. Charity team building

To enjoy the spirit of giving this Christmas, a great option for your staff Christmas event may be a charity-focused team building programme. An unforgettable destination DESTINATION with Maxine

I have just returned from an amazing trip to Egypt. Egypt has long attracted visitors to marvel at some of the only remaining wonders of the ancient world – the Great Pyramids of Giza and the Nile River providing a wonderful way to experience this unforgettable destination. I travelled with Innovative Travel who have over 28 years experience sending travellers to this destination. On arrival I was met inside Immigration and Customs and fast tracked through the arrival system and customs by my personal English speaking guide and then accompanied to my hotel feeling very safe and secure. The hotel in Giza was just outstanding, as I stood on the balcony of my hotel room at the Marriot Mena House and there were the Pyramids – incredible and just what I had dreamed of. A visit to the Pyramids and Sphinx the next morning accompanied by our private guide was the first highlight of many for me. We were also privileged to be able to visit the yet to open to the public Grand Egyptian Museum – here we viewed in the labs artifacts currently having worked done to be displayed in the museum due

to open in mid 2020 – a special visit experienced by just a few. The following day we flew to Luxor where we transferred to our floating hotel, the St George, to cruise the Nile for the next four nights. The life-giving Nile River provides a wonderful way to experience this unforgettable destination. The next few days included exploring and learning all about the many monuments and temples along the way. These included the Luxor Temple, Valley of the Kings and Valley of the Queens, Temple of Horus and the resited Temple of Philae and the Granite Quarries. The St George Nile cruise boat was fabulous and included all meals, evening entertainment and, sightseeing each day with transfers. Service was outstanding. My next highlight was definitely Abu

Simbel. Moved from the original site when Lake Nasser Dam was built in the 1960s, a great engineering feat to save them from a watery grave. This impressive archaeological site is the best preserved of all the Egyptian temples. On returning to Cairo for our last night back at Marriot Mena House we visited the 14th century Khan El Khalidi Bazaar (known today as the Grand Bazaar). Wow, you can purchase everything here and it is a great stop for those last-minute souvenirs and gifts. Did I feel safe? Yes definitely especially with the English speaking guides accompanying us along the way. The friendliness of the Egyptian people is the overriding memory I have, along with the incredible sights I experienced. Advertising feature

Spring is coming ...

ugust is possibly one of the most difficult months in the home garden - the weather is still very cold with blustery winds and soils are very wet. An ideal time for completing plantings of deciduous ornamental and fruit trees, and on a positive note, plan your new season’s vegetable garden.

Fruit trees

Vegetable garden

Continue harvesting winter maturing vegetables and where soil conditions allow i.e. not too wet and the tilth (texture of the soil) is friable (easily crumbled), you can sow seeds of beetroot, carrots, onion, peas, radish and spinach. Start cultivating soil in preparation for early spring plantings by ‘chopping up’ and digging in green manure crops you sowed in early autumn e.g. lupins, to improve the organic matter. Raise the level of new vegetable gardens 100-120mm above the existing ground level as drainage will be improved and soil temperatures will rise quicker in early spring.

Flowering annuals

Winter flowering annuals should still be blooming beautifully, especially cinerarias that are at their best in late winter/early spring. Where new plantings are required, plant ‘potted’ colour. Try alyssum, calendulas, cornflowers, larkspur, lobelia, pansies, snapdragons, stock and wallflowers.

Lawns

In most parts of New Zealand, there is little significant grass growth in August, however, it is just around the corner! Use this time to deal with problem areas in the lawn where it is not too wet. Installing drainage coil in wet parts of a lawn can make a significant difference for next winter.

Ornamental trees and shrubs

It’s cropping time for many citrus, mandarins, lemons, limes, navel oranges and grapefruit. Seminole tangelos that appear ripe on trees are not sweet enough to eat until October/ November. Pip and stone fruit trees benefit from a final copper oxychloride spray so they are in a healthy state for the new growing season. Remove all prunings and old leaves from the home orchard. Feijoas can now be pruned as they often flower early in spring, and thin out thick tangelo growth to allow light to penetrate through the plant, increasing fruit production.

Site preparation is critical before planting. Do not plant in areas that are extremely wet unless you are planting specimens that specifically grow in wet soils e.g. swamp cypress, kahikatea. Add compost to all planting sites and cultivate thoroughly prior to planting. Allow sufficient space between new trees and shrubs for their full development.

Container gardens

Have already commenced actual growth, remove all old and diseased leaves. In warmer areas, flowers will appear very early. Ideally, remove all flowers at least for another month as they will not form edible, healthy strawberries until well into spring.

Roses

While the plants are dormant apply a copper oxychloride and/or horticultural oil spray to ‘clean up’ any overwatering pests or diseases. Be meticulous in removing all old leaves and prunings which should be burned or disposed of off the property. Add compost around existing plants to greatly benefit spring growth next month. Apply Daltons Premium Rose Fertiliser around late September/early October.

With careful planting and planning, containers should continue to provide colour and interest throughout August. Replant where necessary with potted colour. Before planting new flowering annuals in spring, empty the containers, thoroughly check that drainage holes are adequate, clean carefully and fill with new container mix.

Joy Jaine is this month’s winner with the following question: One of my zygocatus (indoor plant) is badly infected with mealybug. I have tried various products but still it is beating me. What can I do please? Mealybug can be an irritating problem for many house plants and one that can be quite difficult to remove completely. First, check your other house plants to ensure that mealybug has not spread. Then take your zygocatus outside and gently spray with the garden hose set on a fine mist with reasonable pressure. This will wash the most obvious mealybugs off the plant and also remove very small mealybugs that are often hard to remove by other methods. You may need to repeat this process a number of times, being careful to also spray the underside of the leaves. Mealybug can also attack the roots of a plant so it may be necessary to inspect the plant roots. If they are infected, it is important to remove all the existing potting mix, thoroughly spray the roots with high-pressure water and then re-pot with fresh potting mix. If the problem is still not resolved, you could spray with a good quality horticultural oil. Just be careful with your zygocatus plant as it can be susceptible to damage from spraying.
