nother year bites the dust and already we are looking ahead to 2018. 2017 has been a busy year for all the staff here at the Guardian, the launch of the Ashburton App has been an exciting time for everyone, learning about a new news platform and balancing it alongside our print and digital platforms. We’ve learned new things and proudly pulled together lots of different parts of the community to pack the app full of great features and information that suit all ages. Being at the heart of the community continues to be a key focus for everyone at the Guardian. Shop Local returned for its second year and we were able to make one lucky person $2500 richer just before Christmas. Elderly wishes also returned for its second year and we all have rolled our sleeves up and baked, cleaned and done a fair bit of gardening. Not forgetting the collection for the Salvation Army, ably assisted by two wonderful local little helpers. So, from everyone at the Guardian, we wish you all a Merry Christmas and Happy New Year and hope you have a wonderful time with family and friends.

2C frozen peas 120g baby spinach leaves, washed 125g feta cheese 1/4 C mint leaves, finely shredded To serve: Extra virgin olive oil Lemon juice Cracked pepper
– Cook the peas in a pot of boiling water for 4 minutes. Drain then plunge immediately into a large bowl of icy water. Once cooled, drain again. – Arrange spinach leaves on a large platter, scatter peas over the top, then crumble feta over the peas. – Sprinkle with shredded mint and dress to taste with olive oil, lemon juice and freshly cracked black pepper.
– Place the chicken into a large baking dish. In a small bowl, combine the garlic, orange zest, lemon zest, honey,

herbs, salt, pepper and 1/2 C cranberries. Pour over the chicken and leave to marinate for at least two hours. Preheat oven to 180°C. Cover chicken with aluminium foil and bake for 20 minutes, then remove the foil for a further 50 minutes. While the chicken is cooking, combine the yoghurt, honey, orange juice and lemon juice and keep aside. Heat the butter in a frying pan. Add the onion, bacon and celery and cook for 5 minutes until softened. Add the fresh herbs and chopped nuts. When the chicken is cooked and the juices run clear, remove from the oven. Serve on a platter with the bacon mixture sprinkled on top and garnish with fresh herbs and the yoghurt dressing on the side. Tip: Remove the chicken from the fridge for 20 minutes before placing into the oven, to ensure even cooking.

1/2 C cream 1C thick plain yoghurt 1C marshmallows, cut into halves 2/3 C strawberries 2/3 C blueberries 2/3 C raspberries, plus leave extra berries for garnish 1T icing sugar Store-bought brandy baskets AMBROSIA
PASSIONFRUIT AND PINEAPPLE SPRITZER Serves 8
340g passionfruit pulp 1L pineapple juice, chilled 3C sparkling mineral water, chilled 1/2 C coarsely chopped fresh mint
– Combine passionfruit pulp, pineapple juice, mineral water and chopped mint in a large jug. Mix well. – Pour into 8 serving glasses and serve with ice. – Tip: For an alcoholic version, use sparkling white wine instead of the mineral water.
– Whip the cream to form soft peaks. Fold through the yoghurt, marshmallows and 1C of chopped mixed berries. Refrigerate until needed or overnight. – In a food processor, blend the remaining berries and icing sugar. Strain through a sieve to remove the pips. – When ready to serve, softly fold the berry mixture into the ambrosia mixture, then spoon into the brandy baskets. Garnish with extra berries.

– Place prawns in large shallow bowl with haloumi and oregano. Toss gently to coat. – Thread 3 prawns, 2 chunks of haloumi and 2 pieces of bay leaf on each skewer, alternating each ingredient as you go. – Cook on a heated oiled grill plate or barbecue on high until prawns change colour. Serve immediately with lemon wedges on the side. – Tip: Soak skewers in cold water for 15 minutes before using, to prevent them from burning on the grill.
LEMON CURD WITH FRESH RASPBERRIES
18 raw prawns, shelled, deveined 90g haloumi cheese, cut into 12 chunks 2t dried oregano 6 fresh bay leaves, halved 6 bamboo skewers Oil, for greasing
1/2 C lemon curd 3/4 C sour cream 8 fresh raspberries Mint leaves to garnish Store-bought brandy baskets
– In a small bowl, combine the lemon curd and sour cream. Refrigerate until ready to serve. – To serve, fill each brandy basket with curd mixture and top with a raspberry and a small mint leaf. – Tip: For something different try placing the fillings into the freezer for two hours and serving in glasses like a semifreddo, then crumble some brandy snap basket over the top.

Shop Local ‘n’ Win winner Choosing to back local Ashburton businesses has paid off big time for one delighted Tinwald resident. Among more than 8,500 entries into the Guardian’s Shop Local ‘n’ Win campaign, Pauline Kerr was drawn as the lucky winner of the a $2,500 cash prize. Having run the café at Silver Fern Farms and more recently Boston Burger with her husband Bruce, Pauline knows first-hand the value of supporting local shopping. After reading about the campaign in the Guardian she enthusiastically jumped on board and filled out a number of entry forms at participating businesses around town. But it was her ticket completed at Tinwald Liquorland which was drawn as the lucky winner. Ashburton Guardian General Manager Desme Daniels delivered the news to an absolutely delighted Pauline over the phone. After the excitement and shock had worn off, Pauline and Bruce had some discussions over how to spend the money. Top of the list? A new kitchen oven. According to Pauline, she and Bruce, now happily retired, had wanted to buy one last year – but it never happened. She now has the opportunity to spend the money with local businesses and purchase the oven – and perhaps use a little left over for a small trip

This was Greg’s first year involved in the campaign, and he said he was “very happy” to find out he was the winning shop. “It’s so good to see someone local take home the prize,” he said. “And I think shopping locally is a big thing, it’s really important.”
Ashburton Guardian general manager, Desme Daniels said that the number of entrants was a huge result for the promotion. “It’s fantastic that out of so many entrants the winning person not only been a local business owner, but is also a subscriber to the Guardian,” she said.
