You’ve got to love spring! It may be the season of itchy eyes, stuffy noses, hot days one minute and cold the next (everyone in this office is either crook or has hayfever), blistering feral nor’west winds, but it’s also birth and blossom and fresh growth and the promise of outdoor adventures! And if last weekend is any indication, we could be in for a hot one ... or not. But the biggest irritant about spring for me is Guy Fawkes. I used to be a member of the get-over-it-and-just-tuck-yourdogs-and-babies-away brigade. But as the ‘mother’ of a couple of small dogs (who have a vastly skewed view of their actual sizes) who go mental with fireworks, it’s hard to keep them contained when fireworks can be going off any night of the year. This nightly torture needs to stop. It’s for Guy Fawke’s, it needs to be let off on Guy Fawke’s and/or official displays. Do you agree? Or am I just being the PC fun police? Cheers,

sk most men to stand in front of a camera and smile and they’ll shuffle their feet nervously, offer some excuse about it not really being their cup of tea before getting out of there quicker than you can say cheese. It’s a challenge. Men aren’t that keen on standing in front of a camera and posing. Even when the end goal is so great. But it’s a challenge Ashburton photographer Emmily Harmer enjoys setting herself. Harmer, who is almost a household name around Mid Canterbury for her skillset with a camera in hand, has risen to popularity through her incredible work when it comes to portraits and although, by her own admission, there’s probably a hundred other things she could be doing, setting little missions and working her butt off to achieve them are all part of the fun. “I probably need my head read with some of the ideas I come up with sometimes,” she laughs. “But I love it, I love portraits, especially in black and white, and I love being able to tell someone’s story just through their facial expression in an image.” In the past few years Harmer has made public some remarkable work involving local women, including her recent women in business series which received plenty of plaudits. But with the prospect of Movember ahead and the chance to raise the profile of her business a little further while working for a good cause, the opportunity was too good to pass up. “I’m really known for photographing

But this month Ashburton-based photographer, Emmily Harmer, is stepping into the unknown and has laid down the challenge to eight men for Movember. YOU magazine caught up with the sharp shooter to discuss fundraising for a good cause and what’s in the pipeline.
women, but I wanted to mix it up a bit and say that men are welcome here too. “And with Movember it created the opportunity – the chance to make something happen so I set the wheels in motion.” Through a bit of good old-fashioned hassling and plenty of Facebook messages, Harmer got the word out quickly and while not all were receptive to the idea, she got enough response to make it happen. “It’s hard to get them (men) in, but to photograph them it’s so much easier. “I sent out a lot of messages and there was a lot of rejection – some of it was anxiety about wanting to grow a mo, or in some cases being able to grow a ginger mo – it was a little like smacking the head against a brick wall for a while there. “But it also showed that men are vulnerable too and that they’re self-conscious when perhaps we women don’t really think they are. It was a bit of an eye-opener.” The fundraising challenge, in which Harmer hopes to raise $2000 as part of Movember, is under way with eight men on board; Mike Preston, Shaun Bovey, Andrew Falloon,
George Morris, Simon Sharplin, Phillip Breen, Kurt Harmer and Jimmy Kirkwood. After an initial shoot to kick-start the month, the lads will find themselves back in front of the lens come the end of November to showcase their efforts. “It’s a good chance to get the conversations happening around a pretty serious subject, so hopefully it shows a few people that it’s okay to step out of the comfort zone and do something a little bit different.” Harmer, who operates out of her own studio on West Street in Ashburton, is also working on a project which has seen her photograph 100 people sitting in her now-famous red chair and hopes to have all images and accompanying biographies published in a book. “That’s been a whole heap of fun. I’ve had people from six months old to 102 in here for that and people from all around dropping in to have their picture taken. “Just hearing some of their stories and being able to give some of them an opportunity to talk and tell someone about what’s happening in her life is so rewarding.”

2 packets wine biscuits (crushed) 200g butter (melted) 700g cream cheese 700ml cream 1C sugar 2t vanilla essence 1/2 C chopped crystallised ginger 1C Barker’s lemon curd 2T gelatin 1/4 C cold water
– Firstly, crush the two packets of wine biscuits and melt butter. Mix together well and press into a 20x30cm tin to form a base for the cheesecake.
– Soften the cream cheese and mix together with the sugar, vanilla essence, ginger and lemon curd. Use a whisk attachment in a mixer until the mixture is blended. – Afterwards, mix the gelatin with the cold water. Set this mixture aside for a few minutes to set and, after a few minutes, heat in the microwave for 20 seconds. Promptly mix the gelatin and water into the cheesecake mixture and pour into tin with the prepared base. – Spread proportionally and swirl some lemon curd through the top of the cheesecake. Set overnight.

Potato salad
1kg quality boiling potatoes (I prefer new potatoes) 200g streaky bacon Chives 2 spring onions 1 red capsicum Salt and pepper 1T fresh garlic 1C mayonnaise (I prefer homemade) 1C baby spinach
– Firstly, cook the potatoes and once they’re done leave to cool. – While they’re cooking you’ll want to chop bacon into
small pieces and fry them, chop the chives, spring onions and capsicum into appropriate-sized pieces. – At this stage you may also want to prepare the mayonnaise. – Once the potatoes have cooled, mix in all chopped ingredients plus salt/pepper, spinach and garlic. – Afterwards pour mayonnaise over and mix together with the potatoes and other ingredients well for that signature potato salad taste.
APPLE AND DATE STUFFING - GLUTEN FREE • 3 medium diced onions (about 2 cups) • 2 cups of diced celery • 2 medium diced apples (about 2 cups) • 20 or so dates, chopped • 2 cups of almond meal • 2 teaspoons sage • 2 teaspoons thyme • ¼ teaspoon marjoram • ¼ teaspoon rosemary • ¼ teaspoon pepper • ½ teaspoon salt • 2 tablespoons of coconut oil of butter • 3 eggs lightly beaten

– Spray a texas muffin tray with oil and line it with the savoury pastry, forming the bases of the pies in the tins. Place pastry roll over a plate and cut around the edge to keep measurements accurate, do this for all the tray

In a frying pan melt the coconut oil or butter. Add onion, celery and apple. Cook for about 5 minutes until the onion is soft but not brown. Allow to cool slightly. In a large bowl mix almond meal, herbs, salt, pepper and dates. Add eggs and the slightly cooled mixture from the frying pan and mix well. Cook in a greased loaf pan or roll into stuffing balls. Bake for approximately 45 mins - 1 hour at 180oC

Afterwards, whisk the eggs and cream together well and pour on top. – Cover the tray with tinfoil and bake in oven for 20 minutes at 170°C. Remove tinfoil and cook for another five minutes. Leave to cool or serve hot.

hen the weather is hot, it’s time to go searching in your wardrobe for your summer clothes. Try putting some on and you may find that a few winter rolls are getting in the way of your chosen outfit. Staying healthy, feeling good and looking trim for summer is what many of us would like to attain. By losing some weight over the summer months, you will increase your sense of well-being and give you more energy. Quick and easy guidelines you may like to follow for a healthier you this summer are: – Choose plenty of bright-coloured fruits and vegetables that you can have in salads and snacks that will provide plenty of fibre, protein and satiety. – Try to eat three small meal-sized portions, with two to three snacks in between, to help keep your blood sugar levels in balance. – Having regular, consistent meal and snack times helps metabolism, as well as digestion. Try not to skip meals as this can really affect your energy levels and emotions, which can lead to over-indulging when you manage to find the time to eat again. – Consistency is the key to healthy

eating, choosing to eat wholefoods that have been prepared rather than processed, refined, store-brought food. It is important to decrease refined carbohydrate foods as much as possible, such as biscuits, slices, muffins, cakes and crackers, as these foods hold empty calories and are higher in refined sugar. – Reduce your consumption of fizzy drink, soft drinks, juice and alcohol as much as possible, water is the best substitute and what your body requires. – Try to consume more protein from meat and vegetable sources, and this helps to keep your metabolism in balance, and keep you from becoming too hungry between meals. – Try to keep your portion sizes smaller than you usually would, by about a quarter of the amount, as this allows for better digestion. – Ensure you are getting plenty of sleep, as at this time of year, tiredness and fatigue may be setting in for many. Increasing your food consumption to try and source more energy can result in an addition to the waistline. – Exercise of your desired choice is paramount in shifting excess weight gained over winter, as well as ensuring a better sense of well-being and relaxation. Changing to a better health and wellness regime can help towards creating a healthier, relaxed and trimmer you. It can take a bit more work and effort, but healthier eating, and getting more exercise into your weekly routine when and where you can, will make you feel so much better. Rice paper rolls with tuna, avocado and dipping sauce
This is a dish that is fresh, healthy and provides you with your 5 + a day vegetables. It is a quick and easy to make dish that can be used as a starter for a summer/Christmas menu, or just as a healthy snack dish for whenever suits. Give yourself the nutrition that your body craves. Makes 12 rolls
12 rice paper rolls 1 185gm tin tuna in spring water 1 carrot (cut into very thin carrot sticks – julienne) 1 cucumber, sliced into very fine sticks 1 red pepper (thinly sliced) 1 avocado (thinly sliced) optional Small bunch chives (optional) Basil leaves (optional) Lemon Dipping sauce 2T sweet chilli sauce 2T soy sauce 2T fish sauce 4 drops Kaitaia fire

dients together in a small bowl and set aside in the fridge. Prepare all the ingredients for the filling of the rice paper rolls and place in separate small bowls. Open the tin of tuna, drain and set aside. Julienne the vegetables and drizzle a little lemon on the avocado. To make the rice paper rolls, fill a large bowl with warm water and place a wet tea towel in front of you. Place an individual rice paper roll in warm water for 30 seconds, take out and place on the tea towel. Place four each of the red pepper sticks, carrot sticks, cucumber sticks and four avocado slices on the wet rice paper. Place a heaped tablespoon of tuna on top, then four chive lengths and two basil slices. Roll it up, set aside on a serving plate and repeat until you have a plate of tuna rice paper rolls.

Does your knee really need surgery?
O
ften our body’s resilience and ability to adapt is forgotten or ignored for the perceived quick-fix. This is particularly the case when it comes to knee injuries such as Meniscus injuries and anterior cruciate ligament (ACL) ruptures where in Australasia they are operated on far more than they need to be. In Australia for example, around 90 per cent of ACL ruptures are operated on, despite research showing at least 1/3 (likely more) of those can cope without an ACL and even more than that, there is emerging evidence that ACLs, like a lot of other ligaments, do heal in some cases. So how do you know if you need surgery? It’s pretty simple really and the Scandinavians do it really well. First, trial at least three to six months of solid rehab which involves regaining range and building up strength and control as much as possible. That not only improves your knee strength and stability, but weirdly enough, it also gives your knee time to settle and heal! The Scandinavian model of care encourages early physio rehab as the primary treatment option for three to six months which they term “world’s best practice”. Subsequently their rates of ACL reconstruction surgery are much lower at

around 50 per cent. That’s a huge difference and just shows the amount of surgery that could be avoided if more rehab was encouraged and stuck to for 3-6 months. It would also save the health system a heck of a lot of money, as that saves almost $22,000 per case (that’s in Australia anyway, I couldn’t find the NZ stats) if surgery isn’t needed! Similar results happen with many knee injuries, whether it is meniscus tears or collateral ligament injuries. If solid active rehab is stuck to for three to six months, there is a chance you may not need surgery, so whether you have injured your knee or have pain from osteoarthritis – choose physio first. Get a good rehab programme set up and gradually load it the right way to build strength and improve function. Disclaimer! Yes, some knee injuries still need surgery, particularly if they are locking up etc but your physio can guide you on this.

A lesson in patience
arm life is a little bit great right now. The picture-perfect paddocks are drenched in warm sunshine (ok, well some days), buzzing things and beautiful butterflies are back in the breeze, pretty new-season blooms are exploding in the garden (among many weeds) and the smell of summer is inching ever closer with festivals, parties and the social scene finally back in action. So when I heard a garden tour was being rolled out in our very own farming community, I became very, very interested. Not only because I needed lots of green-tips and inspiration for my own unruly jungle, but mostly because I had a project with the four-year old and needed serious help. You see, Mister Four isn’t that interested in gardening, but he is interested in Peppa Pig, and on Peppa Pig they have been growing sunflowers. So, he decided we would also grow some sunflowers, but the condition was they had to be bigger than the house. Honestly.

A quick trip to a gardening shop saw the Great Russian Sunflower seeds purchased and planted. I figured interest would quickly drop off, but no, this kid was checking his seeds daily, wanting the giant sunflowers to explode out of the soil in a dramatic Jack and the Beanstalk kind of way. Even I was excited when the green twiggy stems appeared. But unfortunately, they really didn’t do much after that. How long was this going to take? A quick google search was needed … 80120 days to grow a sunflower? And could possibly take years to finally flower, according to my florist friend Sarah.
No ... unfortunately this really would not work. My child is not this patient and, in all honesty, neither am I! I had made a decision to fast-track the process. Still great gardening lessons learned, but just a wee bit quicker than leaving it all up to a very busy and exhausted Mother Nature. I decided I was going to purchase pregrown sunflowers in pots and make the switch. Pure brilliance. But the day came, and the guilt was too overwhelming (plus I also winced at the price of buying a dozen individually fully grown sunflowers). I feared this was now becoming a lesson in patience for us both (and I hate it when I am part of the lesson). So, even though our now droopy green twigs are doing a whole lot of nothing, they are still our droopy green twigs and I’m clinging to the hope that just a bit of water and sunshine might miraculously turn them into the Giant Russian Sunflowers the packet promised they would be. Roku Signature Serve
Preparation: • Peel fresh ginger using the edge of a spoon • Slice the peeled ginger into six equal long sticks • Take a long glass and fill it with ice Mixing: • Add Schweppes tonic to the long glass leaving enough space for the Roku Gin to be added • Add the six ginger sticks to the glass • Pour 50ml of Roku at room temperature into a shot glass Serving: • Pour the 50ml of Roku over the top of the filled long glass • Use a long spoon to stir to carefully blend all ingredients
Roku-based cocktails
1) Negroni Fill a mixing glass with ice and add 30ml of Roku, 20ml of Campari and
red vermouth. Stir ingredients until fully chilled and diluted, around 30 seconds. Strain into a short rocks glass half filled with ice and garnish with a slice of orange peel. 2) Gin martini Fill a mixing glass with ice and add 60ml of Roku and 15ml of dry vermouth. Stir ingredients until desired chill and dilution is reached. Strain into a chilled martini glass and garnish with a ginger twirl. 3) Gimlet Add 60ml Roku Gin, 30mls of lime juice and 10ml of simple syrup to a cocktail shaker. Add ice and shake vigorously. Strain contents into a chilled coupe glass, and garnish with lime slice to finish. YOU has one bottle of Roku gin to give away!

Tackling leaf curl
Lynne Bridge is this month’s winner with the following question: My fruit trees have curly leaf and each year I spray them but it keeps coming back. When is the best time to spray and is there anyway of stopping it completely and what product do you suggest?
W
ith leaf curl, it does come down to prevention, which is essential. It can be controlled by applications of copper oxychloride or lime sulphur during the tree’s dormancy (winter). The most effective time to spray your fruit trees is when the buds are swelling but before they have opened. Once the fungus has entered the leaves, there is no way to control leaf curl. Because your tree is already infected, you can prevent it next year by spraying as above. It is an ongoing process to repeat each winter to stop re-infection. Normal pruning techniques should remove most of the infected or dead branches. Garden hygiene, in this case, is very important. Remove all dead leaves that have fallen to the ground during the growing season, as this will help lessen the chance of re-infection. Do not put infected leaves or branches into the compost bin – ideally, remove them from the property. Keep trees healthy with applications of Daltons Garden Time Fruit & Citrus Fertiliser in early spring when plants are coming into growth. Then feed at six weekly intervals until mid-December, recommencing in mid-February and feeding through till autumn. Top tip: If you have any neighbouring fruit trees, spray them as well so the disease does not spread. It’s all happening in the garden!

ovember is a wonderful month in the garden. There are masses of lush green growth, new season vegetables are growing at a rapid rate and summer flowering annuals and roses are bursting with colour. It’s a joy to be outside and this month’s task will keep you active in the sunshine.
Vegetable garden
The practice of ‘succession planting’ is important when it comes to vegetable gardening. It means you stagger your plantings or planting varieties so you do not have them all cropping at once, e.g. you plant a couple of lettuce every 2-3 weeks. Continue to plant summer vegetables
including; beans (dwarf and runner), beetroot, cabbage, celery, corn, cucumber, courgettes, lettuce, pumpkin, radish, tomatoes, and kumara. Water your vegetables regularly but not excessively. Tie up tomatoes and remove lateral growth. Apply side dressings of vegetable fertiliser, especially to those gross feeders e.g. sweet corn.
Flowering annuals
Spring flowering annuals should now be in full bloom. Continue planting seedlings of alyssum, ageratum, asters, cornflowers, cosmos, livingstone daisies, marigolds, nemesias, phlox, petunias, salvias, strawflowers and zinnias. ‘Dead-head’ (removal
of dead flowers) the annuals throughout the growing season to encourage continuous blooming.
Fruit trees
All fruit trees are in active growth in November and young fruit are forming on pip and stone trees. Fertilise with fruit tree fertiliser to encourage strong, healthy growth – and don’t forget to water it in well. Citrus trees, Tangelo Seminole and Harwood late orange are now ripe and ready for harvesting. Have fun in the garden! Amazing Samoa DESTINATION with Sara Moore
At the end of October, I had the opportunity to visit Samoa. While in Samoa I visited the islands of Upolu and Savaii. At the start of my trip we spent some time down the south of Upolu on the white sandy beaches at both the Return to Paradise and Saletoga Resorts, before heading back up to the Apia township. On our way back into town we stopped off at the Robert Louis Stevenson (author of Treasure Island) Museum which was the house he lived in while he resided in Samoa until his death in 1894. We stayed at the Taumeasina on a Thursday night which happened to be one of their entertainment evenings, so we had the pleasure of enjoying the karaoke delights of Cindy of Samoa who had the whole restaurant singing along with her. The next day we took the Lady Samoa ferry over to the island of Savaii and thankfully for me it was a calm day at sea. After an hour we arrived on Savaii where the weather was a couple of degrees warmer than Upolu (a cool 33 degrees). On arrival after checking out a few of the beach fales we made our way to the Saleaula Lava Fields which are the result
of the Mt Matavanu eruption back in 1905. This is a fascinating place to visit with a half-buried church, the Virgins Grave and even just seeing the way the trees and gardens have grown back through the lava on the Saleaula Village. That evening we were treated to a traditional umu dinner as part of the Fia Fia night at the Stevensons on Manse Resort. This included a demonstration on how to prepare a traditional umu (Samoan version of a hangi) including all the ways you can use a coconut. The next day we visited the Alofaaga Blowholes and the Afu Aau Waterfalls. Luckily, we experienced some rain over the next couple of days which brought the temperatures down to the mid-twenties. On our return to Upolu we headed to the local flea and food markets which are in Apia. This is a great spot to buy some fresh

fruits and your souvenirs to take home. From there we headed over to the Samoan Tourism Cultural Village to experience some local cultures which included seeing men from the village getting their tattoos, making the wooden items that you purchase from the markets and the woman making siapo (tapa cloth). On our last evening on the Island we attended a Polynesian Island night at the Sheraton Beach Resort. This included performances based on the different cultures of the South Pacific and even included fire dancing. If you would like to hear more about my trip please call into our office.
