elcome to the Ashford Castle magazine. It aims to show you the breadth of the facilities on offer in Ashford Castle and in the wonderful region that is our home, the West of Ireland. We wish you a memorable stay and would like you to keep this magazine as a memento of your visit with us. Ashford Castle has welcomed guests from around the world since it opened as a hotel in 1939. However, much has changed since those early days by way of guest facilities, with thanks to our wonderful new owners, the Tollman family of the Red Carnation Hotel Collection and their $100 million restoration. This 13th century castle now boasts, for example, 21st century technology throughout, underfloor bathroom heating and air conditioning. However, one thing that has not changed is the genuine and generous “Céad Míle Fáilte” - one hundred thousand welcomes. orn in Johannesburg, South Africa, Beatrice Tollman had little ambition to spend her life in the hospitality sector. However, upon meeting a young hotelier, Stanley Tollman, noted for the ubiquitous red carnation he sported in his lapel, her direction in life was forever altered. The couple soon fell in love and married, beginning their new life by opening The Nugget hotel in Johannesburg. After refurbishing the venue, Mrs Tollman worked in the kitchen and her journey to crafting some of her most famous recipes began. With the couple’s sophisticated style, passion for fine cuisine and dedication to the highest standard of service resulting in sustained success, it wasn’t long before they opened a second location in Johannesburg, Hyde Park. Eventually, the Tollmans secured several hotels in South Africa, including the Tollman Towers, which became the country’s first ever five-star hotel. In 1975, Mr and Mrs Tollman left Johannesburg for Great Britain. It was here that they purchased the prestigious Chesterfield Hotel in Mayfair and the Red Carnation Hotel Collection came to life, inspired by Stanley’s signature red carnation. In 1999, the couple bought The Milestone Hotel, a five-star establishment overlooking Kensington Palace which now stands as one of Red Carnation Hotel Collection’s flagship properties. It was during this time that the group expanded to the US, purchasing a number of three-star Days Inn hotels. In 2012, Mrs Tollman’s life was captured in a cookbook featuring the most
expertly crafted recipes from her kitchen. Bea Tollman: A Life in Food encapsulates her unending love of quality dining and showcases the popular dishes that made her kitchen a world-renowned success. In the same year, in recognition of her contribution to the hospitality industry, Mrs Tollman received the prestigious Hotelier of the Year award at the European Hospitality Awards. In 2016, she was also honoured with the Lifetime Achievement Award at The Cateys. The success of the Red Carnation Hotel Collection is widely attributed to Mrs Tollman’s determination to instil her philosophy within the staff: “No request too large, no detail too small.” Recognising the superior level of service shown by staff, she has fostered a supportive environment within the group that encourages employees to climb the career ladder. In addition, every year she holds a gala Staff Appreciation Party in London, at which the top achievers from her hotels around the world are recognised for their outstanding efforts. Efforts such as this have earned Red Carnation accolades such as the Princess Royal Training Award 2017. To complete their 17 luxurious properties located across the US, UK, South Africa and Switzerland, the Red Carnation Hotel Collection purchased Ashford Castle in Co Mayo in 2013. Mrs Tollman immediately set out to restore the castle to its former glory. This ambition has been validated with Ashford Castle being named Hotel of the Year by USA based luxury travel company, Virtuoso and being awarded Ireland’s AA Hotel of the Year. “No request too large, no detail too small.”

Historic Splendour AS YOU CROSS THE TURRETED STONE BRIDGE AND APPROACH THE MAJESTIC ASHFORD CASTLE, YOU’RE ENTERING AN ENCHANTED WORLD STEEPED IN HISTORY
S
et in 350 acres of parkland between Lough Corrib and Lough Mask, Ashford Castle has stood in Cong, County Mayo since 1228. Founded by the Anglo Norman de Burgo family, following their defeat of the native O’Connors of Connaught, Ashford Castle became their principal stronghold for the next three and a half centuries. In 1589, after a fierce battle, the de Burgo’s lost control of Ashford Castle to English official, Sir Richard Bingham, Lord President of Connaught. At this time a fortified enclave was added within the precincts of the castle. Baron Oranmore, Dominick Browne was gifted the estate in a Royal Grant in the late 1600s. By 1715, the Browne family had developed the extent of the estate, adding a French style château and hunting lodge to the castle complex. The doubleheaded eagles still visible on the roof reflect the Browne coat of arms. Sir Benjamin Lee Guinness, of the brewing dynasty, purchased Ashford in 1852, further extending the estate to 26,000 acres, building new roads and planting thousands of trees. He also added two large Victorian style extensions. During this period the castle hosted the Prince of Wales, who subsequently became King George V, and many other dignitaries.

The castle passed to Sir Benjamin’s son, Lord Ardilaun (Arthur Edward Guinness) in 1868. A keen gardener, his influence is still seen today in the woodlands that he planted. The westwing of the castle was rebuilt during his tenure, the château and castle were incorporated into a single building and the battlements were added. In 1915 Ashford was retained by the Iveagh Trust on behalf of the Guinness family until it was bought by Noel Huggard in 1939. Huggard established the castle as a first-class hotel renowned for its range of country pursuits. When movie director John Ford arrived to film The Quiet Man in the West of Ireland in 1951, the estate formed the backdrop for some of the scenes and many of the stars of the movie stayed at Ashford Castle during filming. American hotelier John A. Mulcahy purchased the property in 1970, overseeing a total restoration and expansion, doubling its size, adding the golf course and developing the grounds and gardens. A group of Irish-American investors purchased Ashford Castle in 1985, successfully continuing its reputation as a top hotel. For the next 16 years Ashford was voted not only one of the best hotels in Ireland, but also one of the top 50 resort properties in Europe by the most discerning guidebooks. In 2013, the Red Carnation chapter of Ashford’s history commenced with the purchase of the property followed by an extensive restoration and renovation to restore Ashford Castle to its former glory. Detailed structural work included a new lead roof, replacement of all 820 windows WE PROVIDE and the repointing of the stonework. The interiors GENUINE AND were treated to a complete refurbishment and interesting features such as a private 32-seater GENEROUS IRISH Cinema, luxurious Billiards Room and Cigar Terrace HOSPITALITY were added. The Lodge at Ashford was bought the following year. In 2015 a state-of-the-art Spa and Wine Tasting Tunnels were opened in Ashford Castle. The same year, Ashford Castle was voted Virtuoso Best Hotel in the World. In June 2016, the romantic and private lakeside Hideaway Cottage, once the old boat house in the gardens of Ashford Castle, was completed. The life of the castle continues and our guests are central to Ashford Castle’s ongoing story.

PORTER, ASHFORD CASTLE I remember the first day I started in the Castle: the 20th of January, 1989. I started in the kitchen just like my mom did many moons ago. I’m now shy of 30 years at the Castle and I have seen so many changes. Recent years have been the most exciting, watching the Castle be restored to all its former glory. Indeed it is better now than ever before. This summer, my son Matthew worked alongside me as a hotel porter.

Philippe Farineau Growing up in a family who loved cooking and the cultivation of fresh produce taught Philippe Farineau more than just skill in the kitchen, but also a way of life. Philippe’s love of fresh, high-quality food has grown throughout his 18 years in Ireland, and he continues to supply his kitchens with the best artisan produce, from producers he has known and trusted throughout his career in Ireland. “I keep them because I know their produce is the best in the country. And that is very important.” Since 1998, Philippe has manned some of the most opulent kitchens in the country, culminating in Ashford Castle, where he took over the kitchen in 2015. He comments that he likes, “the Irish way of life.” Discovering the outstanding calibre of local produce around the country, Philippe pairs the high quality local ingredients found in the countryside with his technical skill bringing the famous French gastronomy to an intricate, seasonal menu at Ashford Castle. He endeavours to take his guests on a journey through land and sea, rediscovering Irish classics with a fresh French twist. In a proud turn he states, “Every morning I’m coming into work and I see Ashford, the castle, on my way down and I am extremely proud and happy, very confident and very lucky to be working here.”

Martin Gibbons
MAÎTRE D IN THE GEORGE V DINING ROOM, ASHFORD CASTLE An established member of staff at Ashford Castle, Martin Gibbons began his career as a trainee waiter in 1974, just after he finished school. “I’ve been here ever since, now I’m Maître D and I organise all the bookings for dinner, I meet, greet and seat the guests, and introduce them to the menus. I have a lot of contact with the people who stay in the hotel.” But it wasn’t just love of the hospitality industry that brought Martin to Ashford Castle. Growing up in Cong, Martin’s grandfather was gamekeeper for the estate when the Guinness family were in ownership. “He worked here in the early 1900s, so he was here in 1905 when the Prince of Wales arrived. So, it’s been good to our family.” Reflecting on his familial ties with the estate, Martin comments that though it’s one of the reasons he wanted to work here, it’s not by any means the only reason. “There’s lots of history here and it’s the location really. It’s very special.” In particular, Martin advises that May and June are beautiful months to experience the castle but October holds a special spot for him, due to the golden colours and the trees.
LANGOUSTINE TARTARE with Gazpacho, Heirloom Tomatoes, Elderflower Meringue & Basil Oil

GAZPACHO 1/2 white onion, chopped 5 ripe tomatoes, chopped 1 cucumbers, peeled & chopped 2 garlic cloves, chopped 2 red peppers, chopped Sea salt White balsamic vinegar Olive oil ELDERFLOWER MERINGUE 430g elderflower juice 2.5g xanthan gum
48g egg white powder 80g sugar syrup 24g silver leaf gelatine BASIL OIL 30g basil leaves 30g grapeseed oil LANGOUSTINE TARTARE 100g fresh deveined langoustine, diced 10g shallot, diced 10g melon, diced 5g chives, chopped Sea salt – to taste
FOR THE GAZPACHO Mix all chopped ingredients together in a bowl and season lightly with a pinch of sea salt. Leave Ingredients to marinate overnight in the fridge. The next day blend the marinated ingredients together and add white balsamic vinegar and olive oil until you’re happy with the balance. This will vary from time to time depending on the acidity of the tomatoes. Correct the seasoning with salt. Pass through a Chinois and keep chilled.
FOR THE LANGOUSTINE TARTARE Mix all the ingredients together and season to taste.
FOR THE ELDERFLOWER MERINGUE In a kitchen aid mix the elderflower juice, xanthan and egg white powder for 3 minutes. Soak the gelatine in water. When soft, squeeze out excess water and dissolve in the sugar syrup by warming it slightly. When dissolved, add it to the other ingredients slowly while the kitchen aid remains on. You should now have a meringue
HEIRLOOM TOMATOES We use a selection of tomatoes in this dish – Green Zebra, San Marzano, Kumato, Black Zebra and Dattarino along with Irish tomatoes available during the summer months. The type of tomato is not important in the dish. The quality of the tomato is so try to get the best quality tomato available to you.
which you can dry out in a low oven (70°c) or dehydrator until crispy. FOR THE BASIL OIL Blanch the basil in boiling salted water for 10 seconds. Remove and refresh in ice. Pat dry and place in a blender with the oil and blend for 1 minute. Pass through a sieve and chill.

RESORT EXECUTIVE PASTRY CHEF EXPLAINS HER SIGNATURE DESSERT, MANJARI CHOCOLATE BAVAROIS The dessert I have created is called “#SpreagthaAgAnEastát”, The Irish phrase “#InspiredByTheEstate”. When I think about Manjari and taste it, instantly the freshness, acidic and sharp notes come to my senses and I feel a tingling sensation in my throat before I taste it. When creating desserts, I want our guests to experience more than just food on a plate. Dessert should balance, equally, taste and visual appeal and I believe in being avant garde, in pushing the boundaries. I’ve used modern and ancient traditions of preserving for this dessert and bonbon. My influence was both estates – Manjari, Madagascar and Ashford Castle Estate, Mayo – using the trees and forests as the core idea. At Ashford Castle our guests usually like to dine in pairs so that they share moments together. Therefore I have plated this dessert so that its visually striking wherever you’re seated around the table, as my view of the forest is not the same as the next persons.
MANJARI CHOCOLATE BAVAROIS with Manjari 64% choclate and Ashford Estate preserved crab apple purée
MANJARI 64% CHOCOLATE BAVAROIS 180g milk 45g pasteurized egg yolk 45g caster sugar 1.5 leaf gelatine 150g semi-whipped cream 150g Manjari 64% 2.5g white balsamic vinegar PRESERVED BOTTLED CRAB APPLES 10kg crab apples from Ashford Estate 1.5kg sugar 6kg water 10g cirtic acid 300g white balsamic vinegar CRAB APPLE PURÉE 2kg crab apples (from preserved 2017) 500g crab apple syrup (from preserve 2017) CRAB APPLE INSERT 500g crab apple purée (preserved 2017) 50g lemon juice 6g agar agar

FOR THE MANJARI 64% CHOCOLATE BAVAROIS Soak the gelatine in cold water. Place the milk into a saucepan and allow to simmer. Whisk the egg yolks with the sugar. Pour the milk onto the egg mixture and whisk to combine. Place the mixture back into the saucepan and cook for 3-4 minutes or until the mixture thickens. Squeeze the excess water from the gelatine and add to the mixture, whisking to ensure the gelatine is fully incorporated Pour onto the Manjari 64%. Whisk in the balsamic vinegar. Allow to cool completely. When the mixture is cool whisk in the whipped cream. Pipe into prepared moulds. Place crab apple gel insert inside the sphere mould with the bavarois mix. Tap well, to
insure no air bubbles. Freeze solid. Once frozen, remove from mould and spray with prepared Manjari and cocoa butter spray FOR THE PRESERVED BOTTLED CRAB APPLES Thoroughly wash apples and remove stalks. Place the sugar, water, citric acid and vinegar into a saucepan and bring to the boil. Add the apples and continue boiling for 4 minutes. Sterilise the killner jars in glass steriliser. Place the apples into jars and cover with syrup, close the lids. Place into a saucepan with boiling water and boil continuously for 30 minutes. Remove and store in a dark container in chocolate room at a controlled temperature of 18°C. Keep for 1 year.
FOR CRAB APPLE PURÉE Place the crab apples and the syrup into a saucepan, cover with cling film. Cook on a medium heat for 15 minutes or until apples are soft. Place apples into a blender, blend until smooth. Pass through a fine sieve. Set aside for use. FOR THE CRAB APPLE INSERT Place the purée back into a sauce pan with the agar and lemon juice and bring to the boil. Allow to cool at room temp. Once cold and set, re-blend to a smooth gel. Pipe into prepared sphere silicone mould and freeze. Once frozen, remove from mould, spray with cocoa butter/ Manjari spray. Set aside for bavarois.

Mary Haire BACK OF HOUSE, ASHFORD CASTLE Mary is a longstanding member of staff at Ashford Castle and has been working here for 35 years, having started in April 1982. “I started in the kitchen doing general cleaning, moving to Back of House, looking after staff food, and the staff hall.” Although Mary has been at Ashford long enough for it to have changed hands a few times, she reflects that the atmosphere of the hotel itself doesn’t really change. “I describe it as a family place. Management, staff - you’re probably saying I’m overstating it - but that’s exactly how it is… everyone is fantastic.” She adds, “The grounds are gorgeous, and it’s a beautiful place.“

he long established tradition of Afternoon Tea has been wonderfully preserved at Ashford Castle since 1868, when Lord and Lady Ardilaun would take Afternoon Tea to discuss the events of the morning and the plans for that evening. You’ll notice the original silver tea set displayed in the Connaught Room that was presented to Lord and Lady Ardilaun to celebrate their 25th wedding anniversary in 1896. With spectacular views from the comfort of the castle’s elegant interior, take your time to savour every delicious moment. The Afternoon Tea menu offers guests a wide selection of speciality teas or perhaps a glass of Champagne, delicate finger sandwiches, warm freshly baked scones with lashings of cream and home-made jam, not to mention our tasty pastries and cupcakes. It’s the perfect way to spend a leisurely afternoon with friends.

The Connaught Room With views across Lough Corrib and arguably one of the most impressive fireplaces in the castle, the Inglenook is a popular space for private dining, Afternoon Tea and intimate weddings. The wooden fireplace dates back to the Renaissance period with two face sculptures of Diarmuid and Gráinne from Irish folklore. The Guinness crest is engraved in the wooden fireplace, along with their motto in Latin, “Spes mea in Deo,” which translates to “My hope is in God”. During the first phase of the restoration wonderful tiles dating back to the Guinness time of 1852 were discovered. A highlight of the Inglenook is the 1,400 piece, custom made silver-gilt dinner service, formerly owned by Washington Augustus Roebling (the man responsible for the creation of the Brooklyn Bridge) who received this extensive dinner service set in 1899.

THE SEASONAL SETTING CULLEN’S AT THE COTTAGE
LAMB BROCHETTE, SPICY COUSCOUS BROCHETTE 600g loin of lamb, cubed 300-400g merguez sausage, sliced into 5cm chunks 2 red onions, halved then quartered 3 tbsp olive oil Salt and pepper to taste COUSCOUS 250g couscous Salt and pepper to taste 3 red peppers, peeled and finely diced 700g courgette, finely diced 6 tsp olive oil 2 lemons, juice only 200ml water 1 tbsp coriander, finely chopped 1 red chilli, finely chopped 1 shallot, finely chopped 8 baby corn TOMATO CHUTNEY 1kg fresh chopped tomatoes 250g onions, peeled and roughly chopped 200ml olive oil 2 cloves of garlic, peeled and chopped 1 bay leaf 50g ginger, peeled and chopped 70g brown sugar 100g honey 100ml organic cider vinegar 100g tomato paste Salt & pepper to season
By Mrs Tollman, Founder and President of the Red Carnation Hotel Collection FOR THE LAMB Spear alternate pieces of the lamb, merguez sausage and red onion onto the skewers. Preheat your grill or griddle pan over a moderate heat. Brush the brochettes with olive oil, season with salt and pepper and place on the grill or griddle. Turn occasionally until cooked to your liking, approximately 10-15 minutes. Serve with the couscous and tomato sauce. FOR THE COUSCOUS Bring a pan of salted water to the boil, add the pepper and 3 tbsps of olive oil, the chilli and lemon juice. Place the couscous in a heat-proof bowl and pour over the flavoured water, whisk and cover with cling film. Leave it sit for 5 minutes, then remove the cling film and stir again. Heat some olive oil in a pan, slice the baby corn lengthwise and sauté until tender then remove from the pan. Sweat the shallot, pepper and courgettes in olive oil until tender. Add the vegetables to the couscous with the chopped coriander and stir to combine. FOR THE CHUTNEY In a deep saucepan combine the vinegar, sugar and honey and cook over a medium heat until light brown and caramelised. Add the chopped tomato to the pan and season with salt and pepper. In a separate pan heat the olive oil over a medium heat and gently sweat the diced onion, garlic, ginger and bay leaf until the onion is translucent, approximately 5-10 minutes. Add the onion, garlic, ginger and bay leaf to the tomato mix, then add the tomato paste and continue to cook over a low heat, stirring occasionally. The chutney is cooked when it has reached a jam-like consistency this can take between 45 minutes and an hour. Taste and adjust the seasoning if necessary.

Wine Cellars
The Wine Cellars at Ashford Castle offer private wine tastings and wonderful wine dinners in the secret passageways of the castle that were unearthed during recent renovations. The old servants’ entrance was originally a coal bunker and walkway underneath the castle, where the servants used to come in and get their coal buckets to take up to the rooms. It has now been transformed and the 16th century tunnels provide three unique private spaces with a cosy ambience and soft lighting. A Coravin system is used for tasting expensive bottles without having to take the cork out, keeping the wine fresh for longer. The extensive wine list has been carefully selected by our knowledgeable sommelier, and you can sample a fine selection of vintages from a choice of new and old world wines in a remarkable setting.
The Billiards Room Retreat to the Billiards Room and enjoy a game of billiards, and then sink into comfy chairs with a glass of your favourite tipple. Relax with a newspaper and catch up on the day’s affairs. Open to residents only from 3.30pm, the traditional elegance of the Billiards Room, with its grand assortment of antique furniture and furnishings is a most welcome addition to the castle.

The cellar has been curated into the perfect place to age wine and our links to the Wild Geese producers as well as the Tollman Family boutique winery, Bouchard Finlayson, means we have an eclectic collection of superior wines to pair with our menus here at Ashford Castle.” Pierre brings over 10 years’ experience within five star hospitality to his role at Ashford Castle, in addition to numerous industry awards and accolades. Prior to his appointment, Pierre was Head Sommelier at the five star Lanesborough Hotel in London and Head Sommelier at the two Michelin star awarded Restaurant Patrick Guilbaud. In 2017, Pierre was awarded the Advanced Sommelier Certificate from The Court of Master Sommeliers, achieving Top of the Class.

From Around the World Near the southernmost point of Africa lies a valley named Hemel-en-Aarde (Heaven and Earth) framed by mountains and within sight of the ocean, with frost-free, mild weather and the most perfect clay-shale vineyard soils. Established in 1989, Bouchard Finlayson is a boutique winery with 22 hectares under vine and is dedicated to making wines of outstanding quality. The vineyard, a sister property of Ashford Castle, is located in the wine region of Walker Bay, an hour and a half from Cape Town, behind the enchanting coastal town of

Hermanus. Here, winemaker Peter Finlayson, renowned for being the South African Pinot Noir pioneer, produces some of the finest wine the southern hemisphere has to offer. The Reagan Presidential Suite Named after President Reagan, who stayed at Ashford in 1984 as a personal friend of former owner John A Mulcahy. The Reagan Presidential Suite is located in the oldest wing of the castle, boasting an original fireplace, a stunning antique George III style four-poster bed, original portrait art, individually - sourced antiques and spectacular floor to ceiling views of Lough Corrib. This Suite offers two bathrooms and can be combined with two adjacent rooms to complete a private three-bedroom wing of the castle. 26

HEAD CHEF, THE LODGE AT ASHFORD CASTLE Born and bred in Connemara, it was a love of the land that drew Jonathan into the kitchen. “I always wanted to be a Chef. I was always drawn towards it and my dad’s a farmer, so we farmed our own land and grew everything the family needed.” When he was brought on to head the kitchen at The Lodge at Ashford Castle, Jonathan didn’t hesitate to put his own stamp on the food there. “It’s evolved over the years but really, it’s all about local artisan produce and foraging! Chefs forage and then decide what is being cooked that evening!” But although the chefs forage together in the morning, the styles of food they produce are different. At The Lodge at Ashford Castle, Jonathan has created a strong contemporary menu. “Wild, local and seasonal would be the kind of buzz words we use.” Gaining a strong reputation throughout his career and winning Best Chef in Connacht 2018 at the Irish Restaurant Awards, Jonathan has his own reasons for staying on at The Lodge at Ashford Castle. “For me it’s two things, the surroundings would be a very big thing for me because they’re very similar to where I grew up and I have polytunnels in the garden which I love. Mrs Tollman is really good to work for, she’s giving us everything we need. I’ve never had an employer like her.” With a team of 17 chefs, The Lodge at Ashford Castle’s reputation grows every year but Jonathan likes to keep goals consistent and aspirations simple.

The Claddagh originated in the village of Claddagh located outside of the old city walls of Galway in the 17th Century. Garden The gardens at Ashford Castle were largely created by the Guinness family who occupied the estate for approximately 100 years. Since the castle was lovingly restored by the Tollman family and the Red Carnation team, a programme was set up to restore and develop these gardens. The Tollman Garden, formerly known as the Sunken Garden, is one of several formal gardens along the main terrace walk in the grounds of Ashford Castle and is among the finest of the many beautiful country house gardens found in Ireland.

Explore Fiona Finnerty ASSISTANT ACTIVITIES COORDINATOR After completing my degree in Business in Equine Studies in Athlone Institute of Technology, I worked in one of Ireland’s top stud farm’s, Kedah House Stud, where I developed a passion for customer service. From there I continued to pursue a career as an Equine Instructor. After completing an intense year of exams in Clonshire Equestrian Centre, County Limerick, I successfully gained an International Level 1 qualification that is recognised in 87 counties throughout the world. From there I started working in Ashford Equestrian Centre here on the estate. As I come from a farming background in the eastern part of County Galway, I have always had a love of the outdoors and the activities it can offer. Golf Ashford Castle is home to a beautiful nine-hole, 2,996-yard par 35 parkland Golf Course, providing the perfect environment for golfers of all ages to hone their skills. Equestrianism The Ashford Equestrian Centre is situated within easy walking distance of the Castle on the Ashford Estate. Archery The Ashford Archery package allows participants to undertake the ancient sport of archery that has been played by kings and lords for centuries. The package was set up according to the National British Grand Championship guidelines and involves rubber 3D targets and the use of arrows that are the only ones of their kind in Ireland. The activity takes place at the Equestrian Centre and can be taken into a 50m indoor centre, leaving the sport free from the unpredictable weather of the Emerald Isle.

The extensive restoration programme at Ashford Castle began in 2013, the year it was purchased by the Red Carnation Hotel Collection for €20 million. A further €75 million was committed to the restoration and renovation of the property under the direction of Mrs Beatrice Tollman, President and Founder of the Red Carnation Hotel Collection. The design team was supported by Mrs Tollman’s daughter Toni Tollman, the Red Carnation project team, which included Brian Brennan, Director of Projects and architect Philippe Bonino. Project managers were appointed and local man Edward Deacy was the main building contractor in the development of the new and improved facilities. Ashford Castle, in existence since 1228, has welcomed royalty, celebrities and Heads of State, including George V (then the Prince of Wales), President Ronald Reagan, Brad Pitt, John Wayne, Fred Astaire, Barbara Streisand, John Travolta, and many more. “We are so proud of

this fabulous property - our first in Ireland - and we applaud the work of the many Irish craftsmen and artists who have worked fastidiously with our team to restore Ashford Castle to this glorious state,” said Mrs Tollman. General Manager Niall Rochford was a constant presence and guiding force throughout the entire restoration period, along with his team, several of whom have worked at the hotel for between 20 and 40 years. Niall has been the General Manager at Ashford Castle for 15 years and was awarded the prestigious Hotel Manager of the Year 2013 Award by the Irish Hospitality Institute Founders. “Every inch of the glorious Castle estate, parts of which date back to 1228, has been carefully examined, restored and enhanced, reflecting the award-winning five-star luxury experience for which Red Carnation is renowned,” says Niall. “And the restoration was undertaken with the utmost of respect for the historic building. Each of the
71 guest rooms, 10 staterooms and suites, Presidential Suite and Hideaway Cottage have been completely refurbished with fabric wall coverings, antique pieces, exquisite fabrics, bespoke carpets, original artwork and marble bathrooms.” Modern technologies include I-luv speakers, electronic blinds, air conditioning, mood light dimming, USB chargers on the walls, and complimentary Wi-Fi throughout the hotel. Apart from the bedrooms, the existing public areas, such as the striking vaulted entrance hall and library, the Connaught Room, Prince of Wales Bar, Drawing Room and the Castle’s three restaurants – the George V Dining Room, The Dungeon and Cullen’s at the Cottage – have all been enhanced. “New additions include two stunning stone Irish wolfhounds at the entrance to the Castle, a magnificent suit of armour in the entrance hall, an antique lectern in the George V Dining Room and Murano glass chandeliers from

Venice throughout the building,” says Niall. “Wherever possible, materials and pieces have been sourced from local artisans and suppliers to reflect the hotel’s unique environment. Examples include the Prince of Wales bar which has been made from local Connemara marble and in-room toiletries by organic skincare range Voya from County Sligo. In addition, a variety of artefacts from the Guinness era of ownership have been sourced for display in the hotel, including Lady Ardilaun’s watercolours, as well as letters and other documents associated with the hotel’s colourful heritage.” Due to the age and scale of the Castle, the restoration required a complete overhaul of the building’s infrastructure, including stonework, windows and roofs. A new kitchen, closer to the dining room, was added to facilitate a more efficient and timely service. “The Falconry School, which was Ireland’s first, has been fortified, as has the Equestrian Centre,” 58
says Niall. “The walled and herb gardens have been tidied and the two tennis courts are now all-weather surfaces. The Castle’s nine-hole golf course has been treated to ensure that it offers the best playing conditions all year round. Fishing enthusiasts will have the expertise of one of six ghillies now on hand at Ireland’s only Orvis-endorsed property and all the necessary equipment and accessories can be hired or purchased from the on-site fishing and golf centre.” All of the facilities and the outdoor activities on offer at the estate can also be enjoyed by guests at The Lodge at Ashford Castle, the boutique four-star 64-bedroom sister hotel within the castle grounds which was added to the Red Carnation Hotel Group in 2014. There is an impressive array of new additions and amenities on the 350-acre estate. These include a 32-seater Cinema, Billiards Room, Cigar Terrace, and children’s games room. There is even a Lego butler service to keep younger family members entertained. New facilities also include a boutique and retail space, state-of-the-art Spa, Wine Cellars for private dining, and a luxury lakeside cottage. “The new retail space offers fashion items and outdoor wear, as well as pottery and Irish food-to-go for the many people who visit the estate in the summer,” says Niall. “Guests can work out in the new gym where a range of cardio and resistance equipment is on offer. The five spa treatment rooms offer a range of pampering therapies, including aroma stone massages, an invigorating body polish, detoxifying wraps and deep regenerating facials. The final piece of the restoration jigsaw was the transformation of the old coal bunkers from the time when the Guinness family owned the estate into wonderful Wine Cellars and wine tasting rooms that have a strong Downton Abbey feel. In addition, the old boat house on the shores of Lough Corrib is now a private and secluded suite.” Employment levels at Ashford Castle have risen to 400 (which includes The Lodge at Ashford Castle) to support the improved facilities at the hotel. “In the past, during high season, we would have employed 225 staff so it is a significant increase in employees

The staffing increase is throughout the property, from accommodation to food and beverage, front of house, HR, administration and maintenance. It is all about delivering a better and a consistent quality of service. All staff members have undertaken Red Carnation’s award-winning training and development programmes to ensure that the service delivery across the hotel is second to none.”
The Lodge at Ashford Refurbishment Originally known as Lisloughrey Lodge, The Lodge at Ashford Castle was built in 1865 by Lord Ardilaun to house the estate manager of the Castle and to accommodate a variety of guests including fishermen, walkers and friends of the family. Lord Ardilaun inherited the estate from his father, Sir Benjamin Lee Guinness who had purchased it in 1852. During Sir Benjamin’s tenure, two large Victorian-style extensions were added and he extended the estate to 26,000 acres, building new roads and planting thousands of trees. In 1939, the Castle was turned into a hotel and The Lodge became home to successive General Manager’s of the property. Purchased in 2014, The Lodge at Ashford Castle is now part of the award-winning Red Carnation Hotels Collection and offers mellow country house hospitality, artfully combined with chic contemporary style, to discerning travellers from all over the world. It benefited from an extensive refurbishment bringing all of the property’s facilities to an exceptional standard. The current General Manager of Ashford Castle, Niall Rochford, is the first manager of the property not to have made The Lodge his home. T
he unique beauty and character of the west of Ireland has the ability to utterly enthral those who gaze upon it. It can provide a sensory experience to overwhelm, perhaps even knocking coherent creative thought and impulse from the mind – but it also has the power to inspire. Where some have been content to enjoy the west simply for what it is, others have been inspired to create pieces of art that, over the years and decades, have gone on to define Irish culture and its impression upon the world. Some of the world’s most pivotal artists can trace aspects of their work to the west of Ireland, and here we take a look at a mere few.
Oscar Wilde PLAYWRIGHT
Oscar Wilde is one of Ireland’s most well-known novelists, poets and playwrights, with famous works including the play The Importance of Being Earnest, the novel The Picture of Dorian Gray, and the letter entitled De Profundis – written during the time of his imprisonment. While Wilde’s extravagant lifestyle and eventual arrest in adulthood is widely known, his childhood remains a little more hidden. The young Wilde in fact spent much time in the west of Ireland – specifically at Moytura House in Cong. The house was built by his father, William Wilde, and exposed the budding writer to elements of Gaelic culture and language. It is also here in the west that Wilde developed his own storytelling skills, listening as he did to local tales of folklore and history.

Explore John Millington Synge WRITER & PLAYWRIGHT
Dublin-born J.M. Synge was a key figure of the Irish Literary Revival. After studying at Trinity College and at the Royal Irish Academy of Music in Dublin, Synge pursued further studies from 1893 to 1897 in Germany, Italy, and France. In spite of his clear determination to spend time outside of Ireland, it was actually the Aran Islands off the coast of Mayo which served as an early muse for the writer. Following the advice of his friend, W.B. Yeats, Synge spent a summer on the islands, collecting stories and folklore, perfecting his Irish, and enjoying the landscape. He subsequently returned over the next five summers and many of his works were inspired from his experiences there.
Harry Clarke
STAINED GLASS ARTIST Just as J.M. Synge would spend his summers developing and nurturing his craft upon the Aran Islands, so too would stained-glass artist Harry Clarke. Clarke was born in Dublin and learned his craft in the city, but the impact of the Aran Islands upon his works cannot be underestimated. Clarke was a painter and illustrator too, and his only oil paintings were of the Aran Islands’ land and seascapes. However, he is of course most well known for his stained-glass designs, and elements of Aran scenery, flora, and fauna can clearly be found within them. His vibrant works can be found all over Ireland, but one may frequently stumble across one of his designs in various places in the west. In Mayo, his windows can be found at St. Patrick’s Church in Kilmaine, at St. Mary’s in Ballinrobe, at Roundfort Church in Hollymount, and at St Mary of the Rosary Church in Cong. In Galway, one might find his work at St Michael’s in Ballinasloe, and in Clare at St. Flannan’s in Killaloe.
Paul Henry ARTIST
Paul Henry is one of Ireland’s bestknown artists, noted in particular for his depictions of the west of Ireland’s unique landscape. He was born in Belfast in 1876, but moved to Achill Island in 1910 and remained there for a decade. His works often depicted the landscapes of Achill Island and of Connemara, and can be considered as typifying a vision of Ireland that was prevalent in the early years of the new Irish Free State. Indeed, there are very much echoes of J.M. Synge’s time spent on the Aran Islands in Henry’s decision to move to Achill, and the two undoubtedly owe the significance of much of their work to the sensory experiences and way of life of the islands along the western coast. 2019 | ASHFORD CASTLE MAGAZINE |

John Ford
FILM DIRECTOR Widely considered to be one of the most influential film directors of all time, John Ford’s career spanned over five decades and led him to win the Academy Award for Best Director four times – a record that remains unmatched to this day. He is perhaps remembered most for his many classic Westerns including The Searchers and Stagecoach, but it is his 1952 classic The Quiet Man which presents the man’s appreciation of the Irish west. Based on a short story by Co. Kerry author Maurice Walsh, The Quiet Man tells the tale of a retired American boxer, played by John Wayne, who returns to the fictional village of his birth, Inisfree, where he finds love. Many of the film’s outdoor scenes were shot in counties Mayo and Galway, with some even taking place on the grounds of Ashford Castle itself.

Bill Whelan (left) is an Irish composer and musician best known for composing the music behind Riverdance. Although born in Limerick, the influence of the west is evident throughout his career, with two of his greatest compositions entitled The Spirit of Mayo and The Connemara Suite. The Spirit of Mayo is seen as a precursor to Riverdance. Whelan himself believes that the nonnarrative structure within Riverdance is appropriate to Mayo, suggesting that the themes the piece expresses begin like a river, before flowing out into the sea, continuing back into the clouds and then finally falling again as rain. This is precisely the sort of imagery that is bound to the west coast.
The McDonagh Brothers WRITERS & DIRECTORS
Brothers John Michael and Martin McDonagh were born in London, but have both gone on to create works that take inspiration from the landscapes and characters of the west of Ireland. The brothers’ father was from Galway and their mother from Sligo, so the two have always held a close connection to the west, which is perhaps most evident in the younger brother, Martin’s first six plays, which were split into two trilogies; the first trilogy set in the beautiful Co. Galway village of Leenane, and the second set across the Aran Islands. He has been described as one of the most important living Irish playwrights. His brother John Michael has expressed his fascination with the west through his films The Guard and Calvary, which include shots of the beautiful land and seascapes of Sligo and Galway, and characters with distinctly western eccentricities. 2019 | ASHFORD CASTLE MAGAZINE |

Lady Gregory DRAMATIST
Lady Gregory was an Irish dramatist, folklorist and theatre manager who, together with W. B. Yeats and Edward Martyn, co-founded the Irish Literary Theatre and the Abbey Theatre, and who wrote numerous short works for both companies. Lady Gregory is remembered for her work behind the Irish Literary Revival, and her home at Coole Park in County Galway served as an important meeting place for leading Revival figures. The walled garden contains an autograph tree, a copper beech that is engraved with the initials of many of the leading figures of the Irish Literary Revival, including Yeats, Martyn, George Bernard Shaw, J. M. Synge and Seán O’Casey. Lady Gregory’s passion for the Irish language and the folklore of the west of Ireland is said to have been awoken by a trip to Inisheer in the Aran Islands in 1893, which in turn led to some of her most revered works, including ‘A Book of Saints and Wonders’.
Jack Butler Yeats ARTIST
Of course, William was far from the only member of the Butler Yeats family to achieve literary or artistic eminence. His father, John Butler Yeats was himself an acclaimed artist, and his sisters Elizabeth Corbet and Susan Mary “Lily” Yeats were successful in their own right in the fields of publishing and embroidery. However, it is perhaps his younger brother, Jack Butler Yeats who is the most well-known and revered. Jack, like his brother, was inspired by his childhood in Sligo, with many of his earlier works depicting landscapes and figures from the west of Ireland. The influence of the west is immediately evident upon studying his work, with several paintings presenting the ocean, mountainscapes and beautiful, cloudy skies – all distinct features of the west.
William Butler Yeats POET & PLAYWRIGHT
W.B. Yeats was one of the foremost figures of 20th century literature, and was particularly pivotal in driving the Irish Literary Revival of the late nineteenth and early twentieth century forward. Despite being born in Sandymount in Dublin, Yeats came to consider his mother’s native Sligo as his childhood and spiritual home after he and his family relocated there shortly following his birth. The natural beauty and local folklore of his spiritual home served to inspire the budding writer, and the west’s influence can be seen throughout the course of his career. The twelveline poem Lake Isle of Innisfree, first published in 1890, perhaps serves as the clearest example of Yeats’ affinity with the west, with the poet meditating upon the peace and quiet that the island of Innisfree affords. 2019 | ASHFORD CASTLE MAGAZINE |

Connemara National Park
Opened in 1980, the Connemara National Park holds scenic views, nature trails and family picnic areas, along with an abundance of native wildlife dotted across the varied mountain and bogland area, the largest of which is the famous Connemara pony.
Across the west, you won’t be short of festivals to attend throughout the year, catering for interests from food to blues music. It’s all lights, camera, action at the Galway Film Fleadh from 10th to 15th July, one of the most important events on Ireland’s cinematic calendar, attracting film submissions from around the globe. As a hub of culture and the arts, the west will also host the 41st Galway International Arts Festival in July 2019, with highlights including Gavin James, Passenger and The Coronas. With a spotlight on fashion, live entertainment and, of course, horse racing, many consider The Galway Races the must-attend event of the summer season, taking place from Monday 31st July to Sunday 6th August. The kids won’t miss out either, with plenty to keep them occupied across the region. The Sunrise Children’s Festival in Roscahill, Co Galway in July is a unique weekend festival celebrating music, creativity and the natural world. Castlebar’s RoolaBoola always goes down a treat over the October Bank Holiday weekend, with children’s theatre, films, exhibitions and lots of hands-on arts workshops. For foodies, the Galway International Oyster and Seafood Festival from September 22nd to 24th is a must, celebrating the end of summer in style across the beautiful city. Explore Joe Hogan Baskets
Joe Hogan has worked as a basketmaker in Loch na Fooey since 1978. His practice allows him the opportunity to live rurally and be involved in the entire process, from growing the material to making a finished product of the highest quality. His home and landscape have had a profound influence on the style and diversity of Joe’s work, encouraging him to explore and develop new designs, many of them influenced by the indigenous baskets of Ireland. Hogan makes both functional and sculptural or artistic baskets with many of the sculptural baskets involving the use of bogwood from an area of wild, isolated bogland near his home. Others involve the use of twigs from birch, bog myrtle, catkins, lichens and other wild material. This work is prompted by a desire to develop a deeper connection with the natural world.

T
he Galway Hooker is a traditional wooden sailing vessel that’s unique to the area. Their distinctive sharp black wooden bowed hull and single mast flying a russet mainsail and foresails are designed to traverse the turbulent seas off of Ireland’s west coast. Constructed from oak and larch their bulging hulls are designed to ride over waves while their narrow fish-like rears make them the fastest and most agile ocean-going cargo vessel. They were actually used as both fishing vessels and to ferry cargo between Galway Bay and the islands. Capable of carrying up to 15 tons, their outward journey saw them loaded with turf, manure, seaweed or livestock and their return hauling a cargo of limestone from the islands. Weatherproofing the sails against the inclement elements with

a membrane of butter and tar gave the sails their extraordinary colour. At its height, a fleet of 100 Galway Hookers were working out of Claddagh. The onset of the Great Famine and the events that followed decimated both the fleet and the local population. This was a tragic period of Irish history that left deep scars on the locality, from which the fleet never recovered. More ambiguous is the history of the name. Although uncertain, there are strong indications that it is either a derivative of a medieval boat known as a Holker, or that it came from the hook and line of the fishermen who manned the boats. The Hooker journeyed on when Irish emigrants, fleeing the famine, settled in Boston and used their skills to build similar boats, these were known as Boston Hookers or colloquially as Paddy boats. The last of the working Galway Hookers disappeared in the 1970s. However, a resurgent interest in them as sailing boats means that they are still built locally by skilled craftspeople. The
boats are used mainly for pleasure and fall into four size ranges from the Bád Mór which is from 10-14m in length to the Leath Bhád, Gleoiteog and the diminutive Púcán. Since 1979 the Cruinniú na mBád (gathering of the boats) regatta between Kinvara and Connemara has been held every August. The timing of its founding, shortly after the last Galway Hookers had ceased working, was fortuitous, as the traditional crafts of the skilled boat and sail-makers were saved and could be passed on to future generations. Over the course of the festival, up to 100 Galway Hookers gather and race in four classes according to size. This very atmospheric and culturally rich festival attracts sean nós singers and traditional Irish musicians who perform in the local pubs. Marine Life Almost one third of the world’s species of whales, dolphins and porpoises, collectively known as cetaceans, have been recorded in Irish waters. In 1991, the Irish government declared Irish waters a whale and dolphin sanctuary – the first of its kind in Europe – and the Wild Atlantic Way is at the very heart of some of the best places to see these beautiful creatures. Of the 24 cetacean species that have been recorded in Ireland, 17 have been seen along the Wild Atlantic Way and eight can be considered either common or occasional visitors, and in the right weather, with a little luck, may be viewed along the route. There are a number of charter companies who organise whale, dolphin and shark watching tours locally. Cetaceans tend to prefer wild and pristine habitats, and Irish whales and dolphins are no different. The rich and diverse waters provide both year-round sanctuary for some species and a seasonal refuge for others migrating through Irish waters. These range in size from the small harbour porpoise to the planet’s second largest animal, the glorious giant fin whale. The eight species most likely to be encountered are the harbour porpoise, common dolphin, bottlenose dolphin, Risso’s dolphin, killer whale, minke whale, humpback whale and fin whale.

KILLER WHALE
Easily identifiable by their distinctive black bodies with oblique white markings, killer whales or orcas travel in family groups known as pods. They are apex predators who feed on fish and other marine mammals such as seals, but they have no predators themselves. Measuring up to eight metres in length, the average lifespan of a killer whale in the wild is 50 years for females and 29 years for males, the oldest recorded female lived to be 105.
MINKE WHALE
The smallest whale in Irish waters, the Minke is distinctive with a sharply pointed snout and no obvious blow. They are usually seen alone or in small groups of two or three. Their diet is the most varied and includes capelin, sand eel, herring cod and squid. Most frequently spotted off the west coast between May and October.
HUMPBACK WHALE
Seen all year round in Ireland, the sightings peak from August through to December. Studies have detected whales singing off the western coast, which may be proof that this is their migration corridor. Male whales produce complex, structured songs to attract a mate. This 94
energetic species of whale can travel at up to 27km per hour and as it prepares for a deep dive, only the tail is visible above water.

FIN WHALE
The most widely known species, they travel in small groups and are very active close to the surface of the water, with up to a third of their body appearing above the surface when they swim slowly. They often jump clear of the water two to three times per minute when travelling at speed. They’ve been seen performing quite acrobatic feats, including spinning and turning during jumps, and surfing breakers!
This is the second largest mammal after the blue whale, measuring between 23 and 28 metres when fully grown and weighing up to 114 tonnes. Its slender body allows it to travel at speeds up to 49km/ph. The fin whale is a filter feeder, consuming small schooling fish, squid and crustaceans. Its only predator is the killer whale.
HARBOUR PORPOISE
The most widespread species of porpoise in Irish waters, they are largely associated with continental shelf waters and are regularly seen in shallow bays, estuaries and tidal channels. Seen less between March and June when they move further offshore to calve, they appear frequently off headlands on the south and west coast from June to September.
COMMON DOLPHIN
Highly playful and vocal, these shortbeaked dolphins travel in herds and are often seen with other species including alongside large whales. They are known to swim alongside boats and ships. They

These have a relatively large body and are about 10 feet long and have a brown-grey dorsal side and a cream ventral side. They feed nocturnally, almost exclusively on squid. They’re sociable animals travelling with other cetaceans and they can been seen surfing in the wake of grey whales. IVY-LEAVED BELLFLOWER The ivy-leaved bellflower (Wahlenbergia hederacea) has small, pale-blue, veined, bell-shaped flowers and its leaves have the same shape as ivy leaves. This flower is quite rare across Ireland and is only found in County Mayo along the riverbanks of the National Park.
Ballycroy National Park Ballycroy National Park is one of the last intact active blanket bog systems in Ireland and Western Europe, an important scientific and scenic feature of the Irish landscape. Along with this, the park holds a variety of important habitats and species including alpine heath, upland grassland, heath and lakes and river catchments. Greenland whitefronted geese, golden plover, red grouse and otters are just some of the important fauna found within the Park. Further still, the land itself is a designated conservation area where rare and important species and habitats are protected by legislation. 96
Habitats There is a diversity of habitats within the National Park. On the highest peak, Slieve Carr, alpine heath is found. Other habitats include upland grassland, wet and dry heath, lakes, and the Owenduff and Tarsaghaun rivers that flow into the sea northwest of Ballycroy. However, with as much as 2000mm of rainfall per year, the predominant habitat is the active Atlantic blanket bog, which covers much of the park area.
SUNDEW AND BUTTERWORT Sundew and butterwort are insectivorous plants that have adapted to the nutrient poor bog environment by trapping and digesting insects caught on their leaves.
FLORA
A variety of interesting plants are found within the bog habitat. These include sphagnum mosses, black bog rush, purple moor-grass, bog cotton, deergrass, cross-leaved heath, bell heather, white beakedsedge, bog asphodel, bog myrtle, orchids, lousewort, milkwort, lichens, sundew and butterwort. The lake margins support water lobelia, pipewort, common spike-rush, and bulbous rush. Rare alpine plants such as purple saxifrage, alpine meadow-rue, least willow and stiff sedge, more commonly found at altitude in colder areas of Europe have been found in the mountains of the national park.
BOGBEAN The blanket bog contains an extensive mosaic of bog pools, which are important habitats for bogbean.

FAUNA
Mammal species found in the park include the fox, badger, mountain hare, otter, feral American mink, pygmy shrew and bat species including the most common bat found in Ireland, the pipistrelle. Non-native red deer, which were introduced in the locality of Bellacorick in recent years, can now be found on the margins of the park. Pine marten are present in the conifer plantations on the boundary of the park.
PYGMY SHREW Ireland’s smallest mammal, the pygmy shrew, was brought here several thousand years ago from Britain by early human settlers. This tiny creature weighs around 6g and munches 1.25 times its own body weight in bugs and spiders every day with its red-tipped teeth. The red tips are caused by iron deposits, which give them protection from wear and tear.
IRISH MOUNTAIN HARE This is one of the oldest indigenous species of mammal in Ireland and is a protected species. It has a reddish-brown coat and pure white tail. However, unlike their Scandinavian relatives, they don’t grow a white winter coat. Their natural predators are foxes, stoats and birds of prey. The adult hare’s bounding gallop can reach 70km/ph and their wide set eyes give them almost a 360-degree field of vision.
BIRDS
The national park supports a variety of bird species including dippers, common sandpipers, woodcock, dunlin, skylarks, meadow pipits, ravens, hooded crows and whooper swans. Birds of prey found include kestrels and sparrowhawks, while rare species such as merlin and peregrine falcon are also resident. Hen harriers are winter visitors. Red grouse are resident in the park and rely on a mix of different heights of heather. Greenland white-fronted geese are winter visitors from Greenland from October until April. They feed on the roots of bog cotton and white beaked -sedge found on quaking 98
bog. Golden plover are common winter visitors to Ireland, but only a small population breed in the summer on the upland areas of the west of Ireland including Ballycroy National Park. PEREGRINE FALCON The short hooked bill and compact, powerful body of the peregrine falcon combined with a flying speed of 240km/ ph make this the fastest animal in the world and a formidable predator. It swoops from high above its intended prey, often birds in flight, the speed of the impact and it’s claws delivering the final blow.
RED GROUSE A distinctive red flash on the head of this plump ground bird is visible on the male in mating season. Found mainly in bogs and upland sites where there is heather moorland, their numbers have been declining in recent years. They build their nests on the ground. It’s rare to see them in flight unless flushed by predators but they can take off with explosive speed. Admission to Ballycroy National Park is free and access is via the visitor centre, which features an interactive exhibition with detailed information about the various habitats. www. balllycroynationalpark.ie

RIVER LIFE
The Owenduff and Tarsaghaun rivers are renowned for salmon and sea trout while the rivers and lakes contain brown trout. Otters feed in the rivers on eels and salmon and can be occasionally seen on the blanket bog among bog pools. The bog pools are an important habitat for much of the invertebrate life in the Park. The predatory larval stages of dragonflies and damselflies feed on waterborne insects before metamorphosing into winged adult dragonflies and damselflies. These colourful and distinctive insects are good indicators of the diversity of the Park’s ecosystem.
WILD SALMON Irish Atlantic salmon spend their juvenile years in rivers before migrating to the sea to mature. When they are ready to spawn they return to their river of origin. They can locate their destination using the Earth’s magnetic field and by detecting the pheromones of other salmon from that river. Their ability to leap over weirs, waterfalls and other obstacles while swimming upstream makes this journey a visual spectacle.
OTTER The Irish otter population is relatively stable compared to the steep decline seen in other European countries. Rarely spotted in the wild, these largely nocturnal animals inhabit rivers and streams feeding on salmon, trout, eel and sometimes frogs and crayfish. They remain in their holt during the day, emerging at dusk to hunt. They use their long whiskers to detect prey in the dark.

From the moment you step into the Front Hall with its breathtaking barrel-vaulted ceiling and soft, rose-coloured hues, the magnitude of the home’s historical and architectural significance becomes clear. Explore 300 years of Irish heritage and a magnificent collection of family portraits and local landscapes by artists such as James Arthur O’Connor, Chalon, Barret, Gibson, Opie, Brooks and Lavery. The grounds surrounding Westport House are an eclectic fusion of natural wonders, architectural grandeur and fascinating antiquities. KYLEMORE ABBEY has a history that is truly remarkable. The fate of its occupants, from moments of romance and happiness, to sadness and courage, have all combined to create a fascinating history spanning over 150 years. The abbey started life as Kylemore Castle, the home of Mitchell Henry, a wealthy doctor from London. He moved to Ireland and became a politician, becoming an MP for County Galway from 1871 to 1885. Designed by James Franklin Fuller, aided by Ussher Roberts, construction of the castle began in 1867, and took four years to complete. The castle

was sold to the Duke and Duchess of Manchester in 1909, who resided there for several years before being forced to sell the house and grounds because of gambling debts. The Abbey is home to a community of nuns of the Benedictine Order who came here in 1920 after their abbey in Ypres, Belgium was destroyed in World War I. The Benedictine Community opened a world-renowned boarding school for girls and began restoring the Abbey, Gothic church and Victorian walled garden to their former glory. You can now enjoy woodland and lakeshore walks that will take you on a beautiful journey through the 1,000-acre estate. THE CÉIDE FIELDS in north Mayo are the world’s most ancient field systems, over five and a half millennia old. This unique Neolithic landscape has changed our perception of our Stone Age ancestors. The remains of stone field walls, houses and megalithic tombs are preserved beneath a blanket of peat over several square miles. They tell a story of the everyday lives of a farming people, their organised society, their highly developed spiritual beliefs, and their struggle against a changing environment beyond their control. Discovered in the 1930s by a local teacher, Patrick Caulfield, it wasn’t until 40 years later, that his son Dr Seamus Caulfield, an archaeologist, understood the significance of the site. Research and exploration uncovered evidence of a peaceful community who were farming and working collaboratively to create field systems perched on the cliff’s edge. Eventually a visitors’ centre was built, which provides insights into the way of life here five millennia ago. It incorporates a panoramic viewing platform with dramatic views of the land and seascape. Guided walks give visitors the chance to probe the hidden walls for themselves.
Many visitors to Ireland come because they have a family connection, recent or distant, and they’re curious to find out more about their roots. To get started, go back through the records in your own country to identify your emigrant ancestors and find names, approximate dates of birth, parish or county of origin, religious denomination, names of ancestor’s parents, name of ancestor’s spouse and the date and place of marriage, as these will all prove valuable on your search. Records to check include birth, death and marriage certificates, census returns, city directories, church records, gravestone inscriptions, newspaper obituaries, wills, naturalisation papers and passenger lists. National repositories of material are available to those who wish to trace their ancestors and genealogy centres are located around the country with staff who will assist you on your journey. The National Archives located in Dublin (Tel: + 353 1407 2300) is an ideal starting point due to its genealogy service. Operated by the Association of Professional Genealogists in Ireland (APGI), this service is provided free of charge to personal callers and they can advise you on where to go and how to use relevant records. Connacht Whiskey DISTILLERY Based in Ballina, Co Mayo, the Connacht distillery was formed by the Irish-American Stapletons when they reconnected with their Irish cousins. The Stapletons decided to build an independentlyowned Irish distillery that would produce craft products of the finest order. Two friends joined them to make the dream a reality. One was an award-winning master distiller who had won numerous international gold medals and also custom designed stills, the other had over 30 years experience in the U.S. spirits industry. Explore The Burren Smokehouse SMOKED SEAFOOD
The Burren Smokehouse is a family-run business set up in 1989 by Birgitta and Peter Curtin. After researching smoking traditions in Ireland and Sweden the idea of the Smokehouse was born and since then, the pair have transformed the business into an international operation. Brigitta and Peter are known for producing an expansive range of products that includes rainbow trout and mackerel, however, it’s their organic smoked salmon that they are famous for. The Burren Smokehouse salmon comes both hot and cold smoked and the entire smoking process, from the moment the salmon arrives at the smokehouse, is meticulously overseen by master smoker Peadar Reilly. The temperature never rises above 35°C during the smoking and traditional oak shavings are used to give the salmon a distinctive flavour.
Carrowholly CHEESE MAKERS
Andrew Pelham Burn became involved in cheese following a period working with a local Dutch cheesemaker who was making Carrowholly cheese at that time. He took over the operation in 2001. All the cheeses are hand-crafted in the small village of Carrowholly, outside Westport in Co Mayo, on the fringes of the Atlantic. Carrowholly Original is a hard, Gouda-style cheese made on the shores of Clew Bay on Ireland’s scenic Atlantic coastline. It is matured for six to nine months to give a firm texture, with a darker coloured paste and a strong, multi-layered flavour. The crunchy casein crystals that develop in aged cheeses add further layers of texture and flavour. This raw cow’s milk cheese is available enrobed in a russet-coloured wax coating. Also there are numerous flavours; nettle, pepper, along with garlic and chive to choose from. Carrowholly cheese is available through McCormack’s Butchers and Christy’s Harvest, Westport and Café Rua in Castlebar.
Galway Hooker BREWERY The brewery was established in 2006 by two cousins, Aidan Murphy and Ronan Brennan. Since then, they’ve been producing exciting and innovative beers bursting with flavour and character. The beers are brewed using only malt, hops yeast and water, devoid of any preservatives. Galway Hooker was the first permanent pale ale to be produced in Ireland and is widely regarded as a leading light in the Irish craft beer sector. It has now firmly established itself as a favourite amongst beer enthusiasts and has received numerous awards, including being twice named as Ireland’s Best Beer by the Bridgestone Irish Food Guide and at the Irish Craft Brewers Awards. Patrick was a fifth Century Christian missionary who is credited with bringing Christianity to Ireland from Roman Britain. At the time Celtic polytheism was the most widely practiced religion. Legend has it that he was captured when he was 16 by Irish pirates and taken to Ireland where he was kept as a slave for six years, working as a shepherd. His time in captivity heighted his spiritual development and after escaping from his captors and returning home, he studied and was ordained as a priest before he had a vision which ultimately saw him return to Ireland to preach Christianity, famously using a shamrock to explain the Trinity of father, son and holy ghost to the masses. Patrick became the first Irish Bishop of Armagh and Primate of Ireland and is now the Patron Saint of Ireland. The legend extends to him banishing snakes from Ireland by driving them into the sea, however there is no evidence that snakes, other than the harmless grass snakes, ever inhabited Ireland. Saint Patrick’s Day is a national holiday in Ireland and is celebrated on the 17th of March, which marks the date of his death.

the centre of several of the world’s great religions, one finds the concept and the practice of pilgrimage. Essentially pilgrimage involves the idea of a journey, walking in its earliest practice, to a place of particular significance, often a sacred place, a place apart from the world. It is usually accomplished in a sacred time, a time that is somehow outside ordinary time, a time set apart from the temporal cycles of life. It can certainly be linked to the understanding of life itself as a journey, which leads to another place, a place beyond, set in another kind of time, or perhaps even out of time. In its religious sense, the journey is often a kind of seeking. It may be seen as part of our deep desire to move beyond the boundaries of the quotidian, for glimpses, perhaps, of an ultimate reality or at least another perspective on our ‘normal’ life. In purely religious terms, pilgrimage is rooted in the deep desire to encounter what the great scholar of religion Mircea Eliade (1907-1986) calls the totally other, which he also refers to as the really real. In terms of a more contemporary spirituality it can also express the desire to encounter the parts of the self we have perhaps lost touch with, the real self that lies somewhere beyond the persona that has been constructed for us; that is, as a Buddhist might express it, beyond the illusion of self. In the understanding of Eliade, all religious festivals, including pilgrimages, seek to bring to life sacred events from the mythical origins of humankind. In order to fully participate in them one is called to step out of ordinary time into sacred time, the

time of origins. Sacred time is a time that is outside our modern, often frenetic, 24/7 year-round cycle, and so pilgrimages like other religious festivals occur periodically, often at the same determined time every year or every few years. Like all ritual, they are usually carried out in exactly the same timeless way. Over the centuries and into our own time, much of this has also been the context of the pilgrimage to Croagh Patrick. It draws on many of the common elements of pilgrimage the world over and brings them together on what I have described elsewhere as “this wind-blasted mountain, this Atlantic Tabor.” It is a relatively small, local pilgrimage, drawing the majority of its annual July pilgrims from a radius of about 80km, coming often literally from within sight of the holy mountain in an age-old tradition. The preoccupations of its pilgrims may have changed somewhat over time; it is perhaps less grimly penitential than in the past although that very Irish characteristic remains, but it is almost always deeply personal and, as with all pilgrimages, it is reflective of the concerns of the pilgrims of our own time all over the world. People bring to pilgrimage what they are even if they are not always able to articulate it. They PEOPLE BRING bring the various and disparate threads of their lives and seek to TO PILGRIMAGE reconcile them into a whole that WHAT THEY ARE will make some kind of sense EVEN IF THEY ARE in a changing world that often NOT ALWAYS ABLE seems confused. Croagh Patrick TO ARTICULATE IT. has much in common with all pilgrimages everywhere; it is still a crossing, a stepping out in the search for an encounter with the totally other and some kind of coming together of the self. In this sense, it continues to appeal to modern sensibilities, often to those whose relationship with ‘organised religion’ is tenuous or even non-existent.
