One thing that we have become particularly renowned for is Mrs White’s Afternoon Tea which is served in the Castle between 1pm and 4pm daily – it is a treat not to be missed! The Estate offers incredible activities such as golf, with a driving range and practice areas, clay target shooting, archery, biking trails, falconry, carriage rides, fishing, boating, jogging trails, tennis, and an absolutely fabulous Spa in the main Castle. The Leisure Centre, located in the Golf & Country Club, has a 17 metre swimming pool, sauna and steam rooms, and a fully equipped gym. Our Falconry School is also not to be missed; the experience amazes our guests, time after time. r omoland Castle, one of the most famous baronial castles in Ireland, was the ancestral home of the O'Briens, Barons of Inchiquin, who are one of the few native Gaelic families of royal blood and direct descendants of Brian Boroimhe (Boru), High King of Ireland in the 11th century.
1543 The clan's chief and 57th King of Thomond, Morrough O’Brien, was forced to surrender his royalty to King Henry VIII, becoming the Baron of Inchiquin and First Earl of Thomond.

The story of Dromoland Castle began in 1002, when Brian Boru ruled Ireland as High King from his throne in Killaloe.
His son, Donough O’Brien controlled Dromoland as a defensive stronghold, and for the next 900 years, the O’Brien clan lived and ruled from Dromoland Castle.
Sir Donough O’Brien moved the most powerful branch of the O’Briens to Dromoland. An astute man – and reputed to be the richest in Ireland – he managed to avoid declaring for either King James II or King William.

The second Castle/house at Dromoland was built between 1700 and 1730. It was more residential in appearance with a design of the Queen Anne period. The Queen Anne Court, the charming quadrangle of 29 guestrooms, is a century older than the rest of today’s Castle.
The Castle was under the stewardship of Sir Edward O’Brien. The second Baronet was revered as a famous racehorse owner and trainer and he built the turret on the hill opposite the entrance to the Estate to watch his horses race. He once gambled the Estate on a horse race but mercifully racehorse Sean Buis won the race and saved the Estate. Buis is buried under the temple, 100 yards from the old entrance to the Castle.

1803 Dromoland Castle was the birthplace and boyhood home of William Smith O’Brien, MP (1803-1864).

1921 The wealth of the Barons of Inchiquin had dwindled after a series of Land Acts saw them compelled to sell their tenanted farmlands, their main source of income. The Castle had survived the troubled times of Ireland’s revolutionary war against Britain.
1962 In 1962, Lord Inchiquin sold the Castle, along with some 330 acres of surrounding land, and the hunting and fishing rights to Mr Bernard McDonough, an American industrialist, whose grandparents were born in Ireland. Conor O’Brien, the 18th Baron, and his family live in Thomond House and continue to farm and run part of the Estate as a sporting and leisure estate.
1929 After the death of the 15th Baron of Inchiquin in 1929, Dromoland was supported mainly by the personal wealth of his widow, Lady Ethel Inchiquin, an heiress, whose portrait, painted by Herbert Draper, hangs near the staircase in the Castle’s hall.
The Castle underwent major renovations to transform the ancestral home into a luxury hotel. When the Castle was officially reopened as a resort hotel, visitors who remembered it from the days of the Inchiquins marvelled at the preservation of its stately, warm and cheerful country house atmosphere.
1987
After Lady Ethel’s death in 1929, her oldest son, Sir Donough O’Brien, the 16th Baron of Inchiquin managed to maintain Dromoland Castle as a traditional ancestral home for more than 20 years.
In 1921, however, IRA leaders in Dublin marked Dromoland Castle for destruction. Sabotage orders were reversed at the last minute at the urgent request of local IRA leaders in County Clare, who argued that the Inchiquin Lords had been fair and benevolent in dealing with their tenant farmers.

The present main building of Dromoland Castle, was rebuilt between 1800-1836 and designed by the Pain brothers, famous architects of that period. The Castle was built by Sir Edward O’Brien, Lord of Dromoland and fourth Baronet, at great expense.
A consortium of mainly Irish American investors purchased the Castle and Estate in 1987. The Castle enjoys a worldwide reputation for excellence and is regarded as one of the great resorts in Europe.

NOREEN FETTON Rooms Division Manager Noreen Fetton began her career at Dromoland Castle as a Trainee Manager in 1990. “This involved spending time in each department in the hotel to gain the knowledge necessary to fulfil a managerial role,” she says. “During my training, I travelled to New York and worked in the St. Regis Hotel and in The K Club in Kildare before returning to Dromoland as Duty Manager in 1995. I progressed to Rooms Division Manager in 1999 and I am currently still enjoying this role. My responsibilities are primarily in the front of house and accommodation areas. I am one of a large group of people in the Castle with a long service record and I attribute this to the wonderful people that make up the staff, the beautiful, majestic and historic building that we have the pleasure of working in every day, and that no two days are the same. Our work is everchanging, which makes it challenging and exciting. We are constantly developing and enhancing our product to deliver the best service and experiences for all our guests. We meet fascinating people, exceptional characters, the ‘rich and famous,’ and we take it all in our stride! The most important aspect of my job is working to ensure complete guest satisfaction. To achieve this, I need the co-operation of every team member, and I am the person in their corner when the going gets tough. The encouragement and development of new staff, as well as acknowledging the loyalty of our long-serving team members, is hugely important to me. It is every individual working in tandem that makes us a success - and makes my job so rewarding.”

YOUNG GUESTS Young guests are very welcome at Dromoland, and we offer a range of services to help them feel at home. These include junior bathrobes, specially tailored children’s menus, a selection of board games, children’s TV channels and movies on request.
The Cottage Suite is a lavish open-plan apartment accommodation with meticulous attention to detail, and will appeal to those seeking contemporary luxury. It is comprised of an expansive bedroom with a seating and dining area, adjoining kitchen, private patio and a state-of-the-art bathroom. The spacious bedroom is flooded with natural light and has been adorned with plush contemporary fabrics and specially-commissioned furnishings. The bedroom features a king-size bed, an interactive television DVD and CD player with surround sound, marble fireplace and open fire, as well as large sash windows. The Maire Rua Suite Bedroom is also the only private room in the Castle to maintain an open log fire. Fitted with particular care, the bathroom has been fully tiled in warm, natural stone and features a super jet Jacuzzi with inset flatscreen television, two sinks, separate WC, original artistic impressions, warm fluffy towels, luxurious toiletries and mood enhancing light settings that will ensure an extended bath-time. In keeping with the rest of the suite, the kitchen has been fitted out to the very highest standards, complete with natural stone worktops and flooring, Wedgewood delph and AEG appliances.

MEET THE CHEF Whatever the meal, the true quality is found in the ingredients; local, be it farmhouse cheeses, game from the Estate, Irish beef, lamb or fish fresh from the west coast.
W
hen I set out to be a chef, I decided very early on that classical cuisine was the foundation I wanted. After a nine-year apprenticeship in some of the best restaurants and hotels in London, I returned to Ireland in 1995 and the challenges of Dromoland Castle.
The cooking at Dromoland is not static; we need to consider new trends in the context of classical cuisine. Irish stew, for example, has evolved into a refined lamb stew with seasonal vegetables and is still enjoyed by many of our guests. Cooking also reflects present-day habits and preference – lunch is no longer a main meal, instead it is a more casual fare; sandwiches, pasta, snacks and salads, which are all available in the Cocktail Bar, Gallery or Golf & Country Club. The ‘grand cuisine’ of gastronomy is a major event at Dromoland. The elegant surroundings of the Earl of Thomond Restaurant provide a perfect stage for both à la carte and table d’hôte menus. Start with a terrine of foie gras paysanne, in between a rocket and Parmesan salad or a refreshing sorbet. For the main course, pot roasted guinea fowl with braised lettuce or poached Doolin lobster with Champagne. Finish with brown bread soufflé, coffee and a wonderful selection of petits fours. Whatever the meal, the true quality is found in the ingredients, the vast majority of which are local, be it farmhouse cheeses, game from the Estate, Irish beef or lamb or fish fresh from the west coast. This old building, a castle hotel, with all the modern comforts required, provides the unrivalled platform from which to create and explore our culinary future.

DAVID McCANN Executive Head Chef Dromoland Castle's Executive Head Chef, David McCann, began working at the Castle in 1995 and attributes his long service to his love of the job and of his work environment. "We have two kitchen teams in the Castle: eight chefs in the Fig Tree Restaurant, as well as apprentices, and 25 chefs in the Castle, along with auxillary staff, so our culinary operation is a great employer in the locality." David has built up a strong network of specialist artisan suppliers and growers over the years, including St Tola Goat Cheese, Garrihy Seafoods in Doolin, local butcher, Reale's Butchers, and John Millane and Con Woods who supply organic produce and herbs. "Dromoland Castle has grown so much since I joined the team here in 1995. It was a 68-bed hotel and there was no clubhouse, club restaurant or golf course, so there has been significant reinvestment in and expansion of the property over the years. In my early days at the Castle, my job was all about food as it was my first job as a Head Chef. However, over time I've built a successful team and I now have a brigade of chefs that I can trust, which gives me more scope to get involved in other, more global, issues at the Castle. These include the development of room service and of restaurants, as well as looking at where the hotel wants to go in terms of its food offering. In addition, over the years, I've had to learn to cater for major events and banquets, conferences and weddings which has been challenging, but enjoyable."

EARL OF THOMOND RESTAURANT The Earl of Thomond Restaurant offers a relaxed yet elegant dining experience where you can enjoy breakfast, Sunday lunch and dinner in a wonderful setting. The bill of fare includes a large à la carte menu, a daily table d’hôte menu and a selection of gastronomic menus. Executive Head Chef, David McCann’s approach is one of simplicity founded on his classical training using the freshest locally sourced ingredients.
THE FIG TREE RESTAURANT The Fig Tree welcomes guests looking to enjoy quality food in a more relaxed setting, just a short walk from the Hotel at the Golf Club, or via golf buggy provided by the concierge. Relax with a drink at the bar followed by classic cuisine using the best of local and Irish ingredients. Young children are also catered for with a dedicated menu.
MRS WHITE’S AFTERNOON TEA Mrs White’s Afternoon Tea features a tantalising selection of teas, delicious sandwiches and freshly baked pastries, served each day between 1pm and 4pm. Enjoy the Gallery menu from 11am to 10pm through room service.

IAN SCOTT Sommelier & Whiskey Ambassador Local man Ian Scott, born and raised in nearby Shannon, has been working at Dromoland Castle for 17 years. Four and a half of those years were spent completing the Restaurant and Bar Management Trainee Programme. "The programme's section on wine education caught my attention more than the food aspect of service, and I quickly developed a passion for food and wine pairing," says Ian. "As a teenager, family holidays were spent either in or close to vineyards, mainly in France, but also in Germany, Alsace and Tuscany." During his first two and a half years at Dromoland, Ian worked in food service, private dining and room service. He then had the opportunity to assist the sommeliers for the pre-dinner cocktails, and is now acting lead sommelier at Dromoland Castle, as well as the hotel's Whiskey Ambassador. "Our wine list comprises over 200 wines and features the usual high-end names such as Bordeaux and Burgundy," he says. "My love for Irish whiskey was always there, but the surge in production in recent years and the emergence of craft whiskey at the forefront of Irish tourism has given Irish whiskey a major boost. At Dromoland Castle, we currently have 80 Irish whiskeys in our cocktail bar."

THE COCKTAIL BAR After a day on the golf course, or just taking it easy, a restorative drink may be called for! Formerly the Castle library, the Cocktail Bar at the top of the Main Gallery now provides the cosy setting for pleasures of a less literary nature. Open from 10.30am the bar is a restful haven for day-time refreshments with tranquil lake views and a gently burning log fire. Irish ballads provide the background for candlelit after-dinner drinks to complete your evening.

PICNIC BASKETS Our chef will be happy to prepare special picnic baskets for your requirements; from basic snack lunches to deluxe picnic baskets including Champagne.

HORSE RIDING Three riding stables are located on the Dromoland Estate, offering a wide range of horses and ponies suitable to all levels of riding experience, age groups and physical abilities. The countryside surrounding Dromoland is spectacular and varied, and this is an ideal way to explore the local landscape at a leisurely pace.
SHOOTING With a little advance notice, our Hospitality Desk will be happy to arrange a session of clay pigeon shooting for guests interested in this enjoyable and challenging sport. During the shooting season, the Castle also holds a series of organised driving shoots.
TENNIS The Castle has two all-weather tennis courts, which are available exclusively to guests without advance booking. Equipment is available on request at the Golf & Country Club.
FALCONRY At Dromoland School of Falconry, we have a historical link to the sport of falconry: in 1615, Donough O’Brien, fourth Earl of Thomond, ancestor of the current Lord of Inchiquin, signed his name to legislation regarding the tax and excise on the capture and export of Goshawks. Today, we offer a number of different experiences, from hawk walks to owl evenings and falconry displays to lessons, all designed to help our guests interact with our birds of prey.

FISHING Fishing on Dromoland Lough is an ideal way to unwind and relax. For the more adventurous angler, the River Shannon awaits. With the help and expertise of Dromoland’s Ghillie, you’ll discover secret nooks along the banks of Ireland’s largest river, renowned for some of the best salmon pools in the country. At the end of the day, triumphant anglers can bring their catch back to the Castle kitchens, where our experienced chefs will prepare it to order for dinner the same evening.
ESTATE WALKS AND TRAILS As former guests at Dromoland know well, one of the most attractive aspects of the Hotel is the sheer beauty and tranquillity of its environs. The briefest of walks around the Castle will take you to the the lily pond or the secluded rose gardens, the Temple of Mercury, where the legendary 18th Century racehorse Sean Buis is buried. While walking, the more eagle-eyed may catch a glimpse of the deer herd that roams the Estate. Our many trails will appeal to joggers and biking enthusiasts alike.

DOROTHEA MADDEN Head Gardener One of the highlights to many of our guests stays is a visit to the historic Walled Gardens which can be accessed through the Golf Clubhouse. Responsible for the care of the gardens is our Head Gardener, Dorothea Madden. Ennis born Dorothea first came to work at Dromoland Castle’s Gardens in 1989 and has worked here ever since after becoming Head Gardener within a few short years. Within her time at The Castle, Dorothea’s proudest achievement is the part she played in the restoration of two Walled Gardens, especially the flower-filled garden which is a gloriously colourful, atmospheric and immaculately maintained haven for all to enjoy. By a strange coincidence, Dorothea’s familiarity with historic Walled Gardens can be traced back to her early childhood years. “My parents owned an old Victorian house with a large garden that included a 3-acre walled garden. I think my own love of plants came from my Aunt Florence but my lifelong passion for horse-riding comes from my late father, something I also share with my husband and which I have passed onto my own children.”

fter his work on the Dromoland Golf Course, Ron Kirby turned his hand to designing the most modern golf practice facility in Ireland, at Dromoland Castle. The stone clad, slate-roofed structure houses nine driving range bays and a fully enclosed teaching bay. All bays are fitted with Golf-Tech's second generation fully automated 'Power Tees' - alleviating the need for bending down for your next ball and allowing more enjoyable practice time. During the summer months, at allotted times, the two 500 square metre grass teeing areas are open for use. With an outstanding golf career behind him, newly appointed Head Pro Ian Kearney is the latest addition to an already prominent and loyal Golf team at Dromoland Castle Golf Club. “I have been looking for an opportunity to work within a team dedicated to excellence and I am thrilled to join the internationally renowned and much-loved Dromoland Castle Golf and Country Club.” Ian is a PGA qualified golf coach and has been awarded the prestigious PGA Irish Trainee of the Year on two occasions while completing his training at Doonbeg Golf Club in Co. Clare. He is the current Golfing Union of Ireland Under 16 National coach and Lead Connacht Coach. Since turning professional, Ian has spent almost two years working with Taylormade Adidas Golf at their global headquarters in Germany. During this time, he provided support to Taylormade Staff professionals including the world number one at the time, Martin Kaymer. Ian has worked in Trump International Golf Links Doonbeg since 2011 and completed his Masters degree in Sports Coaching at Loughborough University, specialising in instruction and coaching philosophy. Dromoland Castle is a protected structure, requiring expert repair and maintenance. A comprehensive programme of conservation work, involving external stone repairs and window upgrading, began at Dromoland Castle in 2016. The works were carried out under the direction of RIAIaccredited Conservation Architect, Michael Pledge to eliminate water penetration and enhance the thermal performance of the building. Phase one , the essential stone and window repairs, were completed over the winter months of January through to April 2016. "Minor fabric damage had occurred through water penetration to all walls and this is to be expected with a building dating from the 1820s," says Michael. "All elevations required re-pointing to best practice conservation standards, and damaged stones needed to be replaced or repaired. Upgrading works to 194 windows located in the main Castle was carried out. 130 of the windows are over 170 years old. The conservation work was exacting and time consuming, but it will help to see Dromoland through the next 100 years." Work was restricted to daytime hours and carefully monitored for noise. "Working in this way requires a close day-today relationship between hotel management and the construction team to limit the impact that such works have on hotel guests."

ELEGANT & SOPHISTICATED DESIGN Helen Casey Design Associates worked on the refurbishment of the 16 bedrooms in Dromoland Castle. "The rooms that we worked on had lakeshore and woodland views, so we used the natural backdrop, adopting a sympathetic approach that reflected the exquisite architectural and heritage features of the building, such as the vaulted ceilings and casement windows,� says Myra Costello of Helen Casey Design Associates. The essence of the design concept was to create a relaxed, sophisticated and elegant atmosphere that enhanced rather

than competed with the inherent beauty of the building. Helen Casey Design Associates employed natural textiles and wall coverings, including fine linen with embossed velvet embroidered. Specially commissioned furniture was handcrafted and designed by O'Donnell Furniture to complement the overall look. Artwork was chosen to inform the visitor about our national treaures, such as prints depicting artefacts from the first century to early medieval times that form part of the collection of the National Museum of Ireland.

THE SPECIALISTS "We worked closely with the interior designers to achieve a modern slant on a historical building,” says Managing Director Aodh O'Donnell of O'Donnell Furniture who supplied everything from four poster beds and bedside lockers, to foot stools, luggage racks, chest of drawers, dining and occasional tables. “We had to blend into the existing surroundings, combining a unique finish on the furniture with the steelwork and lattice work of the Castle and integrating those elements. We regard the restoration of Dromoland Castle as a very prestigious project for us." Declan Hayes' grandfather was the full-time carpenter for Dromoland Estate before it became a hotel. He then worked as the external carpenter for the hotel for many years before handing over the business to his grandson in 2002. Since then, Declan Hayes Carpentry has worked on many renovation projects at Dromoland Castle. "My main focus for the restoration project was the renovation of the link corridor bedrooms, the reception area and the main restaurant. We handcrafted the furniture for the 16 link corridor bedrooms as well as the corridor panelling outside the rooms. In the reception, we fitted new wall panelling, and in the restaurant we crafted window pelmets that incorporated the gothic detail of the existing mouldings and plaster coving on the ceiling. These pelmets were then handpainted in gold and given a distressed look." The painting work during the restoration works was undertaken by Conroy Painters. "This will have been our third year working in Dromoland Castle," says Karen Lord. "This year, work was mainly concentrated on the main Castle suites and corridors. As specialists in hotel refurbishments, we have been involved in a number of restoration projects, including the Shelbourne Hotel and the K Club. We also carry out large volumes of work for the Dalata Group of hotels around the country."

With Dromoland as a starting point, however, you are well placed to tour counties Clare, Galway, Mayo and Sligo, each with their own unique landscapes, scenery, heritage and history to excite and delight. Read our whistlestop guide below, or turn over for more. A must-see for any visitor to Mayo, the Céide Fields is the preserved remains of fields and farmlands tended by farmers 5,000 years ago. They are the oldest enclosed landscape in Europe and the most extensive Stone Age monument in the world. The busy shopping town of Castlebar, Mayo’s county capital, was the historic starting point for the 1798 Rising. Near the town is Ballintubber Abbey, Ireland’s oldest church, founded in 1216 and still in daily use. Galway's vibrant cultural life includes a year-round calender of events including the Jazz Festival in February, the Cúirt International Festival of Literature at Easter, the Arts Festival and the famous Galway Race Week at the end of July as well as the Galway International Oyster Festival at the end of September. The Irish-speaking Aran Islands are Europe’s western-most point. Inis Mór, the largest island, is home to the impressive Iron Age fortress of Dún Aonghasa. The atmospheric beauty of Inisheer has always attracted countless writers and artists, and the island has a history dating right back to a 4th century monastic settlement. At Carrowmore in county Sligo is the largest megalithic cemetery in Ireland with 30-odd stone tombs, some of them rudimentary circles, others handsome chambered graves with giant capstones. Knappogue Castle, north of Bunratty in county Clare, has been beautifully restored, from the period furniture to the sober stone walls.

isitors seeking Ireland's rolling green hills may be surprised by the Burren, a limestone plateau that covers northern Clare. A stark landscape of megalithic tombs, caverns and castles, craggy lunarlike rocks, it takes its name from the Gaelic boirinn, meaning ‘stony area’. But don't be fooled into thinking it is bereft of life: quite the contrary. An exceedingly fertile place, the Burren is home to 1,100 species of plant. Including arctic-alpine types like mountain aven and spring gentian and 24 native Irish orchids grow here, with Early Purple the first to flower in April, with Autumn Lady’s Tresses appearing in September. To learn more about the area, visit the Burren Centre in the historic village of Kilfenora. This interpretative centre features an exhibition and film detailing the geology, legends and archaeology of the region. A short trot from Dromoland Castle is the Castlefergus Riding Stables in Quin, Co Clare. The stables offer horse riding for all ages and experience levels, set against breathtaking scenery. "The Castlefergus Classic is our most popular trek,” says owner Aida Enright O'Brien. “You can experience a private tour of our 100-acre working sheep farm and encounter ancient Irish folklore as you pass by the ringforts (fairy forts)."

Located in the magical Burren region, close to the world famous Cliffs of Moher, the award-winning Doolin Cave and Visitor Centre is home to the Great Stalactite, the third largest Stalactite in the world. At 7.3 metres (23 feet), it is the longest free-hanging stalactite in the Northern Hemisphere. GALWAY The perfect blend of history and culture with a generous helping of fine food and drink, Galway has something for every visitor. rchitecture enthusiasts would do well to visit Galway, a city and county rich in structural wonders. The Collegiate Church of St Nicholas was founded in 1320 and contains many fine carvings and medieval relics. Lynch’s Castle, built around 1600, is now used as a bank, but anyone can walk in and admire its well-preserved fireplaces and the outside walls are decorated with several coats of arms. Nearby is the Lynch Memorial, a marble stone set in a wall that was part of the old jail. According to legend, it marks the spot where the chief magistrate, James Lynch FitzStephen, executed his own son in the 16th Century for the murder of a Spaniard. At the mouth of the Corrib River stands the Spanish Arch, one of four built in 1594 as part of a wall protecting the port. Outside of the city sits Kylemore Abbey, a 19th Century castle tucked beneath the Twelve Bens mountain. The castle was built by a London doctor as a wedding gift to his wife at the place they had honeymooned: six years later she was dead. Today, you can visit the exquisite miniature cathedral he built in her memory. Venture out of the city and head for the stone-harboured fishing village of Roundstone, it's an ideal spot to watch the catch come in.

Doolin Ferries runs a ferry service from Doolin Pier to the Aran Islands and cruises around the Cliffs of Moher. The company was established in 1970 by Bill O'Brien and recently welcomed a new fast ferry, the ‘Doolin Express,’ to their fleet, so customers can travel to the Aran Islands in half the journey time. With its state of the art electronic stabilisers, contemporary design and build, using the newest materials and technologies, the Doolin Express is light and stable, giving passengers a fast yet comfortable crossing. The Doolin Express (Doolin Fast Ferry) takes 190 passengers and features double height viewing decks inside and out. It is twice the size of any other ferry currently operating from Doolin Pier. "To this day we have return visitors who have fond memories of the 1970s and 1980s when they travelled to the islands with me in a much different time," says Bill O'Brien. Shaping History The Clare Heritage and Genealogy Centre in Corofin was the brainchild of Clareman, the late Dr Naoise Cleary. The idea took shape in the 1970s when Dr Cleary undertook the task of indexing the local baptismal and marriage records to help the parish priest cope with increasing enquiries from people of Corofin ancestry overseas. Dr Cleary realised that, if properly collated and indexed, this information had the potential to be turned into a very marketable product. This first step was the painstaking task of transcribing approximately 500,000 individual baptismal entries, up to the year 1900. Next came the marriage records, followed by gleanings from birth, death and marriage notices in the Clare Journal and other newspapers. All of this work took place in St Catherine’s Church which Dr Cleary decided to use to accommodate a thematic presentation of the material and folk aspects of Irish life in the period covered by the genealogical records. The Clare Heritage and Genealogy Centre, as it came to be known, attracted worldwide attention, appearing on television in Australia, the United States, Canada, England and New Zealand and it became the model for a number of other genealogical centres throughout the country.

an you tell me the way to Innisfree?” John Wayne asks when he steps off the train in John Ford’s classic, The Quiet Man and it’s still a common query from the many tourists who visit the village where it was filmed: Cong. But Cong has more to offer than just a cinematic journey down memory lane. The limestone sub-strata around the area means Cong is rich in caves and dozens of underground passages are mapped and accessible, the most popular being the Ballymaglamancy and Kelly Caves. On a stormy night in 1879, Knock became the ‘Lourdes of Ireland’ when a vision was witnessed by 15 locals. The Virgin Mary, St Joseph, St John the Evangelist and a host of angels appeared on the external gable of the parish church. The apparitions did not speak but remained visible for two hours in the pouring rain. Nearby, Croagh Patrick is Ireland’s holy mountain and is a majestic 2,500 feet. Ever since the earliest times, when pagans gathered to worship on its summit, the mountain has held a special place in the imagination and spiritual world of Irish people, with thousands flocking every year to perform rites of penance and prayer. No visit to Mayo is complete without a visit to Foxford Woollen Mills, famous for its tweeds, rugs and blankets.

here’s poetry in Sligo’s landscape. The Yeats brothers, poet and painter: you can’t escape them in Sligo, the county they raised from obscurity to renown. William told the world about the Sligo legends of Knocknarea, where rapacious Queen Maeve lies buried, and of Benbulben, on whose slopes the hero Fionn MacCumhaill took revenge on Diarmuid, who had cuckolded him. Jack, meanwhile, put ghosts and mysteries into Sligo fair days and donkey races with his paintbrush. In the last year of his life, William wrote his epitaph as the last verse of the poem, Under Ben Bulben. He is laid in Drumcliff and by his command these words are cut: “Cast a cold eye, On life, on death, Horseman, pass by.” The view from the churchyard reveals gnarled trees rising above the stone walls of the yard, largely overgrown with lush bushes, through which the purple facade of Ben Bulben stands clear. On the other side of the church is a cemetery with a dramatic high cross that dates from the 11th Century. Carved of stone, its chiselled images show scenes from the Bible: the serpent tempting Eve, the Magi bearing gifts and Daniel in the lion’s den. Durty Nelly’s has been part of the landscape at Bunratty for almost 400 years and continues to be the favourite ‘watering hole’ of locals and visitors alike. Over the years, international celebrities have been lured by Nelly’s legendary hospitality, and there’s a particularly poignant shrine to those who lost their lives during 9/11. Visitors also enjoy the finest and freshest local produce at Nelly’s. The kitchen, run by Head Chef Eugene McNamara who has been at the helm for almost 30 years, is renowned for its focus on authentic Irish dishes, using high quality seasonal ingredients. KAI CAFÉ AND RESTAURANT Kai is the Maori word for food and New Zealander Jess Murphy, together with her husband, opened their café and restaurant on Galway’s Sea Road in 2011. The couple work to a simple formula: highquality produce, preferably organic or wild, sourced locally and cooked intelligently, with Tipperary venison, lamb from Roscommon and hake from nearby Rossaveal village on offer. The menu is evidence of the close friendships Jess has built with her suppliers, both locally and around the country: beef from Brady's family butchery in Athenry, and cheese from Knocklara Farmhouse in Waterford. The restaurant enjoys national and international acclaim and 2018 Jess was awarded Best Chef in Ireland at the Restaurant Association of Ireland Awards, and won a Michelin Bib Gourmand for the second year in a row. MORAN'S �YSTER COTTAGE Seafood restaurant, Moran’s Oyster Cottage operates from a 300-year-old thatched cottage that is now run by the seventh generation of the Moran family, located on the Wild Atlantic Way between the villages of Kilcolgan and Clarenbridge. The local oysters, lobster, mussels, fish and chips, crab and prawns are a must for seafood lovers: Locally-grown Gigas oysters are served all year round, but between the months of September and April the Galway Flat Edulis oyster is in season. These oysters are celebrated around the world for their unique and complex taste and are skilfully opened by champion shuckers who hold Irish, European and world titles in international oyster opening competitions. In 1948, Patrick Keane and his wife Eileen took the brave step of going into business on their own. Like his father before him, Patrick was an accomplished watchmaker, while Eileen had considerable experience in retailing. Keanes began life in a small upstairs room on Patrick Street in Cork. As with all new companies, it was hard work at first, but within two years, Patrick and Eileen were able to rent a small shop at 94 Oliver Plunkett Street, and over the next 15 years they expanded into numbers 93/94/95 and 95A. In 1965, Patrick and Eileen expanded to County Kerry, where they purchased a premises in Killarney. Around this time, Patrick and Eileen were joined by their sons, Gerard and Pat, who brought new skills to the management of the growing business. Gerard concentrated on diamonds and administration, while Pat’s specialty was watches and display. It was an excellent mix of skills. In 1973, they decided to buy 95A Oliver Plunkett Street and spent the next 12 months planning the development of a very substantial premises. Keanes’ growth continued steadily, and the company remained very much a family concern as it does to this day. In the mid 1990s, a fourth generation of Keanes arrived in the trade: Gerard Keane Jr., a chartered accountant who had trained with well-known jewellery group, David M. Robinsons of Liverpool, and his cousin Patrick, son of Pat, who had spent a few years in corporate banking after graduating with a degree in Commerce. The infusion of energy and new skills from this younger generation helped take the company to greater heights. Keanes expanded to Limerick, establishing a significant and successful presence on O’Connell Street which was under the control of Patrick Jr. 70 years on, Patrick and Eileen Keane’s philosophy of giving good value and good service remains key to the success of the business. Part of Keanes Jewellers enduring success is the fact that they are a family that are driven to keep the business vibrant. Keanes has been lucky to have so many amazing staff members. Ballymorris Pottery and Pottery School was established in 1994 by husband and wife, Hannah Arnup and John Egan who craft a beautiful selection of handmade stoneware pottery, specialising in bespoke pieces. The pottery is classic and contemporary in style and often features spiral sgraffito decoration. If you fancy having a go, Ballymorris Pottery School offers 'hands on' sessions for parties and groups. "This is very popular with children, families and adult groups, hen parties, and team building groups," says Hannah. "Participants each make and decorate their own unique piece. Anne Romer, florist at Dromoland Castle tells us of the stunning selection of flowers she uses throughout the season to elevate every bride's day. “People tend to associate scents with their special day and in spring, we create bouquests of ivory or pale pink tulips with sprigs of eucalyptus and rosemary and we add a tree fern for a feathery finish. We had a March bride who chose red roses, and we covered the church, the stairs and the archway in them, and every time the couple visits, we put two dozen red roses in their room. Pink, white and cream roses are the most popular in summer – they have the most heavenly scent. In autumn, we mix red roses and ivy with hydrangeas, and people often ask for lily of the valley, the scent is unbelieveable. We had an autumn bride who chose blue cornflowers. Winter sees festive favourites like poinsettias, holly and ivy. We make small cones of red roses, hypericum berries and variegated holly for colour – non-prickly, of course! BUNRATTY MEADE In a bid to encourage fertility, the newlyweds were encouraged to drink Bunratty Meade which is made from honey and is thought to be the oldest drink in Ireland.

O’Sullivan Antiques has commanded a preeminent positon in the art and antiques market worldwide. This rare 18th Century Irish Georgian estate cabinet secretaire holds its provenance from the collection of Colonel and Maeb Daly of Russborough House in County Wicklow. It is an exceptional piece, crafted from the finest Cuban flame mahogany and features very finely carved detail with the stepped moulded cornice surmounted with broken swan neck pediment with a centred acanthus crest flanked with carved scroll and sunflower motifs. Two bevel mirrored doors open to reveal an intricately detailed fitted drawer section with brass pulls and escutcheons flanked with carved scroll detail. The extendable drawer front opens to a writing desk which slides
back to reveal secret fitted compartments. Russborough House was built in 1741 by Joseph Leeson, the first Earl of Milltown, an Irish peer and politician whose family had made their fortune through brewing. Leeson commissioned the architect Richard Cassels, one of the greatest architects working in Ireland during the 18th Century, to design the great house. Cassels introduced a distinctive type of Palladianism to Ireland which also influenced his interiors. Completed in 1775, the silver granite front façade is the longest in Ireland: 700 feet, end to end. Russborough House has a highly ornamented interior, the superb ceiling of Rococo plasterwork designed by the Swiss master stuccoists Paul and Philip Lanfranchini. In 1978, Russborough House opened its doors to the public after being generously gifted by Sir Alfred and Lady Beit to the Irish nation. They purchased the house in 1952, chiefly to house their art collection which included works by renowned artists such as Vermeer, Metsu and Goya. The Beit art collection was gifted to the Irish State and the works are now exhibited in the National Gallery of Ireland. amous the world over for our love of music and song, many visitors to Ireland are eager to experience an authentic traditional music session, complete with craic agus ceol. Thanks to master craftspeople across the land, our traditional instruments are enjoying a resurgence in popularity, from concertina accordions to flutes and fiddles. These skilled artisans are keeping old techniques alive, too and we meet three makers honing their craft in the stunning surrounds of the west of Ireland.

Tucked away in a Franciscan monastery in Roundstone, Connemara, Malachy Kearns handcrafts one of Ireland's oldest musical instruments, the bodhrán. Drawn from the word bodhar, meaning haunting, the bodhrán is a one-sided drum that was originally used as a skin tray to carry turf on the bog, and Malachy has been making them in the traditional way for over 35 years. “I spent a lot of my youth in Beltra in County Sligo where my aunt Nuala had a pub with lots of traditional music. I loved the friendliness of it, so I left my job in engineering consultancy to follow my heart.” His instruments are made using goatskin treated with a lime mix – the exact recipe is a closely guarded secret – that softens the skin to allow it to be stretched over a birch frame and stitched on. “Goatskin is a 'live' material and its rich lustre becomes more beautiful with age.” The bodhrán is played with the 'tipper' or beater hitting the skin while a hand presses the back of the skin to vary the tone, and many of Malachy's bodhráns feature beautiful celtic designs symbolising the continuity of life and man's spiritual journey. www.bodhran.com

BRIAN CALLAN HARP MAKER
Ireland's national emblem, the harp, can be dated back over 2,000 years, but one craftsman is delving even further into our history to make these melodic instruments. “I have been making custom harps from bog oak, which has been carbon dated at over 6,000 years old, and bog pine, estimated at between 3,000 to 7000 years old,” reveals Brian Callan whose workshop is in Craughwell in County Galway. The harp consists of three main parts; the box, which includes the soundboard, the pole (or pillar), and the arm, all assembled together to give a triangular shape, and Brian makes the entire instrument, “from plank to pluck.” “My harps are handcrafted from locally sourced Irish native timber that is naturally felled or wind blown, mostly from old estate houses near where I live. I use ash, elm, alder, sycamore, cherry, walnut, beech, yew, bog oak and bog pine. I recently made a harp from the wood of a copper beech tree donated to the Galway Woodturners Guild.” Each harp can be customised with carvings of initials, emblems, drawings or designs, and he has begun making rainbow-coloured harps using sycamore. “Applying a dye highlights the grain in the wood.” www.callanharps.com

JOHN BUTLER UILLEANN PIPE MAKER
John Butler began playing the uilleann pipes aged 16 after hearing them on the radio. “I was captivated by Davy Spillane playing A Tribute to Peader O’Donnell on the pipes and within a few months I had my own practice set.” The word uilleann (pronounced ill-un) is Irish for elbow, which is used to play the pipes: one pumps the bellows to supply the air, the other squeezes the bag to control the air pressure. The uilleann pipes evolved from European bagpipes and first appeared in their current format in the early 1700s. John makes his pipes in his workshop in an old schoolhouse on Achill Island. “I first came to Achill Island in 1991 and I was smitten by the rugged mountains and coastline and soon discovered Achill's thriving traditional music scene and summer school, Scoil Acla, which I attended for many years.” John brings to bear his background in mechanical engineering and industrial design when crafting his uilleann pipes which demand a variety of skills including wood-turning, metalwork, leatherwork and reedmaking. “Skills get honed with each set that is made,” he says, “but as the quality of my instruments improves, so too does my striving for perfection.” www.ceolpipes.com
