Uncharted Waters in Borneo

he company confirmed that the newlyrenamed Kapuas Pandaw vessel will arrive in Borneo later this month, in time for the launch
of its inaugural expedition on the Kapuas River in West Kalimantan, which is due to commence in February 2017. The company had planned to send the larger Tonle Pandaw vessel to Borneo, but concerns over the vessel’s ability to clear two bridges prompted the change of plan. It then decided to purchase the former L’Amant boat, which was built in 10

he latest Hotel Property Report issued in October 2016 by Colliers International
reports
that
the
“upcoming supply (of hotel rooms) in Bali will be dominated by 4-star hotels. The current supply of hotel rooms and those anticipated to be added before year’s end: 5 Star Hotels stood at 17,891 rooms with 1,583 new 5-star rooms expected to be added by year-end 2016. 4 Star Hotels stood at 21,406 with 2,197 new 4-star rooms expected by yearend 2016. 3 Star Hotels stood at 15,729 with 742 new 3-star hotels expected by yearend 2016. According to the Collier International reports 5,213 new 4-star hotel rooms are “in the pipeline” - meaning under construction are holding permits needed to commence construction. Similarly, Collier says a further 9,267 5-star hotel rooms are in the pipeline at this time. Collier International counts 3,258 budget hotel rooms (3 star) in operation in Bali with a further 855 budget hotels in the pipeline.

Assuming hotels in the pipeline actually materialize, Bali will soon be home to: o 28,741 5-star hotel rooms o 28,816 4 star hotel rooms o 17,389 3 star or “budget” hotel rooms. Total 74,946 starred hotel rooms open or “in the pipeline” for Bali. Despite calls for a moratorium on new hotel rooms in Bali to allow both customer demand and the Island’s supporting infrastructure to catch up, regency officials continue to encourage new investment in Bali’s hotel sector.

Grief At The Office 26th December 2016 was a dark day in Asia World Indonesia office when we received the news that Mr Didiet Prastiyanditto, is no longer with us after suffering a heart attack. He was a much loved colleague and friend and he will be greatly missed. Didiet was the Manager - Travel Design & Reservations Africa, Europe of Asia World Indonesia for 7 years before he passed away on December 26th, 2016 and devoted his entire career to the field of Travel Industry. Didiet was a dear friend, colleague and sunshine of Asia World Indonesia office. The staffs and managements are not only grieves at the passing of a tremendous individual, but also send thoughts and prayers to his family at this difficult time.

In 937 AD, Empu Jatmika built the Hindu Kingdom of Negara Dipa by the river of Tapin. This was the start of the Javanese-style courts in South Kalimantan. The Hindu era in South Kalimantan remained the most remembered period in South Kalimantan’s history. The glory of Negara Dipa was 30

The philosophy of Saraswati day is that the most important thing for human life is knowledge. In the afternoon of Saraswati day we are not permitted to read or write the book because all the books are offered. In the evening, called Malam Sastra, people read books (especially religious books) in their houses or in the temple. About Saraswati The name Saraswati came from “Saras” meaning

Saraswati is the Goddess of Knowledge, symbolized by a beautiful woman with four hands, riding on a white swan among water lilies to tell humanity that science is like a beautiful woman. Her hands hold a palm leaf; a lontar, (a Balinese traditional book which is the source of science or knowledge); a chain (genitri with 108 pieces) symbolizing that knowledge is never ending and has an everlasting life cycle; and a musical instrument (guitar or wina) symbolizing that science develops through the growth of culture. The swans symbolize prudence, so that one’s knowledge may distinguish between good and evil and the water lilies (Lotus) are symbols of holiness. The Lotus flower is the holiest for Balinese.

PORK SATAY Directions 1. For the Spice Paste: Combine turmeric, lemongrass, garlic, shallots, chilies, sugar, coriander, white peppercorns, and 2 teaspoons (8g) kosher salt in a mortar and pestle, working in batches if necessary. Pound into a fine paste. (For an easier method, pound in the mortar and pestle until a rough paste is formed, then transfer to a food processor to reduce to a fine paste. I do not recommend using the food processor alone if you want maximum flavor.) Divide mixture into thirds. 2. Combine pork and 1/3 of spice paste in a large bowl and toss with your hands until all of pork is thoroughly coated in the mixture. Cover and refrigerate for at least 45 minutes or up to overnight. Thread pork onto skewers. To do this efficiently, cut an onion or potato in half and place it on your cutting board. Place a piece of pork on top of it and push through it with the skewer. Repeat until each skewer has about 6 inches of pork threaded onto it. Pork should be pushed together quite tightly. Discard onion half (or grill it) after use. Keep pork skewers refrigerated until ready to cook. 3. For the Glaze: Meanwhile, combine kecap manis, sugar, ginger, and garlic in a small saucepan and bring to a simmer over medium-low heat. Cook until glaze is thick enough to coat the back of a spoon. Stir in 1/3 of spice paste and adjust seasoning with more sugar as necessary. Strain mixture through a fine-mesh strainer, using the back of a spoon to extract as much liquid as possible. Discard solids. Leftover glaze can be stored indefinitely in a covered container in the refrigerator. 4. For the Dipping Sauce: Pound peanuts in the mortar and pestle until reduced to a rough powder. Heat 2 tablespoons (30ml) oil in a medium skillet over medium-high heat until shimmering. Add remaining 1/3 of spice paste and cook, stirring, until fragrant, about 1 minute. Add peanuts, tamarind juice, remaining oil, kecap manis or fish sauce, and 1/2 cup water. Stir to combine. Once liquid comes to a simmer and turns creamy, adjust consistency with more water as necessary to produce a creamy sauce that just barely flows. Season to taste with a little sugar if desired. Leftover sauce can be stored for several weeks in a covered container in the refrigerator. 5. To Cook: Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate. 6. Working in batches as necessary, place pork directly over hot side of grill. Immediately start fanning coals or flames with a large piece of cardboard or with the hose of a Shop-Vac to prevent flare-ups. Cook, fanning constantly and turning pork occasionally, until pork is cooked through and browned on all sides, about 6 minutes total. Transfer pork to cooler side of grill and brush on all sides with glaze. Return to hot side of grill and cook, turning, just until glaze starts to bubble and get sticky, about 45 seconds. Transfer skewers to a serving platter and repeat until all pork is cooked. 7. Brush pork with another layer of glaze just before serving and serve with peanut sauce on the side or spooned on top.
