Tojinbo Cliffs

Echizen Fukui Fukui City is the capital city of Fukui Prefecture. The prefectural buildings are located on the ruins of Fukui Castle where the EchizenMatsudaira family, the lords of Fukui domain, lived during the Edo period (1603-1867). Now, stone walls and moats remain, and cherry trees along the moats draw many cherry blossomviewers in spring. Eihei-ji Temple is the head temple of the Buddhist Soto sect and has 15,000 branch

temples all over the country. Zen priest Dogen established Eihei-ji in 1244. Large and small buildings stand in the about 330,000 square meter precincts, surrounded by 700-year-old sugi cedar trees. Even now, more than 100 people seek to enter the temple for training every year and those accepted are engaged in hard training. Zen teaches that the Buddhist law is revealed in the everyday manners of a person. Thus, all activities including eating, cleaning, bathing and face-washing are important in addition to the practice of zazen. Especially, cleaning is a very important training because it

purifies one both externally and internally from both physical and spiritual dust. Ascetic monks clean the floors of each building with a damp rag with their bare hands and feet. You can personally experience the practice of zazen (reservations are required). In front of the temple, there are ryokan, restaurants which serve shojin vegetable cuisine and Eihei-ji soba, shops selling sesame tofu, and souvenir shops. Echizen has long been known for Echizen Washi (Japanese paper manufactured in Fukui), which has a 1,500-year history. The Fukui domain issued the first paper money circulated in

local administrations in 1666. It was made with Echizen Washi and it is said to be the oldest paper money still in existence in Japan. Echizen developed as a production area of high quality paper and its production volume of hand-made paper is still the largest in Japan. Although the paper is beautiful and has a soft texture, it is strong and it is said to last for even a 1,000 years. At Echizen Washi no Sato you can try your hand at making Japanese paper. As Echizen has heavy snow during winter, it is blessed with sturdy bamboos which withstand the tough cold. Using these bamboos, local people have made baskets, flower vases and other everyday household goods. After WWII, they started to make bamboo dolls from left-over bamboos after making the more traditional products. Now the bamboo dolls are a new local specialty. At Echizen Takeningyo no Sato you can visit ateliers and also can experience making bamboo dolls. Echizen uchi-hamono cutlery is known for its casting technique. Heated steel is strongly and repeatedly beaten many times to forge a knife. (“Uchi” means “beat” or “strike” and “hamono” means “edged tool.”) This technique has been passed down for 700 years. Cuttingedge design knives produced with this technique were selected as a MoMA (Museum of Modern Art, New York) permanent collection. At Takefu Knife Village you can see old-style blacksmiths working and also experience making a letter opener. Please see an animated video on our website (www.att-japan.net).

Tojinbo Cliffs / Awara Onsen Tojinbo, a series of steep cliffs along a 1-km coastline, is one of the weirdest sites in Japan. Gigantic rock pillars tower like forbidding walls – or monsters. You will surely freeze when you look down at the sea from a 25-meter high cliff. The landscape of this type of rock formation is geologically rare and can be seen at only three places in the world. Sightseeing boats are enjoyable and sunset over the edge of the horizon is a must-see. In wintertime, you can see “wave flowers”; on extremely cold and windy days,

waves breaking on the rocks become like soap bubbles and the bubbles drift in the air on the cold wind currents. To the south of Tojinbo, there is fishing port Mikuni, a port famous for catching of Echizengani crab, sweet shrimp and buri (yellow tail). Awara Onsen is nearby. With a history dating back to 1883, it is a relatively new hot spring town, but is known as one of the largest hot spring towns in the Hokuriku area and has been a favored spot of literary figures.

Ono / Katsuyama Ono is called “Little Kyoto” in Hokuriku because of not only its atmosphere but also its neat grid streets like Kyoto, which were made by Kanamori Nagachika, the first lord of EchizenOno Castle. Reconstructed Echizen-Ono Castle, historic sites and buildings, retro shops and beautiful springs are worth seeing and you can tour on foot. More than 80 percent of dinosaur fossils in Japan have been found around Katsuyama, and Japan’s first dinosaur museum opened there in 2000. It displays replicas and skeletal preparations of dinosaurs. You can enjoy “discovering” fossils at a square. Rocks of the sites where dinosaur fossils were actually found are placed there.

Yamashiro Onsen

Kaga Onsen-kyo There are four famous and time-honored spas in Kaga Onsen-kyo.

Katayamazu Onsen Located near Lake Shibayama-gata, Katayamazu Onsen has modern spa hotels and the resort atmosphere leaves nothing to be desired. Meanwhile, sounds of drums and shamisen played by geigi (geisha) can be heard in the back streets. The hot spring was discovered some 350 years ago, but the spa town was not built until 1882. Since then, the town has developed as a spa resort. Nearby Nihon Genki Gekijo is a theaterstyle entertainment park opened in July 2009. In the reproduced traditional town, all people from children to adults can enjoy comedy shows staged by Yoshimoto, a famous entertainment company in Osaka, various other shows, and throwing shuriken knives.

Awazu Onsen

Awara Onsen

Yunokuni no Mori (Awazu Onsen)

Awazu Onsen is the oldest spa town in Kaga Onsen-kyo, established in 718 AD. High priest Taicho, the first person to stand on the top of sacred Mount Hakusan, found the spa. Ryokan Hoshi was built in the same year and is listed in the Guinness Book of World Records as the oldest accommodation in the world. The current owner is the 46th generation.

Kakusen-kei Valley (Yamanaka Onsen)

At Yunokuni no Mori, you can experience making Japanese paper or soba buckwheat noodles, and applying gold leaf. Making dorayaki, a Japanese sweet consisting of two small pancakelike patties wrapped around a filling of sweet red bean paste, is a popular attraction, too.

Yamashiro Onsen Yamashiro Onsen is located on the foot of the hill. Its origin dates back to over 1,300 years ago when monk Gyoki, who established Yakuoin Onsen-ji Temple, discovered the spa. A number of poets and artists have visited and stayed there: haiku poet Matsuo Basho; Kitaoji Rosanjin, who is renowned as an artist and cook; and Yamashita Kiyoshi, who is known as a wandering painter. The center of the town is a large public bath called Soyu and venerable ryokan are gathered around it. Hot spring water gushes forth at Gensen Park. You can enjoy drinking the water as well having a foot bath.

Yamanaka Onsen Yamanaka Onsen spa town is located along the Daishoji-gawa River in the mountain, surrounded by beautiful scenery. It is said that this spa was found by monk Gyoki 1,300 years ago. Along

with the spa, the local Yamanaka lacquerware is well known throughout Japan. Enjoy walking in Kakusen-kei Valley, a picturesque valley that Matsuo Basho was much impressed with.

Foot of Mount Hakusan Mount Hakusan is one of the Three Most Notable Mountains in Japan along with Mount Fuji, Shizuoka and Yamanashi prefectures, and Tateyama, Toyama prefecture. It has three peaks: 2,702 meter Gozenho in the center, and Onanjiho and Tsurugamine. It is also known as a sacred mountain. Its virgin beech forests are full of wild animals, including black bears, Japanese monkeys, and Japanese serows. In the sky, 150 kinds of wild birds like golden eagles and accentors fly. The mountain is also famous for its alpine plants. Hakusanhime Shrine is located in Tsurugi town at the foot of the mountain. Known as the leading shrine in Kaga, it is the head shrine of Hakuksan Shrine, which has 3,000 branch shrines across the country. This area is one of the heaviest snowfall areas in Japan, and it experiences several meters of snow in winter. With abundant nature – sometimes severe – this area is good for outdoor leisure activities such as bird watching, hiking, camping and skiing.

Kanazawa Kanazawa is an old town sandwiched between the Sai-gawa and Asano-gawa rivers. It is the center of the Kaga area. In 1583, Maeda Toshiie moved into Kanazawa Castle as the lord of Kaga domain. From the time of the Edo government’s establishment in 1603, the Maeda family encouraged development of art and culture, so Kanazawa flourished as a castle town of the af-

fluent Kaga domain. Kanazawa is still renowned as a town home to traditional crafts including Kutani-yaki porcelain ware and Kaga Yuzen dyeing and other traditional arts and crafts.

Sightseeing In the center of the town is Kenrokuen, designated one of the Three Great Gardens of Japan, along with Kairakuen in Mito, Ibaraki prefecture, and Korakuen in Okayama, Okayama prefecture. In wintertime, you can see the unique and beautiful scenery of yuki-tsuri, in which about 800 pine trees are supported by umbrella-like ropes to protect branches against the heavy snow. Across the road to the north, there is Kanazawa Castle Park. Ishikawa-mon Gate, Sanjukken-nagaya House and Hishiyagura Tower are impressive remnants of olden times and well worth seeing. Kanazawa Castle Park and Kenrokuen are to be lit up during February 5th-7th and 11th-14th in 2010. Seisonkaku, built by the Maeda family in 1863 is a building in a rare fusion of two differing architectural styles: sukiya-like-shoin style and shoin style. Each room is decorated with eye-catching colors like red or ultramarine. The building is stately but also has an elegant feel. The 21st Century Museum of Contemporary Art, Kanazawa was designed by world famous architects Sejima Kazuyo and Nishizawa Ryue, who have designed museums and buildings in Europe and the U.S.

A craftsman, Goto Saijiro, learned pottery-making at Arita in Kyushu, a place famous for its Arita-yaki porcelain, and then built a kiln at Kutani, Ishikawa Prefecture in the mid-17th century. This original Kutani-yaki (Ko-Kutani) stopped being produced suddenly about 50 years later, but after a century-long hiatus Kutani-yaki production started up once again. The gorgeous and colorful porcelain is much favored by ceramics buffs. As warriors in Kanazawa were encouraged to enjoy the tea ceremony, confectioneries used in the tea ceremony have long been a familiar part of the lives of local people. There are a lot of confectionery shops and you can try your hand at making a confection at Ishikawa Prefectural Kashi Bunka Kaikan (confectionery culture hall). Most of the gold leaf made in Japan are produced in Kanazawa, and used for decoration of traditional craft works such as lacquerware, folding screens, and Buddhist altars. Aburatorigami, or oil blotting paper, is collaterally produced during the process of making gold leaf. It, too, is a Kanazawa specialty.

roasted crab are tasty, but fresh raw crab is highly recommended. Oroshi-soba, or buckwheat noodles topped with grated radish, dried bonito flakes, and leek pieces is another popular food of Echizen. Regarding confectionery, why not try habutae-mochi? It is a fine and thin sweet with a silk-touch texture. Kanazawa has Kanazawa Port 8 km west of the town. At the east side of the town, a range of mountains marks the border between Ishikawa and Toyama prefectures. As a result, Kanazawa is blessed with food ingredients from both the sea and land. Fostered by these ingredients and the warrior culture of the Kaga domain, sophisticated Kaga dishes were created. In addition, various types of dishes using abundant seasonal ingredients are also tasty. Omicho Market, near Kanazawa Station, has been bustling since days of old as the “kitchen of Kanazawa.” There are as many as 180 shops such as fish, meat, and vegetable shops and restaurants. If you are a newcomer to sushi, kaiten-sushi, or a conveyor-belt sushi restaurant, is recommended. There are dozens of kaiten-sushi shops in the town, including shops at Kanazawa Station and Omicho Market. Try our popular thick yellowtail rolls! Flav

Onsen hot springs – even in Tokyo metropolis The “Oeshiki” ritual ceremony Senzoku-Ike pond

Senzoku-ike Pond Start at Senzoku Station on the Tokyu Ikegami Line. In Japanese, “Senzoku” means “washing the feet.” It is named thus because famous priest Nichiren (1222-1282) stopped at the pond to wash his feet while on his way to Hitachi-no-yu hot springs in Hitachi (now Ibaraki Prefecture) for medical care. There is a pine tree called “Kesakake matsu,” on which he hung his kesa, or robe. People come to see cherry blossoms in spring, beautiful greenery in summer, colorful leaves in autumn, and migrant birds in winter. Some people enjoy boating. There is a stream from the pond, which is called Senzoku-nagare. Along the stream, there is a 1.5 km promenade that is famous for its beautiful cherry blossoms. The brook flows into the Nomi River. If you walk along the river to the south, you can reach Ikegami Baien, a plum garden. You can also reach the plum garden by train (on the Tokyu Ikegami Line) or by bus (from Senzoku-ike to Ikegami).

Ikegami Ikegami Baien is a former residence and atelier of Ito Shinsui (1898-1972), a painter of Japanese paintings. In early spring, 150 white ume trees and 200 red ume trees gorgeously bloom. Let’s move on to Ikegami Honmon-ji Temple. Nichiren died in Ikegami in 1282. Later, the precincts were donated to the temple and became the Ikegami Honmon-ji Temple. Climb 96 stone steps and you will find a bell tower, a big hall, and other buildings. The fivestory pagoda, built in 1608, is the oldest such tower in the Kanto region. The Shotoen garden was made by Kobori Enshu, a gardener who was famous for producing the garden of Katsura

Imperial Villa in Kyoto. Though it is usually not possible to see the garden, it is open to the public for a couple of days in September every year. The “Oeshiki” ritual ceremony, in which people commemorate the spirit of Nichiren, is held annually for three days from October 11th through 13th. As many as 300,000 people flock to see the event on the evening of the 12th. If you want to buy a souvenir, kuzumochi, or arrowroot cake, is ideal. You can buy it at shops around the temple. Visiting the seven temples of the Seven Gods of Good Fortune is also a popular activity. Next, let’s go to Kamata. If you are a good walker, you can reach Kamata on foot by walking about 2 km alongside the Nomi River. Or, if you prefer to go by train, Kamata is the second station from Ikegami on the Tokyu Ikegami Line, and it takes about three minutes.

This area is also known for Onsen (hot springs) that have black water. Leaves which are buried under the ground dissolve into groundwater and the water becomes black. Some pubic bathhouses house hot spring baths, so why not enjoy a soak and relax your body after walking?

Kamata is the most famous downtown and commercial area in the southern part of Tokyo, as well as a center of the Keihin industrial district. During the early 20th century, there were many manufacturers here that produced westernized products. A Japanese typewriter factory was built, and subsequently other leading companies of the day – including Okura Toen (Okura Art China), a ceramic maker worldfamous for its high-end ceramics, and Kagami Crystal, which produced Japan’s first crystal glass – were established in Kamata. In 1920, Shochiku Kamata film studio opened and Kamata turned into a town with a modern atmosphere. Director Ozu Yasujiro worked there in his youth. This studio closed to move in 1936, and a diorama in the basement of Ota City Hall (Apriko) shows what it was like in those days. Yuzawaya, one of Japan’s largest specialist pur-

apan is a cornucopia of traditional craftsmanship. At the same time it is a treasure house of the most advanced technologies. And now traditional and modern technologies are being brought closer to emerge as one entity. Rigorous efforts to realize such attempts are very much being seen in modern Japan, making it one of the important characteristics of Japanese technology. Glimpses of true Japan can be seen more closely when you learn something about the artistry of skill and expression and, the way of living and philosophy of, the Japanese craftspeople.

Japanese traditional craftsmanship: It is a technology of craft making born out of and, shaped from sympathetic feelings toward life in nature … In Japan a blacksmith would say ‘iron is a living thing,’ a potter would say ‘earth is a living thing,’ while a lacquer worker would say ‘lacquer is a living thing.’ In modern technological thinking, the self cuts itself apart from nature and assumes omnipotence. It then looks at nature as an objective body from which resources are to be taken for its own good. It may be said that modern technology is rooted in such tendencies. Contrary to this, the technology of traditional craftsmanship does not accept the concept of “man vs. nature,” but takes on a more mutual and friendly relationship in which man and nature sympathize with each other or sometimes even co-mingle. Woodsmen who are experienced and fully equipped with traditional technology of wood cutting of forests are able to know the history of growth and health of each tree just by touching it. They can exactly judge which tree can or cannot be cut by merely looking at clusters of trees in a forest. Such judgment of those experienced woodsmen determines the future of the trees and whether or not the area would become spirited forests again.

Ability to hear voices of nature Those experts of traditional technology in old days may surely have had “an ability to hear voices of natural living things.” Though modern Japanese people do not have such extraordinary ability, you will find so many expressions in Japanese language treating nature as an equal to humans such as, “the trees are whispering” or “the wind is calling.” The technical term for such expressions is called personification. However Japanese craftsmen are not personifying nature but rather treating it as their equal. It can be said that the mentality of ancient men since time unknown may have been preserved in traditional craftsmanship.

How technology is to be treated in the future Advancement in modern industrial technologies have brought a wide range of material richness, however it has also spread public hazards such as environmental destruction, seriously threatening the very existence of natural life that very well includes human life. It may well be interpreted that such dangerous situations have occurred as a result of dismissing this ability to listen to nature as being “non-scientific.” We humans have given in to this one-sided view and treated nature as merely an object to be exploited by humans to be used for industrial purposes. When we think of future technology and its relationship to man, we should once again think thoroughly as to how Japanese craftsmen have inherited this ability to hear voices from nature and that we should certainly give vital importance to human sustenance with technology in the future. In “att.JAPAN,” prominent Japanese traditional craftsman will be occasionally introduced.

Reference literature: SHOKUNIN - TSUTAETAI NIHON NO “TAMASHII” (The Craftsman - A Reflection of the Japanese Spirit) / S.B.B Edition, Sankosha This book reveals how outstanding Japanese craftsmen maintain and develop their traditional craftsmanship of world repute through interviews with them; the book is a precious one.

Y

okohama is known for its beautiful night view, so seeing the town of Yokohama from the vantage point of a helicopter in the sky is sure to be fun. Helicopter cruising excursions depart from and land in the Minato Mirai 21 area. Minato Mirai heliport is adjacent to Rinko Park, and it takes about 10 minutes to get from Minato Mirai Station on Minato Mirai Line. As you approach the heliport, you will begin to hear the roar of a helicopter and your anticipation will gradually increase. After checking in, just place your baggage in a locker and wait for your flight to take off. As the helicopter noise increases, you will be able to see the helicopter returning from its previous flight, and it will shortly thereafter arrive at the heliport. The movement of the rotor blades creates a strong wind around the helicopter. Following instructions from the staff, board the helicopter and fasten your seatbelt. The flight will now begin. After lightly hovering, the helicopter rises in the direction of the sky above the sea. It then turns around, and a breathtakingly sweeping night view of Minato Mirai opens up. The

big Ferris wheel in Yokohama Cosmo World sparkles, as do Yokohama Landmark Tower and the nearby skyscrapers. Below, you can see various boats and vessels in Yokohama Bay and the illuminated Yokohama Bay Bridge. You can also see brilliant lines of cars on the bridge and expressways. Haneda Airport shines in the distance and the lights of Umihotaru, a rest area of Tokyo Bay Aqua-Line on Tokyo Bay, can be seen far away. This is a superb night view. The helicopter makes an approximately 10-minute flight at an altitude of 500-600 meters, while the pilot introduces must-see places. Explanations in English are available, but please request this service when placing your reservation. There are other flight plans available, including a 5-minute “Twilight course,” which starts at sunset and enables you to see the town as it starts twinkling in the dusk, and a 20-minute “Private course,” in which you can reserve the helicopter for you and your group. Taking advantages of these various options, you can enjoy flying here many times across different seasons, times and courses. Enjoy helicopter cruising in Yokohama!

Information on helicopter cruising in Yokohama This service is operated by EXCEL AIR SERVICE INC. Yamashiro Onsen

K

aga Onsen-kyo area in Ishikawa Prefecture is noted for its fine hot springs, and Yamashiro Onsen is one of them. Yamashiro Onsen has a long history: more than 1,300 years ago, high priest Gyoki was on his way to sacred mountain Hakusan for training when he found a wounded crow, which cured its damaged wing in a puddle. He soaked his hand in the water and found it a hot spring. The crow was the legendary “Yatagarasu,” which is said to have been a sacred bird that led Emperor Jinmu. Yamashiro Onsen is also known as being a hot spring that was loved by Kitaoji Rosanjin (1883-1959), a multi-talented person who was renowned as a painter, potter, calligrapher, lacquerware artist, cook, and gourmet. Rosanzin, who created some 200,000 pieces of pottery during his life, became interested in making pottery there and created works using Yatagarasu as a motif. “Soyu” is a symbol of Yamashiro Onsen. Soyu is a public bath which has been used since the time when each ryokan did not have its own bath. The Soyu building was re-opened in August 2009 and anyone can enjoy a casual soak in the bath here. Half-boiled eggs called “Onsen tamago”, which are made by soaking eggs in hot springs for eight hours, are sold at a Soyu shop. As many as 1,000 eggs are sold every day! Ryokan, Japanese-style hotels, stand around the Soyu. Gensen Park adjacent to Soyu is a unique place in Yamashiro Onsen, and hot water gushes forth from the spring. You can enjoy soaking your feet in a foot bath with no charge,

and the water from the source can be drunk. Of course, you should not drink too much. Drink less than one cup at a time, and drink it slowly as if chewing. Yakuoin Onsen-ji Temple was established by Gyoki for protection of the Onsen, and many mountain ascetics used to gather there as it was a training center for esoteric Buddhism. The Hokurikku area, including Ishikawa Prefecture, is one of the most ingredient-rich areas in Japan. Here you can eat delicious Japanese food that makes use of fresh seafood such as crabs, northern pink prawn and yellowtails from the Sea of Japan, as well as vegetables and fruits from arable lands that have good water and soil. You can also enjoy golfing and skiing in this area, and it's easy to visit the nearby Tateyama/Kurobe, Kanazawa, Eihei-ji Temple and Tojinbo for sightseeing.

How to bathe in an Onsen ///////////// 溫泉入浴方法 up to your waist, followed by chest, then neck. In doing so your body will slowly get used to the water temperature. Do not put the towel into the water. You may see people fold and put it on their heads, now you know why - it doesn’t belong in the water. You may also put it on the side of the tub.

1

4

2

5

First of all you will have to completely undress. Clothes are to be taken off in the dressing room (known as the datsui-jo in Japanese). Other than your birthday suit, you may bring one small towel or washcloth to the bathing area for washing with. Do not make the mistake of changing into and going in your bathing suit! It is not allowed.

Once in the bathing area, rinse off with hot water before getting into the onsen. At some places there will be a stone tub by the entrance, at others you may be able to wash with soap, bucket and using a tap, and at other you will have to take the water directly from the onsen itself (In Japanese this is called kakeh-yu). Kakeh-yu can be done with a small bowl or bucket (sometimes with a handle). Hot water is drawn from the tub or tap and poured over the entire body to rinse thoroughly. This is considered one of the most important points of onsen manners.

3

After you have completely rinsed, it’s time to get into the hot tub. It’s best to get in slowly at first. Get in slowly up to your knees, then

One dip is usually no more than 10 minutes. As there are mineral elements in the water, longer exposure is not only relaxing, but allows the body to soak up more of those minerals. Getting in at least 2 to 3 times a day is reasonable. Where tap and washing stalls are available, switching from wash stall to tub and back is up to you. Do so at will. Never bring the soap or suds into the tub!

6 7

Some hot springs provide more than one tub, such as the rotenburo (outdoor onsen). Switching from bath to bath may also be done freely.

Once out of the onsen, dry off with a towel. Taking a nap is effective; bathing in a hotspring takes quite some physical energy.

When your body is hot and you are totally relaxed, taking a shower is entirely up to you, although may be a waste of the onsen’s mineral healing properties. Leaving them to soak in may be better for your skin.

1 2

Chicken cooked with egg

Ingredients (serves 4) 2 tablespoons sugar 1 tablespoon mirin 1 cup Japanese soup stock 1 1/8 cups (7.6 fl oz/225 ml) water 5 cm (2 inch) piece of kelp (kombu) 3/4 cup dried bonito (kezuribushi, or katsuobushi)

Preparations: To prepare the Japanese soup stock (dashi), first make a slit in the kelp. In a pot, soak the kelp in 1 1/8 cups (7.6 fl oz /225 ml) of water for at least 60 minutes. Place the pot over the heat until it is about to boil, and then remove the kelp. In the same pot, add the 3/4 of a cup of dried bonito, then remove from the heat and leave to cool. Strain and retain the liquid.

3. Heat the sauce until it is boiling, and then place the onion slices in the pan.

4. Place the chicken and shiitake mushrooms on top of the onion slices.

5. Mix the eggs roughly in a bowl.

② ① ④

Directions: 1. ①Slice the chicken into 1 cm (0.4 inch) thick pieces. ②Slice the onion into 2 mm (0.1 inch) thick pieces. ③Cut away the root clusters from the shiitake mushrooms, and separate the caps and stalks. Slice the shiitake mushroom caps into 2 mm (0.1 inch) thick slices. Slice the shiitake mushroom stalks into 2 mm (0.1 inch) thick round slices. ④Cut the trefoils into 3 cm (1.2 inch) long pieces. Set the leaves to one side.

6. When the chicken turns white, pour the eggs over the chicken and vegetables, and cook for about 2 minutes until the egg is soft-boiled.

2. In a frying pan or shallow pot, mix the Japanese soup stock, soy sauce, sugar, and mirin.

For more details, go to http://www.att-japan.net/recipe/

7. Sprinkle the trefoil leaves over the eggs. Use a turner (fish slice) to serve the dish.

Tips: It is recommended that you do not completely mix the whites and yolks of the eggs. Half-mixed eggs enhance the flavor of the dish. The oyako-ni can be served atop boiled rice in a bowl, forming a popular Japanese dish called "oyako-don." Chicken thigh meat is recommended for its good flavor and the juiciness of its skin. If you prefer a low-fat recipe, skinless thigh, breast, and breast fillet (sasami) are recommended as alternatives.

Japanese Liquid Measures: 1 cup = 200ml = 6.76 fl oz 1 tablespoon = 15ml = 0.5 fl oz 1 teaspoon = 5ml = 0.16 fl oz

Tourist Information Transportation / 交通

Rail Japan is covered in a rail network that reaches to almost every corner of the archipelago. Most are owned and run by the Japan Railway (JR) system and the world famous “Shinkansen” bullet train is of course one of the fastest and most enjoyable forms of land transport anywhere -- the distance between Tokyo and Osaka being covered in just 2hrs 30 mins on the fastest line.

Japan Rail Pass Japan Rail Pass allows you to use the whole JR system (including the Shinkansen) but is only sold outside Japan. 28,300 yen gets you a full 7 day ticket (adults). For more info, check the Japan Rail Pass website: http://japanrailpass.net

Bus Long-distance buses in Japan are run by numerous companies including JR. Buses are generally more economic than traveling by plane or train but do take longer and can be affected by traffic jams at busy times of the day or night. Local buses run all over Japan as well as in the major cities and sometimes English instructions or stop announcements are used but this is not the case everywhere. We would recommend you ask drivers to remind you of where you must disembark prior to setting off.

Tourist Information

Taxis Japanese taxis can be found at the exit to every train station in the country or alternatively hailed on the streets. The red sign visible through the windshield of the car: “空車” (kusha) means it is vacant and available for hire but when the sign reads “賃走” (chinso), it is unavailable. The back door on the left side will open and close automatically so be careful not to stand too close! (All the other doors are operated manually) Rates vary depending on the taxi company but usually start at a fixed rate of 710 yen (in Tokyo) for the first two kilometers.

26 att. JAPAN Jan-Feb/2010

The rate system is shown inside the taxi and receipts can be issued.

accepted on JR lines, subways and most other railways and buses.

The Tokyo Furii Kippu (東京フリーきっぷ) (http:// www.jreast.co.jp/e/pass/) is available for use on JR lines (inside Tokyo’s 23 wards), subways, and the Toei Bus service for one whole day -- ending at midnight -- at a charge of 1,580 yen.

Getting Around in Tokyo / 東京的交通 In big cities, such as Tokyo and Osaka, the under and over ground train system is well organized and highly efficient accessing any and all parts of the cities. To avoid wasting time lining up for tickets and working out how to use the machines in different stations, it is highly recommended to purchase pre-paid cards.

Transportation cards/useful tickets If planning to stay in Japan for a longer period why not try using IC cards? (500 yen deposit returned when returning the card) Simply touch the card on a rectangular pad beside the ticket gate and the fare used is automatically deducted from the value of the card. In Tokyo the cards are known as Suica or PASMO and are

Getting Around in Osaka /

Transportation cards/useful tickets

In the Kansai (Osaka) area ICOCA or PiTaPa is available IC cards similar to Suica / PASMO. The Kansai Thru Pass (スルッと関西 ) (http:// www.surutto.com/) offers a similar service to the Tokyo Furii Kippu in Kansai and enables subway, railway (bar JR lines), and bus use throughout the Kansai area. Price - 3,800 yen for 2 days or 5,000 yen for 3 days.
