ne of the intriguing tourist routes in Japan starts in Mie Prefecture, home to Ise Jingu Shrine, goes through Aichi Prefecture with an international airport, Shirakawa-go and Hida-Takayama in Gifu Prefecture, and continues along the Tateyama Kurobe Alpine Route in Toyama Prefecture, Tojimbo in Fukui Prefecture and ends on the Noto Peninsula in Ishikawa Prefecture. The route is shaped like a rearing dragon with the Chita Peninsula in Aichi as its tail and the Noto Peninsula as its head. Travel through Gifu Prefecture following the rearing dragon with some brief detours.

Gifu / Nagara River The Nagara River is famous for ukai (cormorant fishing) in summer and Mount Kinka is the site of Gifu Castle. A ropeway takes you to the top of Mount Kinka with a great view

from the castle at 329 meters on the summit. One of the most famous warlords in the 16th century, Oda Nobunaga, lived in Gifu Castle, which eventually became the center base for his unification of Japan. Enjoy the same view that the great commander enjoyed. Gifu Daibutsu (Great Buddha) in Shoho-ji Temple is one of Japan’s three major Great Buddha statues, along with the one in Nara (Nara Prefecture) and in Kamakura (Kanagawa Prefecture). The statue was created using a unique combination of wood, bamboo, and clay covered in Japanese paper, lacquer, and gold leaf and still beautiful to this day. The tradition of ukai, cormorant fishing, in the Nagara River is 1,300 years old. Fishermen work together with their trained cormorants to catch fish using torches in the pitch-black darkness. Ride on a tour boat and enjoy watching the skills of the birds and their trainers fishing.

The Ukai Museum opened in August 2012. To the west of the boarding docks of the ukai tourist boat is Kawara-machi, a pleasant place for a stroll with its many old houses with traditional lattice doors. http://www.gifucvb.or.jp/

Gujo Hachiman Gujo Hachiman is a castle town in the mountains upstream of the Nagara River. Located in a small basin formed at the junction of four rivers, the town is famous for high-quality spring water, called Sogisui, with clear water springs everywhere around the town. The residents have been using the spring water in their daily life for laundry and you can see public washing places everywhere in the town. Gujo Hachiman Castle on the top of the mountain is beautifully surrounded by red and yellow maple leaves in autumn and snow in win-

Japanese culture different from that of Kyoto. The castle town, built by the Kanamori clan about 400 years ago, had two areas: the elevated area surrounding the castle with residences for the samurai class and the lower area for the common townsfolk. Three streets including Kamimachi and Shimomachi areas developed as a merchant town at the center of the castle town and are now called “Furui Machinami” (old town). The quaint area has a distinctive atmosphere with its canals flowing by houses with latticed bay windows, sakabayashi (a big ball made of cedar needles) hanging outside the front entrances of the sake breweries, massive doors leading to old-style town houses, and traditional restaurants. From the old town area, a 10-minute walk takes you to the elevated area of Higashiyama Teramachi with many temples that were built according to the temples in

Higashiyama, Kyoto. The area is perfect for taking a stroll in the quiet, relaxing atmosphere. Takayama Jin-ya was originally one of the mansions of the Kanamori clan; however, after the Tokugawa Government brought Hida under its direct control, it served as an office for the local governors dispatched from Edo (now Tokyo). There is a farmer’s market every morning in front of the front gate. The modern-appearance Hida Takayama Museum of Art standing in harmony with its natural surrounding looks like a work of art itself. It includes a display of a superb world-class glass collection. Hida beef curry at the café is also recommended. The most popular local delicacy in Gifu is Hida beef. The marbled beef produced in the natural and cool climate in the Hida area has the perfect amount of fat with a delicate tex-

ture and is a favorite of meat lovers. Enjoy one of the simple but delicious dishes such as steak, yakiniku, and shabu-shabu. Ayu (sweetfish) from the Nagara River is another local delicacy. Hoba-miso, a staple of the breakfast menus at hotels in Hida, is Hida’s local specialty. Miso paste together with other ingredients is roasted on hoba (magnolia leaf), which is said to have antiseptic properties, creating a mouth-watering aroma. It goes really well with rice, so be careful not to eat too much! Gifu Prefecture has more than 50 local sake breweries. With the pure water from the Hida mountain range and cool winters, Takayama is especially suitable for sake brewing and growing high-quality rice. Local sake breweries start selling their new sake from mid-January. When you see a sakabayashi, a large cedar ball, hung out under the eaves of a sake brewery, it means

Traveling on Nagaragawa Railway Nagaragawa Railway is a local line running along the Nagara River from Mino-ota Station to Hokuno Station through Seki, Minoshi, and Gujo-Hachiman stations. The Seki and Mino areas are famous for traditional crafts. The cutlery of Seki has been made by skilled craftsmen since the 12th century and is one of the world’s top brands. Popular souvenirs from this area include cooking knives, shavers, make-up scissors, and nail clippers. The Seki Sword Traditional Museum has an exhibition of Japanese sword making. Mino, with 18th century town houses with fire protection walls on the roofs, is famous for washi, Japanese handmade paper. Beautiful washi products such as letter sets, towels, and socks, make perfect souvenirs. http://www.kankou-gifu.jp http://www.kankou-gifu.jp/

Furui Machinami

the new sake is ready. Don't hesitate to enter and ask to sample the latest brew. The Takayama Festival is held twice a year. The Spring Takayama Festival, aka the Sanno Festival, is held on April 14 and 15, and the Autumn Festival, aka the Hachiman Festival, is held on October 9 and 10. Gorgeously-decorated floats called yatai are pulled around the area. From Takayama on the Takayama Line, it takes about 20 minutes to get to HidaFurukawa, another beautiful old castle town with colorful carp swimming in the channels running through the center. Hida-no-Takumi Bunka Kaikan (craft museum) was built with Hida’s local lumber by local carpenters using skills passed down through generations of Hida craftsmen of construction without using nails. Okuhida Onsen-go hot spring resort includes five hot springs that overlook the Northern Alps.

Shirakawa-go Shirakawa-go is one of the areas with a harsh climate and the most snow in Japan. The famous thatched houses (gassho-zukuri) with steep raftered roofs that look like a pair of hands in prayer (gassho) stand in the idyllic landscape. People have been living in these thatched houses for many decades, even in the heavy snow that lasts for five months of the year. The houses all face the same direction to avoid the snow and wind. The snow-covered houses are lit up in winter, creating an enchanting atmosphere. The traditional rural culture is still very much alive in this area and it is a designated World Heritage Site. Shiroyama viewpoint is the perfect place to

see a panorama of Ogimachi Gassho Village. The Wada House is the biggest gassho-zukuri house in the Ogimachi village. Although the house is currently used as a residence, the first and second floors are open for tourists. The Kanda House, with a fire burning in the irori fireplace throughout the year, has all floors open for tourists. Doburoku Festival Museum on the premises of the Shirakawa Hachiman Shrine offers local unrefined sake (doburoku) tasting. Some gassho-zukuri houses offer accommodations. Enjoy dining on unpretentious dishes while sitting by the fireside. *Most of the gassho-zukuri houses are still currently used as residences. Please maintain proper tourist manners when walking around in the area. Inquiries: Shirakawa-go Tourist Information Center http://shirakawa-go.org/kankou/

There used to be a silver mint in the Edo era (1603-1867) in the area, naming the area Ginza “(silver guild”). Ginza has long been a pioneer of incorporating the latest trends of the Western countries and establishing a new culture. While being a gathering place for literary and cultural figures, the town has also been at the forefront of Japanese fashion. Ginza is also the place where Japan’s first art gallery opened in 1875. Since then, many art galleries have opened in this area, numbering more than 300 art galleries as of today. Ginza is also famous for gourmet food, with well-established restaurants as well as more trendy eateries. Since it is located near Tsukiji Market, there are many sushi restaurants. Ginza Chuo-dori Street stands out with superb grace and beauty in Ginza. The street is turned into a vehicle-free promenade on Sundays and holidays, where many people freely walk around and relax. Ginza 4-Chome intersection of Ginza Chuo-dori Street and Harumi-dori Street is the heart of Ginza, lined with high-brand shops of the world and world-class Japanese stores. Along the street from the 5-Chome to 6-Chome areas are fast-fashion brand shops, while the 6-Chome and 7-Chome areas are famous for having a variety of art galleries. Ginza offers you quality time for dining out and shopping. The area also has hotels and theaters within

walking distance, welcoming a wide range of people. This well-maintained area allows you to enjoy leisurely strolling on beautiful streets. As you look around, you will notice that Ginza attracts fashion-conscious people. Ginza is a highly sophisticated town for adults, but also has a different atmosphere in its back alleys. You can enjoy Ginza by simply strolling around anyway you please.

Various exhibitions of modern and contemporary art, architecture, design and more are scheduled for the gallery with the expectation to be a place where people can enjoy formal art.

geopark is a place where people can learn about how the earth was formed and works by coming into contact with “geological heritages” (geosites), which include peculiar geological features and conditions, such as volcanoes and rocks. Geoparks allow people to think about how the earth has been affecting the ecosystem and human life. Geoparks promote an experienced-based tourism style where visitors walk around to learn about the history of the earth and enjoy looking at dynamic scenery as well as tasting the locally harvested food.

The Japanese archipelago encompasses highly diverse landforms with rare geological features in the world. Five locations in Japan (as of August, 2012) that have been considered to have a particularly high quality of land diversity, including Lake Toya and Mount Usu, the Itoi River, the San-in coasts, the Tokyo Shimabara Peninsula, and Muroto, are designated as global geoparks by the Global Geoparks Network (an UNESCO program established in 2004). In addition, there are about 20 other geoparks that have been developing various original experience-based programs. Since Japan has many active volcanoes, there are various measures against eruption disaster, while at the same people enjoy the blessings of the volcanoes, such as hot springs. Geoparks in Japan have many interesting attractions, where people can experience dynamic crustal movements, see fossils over 100 million years old, and so on. Please enjoy Japan’s geoparks with guided tours, hot springs, distinct local cuisine, and varieties of local sake.

The walking paths lead you to the crater that was formed by an eruption in 2000. This geopark has a variety of exhibition facilities, including a volcano science museum. A hot spring was discovered after an eruption in 1910, offering visitors a relaxing time in a hot spring gazing out at Toya Caldera. The land formed by the series of eruptions produces abundant food. The locally produced ingredients served at the G8 Summit held here in 2008 were highly praised for their superior quality.

Cooking directions: Heat mirin in a pan to the boiling point. Add the dashi stock and the soy sauce, and bring to a boil again. Turn off the heat, and let the sauce cool. (Always bring the mirin to a boil before adding the dashi stock and the soy sauce.) After cooling, pour it into a bowl or a flat-bottomed container. Remove the seeds from the kabocha but leave the rind on and cut into 5 mm thick slices (if a large kabocha, halve the slices). Remove the stems and seeds from the yellow and red peppers by hand. Cut them in half lengthwise and then cut crosswise into 1 cm thick slices.

Cut the stems of shishito and poke one or two holes in the skin to prevent the whole peppers from exploding in the hot oil. Roughly chop the eggplants into pieces. Pour salad oil into a pan to a depth of 5 cm, and cook the pumpkin over medium heat. Deep-fry until the rind can be easily pierced with a bamboo skewer. When it is done, remove from the oil, drain on a tray, and place in the sauce while still hot.

Always cut the eggplant just before deep-frying because they quickly change color after being cooked.

Deep-fry the green bell peppers over medium heat until the color becomes vivid and the thin outside membrane turns white. Deep-fry the other peppers in the same way.

Don't make chopsticks wet when placing the fried vegetables in the sauce.

Place the eggplant one layer deep in half of the deep-frying pan. Toss them in the oil using kitchen chopsticks and deep-fry until the skin becomes vivid purple and the white part turns golden. When they are cooked well (until they get shrunken by being grabbed with the chopsticks), drain and soak in the sauce.

Tips: Instructor: Kazuko Karasawa I learned cooking from my parents, who ran a Japanese restaurant, and my grandmother, who lived to be 100 years old. As a housewife, I've been cooking for 18 years. I like cooking everyday, taking care of my family’s health.

- Deep-fry the pumpkin first and cook slowly in a lower temperature oil to soften them. The other vegetables can be cooked in any order, but deep-fry them separately because the cooking times are slightly different. - Do not use wet chopsticks in hot oil to avoid being splashed with hot oil. Be careful not to use chopsticks wet from placing the fried vegetables in the sauce.

The deep-fried vegetables are beautiful and in vivid colors. With zuccini, this dish would be like Southern French cuisine. I can get a lot of vegetables eating this dish.

Japanese taxis can be found at the exit to every train station in the country or alternatively hailed on the streets. The red sign visible through the windshield of the car: “空車” (kusha) means it is vacant and available for hire but when the sign reads “賃走” (chinso), it is unavailable. The back door on the left side will open and close automatically so be careful not to stand too close! (All the other doors are operated manually) Rates vary depending on the taxi company but usually start at a fixed rate of 710 yen (in Tokyo) for the first two kilometers. Bus 巴士 Long-distance buses in Japan are run by numerous companies including JR. Buses are generally more economic than traveling by plane or train but do take longer and can be affected by traffic jams at busy times of the day or night. Local buses run all over Japan as well as in the major cities and sometimes English instructions or stop announcements are used but this is not the case everywhere. We would recommend you ask drivers to remind you of where you must disembark prior to setting off.
