The Tohoku earthquake and tsunami, which occurred on March 11, 2011, hit the Sanriku Coast causing enormous damage to the area. Five years later, the area has been steadily recovering. Although the Sanriku Coast is widely known as the badly-affected area by the disaster, the area has stunning landscapes and lots of delicious gourmet food. Let’s visit the Sanriku Coast to enjoy its specialties!

The Sanriku Coast generally includes the coastal region on the Pacific Ocean, from the Hachinohe area in southern Aomori Prefecture to the Ojika Peninsula in Miyagi Prefecture, with a total length of about 600 km. Deeply indented coastlines, called ria coasts, extend through the area, making it a perfect fishing area.

Located at the north end of the Sanriku Coast, the Tanesashi Coast has an area with a natural lawn up to the edge of the water, offering visitors a comfortable space for relaxing and playing. There are also shores with rough rocks as well as beautiful sand beaches. You can enjoy seeing a variety of views. One of the local dishes, sembei-jiru, is a soy sauce-based soup with chicken, fish, and local vegetables, along with special sembei (rice crackers). The sticky texture of soggy sembei is the appeal of this dish. Hasshoku Center sells fresh fish and seafood and offers a unique service, which is very popular, where people can enjoy charcoal-broiled fish and seafood they just bought at the shops. Hachinohe’s brand mackerel, Hachinohe Maeoki Saba, which is the fattiest mackerel in Japan, is another food to try when you are in the area.

2011 年 3 月 11 日發生的東日本大震災,三陸海岸因為地震及 海嘯而遭受巨大的損害。如今已經過了五個年頭,重建工作也 一直在穩步進行中。在三陸海岸,有許多迫力十足的美景以及 絕頂美食。要不要前來享受一下三陸人最自豪的種種呢?

所謂的三陸海岸,一般是指從宮城縣的牡鹿半島到青森縣八 戶附近的太平洋沿岸,全長約 600km。其特徵是地形複雜的 溺灣式海岸一路延伸,有許多良好的漁港。

位於三陸海岸北邊的種差海岸上,天然草坪舖蓋至海濱,可以在 此感受到自由自在的奔放心情。不僅有粗獷雄偉的海蝕凹壁,有些地方 還有美麗的沙灘,極富變化,魅力無限。 當地美食之一的仙貝湯,是用雞肉和魚等萃取出的高湯,加上當季 的蔬菜與專用的仙貝燉煮而成。吸入了湯汁的仙貝,軟軟黏黏的口感極 具魅力。在擺滿了新鮮魚貝類的八食中心,可將店內購得的食材經炭烤 後食用,相當受歡迎。被認為是日本第一油脂豐潤美味的名牌鯖魚「八 戶前沖鯖魚」 ,也請務必品嚐看看。

Amber in Kuji is about 85 million years old, making it the world’s oldest amber used for jewelry. Kuji has Japan’s only amber museum, where you can learn about amber. The traditional food in Kuji, mamebu-jiru, is a soy-sauce-based soup with vegetables and mamebu dumplings, wheat flour dough wrapping walnut and black sugar. This dish is made in hope of people’s health and safe living.

Kitayamazaki is a natural landscape with a large cliff of about 200 meters stretching as far as 8 km along the coastline. It is one of the most dynamic landscapes in Japan. Jodogahama Beach is one of the most beautiful landscapes in the Miyako Area. The sharp white rock, deep-blue ocean, and green leaves of Japanese red pine together create a breathtaking view. On a sightseeing boat, you can go around and see Rosoku-iwa (candle rock), Shiofuki-ana (blowholes), and Hideshima Island, which are all designated as national monuments. If you are interested in visiting the unreal blue grotto at the entrance of Hachinohe-ana, where people can go only on a clear, calm day, there is a guided sappa-boat tour. A sappa boat is a small fishing boat used for gillnetting of sea urchins and abalones. Major seafood caught in the Sanriku Region include horsehair crab from winter to spring, Hamami-kaki oyster in spring, saury, salmon, and salmon roe in summer, and abalone in winter. Miyako-City Gyosai Market is the kitchen of Miyako, offering fresh fish and seafood and local vegetables. 淨土之濱是宮古代表性的風景勝地。尖銳的白色岩石 和蔚藍的大海、綠色赤松相互輝映,美麗至極。搭乘遊船可 以前往被指定為國家自然紀念物的「蠟燭岩」 、 「潮吹穴」 及 「日出島」 等地巡覽。也有在平靜無波的好天氣下才能成行 的,搭乘平底舟船進入幻境一般的青色洞窟內的行程。所 謂的平底舟船,乃是當地漁民在以流刺網捕捉海膽或鮑魚 時所使用的海濱小船。 三陸產的海鮮包括了從冬季到春季的毛蟹、春季的花 見牡蠣、夏季的海膽、秋季的秋刀魚及鮭魚、鮭魚子、冬季 的鮑魚等等,都十分有名。宮古市魚菜市場則擺滿了新鮮 的魚貝類及當地產的蔬菜,堪稱宮古的廚房。

As the birthplace of Japan’s modern ironmaking, Kamaishi has the Hashino Iron Mining and Smelting Site with Japan’s oldest surviving remains of Western-style blast furnaces, which is registered on the World Heritage List. Kamaishi is also known as a town of rugby and will host games during the Rugby World Cup 2019. At games with the local club “Kamaishi Seawaves,” people cheer the players with huge flags called furaiki (tairyobata), traditional Japanese fisherman’s flags that show a large catch of fish when it is flown by a boat. Kamaishi ramen is characterized by very thin curly noodles. It is said that such noodles were chosen because they are cooked quickly and can be served without keeping customers waiting. Kamaishi has a local performing art called toramai (tiger dance). About 15 dancers in tiger costumes dance traditional toramai at Kamaishi Festivals and National Toramai Festival.

釜石是日本近代製鐵的發祥地,日本最古老的西式高爐遺址所在地的橋 野鐵礦山即已登錄成為世界文化遺產。此外,釜石是個橄欖球繁盛的城市, 亦是世界盃橄欖球賽在 2019 年的預定舉 辦地。在本地球隊「釜石海浪隊」 的比賽上, 使用福來旗(大漁旗:祝賀漁獲豐收的旗 幟) 來加油的方式,堪稱釜石流的加油法。 以極細的捲麵為特點的釜石拉麵,據 說是為了不讓客人久等,所以採用了可以 快速煮熟的極細麵。在釜石,有一項鄉土 表演藝術,是由總共約 15 人身著老虎裝一 起共舞的「虎舞」 ,可以在釜石祭典及全國 虎舞嘉年華上看到他們的演出。 Yakatabune “Shiosai” 畫舫「潮騷」

Along the rough coastline in Ofunato, the Goishi Coast is one of the most beautiful landscapes in the Sanriku Region, from which you can see Anatoshi-iso, a peculiar rock with 3 holes created by wave erosion. To fully enjoy the sea in this area, take Goishi Coast anatoshi-sen, a guided boat tour, where a local fisherman takes you around in a small boat. You are guaranteed to have a very exciting and thrilling time! Ofunato Bay is arch-shaped, and the surrounding coast is a typical ria coast with beautiful landscapes. Another popular Ofunato tour is yakatabune “Shiosai,” in which the Japanese-style houseboat, yakatabune, goes around the bay and seasonal local dishes (mainly with fish and seafood from the Ofunato Port) are served to the passengers. On the tour, you can enjoy the specialty of the yakatabune, steamed oysters. 大船渡的海岸線景觀蜿蜒曲折,一路延伸。其中可以看到被海 浪侵蝕出三個洞穴的奇岩「穴通磯」 的碁石海岸,這三陸的代表性景 觀。周邊的海洋有由當地漁民掌舵、在洞穴間穿梭的小型船「碁石海 岸穴通船」 ,非常剌激且壯觀度破表! 大船渡灣呈現弓形,與之相連的海岸線風光明媚,是典型的溺灣 式海岸。在此灣內巡航,以大船渡港的漁獲為中心,可以盡情享用三 陸地區四季不同美食的畫舫(屋形船) 「潮騷」 ,亦是熱門景點,還可以品 嚐畫舫特產的蒸牡蠣喔!

Kesennuma is one of the biggest port towns in Japan, where various kinds of fish, including bonito, saury, tuna, and swordfish, are brought back from the surrounding sea. Among all, the volume of fresh bonito in Kesennuma has been largest in Japan, in terms of both volume Kesennuma fish market and bonito 氣仙沼魚市場與鰹魚 and price, for 20 consecutive years, even including the year of the disaster. Swordfish, mekajiki in Japanese, is one of the most beloved kinds of fish among Kesennuma locals. During its season from October to January, people enjoy swordfish as sashimi and shabu-shabu. Sukiyaki with swordfish is available throughout the year. At the tip of the Iwaisaki Cape, there are rocks called Shiofukiiwa (water splashing rock), against which the waves hit as they rush in and the water splashes high into the air, creating the dynamic scenery of the nature. 氣仙沼的鰹魚、秋刀魚、近海鮪魚、旗魚等各式漁獲豐富, 是日本為數不多的港口城市之一。其中生鮮鰹魚的漁獲量,不 論數量、金額皆是連續 20 年高占日本第一的記錄保持者,即使 是震災當年,依然緊守此記錄不變。此外,旗魚是氣仙沼當地居 民最喜愛的食材,盛產期約在 10 月至隔年 1 月,在此推薦的是 生魚片和旗魚涮涮鍋,旗魚涮 涮鍋又通稱作「mekasyabu」 。 另外,加入了旗魚的壽喜燒 「旗魚壽喜燒(mekasuki) 」 則 是全年皆可品嚐。 在岩井崎的海岬最前端, 有著每當海浪拍打,潮水便 會向上躍起的潮吹岩,這充 滿迫力的景觀不容錯過。

Sendai is the largest city in the Tohoku Region and the recommended starting point for a trip to the Sanriku Coast. An example of a way to have fun in Sendai is that you can enjoy shopping at the famous arcaded street, department stores, and outlet malls during daytime, and enjoy eating and drinking at Kokubun-cho, the biggest restaurant district in the Tohoku Region at nighttime. Jozenji-dori Street and Aoba-dori Street with beautiful zelkova trees host an annual event called Sendai Pageant of Starlight for a month in December, decorating the city gorgeously with hundreds of thousands of lights. Sendai’s specialty, gyutan teishoku set, includes grilled beef tongue, tail soup, and rice cooked with barley. It is said that there are more than 100 gyutan teishoku specialized restaurants in Sendai. Another famous specialty in Sendai is sasakamaboko, white minced and steamed fish shaped into a bamboo leaf. You can eat it as it is or briefly grill it in a frying pan.

This is one of the largest hot spring resorts in Hokkaido and was developed as a modern hot spring resort in the 1950s. It is a simple sulfur spring and the waters are good for rheumatism, diabetes, and high-blood pressure. The hot spring town has a footbath, which is free of charge; an onsen facility for day-trippers, Kurodake no Yu; as well as ryokan and other accommodations, parking, and restaurants. Dishes using Daisetsu Kogen beef, rainbow trout, and wild vegetables are local specialties. The vast valley that stretches along some 24 km of bluffs has a variety of beautiful scenes every season: fresh greenery and colorful flowers in spring and summer, red and yellow leaves in autumn, and frozen waterfalls in winter. Momijidani is a trail with fine autumn foliage views. Sounkyo Onsen Hyobaku Matsuri is an annual festival held in winter. While the waterfalls are frozen and stand as gigantic icefalls, objects made of ice are illuminated and create a magical atmosphere. With its Sounkyo Visitor Center, Sounkyo Onsen is a base for climbing mountains of the Daisetsuzan Volcanic Group. Daisetsuzan Kurodake Ski Area, Daisetsuzan Sounkyo Kurodake Ropeway, and campsites are also nearby. For those who are in good physical condition, climbing Mt. Asahidake and Mt. Kurodake is also recommended.

層雲峽溫泉是北海道堪稱少數具有一定 規模的溫泉街,於上世紀 50 年代起,則作為一 處近代化溫泉而開放。泉質是單純的硫磺泉, 對於風濕病、糖尿病、高血壓等均有療效。溫泉 街上設有溫泉旅館等住宿設施、停車場、餐廳、 免費的足湯與無須住宿純泡湯的「黑岳溫泉」 , 還有可以品嚐到因使用大雪高原牛跟虹鱒、山 菜等食材而聞名的特色地方料理的店鋪。

As one of the most famous and prestigious shopping areas in the world, Ginza encompasses both cutting-edge trends and the tradition of wellestablished shops, with large-scale department stores, the world’s leading high-brand shops, and venerable shops of long standing, and also has a gourmet culture with first-rate restaurants, Michelin-starred restaurants, and others. As the 1999 film “The Matrix” reminded us, if we can control people’s perceptions (i.e. our five senses: sight, hearing, smell, taste and touch), we can present them with an alternative reality. Virtual reality created on this idea has become a center of attention recently. People have been experimenting with controlling their senses, starting with hearing (shutting out the outside world by the use of headphones) and continuing with VR goggles and the sense of sight.

Their previous work, “Green Room of the Living Dolls,” was quite scary even though it only utilized sound. With this one where VR has been added, things really go up several notches! We walked across a pitch-dark corridor, passed a room with some very eerie dolls and sat at a table with several other people. As soon as we put on the goggles and the headphones, we lost all contact with the real world and became transfixed with fascination and fear as the story unfolded. The graphics on the screen were very clear and in some scenes we involuntarily closed our eyes. The stimuli were unbelievably strong! Cost: ¥600. A professional Japanese chef taught us how to cook Japanese dishes at his ryokan. The main dish, chirashi-zushi, is a delicious and beautiful dish created by a professional chef using his many tricks of the trade.

100 g tuna* (maguro) marinated in soy sauce in advance 1 00 g sea bream* (tai) marinated with kombu kelp in advance 100 g striped grunt (isaki) sliced for sashimi Sushi rice* 4 pieces Japanese ginger* (myoga) marinated in sweet vinegar 4 okra pods 1 piece sudachi citrus (to taste)

1. Remove the scales from the striped grunt, fillet into 3 pieces, and remove the bones. 2. Make some light cuts on the skin of the striped grunt, char the skin with a kitchen torch, and place in ice water. 3. Slice the striped grunt, tuna, and sea bream, sashimi style. 4. Squeeze the juice from the marinated myoga and each piece into half lengthwise. 5. Cut the okra pods into half lengthwise. 6. Prepare the sushi rice and place in a serving container. 7. Decorate the sushi rice with the prepared ingredients..

Choose your favorite seasonal ingredients for chirashi-zushi. Dish up the sushi rice without pressing it down to keep it fluffy. The rice should easily separate in your mouth. The trick to making a beautiful the dish is to have the topping ingredients higher in the center.

Comment from the student It was ver y dif ficult to remove the bones from the striped grunt because the flesh was strongly attached. But when the chef did it, it looked ver y easy so I saw that it was a technique of a professional.
