PORT CITIES IN JAPAN

With the 1858 Treaty of Amity and Commerce between Japan and the United States, the ports of Yokohama, Kobe, Hakodate, Niigata and Nagasaki opened to the world allowing merchandise, people and ideas to move freely to and from Japan. These five port cities were quick to embrace the culture that flowed in from overseas and this played a significant role in their development. Following is a brief introduction to them.

Facing Tokyo Bay, when its port opened in 1859 Yokohama became immediately the hub of Japan’s international trade. At its new port district, Minato Mirai 21, you can see a sweeping view of almost everything Yokohama is – the shopping complex Yokohama Red Brick Warehouse, enormous Cosmo Clock 21 Ferris Wheel, and Yokohama Trick Art Cruise where you can experience a trick-art cruise with 3D paintings making you doubt what your eyes see. Then you can head over to Chinatown and enjoy the full spectrum of Chinese cuisine, take a stroll at Yamashita Park and see boats coming and going under Yokohama Bay Bridge and in and out of the port. Finally, if you are in the mood for some shopping, Motomachi shopping street, built at the time of Yokohama’s opening in 1859 to accommodate foreigners who lived in the Yamate district, remains one of the most iconic commercial districts. Shops like Kitamura (bags), Mihama (shoes) and Fukuzo (clothes) are among the most well known shops. Yamate, the old district for foreigners, is home to Yamate Western-style Buildings and Minato-no-Mieru Oka Koen (Harbor View Park). If you visit Yokohama wearing yukata (summertime casual kimono), you can receive special offers at various facilities during Minato Yokohama Yukata Matsuri 2017 that will be held from July 15 through August 13. At the festival, you can also enjoy many events related with yukata.

Yokohama Delicacies

Created in an effort to mix Japanese and Western cooking, gyunabe (beef pot served at Araiya, etc.) is one of the most characteristics Yokohama dishes. Kiyoken’s Shumai dumplings keeps the original taste from the time it began to be sold in 1928, and Uchikipan is considered to be the first bakery in Japan to make sliced bread. Locals obviously love it!

Kobe is a city harmoniously mixing sea and mountainous views. The waterfront district is dotted with its landmark spots, such as Meriken Park that was reopened after renovation in April 2017, red Kobe Port Tower, and largescale complex facility Kobe Harborland. Kobe Port opened in 1868 and with it came the Kitano Ijinkan settlement for foreigners living in the area. The settlement has 33 Western-architecture residencies designated as traditional buildings, and about half of them are open to the public. The former Foreign Settlement of Kobe district also retains the atmosphere of the port-opening days and some of the buildings have been converted to top-class shops, cafés and restaurants, making it excellent for a stroll. Nankinmachi is the city’s Chinatown where restaurants, shops selling Chinese ingredients, food, and sundry items line the streets. The town is considered the birthplace of butaman (pork-filled steamed buns) and every November the “Kobe Butaman Summit” event is held there. About one hour from Kobe you will find Mt. Originally a hub of commerce, Niigata became one of the five ports to open with the 1858 treaty but the original opening came 11 years later, in 1869, making the city the only open port along the Sea of Japan. Hakodate had its port opened in 1859 and as soon as it started absorbing the Western cultural elements coming from abroad, its transformation began. Part of that transformation is visible even today in places like Hachiman-zaka slope, Chacha-nobori and other hilly areas. Buildings like the old public hall of Hakodate Ward, Hakodate Orthodox Church and Motomachi Roman Catholic Church can be found around the city, endowing it with a special character. Hakodate is not just about architecture though: the mountain with the same name is certainly worth a visit. Especially in the evening, the beautiful view will take your breath away! And don’t forget its enormous food market filled with everything from the sea and the earth as well as snacks and all kinds of delicacies. The morning market is a staple for tourists from abroad, while among locals recent favorites have been the Jiyu-ichiba market and the Nakajima-renbai market. Nagasaki Port opened to Portugal in 1571. Even during the national isolationism policy of the Edo period (1603-1867), it had remained open for traders from China, the Netherlands and Portugal. Thanks to this special circumstance, it developed its own unique brand of cosmopolitan culture, combining elements of both East and West. In the Higashi-yamate and Minamiyamate districts, old buildings still remain, making them a perfect spot for walking around. As well as World Heritage sites including Glover Garden and Hashima Island (aka Battleship Island), one of the “three new major night views” in the world (along with Hong Kong and Monaco) is a must-see. Fresh seafood and other delicious food are recommended. Nagasaki Minato Matsuri 2017 is scheduled to be held on July 29 and 30, featuring stage events, fireworks, and Nagaski Peiron Championship, which is a Nagasaki traditional event in which 14-meter long boats with 26 oarsmen compete.

Omiya in Saitama City, Saitama Prefecture, is one of the famous places for bonsai in Japan and it hosted the 8th World Bonsai Convention for four days from April 27 through 30, 2017.

World Bonsai Convention First held in Saitama City in 1989, the World Bonsai Convention takes place every four years. This year it was held in Japan again for the first time in 28 years and drew about 45,000 people from Japan and abroad. Bonsai masterpieces from across the country including ones from the Imperial Palace that are not usually open to the public were exhibited and attracted many enthusiastic fans from all over the world. On the stage, demonstrations were performed by bonsai artists, and workshops for novices also took place. In the venues, bonsai related goods and local products were also exhibited and sold.

What is Bonsai?

Bonsai (“tray planting”) is an art of cultivating miniature potted trees or shrubs, intended to be aesthetically appreciated for their branches, leaves, trunks and stems as well as their whole shape. The potted trees are dwarf resemblance of their original shapes seen in nature, pruned, fixed by wire, bended, and shaped through various techniques. Competing in these techniques is one of the enjoyable aspects of bonsai. As bonsai are live plants, “completing” a bonsai requires a long time and much effort, although completion is never final, as the plant will continue changing. This is also enjoyable. In recent years, the number of bonsai lovers overseas has been on the rise. Not only at the Convention, Japan is also home to other places where you can see bonsai throughout the year. Enjoy the art in the pot!

Experience Fruit Picking in Japan

Tourists from overseas may find fruits amazingly delicious in Japan. Fruit picking is a popular hands-on activity for those who love to pick and enjoy eating their own fruits.

Japanese fruits are said to be sweet and juicy. Pick-your-own fruit farms share their abundant harvests, allowing you the delight of picking and savoring premium fruits as much as you want. Thanks to the distinct four seasons and the weather variations, the country is fortunate to enjoy seasonal fruits all year round: strawberries in spring, peaches and cherries in summer, grapes in autumn, and mikan mandarin oranges in winter. Many facilities offer fruit picking of more than two different kinds of fruits, farming experience, soba buckwheat noodle making, and BBQ across the country. Each farm has its unique fruit picking packages. Some are located near urban areas with great accessibility. A holiday outing at a pick-your-own-fruit farm is one of the most popular leisure activities in Japan.

Along the route of Tokyo’s last surviving streetcar, the Toden-Arakawa Line, Oji is famous for its cherry blossoms, its paper factories, and its mysterious fox festival.

Mysterious Creature: Foxes

According to an old legend, on New Year’s Eve foxes from all over the country dress up and gather at Oji Inari-jinja Shrine. The legend was what sparked the custom of the Kitsune (fox) Parade. Around New Year’s Day, people with fox masks and make-up visit the shrine and if you apply beforehand you too can participate in this unique festival with fox-like make-up. It is so popular that shops selling fox masks and other fox-themed souvenirs can always be found in the vicinity.

Ogiya’s Omelet

Kezuka, Shrine for Hair

First opened in 1648, Ogiya is a setting for the rakugo (traditional comic storytelling) story titled “The Fox in Oji.” The shop’s tamagoyaki (omelet) has been an Oji tradition for almost 400 years!

In the grounds of Oji-jinja Shrine there is an unusual shrine that was built by people in the hair business (beauty salons, wig makers, etc.) making offerings for and returning the favor to hair. Its name is Seki-jinja Shrine. Many people come here to pray for beauty of hair. This is a fine example of ordinary people’s unaffected wish!

Many wild herbs cooked tempura-style have a crispy texture with a slightly bitter flavor accompanied by a wild fragrance. However, kogomi is an easy-to-eat wild herb that has a mild flavor and is recommended for those who avoid bitter tastes. A tip for following this recipe successfully is to deep fry the herbs in oil heated to 170 degrees.

Advice from the chef

Comments from the Participants

The true charm of Japanese cuisine is that, thanks to simple cooking methods, you can enjoy the taste of each season through the ingredients’ natural flavor. For example, wild herbs, through their astringent and delicate bitterness, announce the arrival of spring. The heart of Japanese cuisine is to use all of an ingredient without producing any waste, so let’s prepare these dishes using the entirety all the ingredients and eat them all up! And, these dishes go really well with Japanese sake!

- It was my first time trying to cook a Japanese dish since I came here. It was delicious! (from China) - I love the fresh taste of the herbs and their curious shapes. It was a wonder ful experience. (from Thailand) - I really like the cute kogomi tempura. It was really delicious and healthy! (from Italy)

Stay at a Japanese ryokan and join our semi-private cooking class! Stay with other students at the Sugimoto hot spring ryokan and attend the Japanese cuisine class. Take advantage of the chance to have a delicious and unique cooking experience using ingredients you cannot find during other times of the year. Autumn Class September 13-14, 2017 (Enjoy delicacies of autumn!) The west side of Matsumoto, a city located roughly in the center of Nagano Prefecture, is home to the Hida mountain ranges (Northern Alps) and Mt. Norikura-dake. Shirahone Onsen on the eastern side of Mt. Norikura-dake is a quiet hot spring village surrounded by forests and the Yukawa-keikoku Valley, Shirahone Onsen is considered to have more than 600 years of history, and around the 17th century the traditional style of hotels often seen in hot spring resorts began to be built here, attracting visitors who wanted to cure their illnesses and injuries while staying for a while. As it did not originate as an entertainment or amusement place, Shirahone Onsen has been kept as a calm, “hidden hot spring” village nestled in the deep mountains. Many prominent persons have visited the onsen. Each its waters sprung from some 10 sources has subtly different quality, color, and aroma. The Tourist Information Center in the vicinity of the end of Prefectural Road Shirahone Line is the center of the hot spring village and there are hotels, ryokan, a public open-air bath, restaurants and souvenir shops around it. Also there are three ryokan near the starting point of Kamikochi Norikura Super Forest Road B Line, about 1 km southward. For sightseeing, Kamikochi and Norikura Kogen Highland are recommended to visit.

WASABI IN IZU

Wasabi in Izu

Clear water of Izu creates high-quality wasabi, also known as Japanese horseradish.

Shizuoka Pref.

The protagonist of “The Dancing Girl of Izu,” a novel by Nobel Prize author Kawabata Yasunari, traveled in the Izu Peninsula in Shizuoka Prefecture, visiting Shuzenji, Yugashima, passing Amagi Pass, and then heading for Shimoda. In Yugashima, one of those settings, wasabi fields stretch forth on steep slopes along the river. The amount of wasabi produced in Shizuoka Prefecture ranks top in Japan, and, especially, wasabi cultivated at the foot of Mt. Amagi in Izu is hailed as a high-quality product. Wasabi is a plant peculiar to Japan. It was described in a document in the 8th century and 400 years ago it began to be cultivated. To cultivate wasabi, clear water is essential. Mt. Amagi is one of five areas that have the highest rainfall in Japan. Abundant rainwater penetrates pumice sedimentary layers of soil and water rich in nutrient elements and oxygen springs forth. The water temperature is 12 to 13 degrees Celsius throughout the year. Harvesting wasabi is done the year round. In winter, wasabi is relatively condensed, firm, and hotter compared to that in summer, which tastes milder. Grated wasabi is usually served with sashimi, soba buckwheat noodles, and steaks as well as – surprisingly –sometimes with ice cream. Wasabi is also processed into a variety of products, such as wasabi-zuke (pickles), snacks, furikake (seasoned powder rice topping), and dressings. Wasabi is considered to have a high antibacterial effect. Sandwiching wasabi between the rice and each item of sushi may be the wisdom of our ancestors. Next time you eat sushi, why not pay a little attention to the wasabi?

Wasabi dressing is one of the popular wasabi products.

Long-distance buses in Japan are run by numerous companies including JR. Buses are generally more economic than traveling by plane or train but do take longer and can be affected by traffic jams at busy times of the day or night. Local buses run all over Japan as well as in the major cities and sometimes English instructions or stop announcements are used but this is not the case everywhere. We would recommend you ask drivers to remind you of where you must disembark prior to setting off.
