Sake is a creation of nature and climate in Japan. Sake attracts many people because it has an abundant variety of tastes and can be enjoyed in various ways. There are said to be more than 1,500 sake breweries in Japan, offering various kinds of distinctive sake. Enjoy sake unique to different areas in your trip.

日本酒是在日本特有的自然環境與氣候下，所釀製而成的酒。日本酒的魅力在於，

What is Sake? / 何謂日本酒？

Sake is a brewed beverage made from fermented rice. It is made in a complicated process, where starch in rice is saccharified by koji (mold) and then yeast is added for fermentation. Differences in brewer’s rice, water, koji, and yeast create unique sake.

Difference in aroma and flavor There are so many kinds of sake, making it difficult to choose. But once you know various types, it will be easier to choose your favorite one. When you are not sure which one to choose at a store, you can specify your preference out of the following four types and you can get a recommended kind. 香氣和味道的差異

即使是種類豐富的日本酒，只要能夠了解它的類型，就能輕鬆地加以選擇。如果您在店裡不知道該如何選擇日本酒時，只要針對以下四種類型說出自己的喜好，或許就能夠得到適合的推薦。

Kunshu (mainly ginjo-shu) Characterized by fruity aroma. Goes well with French and Italian dishes.

Jukushu

其特色在於富含果香。適合搭配法式料理及義大利料理。

經過熟成的日本酒，帶點甜味且富含濃郁的香氣、味道。

薰酒（主要為吟釀酒系列）

Flavor: light 味道／輕盈

Soshu (mainly honjozo-shu)

Characterized by refreshing aroma such as of herbs and citruses.

爽酒（主要為本釀造酒系列）

具有香草及柑橘類的清新香氣。即使不常喝酒的人，也容易入口。

Aged sake with strong and sweet aroma and flavor.

熟酒

Flavor: strong 味道／濃郁

Junshu (mainly junmai-shu)

Characterized by richness, offering umami of rice.

日本酒是以米作為原料，發酵而成的釀造酒。使用麴菌讓白米中的澱粉「糖化」（澱粉轉換為糖），再加入酵母使其發酵，經過這些複雜的過程才能製造出日本酒。隨著所使用的酒米（製酒所用的米）、水、麴、酵母的不同，釀製出獨一無二的日本酒。

You can try various sake from more than 90 sake breweries in Niigata Prefecture (5 glasses for 500 yen). JR Niigata Sta., JR Echigo-Yuzawa Sta., JR Nagaoka Sta.

SAKE 日本全國的酒 Sake in Japan / Niigata Prefecture Being one of the biggest rice producers in Japan, Niigata can boast of having the largest number of sake breweries in Japan, offering the widest variety of sake.

新潟縣

為日本少數產米地區，被譽為釀酒廠數量最多的日本酒王國。

Koshino Shu*Kura is a sightseeing train under the theme of “sake,” running through Niigata Prefecture. This is unique to Niigata, one of the biggest sake producers in Japan. Listening to live performance of Jazz and classic music, you can enjoy local sake and original snacks made with local ingredients. The scenery from the train windows is also part of the treat. Events are occasionally offered where sake brewers accompany the passengers and offer sake while talking about sake.

Yamagata Prefecture

行駛於新潟縣內，以「酒」作為構思的列車「越乃 Shu*Kura 號」，是以高級日本酒產量為自豪的新潟縣特有的列車。一邊聆聽現場演奏的爵士樂、古典音樂，還能夠品嚐在地酒，以及使用在地食材烹煮而成的下酒菜。觀賞車窗外流逝的美景，也是種享受。此外，也會有釀酒廠的人員一同乘車，一邊介紹美酒，一邊提供試飲日本酒的活動。

“Niigata Shupoppo” is made at four sake breweries in Niigata using the same kind of rice produced at JR Niigata Farm, which was established by JR Niigata. Although it is made with the same kind of rice using the same rice-polishing ratio, the resulting sake is completely different in flavor and aroma among the breweries. See how they differ.

As a snowy region, Yamagata has an abundant source of underground water. The harsh coldness in winter is also perfect for sake production. 山形縣

Tokyo As one of the greenest areas in Tokyo, the Tama region has several sake breweries. You can casually join sake brewer’s tours. 東京都

Nagano Prefecture Nagano has the second largest number of sake breweries after Niigata. Sake goes very well with miso and cheese made in Nagano.

Active in sake production since the Edo period. Snacks to go with sake must be the local specialties, karashi-mentaiko (spicy flavored pollock roe), and motsu-nabe (hotpot made with beef or pork tripe and others)!

Fushimi-ku in Kyoto City is a sake town with many famous historic breweries. Along with delicious sake, the attractive area is a perfect place to stroll around.

Hyogo is the biggest sake producer in Japan in quantity. Sake made in Nada, a producer of high-quality brewer’s rice and hard water perfect for sake production, is particularly well known.

You can enjoy blossom viewing against the backdrop of the mountain, including Fujizakura, a variety usually seen at the foot of Mt. Fuji, and also mitsubatsutsuji (azalea), with a dark pink bloom. The Representative Event of Sapporo: Sapporo Snow Festival 1 札幌最具代表性的活動非此莫屬！札幌雪祭！

The festival started in 1950, when local junior high and high school students created six snow statues in Odori Park. Now it is an event that many tourists from all over the world come to see. The Snow Festival has three sites: The Odori Site where visitors can enjoy various giant snow statues and projection mapping; the Susukino Site where romantic ice statues stand; and the Tsudome Site where visitors can play on slides made of ice, snow rafts and snow. A large ski/snowboard jumping platform is set up at the Odori Site, and there is an event where Japanese top-class jumpers perform their jumps! Watching the snow statues being dismantled after the festival is also something you can enjoy that is not very well known. Every year from the first to second week of February*

Located at a 40-minute drive from Niigata City, Tsukioka Onsen is a hot spring town enveloped in a smell of sulfur, home to hotels and Japanese-style ryokan inns, restaurants, and souvenir shops. The springs are sulfur springs, boasting the highest sulfur content in Japan, with a water temperature of 51 degree Celsius. Well known as“bijin no yu” (“hot spring of beauty”), the water has the reputation of making your skin as smooth as silk after soaking in a bath. It is also popularly known as the “hot spring of perpetual youth and longevity,” since your body keeps warm for a long time after taking a bath. The water is usually vivid emerald green, but subtly changes to other colors depending on the season and weather conditions of the day. The origin of the onsen dates back to 1914 when the water suddenly sprung forth during oil drilling. Subsequently, a building for a bath was built. It is said that in those days there were no houses around the building, but after hearing of the excellent effects of the water via word of mouth, many people began to visit the onsen, bringing their own cooking pots, rice, and vegetables. At Gensen no Mori in the town, you can casually enjoy the hot springs by soaking your hands in the water and you can also drink the sulfur hot spring water, which is a rare experience in Japan. Premium SAKE KURA offers premium sake brands from all breweries in Niigata, a prefecture famous for producing sake, and of course you can buy them there. Around the town a peaceful countryside spreads out against the backdrop of the Gozu mountain range and the Iide mountain district in the distance. 嫩光滑的佳評不斷，而享有「美人溫泉」的美譽；此外，更由於泡湯後能長時間地保持暖

和的狀態，因而又以「不老長壽溫泉」之稱聞

名。平常溫泉顏色呈現鮮豔的翡翠綠，但會

依據季節以及當天的氣候條件，顏色也會略有變化。

溫泉開湯於 1914 年。據說是在探勘挖

石油途中，突然湧出源泉才建造了溫泉小屋；當時該處原本是人煙罕至的荒蕪之地，但卻

1. Wash the vegetables. 2. Cut the dirt off the leaves of the cabbage and cut them into bite-size pieces. 3. Make 10 cm vertical cuts into the end of the burdock root and shave the cut end thinly as if you are sharpening a pencil. Place the shaved pieces inside the water to clean off the dirt. 4. C ut Japanese parsley into bite-sized pieces along with their roots. 5. Cut the Japanese leek about 3 cm big. 6. C ut the radish and carrots in half and cut them in 1 cm.

7. C ut the roots of the mushrooms and separate them into bite-size pieces. Ingredients (3 servings) 4 leaves of cabbage, 3 roots of Japanese parsley, 1 pack of enoki mushrooms, 1 pack of maitake mushrooms, 1 pack of shimeji mushrooms, 1/2 of a Carrot, 1/2 of a Japanese radish, 1/2 pack of shirataki (noodles made from konnyaku), 1 burdock, 1 Japanese leek, 200 grams of Boar meat

Broth 4 cups of Bonito soup stock, dash of Soy Sauce, dash of Mirin (sweet sake), 5 tablespoons of Shinshu Miso paste, 4 tablespoons of Hacho Miso paste, a pinch of salt

Chef's Advice Boar meat contains high protein and is healthier than pork. Let the soup simmer until the vegetables and the meat absorb the broth to make the ingredients fully flavored. Think of the meat as the soup. The meat’s flavor will spread out and the meat will become tender when simmered longer.

8. Place the cabbage on the bottom of the hotpot first, and then by order, place in the Japanese parsley, carrots, radish, Japanese leek, shirataki, and all mushrooms. 9. Line the side of hot pot with boar meat. 10. Lastly, take the burdock out of the water and place it on top. 11. Pour the soup stock halfway inside the hotpot and turn on the heat to medium. 12. Leave the heat on for about 15 min. It is done when all the ingredients have absorbed the broth. It was a very fun and educational experience. The chef taught us how each vegetable should be cut. I also learned that boar meat is healthier than pork.

Cherry Blossoms in Western Part of Kyoto City Kyoto is dotted with a number of famous cherry-blossom viewing spots, and Ninna-ji Temple in Omuro is one of them. It is known for Omuro-zakura, a late blooming variety. About 200 cherry trees bloom against the backdrop of the temple’s five-story pagoda. The peak season is from early to mid-April. In the vicinity, Arashiyama and Tenryu-ji Temple are also recommended to see cherry blossoms. Famous Shimogamo cherry-blossom spots in Kyoto are Shrine 下鴨神社 viewing Chayama 茶山 crowded in the season. If you want to enjoy them in a quiet atmosphere, visiting early in the morning or just before the closing time (around the sunset) is better, with fewer people.

Nikko National Park (Nikko City) 日光國家公園（日光市） Having opened in 1934, this is one of the first of Japan’s national parks. Mt. Nantai and Mt. Nikko-Shirane are among the area’s volcanoes mountain, while other famous spots of scenic beauty are the marshlands of Senjogahara and Odashirogahara, Lake Chuzenji, and the Kegon no Taki waterfall.

Kegon no Taki Falls 華嚴瀑布

Together with Nachi no Taki (Wakayama Prefecture) and Fukuroda no Taki (Ibaraki Prefecture), Kegon no Taki is one of Japan’s Three Most Famous Waterfalls. Oya History Museum (Utsunomiya City)

大谷資料館（宇都宮市） A space with a temple-like atmosphere that used to be a mine for the stone known as “Oya stone” peculiar to the area. Its main space is an enormous cavern 20,000 square meters,140 meters high, 150 meters wide and 30 meters deep where you can actually feel the warmth of the huge Oya stone and experience an almost magical aura. Numerous warehouses were built along the Uzuma River and the main street. Nikko Toshogu (Nikko City) 日光東照宮（日光市）

The famous Yomeimon gate, a National Treasure featuring over 500 sculptures, is a luxurious and splendid work of art. After its recent renewal, the marvelous colors of the original sculptures have come back to life, and from April 29 to May 5 for a limited time, visitors will have a rare chance to see the gate in all its glory lit up. 34

Buses are generally more economic than traveling by plane or train but do take longer and can be affected by traffic jams at busy times of the day or night. Okinawa’s Remote Islands 沖繩的離島

Zamami Island

座間味島 A 90-min boat ride from Naha, Zamami Island is situated in the Kerama Islands. With a blue sea called “Kerama Blue,” Zamami is home to nice diving spots.

從那霸坐船 90 分鐘，便到達了屬於慶良間群島的座間味島。這裡的海水相當特別，那種藍色甚至有專用詞叫做「慶良間藍」，相當美麗，周圍有許多適於潛水的地方。

It is famous as a whale breeding site, and you can enjoy whale watching from late December to early April every year. The characteristic of whale watching at Zamami is that after the sighting of a whale from the island observatory, a whale-watching boat heads toward the whale with navigation aid from the observatory, so you can encounter a whale in a shorter time with a possibility of over 90%.

這裡也是著名的鯨魚繁殖地，從 12 月底到 4 月初可以賞鯨。座間味島的賞鯨不同一般，有專人在島上的瞭望台上確認好鯨魚的位置，再告訴船員，直接將船開到鯨魚附近，所以可以在短時間內以高達 90% 以上概率近距離觀賞鯨魚！

Aka Island

阿嘉島 A 20-min boat ride from Zamami Island brings you to Aka Island. It is abundant in nature, where Kerama Deer can even sometimes be seen walking in the town. With several shrines enshrining gods of the sea and mountains, the island has a certain mystical atmosphere. 從座間味島乘船約 20 分鐘，即可達到阿嘉島。島上可以看到天然紀念物慶良間鹿行走，不由讓人感歎自然豐富。另外，也有許多祭祀著海神、山神的神社，充滿著神秘的氛圍。

You can see how cats live freely on the islands. 島上可以看到貓咪們自由自在的生活著。

The two islands have differently designed manholes, and houses have different types of lion-shaped roof ornaments called “shiisa.” 每個島都有自我風格的人孔蓋，家家戶戶有造型不同的風獅爺。
