Travel Through Time in Aichi! Located roughly in the center of the Japanese archipelago, Aichi Prefecture is an attractive area filled with globally recognized industries, culture, and unique delicious food, centering on Nagoya City, one of the biggest cities in Japan following Tokyo and Osaka. Completed in the early 17th century, Nagoya Castle has long been a symbol of Nagoya City. This castle served as a thriving residence of the Owari branch of the Tokugawa clan, which was the seniormost house of the “Gosanke” (the three houses of the Tokugawa), during the time under the Tokugawa shogunate that ruled Japan from 1603 for more than 260 years (the Edo period). Two golden shachi (an animal with the head of a tiger and the body of a carp) statues shine at the top of the main castle tower. In June 2018, the restoration work of the Honmaru building was completed; this building was the government office and the primary residence of the Owari Tokugawa lords, and also where shogunate generals visiting from the central government in Edo stayed. With its gorgeous interior, the building is based on a modern art style different from other castle buildings, showing off the power and wealth of the Tokugawa clan. To fully enjoy the atmosphere of the castle, don’t miss the live performance by “Nagoya Omotenashi Bushotai.” They are at the Nagoya Castle every day to entertain visitors. If you are interested in learning about the life and culture of the Tokugawa clan, please visit the Tokugawa Art Museum. This museum has a collection of some 10,000 art works owned by the Owari Tokugawa clan, including nine national treasures and personal belongings of the first shogun, Tokugawa Ieyasu. These art works are displayed in a replica of a part of the Ninomaru building, making it easier for visitors to grasp the overall atmosphere and aesthetics of that time. 想一同感受德川家的生活與文化的話，歡迎前往 「德川美術館」 參 觀。這是以初代將軍德川家康的遺物為首，還有尾張德川家所持的美 術品、9 件國寶在內擁有 1 萬餘件館藏的美術館。並將名古屋城的二之 丸御殿一部分複製呈現、展示其中，更能輕易體會到當時的樣貌以及 審美意識。

Picturesque Autumn Scenery 深受青睞的秋季景色
If you are planning to visit Aichi in autumn, go to Korankei Valley in the Asuke area, Toyota City. In November, about 4,000 Japanese maple trees turn color at the same time. With many merchants’ houses from the 18th – 19th century, the Asuke area, which is designated a preservation district for groups of historic buildings, is a great place not only to visit for the autumn foliage but also to stroll around. Toyota City has another must-see autumn view, “shiki-zakura” in the Obara area. Regular cherry blossoms bloom once a year around late March to early April, but this shiki-zakura blooms from November to early December in addition to spring. The striking contrast created by cherry blossoms and autumn foliage can be seen only in this area. 香 嵐溪
若在秋季來訪愛知縣，歡迎到豐田市足助地區的香嵐溪一遊。到 了 11 月左右沿著溪畔約有 4,000 棵楓樹會一齊染成紅葉。足助地區因 有許多 18 ～ 19 世紀的商家留存至今，被指定為重要傳統建築物保存地 區，欣賞楓葉的同時也可到此街漫步。 豐田市還有小原地區的「四季櫻」 值得一覽。一般的櫻花只在 4 月 左右綻放一次，但「四季櫻」 在 11 ～ 12 月上旬也會綻放，只有此地可以 欣賞得到的櫻花與紅葉同時綻放的對比絕佳景色。賞景期間有往返足 助地區與小原地區的公車。

Beauty of Pottery in Seto City
洋溢於瀨戶的陶藝之美
Aichi Prefecture, which is widely known as a place where the headquarters of the worldwide automobile manufacture TOYOTA is located, is not only a big producer of automobiles but also a place of monozukuri, and in particular a major producer of top-grade pottery. Among other kinds of pottery, the products from Seto City are high quality and have spread and are popular all over Japan. As a result, pottery in general came to be called “seto-mono.” With high-quality potter’s clay, Seto City began pottery production more than 1,000 years ago and there are still many kilns and pottery studios that inherit and keep alive traditional techniques. Seto City is unique in terms of being a major producer of both pottery and porcelain, which have allowed various techniques to be developed.
Recently, some young ceramic artists have begun to modify traditional techniques to modernize them. One of them, Tomoro Mizuno, whose father passed down to him the traditional “nerikomi technique,” uses it to create unique new works, attracting lots of attention both Works of Tomoro Mizuno 水野智路作品 from inside and outside Japan. In addition, the city has many places where you can see and feel the attraction of pottery and porcelain, including Seto-Gura Museum showing various aspects of Seto pottery and porcelain, pottery studios that offer hands-on sessions of making pottery and painting it, and kama-gaki walls made with waste kiln materials creating beautiful geometric patterns. The city is also a big producer of maneki-neko, or beckoning cat figurines. Maneki-Neko Museum has a collection of about five thousand such figurines. 愛知縣以世界知名的汽車製造商 TOYOTA 存在而聞名，是製造業， 也是一級品的陶瓷器生產地。其中瀨戶市生產的高品質陶瓷製品遍布 日本各地，甚至成為全體陶瓷器的通稱，稱之為 「瀨戶物」 。瀨戶市在 一千多年前開始生產優質陶土，至今依舊存在許多繼承流傳下來傳統 技術的窯戶與工房。 瀨戶市在日本全國也是罕見的陶器與瓷器兩者的產地，發展出各 式各樣的技術。近年來也出現以傳統技法表現出現代風格的年輕藝術 家。如水野智路先生繼承自父親傳統的 「絞胎技法」 ，創作出獨特的作品， 引起國內外注目。 此外，還有陶瓷器博物館 「瀨戶藏博物館」 、可體驗陶藝及彩繪陶瓷 器的工房、以及使用製作陶瓷不再用到的窯道具以幾何圖形放置而形 成風情獨特的牆——「窯垣」 等。有著許多可感受到陶瓷器魅力的場所。 以製作生產招財貓出名，在 「招財貓博物館」 中聚集了約五千個招財貓。

At Inuyama, Immerse Yourself in History

Located about 30 minutes away by train from Nagoya City, Inuyama castle town is a town with more than 400 years of history. Inuyama Castle, one of the castles designated National Treasures, was established in 1537 and has Japan’s oldest existing castle tower. It may be fun to observe the castle in comparison with Nagoya Castle and other castles. At the base of Inuyama Castle, Sanko Inari Shrine is located. This historical shrine has been watching over the town as the home of the guardian god of the lord of Inuyama Castle. This shrine offers heart-shaped wooden votive plaques! They are said to bring advantage in romance. The castle town also has many remains from the 17th -20th century. A rental kimono service is available in the town, so you can stroll in the quaint town wearing kimono. Strolling around the town, you can find some delicious foods that can be eaten even while walking.

Later in historical time, the Museum Meiji-Mura offers an atmosphere of early modern Japan. This is an outdoor museum with the theme of the Meiji period (the late 19th century – early 20th century) and has in its huge premises more than 60 buildings moved from their original places. With various buildings, including schools, churches, and houses of prominent historical figures, including famous novelist Natsume Soseki, as well as a prison, you can walk around and learn about the Japan of those times. “Haikara Ishokan” offers a rental service of unique Meiji-style clothes, including Western-style dresses and hakama for students as well as a service that allows you to walk around the facility wearing a rental costume*. You can take “time slip” photos of yourself against the backdrop of beautiful early modern architecture of Japan. *First come first serve basis (20 people) 時代變遷，在 「博物館明治村」 可體驗到近代日本的氣氛。以明治時 代 （19 世紀後半至 20 世紀初） 為主題的戶外博物館，廣大腹地內遷築了 60 棟以上的建築物。有學校和教會、夏目漱石等偉人的宅邸，甚至還有 監獄，在此漫步遊覽的同時還可 以了解當時的日本的情景。 「復 古 衣 裝 館」提 供 租 借 服 裝 的 服 務，可以體驗身著明治時代風格 的洋裝、學生服等獨特衣著 （每 日還提供 20 個名額可以穿著租 借的服裝在村內漫步） 。以美麗 的近代建築為背景，拍出彷彿 回到過往時光的照片。

Aichi's Delicious, Traditional Food 擁有歷史的飲食——愛知美食
One type of Aichi’s typical delicious food, called “Nagoya-meshi,” are dishes with miso, such as miso-katsu (cutlet), miso-nikomi udon, and misooden. Okazaki City is a big miso producer, which is said to be at the root of Aichi people’s love for miso. “Tsukete-miso-Kaketemiso” is a tube of miso available at souvenir shops and supermarkets. It is highly recommended because you yourself can recreate “Nagoya-meshi” with little fuss. 味噌炸豬排、味噌烏龍麵、味噌黑輪等使用味噌的料理，是 「名古屋飯」 代表性美食之一。據說岡崎市盛產味噌，是愛知的人 們熱愛味噌的起源。使用在伴手禮名產店和超市都能買到的塑膠 軟瓶裝 「味噌醬」 ，便可輕鬆重現 「名古屋飯」 ，非常推薦您來嘗試。 Teb as ak i

Another typical “Nagoyameshi” is spicy tebasaki chicken wings. This tebasaki dish is said to have been born more than 60 years ago when some Japanese izakaya pub used chicken wings instead of broiler chicken in the original recipe because the latter was not available, and the dish became popular. If you can eat tebasaki cleanly by removing the bones nicely, you are a connoisseur of Nagoya-meshi! There are also many other dishes unique to this area that is located between Edo (Tokyo) and Kyoto/Osaka and that has for centuries been actively incorporating cultures from both eastern and western Japan, as well as from overseas. 還 有 辣 味 雞 翅 也 是「名 古 屋 飯」代 表 之 一。起 源 自 昭 和 30 年 代 （1955 ～ 1964） 的一家居酒屋，因當時無法取得固定使用的肉雞，故使 用雞翅來代替，意外大受好評。若能熟練取出雞翅骨頭享用的話，您也 是個名古屋通！此外因地理位置位於東京 （江戶） 和京都、大阪之間，從 以前就積極地吸收日本東西文化以及海外文化，並融入本土衍生出諸 多獨特的本地特色菜單。 Gohei-mochi 五平餅

If you make a little side trip outside Nagoya, you can find other unique delicious dishes. Seto City has “Seto yakisoba,” which uses soy sauce instead of commonly used Worcester sauce. The yakisoba noodles are not greasy but infused with good umami from pork. The local specialty of the area around Toyota City is gohei-mochi, a handy snack made with rice paste attached to a wooden stick, grilled on charcoal fire, and coated with miso paste. Gohei-mochi has different shapes and tastes in different places in the area. What is Shochu?
何謂燒酒 ?
Shochu is a distilled alcoholic beverage that is affordable and popular with a wide range of people. Among various kinds of shochu, the ones that are made by Japan’s traditional methods and have an enhanced flavor of the ingredients are called “honkaku shochu” (authentic shochu). Honkaku shochu can be enjoyed in various styles and goes well with any kind of dish, and is thus well liked by Japanese people. 燒酒，是一種以低價就能享用的酒，相當親民、大眾化。其中，採用 日本獨創傳統製法釀造、又富含豐富原料風味，被稱作正宗燒酒。以 各種飲用方式享用的正宗燒酒，當作餐中酒搭配各種料理也相當適 合，因此深受日本人喜愛。

Kagurazaka Area: a town with Japanese style 能感受到「和風」的街道—神樂坂 After developing as an area with streets lined with samurai residences in the Edo period (16031867), Kagurazaka later became a town of merchants and craftsmen and prospered as an entertainment district, called hanamachi (geisha district). Walking through the area, you can still hear the sound of shamisen practice by geisha girls. Known as a town with slopes, stone-paved alleys, and black walls in a traditional atmosphere, Kagurazaka attracts many Japanese people. Its many charms find expression both in day and at night. Kagurazaka is a place you can enjoy not only the townscape but also Japanese culture at festivals. In July, “Kagurazaka Matsuri” festival is held at which people enjoy Awa-odori dance. “KagurazakaStreet Stage: O-edo Tour” in November offers people an opportunity to enjoy traditional performing arts all over the town.

Going up the slope of Kagurazaka, you will see Zenkokuji (Bishamonten) which is a symbolic existence of Kagurazaka on your left. It has been popular with the area since about 200 years ago and has become the center of Kagurazaka. 善國寺 （毘沙門天）

Kagurazaka and a Literary Figure 深受文豪青睞的神樂坂
One of Japan’s greatest literary figures, Natsume Soseki, wrote about Kagurazaka in some of his novels. He lived in Waseda, which is near Kagurazaka, and therefore often visited Kagurazaka. It is obvious that Kagurazaka has aspects that attracted this literary figure and made him want to write about it in his novels.The house of Soseki in Waseda, where many of his novels were created, is now the “Natsume Soseki Memorial Museum.” In the museum, his study room has been reproduced and you can see various materials related to Soseki, such as drafts of his writings.

Tokyo, except for the islands, most of Saitama, and part of Kanagawa Prefecture used to be included in Musashi-no-kuni (Musashi Province) according to the administrative boundaries that existed until about 150 years ago. The names of areas and stations, such as Musashi-murayama, Musashi-urawa, and Musashikosugi, all derive from Musashi Province. Incidentally, Edo (now Tokyo) was part of this province.

There are 21 stations in and around Tokyo with “Musashi” in its name. Musashi Province was also sometimes called “Bushu” (“warrior province”). There are also five stations with “bushu” in its name (not including freight stations).

This station is on the Tokyu Meguro Line. It was called “Koyama Station” at the time of opening but changed to the current name since there was already “Oyama Station,” which has a different pronunciation but the same Chinese characters. Near the station, there is an 800-meter long arcaded shopping street, Musashi Koyama Shotengai Palm. There is a yakitori shop, where you can buy yakitori and eat it there, a koppe-pan (bread rolls) bakery, and a café serving a huge parfait with a height of 60 cm. The terminal station on the JR Itsukaichi Line. It is the nearest station to Akigawa Valley, where you can enjoy BBQ, camping, walking, and onsen (with accommodation facilities). In front of the station, there is Tokyo Urayama Base, which offers temporary luggage storage, pay shower booths, rental cycles, and a café space, and various guide tour services.

This station is on the JR Chuo Line. According to one conjecture, it is said that “Musashi” was added to the name to avoid confusion because there was already a Koganei Station in Tochigi Prefecture and Shin-Koganei Station on the Seibu Tamagawa Line. Near the station, there is Koganei Park, which is famous as a place for viewing cherry blossoms as well as various wild birds, such as Japanese tits and Japanese pygmy woodpeckers, all year round. Inside the park stands the Edo-Tokyo Open Air Architectural Museum, where historical buildings were brought in from other places, restored to the original state, preserved and displayed.

Bits of Knowledge Related to “Musashi”

It is said that this bridge is called “Ryogoku,” which means “both countries,” because Ryogoku Bridge on the Sumida River was then connecting two kuni (provinces), Musashi-no-kuni and Shimousa-no-kuni (Shimousa Province)*. Wide streets were created around both sides of the bridge and the area was said to be always crowded with people, as it was once Edo’s most popular entertainment quarter.

Directions 1. Pour the sushi vinegar over freshly cooked rice to make the sushi rice. Mix the rice with a rice paddle by gently cutting the vinegar into the rice and cool off the temperature with a fan or the like.

2. Cut down the fish into three pieces and peel off the skin. 3. Peel off the skin of the sweet shrimp from the neck down. 4. Slice the octopus for the neta (sushi toppings) and carve a shallow line vertically with a kitchen knife. 5. Lightly apply water to your hands and hold a small amount of sushi rice. Shari (small oval-shaped rice ball) is better if it is smaller. 6. Take the shari in hand, lightly put wasabi on top and put the neta (sushi topping) on top and squeeze gently. Chef's Advice It was my first time making nigiri sushi. I did not know that I needed to grasp the rice with my fingers instead of the palm of my hands. A lot of rice got stuck onto my hands, but it was worth the fun! When I was tasting the sushi, the rice spread into my mouth and it was an exquisite taste.
It is better to not grasp too strongly when squeezing the rice since it will become soggy. It is also recommended to eat with salt and lime for the whitefleshed fish for a more refreshing taste, and a little soy sauce for the lean fish.
This was my first time making sushi and I did not know that making the shari was this difficult. I was amazed at how the sushi chefs accomplish such difficult task in an instant. I have come to love Japanese foods even more from this experience. I want to tell all my friends that I was able to make sushi all by myself. It was a really good experience for me. Thank you!

The cooking class at Ito Ryokan was an exciting and entertaining time with a restaurant chef. Learning how to prepare those dishes at a local ryokan with friendly staff is also part of the experience and made this moment very special. Ito Ryokan is located in Ningyocho, a shitamachi historic town that retains the atmosphere of the Edo period (1603–1867) and has been renewed in 2018. Guests are welcomed by the friendly

from a Boat on the Biwako Sosui
The Biwako Sosui, a canal connecting Otsu (Lake Biwa) in Shiga Prefecture and Kyoto, was built in the years 1885 to 1890 for water supply. Though the water transport once ebbed and finally ceased because of development of land transport, a boat tour has been revived and operated for about 7.8 km from Otsu to Keage in the eastern part of Kyoto City since spring 2018. From the boat you can enjoy fine views of cherry blossoms in spring and colored leaves in autumn. Located in Chikuma City, Nagano Prefecture, Togura Kamiyamada Onsen is a popular onsen resort where many visitors to Zenko-ji Temple, one of the most famous temples in Japan, drop in after visiting the temple. It has a 120-year-old history and is famous for “hot water for beautiful skin” due to the high-quality water coming directly from the spring source. This onsen resort has 30 accommodation facilities, including ryokans (Japanese-style inns) and Western-style hotels, along with six day-use hot spring facilities. The alkaline sulfur spring water has a slight sulfur smell but is mild on the skin, so anyone from children to the elderly can enjoy it. The spring quality has unique characteristics; the area close to the Chikuma River has clear water with no color or light-green water, while the area near the mountains has water that contains more sulfur and forms yunohana (hot-spring mineral deposits resembling flowers). You can enjoy a night tour visiting pubs and restaurants as well as cork gun shooting parlors. You can also enjoy traditional Japanese culture, including a live performance by geisha. Nearby is the Mori district, said to be Japan’s largest “apricot village.” From mid-June to early July, visitors can enjoy picking apricots as well as making apricot jam and glazed apricots. A firework festival is held at the Chikuma River on August 7, which is the Star Festival day on the lunar calendar, every year. In autumn, enjoy fruit picking, including apples and grapes, as well as viewing the leaves beautifully turning color to red and gold. In winter, relax in the onsen while gazing out at the surrounding mountains beautifully covered in snow.
