BARBADOS CROP OVER FESTIVAL 2024
A Culinary Celebration Of Tradition And Innovation
For food lovers and cultural connoisseurs alike, the annual Crop Over Festival in Barbados promises a tantalising exploration of the island's rich culinary heritage. As Barbados commemorates the 50th anniversary of this iconic celebration in 2024 from May 31st to August 10th, the festival offers a unique opportunity to immerse oneself in the vibrant flavours, traditions, and innovative fusions that define the island's diverse culinary landscape.
Deeply rooted in Barbados' cultural heritage, the Crop Over Festival has evolved from a simple celebration of the end of the sugar cane harvest to a multifaceted extravaganza that captivates both locals and visitors. This year's festivities promise to enchant attendees with a delightful blend of indigenous events, culinary experiences, and innovative attractions that pay homage to the island's storied past while embracing its vibrant present.
One of the highlights is the Crop Over Sweet Limes (The Cavalcades), a series of 12 events scattered across the island, partnering with local entrepreneurs and village shops. These
intimate gatherings offer a chance to indulge in the island's signature dishes, such as the beloved pudding and souse, and cow heel soup, while savouring the rich flavours of Barbados' rum heritage.
The Ceremonial Delivery of The Last Canes on 6th July at The Botanical Gardens marks the official start of the festival. This event honours the struggles and sacrifices of Barbados' ancestors while celebrating their achievements. Attendees can revel in a true plantation feast, complete with traditional delicacies like sugar cakes, snow cones, and pudding and souse, all expertly crafted by local chefs who have participated in the National Independence Festival of Creative Arts (NIFCA).
For those seeking a more immersive cultural experience, the Bridgetown Market offers a unique opportunity to explore the island's culinary artistry. Pop-up craft villages at locations like Golden Square, Independence Square, and Jubilee Gardens will showcase the talents of local artisans, culinary artists, and
craftspeople on specific dates throughout the festival.
As the festival reaches its crescendo, Grand Kadooment, the island's biggest street party, promises to be a true feast for the senses. While revellers dance to the pulsating rhythms of Barbadian soca music, they can indulge in a mouth-watering array of Bajan cuisine at the iconic Cou Cou Village. The aroma of traditional dishes like cou-cou and flying fish, macaroni pie, and peas & rice with stewed meats fills the air. Vendors also offer classic Bajan nibbles like fish cakes, fried chicken, and fish or ham cutters, to name a few. To quench their thirst, festival-goers can sip on refreshing rum cocktails like the Bajan rum punch or enjoy ice-cold local beers. Pop-up food shops and bars throughout the village ensure there is a taste of authentic Bajan hospitality around every corner.
Barbados is renowned for its unique Bajan seasonings and pepper sauces, which add a distinctive flavour to its cuisine. These seasonings, often featuring a blend of herbs,
spices, and hot peppers, are integral to many traditional dishes and are a must-try for any culinary enthusiast.
Additionally, no discussion of Barbadian cuisine would be complete without mentioning that rum, the island's most famous export, was invented in Barbados. The island's rum heritage is celebrated throughout the festival, with numerous opportunities to sample this iconic spirit in various forms.
Beyond the traditional festivities, the 2024 Crop Over Festival promises to captivate attendees with innovative culinary experiences. At some of the all-inclusive events, local chefs and culinary artists have been challenged to craft unique canapés and dishes using iconic Barbadian ingredients like black belly sheep, molasses, and rum. These innovative dishes showcase the island's ability to fuse traditional flavours with modern culinary techniques.
"Food is always infused at every single event," explains Stacia Bryan, Festival Events Planner at the National Cultural Foundation (NCF). "We see Crop Over as an opportunity for people to show off what they're good at, and we allow that to happen within the confines of the NCF."
For first-time attendees, Bryan recommends embracing the festival's diversity, as there is something for everyone to enjoy. "It's not just a 'beads and feathers carnival'," she notes. "It has a deeper meaning, rooted in economics, culture, and our society. But there is something in Crop Over for everyone."

BENTO BOX'S EVOLUTION
Bento Box, one of the "OG's" of sushi delivery in Barbados, has long been synonymous with innovation, freshness, and a commitment to healthier dining options. But where is Bento Box heading next? The answer lies in a blend of tradition and innovation. Bento Box is undergoing a culinary makeover, introducing some exciting additions such as Korean chicken and pork, sushi nachos and the continuation of sushi dogs to its menu - taking the concept of fusion cuisine to new heights.
A NEW RESTAURANT: SAKE
Bento Box is expanding its horizons with the arrival of its new restaurant, Sake, at the end of the year, location to be announced. Sushi lovers and asian cuisine enthusiasts eagerly await the unveiling of this new culinary revolution on the South Coast of Barbados. Keep your eyes peeled for more details as the unveiling draws near.
SUMMER OF SUSHI
At Bento Box's flagship location in Warrens, patrons can look forward to a summer filled with sushi specials. A full menu overhaul is underway, featuring an array of Korean-inspired touches. Nothing pairs with sushi like a homemade sriracha mayo with organic chandon beni - a local more sustainable alternative to cilantroand a kick-ass bowl of house fermented kimchi. Stay tuned for a new menu out of Bento Box's front-and-central food truck in the south coast’s premiere outdoor food court. New flavour combinations of delicious melt-in-your mouth Korean style Bao Buns are going to make that food court smell like heaven. Not to mention how good the late night Bao Bun will taste on the way home from The Gap on a Saturday evening.
HEALTH, WELLNESS, SUSTAINABILITY
Bento Box is committed to promoting a healthier lifestyle, sourcing ingredients locally and eschewing artificial additives like MSG. From
homemade kimchi to freshly squeezed juices and lemonades, every item on the menu reflects a dedication to quality and sustainability. Bento Box is committed to minimising waste wherever possible, implementing a closed-loop system that repurposes ingredients like cucumber centres through a cold pressed masticating juicer to create a cucumber lemonade.
SPEARFISHING AND FORAGING
Originally spearfishing on the island's west coast, Scott's love affair with sushi began in his own backyard. Drawing inspiration from the abundance of Bajan "pear" (avocado) and Julie mango trees in his backyard, he began experimenting with making sushi at home, although he admits that he wasn’t very good at it initially. He and his wife, Astra, experimented with the flavours at home.
THE BIRTH OF A LEGEND: "THE ORIGINAL BENTO BOX"
Through his sushi experimentations arose fulfilling orders for deliveries across the island. Then, the original famous "Bento Box"- an array of sushi served in a pizza box sold at the prepandemic Holders Season festival. He sold out every Saturday so consistently that he decided to open a restaurant, and thus Bento Box was born.
CHEF SCOTT AMES
At the heart of Bento Box's success story lies its founder, Scott Ames. A seasoned chef and visionary entrepreneur, Scott runs a catering company and trains chefs around the world. His journey to provide some of the freshest, healthiest, most affordable and consistent sushi in Barbados began over ten years ago when he entered the sushi scene.
Armed with a green thumb himself and a passion for fresh, locally sourced ingredients, Scott also has a vision for design and creating unique restaurant spaces that make you want to dine-in. He managed to get the flavours of Bento beyond a delivery sushi filled pizza box and into a modern, hip, vibrant sushi restaurant with a modern feel inside that you would never know was there alongside a highway in central Barbados.
Sitting there with him at the marble bar top (great for working with a laptop and enjoying sushi, by the way) we exchanged photos of our fruit vines at home. One thing we appreciated about Scott is that he is always thinking about who is growing and crafting the ingredients Bento is using and sourcing locally to support farmers when he can. We could tell he loves sharing his passion for fresh, delicious cuisine with the people of Barbados.
For Scott, it's not just about creating a culinary destination; it's about fostering a sense of community and camaraderie. From supporting local farmers and artisans to providing opportunities for aspiring chefs, he remains steadfast in his commitment to giving back to the island that has given him so much.

The Barbados Food & Rum Festival stands as a celebration of the island's culinary prowess and storied rum heritage, offering a tantalising gastronomic adventure like no other. What began in 2009 as the Barbados Food & Wine Festival has evolved into a month-long extravaganza, expertly curated by the Barbados Tourism Marketing Inc. Initially launched in partnership with Travel + Leisure, the festival embraced its rum legacy in 2016, rebranding as the Barbados Food & Rum Festival. This transformation honoured Barbados' indigenous spirit and the island's storied history as the birthplace of rum.
Over the years, the festival has grown in both size and scope. Today, it is an eagerly anticipated event, turning October into a month-long gastronomic celebration. The festival draws a global audience, featuring a mix of local and international chefs, renowned rum distilleries, and culinary personalities.
In 2022, the festival returned after a two-year hiatus with a new theme, "Feed the Future," and a partnership with Condé Nast. New events such as the Junior Chef Cook Off Series, Rise and Rum-The Breakfast Beach Party, and Liquid Gold Feast quickly became festival favourites. For 2024, attendees can look forward to the Bajan Fair, a family-friendly event that promises to add a new dimension to the festival.

The Barbados Food & Rum Festival is deeply committed to celebrating and highlighting local culinary talents. NURTURING FUTURE CULINARY TALENT
One of the festival's core missions is to nurture the next generation of culinary talent in Barbados. The Junior Chef Cook Off Series offers an eight-week training programme, including culinary and destination tours, challenges, and elimination rounds. Contestants will hone their skills at the esteemed Jean and Norma Holder Institute, earning a CVQ certification upon completion. The top 10 finalists will compete in the semi-finals, and the top two will battle it out live for the title of Junior Chef Champion 2024. The winner will receive a sizeable cash prize, culinary scholarship, internship at a fine dining restaurant, and mentorship from an official Barbados Food & Rum Festival chef. The 2024 Junior Chef competition will be filmed and curated similarly to Master Chef Junior and Chopped Junior.

4-6 fresh basil leaves
1 oz fresh lemon juice
0.5 oz simple syrup
Splash of soda water

GINGER MINT MOJITO
2 oz Coco Hill Forest Ginger Liqueur
1 oz fresh lime juice
1 tablespoon sugar
6-8 fresh mint leaves
Soda water
Lime wedge and mint sprig for garnish Ice cubes
1. In a glass, muddle together the lime juice, sugar, and mint leaves until the sugar is dissolved and the mint is fragrant.
2. Fill the glass with ice and add the Coco Hill Forest Ginger Liqueur.
3. Top with soda water and stir gently.
4. Garnish with a lime wedge and mint.
SPICY GINGER MARGARITA
2 oz Coco Hill Forest Ginger Liqueur
1.5 oz tequila
1 oz fresh lime juice
0.5 oz agave syrup
Chilli pepper slices (optional for garnish) Ice cubes
1. Rim a margarita glass with salt, if desired.
2. Fill a shaker with ice and add the Coco Hill Forest Ginger Liqueur, tequila, lime juice, and agave syrup.
3. Shake well and strain into the prepared glass filled with ice.
4. Garnish with chilli pepper slices for an kick.
FOREST BREEZE
1.5 oz Coco Hill Forest Ginger Liqueur
1 oz coconut water
0.5 oz pineapple juice
Splash of club soda
Pineapple wedge for garnish
Ice cubes
1. Fill a shaker with ice and add the Coco Hill Forest Ginger Liqueur, coconut water, and pineapple juice.
2. Shake well and strain into a glass filled with ice.
3. Top with a splash of club soda and garnish with a pineapple wedge.
GINGER SUNSET
2 oz Coco Hill Forest Ginger Liqueur
1 oz orange juice
0.5 oz grenadine
Orange slice for garnish
Ice cubes
1. Fill a glass with ice and add the Coco Hill Forest Ginger Liqueur and orange juice.
2. Slowly pour the grenadine over the back of a spoon to create a layered effect.
3. Garnish with an orange slice and enjoy this refreshing cocktail with a tropical twist.

TAPAS BARBADOS

We sat down for a coffee with Franco to talk to him about his fifteen-year journey with one of the south coast's favourite boardwalk dining spots. Tapas has become a beloved staple for both locals and visitors alike, known for its global cuisine.
A JOURNEY OF CULINARY INNOVATION
When Tapas opened its doors in 2009, "the culinary landscape was fiercely competitive," Franco says. The founders, Alfredo Giovine and Franco Parisi, saw an opportunity to create something unique—a dining experience not confined to the borders of any single cuisine.
Over the years, Tapas has crafted a menu that reflects a fusion of Thai, Bajan, Italian, and Mexican influences, creating a global spread of flavours that resonates with a diverse clientele.
From specialty dishes like a succulent rack of lamb to a constantly evolving array of specials, the restaurant ensures it lives up to its motto: "Good food, good service, good value for money."
FUN FACT
The restaurant's concept was inspired by the amusing tale of historic Spanish tradition where it was mandated by the King that small delicious meals, or "tapas," be served with alcohol to keep people sober as they drank throughout the evening. Embracing this tradition, Tapas decided to adopt the tapas style as a celebration of global traditions and enjoying oneself in good company.

Mid-coffee, we stop to look out at the sea, and Franco brings it back to community. He shares that Tapas was designed as more than a place to eat; it was envisioned as a space for interaction and camaraderie. The small plates concept
encourages sharing, turning meals into a social event where companionship and community engagement are as much a part of the experience as the food itself. The recent renovations, including an expanded outside deck and a vibrant mural by a local artist, further enhance this communal atmosphere, inviting diners to relax and enjoy the ocean views in a refreshed setting.

In a landscape where many businesses struggled to survive, Tower Café not only weathered the storm but thrived, becoming a beloved hub for locals and visitors alike. Buoyed by this success, a second location was launched in Warrens, St. Michael, expanding their presence and commitment to the local community.
Upon stepping into any Tower Café location, guests are greeted with soft music and natural light, exuding warmth and comfort. The aesthetic seamlessly blends recycled pallets with a modern farmhouse vibe, creating an inviting ambience. Black metal chairs, industrial lighting, and high white ceilings contribute to the café's distinctive
charm. Remarkably, all fittings within the cafés are sourced from Carter's, further cementing its ties to the local community. Seasonal decorations, crafted from materials found within Carter's, infuse the spaces with dynamic décor—especially during the holiday season.

Since January 2020, Monique Best has served as the backbone of The Rustic Chef's kitchen operations. As Chef Dawid’s secondin-command, Monique's culinary expertise has been pivotal in crafting the unique flavours that patrons have come to adore. Her journey in gastronomy extends beyond the restaurant's kitchen— Monique also runs a beloved food stall at Oistins Fish Market named Shirley's. With The Rustic Chef's expansion, Monique will soon transition to the restaurant’s second location under the continued leadership of Chef Dawid - promising to bring her signature flair and innovation to the south coast.
JONATHAN DENNY-YEARWOOD: THE PILLAR OF SERVICE
Jonathan Denny-Yearwood, the first team member to join The Rustic Chef on December 1st, 2019, epitomises the spirit of growth. Starting his journey as a Kitchen Porter while pursuing a Bachelor’s degree in Hotel Management, Jonathan's dedication saw him rise through the ranks to become a Front of House Supervisor. His academic achievements are complemented by a Mixologist Certificate, acquired through company-sponsored training, allowing him to charm guests not only with his leadership but also with his cocktails.
HALINA PNIAK: THE HOSPITALITY ANCHOR
Halina Pniak, another esteemed Front of House Supervisor, brings a unique blend of skills to The Rustic Chef team. Currently pursuing a Bachelor’s degree in Psychology, Halina applies her understanding of human behaviour to enhance guest experiences. Like her colleagues, she has focused on her mixology repertoire, adding depth to her role as a supervisor and bartender. Halina’s academic and professional journey exemplifies The Rustic Chef's commitment to supporting their team's educational pursuits and career aspirations.
KWAME YEARWOOD: THE SPIRITED SUPERVISOR
Kwame Yearwood's story at The Rustic Chef progressed quickly. Starting in June 2021 as a Kitchen Porter, his exceptional work ethic and knack for hospitality fast-tracked his promotion to the Front of House team and then Bar Supervisor. Currently pursuing a Bachelor’s degree in International Tourism Management, Kwame has also excelled in mixology at The Rustic Chef. His journey reflects the restaurant's ethos of nurturing potential and rewarding hard work.
CHEF DAWID: THE VISIONARY LEADER
While this time around Chef Dawid preferred to shine the spotlight on his team, his leadership has been instrumental in guiding The Rustic Chef through its formative years. Ingredients: 2 oz Sweet & Dandy Mauby Syrup, 1 oz rum (optional for mocktails), juice of half a lime, sparkling water, ice
Method : In a highball glass, combine the mauby syrup, rum (if using), and lime juice. Fill the glass with ice and top up with sparkling water. Stir well and garnish with a slice of lime.
TROPICAL GINGER PUNCH
Ingredients: 1 oz Rose & La Flamme Ginger Beer Syrup, 2 oz pineapple juice, 1 oz orange juice, sparkling water, ice, pineapple slices for garnish
Method: Mix the ginger beer syrup with pineapple and orange juices in a shaker. Pour over ice in a glass and top with sparkling water. Garnish with a slice of homegrown pineapple.

Chef Sophie Michell Pioneers Dining in Barbados with Every Season
In the heart of Barbados lies Speightstown, a northwestern part of the island with charming quaint history, featuring small windy streets, cobblestone architectural elements, and historic buildings. Local & Co has emerged as one of the first places in Speightstown to "come back to life" and has been a key piece of the main street's revival. Almost overtaken by commercial shopping centres, the importance of keeping that small slice of beachy paradise as historical and local as possible is of key importance. Dedicated to innovation in sourcing locally and culinary excellence, Chef Sophie Michell has been continuously reinvigorating its concept since its inception three years ago. Each season, the restaurant has unveiled something new, ensuring that every reopening feels like a fresh experience for locals and visitors alike.
Founder and visionary Ian Mcneel has been working the Farm-To-Table concept since 2015— engaging with community farmers, conservation projects, and rehabilitating a sand mine into a nature reserve. Not Barbadian by birth, Ian grew up on the island with his parents in the 70s and feels most at home on the rock. He continues to provide jobs, build the local food economy and help Barbados in its reforestation efforts. His dedication to the opening, expansion and consistency of innovation is a testament to his knowledge of good, slow food. While Ian could be anywhere in the world, he chooses to be in Barbados, and that alone speaks for his love of the island and its people.

Over the last 18 months, Local & Co has truly "come into its own," to use Chef’s words herself. Local & Co has been gaining significant traction in the UK and expanding its reach both demographically and locally. Esteemed chefs and DJs from the UK have graced its tables, sharing their experiences on social media and contributing to the restaurant's organic growth. One of the island's hottest aesthetics, the decor wows even from the outside. Celebrations for special occasions light up in the private room upstairs with an ocean view and state of the art professional hosting kitchen. Local & Co offers two distinct dining experiences: casual dining on the sun deck and a more upscale setting for fine dining and special occasions. Both areas showcase the restaurant’s epic beachfront and unmatchable turquoise, rock-free water.
FARM-TO-TABLE - REDONE FROM SCRATCH
Local & Co’s commitment to a farm-to-table philosophy has not come without its challenges, especially given the inconsistency of local produce on the island. When Chef first moved to Barbados, sceptics doubted the feasibility of her vision. The local sentiment was that the beef wasn't up to par, the fish supply was lacking, and vegetable availability was unpredictable. However, through sheer determination and a focus on sustainability, Local & Co has proven that it is not only possible but also beneficial to embrace local sourcing. This approach supports the island’s economy, reduces environmental impact, and provides healthier options for the community.
A MENU THAT TELLS A STORY
Chef has curated a menu that not only delights the palate but also tells the story of Local & Co's philosophy. Highlights include sushi-grade tuna tartare with pickled red onion, sea purslane, and cucumber served with potato crisps; and jerkspiced pork belly bites smoked for six hours and served with a marinated watermelon barbecue sauce. The innovation extends to the use of leftovers: watermelon rind is pickled, leftover vinegar from Scotch bonnets enhances Bloody Marys, and day-old focaccia transforms into breadcrumbs for croutons. The innovation keeps guests on their toes and keeps them coming back
for more—like their homemade whipped butter. Homemade offerings, from smoked meats and house-fermented pickles to freshly baked bread, keep the meal well accompanied. Seasonal cocktails use local ingredients when possible, featuring unique twists on jackfruit, soursop, watermelon and jamun.
COMMITMENT TO ZERO WASTE
During our conversation with Chef Sophie, we marvelled particularly at the wastage of the food industry—especially on small islands where things are imported and don't always hit peak ripeness at the prime time for restaurants to process them. At Local & Co, Chef Sophie trains her staff to be dedicated to Zero Waste practices. When asked about her secrets, she said that leftover coconut meal from homemade coconut milk finds new life in cinnamon buns, and okra replaces eggs in vegan banana bread. Even the by-products of juicing, like beetroot remnants, are used creatively in icing for cakes. It reminded us to sit down for 5 minutes of cappuccino and waves to pick up a cinnamon bun next time we were in Speightstown, and probably wash it down with a fresh seasonal juice or ginger smash from our favourite bartender, Tahira.

Heading towards the north of Barbados in St. Peter, sits Haymans Market, a transformed historic sugar factory that had been derelict until its purchase in 2019. The factory underwent an incredible revival, emerging as a lively market where locals and visitors alike gather to enjoy live music, artisan crafts, events, and gourmet eats.
Purchased in 2019, the factory has been restored, retaining its original structure while embracing a fresh, contemporary vision. The Weatherhead family, inspired by the thriving market scenes they encountered abroad, set out to create a unique experience that would celebrate the vibrancy of Barbados and its talented artisans.
The project, which began during the COVID-19 pandemic, officially opened its doors to the public in March 2024. Since then, Haymans Market has continued to evolve, welcoming an expanding
selection of local businesses, vendors, and artisans, each contributing their unique flair to this dynamic marketplace.

The artisanal ice cream scene in Barbados has really taken off in the last few years with an array of small businesses serving up creative, rich frozen treats, each with their own unique twists. One couple in particular has created something really unique to the island, with what started as a COVID hobby has become a well-loved sweet treat spot in the new Haymans Market called Dots & Swirls.
Husband and wife, Scott and Lisa Cooley's love story is the epitome of being in the right place at the right time. Over a decade ago, their paths happened to cross and they hit it off while vacationing separately at the same hotel in Barbados. After their Caribbean holidays ended, they returned to their homes - Scott in Vancouver and Lisa in Trinidad— and back to their lives. A year later they returned to Barbados and decided to make it their home — where better than the place they first met and fell in love? Since then, they've built a beautiful life here, complete with two daughters, thriving careers, and now, an unexpectedly sweet business.
Like many during COVID-19's lockdown, the Cooleys found solace in simple pleasures at home. While others took up gardening, baking, or making TikToks, Scott channeled his time into crafting homemade ice cream - a fun family activity to satisfy their collective sweet tooth. When Scott realised how much he enjoyed this, he started practicing to perfect his recipes, striving to make something that not only tasted good but was good for you as well. Both Scott and Lisa value the importance of living a balanced lifestyle and that has translated into their ice cream, using only high-quality
ingredients without artificial colours, sugars or preservatives.
Now, a few years out of COVID, they took a leap of faith and turned their at-home hobby into a fully operating brick and mortar business in Haymans Market. Upon entering Haymans Market, you're instantly drawn to the delightful Swirls ice cream trailer serving up thick, creamy soft serve in rotating flavours. Swirls is now a popular go-to at the Market and is frequented by both locals and tourists alike coming to explore the Market and grab a sweet treat.
As you make your way downstairs you will see their recently opened sister location, Dots, which specialises in Japanese Mochi ice cream, the first of its kind on the island. If you haven't tried mochi ice cream before, you're in for a treat! Mochi ice cream is a chewy Japanese bun made from rice flour to give it a chewy exterior with a creamy ice cream interior. This is a MUST try, the texture is so unique and satisfying.
The Cooleys are committed to showcasing Barbados' vibrant agricultural bounty through their flavours and support for local growers. As the seasons change, so do the flavours, highlighting what is in abundance from our home soil and the ingredients it offers. Two of our favourite Mochi flavours that are inspired by local flavours are Passion Fruit and Mango which are both in abundance on the island at this time of year. Another favourite if we're looking for a classic, rich and creamy treat is their Chocolate and Vanilla Swirl in a gluten free waffle cone. When you walk into Bombas, you can choose from bar, indoor or outdoor seating. In the back, you can take a photo on handmade coconut tree stump stools with seats wrapped in vibrant African Kitenge fabric prints. Wayne shares how he got the inspiration from a café in Tanzania, and is surprised more people don't use upcycled stumps as stools. The green, yellow, black, and red colours are healing for the spirit, making you feel at home amongst comfort food offerings including bread pudding, cheesecake, curries, and hearty pastas.
BACK TO BASICS - SHEEP, FISH & VEGETABLES
We got a true farm-to-table experience meeting Wayne Alleyne at his sheep farm in St. Joseph before reuniting at Bombas, where we watched him fillet fish during our interview. A skill often lost in younger generations these days, we recognised the skilful filleting techniques. As his hands deftly cut the fillet to keep the cleanest
portion of meat, he repeated the cuts again and again like muscle memory. Handling lionfish barehanded didn't seem to faze him at all. In fact, he looked more at our photographer than us when manoeuvring the fresh catch of the day around the cutting board seamlessly and skilfully.
A father of three children, husband, owner of the restaurant, aspiring Airbnb host, sheep farmer, soon-to-be chicken handler, and world traveler, Wayne has a heartbeat of many passions, and his love of the land, nature, and his animals is clear in every action he does. Visiting inside the sheep's pen with him, he scoops up a four-day-old lamb and pets it while we walk around his farm. Surrounded by banana trees and lush green grass even during the dry season, you can see how the animal manure keeps the ground fertilised with nutrients that get pounded back into the soil by the sheep's hooves—a practice that actually allows the local meat to be raised more naturally with fewer antibiotics and hormones.
Over at the restaurant which is located at Mullins Beach, St. Peter, we pulled up to the pristine turquoise waters of the west coast. While chatting inside Bombas, Wayne worked on cleaning a
beautiful cavalli fish from scratch. He does almost everything in his kitchen from scratch. One of his favourite things to make is a variety of fresh fruit sauces to serve with fish, using local fruit such as gooseberries, dunks, passion fruit, and carambola to keep everything healthy and light while using local ingredients. His favourite fish is barracuda, appreciating its flavour which was a staple from his childhood.
CHILDHOOD INSPIRATION, TRADITION & LEGACY
Originally from Black Rock, St. Michael, Wayne's goal with his cooking was always to take the simple stories of his childhood, shining light on traditional Barbadian living from the sea and family vegetable garden, with few processed staples. He recalls tales of cooking fish daily from his consistent fisherman, and how after almost 40 years, he is still doing it today. He has been sourcing his fish locally and cleaning it himself for over 30 years. Most fish are from Pile Bay Fishing Complex in Black Rock, St. Michael. His christophene, pumpkin, and okra are also locally sourced and employ small farmers he
has partnered with for decades to create healthy organic vegetables year-round. Investing in local agriculture, Wayne minimises his reliance on imported foods.
Lionfish are harmful invasive species...It is surprising that more restaurants don’t feature lionfish more on their menus. To see Wayne working with the fish fearlessly and freely makes one feel better about eating food that can sometimes be considered taboo.

The 20+ year owner of the west coast gem Bombas, Wayne has been serving up fresh seafood dishes and hearty delights like impressive lobster spreads and as well as globally-inspired curries from his travels in India and Southeast Asia. The founding of Bombas was always about a base of fresh seafood and vegetables, which then evolved over the years from his global travels throughout Asia and his ties to Tanzania through his wife's family. The George Washington Café, originally opened 12 years ago, was revived in 2022 by its current tenants and established itself as a go-to spot for those craving genuine South American delights. The arepas, a South American staple corn cake, come highly recommended by diners and are stuffed with a choice of savoury fillings ranging from meats to flavourful cheeses. THE MUSEUM HOUSE
The George Washington Museum's tour takes you through a unique lens of historical perspectives about George Washington’s life and time spent in Barbados. One of our favourite parts of the tour explains more about how George ended up in Barbados in the first place, as doctors in Virginia had sent his half-brother Lawrence to the island for its healing properties and fresh sea air. As an up-and-coming destination for those seeking relief from various ailments due to its tropical climate, in 1751, at the age of 19, George and Lawrence visited Barbados where he learned about pineapples and other tropical food he would later bring back to America.
WASHINGTON'S KITCHEN
The house is stunning, and you can guess our favourite room—which is actually outside—as traditional kitchens of the time would have been to help smells, smoke, and heat stay away from the home—especially in the summer time heat of the tropics. People working in kitchens those days were extra tough, ovens used to be on 24/7 so it was always hot—kitchen work was particularly challenging with open fireplaces that could cause fires and having to heavily salt things to preserve them.
With plans from 1804 and knowledge of 18thcentury kitchens in Barbados, the layout of the kitchen was reconstructed to its original state. How it looks today is very similar to how it looked in George Washington's time—if not nearly identical. The craftsmanship and stonework of the kitchen are of evident quality - even the fireplace still works!

If you're particularly lucky and interested in history, try to go on Dr. Karl Watson's tour, one of the most notable historians on the island. As the world embraces the healing power of wholefoods, Barbados’ Rastafarian community has long cherished the secret to vitality—nature’s bounty. Approximately 3,000 Rastafarians reside in Barbados, leading the way towards a healthier future, one meal at a time.
The Rastafarian religion emerged in the 1930s, spreading throughout Africa and the Caribbean, and reached Barbados around 1975. Despite being one of the newer religions, their food philosophy might just hold the key to a longer life. Their diet consists mainly of fruits and vegetables grown on their own land, seasoned with coconut, chillies, and local herbs and spices. Their primary sources of protein are lentils and legumes, staples in many of their dishes.

REFRESHING SUMMER ROLLS
With Spicy Peanut Dipping Sauce
INGREDIENTS
6 Rice Paper Wrappers
A handful of Lettuce Leaves
¼ head Red Cabbage, shredded
1 Large Carrot, shredded
1 Large Cucumber, sliced thinly and seeds removed
1 Avocado
A handful of Basil
A handful of Mint
A handful of Cilantro
Spring Onion
24 Shrimp (4 per roll)
FOR THE PEANUT SAUCE
¼ cup Peanut Butter
2-3 tablespoons Fish Sauce
1 tbsp Sriracha
Water to thin
Refreshing summer rolls packed with herbs, veggies, and shrimp, paired with spicy peanut sauce - a light, delicious celebration of summer's bounty. These visually appealing and easy-to-make rolls are sure to impress guests at any gathering.
METHOD
1. Prepare all of your ingredients for the rolls:
2. Thinly shave/slice the cabbage, carrots, and cucumber. Remove the seeds of the cucumber to get rid of the excess moisture. Set aside.
3. Slice your avocado and tear up your herbs off the stems. Set aside.
4. Peel your shrimp and boil until cooked. Set aside.
5. Once all of your ingredients are prepared, take a rice paper wrapper and submerge it in a bowl of water or under the tap. Do not wait until it goes soft; hydrate it enough for the entire wrapper to be wet and then remove. It will continue to soften once you start adding ingredients.
6. Lay the wrapper down on a plate or cutting board and add a few of each of your ingredients to the centre of the wrapper, starting with your herbs and lettuce, which will help act as a barrier to avoid punctures.
7. Fold the bottom of the wrapper over the ingredients and gently tuck the ingredients under the wrapper. Fold the sides over the ingredients. Continue rolling and tucking the rice paper to form a roll. Repeat with the remaining wrappers.
8. In a small bowl or jar, combine peanut butter, fish sauce, and sriracha. Add hot water little by little and whisk until you have a smooth, creamy sauce.
TROPICAL MANGO CEVICHE

Serves 2 to 4
INGREDIENTS:
2 Filets of White Fish (Mahi Mahi, Snapper, Amberjack, Barracuda all work well)
1 Mango
½ Red Onion
1 Cucumber, deseeded
½ Cup Tomatoes
1 Jalapeño, de-seeded
Handful of Cilantro
½ cup fresh lime juice
2 tbsp olive oil
Salt and pepper

INGREDIENTS
For the Salad
1 cup roughly chopped basil
1 cup roughly chopped mint
1 cup roughly chopped cilantro
2 green onion stems
1 cup green olives
2 cups chopped Tuscan kale
1 cup toasted pumpkin seeds

½ - 1 lemon (to taste)

For the Farro
1 cup Farro
2 ½ cups Water
METHOD
1. Cook farro based on package instructions. Set aside to cool.
2. Chop kale and massage with a drizzle of olive oil and lemon.
3. In a large bowl, combine basil, mint, cilantro, kale, and olives. Once the farro has cooled, add it in along with the pumpkin seeds and crumbled feta.
4. In a separate bowl, combine olive oil, red wine vinegar, garlic, salt, pepper, and lemon juice. Whisk together to form a dressing and drizzle over the salad. Taste as you go to get the perfect balance of dressing for your preference.
GARLIC & ROSEMARY ROASTED CHICKEN
Serves 4 INGREDIENTS:
1 Amir's Fresh Halal Chicken (1.5kg/3lbs)
1/2 cup butter, softened
2 tbsp finely chopped fresh rosemary
2 garlic cloves, minced
2 spring onions, finely chopped
2 tbsp chopped parsley
1 1/2 tbsp chicken bouillon powder
4 medium red potatoes, sliced
Olive oil cooking spray
Lemon wedges for serving
PREP: (15 MINS)
Preheat oven to 400°F. Line a baking tray with foil.
Gently loosen the skin from the chicken breast to create a pocket.
Mix together the softened butter, chopped rosemary, minced garlic, chopped spring onions, parsley and 1/2 the bouillon powder. Season with pepper.

Place the chicken on the prepared tray and arrange the sliced potatoes around it.
Spray the potatoes with olive oil spray and sprinkle with remaining bouillon powder and pepper.
Roast for 50-60 minutes until potatoes are golden and chicken is fully cooked.
Let the chicken rest 10 minutes before slicing.
TO SERVE:

SAFFIE'S VEGAN CHOCOLATE MOUSSE
Serves 2 to 4 people, depending on the portion size.
INGREDIENTS:
¾ cup / 180 ml aquafaba (water drained from a can of low-sodium chickpeas)
½ tsp cream of tartar
10 g / 2 tsp coconut oil
1 tsp vanilla extract
140 g / 5 oz dark 70% cacao vegan chocolate
25 g / 2 tbsp white sugar (optional, adjust depending on sweetness preference)

This Vegan Chocolate Mousse is perfect for those who crave something sweet yet healthy. Made with aquafaba, the magic ingredient that mimics the properties of egg whites, this dessert is both fluffy and satisfying. Ideal for dinner parties or a special family treat.
METHOD:
Roughly chop the chocolate into small pieces and place them in a microwave-safe bowl with coconut oil. Melt in 20-second increments, stirring between each until fully melted. Let the residual heat finish melting the chocolate and allow it to cool to room temperature.
Drain the room temperature aquafaba into a large glass bowl. Ensure the bowl and utensils are greasefree to help the aquafaba reach stiff peaks.
Add cream of tartar to the aquafaba to stabilize it. Using an electric egg whisk, whip the aquafaba into stiff peaks.
Gradually add sugar, continuing to whip until stiff peaks form again if they deflate.
Check that the melted chocolate has cooled sufficiently to avoid seizing. Gently fold a portion (about a third) of the melted chocolate into the whipped aquafaba using a silicone spatula and a gentle folding motion. Continue adding the chocolate in two or three more batches until fully incorporated. Add vanilla extract.
Spoon the mousse into small cups or bowls and chill overnight for best results.
