In a world saturated with wellness advice, few stories resonate as deeply as that of Kim Otteby—a woman who exchanged corporate ambition for a profound, authentic pursuit of health, balance, and personal growth. FROM STRATEGY CONSULTING TO SURFBOARDS
Kim Otteby’s path began at Oxford University, where she graduated with a degree in economics and management before embarking on a high-powered career in London’s strategy consulting scene. Despite the prestige and financial stability, Otteby knew early on that the corporate world was not her calling. Each morning she awoke with a knot in her stomach, a visceral reminder that she was pursuing a life that didn't align with her true self. After reaching her breaking point, she made the life-changing decision to quit her job without a safety net.
Barbados became her refuge. Immersing herself in the island’s serene landscape as a windsurfing instructor, Otteby began reconnecting
with her true desires. This pivot marked the beginning of a transformative journey, leading her from the waves of the Caribbean to the foundations of wellness.
A DEEP DIVE INTO NUTRITIONAL MEDICINE
Returning to her academic roots but with renewed focus, Otteby retrained in nutritional medicine, even supplementing her education with internships under leading naturopathic doctors in the U.S. The experience ignited her mission to make wellness attainable. This passion materialised in 2007 when she founded Umoyo in Zambia, initially offering nutritional consultations from her childhood bedroom. Over time, Umoyo grew into a multi-location enterprise that included health shops and, most recently, local manufacturing of health products.
But Kim’s vision evolved beyond nutrition and fitness. Recognising that true well-being encompasses the mind as much as the body,
she shifted her focus to personal growth and mindset development—a philosophy that she now integrates into her presentations and workshops.
TACKLING SUGAR ADDICTION
Otteby’s approach to nutrition is refreshingly straightforward. While information on “healthy eating” abounds online, she emphasises that knowledge isn’t the problem—execution is. According to her, many people know the basics of good nutrition but struggle to implement them due to habits and emotional triggers.
Kim highlights sugar as one of the most insidious barriers to health. “Sugar is more than just a sweet indulgence; it's a psychological crutch and an addictive substance that stimulates the same brain centres as cocaine,” she explains. She recounts her own struggles with sugar addiction, describing it as a habit that subtly infiltrated her daily life and escalated during moments of emotional discomfort.
For those looking to reduce sugar, Kim’s advice is simple yet effective: remove temptation. “I don’t keep cookies in my house,” she laughs. “If it’s not there, I can’t eat it.” This practical mindset extends to alcohol and processed foods as well, emphasising that small, conscious decisions can yield significant health benefits.
MINDFULNESS: THE MISSING INGREDIENT
One of the most compelling aspects of Otteby’s wellness philosophy is her emphasis on mindfulness. For her, mindfulness is less about meditation and more about understanding the beliefs and emotions that drive behaviours. “Our beliefs, most of which operate subconsciously, shape our decisions and reactions,” she notes. By becoming aware of these underlying beliefs, individuals can break free from automatic responses and create space for healthier choices. Kim likens this self-awareness to the experience of a fish swimming in water, oblivious to the very
substance sustaining it. Similarly, we navigate life surrounded by beliefs we rarely question. Shifting focus to internal states allows us to reconnect with our true motivations. Otteby incorporates practices such as gratitude journaling and focused meditation to help bring subconscious patterns into conscious awareness.
BUILDING A SUPPORTIVE COMMUNITY
Kim believes that lasting change is easier when supported by a community. Whether through group challenges or shared wellness goals, collective efforts can foster accountability and motivation. At Umoyo, monthly health challenges—including a popular “No Sugar Challenge”—provide participants with a structured opportunity to recalibrate their habits and support each other.
“It’s easier to say ‘I can go a month without sugar’ than ‘I’m giving it up forever,’” Kim explains. Temporary challenges offer a manageable
commitment, fostering the possibility for lasting change as new habits and coping mechanisms develop.
MINDSET AND GRACE FOR THE JOURNEY
Central to Kim’s teachings is the acknowledgment that wellness is not about perfection. “Accept that you’ll slip up,” she advises. “The key is to approach those moments without guilt and shift the focus from ‘What am I not allowed?’ to ‘What can I add that’s good for me?’” This reframing helps maintain momentum and fosters a positive, sustainable approach to change.

Today, Kim Otteby continues to inspire through her workshops and newly launched online course, “Illuminate,” which guides participants in uncovering their passions and life purpose. Entertaining can feel like a daunting task, but it doesn’t have to be! With a little creativity and a few simple tricks, you can transform your home into the perfect gathering spot. Whether you’re hosting a potluck, an intimate dinner, or a catered event, these tips will help you become an effortless host and create a memorable experience.
POTLUCK PARTIES
For a casual gathering with family or friends, a potluck is the way to go. It’s the easiest way to create an impressive spread without breaking the bank. Start by choosing a theme for your party around which all dishes can be centred. For example, if you’re hosting a Christmas potluck, stick to traditional holiday favourites like ham, turkey, macaroni pie, broccoli salad, rice and peas, jug jug, and mince pies. Pair the meal with a refreshing sorrel cocktail, and you’ll have the perfect festive spread.
To keep things manageable, let your guests choose what they’d like to bring, or assign each person a specific dish. This way, you’re not left spending days in the kitchen preparing food or spending a fortune on ingredients.
Another great tip for potluck hosting is to encourage guests to bring their dishes ready to serve. This cuts down on kitchen chaos during the event, leaving you with more time to enjoy the party.
INTIMATE DINNERS
For smaller, more intimate gatherings, keep things simple yet refined. Opt for a two- or three-course meal that’s both delicious and easy to prepare. Plan a menu around a single theme
and use ingredients that can be incorporated into multiple dishes, minimising your shopping list. For example, when hosting an Italian-themed dinner party, you could start with a charcuterie board, perfect for your guests to graze on while you add the final touches to the rest of the meal. For the main course, try serving Rigatoni Puttanesca, followed by everyone’s favourite: Tiramisu.
Choose dishes that can be prepped ahead of time, so you’re not stuck in the kitchen all night. With a little preparation and a thoughtful menu, you’ll create an elegant evening without the stress.
LARGE EVENTS, MADE SIMPLE
If you’re hosting a larger event, catering takes the stress off you. Start by narrowing down your theme or cuisine and then look for caterers who specialise in the type of food you’d like to serve. For example, with a Bajan Fusion theme, stick to classic Bajan ingredients we all know and love, such as jerk chicken and plantain bites, coconut curry fish, fragrant rice, pickled breadfruit, mango chutney, and bread pudding. Talk to a few caterers to get menu proposals and pricing options. This will help you decide which caterer is the best fit for your party.
Renting dinnerware and event supplies is another great option for larger events. Instead of buying enough plates, cutlery, and glassware for a big group, you can rent everything from trestle tables to napkins and serving dishes. Renting not only saves you from having to purchase items for a one-time event but also prevents you from worrying about storing it all afterwards.

SETTING THE MOOD
No matter the size of your event, ambience plays a huge role in creating a memorable experience. A themed cocktail is an easy and effective way to impress your guests. Even if you're in a pinch, adding simple garnishes like rosemary sprigs, mint leaves, sliced citrus fruits, or edible flowers can elevate any basic drink.
When it comes to décor, a few bud vases filled with fresh flowers or foliage from the garden can create a beautiful yet simple centrepiece for your dining table or can be dotted around your home. This is a cost-effective way to decorate—either buy stems from a local florist or pick whatever’s in bloom in your garden. You can also use tropical flowers or foliage found locally, such as bougainvillea or palm fronds, for a distinctively Bajan touch.
Incorporate natural elements like fruits into your centrepiece. Pears, bunches of grapes, halved grapefruits, or limes can be arranged alongside your bud vases, creating a vibrant display with minimal effort.
Soft lighting, such as fairy lights, candles, or tea lights, creates a cosy and inviting atmosphere. Unique dinnerware and cloth napkins can also elevate the overall look and feel of your table. If you’re on a budget, thrifting and estate sales are fantastic ways to find one-of-a-kind dinnerware that can be collected over time.

A Taste of South Africa in Barbados
Barbados Foodie Magazine is excited to introduce Friesland Stellenbosch Family Vineyards, a South African wine brand steeped in history and tradition, now available on our island. At the helm of this fourth-generation family business is De Bruyn Steenkamp, better known as DB, who, along with his wife Marilise and son Daniel, is enjoying life in Barbados as they bring their wines to our shores.
A RICH HERITAGE IN STELLENBOSCH
DB’s connection to wine making runs as deep as his roots in South Africa’s renowned Stellenbosch region. “Our family history in South Africa dates back to the late 1600s,” DB shares. The family’s land in the Bottelary Hills offers the perfect conditions for growing high-quality grapes.
“Our farm in the Bottelary Hills faces southwest towards Cape Town and Table Bay (the Atlantic Ocean), so besides the ancient, layered soils, we have good elevation, cooler slopes, and afternoon sea breezes. These conditions ensure gradual ripening, good acidity, and wines of structure and finesse.”

Friesland Wines has remained true to its heritage, with DB focused on producing wines that are classic, elegant, and reflective of the family’s values.

FROM HONEYMOON TO ISLAND LIFE
The journey to Barbados began back in 2007, when DB and Marilise visited the island for their honeymoon. Now living here on the Welcome Stamp, DB is working to introduce his wines to the local market, a project he’s excited about.
“We love the lifestyle, weather, people, and being close to the ocean,” DB says. “I visit South Africa twice a year, and I’m near export markets like Europe and the US. A lot of people drink beer and rum here, but my plan is to get them onto the passionate wine path!”
LAUNCHING IN BARBADOS
With the help of local distributor Platinum Wines, DB has carefully selected the Friesland ShirazGrenache, Old Bush Vine Pinotage, and Sauvignon Blanc as the first wines to hit Barbadian shelves. These three wines were chosen for their ability to suit the local palate and sunny weather.
“They are all ideal to be consumed chilled and by the bottle,” DB notes.
The Sauvignon Blanc—the most popular varietal in South Africa— features tropical fruit notes and fresh grassy acidity, while the Pinotage, South Africa’s national grape, offers wonderful flavour concentration.
“The ShirazGrenache was a collaboration with my sister, and it plays off the more masculine, spicy Shiraz and the feminine, fragrant Grenache,” DB explains.
WHAT’S NEXT FOR FRIESLAND IN BARBADOS?
While these are the first wines introduced in Barbados, DB hints that there are more to come.
“We have a range of six wines, including the M-Klas Cabernet Sauvignon, MerlotCabernet Sauvignon, and the Berg & See (Mountain & Sea) wooded Chenin Blanc. As we grow, we’ll look at introducing more of these wines to the Barbadian market,” he shares.

As DB builds his brand here, he is confident that Barbadians will appreciate the honest, great-quality wines at a good price point. “Our wines pair well with food, and I think the fresh, fruit-driven style will work perfectly in the warm
weather,” he says. Indeed, South African wines have been growing in popularity worldwide, and DB believes that Friesland’s authentic story and commitment to quality will set his wines apart.

To ensure that more people get to experience Friesland Wines, DB is working closely with Platinum Wines to organise tastings and increase awareness. “I’ll assist with tastings, shake hands, and drive appreciation and sales to both trade and consumers,” he says. An Interview with Bernice Chase
Bernice Chase’s journey into the world of agriculture began as an inspiring story rooted in family and community influence. Long before she and her husband committed themselves to sustainable farming, her fascination with agriculture was sparked by the tales and practices of neighbours and family friends who farmed in harmony with the land. A defining moment came when she met Lani Edgehill, an Environmental Planner and co-founder of the Caribbean Permaculture Research Institute (CPRI), who encouraged Bernice and her husband to take a Permaculture Design course. This decision would not only shape their path but also deepen their commitment to nurturing Barbados’ agricultural landscape.
When discussing food security in Barbados, Bernice points out the daunting reality of import dependency. In 2022 alone, the island's food and beverage import bill reached $817 million. This reliance has deep economic repercussions, including high import duties—up to 40% on certain items—and the ever-present risk of supply chain disruptions. Compounding the issue is a dwindling number of farmers, many of whom have faced generational challenges and hesitated to encourage their children to continue the arduous profession. Yet, Bernice believes that transformation is possible, emphasising the need for renewed investment in local agricultural practices and ClimateSmart Agriculture. By incorporating resilient crop varieties, innovative
irrigation, and sustainable land management, Barbados can safeguard its food systems and improve resilience against climate change.
One of the solutions she proposes to mitigate these challenges is increased regional collaboration and governmental support. "Why don’t we improve our agricultural production by investing in our farmers?” she asks. Bernice advocates for upgrading farming systems, enhancing marketing efforts, and building stronger local research networks. The potential benefits extend beyond economics, touching on community health and longevity, as Bernice notes that Barbados' current dependence on imported, processed foods exacerbates non-communicable diseases (NCDs) and puts strain on the healthcare system.
Bernice is also an advocate for reconnecting with traditional practices, such as the "Three Sisters"
planting technique, which combines corn, beans, and squash for mutual benefits. This method, adaptable even to small backyard spaces, can yield significant results with minimal investment, making it feasible for many Barbadians.
Reflecting on her career, Bernice shares that her most rewarding experiences lie in research and product innovation, particularly using local flora with medicinal properties. She has been nationally recognised for these efforts, winning awards for her agro-processed products. Yet, she acknowledges that systemic challenges persist, notably the initial costs of training and infrastructure, which can be a barrier for many aspiring farmers.
Looking ahead, Bernice dreams of a future where Barbadians can proudly claim their health and food independence. “We need to shift from simply hoping to taking real action,” she says.
She envisions an island where community-based initiatives, educational outreach, and policy reforms foster a new generation of farmers who see the value in cultivating the land. She shares how engaging with children during school visits has shown her that the spark of interest in farming is alive; it simply needs nurturing through education and exposure to the joys and potential of growing one’s own food. Her hope extends to seeing local chefs embrace indigenous cuisine, moving beyond the myth that Barbados lacks a culinary identity. She is confident that with the wealth of local produce available, innovative dishes can be created that highlight Barbadian flavours—breadfruit being a prime example. Breadfruit holds a special place in Bernice’s heart due to its versatility. From using it in cakes, baked goods, and pastas to creating sweets and liqueurs, the fruit has been a staple that reflects her childhood memories and her father’s robust diet.
In her quest to share and develop knowledge, Bernice emphasises the importance of seed saving as a pillar of sustainable agriculture.
With diseases like Citrus Greening threatening local citrus crops, maintaining a repository of diverse, resilient seeds is crucial. This practice not only preserves the genetic diversity needed to adapt to environmental changes but also reduces dependence on commercial seeds.
Bernice concludes with a message of unity and proactive change. “We need to be more inclusive, support small farmers, and involve them in policy-making,” she says. She dreams of a future where agricultural practices are revitalised and celebrated, where local produce isn’t just an option but a way of life that supports healthier, more sustainable communities.
VEGANISM IN BARBADOS: A GROWING MOVEMENT
Afew months ago, I took my mum out for lunch in Bridgetown. It was a place neither of us had been to before, and the directions we were given were confusing and circuitous. I told her not to have high expectations—maybe the place didn’t exist anymore. You can never rely wholly on internet reviews from six months or more ago. As we walked along Kensington New Road, past the dilapidated pub on the corner with smashed windows and not a soul in sight, we thought we had made a wrong turn and were heading for a residential street. But then we saw the open doors of De Ultimate and a sign outside gladly promoting their vegan and vegetarian options. We were delighted!
We walked inside, and the smiling host greeted us with “Happy Cow?” If you aren’t one of the lucky ones in the know, Happy Cow (www.happycow. net) is a vegetarian version of TripAdvisor. There are currently 69 places listed in Barbados that are supportive of vegans and vegetarians, with customer reviews to prove it.
It was Happy Cow that led me to Vegan Cottage several years ago with my very non-vegan father. It was a brave move for him to try a completely vegan meal, and I was not let down by (my now friend) Augustina Hinds, who provided a plate overflowing with hearty food made with locally grown produce and packed with flavour. Augustina loves every time a non-vegan comes in and enjoys her home cooking.
IF YOU ARE A NON-VEGAN WANTING TO VENTURE INTO THE VEGAN WORLD, HERE ARE MY TOP 3 TIPS:
1. If you have a vegan friend, ask them why they are vegan. There are so many reasons, and
it may not be the one you think! Open the conversation and ask as many questions as you need to truly understand, making sure to stay open-minded.
2. Have a look at the menu before you go and think about what you might like to have. There might be a vegan version of one of your favourite dishes on there!
3. Stay open-minded. People often say, “I’ve never eaten anything vegan before.” It’s not true for anyone. We’ve all eaten a vegetable or picked a fruit off a tree and tasted how fresh and ripe it is. Just because you don’t have meat on the plate doesn’t mean you don’t have flavour on the plate.
VEGAN OFFERINGS THAT YOUR MEAT-EATING FRIENDS WILL LOVE:
• The Good Life Express – located at My Lords Hill, St. Michael. Fully vegan. This is an excellent place to stop if you’re in the neighbourhood. They serve salads, wraps, and smoothies, as well as a couple of sweet treats.
• Ground Up – stocked at Buzz Box in Holetown, St. James, as well as online (www. instagram.com/groundup.bb) and at pop-ups across the island. Fully vegan. Donuts, baby! Who doesn’t love donuts? Their toppings are scrumptious and range from the traditional glazed to smoky “bacon” and maple syrup.
• Ital is Vital (www.instagram.com/ italisvital246) – delivery, fully vegan. With a changing menu each day, their food is vibrant and fresh. I highly recommend their Reggae Bowl, which comes with every Barbadian’s favourite sauce—hot sauce!
• Back to Eden – Speightstown, St. Peter. Fully vegan. For a quick lunch or a picnic at the beach, look no further than Back to Eden in the centre of Speightstown. The little hut serves up hot rotis, pre-made rolls, and fresh juices made to order. Who said fast food can’t be healthy?
• Plant Lyfe – Hayman’s Market, St. Peter. Fully vegan. This place would be my go-to for someone wanting a meat/fish substitute. They make some fysh cakes that rival some of the best on the island, and their burgers will give you that “Friyay” feeling!
• De Ultimate – Bridgetown, St. Michael. Wegan options. Offers a range of hot foods from breadfruit smash and Cou Cou to fresh vegetables and salads, bean curry, and lentil patties.
• Lion’s Share Café – Warrens, St. Michael. Vegan options. This little place is right opposite KFC, and it’s a far healthier option. They have a black bean enchilada and a delicious chickpea salad on the menu, to name a few. Their portions are big and will keep you fuelled all afternoon.
The BBQ Rice Bowl at The Good Life Express – a delicious blend of BBQ tofu, fresh veggies, warm wild rice, and their signature sweet onion dressing.
The vegan scene in Barbados continues to grow, offering an ever-expanding range of options for both locals and visitors. While the journey to embracing plant-based living comes with its challenges—such as ingredient sourcing and shifting public perception—it’s clear that the community is evolving and thriving. This progress not only diversifies the island’s culinary landscape but also contributes to broader benefits, including sustainability and healthconscious dining. As more people become aware of these offerings, Barbados solidifies its place as a destination where flavour and mindful eating go hand in hand.

PASSION FRUIT MARGARITA
A Tropical Take On A Timeless Classic
SERVES: 1
This Passion Fruit Margarita brings a taste of the tropics to your glass, blending the exotic sweetness of fresh passion fruit with a tangy twist of lime.
Perfect for festive gatherings or a quiet moment of indulgence, this cocktail offers a refreshing escape and a hint of Caribbean luxury.
INGREDIENTS:
1 ½ oz Tequila
1 oz Cointreau
1 ½ oz fresh passion fruit juice
¾ oz lime juice
½ oz simple syrup, to taste
Ice for shaking
Salt for glass rim
METHOD
1. Pour coarse salt onto a small plate. Run a lime wedge around the rim of the glass and dip the rim into the salt until it has the desired coating.
2. In a cocktail shaker, combine all ingredients. Shake for about 15 seconds. Taste and adjust the sweetness as desired.
3. Pour into the prepared glass and garnish with fresh passion fruit.

This Rosemary & Olive Beer Bread is simple to make and perfect as a starter or tapas, offering minimal effort with maximum flavour. Ideal for gatherings, it’s sure to impress guests and family alike.
INGREDIENTS:
3 cups flour
1 tsp sugar
2 tsp baking powder
A pinch of salt
1/4 cup fresh rosemary
1/4 cup sliced olives
1/4 cup grated mature cheddar, Comté, or a mixture of both
12 oz beer
50 g butter
METHOD
1. Pour all the dry ingredients into a bowl and combine using a fork.
2. Add fresh rosemary, cheese, and sliced olives, leaving approximately 1 tbsp of each for garnish.
3. Mix with a fork.
4. Pour the beer into the dry mixture and stir until the mixture resembles the consistency of a thick batter.
5. Pour the mixture into a greased loaf tin and brush the top with melted butter.
6. Decorate the top of your loaf with the leftover rosemary, cheese, and olives.
7. Optional: Sprinkle the top with coarse salt.
The bread is best served warm with 100% butter.
Notes: Use the above ingredients for plain or all-purpose flour. If you use self-raising flour, omit the baking powder and salt.

This vibrant salad epitomises fresh island dining, combining the zest of citrus with the creamy tang of feta and the crunch of toasted almonds. Ideal for a warm day or as an elegant starter, this salad is as visually stunning as it is delicious.
INGREDIENTS:
2 handfuls of rocket
2 mandarins, peeled and segmented
1 grapefruit, peeled and segmented
3 tbsp crumbled feta
2 tbsp slivered, toasted almonds
Microgreens and radish for garnish
VINAIGRETTE DRESSING:
2 tbsp lemon juice
1 tbsp honey
¼ cup olive oil
Salt and pepper to taste
METHOD:
1. Wash the rocket and place it in a bowl.
2. Peel and segment the mandarins and grapefruit. Add them to the bowl with the rocket.
3. Sprinkle the crumbled feta and slivered almonds on top.
4. Garnish with microgreens and thinly sliced radish.
5. In a separate bowl, combine the vinaigrette ingredients and whisk until well combined. Drizzle your desired amount over the salad and toss gently.
(Note: To serve more, multiply the ingredients proportionally.)

SEARED TUNA WITH PICKLED CUCUMBER SALAD

Light and refreshing, this sesame-crusted tuna paired with a tangy cucumber salad is perfect for effortless lunches or as a standout starter.
INGREDIENTS:
PICKLED CUCUMBER SALAD
½ cucumber, thinly sliced
3 radishes, thinly sliced
1 tsp sesame oil
1 tbsp rice wine vinegar
1 tsp chilli oil
1 tsp soy sauce
1 tsp honey
TUNA
1 tuna steak
3 tbsp soy sauce
4 tbsp mixed sesame seeds
1 tsp garlic powder
Pinch of salt and pepper
METHOD
1. Prepare the Pickled Cucumber Salad: In a bowl, combine the sesame oil, rice wine vinegar, chilli oil, soy sauce, and honey. Mix well. Add the cucumber and radishes, coating them thoroughly. Set aside for 20–30 minutes to let the flavours meld.
2. Prepare the Tuna Coating: On a plate, mix the sesame seeds, garlic powder, salt, and pepper. On a separate plate, pour the soy sauce and coat the tuna steak in it to help the sesame mixture stick.
3. Coat the Tuna: Press the soy-coated tuna into the sesame seed mixture, ensuring even coverage on all sides.
4. Sear the Tuna: Heat a skillet over high heat and add 1 tsp of neutral oil. Place the tuna in the pan and sear for about 45–60 seconds on each side. Be careful not to overcook; the centre should remain rare.
5. Slice and Serve: Remove the tuna from the pan and slice thinly. Serve with the pickled cucumber salad and garnish with microgreens if desired.
Note: This recipe serves one. To serve more, simply multiply the ingredients by the number of desired servings.

ORANGE SORREL ROASTED CHICKEN

Bring a festive twist to your holiday table with this sweet and savoury roasted chicken infused with garlic, rosemary, oranges, and a beloved Bajan favourite, sorrel!
INGREDIENTS:
1 (4 lb) Amir’s Fresh Whole Chicken
¾ cup freshly squeezed orange juice
2 tablespoons sorrel syrup
2 tablespoons honey
5 garlic cloves, grated
1-inch piece fresh ginger, grated
2 teaspoons fine sea salt
1 teaspoon ground black pepper
2 oranges, quartered
1 sprig rosemary
1 cup cranberries (fresh or frozen)
¼ cup chicken stock (more as needed)
1 tablespoon water
METHOD
1. Preheat the oven to 200°C (400°F) and place the rack in the lower part of the oven.
2. In a bowl, mix together the orange juice, sorrel syrup, honey, grated ginger, garlic, and half of the rosemary.
3. Season the chicken, both inside and out, with salt and pepper. Fill the cavity with half of the orange quarters, rosemary, and half of the cranberries.
4. Place the chicken in the centre of a roasting pan and add ¼ cup chicken stock to the bottom, along with the remaining cranberries and oranges. Pour the orange-sorrel mixture over the chicken, rubbing it thoroughly into the skin.
5. Roast the chicken in the preheated oven for 20 minutes. Baste with pan juices, rotate the pan, and continue roasting for another 20 minutes. Repeat this process until the chicken reaches an internal temperature of 75°C (165°F) in the thickest part of the breast or until the juices run clear, approximately 1 hour. Cover with foil if the chicken browns too quickly.
6. Rest the chicken for 15 minutes, loosely covered with foil. Carve and serve with your favourite cranberry-orange sauce.
