On behalf of the Restaurant Association of Whistler, we would like to welcome you to our home. We use the term “home” because the character of Whistler’s restaurants has been built on the genuine hospitality you would receive in any one of our homes.

Within the pages of this book you will find a comprehensive guide to Whistler’s legendary hospitality and diverse dining establishments. This warmth of reception is expressed in our sincere desire to offer our guests – who often become our friends – a unique and quality dining experience. Whistler’s quaint traditions, passed down over the years, will charm you and bring you back for more.

Our year round resort offers countless adventures. Ski, ride, golf, hike, and shop to your heart’s content, pop into a cozy cafe or pub to refresh yourself, then end your day with a visit to the gym, spa, or art gallery. Don’t miss the vibrant après scene,

where it’s a prerequisite to socialize in your ski boots until the sun dips below the mountains. If you are a food-lover, you’ve come to the right place. Settle in for an unforgettable evening of sumptuous food and wine pairings or chat with your server about the local cuisine.

Whistler’s distinctive selection of ethnic restaurants lets you experience some of the planet’s best creations from some of the finest chefs in a relaxed dining atmosphere. YOUR WHISTLER DINING ADVENTURE BEGINS

Whistler

Something happened in the early days of restaurants in Whistler—something about the mixing of haute cuisine and funky burgers, weekend warriors and local characters, red-checkered tablecloths and elegant wall sconces — that’s been distilled into the dining experience ever since.

If a restaurant is where you “restore” yourself, then Whistler’s first was Rainbow Lodge. Guests had home-cooked meals included; those without lunches on the 1950s “picnic trains” could buy sandwiches on arrival.

After that, it was L’Après, opened in 1966 by Leo and Soula Katsuris to feed the workers building the first gondolas. Breakfast was 85 cents, and you might have run into Prime Minister Trudeau and family skiing.

With the ’70s came the start of the flurry: Rudy’s Mountain Holm Steakhouse served the finest flaming steaks; the Christiana Inn packed mountain lunches; the Cheakamus Inn offered a touch of Europe. The Keg was the first purpose-built restaurant and, oh, if those beams could talk. It was a hotbed of good food and sometimes wildly good times before the building became municipal hall.

The ’80s set the stage for Whistler’s main village with Stoney’s, The Gourmet Bakery and the iconic araxi.

Hungry customers never looked back. Wherever you went, locals mingled with visitors in a dynamism fuelled by good food and good drink. That, happily, has been the passport to any great resort experience to this day.

A culinary cornerstone in the heart of Whistler Village, Araxi Restaurant + Oyster Bar has redefined elegant yet approachable dining and special events for over four decades. As an early pioneer of farm-to-table dining, Culinary Director James Walt celebrates locally sourced ingredients from Pemberton farms and fish and seafood pulled from nearby waters. As Araxi continues to change the hospitality landscape of Whistler, an exciting milestone was the opening of The Cellar by Araxi. This venue offers an exclusive private dining space perfect for meetings and special events. With elegant interior decor, The Cellar is capable of hosting up to 60 guests in reception format or up to 40 guests for a sit-down lunch or dinner. The luxurious room, which can be divided for more intimate events, has a show kitchen for interactive chef demonstrations and a state-of-the-art audio-visual system. Bar Oso

WHISTLER’S TOAST TO SPAIN - BAR OSO

“Oso” meaning “bear” in Spanish, an homage to Whistler’s wildlife, offers profusion of Spanish-influenced small plates, tapas, and house-made charcuterie – complete with handcrafted cocktails and wines from near and far. Under the leadership of Culinary Director James Walt and Executive Chef Jorge Munoz Santos, the newly reimagined space reopened in July 2023 offering additional seating and a new stunning back-lit onyx bar open daily from 4pm to late.

A lively gathering place for locals and visitors alike, Bar Oso’s robust cocktail program delivers something for everyone including a variety of classics and signature cocktails as well as a gin & tonic program that showcases a selection of globally recognized gins.

“The take-away style set-up and casual dining atmosphere were perfect. There was a smokehouse menu the night we visited; we tried the brisket and prime rib and both were outstanding. Our kids really enjoyed the mac n' cheese side dish and the biscuits. Breakfast was equally impressive, the breakfast bowls were delicious (huge, too!) and the kids really enjoyed picking out pastries from the coffee bar side of the restaurant. The Tandoori Grill, one of Whistler’s premier restaurants, has selected dishes that are most sumptuous as they were inspired by Great Indian Emperors and prepared to perfection by chefs of bygone eras. They brought renaissance and enrichment to Indian culture which favoured the technique of cooking in a Tandoor clay oven. A replica is also displayed at our entrance.

From the Tandoor oven comes a parade of delicious creations, and the best way to sample these treats is to order a Mixed Grill, complete with chicken, fish, prawns, and Lamb Tikka. Naan (Tandoori bread) is baked vertically in the Tandoor. You will become a fan of stuffed naan such as Spinach Naan, stuffed with Indian cheese and spinach. The selection of heavenly spices which favours Indian cooking creates heavy hits of flavour at every turn. No wonder that ginger and turmeric, the special ingredients of Indian cooking, are known as a healing power. Spice levels 1 - 5 are the essence in Indian cooking. Dubh Linn translates from Black Pool and refers to the dark pool of water, which lies beneath the heart of Dublin, Ireland. Located near St. James Brewery, where Guinness originates, these dark waters are said to be the inspiration for Arthur Guinness’ perfect pint since 1759.

The menu offers a wide range of options from salads and appetizers to noodle soup, tempura, fresh sashimi and sushi rolls using the highest quality rice in North America. Sushi Village, located in Whistler Village, is about as famous in some circles as the worldclass ski resort itself. Known for its casual yet vibrant atmosphere, terrific sushi, and legendary sake margaritas, Sushi Village is as much a social experience as it is a dining one.

In 1984, Mikito “Miki” Homma, and his two friends arrived in the now-famous ski resort when it was little more than a collection of chairlifts and a conceptual pedestrian village. Miki and his friends fell in love with the snow and character of the town and in 1985 opened Sushi Village, Whistler’s first Japanese restaurant and one of the original six restaurants in Whistler Village. After 34 years, visitors and locals alike repeatedly make the trip to what has become an icon of the Whistler social scene.

The Restaurant Association of Whistler

On behalf of our members, allow us to introduce the Restaurant Association of Whistler. We are a registered nonprofit organization, steered by a volunteer Board of Directors, representing the food & beverage establishments of the resort.

Our association was created in 2008 by the desire to provide our guests with a world class dining experience.

We are proud of our achievements to date. Notably, we successfully addressed the unique concerns of our members by working closely with the Resort Municipality of Whistler, the Whistler Chamber of Commerce, Tourism Whistler and the BC Restaurant and Food Services Association. We also support two community initiatives. The first is the annual RAW Memorial Cup Charity Golf Tournament. The second is awarding two separate scholarship funds (the Joel Thibault Scholarship and the Werner Schonberger Scholarship) to Whistler secondary school graduates who have worked in the local industry and are passionate to pursue a career in restaurant hospitality and the culinary arts.

Each of our members is offered the opportunity to showcase their restaurant in our annual Restaurant Association of Whistler coffeetable book. Our book is an accurate portrayal of the restaurant offerings in Whistler. The quality of this publication reflects that of its members, who are dedicated to creating the best possible experience for their guests. Each member of the association contributes

to providing the highest quality food, wine and service. The combined efforts from our dedicated staff and sponsorship partners help us achieve our mutual goal of providing the ultimate guest experience.

ANTONIO

CORSI Quattro at Whistler

Born in Maenza, Italy, Antonio’s career took him to a few of the most prestigious restaurants & resorts throughout Europe.

Opportunity brought Antonio to Canada in the seventies where he would become a legendary pillar of the Vancouver restaurant scene. His creative & passionate culinary adventures included The Park Royal Hotel, Corsi Trattoria, Charlie Potatoes Oyster Bar & Grill, Cafe Roma, Il Portico (in Edmonton), Quattro on Fourth, Quattro in Whistler, Gusto Di Quattro, Casa Corsi and most recently Sempre Uno.

Antonio mentored, trained and supported countless others to realize their dreams and help them to start their own culinary adventures. He set the standard for Italian Food and Wine in Vancouver and Whistler!

Antonio lived life to the fullest and was always ready to share a good story and a glass of wine with friends and family. Once you knew him, you were family. He always said, “Life is Beautiful.”

OUR GOAL IS TO RAISE FUNDS FOR LOCAL, RELEVANT CHARITIES AND TO GIVE BACK TO OUR PROUD, DYNAMIC INDUSTRY AND COMMUNITY.

The Restaurant Association of Whistler is proud to call The Fairmont Chateau Whistler Golf Club the home course for our annual Memorial Cup Charity Golf Tournament. Carved out of the slopes of the Coast Mountain range in British Columbia, this magnificent Robert Trent Jones, Jr. masterpiece will navigate you through stunning mountain vistas, granite rock faces, stands of ancient Douglas fir, waterfalls and wildlife, creating an unforgettable golf experience.

Our biggest fundraising effort occurs each summer in the form of the RAW Memorial Cup Charity Golf Tournament where we celebrate the passion for life exhibited by our lost, long time local hospitality heroes Joel Thibault, Pascal Tiphine, Cal Schacter, Mikita Homma, Jeff Morgan and others who have contributed greatly to the food and beverage industry throughout the years. Since our initial event we've raised over $400,000 allowing us the ability to give back to our community.
