THE RESTAURANTS OF WHISTLER BRITISH COLUMBIA
WELCOME
On behalf of the Restaurant Association of Whistler, we would like to welcome you to our home. We use the term “home” because the character of Whistler’s restaurants has been built on the genuine hospitality you would receive in any one of our homes.
Within the pages of this book you will find a comprehensive guide to Whistler’s legendary hospitality and diverse dining establishments. This warmth of reception is expressed in our sincere desire to offer our guests – who often become our friends – a unique and quality dining experience. Whistler’s quaint traditions, passed down over the years, will charm you and bring you back for more.
Our year round resort offers countless adventures. Ski, ride, golf, hike, and shop to your heart’s content, pop into a cozy cafe or pub to refresh yourself, then end your day with a visit to the gym, spa, art gallery, or movie theatre. Don’t miss the vibrant après
scene, where it’s a prerequisite to socialize in your ski boots until the sun dips below the mountains. If you are a food-lover, you’ve come to the right place. Settle in for an unforgettable evening of sumptuous food and wine pairings, chat with your server about the local cuisine, and meet the chef who exquisitely prepared your meal.
Whistler’s distinctive selection of ethnic restaurants lets you experience some of the planet’s best creations from some of the finest chefs in a relaxed dining atmosphere. Do take the time to speak with your host or server. Ask as many questions as you like and experience our passion firsthand. You will soon come to understand why we call Whistler home.
YOUR WHISTLER DINING ADVENTURE BEGINS
Whistler
Something happened in the early days of restaurants in Whistler—something about the mixing of haute cuisine and funky burgers, weekend warriors and local characters, red-checkered tablecloths and elegant wall sconces — that’s been distilled into the dining experience ever since.
If a restaurant is where you “restore” yourself, then Whistler’s first was Rainbow Lodge. Guests had home-cooked meals included; those without lunches on the 1950s “picnic trains” could buy sandwiches on arrival.
After that, it was L’Après, opened in 1966 by Leo and Soula Katsuris to feed the workers building the first gondolas. Breakfast was 85 cents, and you might have run into Prime Minister Trudeau and family skiing.
With the ’70s came the start of the flurry: Rudy’s Mountain Holm Steakhouse served the finest flaming steaks; the Christiana Inn packed mountain lunches; the Cheakamus Inn offered a touch of Europe. The Keg was the first purpose-built restaurant and, oh, if those beams could talk. It was a hotbed of good food and sometimes wildly good times before the building became municipal hall.
The ’80s set the stage for Whistler’s main village with Stoney’s, The Gourmet Bakery and the iconic araxi.
Hungry customers never looked back. Wherever you went, locals mingled with visitors in a dynamism fuelled by good food and good drink. That, happily, has been the passport to any great resort experience to this day.

Alta Bistro
MODERN BISTRO
The locals know. The seasoned Whistler regulars know. This locally owned culinary corner on Main Street and Northlands Blvd in the Pinnacle International Hotel in Whistler Village is not to be missed. If you are looking for a culinary experience in the mountains that showcases the seasons and has a passionate local team delivering exceptional food and service? We look forward to welcoming you to our cozy bistro.
"We (Chef Nick and I) have been working at this concept of hyper-local sourcing and developing deep relationships with the local farms, suppliers and foragers for more than a decade. We dry mushrooms in the spring, preserve the flavours of summer, and forage in the fall for the upcoming Winter. We find staying true to our concept of seasonality is the hardest in Winter, and if we can capture the essence of a season past and present it to you in the deep of Winter, we feel we've kept our promise. Nick puts together bright, balanced, textural food which embraces the seasons and highlights important local ingredients, and he and his team cook their hearts out for you to enjoy this food. Our service team is friendly and enthusiastic and is committed to putting the customer experience at the forefront so that each visit to Alta is memorable. Our wine and bar team follow the same ethos as the kitchen, with many processes intertwined for flavour in cocktails, and wine tasting and selection for food. We want each dish and pairing to check all the boxes and leave you with an impression. Nick and I welcome you and hope to surprise you with something delightful that you will remember."

CONTEMPORARY EUROPEAN COMFORT WITH A LOCAL INFLUENCE
Jay Pare, owner of Caramba!, began his career thirty years ago while working for previous owner Mario Enero. Today — along with co-owner and Executive Chef James Pare, formerly the Executive Chef of the Savoy in London, England — Jay and James are proud to carry on Mario’s legacy of an exceptional yet casual dining experience.
Guests first notice Caramba!’s welcoming staff and lively, inviting atmosphere with its refreshing new look. Next comes the high energy of the kitchen team, led by Chef Alex Reeve, while they artfully compose each meal in the open kitchen. And then comes the quality of Caramba!’s food itself – inspired by a global European palette, sourced from the finest local ingredients and deliciously crafted, by hand, every step of the way.
“Caramba!” means “WOW”, and — in keeping with our name — our intention is to exceed our guests’ expectations.
From the first sip of our wines to the last bite of our popular Apple Tarte Tatin, Caramba!’s atmosphere, service and cuisine encourage camaraderie and good times.
Every item on Caramba!’s roster of European influenced flavors — from pizza and pasta, to soups and salads, to seafood and of course, dessert - starts with superb, locally sourced ingredients. Knowing all our ingredients as intimately as we do means that we can readily accommodate special diets - almost all of our dishes can be prepared gluten free.

“One of our chefs is preparing a mixed grill by placing marinated cuts of seafood, chicken and lamb onto long skewers and cooking them in a hot Tandoor oven over charcoal.”
Tandoor OvenTandoori Grill
SPICE UP YOUR LIFE
The Tandoori Grill, one of Whistler’s premier restaurants, has selected dishes that are most sumptuous as they were inspired by Great Indian Emperors and prepared to perfection by chefs of bygone eras. They brought renaissance and enrichment to Indian culture which favoured the technique of cooking in a Tandoor clay oven. A replica is also displayed at our entrance.
From the Tandoor oven comes a parade of delicious creations, and the best way to sample these treats is to order a Mixed Grill, complete with chicken, fish, prawns, Seekh Kabobs and Lamb Tikka. Nan (Tandoori bread) is baked vertically in the Tandoor. You will become a fan of stuffed nan such as Spinach Nan, stuffed with Indian cheese and spinach. The selection of heavenly spices which favours Indian cooking creates heavy hits of flavour at every turn. No wonder that ginger and turmeric, the special ingredients of Indian cooking, are known as a healing power. Spice levels 1 - 5 are the essence in Indian cooking. Every dish is prepared according to the chosen level to exactly meet the customer’s taste buds.
The Tandoori Grill is a great place to spice up your life with delicious Tandoori dishes, or simply sample from our extensive wine list, also featuring the Best of Okanagan Wines and Indian Beers. The restaurant also features semi-private settings for large groups.
In summer, the patio offers splendid mountain views.

SOMEBODY ONCE SAID, “GUINNESS IS GOOD FOR YOU” AND WE BELIEVED IT.
Dubh Linn translates from Black Pool and refers to the dark pool of water, which lies beneath the heart of Dublin, Ireland. Located near St. James Brewery, where Guinness originates, these dark waters are said to be the inspiration for Arthur Guinness’ perfect pint since 1759.
Fast-forward to 1997, and the Dubh Linn Gate Pub was designed, crafted, and transported piece by piece across the pond to the Pan Pacific Whistler in beautiful British Columbia.
Yes, Guinness may have been born in Ireland, but its Irish spirit is alive and well at Dubh Linn Gate Pub. Here you’ll find plenty of charming people eager to meet you, some spirited live music, 24 draught taps pouring deliciously fresh Imperial pints, and authentic Irish fare to fill the belly and soothe the soul. It’s a lovely day for a Guinness after all.
Whistler’s best live music takes the stage 7 nights a week in the summer and winter. Late afternoon sets December through April make us a favorite spot for après ski.

“Once upon a time, there was a majestic mountain on the west coast of British Columbia, Canada. When the snow came, a gentle wind would blow, whistling through the trees. EPIC FOOD. EPIC PARTY. EPIC HISTORY.
Sushi Village, located in Whistler Village, is about as famous in some circles as the worldclass ski resort itself. Known for its casual yet vibrant atmosphere, terrific sushi, and legendary sake margaritas, Sushi Village is as much a social experience as it is a dining one.
In 1984, Mikito “Miki” Homma, and his two friends arrived in the now-famous ski resort when it was little more than a collection of chairlifts and a conceptual pedestrian village. Miki and his friends fell in love with the snow and character of the town and in 1985 opened Sushi Village, Whistler’s first Japanese restaurant and one of the original six restaurants in Whistler Village. After 34 years, visitors and locals alike repeatedly make the trip to what has become an icon of the Whistler social scene.
There is something for everyone at Sushi Village. The diverse menu offers a range of Japanese cuisine to please everyone’s tastes, including expertly creating sushi, crispy tempura, traditional hot grilled dishes and the finest quality sashimi all enjoyed with cold sake or Japanese beer.
Located in the heart of Whistler, Sushi Village is steps away from the Blackcomb and Whistler gondolas (located directly above Showcase Snowboards, on the second floor of the Sundial Hotel).

The Restaurant Association of Whistler
Proudly Supports our Bear Smart Community
KEEPING PEOPLE SAFE AND BEARS WILD IN WHISTLER
Whistler is located in prime black bear habitat, so whether you’re hiking in the Interpretive Forest or strolling through the Village, you may encounter a black bear. Seeing a bear can be a memorable experience of your Whistler vacation, but to protect yourself and keep bears wild, it is important to understand how to behave around them. This requires an understanding of bears and their behaviour as well as the role people play in creating conflicts. Visit bearsmart.com
BEING BEAR SMART
There are many actions you can take to protect bears. Never feed a bear, either intentionally or unintentionally. Dispose of all garbage in a bearproof container. In Whistler, it’s the law! Bear-proof containers are located
Respect bears! Give them plenty of space and never approach them. No one should ever feed, pet or pose for a photo with a bear. Take pictures with a telephoto lens from a distance.
Always be alert and aware in bear country. Bears have a keen sense of smell and can detect the aroma of a barbecue or picnic from a considerable distance.
Drive defensively. Watch the sides of the road for wildlife attempting to cross. Use extra caution at night; bears are dark animals and are very difficult to see in the dark, or even at dusk and dawn. NEVER stop to view or photograph wildlife along the highway. This stresses wildlife and creates unsafe road conditions due to traffic congestion. Look for the Bear Smart Restaurant logo at participating restaurants.

On behalf of our members, please allow us to introduce the Restaurant Association of Whistler. We are a registered non-profit organization, steered by a Board of Directors, representing the food-primary licensed dining establishments of the resort.
Our association was created in 2008 by the desire to provide our guests with a world class dining experience.
We are proud of our achievements to date. Notably, we successfully addressed the unique concerns of our members by working closely with the Resort Municipality of Whistler, the Whistler Chamber of Commerce, Tourism Whistler and VANOC for the 2010 Olympic Winter Games. We also support two community initiatives. The first is the annual RAW Memorial Cup Charity Golf Tournament. The second is awarding two separate scholarship funds (the Joel Thibault Scholarship and the Werner Schonberger Scholarship) to Whistler secondary school graduates who have worked in the local industry and are passionate to pursue a career in restaurant hospitality and the culinary arts.
Each of our members is offered the opportunity to showcase their restaurant in our annual Restaurant Association of Whistler coffeetable book. Our book is an accurate portrayal of the restaurant offerings in Whistler. The quality of this publication reflects that of its members, who are dedicated to creating the best possible experience for their guests. Each member of the association contributes
to providing the highest quality food, wine and service. The combined efforts from our dedicated staff and sponsorship partners help us achieve our mutual goal of providing the ultimate guest experience.
As one of the world’s most popular mountain resort destinations, Whistler welcomes visitors from around the globe to witness the breathtaking beauty of British Columbia’s Coastal Mountains.
We offer our guests a taste of home while they experience the buzz and excitement of local culture. Whistler has a wonderful selection of world cuisine, from take-out to fine dining.
For a taste of the local flair, there are restaurants specializing in steak, seafood and game, plus creative fusions found nowhere else. In addition to the endless array of delicious dishes, our guests can select from award-winning wine lists with international accolades and find the perfect wine to pair with their perfect meal.
It truly doesn’t get better than this.
“Our mission is to represent a unified voice for Whistler restaurants in respect to marketing, purchasing, and community relations that is in the best interest of our members and guests.”
The Restaurant Association of Whistler (RAW) Hall of Fame recognizes members of our food and beverage community who have been pioneers, trailblazers and innovators within our beloved restaurant industry. We are delighted to honour the following...
MIKITO "MIKI" HOMMA 2023 Inductee
The word "legend" gets overused these days especially in Whistler, but in the case of Miki, the title is fitting, in every sense of the word.
He opened Sushi Village Restaurant in 1985. Whistler was a developing ski resort in those days (there were only 5 other restaurants here, at xthat time!) but Miki instantly fell in love with the vibe, the people and beautiful mountains. Miki had a flare for hospitality that was infectious. He was proud of his Japanese culture and food, always eager to share it with his friends, guests and he LOVED to party!
Miki will be remembered for his wild laugh, his unique style, his crazy sense of humour, his generosity to this community and for providing all of us with this iconic restaurant which has been loved for over 30 years.
Kanpai!
Chef Pascal Tiphine, one of Whistler's original restaurateurs, wasn't one for fancy sauces or sparse Parisian cuisine. Rather, his food was "country-French" — the kind of hearty, wholesome fare right from the land, the kind of food that makes you feel replete. It was just like the chef himself — downto-earth, honest, authentic.
For more than three decades, Tiphine was a key figure in Whistler's restaurant scene, seeing it grow and having a role in taking it from its nascent beginnings through the commercial boom to a worldclass food destination. The first restaurant he opened was Madame’s Bistro, followed by Sundial Restaurant, Les Deux Gros and finally Les Gros.
"He was always welcoming, social, making sure everybody was comfortable and well served," said friend Bob Barnett. "And he liked to have fun.”
Born in France November 18, 1943 Joel Thibault immigrated to Vancouver in 1966. He mastered his craft as a restaurateur in Chamonix, the French Riviera, the William Tell Restaurant, Le Creperie, Umberto's La Galleria in Seattle, Chez Joel's in Vancouver and Whistler and his latest venture Bavaria Restaurant. Joel had a unique way of making everyone he met feel special.
Before he moved to Whistler in 1985, Thibault had a go at growing grapes and making wine in the Okanagan from 1983 to 1985. "It didn’t go as I expected. I decided to go back to Whistler to do what I do best, and that’s manage restaurants.”
Chez Joel in Gastown was doing just fine at the time. Still, his heart was in the mountains, and as a veteran of European ski resorts, he saw the potential that Whistler offered.
"With my experience in the Alps, I could see what was going on in Whistler as it was becoming a super resort, and of course, loving the mountain life, I wanted to be involved with that," said Thibault.
Lawrence Black Blacks Restaurant & Pub Inducted 2018RESTAURANT ASSOCIATION OF WHISTLER’S Memorial Cup Charity Golf Tournament
OUR GOAL IS TO RAISE FUNDS FOR LOCAL, RELEVANT CHARITIES AND TO GIVE BACK TO OUR PROUD, DYNAMIC INDUSTRY AND COMMUNITY.
The Restaurant Association is proud to have the support of our three local world class golf courses; Nicklaus North Golf Course, a Jack Nicklaus designed course; The Fairmont Chateau Whistler, a Robert Trent Jones Jr. design, and the Arnold Palmer designed Whistler Golf Course.
Our biggest fundraising effort occurs each summer in the form of the RAW Memorial Cup Charity Golf Tournament where we celebrate the passion for life exhibited by our lost, long time local hospitality heroes Joel Thibault, Pascal Tiphine, Cal Schacter, Mikito Homma and others who have contributed greatly to the food and beverage industry throughout the years.
The day starts with oysters and bubbles followed by tasting stations along the course and topped off with a delicious dinner; all the while, plenty of opportunities to bid on our auction items. Going into its eighteenth year, our goal is to continue raising money to support local charities. Since our initial event we've raised over $300,000 allowing us the ability to give back to our community. Our beneficiaries include:
Whistler Community Services Society (WCSS)
BC Hospitality Foundation (BCHF)
Families Fighting Cancer in the Sea to Sky Corridor (FFCSS)
Zero Ceiling
Scholarships for Whistler High School students pursuing careers in restaurant hospitality & the culinary arts.
Visit the RAW website for details on how you can help support a great cause, an important industry and participate in the Restaurant Association of Whistler’s Memorial Cup Charity Golf Tournament.
