_lsjvtl You may have noticed more men than usual looking rather unshaven at the moment. It’s not because there’s a shortage of razor blades in Bath – it’s all part of the Movember campaign which encourages men to grow a moustache (or “mo” as it’s known) during November to raise money and awareness for men’s health projects. This year marks 10 years since the very first Movember, and in that time it has really caught the imagination of the public, and numerous celebrities have shown their support and grown ‘taches. It’s not just for men either. While

EDITORIAL Lynne Fernquest we girls might not be able to grow an impressive handlebar moustache, the Mo has become something of a fashion statement with moustache motifs adorning everything from T-shirts to shoes, jewellery and even interior decorations. And it’s up to us to support the men who are forgoing fashion to grow their facial hair. They might look ridiculous, but it’s all for a good cause.

Hair today... gone next month Millions of moustaches are about to sprout, as men use their faces to raise the profile of their health during Movember. Lisa Salmon reports on a growing hair trend. Love them or hate them, moustaches will soon be adorning the faces of many more men, as they show their support for a unique men’s health campaign that’s taking over the month of November. Now in its tenth year, Movember entices millions of men around the world, including celebrities Bear Grylls, Charley Boorman and Damian Lewis, to grow moustaches for 30 days to both increase awareness of men’s health issues and raise money for men’s health projects. The campaign has a simple premise: men ‘donate’ their face to grow fuzz above the upper lip, known as a ‘Mo’, and ask their family and friends to sponsor their efforts. Last year, more than 363,000 Mo

Bros and Mo Sistas – as the men who take part and the women who support them are known – raised more than £26.9 million in the UK. Globally, £92 million has been raised. The cash has been used to fund 560 worldwide projects raising awareness of and researching

Movember has funded vital research that has identified 27 types of prostate cancer and genome-mapped the disease, financed Prostate Cancer UK’s helpline and other UK projects, including an expert collaboration to ensure men receive the psychological and emotional support they need after prostate cancer treatment. And, just as importantly, says Justin Coghlan (JC), one of the Movember founders, the campaign has also opened up millions of conversations about men’s health. “The effect of people coming to us and talking about men’s health has been incredible,” he says. “Our vision is to have an everlasting impact on men’s health – we want guys to have the conversation, and everyone in their lives to be talking about it.” ■ To sign up for Movember, visit www.movember.com.

ale House Kitchen in Timsbury isn’t your average cookery school. Yes, there are top-class tutors, and yes, you will end up creating culinary delights that you thought were far beyond your abilities, but the idea behind it is far more than just cooking up a couple of nice plates of food. Vale House Kitchen has fully embraced the field-to-fork concept, and aims to teach people not just cookery skills, but also country skills

so their portfolio of courses includes things like jam making and celebration cake making, as well as butchery, foraging, and two-day courses where you can spend one day learning field skills like shooting or fishing, and the next, preparing the spoils. Vale House Kitchen was the brainchild of Bod and Annie Griffiths who were inspired to set up the venture after a fishing trip. Bod said: “The initial idea for the school came after cooking a meal following a salmon fishing trip on the River Exe, when everything on our plate was either from the river or from our vegetable garden. We both said: ‘wouldn’t it be brilliant to be able to teach people these skills and share the excitement of making that fundamental connection with what is on your plate?’ “We had both been working in London for more than 20 years, me in finance in the City and Annie as an acupuncturist in a

renowned yoga centre. It has been a bit of a homecoming for me as I was born in North Devon and went to boarding school in Gloucestershire. I’ve always been a keen fisherman and I love to shoot. It had been my aim to return to the countryside at some stage; and when we discovered Vale House, we knew that this was our chance.” In September, the dream was finally realised and Vale House Kitchen opened its doors for the first time. I went along to try the Seasonal Cookery course led by Tim Maddams who worked with the likes of Marco Pierre White and Mark Hix, before becoming head chef at River Cottage and going on to regularly feature on the River Cottage TV series. There’s a lovely relaxed family-feel at Vale House which put us all instantly at ease and Tim was a great tutor, endlessly patient and keeping us amused with anecdotes. He demystified bread making – something which I had always thought was very difficult, showed us how to make pasta which we then ate for lunch with a wonderful, simple courgette sauce. We made a marrow chutney to take home, before going on

to create a decadent creme catalan with seasonal berries and then a dish of partridge cooked too ways with a rich tomato sauce. It sounded like the sort of dish you might order in a restaurant but under Tim’s excellent guidance all of us managed to produce something we were very proud of and the day ended with all the participants enjoying the fruits of our labours. I went home with a real sense of achievement and feeling like I had genuinely learned some skills that I could use at home. I haven’t cooked partridge two ways yet, but I am now baking my own bread every week. Next on the list is attempting pasta!

intensely flavoursome ingredients like bacon, or in this recipe, stilton, it’s easy to balance out the flavours. This dish makes an excellent lunch, or light supper, and can be prepared in advance which makes it ideal if you are expecting guests as you can spend less time in the kitchen and more time enjoying their company! How to make it: ■ In a bowl, scrape the butter into small pieces, then, while slowly adding the flour, press and mix the ingredients to make a crumble mixture. Once it’s crumbly, add the happy egg yolks and mix through to bind the mixture loosely. If the mixture will not bind together, add 1 tsp of cold water and continue to mix. Only add 1 tsp of water at a time and never more than 4 tsp of water in total. Place the pastry on a piece of clingfilm, wrap tightly, then roll into a sausage shape and place in the fridge for 60 minutes. We need to blind-bake the tart base. On a floured surface, roll-out the pastry to a thickness of a £1 coin. Gently place the pastry in a floured tart tin and mould it into the corners with your fingers; don’t tidy the edges yet because the pastry will shrink when it is baked. Mat’s top tip: save a little of the pastry in case cracks or

holes form during the blind baking. Prick with a fork all over, to stop it from rising and place in a preheated oven at 180°C/350°F/Gas Mark 4 for 8 minutes. Remove from the oven, check for any holes or cracks and patch them with your spare pastry. Allow the tart to cool for 5 minutes, glaze it with the beaten happy egg white to seal the base of the tart and place back in the oven for a further 2 minutes. Remove from the oven, and trim the edges with a sharp knife. ■ For the filling, blanch the winter greens in boiling water for 1 minute, then plunge into a bowl of cold water to stop them cooking, drain and roughly chop them. Make the custard by whisking together the happy eggs, happy egg yolks, cream, milk and salt. Whisk until it is smooth and fully combined. Crumble the stilton and add to the bowl along with the winter greens, gently fold-in. ■ Turn the oven down to 140°C/275°F/Gas Mark 1. Pour the filling into the tart, place in the oven and bake for 20 minutes. Check it’s cooked by lightly shaking the tin, the mixture should be firm but still a bit wobbly, like a jelly. ■ For more recipes visit www.thehappyegg.co.uk

The Mendip Hills, an upland region of carboniferous limestone, stretch from Uphill near Weston-super-Mare to Cottle’s Oak on the fringes of Frome. One of the area’s more popular walking destinations, there is everything here from rocky crags and open moorland to wooded combes and workaday farmland. This walk explores the open country of Blackdown, as close to moorland as it is possible to get in this neck of the woods. Here we find heather, gorse and bracken as well as views that take in landmarks as diverse as the distant Malvern Hills, the Bristol Channel and the coast of South Wales. There is also the trig point on Beacon Batch which, at 1067 feet above sea-level, marks the highest point on all Mendip. Definitely one for the peak baggers!

A pub fit for a king

The Crystal Palace pub in Abbey Green has re-opened after a major makeover. The Crystal Palace, along with the Huntsman and the Boater has been taken over by Fuller, Smith and Turner, who are investing £7.5million in refurbishing the three city centre pubs. The new-look Crystal Palace was re-launched with a special VIP party on November 4, and re-opened to the public the following morning. General Manager of the Crystal Palace Kim Rennie said. “I am hugely excited by this opportunity to run such a beautifully refurbished pub with a great

From funnyman to folk punk rocker Gina Baksa talks to musician, actor, and chef Ade Edmondson

rom psycho punk Vyvyan Basterd on ’80s TV show The Young Ones to winner of Celebrity Masterchef, Ade Edmonson, 56, is now an official national treasure. Often overshadowed by his fabulous wife Jennifer Saunders, Ade is a multi-talented actor, writer and musician in his own right. He’s always been a hero of mine too, so it was great to chat to him just ahead of his gig at the Komedia. Today, his main passion is fronting punk-meets-new wave-folk band The Bad Shepherds. Gigging and recording since 2008, the three-piece released its third album earlier this year – Mud, Blood & Beer. But first, what about that cooking award? Was he surprised he flambéed fellow celebs Janet Street Porter and Les Dennis out of the kitchen with his “delicious and absolutely mind-blowing” culinary offering? “It’s actually far more difficult than it looks,” Ade admits. “I was shaking all over the place just chopping an onion.” A stressful experience then? “Definitely! You’re basically trying to avoid going out first. Then you’re trying to

avoid going out second.” Ade is no stranger to culinary competition, he was runner up in Hell’s Kitchen in 2009, beaten to the top spot by Dallas icon, actress Linda Evans. And his love of food took him across the UK in Ade in Britain, interviewing traditional food producers. But the reason he’s in Bath is the Shepherds’ upcoming gig at the Komedia on November 20. Ade is front man with the mandolin, beautifully supported by Troy Donockley on uillean pipes and the bouzouki, with demon fiddle player Andy Dinan, providing the jiggy groove. Their playlist covers Seventies punk and new wave greats, from The Stranglers, to The Clash via The Jam, Madness, Talking Heads and more – all with their unique Celtic jig-and-reel folk vibe. And it works. So why the punk influence? “Punk was the backdrop to my life from the age of 18 onwards,” Ade explains. “I remember watching David Essex in the movie That’ll Be The Day when I was at school. There is a scene where he throws his satchel off a bridge and goes and joins the circus. I wanted to be that free – and join a band.” “At college, I remember 100 yards down the corridor was a punk band rehearsing, and 100 yards in the other direction was an Irish pub with session players. I loved both styles of music but it never occurred to me that I could actually combine the two.” Ade learnt to play bass guitar at school and has since picked up other string sounds. “I love folk instruments and a jig to a reel is like putting your foot on the accelerator. There’s a natural excitement at

a folk gig. It’s similar in spirit to punk.” He has also co-written a couple of tracks on Mud, Blood & Beer. The title track is an homage to the joys of festival gigging, while Off To The Beer Tent an energetic jig that highlights Andy and Troy’s expert musicianship. Giving a folk edge to punk classics was a deliberate move away from “songs about blacksmiths,” he says. “We always wanted to do something different.” The band is currently on 14-gig tour of the UK, supported by husband-and-wife folk duo Trevor Moss and Hannah Lou. Have they played abroad? “We’ve been to Australia. They want us

back so that’s good. And we’ve had forays into Belgium, Holland and France. “I like the small gigs; it’s romantic being on the road. You don’t need much gear with folk music, so we can fit our engineer, our roadie, all our gear and us into one van. “The best thing about gigging is that every night feels like a party. It’s mind-blowing being on stage. Music is so different to comedy – you’re not attacking the audience, you meet them in the middle.” In 2010 the Shepherds played Glastonbury. A career highlight? “It was my favourite gig ever. When it’s all ‘on’ and the audience is ‘on’, you feel like

you’ve been zapped by lightening. I was in tears when I left the stage, I was so emotional. “It’s great, as I still think of my music as a hobby. When we started no one knew who we were and we played a lot of tiny gigs to a few people. Capturing the imagination of audiences and critics with his dry humour and dead-pan delivery, Jack Dee had won three British Comedy Awards, and was nominated for Best Entertainment Performer at the 2005 BAFTAs. Jack’s stand-up career began in 1986 at the world famous London Comedy Store. In 1991 he was nominated for the Edinburgh Festival Perrier Award and won the British Comedy Award for Best Comedy Newcomer. In 1992 Jack hosted the critically acclaimed The Jack Dee Show on Channel 4 which went on to run for two series. He then moved to ITV where he hosted Jack Dee’s Saturday Night (1995) and Jack Dee’s Sunday Service (1997). By 2000 he had moved to BBC1 and presented two series of Jack Dee’s Happy Hour. In 2004 Jack hosted Jack Dee Live at the Apollo(BAFTA nominated) which was quickly followed by a second series in 2005. In 2006 Jack teamed up with Pete Sinclair to write the critically acclaimed sitcom Lead Balloon for BBC4. Rave reviews and record ratings saw the series repeated on BBC2 that same year, and it was quickly followed by a further series of eight episodes in

2007. In 2008 a third series of six shows and a Christmas special aired on BBC2, followed in the summer of 2011 by the final series of a further six shows. As an actor, in addition to starring in 27 episodes of Lead Balloon, Jack has appeared in Kingdom (ITV1), The Ambassador (BBC1), Silent Witness (BBC1), The Grimleys (ITV1), Dalziel and Pascoe (BBC1), Jonathan Creek (BBC1), The Deputy (BBC1) and Tunnel of Love (ITV1). Jack has appeared on the big screen in Londinium, Spivs and, in 2006, The Last Drop and Short Order. His West End stage debut as an actor came in 1998 when he played the role of Yvan in the critically acclaimed production of Art at the Wyndhams Theatre; he later returned to play the part of Serge in the same production. Stepping out on an insightful path A new exhibition by artist Daisy Cook, the daughter of funny man Peter Cook, is running at Hilton Fine Art in Margaret’s Buildings, Bath. The inspiration for Daisy’s latest body of work is Robert Macfarlane’s The Old Ways, A Journey on Foot, the final book in what he describes as ‘a loose trilogy about landscape and the human heart’. And this is indeed what Daisy has sought to encapsulate in this latest series of her landscapes. Her Journey on Foot was along an Old Way, the Way of St James, the Camino de Santiago, one of the most important medieval Christian pilgrimages, that proved enlightening in ways that were unexpected – the community, the physicality, and of course the insights into the human heart. The drama of a city underfire A vivid account of the medical aftermath of the Bath Blitz forms the opening of a newly published book written by a wartime doctor. Joan F Hickson kept a diary throughout most of her life but when her daughter Ruth Skrine began going through them all with a view to publication, she found that a good starting point for a book would be an account of the aftermath of the Bath Blitz.

Says Ruth: “Her papers contained scraps of writing from an early age but when it came to editing the diaries I found that they only started in a coherent way from the day after the Bath Blitz in 1942 when she was 43 years old. “As soon as peace returns in 1945 the fire goes out of them. The drama of the times and her wish to record it for posterity released her to write about some of her inner passions.” After qualifying as a doctor Joan met and married Eric Hickson who became a GP in Chippenham where the couple lived with their three children. At the start of her marriage Joan helped her husband in the practice but she also trained as a non-operative ophthalmologist and worked in the supplementary ophthalmic services in schools. For most of her professional life she spent two mornings a week at the Eye Infirmary in Bath – completely unpaid until the introduction of the NHS in 1948. Ruth has now seen her mother’s war diaries published by Ex Libris Press under the title Carry on Coping, a

ne of the big names featured at this month’s Bath Film Festival is one-time Harry Potter golden boy Daniel Radcliffe. Daniel is currently in the process of making the crossover from child star to serious actor and one of the previews of this year’s festival will be his new film Kill Your Darlings directed by John Krokidas. Daniel made his acting debut aged ten in a BBC TV movie of David Copperfield followed by his film debut two years later in The Tailor of Panama. Then at the age of 11 he was cast as Harry Potter in the first Potter film and he stayed with the series for a decade until the release of the eighth and final film in 2011. Daniel began to branch out to stage acting in 2007, starring in the London and New York productions of Equus, and in the 2011 Broadway revival of

the musical How to Succeed in Business Without Really Trying. He starred in the 2012 horror film The Woman in Black to fairly mixed reviews and played beat poet Allen Ginsberg in this year’s yet-to-be- released independent film Kill Your Darlings. In 1943 American poet Allen Ginsberg met William Burroughs and Jack Kerouac at Columbia University. He also became close to Lucien Carr, a talented 18 year old who

was later involved in a high-profile murder case. Kill Your Darlings traces the emergence of this group with all the sexual undertones against a background of events surrounding the murder. Kicking off the festival on Monday November 25 will be a showing of The Passion of Joan of Arc in Bath Abbey. This Carl Theodor Dreyer film is regularly voted one of the great masterworks of cinema history. The story of her torture and martydom is famously based on the transcripts of her trial. A preview documentary this year is Of Oozies and Elephants about the work of Myanmar’s elephants. If you are thinking of introducing young people to the joys of cinema then think of Brad Bird’s The Iron Giant about a boy who finds a giant robot in the woods. Think too of Kauwboy a Dutch Kes with a jackdaw. If Gothic horror is your thing try Jean Cocteau’s fantastic 1946 version of Beauty and the Beast or The Curse of Frankenstein with Peter Cushing and Christopher Lee. Among a whole list of previews will be Ralph Fiennes’ The Invisible Woman the story of Charles Dickens’ love for a young actress, starring Ralph Fiennes and Kristin Scott Thomas. Another preview is Sixteen the story of a former Congolese child soldier living in London. Director is Rob Brown who will be answering questions after the showing along with producer Nic Jeune from Bath Spa University.
